The 2017 Chablis Les Vaillons 1er Cru is bright, precise and wonderfully lifted. Bright floral notes, orchard fruit, lemon confit and mint are some of the many notes that grace this exquisite Chablis from Billaud-Simon. In this tasting, the 2017 stands out for its aromatic intensity, nuance and class. This is such a pretty wine.

The domaine's old-vine holdings have produced a very fine 2017 Chablis 1er Cru Les Vaillons, a pretty wine unfurling with notes of fresh peach, honeysuckle and white currants. It's medium-bodied, pure and precise, with an elegantly textural attack and a delicate core of fruit. Like most of the range, this is still a little introverted after its bottling, so cellar it for a few years.
Tank sample. A little more limey than the Mont de Milieu. Perhaps more intense too and creamy. Rich but the acidity is just right for harmony. (JH)
