Otherwise there is a palpable sense of underlying tension to the muscular, intense and chiseled broad-shouldered flavors that coat the palate with dry extract that buffers the very firm tannic spine shaping the wonderfully persistent finale where a touch of minerality helps to add lift. The 2015 Gevrey-Chambertin 1er Cru Lavaux Saint-Jacques includes 75% whole bunch fruit this year. It has a very candied bouquet with iodine and cassis fruit penetrating the dark cherries and blueberry. There is a touch of mint that seems to develop with time in the glass. The palate is medium-bodied with firm tannin, good grip in the mouth, quite structured and a slightly tarry, masculine finish that just needs more flesh and persistence to show through with time. Domaine Dugat-Py's 2015 Gevrey-Chambertin 1er Cru Lavaux Saint-Jacques is extraordinary, wafting from the glass with a ravishingly pure bouquet of peony, rose petal, red cherries and cassis, with only subtle hints of the savory complexity to come with bottle age. On the palate, the wine is full-bodied and multidimensional, its tannins exquisitely fine and its concentration and length immense, but what really defines this Lavaux Saint-Jacques is its bright acid line and sappy energy, which carry through the fine-grained, stony finish. This 2015 evokes the domaine's superb 2005 rendition, but in 2015 extraction is more controlled and the fruit still more vibrant.
