(from vines at the warm, closed end of the valley, harvested on September 14): Pale green. Aromas of tangy orange zest, white flowers, crushed herbs and stone. Densely packed, silky and intense, showing lovely saline grip as well as a repeating crushed herb quality that's a bit atypical for Vaillons. Finishes salty and long, with excellent cut. This cuvée is always the highest in acidity and alcohol, noted Piuze, adding that it's carrying 4.8 g/l acidity and a low pH of 3.12.

The aromas of ripe peach, apricot and caramel show a sexy leesy, high-toned Champagne-like character. Concentrated and sharply delineated, with a strong impression of salty dry extract enlivened by bracing acidity. This terrific soil-driven wine can be enjoyed soon with food--or lay it down for four or five years. Incidentally, Piuze noted that the volatile acidity here is 0.7 grams per liter, which provides lift to the wine; in comparison, his 2015s are in the relatively low range of 0.4 to 0.45.
