Pinot Noir. Whole clusters are foot-trodden and then left in contact with the skins for about an hour. Fermented in neutral oak with ambient yeasts. Malolactic conversion inhibited. Unfined and unfiltered. Aged on lees in bottle for between 32 and 42 months. Disgorged January 2020. Dosage 2 g/l. Light amber-copper with medium-fine bubbles. Smells of dried citrus peel, wet leaves and berries. Flavours of wet autumn leaves, pomegranate and floral notes mix with citrus peel and a faint spice. Very savoury, with a silky mousse and mysterious character. (AY)

The 2016 Sparkling Pinot Noir Alder Springs Vineyard was disgorged in January of 2020. It has a peachy-bronze color and aromas of bruised apples, beeswax, toasty accents and a singular note of candied peach. The palate is full and rich, offering amplitude without an over-autolytic character, and unique tropical, toasty and wooly undertones. It's an unusual style of sparkling wine that's appealing for its dry but fruity, energetic character.
The 2016 Rosé Pinot Noir (Sparkling) Alder Springs is fabulous. Crushed red berry, green apple, mint, chalk and kirsch give the 2016 striking inner perfume and a level of exoticism that is hard to fully capture in words. Light on its feet and intensely aromatic, the 2016 possesses remarkable depth that is expressed in a gorgeous, understated, style. Dosage is 4 grams per liter.
