Tasting notes
100% Cabernet Sauvignon. Made entirely from the alluvial fan laid down by Simmons Creek in what the team considers the heart of the Eisele vineyard. Certified organic by CCOF and biodynamic by Demeter. Will be released June 2023. A nice balance of aromas showing lifted red and black fruits, cracked pine, dusty earth and graphite. Notes of cassis, pink grapefruit and cocoa nib emerge in the mouth. This is a very young wine but there is a lot of promise here with succulent tannin, balanced acidity and good persistence. The detail is still waiting to fully emerge but is consistent with Cabernet of this age. The texture is fine grained and luxurious with well-built structure and plenty of length. This wine was harvested entirely before the fires, though it was also made in much smaller volume than in a typical year. Wait several years before opening for full enjoyment. (ECB)

The 2020 Cabernet Sauvignon was tasted as a finished blend barrel sample. Deep purple-black in color, it delivers fantastically pure blackcurrants and fresh blackberries scents, with wafts of crushed rocks, lavender, clove oil and cinnamon stick, plus a hint of mossy bark. Medium to full-bodied, it has a firm, finely grained texture to support the ripe, rich, juicy fruit, offset by amazing freshness and energy, finishing long and layered.
