Bordeaux is changing. The Left Bank, in particular, has long been a region of labels – of grandiose estates, polished winemakers and the bottles they produce – the vineyards a backdrop to their impressive châteaux and new state-of-the-art wineries. Of course, vineyards have mattered, as much as they’re the source of their grapes, but they’ve rarely been the focus for conversations with trade or consumers. But now, perhaps influenced by the meteoric rise of Burgundy – and an approach to wine echoed around the world, terroir is stepping into the spotlight. Behind the scenes, the Bordelais may always have been looking underfoot, but now they are talking about it too.  Nowhere is this more true than at Ch. Montrose – a property that announced a significant change when releasing its 2023 vintage. The property has always made some of Bordeaux’s finest wines, but over the past 15 years (under the Bouygues’ ownership) quality at this Saint-Estèphe estate has reached new heights. Long known for its austere age-worthiness, there’s now a modern polish that softens its stern style – without sacrificing its classicism and longevity. Each vintage seems to reveal a new level of precision and finesse. From 2023, Montrose announced that its Grand Vin would only come from Terrace 4 (T4). If that doesn’t mean much to you, I’m not surprised.  The Médoc and Graves’s six gravel terraces were uncovered by Pierre Becheler in a series of studies in the 1980s and ’90s. Each terrace dates from a different period and has its own distinct soils, with Terrace 1 (T1) the oldest and Terrace 6 (T6) the youngest – and argued to be a defining factor in the Left Bank’s terroir. T3 and T4 are widely regarded as the best for wine-growing, and Becheler found that, at the time of their classification in 1855, over 80% of the Classed Growths sat on these two distinct geological strata.  In the last decade, these gravel mounds have become a key part of Bordeaux’s story, explaining the estates’ terroir. Despite widespread understanding that the terraces are integral to the quality of wine, there still isn’t a comprehensive map of the Left Bank’s terroir – showing which vineyards sit on which soils (the best are those created by Jane Anson and Kees van Leeuwen for Anson’s book Inside Bordeaux). Most studies have been undertaken by individual estates, as at Montrose – who engaged Becheler himself to uncover the specifics of their site.  It's remarkable that, without knowing anything about the region’s subsoils, Montrose was so fortuitously placed – although it has of course survived thanks to its prestigious site. The property’s first vines were planted – all on the fabled T4 – in 1815, by Etienne Théodore Dumoulin, who had purchased the land from Nicolas Alexandre de Ségur (of Calon Ségur). The land had been covered in heather, its pink blossom covering the gentle slope come autumn, and sailors passing along the Gironde estuary used to call it the pink hill – or “mont rose”, giving the property its name.  It was only 40 years after the first vines went in the ground that the estate earned its place as a Second Growth in the 1855 Classification. By 1861, when Dumoulin passed away, the estate comprised 95 hectares – but its borders have shifted over the years. It was later purchased by an Alsace factory owner, Mathieu Dolfus, who invested heavily in the property. He was a visionary – offering free healthcare, profit sharing and accommodation on the estate for his workers. He even used a wind turbine to flood the vineyards, staving off the impact of phylloxera as long as he could.  Montrose was managed by the Charmolüe family between 1896 and 2006, with Jean-Louis – who ran the estate from 1960 – key in building its modern reputation. It was under him, in the 1970s, that vines were planted on lower-lying land close to the estuary, which sits on T5. These humid, sandy parcels are now used for La Dame de Montrose, the château’s second wine.  It was in 2006 that brothers Olivier and Martin Bouygues (of the eponymous telecoms company) acquired the property. In 2010 they bought an additional 22 hectares from Phélan Ségur, land which had historically been part of Montrose. These vineyards, wooded on either side, sit on the sandier T3, but importantly also brought the total vineyard area back to 95 hectares – as under Dumoulin – and all sitting in one block (something which is relatively rare in Bordeaux).  The Bouygues brothers hired Vincent Decup as the estate’s Technical Director in 2014. Decup instantly set about getting to grips with the estate and its soils. When he arrived, they had a map detailing 16 different soil types across the vineyards – but he soon commissioned further studies, uncovering an additional 10 soil types. This gave them, Decup tells me, “the possibility to explore and separate” parcels, diving into the detail of the site with a Burgundian, rather than Bordelais, vision. From 2017, the team started delineating the parcels – vinifying plots in 93 separate tanks (over twice the 40 that had been used just three years prior), adapting the winemaking to each. Looking at the Cabernet Sauvignon on T3 and T4, he explains how they gained a “new level of precision and comprehension of Cabernet on each terrace”.  “The Cabernet Sauvignon of Montrose naturally gets lots of power,” Decup tells me. “We have to be careful with the extraction.” Especially for fruit from T3, he explains, it can easily become overly austere. T4 has always represented the majority of the blend for the Grand Vin at Montrose – and in Decup’s mind it is not just the property’s historic DNA, but what gives the wine its identity. He tells me how there is something magical about the way Cabernet ripens on these parcels, developing technical (sugar), aromatic and phenolic ripeness all at once. It produces wine that is “powerful, voluminous, demonstrative – a lion in a cage”.  In 2022, the same year that Charlotte Bouygues took over as President and Pierre Graffeuille became CEO, the team started focusing more on T4, and from 2023 the Grand Vin comes exclusively from this prized terrace. Coming from the Delon estates, Graffeuille knew the potential of these soils, shared by Léoville Las Cases. The 2022 vintage was pivotal – earning four potential 100-point scores, with four firm 100-point scores in bottle – and the 2023 followed in its footsteps, with three potential perfect scores to its name.  The gravel terraces rise and fall through the region. T4 surfaces in Saint-Estèphe, running under Meyney and Montrose, disappearing until the southern edge of Pauillac, reappearing around Latour, then running through much of Saint-Julien (including the three Léovilles – Las Cases, Barton and Poyferré – and Ducru-Beaucaillou), rising again throughout Margaux and then again under Haut-Brion and La Mission Haut-Brion, with small pockets further south.  The defining factor of T4 is an iron pan beneath its sandy gravels. The sandy gravel topsoil allows young vines to develop roots easily, before they hit the compact iron layer – forcing the vines to spread horizontally rather than vertically. That compact layer is cool and retains water, feeding the vines in hot years. Decup explains how in July the topsoil might be hot, but if you dig down you can feel the chill of the iron layer – something that is perfect for Cabernet Sauvignon. At Montrose, T4 sits between 12 and 16 metres’ altitude, while elsewhere it reaches a maximum 22 metres. T4 tends to run close to the Gironde, which provides a moderating influence – especially so at Montrose, where the estuary is 4.5km wide (notably protecting the estate from frosts, such as in the brutal 1991 season – a year when Montrose produced the wine of the vintage).  As with T4, T3 runs beneath many Classed Growths – notably Cos d’Estournel, Mouton and Lafite. With sandier gravel topsoil, the key difference is that T3 doesn’t have the iron pan of T4 – the topsoil instead sitting directly on clay-limestone subsoil. Slightly higher in altitude (15-18 metres at Montrose, but generally 20-26 across the Médoc), the soils are very deep and the vines’ roots drive straight down, up to three metres or so at Montrose, Decup tells me. With less clay in the topsoil, the soils are particularly free-draining, and the vines reach down in search of water. “In terms of expression, it is not the same at all,” says Decup. He explains that while it also produces bold Cabernet Sauvignon, it’s got particular energy and length, an austerity – but “positive austerity”. Vines on T3 particularly thrive in hot, dry years, he tells me.  Montrose has an impressive 45 hectares of vines on T4, 12 on T3, a swathe on what the team describes as an “intermediate soil” – somewhere between the two terraces, and a small portion on T5. So what now of the property’s vines on T3? While the château isn’t openly confirming it, a separate bottling of T3 is set to be released – likely hitting the market in 2026, if rumours are to be believed. The rest of the fruit goes into La Dame de Montrose, and a small portion into a third wine, Tertio de Montrose (previously known as Saint-Estèphe de Montrose), which is exclusively for those working at the estate. All in all, the Grand Vin now represents circa 36% of production at Montrose – down from closer to 45%.   “T3 and T4 are, in our opinion, the terraces that produce the best viticultural results,” says Pierre Becheler, when it comes to the Médoc and Haut-Médoc. Interestingly he explains that in the Graves it’s very different, and T2, which is almost non-existent in the Médoc, produces some stunning results. He can’t fully explain why one terrace works better for wine than another, but one reason the terraces are so important is their influence on water availability. With varying proportions of clay and sizes of gravel, it’s a key element in viticulture and, eventually, wine quality. Although he has spent much of his career diving into these gravel beds, however, he’s very clear that the terraces are one very important piece of the puzzle – but will never provide the entire picture. Some terraces are the best in certain appellations, he says, “but we don’t really know why or how”.  The complexities of Bordeaux’s terroir are manifold – and some argue that the bedrock, from richer clays to hard limestones, are more influential than the gravel terraces that lie over them. On top of this, slope exposition, proximity to the Gironde, and many other elements influencing microclimate, not to mention the human influence, all contribute to the concept of “terroir”. It’s exciting to see site pushed to the fore, especially alongside an increased focus on sustainability in the vineyard. While long a leading estate, recent vintages of Ch. Montrose have earned sky-high scores. We sat down with the property’s Technical Director Vincent Decup to find out how the team is taking the Saint-Estèphe titan to new heights – all by looking underfoot

We normally taste Ch. Berliquet at Canon during en primeur, and with a tightly packed schedule there’s never enough time to visit both properties. This year, however, an extended trip allowed us to visit once most of the trade had left the region. On the sunny Monday after the week of en primeur, we arrived at Canon as normal – but, instead of disappearing into a tasting room, hopped onto some of the property’s iconic bikes (which are genuinely used by staff to travel between the two estates), and pedalled across the vineyards to Berliquet – a property that the Chanel team has quietly been transforming.  Ch. Berliquet is one of the oldest estates in Saint-Emilion, with roots dating back to the 1760s. The first known owner was Jean de Sèze, a contemporary of Jacques Kanon (the founder of Ch. Canon). This single plot of vines on the slopes of Saint-Emilion’s limestone plateau has remained unchanged for over 150 years. Southwest of the town, nestled between Ch. Bélair-Monange and Ch. Angélus, it offers much more than meets the eye. The wines were vinified by a local co-operative as recently as the late 1970s and the property only achieved Grand Cru Classé status in 1986. When Chanel acquired the property in July 2017, you would be forgiven for thinking that fruit from Berliquet would go into its more illustrious neighbour, Ch. Canon (which Chanel has owned since 1996); but that wasn’t what they had in mind.   “At the beginning, we took our time with Berliquet. To start with, we had to focus on ourselves,” Axelle Araud, the estate’s Wine Development Director, told me at a recent vertical tasting. The team credits the estate’s progression in part to a better understanding of their surroundings. Not long after their acquisition, the team carried out an extensive soil study which revealed that the estate’s slopes are home to all three of Saint-Emilion’s hallmark soils in equal measure: the vineyard’s plateau is made of limestone, the hillside a mix of limestone and deep clays, while the banks of the Dordogne river are predominantly sand and clay. The unique diversity of the soil helped to underline the estate’s identity.  “Ch. Berliquet is the expression of a specific landscape,” Araud says. One key element of this landscape is a Mediterranean belt that runs across the property (found at Bélair-Monange too), with Mediterranean species of plants naturally growing here – with cypress, fig, pine trees, lavender and laurel all at home. The team has looked to nurture this natural biodiversity, planting over 1,000 hedges, shrubs and trees since 2017, as well as installing nesting boxes for birds (to help as natural pest control). The property is certified organic as of the 2024 vintage.  Alongside this, Nicolas Audebert has embarked upon significant restructuring of the vineyards. At the beginning of Chanel’s tenure, the vineyard was planted with as much as 80% Merlot; but, in early 2018, following their soil analysis, the technical team realised the significant role that Cabernet Franc could play on the property’s clay-rich soils, on the slopes below the limestone plateau. Since then, the vineyard has gradually been restructured, with plots of Merlot replaced with Cabernet Franc. Today, 2.5 hectares of the vineyard have been replanted, taking the proportion of Cabernet Franc up to 40%. The goal in the long term is to bring the blend up to 50% Cabernet Franc.  In 2021, they also decided to plant some Malbec – 0.34-hectare plot of this grape that was – prior to phylloxera – widely planted in the region. Nicolas Audebert and his team believe that addition of malbec will add to the diversity of the fruit, the results of this change will be evident from the 2024 vintage, with its first inclusion in the blend.  While much of the work has been in the vineyard, part of Berliquet’s recent progress can be linked to the winery. Although Berliquet benefits from having the same technical team as that of Canon and Croix Canon, one of the thinks that marks Berliquet out from its stablemates is their use of amphorae. The estate started with just two amphorae in 2019, and today have 12 – deemed a key part of the wine’s character, with 10% of the blend matured in these clay vessels instead of oak. Araud pointed out that the amphora have helped to preserve the brightness of the fruit – carrying through their work in the vineyard to the final wine.  The 2023 vintage also saw the inauguration of what Araud calls “the playground” – their new vat room, complete with 22 stainless steel tanks. “Now that we have all the building blocks in place in the vineyard, we can pay more attention to each and every plot, resulting in greater precision and refinement in the final blend,” she explains.  The 2024 vintage is the eighth under team Chanel and, over that time, the team has continuously questioned their practices, making small adjustments in the vineyard and winery – making gradual but constant progression. And that progression is evident in the wine today, which has shaken off any rusticity it might once have displayed. As Jean-Basile Roland, Commercial Director for Chanel’s three estates, described to us back in April, they’ve been sharpening the wine’s silhouette – a wine that he describes as “telluric” versus Canon’s “ethereal” style. Berliquet: harnessing the property’s potential

This year sees the release of the 20th vintage of Cheval des Andes – Cheval Blanc’s operation in Mendoza. Since the team from the legendary Saint-Emilion estate embarked on the venture with Terrazas de los Andes, 25 years ago, much has changed – and this is the start of a new era for the property. What was once a working concept has taken root.  “This is the beginning of our adult life,” says Technical Director Pierre-Olivier Clouet. “We have a real identity today.” It’s taken a quarter-century for the property to shake off the uncertainty of youth and find firm footing – something that hasn’t necessarily been easy.  “We made mistakes,” Clouet confesses. Not having a historic reputation to rely on, the team at Cheval des Andes had sought out high scores, chasing points to prove their worth. But, in a still Parker-dominant era, that meant making wines with “ripe grapes, a lot of extraction, a high level of alcohol – you [had] to show the muscle to explain that you are a great wine”, explains Clouet. “For a long time, the recipe was in the cellar; nobody cared where the vines were.” Now, however, that’s all changed.  From 2011, the team started shifting focus to the vineyard, working more closely with their French counterparts and vice-versa. The arrival of Lorenzo Pasquini (now the man at the helm of Ch. d’Yquem) in 2015 was key to the transition, as Cheval des Andes started to focus on a shared vision of fine wine – one that is about freshness, balance and ageing potential, and one that defines Cheval Blanc.  Only with a few wrong turns, however, can you be sure you’re on the right path – and Clouet is clear that those first 16 years, figuring out what Cheval des Andes should and could be, has been “super important” in helping them build “something with real sincerity, real authenticity”. Most importantly, Cheval des Andes is not intended to be, nor is a copy of Cheval Blanc: “It is, in our mind, absolutely an Argentine wine,” says Clouet.  The original 31-hectare vineyard is in Las Compuertas in Luján de Cuyo, a subregion of Mendoza. It is on these clay-dominant soils at around 1,000 metres’ altitude that Pierre Lurton discovered a plot of ungrafted Malbec in 1998. Planted in 1929, the vine material pre-dates phylloxera, descended from a selection imported to Argentina in 1852 – back when the grape dominated Bordeaux. This selection is key to the DNA of Cheval des Andes and, along with the huge diurnal shift, produces Malbec that is fresh, precise, perfumed and delicately structured. For Clouet, the “true” Malbec is closer to Pinot Noir in style – more floral than fruit-led, vibrant and even ethereal.  In 2001, the team purchased an additional parcel in La Consulta in the Uco Valley, at higher altitude and with more gravel-driven soils, a cooler site that has an even more significant diurnal swing in temperature. While they once might have used only a fraction of the estate to produce the flagship wine, they have moved to using as much as they can – to create a pure expression of the entire property, declassifying only plots that don’t fit in the blend or meet their stringent quality standards.  All 50 hectares are farmed with the same philosophy as their vines in Saint-Emilion – employing extensive cover crops, trees scattered throughout the vineyard, and with the same incredible attention to detail and focus on sustainability. “We work with the same vision and the same conviction,” says Clouet. One key difference, of course, is that irrigation is essential in this part of Argentina – but, here again, they’ve changed tack over the last decade or so. Rather than traditional modern drip irrigation where necessary water would be eked out drop by drop over the season as needed (“too artificial”, Clouet tells me), they irrigate extensively over the winter to ensure the soils are replenished fully between seasons (as well as help protect ungrafted vines against phylloxera), then – on a plot by plot basis – when the vines are starting to suffer, they give the vines around 40mm of water (still via drip irrigation), over 24-48 hours, replicating a day or two of steady rainfall.  They’ve reduced the height of the canopy (the engine of the vine for sugar production), while using trees, cover crops and minimal leaf-pulling to avoid sunburn. They’ve started pruning each vine according to its vigour, and are now picking significantly earlier – as much as two months earlier than 15 years ago. With this detail in the vineyard, the challenge is simply to guide the fruit through the winery: “No mistakes is enough in the cellar,” says Clouet.  In some ways, the wine echoes Cheval Blanc. While the Saint-Emilion property blends Cabernet Franc and Merlot, Cheval des Andes focuses on Malbec and Cabernet Sauvignon – the Malbec bringing freshness and silkiness that complements the backbone of powerful Cabernet. And the Cheval Blanc style, one of restraint and precision, shines through in recent vintages of the wine – and especially the soon-to-be-released 2021. As Clouet tells me, “Our vision is absolutely delicacy, freshness, balance, ageing potential, complexity.” Unlike Cheval Blanc, however, which needs 10 years in bottle to start even hinting at its potential, Cheval des Andes offers an immediacy – something that Clouet is clear doesn’t inhibit its ability to last; the 2021, for example, can be drunk now, but will evolve over the next 25 years at least, he tells me.  Even the association with the Cheval Blanc name doesn’t make Cheval des Andes an easy sell to fine wine lovers; but that, says Clouet, is part of what makes it fun – a challenge for the team to be pushed. Even better, his team gets the chance to learn and make wine not just once a year, but twice, as well as gaining additional insight on how Cheval Blanc might adapt to climate change. But Cheval des Andes isn’t just an intellectual exercise (that is merely an added bonus), Clouet firmly believes in the potential of this site – something they’re now finally beginning to realise. Turning the page at Cheval des Andes

I’m sitting opposite Rino Fontana, an Italian wine collector that Antonio Galloni named his Wine Personality of the Year in 2023. Fontana looks unassuming – like any other septuagenarian that you might find, cigarette in hand, knocking back an espresso in a sunny piazza. Sunglasses hang on a string around his neck, and occasionally he rifles through scraps of paper that seem to operate as a calendar and/or journal. I’m not sure what I was expecting, but it was perhaps someone a little more, well, suave. Fontana has been collecting wine since the 1980s and is renowned for his cellar, a treasure trove of remarkable vintages from Piedmont’s top producers. Indeed, Galloni has dubbed him “Il Professore” for his extensive knowledge of Italian wine – despite never having worked in the industry. As Fontana scrolls through pictures on his phone, recalling recent dinners, he rolls off names and vintages that would leave any wine-lover speechless. He grew up in the Oltrepò Pavese, where his father was a stonemason, but would buy grapes and make a little wine for the family. Fontana was sent to school in Valenza, a town known for its gold industry – and he started working in a gold factory in his late teens. Aged 24, he and his best friend opened their own jewellery workshop. It was the owner of a local restaurant in nearby Mortara who introduced Fontana to the real pleasures of wine, and a bottle of Conterno’s Monfortino that made him fall head over heels for Nebbiolo – the 1958 vintage, in fact. Since that first taste, he’s opened over 150 bottles (yes, really) of the 1958 Monfortino. It was that wine that prompted Fontana to start visiting producers – an adventure in self-education. At the time, people weren’t buying wine, and Italy’s winemakers were far from fashionable. He became friends with the likes of Giuseppe Rinaldi, Bruno Giacosa and Gianfranco Soldera, rapidly securing significant allocations of their wines when few others were showing interest. Producers, in turn, suggested he had a gift – unique in his ability to understand wines in barrel and foretell their future. Today, he covers around 80,000km a year visiting producers – but the vast majority of that mileage is in Piedmont, for Fontana drinks – and collects – little other than Nebbiolo. This one grape represents around 95% of his consumption, he says, with Barolo and/or Barbaresco on the menu every day. He always has the latest releases on hand in the fridge – even some basic Langhe Nebbiolo, but at least twice a week he’ll uncork something special from the 1960s or ’80s with wine-loving friends or producers. While Nebbiolo is one of many grapes to be declared “the king of wines”, for Fontana it really does reign supreme. When I ask why, marvelling at how he could drink so much of just one variety, he shrugs: “Nebbiolo is Nebbiolo.” When I push him, he says he loves its ageability, structure and elegance – something he feels you can’t find in Pinot Noir. He recalls a recent dinner with Galloni at Il Centro in Priocca, sharing a bottle of Domaine de la Romanée-Conti’s 2004 La Tâche alongside a 1947 Borgogno Barolo and 1989 Vigna Rionda from Giacosa. Both the Barolos, he says, grew over the dinner – while the La Tâche faded slowly. For him, Burgundy (even the world’s most sought-after bottles) is no match for Nebbiolo. That’s a controversial opinion – but Fontana is not a man short of views. He dismisses the wines of Cappellano and Accomasso, while he has firm beliefs on how Nebbiolo should be made, favouring traditional winemaking with old oak – not wanting to feel the wood in the wine. He argues that too many young producers are going to Burgundy and trying to echo that style in their wines, losing their Piedmontese identity. The resulting wines are, he feels, too technical, too clean. “Great wine can’t be perfect,” he says – suggesting that those imperfections are partly what makes wine feel alive. While the most established and famous producers dominate his collection, he also likes the wines from newer names such as Trediberri, Crissante and Cascina Baricchi. Beyond Nebbiolo, he’ll dabble in certain labels of Sangiovese – Soldera, for example will pass muster, as well as SanCarlo (a producer he feels rivals the former). Montevertine’s Le Pergole Torte would previously have been a prime choice, but now he’d choose Le Boncie’s Le Trame instead. He likes Valentini and Emidio Pepe, and used to buy Gravner but feels the style changed in 2004 so stopped. He sold his jewellery business in 2000 – dedicating his time entirely to wine – visiting producers, building his collection and selling to select parties (of which FINE+RARE is lucky enough to be one). Fontana has around 9,000 bottles in his collection today. He shows us a video of his cellar – intriguingly with many of the wines stored upright. Anything post 1990 is kept on its side, but older wines stand proud in his cellar – something which he argues is better once they reach a certain age, with the cork and humidity of the cellar more important in their preservation. It’s a remarkable collection, with incredible verticals of many wines. His access seems unparalleled – receiving larger allocations than many importers, given his historical ties. He is the only individual, for example, to receive an allocation of Rinaldi’s Brunate Cru – a wine that is otherwise kept exclusively for the family. Some of his most prized bottles are Giacosa’s 1964 Santo Stefano and magnums of 1970 Monfortino (“amazing” – he says), while he has a soft spot for the youthful 2015 Soldera. Now aged 73, Fontana seems just as enchanted by wine as when he first tasted that 1958 Monfortino. I ask him if there’s a wine he is still desperate to taste, a unicorn that he’s still hunting: the answer is no. He’s been able to try every vintage from the producers he loves. Ch. Cheval Blanc is one of the finest producers in Bordeaux. The Saint-Emilion estate’s Cabernet Franc-dominant blends are consistently among the top wines of any vintage and under the tenure of Pierre-Olivier Clouet, the wines are only getting better. Listening to how Clouet talks about the property, the experiments, the confidence to talk about mistakes as much as successes, goes a long way in understanding why. This is someone who eats, drinks and sleeps Cheval Blanc – obsessively looking to better the wine. Cheval Blanc’s other Saint-Emilion property, Ch. Quinault l’Enclos has become an important test bed for developments at Cheval Blanc, and means the estate has seen a huge amount of investment over the last few years. Clouet accepts it is a “simpler” terroir compared to its sibling, but that challenge has pushed the team to explore the effects of terroir and varieties at a micro level. Since taking over the estate in 2008, Clouet felt that Quinault l’Enclos struggled to reach the standards he expected. Between 2009 and 2011, he admits their results were so-so. By 2012 they felt they had captured more freshness and balance in the wine, but they still didn’t have the density they felt the terroir was capable of producing.  Clouet knows they can’t simply make another Cheval Blanc at Quinault l’Enclos. Cabernet Franc, for instance (the backbone of Cheval Blanc), is a “fussy grape”, says Clouet, and just doesn’t work on the sandy/gravel terroir at Quinault. “The terroir also doesn’t have the clay soils that can help polish the mid-palate, and the tannins can become too rustic if we extract too much,” he explains. It is a fine balancing act and, while Merlot dominates in this terroir, they are finding success planting more Cabernet Sauvignon. Tasting the 2018 Quinault l’Enclos, the wine has the restrained touch synonymous with Cheval Blanc – something that is even more notable given the hot vintage. The fruit is firmly in the purple and blue spectrum and lovely violet, floral aromatic notes add complexity. The tannins are compact and impressively refined, and Clouet is clearly happy that in their 10th vintage at the estate, they have found the elegance and mid-palate density they have long been searching for. Alongside Quinault and the Grand Vin at Cheval Blanc, there is also the estate’s little-seen second wine, Le Petit Cheval. Clouet is keen to emphasise that Le Petit Cheval is purely a second wine: “It is made simply to make Cheval Blanc better.” It is the vintage that dictates how much Petit Cheval is made. In 2015 and 2022, for example, there was no Petit Cheval as the quality was so consistent it all went in the Grand Vin. Typically, Le Petit Cheval represents just 10% of the estate’s production, while 15% is typically sold off in bulk – mainly press wine, none of which is ever used in the Grand Vin. The Grand Vin, therefore, typically represents around 75% of production. In 2020 the blend for Petit Cheval was, unusually, 59% Cabernet Franc. It was a challenging vintage for the variety and less therefore went into the Grand Vin. For Clouet, 2020 was not as good as 2018 or 2019, and the growing season was not as conducive to good Cabernet Franc. Despite Clouet’s criticism of the vintage (“over maturity on the nose and underripe on the palate”), the 2020 Petit Cheval is a great wine. Notable power combines with big tannins and just a tiny hint of rusticity, but it has the refined touch of Cheval, a lovely, earthy, savoury quality and a long finish. Located in northwest Saint-Emilion, on the border with Pomerol, Ch. Cheval Blanc neighbours a number of high-profile estates, including Ch. Figeac to the south, and Pétrus and Vieux Château Certan in Pomerol. Its position between Pomerol and Saint-Emilion (while not on its limestone plateau) makes it a unique site in the appellation. Of the estate’s 39 hectares there is also tremendous variation in terroir. It is divided into 53 plots across 10 different soil types – clay, sand and gravel in varying proportions. For Clouet, it is this diversity that defines it. Many of the key components of the winemaking process have not changed since 1832, insists Clouet, however technology has allowed the team to increase the precision and purity of each bottle. “It’s the same picture, but with more pixels; we’re simply increasing the resolution of the wine,” Clouet explains. These days there is meticulous care and attention to detail at every stage of production, from the vineyard to picking each plot when the grapes are precisely “al dente”, right through to bottling.  Tasting through benchmark vintages underlines the success of this fine-tuning and the underlying style of the property. The 2018 is one of the great wines of the estate. Even in its infancy, the wine has incredible depth and a breath-taking density of tannins that are already seamlessly integrated – quickly followed by a surge of energy and an overriding freshness on the finish that gets the blood pulsing. Clouet describes Cheval Blanc as being shy at first, accelerating on the mid-palate – and that certainly comes through in the 2018, with a lovely lift on the finish. There is so much detail to the fruit with plenty of rich, concentrated black and red fruit flavours along with liquorice and menthol notes from the Cabernet Franc. The purity is outstanding and is hard to fault. Now with eight years in bottle, the 2015 is starting to reveal its quality, with the first hint of development beginning to show with lightly medicinal notes, beautifully delicately smoked oak tones and lifted floral violet aromas. The tannins again are seamless, yet dense. There is an unctuosity and fatness to the 2015 on the mid-palate, yet it is so fresh for the vintage. This is juicy and rich but with graphite mineral notes too. The density and detail is extraordinary. And the signature rush of energy and overriding freshness on the long finish is there. Although the 2012 Cheval Blanc doesn’t have the power or the intensity of the 2015, it is no less arresting. It is full of energy and has developed fresh tobacco notes and leather tones. The mid-palate remains really juicy, rich and pure. The tannins are again totally integrated with a mineral, minty note on the finish that has the Cheval Blanc lift. Finally, the 2009 – a wine that has legendary status among collectors: it is an incredible wine to taste, but noticeably different to the 2012, 2015 and 2018. The oak treatment and extraction is different and quite clear when tasted side by side. There is a touch more chalkiness to the tannins – not as seamless as the modern vintages – and they are more drying on the finish. Clouet notes that they certainly extracted more back then and the oak tannins are also more present, as is the toasting of the oak which has also been reduced in recent years. The power, freshness and energy is classic Cheval Blanc, but the refinement of the modern vintages shows that even at this level of quality there is room for improvement. There are few vignerons with such a meticulous approach to winemaking as Pierre-Olivier Clouet, whose fearless experimentation with one of Bordeaux’s most iconic wines has taken Cheval Blanc to new heights. It is only by tasting the wines side by side that you can really experience how this wine has developed over the last 15 years or so. It is a trend that mirrors much of what is happening in Bordeaux, with less extraction and more subtle oak, but few vignerons have discovered their magic recipe quite so astutely as Clouet at Cheval Blanc. Since Bruno-Eugène Borie took over Ch. Ducru-Beaucaillou in 2003, the estate has become one of the best-known and most-loved properties in Bordeaux. The 2023 vintage will be his 20th at the helm – during which time the estate, and the region, have been transformed.  “Everything has changed, and nothing has changed,” Borie says, laughing. “Go all the way back to 1720. Even then, Ducru was trying to improve and adapt to current market conditions.” While he insists that Ducru’s quest to produce the best wine possible dates back centuries, facilitating that motivation has not always been easy. Bordeaux thrived throughout much of the 18th and 19th centuries, prior to the arrival of phylloxera in 1875. The economic turmoil in Europe during the first half of the 20th century was even more challenging, and the recovery slow. It’s only really in the 21st century that many of the top Bordeaux estates have regained the resources and clawed back their premiership. Borie took over Ducru at a key turning point for the region – with both the climate and markets rapidly changing. Economic reform in China led to a huge influx of new customers for the fine wine market, and Bordeaux in particular. “China represents 30-40% of the Bordeaux sales today,” says Borie. “It changed everything.” For Borie, this sudden and huge expansion of the market began to lure investors from all over the world. As investment flooded into the region, new wineries, new equipment, new viticulture and new technology began to pop up everywhere. “More investors meant more managers, and more managers hired innovators,” says Borie. It facilitated a whole qualitative movement that, he believes, is behind so much innovation in the region. But the investment in Bordeaux was not the only factor behind the big changes at Ducru. Borie’s decision to slash production had a huge impact on the estate. Before he took over, the property made around 15,000-20,000 cases of the Grand Vin. Today, it’s closer to 7,500 to 8000. Few estate owners can attest to such a dramatic drop in yield for the sake of quality. Such a bold move was certainly helped by Ducru’s independence – it is one of the few Classed Growths that is still 100% family-owned. And the risk has paid off, with Ducru regularly competing for wine of the vintage in the Médoc. Climate also brought about big changes at the property. Borie’s first year in charge – 2003 – was the hottest on record. Soaring temperatures were causing havoc all over France and not just in the vineyards. “People were dying on the streets of Paris,” recalls Borie. He remembers his viticulturist at the time came to him in June, suggesting they start leaf-thinning the vines (removing leaves, opening up the canopy and bring more sunshine to aid ripening). With the vintage’s blazing sun, Borie thought it was madness. “People did it because it’s what they always did,” says Borie. But he resisted. He quickly realised it would be the weather – rather than tradition – that dictated work in the vineyard going forward. As harvest dates crept forward, the days of an August off at the beach were disappearing. Everything was changing. While the investment and innovation in these early years coincided with rapid change in the region, it is over the last 10 years that Borie has witnessed the most impactful changes in Bordeaux. In the vineyard, these changes have not arisen from flashy new machinery, but in the strategic employment of companion planting and cover crops. These agricultural techniques have been used through the ages, but, Borie believes, never as dynamically and rigorously as today. “We plant a certain type of radish in the vineyard where we find compaction, this opens the soil and creates more oxygen. We plant alfalfa at the beginning of spring where needed, bringing nitrogen to the soil at the right time,” he explains. The control of organic matter, Borie believes, is the key to healthy soils, healthy vines and, most importantly, the quality of the grapes. But, Borie is quick to emphasise, this is not simply a revived practice from the days before chemical farming. For Borie, the science behind which and what cover and companion crops to use is much more advanced. Practices are no longer habitual, but much more scientific. “The companion planting of crops between the rows is very new,” says Borie. “Each plot has different requirements.” It doesn’t always work. Borie recounts how the planting of sorghum to encourage the root development of the vines resulted in a nematode infestation (a pest similar to phylloxera) – and the sorghum was quickly replaced. They’re still learning, admits Borie, but he’s convinced the vineyards have never been in better shape. Over the last 10 years, there have also been technological developments in the winery too. Borie is very proud of his “smart” tanks – which analyse the must and wine throughout fermentation, 24 hours a day. It’s a game changer for Borie who has been experimenting with them since 2019. In recent vintages, the Grand Vin has been made exclusively in these tanks. The information these tanks provide is perfect for monitoring temperatures and maceration levels – allowing Ducru to get the best out of the tannins without over-extracting. With live updates on what’s going on inside the tank (and no need to manually take a reading), they can adapt their processes instantly. Ducru has always been family-owned – giving Borie a sense of responsibility and duty. He still lives at the estate, making it one of the very few inhabited châteaux in the Médoc. Borie resides in one of its famous towers, while his mother (95 years old) lives in the other (and still enjoys two glasses of wine for lunch and one for dinner).  As custodians of the estate, Borie – and his mother – have witnessed many changes. And as Borie has grown accustomed to greater precision in the vineyard and winery, he has returned to consider older vintages in the estate’s cellars. He and his team set about checking every mature bottling, re-corking only those in perfect condition and destroying the rest. These bottles are more than history, they represent his family – and his sense of duty to their reputation has been the driver behind many similarly costly projects over his 20-year tenure. Having the opportunity to taste the entire range from Ch. Ducru-Beaucaillou from the magnificent 2019 vintage (now all in bottle) was a wonderful experience. Across the range, it is the textural quality of the wines that really stands out. The clarity of fruit – which Ducru has become renowned for – is also apparent. The quality of the Grand Vin, however, is so impressive – the depth and concentration, the layering of abundant tannins while never losing its finesse. Even at such a young age, its drinkability is a perfect example of contemporary Bordeaux with that extra level of precision. Tasting the 2005 alongside proved how well the wines at Ducru age. Still youthful with plenty of fruit, the first hints of midlife tertiary development bring so much complexity to the palate. It was only Borie’s third vintage, but the lower yields produced a wine of incredible concentration and balance.  The fortunes of history and the new wealth in Bordeaux has benefitted practically every property in the region but few have been so effective at capitalizing on it than Ducru. The transformation of this Saint-Julien property, both in the vineyard and winery, is impressive but there is, Borie believes, still room for improvement. His latest investment is a state-of-the-art winery planned for completion in 2024. With Borie in the driving seat and committed to championing the Super Second’s – and his family’s – reputation, Ducru-Beaucaillou is in a safe pair of hands. Browse all Ch. Châteauneuf-du-Pape has a long history, becoming the new home for the Pope in the 14th century, but its prestige as a wine region is comparatively short. Although it is France’s oldest appellation (the first to be officially classified in 1923), the wines only really gained notoriety in the second half of the 20th century. More recently, its full-bodied, fruity style found appeal among American critics – namely Robert Parker, who helped increase its following across the Atlantic. But, despite the success of estates such as Ch. Rayas, there is little fanfare around the region. Isabel Ferrando’s dynamism, therefore, is a refreshing change. Her story is one of revolution rather than evolution. With every step in her career, she has made bold decisions – decisions that have brought significant attention, praise and a legion of fans. For her, such an approach aligns neatly with the philosophy of Châteauneuf-du-Pape. “The only limit is to respect the appellation. That is the only limit,” says Ferrando. With 13 permitted varieties (or 22 if you count both white and red grapes) and five very different, distinct soils, countless expressions of the appellation are possible – and, for her, this is why it’s a very modern appellation. Everyone is given the freedom to “paint their picture”. Although the region might be famous for its galets roulés (large round pebbles that reflect heat and add to ripeness), this is just one of its terroirs. “There are five different soils in Châteauneuf – chalk, limestone, clay, sand, galet stones that each have a strong influence on the appellation,” she explains. “There is one singularity,” she admits, “and that is a lot of fruit.” She feels that Châteauneuf is united by its “fruity but serious” profile – however, beyond that, there is incredible variety – from more floral to darker, more savoury styles. “The vines on clay produce a fatness in the wine. The sandy soils bring a silky texture and tenderness to the tannins. The chalk gives a sensation of powder,” she says, highlighting how each soil type contributes to the final wine – providing a palette for any winemaker to produce a wine that fits their sensibility. This freedom made the region a perfect fit for Ferrando – who decided to give up her job in banking to become a winemaker 20 years ago. Then a new mother, she initially thought that being her own boss would allow her to spend more time with her family. That didn’t actually happen, she admits, “But when you become a mother or father, you become someone else – you look at life differently. I wanted to go back to nature,” she says. “I didn’t want to raise my daughter in a city. I was born in the countryside, and I needed that for my daughter.” After training for a year in Gigondas under Dominique Ay (at Domaine Raspail-Ay) she found a domaine for sale in Châteauneuf-du-Pape and jumped at the opportunity. She might have been new to the region, a woman in a male-dominated industry with no background in winemaking, but that wasn’t going to put her off. Fortunately, she made some good friends – most notably the late legendary Châteauneuf-du-Pape producer Henri Bonneau who was instrumental in the establishment of Domaine Saint-Préfert. When she arrived, the vineyards were not in good shape, with many vines diseased and in need of replanting. Traditionally, producers in Châteauneuf-du-Pape blend plots together to capture the complexities of the different soils and varieties etc. But, if she was to make a wine of quality, this was not possible for Ferrando. So she identified the best plots and bottled those separately (as her Réserve Auguste Favier and Collection Charles Giraud cuvées), while she set about replanting the rest of the vineyards. The young fruit from her new vines was dedicated to her Cuvée Classique Châteauneuf-du-Pape. Single-vineyard bottlings were quite a radical move in the appellation – but such was the quality of these low-production, old-vine bottlings that Ferrando’s wines rapidly earned recognition. She went further to challenge convention in the region, crafting three varietal wines in a region that was built on blends. These cuvées – a Clairette (Cuvée Spéciale Vieilles Clairettes), Cinsault (Cuvée F601) and Grenache (Cuvée Colombis) bottling – are remarkable wines. There is no other 100% Cinsault produced in Châteauneuf-du-Pape.“The Cinsault is absolutely perfect in Saint-Préfert,”, says Ferrando. “Nowhere else in Châteauneuf-du-Pape do you get these floral aromas.” She describes the grape as the Pinot Noir of the Rhône. Production is tiny – limited to just 800 bottles a year – and it is not cheap at £500 a bottle. But, for those lucky enough to taste it, it is beguiling. The Wine Advocate’s Joe Czerwinski rated it as his top discovery of 2020. Her 100% Clairette is another oddity for Châteauneuf-du-Pape and almost as rare. Only bottled in magnums (800 a year) – this is a wine that Ferrando believes can age 50 years or more. “Clairette is my vision of white wine in the Southern Rhône.” She wants to counter the claim that white Châteauneuf-du-Pape is fat and fruity. “With Clairette, you can produce very fresh and deep wines,” she says, “it gives a lot of freshness, tension and salinity to the whites.” The wine was inspired by her mentor Henri Bonneau, who convinced Ferrando to bottle these 80-year-old vines separately. In the early days of Saint-Préfert, Ferrando invited Bonneau to a feast of tête de veau – and Bonneau arrived with a magnum of an unlabelled white wine. During the meal, Bonneau started to cry – he told Ferrando that the wine was the last bottle from the cellar made by his father – a 1947 100% Clairette – showing how well good Clairette could age. “It was a very special moment,” notes Ferrando. The wine was incredibly fresh and in perfect condition. He asked Ferrando again to create another 100% Clairette – like his father’s. The first vintage was 2009. Once the wine was picked and fermented Bonneau would come to the winery, taste the wine and insist she not bottle the wine yet. It was not ready. “It was risky,” says Ferrando, “but he insisted.” After 18 months she could hold off no longer and bottled it. Tasting the wine, she was amazed by its tension. It was special. The first magnum of every vintage was given to Bonneau as a thank you. After 20 years in Châteauneuf-du-Pape, Ferrando is one of the appellation’s brightest stars. But she hasn’t stopped challenging the status quo. After building one of the most celebrated brands in the appellation, Ferrando overhauled her range in 2020 – discontinuing many wines and changing the estate’s name to Famille Isabel Ferrando. Few people would have the guts to take such a chance, but a meditative period over Covid-19, the death of her husband and the evolution of her vineyards all prompted her next radical change. “The resistance of people to change is apparent, it is comfortable to stay the same,” she admits. But, for Ferrando, she had to change. Over 20 years, she’d nurtured her vineyards back to health, her young vines had reached maturity and her biodynamic farming had brought biodiversity back into her vineyards. “The vineyards changed and so the wines had to change too,” she explains. Ferrando now had the quality of fruit to be able to produce a single, flagship Châteauneuf-du-Pape cuvée – a wine that represented her terroir and her winemaking style. While she still produces her Vieilles Clairettes, F601 Cinsault and Colombis cuvées, she has sacrificed her top-scoring Auguste Favier and Charles Giraud reds to produce what she feels is a true representation of her estate and sensibility. The wine captures her obsession with freshness, balanced with concentration – playing with the different textural qualities of her soils and varieties. With this refreshed focus from the 2020 vintage, Ferrando decided to bottle the wines under Famille Isabel Ferrando – trusting that her customers will follow the wines under this new name. Ferrando’s daughter seems to have inherited her mother’s revolutionary approach. At 22, she decided to abandon her business studies to tackle a degree in viticulture in Beaune – to the complete shock of her mother. While currently her daughter is learning about winemaking at some of the best estates around the world (including at the likes of Domaine Roulot, Eisele Vineyard, Mullineux and more), she has already had an influence at Saint-Préfert. It was under her guidance that Ferrando hired a young agronomist engineer who has been planting trees and cereal crops in the vineyards to improve biodiversity. Ferrando is clearly excited– still spurred on by change, despite her success. Tasting the new wines from Famille Isabel Ferrando is a wonderful experience. We were among the first to taste the 2021 vintage. The white Châteauneuf-du-Pape is divine – offering such beautiful freshness, salinity and depth, with a finesse that I can’t remember tasting from the region. And the reds, even at such a young age, already taste so balanced, pure and refined. Ferrando might be a radical and modern vigneron, but her wines are timeless.
