In some parts of the wine industry, oak has almost become a dirty word. Many winemakers eschew its use, seeing it as something that homogenises varieties and styles with its overbearance, given its potential to dominate a wine’s final flavour. The use of new barriques in particularly has become less and less popular in varieties that are more prone to oxidation and whose delicate aromatic nature is lost to the perfume and spice of toasted oak. This certainly seems to be the case for the Italian varieties Sangiovese and Nebbiolo, for which there is a decided swing back towards more traditional, larger, old oak vessels that do not impart oak flavour to the wine.  Although Burgundy’s Pinot Noir and Chardonnay have a great affinity to new oak, its use is declining significantly. Today in the world of fine wine, terroir is the trumping card and if new oak is a barrier, then its use starts to be questioned – but the Bordelais have long been strong affiliates to long ageing in barrique and the additional complexity that this brings wine.   Amongst Bordeaux’s elite, there remains a strong endorsement for the continued dominance of oak. Hugely influential producers such as Ch. Margaux have no qualms about using 100% new oak. Winemaker Philippe Bascaules believes criticisms of overusing new oak are due to “the weakness of the wine” – rather than the power of the oak. For Bascaules, “The most important quality it brings is the evolution of the tannins,” – and this is something he is not willing to give up. After many years of experimentation, Ch. Palmer's Thomas Duroux (another of the region’s leading names) also believes the oak barrique is the vessel that best develops the tannin structure of a wine. For him, the 225-litre barrique provides the perfect ratio of wine to wood and level of oxygen exchange for “building the wine”, and thus creating more structural complexity. But for some vignerons, new oak does has its limits. Duroux himself is well aware of new oak’s ability to overpower other flavours and he tries to maximise structure, while not losing the primary fruit character and aromatic complexity of the wine during oak ageing. He has come to his own conclusion that the best approach is to age the wine in two phases.  From November to July, he ages the wine in 225-litre barriques (either new or one-year old oak). Then from the July after harvest to the following July, the wine is transferred to larger oak foudres (2,900-litre barrels). Duroux describes this second phase as, “the refining period, where the wine becomes more integrated, more delicate – without taking on oak flavour or oak tannin”. He started trialling this method in 2017 and now Palmer has 20 foudres in operation. For the 2020 vintage, 30% of the wine has been aged this way. Bruno Borie (Ducru-Beaucaillou), however, feels that the reason for using new rather than old oak is often misunderstood. It is not the flavour that is important, but the cleanliness of the vessel. With wines such as the reds of Bordeaux, where pH levels are fairly high, it only becomes more important, since the wines are prone to bacterial spoilage, something that plagued the region in the 1980s and ’90s.  “We don’t sell wood, we sell wine,” Borie says. “We just use new wood because it is clean and sterile.  Brett [Brettanomyces, which causes bacterial spoilage] is so dangerous.” Older barrels are difficult to clean effectively after use, agrees Margaux’s Bascaules, and when a barrel is beyond a year old, the risk of microbial spoilage simply becomes too high. For Duroux, the older barrels also develop a sulphate compound which can “dry out the wines”.   Oak flavours are undoubtedly integral to the flavour of Bordeaux – but even its strongest supporters are today more open to understanding and better controlling its effects. Although Bascaules has no plans to change how Margaux is made, he is excited to learn what the wine would taste like without oak.  Over many years working at the château, this is something he has never experienced and still does not know. He has plans to experiment with glass amphorae, the idea being that by knowing what Margaux tastes like without oak, it will help him better understand how different elements bring flavour to the wine. “Many flavours people assume are from oak are not,” he says. “Cabernet Sauvignon, for instance, can produce coffee-like flavours. Often it is the reaction of oak and fruit that creates the flavours together.” Using these new glass amphorae will bring a better understanding of Margaux’s DNA – or at least this is what he hopes. Borie also notes that long oak maturation is essential for extending the ageing potential of the wine, something alternative vessels simply cannot do. “We make wine for collectors, wines that can be cellared for decades. Bordeaux’s ageing potential is very important, it is one of its signatures,” he says. Since 2003, Borie has extended the time Ducru-Beaucaillou spends in oak from 12 to 18 months to further extend the wine’s 
longevity. “Longer maturation in oak brings a special textural complexity, a different level of integration – a melding of tannins,” he explains.  But there are others in Bordeaux committed to oak alternatives. One of the region’s top châteaux that has made a significant switch from oak is Ch. Pontet-Canet, which has been ageing 35% of its wines in concrete amphorae since 2012. For Pontet-Canet’s Justine Tesseron, “Too much oak hides too much of the fruit flavour.” The clay amphorae, she feels, “help to keep the freshness of the fruit and keep the purity of the wine”. Happy with the results, Tesseron is considering increasing its proportion in the future, convinced they aid them in retaining “a pure expression of what the terroir is giving us”.  But no one in Bordeaux is giving up on the oak barrel altogether. In fact, the strongest advocates of alternative vessels tend to think a combination of both is where you can achieve the most complexity. Guillaume Pouthier from Ch. les Carmes Haut-Brion is known as one of the more experimental vignerons in Bordeaux and was amongst the first to introduce clay and glass amphorae as an alternative to oak. He feels clay in particular is “very interesting” as it allows the same oxygenation as barrels but you keep the “freshness, you keep the first aromatics of the wine”. He has some 2018 still in clay amphora and it smells like it was just picked.   Ageing wine in glass containers, however, sees no exchange with oxygen, meaning “the tannins don’t evolve” and the resulting wine is “very pure”, something which he feels adds energy to a blend although can risk making the wine “too hard” if there’s too much. For Pouthier, small proportions of wine aged in clay or glass brings additional complexity to the wine, working in combination with oak-aged wine.   Despite these tentative steps into alternative vessels, some have been less than impressed with their experiments. Bruno Borie comically uses history as his guiding light: “Amphorae were used prior to the Romans. But the Romans introduced oak because they saw it as an improvement – they chose the gods of the forest. Being ancestors of the Romans, we should do the same.”  For the top growers in Bordeaux, such as Ch. Lafite, oak still remains an incredibly important element in their wine. With their own cooperage on site, they produce 90% of the oak they use each year, with the Grand Vin typically seeing 90% new wood. Lafite’s Jean-Sébastien Philippe believes that in addition to building volume in the wine, oak also adds important “aromatic and flavour complexity”. These additional layers of flavour are down to the skills of the cooper and, for him, are something that should be celebrated. “Light and delicate toasting – not vanilla or coconut – but toasted spice adds complexity to the wine,” he says. While Cabernet Sauvignon clearly has a great affinity to the barrique, Cabernet Franc and Merlot seem to have better results with larger oak foudres and amphorae. Nicolas Glumineau at Ch. Pichon Lalande is going to start trials with glass and concrete, having been really impressed by wines, in particular, aged in glass. “The more structured the wine, the better it is in terms of definition and tannic structure. I was impressed with the results with Merlot, but the Cab Franc was stunning,” he said.   Pomerol’s Ch. l‘Evangile is experimenting with ceramic jars, which they believe not only “preserves intensity, purity and freshness of the fruit, but causes a vortex [within the vessel] constantly moving the wine around, resulting in more contact with the lees, that brings a more rounded, silky texture to the wine” .  While their influence remains minor in the final assemblage, these new amphora advocates are convinced that their judicious use adds complexity to their wine – and oak alternatives look set to become a permanent fixture for many in Bordeaux. For châteaux, like L’Evangile, these experiments are happening in conjunction with a reduction in the percentage of new oak in recent years (from 80% to 50% for L’Evangile) and they are not alone.  Overall, despite the healthy levels of experimentation going on in the region, oak barriques still reign supreme in Bordeaux. In their trials with alternative vessels, many vignerons have fallen back in love with the unique properties of the oak barrique. Is Bordeaux over oak?

Peat in whisky is divisive – both in terms of its intense flavour profile, but also its sustainability. It has long been used in Scotch whisky, adding complexity to the region’s spirits, but has – over the last two decades – been thrust into the limelight.  Essentially, peat is baby coal – decomposed organic matter, in particular sphagnum moss, that takes thousands of years to form. Historically, these peatlands – wetlands such as bogs and fens – were used for fuel, especially where other energy sources weren’t readily available. Slabs of peat, cut out of the ground and left to dry, were burnt, valued for their ability to (like coal) smoulder steadily. Peat would have originally been used to heat pot stills, giving off intensely scented smoke that distillers eventually looked to capture.  Today, energy sources are largely more sustainable, and peat is used in significantly smaller volumes in the kilning process. After the barley has been malted, it is kilned (essentially dried). For peated whiskies, this is done (at least in part) over a peat-fed fire, so that the barley picks up the flavours from the smoke. This barley is then milled, mashed, fermented and distilled to produce the whisky, with the peat smoke lending flavours that range from soot, smoke and asphalt to seaweed and iodine.   Peatlands have been put in the spotlight with climate change, given their incredible capacity to hold carbon – and release it. As a NatureScot report (2023) states, “Although peatlands cover less than 3% of the world’s surface, it is estimated that they store double the amount of carbon held in global forest biomass and more than 30% of the total global soil carbon store (Bonn et al., 2016). Peatlands make up some 9.5% of the UK’s land area with an estimated carbon store of over 3,200 million tonnes, of which 1,600 million tonnes are estimated to be in Scotland (Bonn et al., 2016).” But while they have an impressive ability to lock away carbon, once peatlands are damaged they release some of that carbon – and the same report estimates that degraded peatlands account for circa 13% of Scotland’s carbon emissions. (It’s worth noting that the same institution – then known as Scottish National Heritage – came under fire in 2020 for its agreement with Diageo, allowing for unlimited peat extraction on Islay.)  Peat accumulates at a mere 1mm a year, so it’s easy to see why peat extraction is a hot topic. Protecting and restoring Scotland’s peatlands are firmly on the national agenda, and in 2020, the Scottish government announced £20 million earmarked for restoration, with a commitment to invest more than £250 million by 2030. Unsurprisingly, it’s put Scotch whisky’s use of peat under the magnifying glass. In reality, a fraction (just 1%) of Scotland’s peat goes to the spirits industry – with horticulture the main culprit.  As Bruichladdich’s Head Distiller Adam Hannett says, however, it has provided “a great lens to look at what we’re doing with peatlands”. For him, “It’s about responsible extraction.” Bruichladdich’s production director is also looking at restoration projects with local farmers. In 2021, two giants of the industry announced significant projects – one from Diageo’s Johnnie Walker, partnering with the RSPB to repair wetlands, and a more ambitious pledge from Beam Suntory, with its Peatland Water Sanctuary Initiative. The project aims to restore twice the volume that the company harvests for use in whisky production, with $4 million invested by 2040. Some producers – such as Nc’nean – have sworn off peat totally, while others are moderating usage, or looking for alternatives.   In Sweden – where peatlands represent up to 20% of the entire land area, Mackmyra’s Blender Lii Johnson explains how there is strict regulation around their usage. They are one of a growing number of producers looking to use peat as another way to explore their terroir. As few producers malt and kiln their own barley today, often this is shipped from Scotland (in turn adding to distilleries’ carbon footprints). At Mackmyra, they instead use Karinmossen – local peat, harvested around 40km south of the distillery – seasoned with juniper twigs. She estimates they use a mere 0.1% of the peat bog, bringing in around 30 cubic metres per year.  Johnson feels that it is the juniper in the Karinmossen, along with the small twigs they add (picked from the woods around the distillery), which give a light citrus, almost medicinal note to their peated malts. In Seattle, Westland has pioneered using local peat, and a process with a backhoe to keep the bog intact and limit their carbon footprint. Co-Founder and Managing Director Matthew Hofmann feels the local peat brings Mezcal-like aromas to their peated whisky, Solum.   This quest for sustainability, combined with emphasis on the concept of terroir in whisky, has had interesting results at distilleries around the world. In Minnesota, Brother Justus sources peat from the Boreal Forest and has trademarked a cold-peating process to produce more delicate aromas. Tasmanian distillery Lark looks to Browns Marsh for its peat (around one cubic metre a year) and has had the International Mire Conservation Group confirm that it is having zero impact on the marsh. Others are looking to use alternatives – New Zealand’s Thomson Whisky uses manuka, while Archie Rose has looked to Australian hardwoods and, perhaps most distinctively, Iceland’s Eimverk sources sheep dung from local farms in lieu of peat.  As we’ve touched on, however, it’s not just what is used to peat malt – but how it’s used, that impacts the flavour of the final whisky. “Duration, in my opinion, is the key,” says Mackmyra’s Johnson, emphasising that it is how long the barley spends in contact with the peat smoke that influences the level of peatiness, while it is only the type of peat (or peat alternative) that will effect the nature of the peat flavour. She explains how whether the barley is peated pre- or post-break is also important: it’s most common to do pre-break, as if it is done post-break, when the barley is largely dry on the surface, it doesn’t pick up phenols – the compounds that produce peat’s smoky flavours. For Mackmyra’s peated barley, it is kilned for one day with peat and then for a second day just with hot air.  There are other factors too however – with fermentation times and cuts often a focus. While longer ferments are generally thought to engender complexity, shorter ferments preserve phenols. There are three factions to a still run – the foreshots, heart and feints. The foreshots and feints, the liquid that runs off first and last, are generally discarded, and the cuts between these determine the character of the heart. Phenols generally come late in the distillation process, so later cuts can be preferential when looking for peat character. For Mackmyra’s Extra Rok 2.0 – an extra-peated malt, they do shorter ferments and a later cut, to preserve the phenols.   It's become fashionable to talk about “ppm” in peated whisky – parts per million (perhaps familiar to wine lovers as the same term that is used for sulphur levels), to measure the level of total phenolic compounds. It’s perhaps unsurprising that the compounds are the same as those for smoke taint, including guaiacol and 4-methylguaiacol, for example, but while in the world of wine these are avoided, distillers of peated whiskies have competed to produce the spirit with the highest. This race to make the peatiest whisky possible was arguably inspired by Compass Box’s Peat Monster (first produced in 2003), building to and culminating with Bruichladdich’s Octomore 8.3 (released in 2017) – a whisky with a remarkable 309ppm, the highest level measured to date (compare this to the first Octomore release which had 131ppm). In this frenzied period, Ardbeg’s Dr Bill Lumsden even buried a barrel of peated whisky in a peat bog (which was released as an NFT in 2022, Ardbeg Fon Fhòid). But while one number is an easy way for whisky drinkers to grasp how peaty a spirit is, not everyone believes it’s helpful.  “We don’t like to talk about those numbers,” says Johnson. She explains how ppms are somewhat farcical, in her view. When the reading is taken varies from distillery to distillery, and therefore provides something that is almost impossible to compare. While most are taken at the mashbill stage, if you are later blending, it’s an estimate at best. Not only that, but the make-up of the phenolic compounds will influence how peaty one 100ppm whisky is versus another 100ppm whisky. For Mackmyra, their pure peated malt sits at around 300ppm, but the mashbill for their peated and extra peated whiskies are respectively around 70 and 140ppm, Johnson reluctantly tells me. The level of phenols can also vary significantly between batches of barley – and at Mackmyra they aim to combat this by doing one kilning a year, distilling all their peated whisky at once and blending the batches to create a consistent product.  It's almost for this exact reason that Bruichladdich created Octomore, Head Distiller Adam Hannett explains. The project’s numbered releases have significantly different levels of peatiness, and were a project inspired by their curiosity to see how far they could push the peat level, as well as their partnership with Bairds maltings, who had batches of barley with irregular phenol numbers.   Although peat is intrinsically associated with Islay’s malts, things aren’t as clear-cut today – and as Hannett says, “You can’t categorise flavour by region”. Islay-based Bruichladdich produces both peated and unpeated whiskies. Originally the distillery made heavily peated malts, switching to unpeated styles in the 1960s, and today makes both. Its Port Charlotte brand was first conceived to capture what Bruichladdich would have been like in the old days, as a heavily peated malt. Intriguingly, Bruichladdich briefly tried using Islay peat, however found that they couldn’t get the phenol levels as high. Hannett highlights that another element in phenol levels is the depth the peat is cut from – with lower levels having more vegetation and therefore more phenols.  For Bruichladdich, when they’re looking for an overtly peated spirit, the quality of the underlying spirit is key – working with the right barley and fermentation times, for example. While peated malts might be thought of as heavy, oily and medicinal, they try to avoid this character. He deliberately won’t delay making a cut in the name of phenols, with that decision based on quality – and the result, he feels, is that, “The essence of the peat smoke is light – it’s barbecued.” For him, it’s about the balance between the peat character and everything else.  For blending specialists, House of Hazelwood, peated whisky “is a tool in our arsenal we can use to build a complex blend”, says Eilidh Muir from their Whisky Blending Team. She emphasises that using peat doesn’t necessarily equate to a smoky whisky, but can contribute something to a blend that is much harder to pin down – but something you’d notice if it wasn’t there. “A whisky dominated by a single flavour is often too one-dimensional,” she says – they too are looking for that fine balance.  Peat is just one element that can be used to shape a spirit – and there remains a certain amount of mystery to its influence. The sustainability question isn’t going away, but – as Bruichladdich’s Hannett says, “I don’t know what the solution is at the moment… but we’re looking for one.” As producers look for an answer, they’re pushing boundaries – experimenting with local sources and alternatives – something that will only benefit whisky-lovers, and the environment.  Browse a range of peated whisky or read more about spirits

How whisky distillers are using peat today

The big smoke: peat and whisky

From January 2021, the Bordeaux and Bordeaux Supérieur appellations permit the use of several new varieties – Touriga Nacional, Marselan, Castets and Arinarnoa, as well as two white grapes, Alvarinho and Liliorila, the theory being they’ll help shield the region from the ever-growing threat of global warming. As the region heats up, or more importantly dries up, some of the Bordeaux mainstay varieties are suffering from rising alcohol levels, disease and water stress. The new varieties all possess properties that counter climate change – natural high acidities, resistance to mildew and later budburst to offset the risk of spring frosts. While the recent changes only affect wines under the more basic Bordeaux appellations, are they paving the way for a wider relaxation in the region’s rules? And does that mean the flavour profile and identity of Bordeaux’s top châteaux are about to change? For Pierre-Olivier Clouet at Ch. Cheval Blanc there is concern over the potential of the varietal blend (encépagement) changing. “We believe that the encépagement is part of the DNA and the identity of the estate,” says Clouet. “Planting some Touriga Nacional, Grenache, Syrah at Cheval Blanc… it seems ridiculous.” While plenty of winemakers up and down the Médoc are dismissive of the idea, the warming climate is not selective – and even the top terroirs are going to be affected. The 2020 vintage was the hottest on record when you look at the temperatures throughout the 12-month period. The summer was also one of the driest, with not a single drop of rain in some regions for over three months. Pomerol, according to Omri Ram of Ch. Lafleur, is into its fifth consecutive year of drought and these weather patterns are becoming the norm in the region. Clearly some terroirs are better prepared for climate change than others. The clay soils of Saint-Estèphe and the limestone bedrock of Saint-Emilion, for instance, survived 2020’s drought virtually unscathed. These water-retaining soils are adept at locking in moisture and slowly releasing it through the drier months. But the deep gravel soils of the Left Bank are putting vines in real danger during long periods of drought. Lorraine Watrin from Ch. Montrose outlined the huge difficulties faced at their other Saint-Estèphe estate Ch. Tronquoy-Lalande, where (unlike Montrose) the estate’s gravel soils go down a staggering 10 metres. The drainage is so good on these soils that when there is no rain, the vines really suffer. Montrose is more fortunate, having just 1.5 metres of gravel sitting on a bed of moisture-retaining clay. But ongoing droughts are going to pose real problems for deeper gravel vineyards in the future – and solutions need to be found. Despite the obvious threat of drought, speaking with top estates on the Left Bank, they remain fairly comfortable about their future, even though their best soils are on raised gravel beds. The reason why? Cabernet Sauvignon. As temperatures have increased and the level of rainfall has dropped, Cabernet Sauvignon has proved its mettle. The vine is incredibly resistant to disease and its long ripening cycle has seen the variety thrive in the longer, more intense summers. Nicolas Glumineau from Ch. Pichon Comtesse is a big fan of Cabernet Sauvignon and has continued to increase its role in his wines’ make-up over the last decade. “Even if the temperature increases, Cabernet Sauvignon will still be very adaptive to the Left Bank,” he says. In their 2020, the wine consisted of 77% Cabernet Sauvignon with a further 7% Cabernet Franc, Merlot representing just 17% of the blend. Glumineau is not alone, in fact amongst all the producers I spoke to, there was little to no concern over Cabernet Sauvignon’s future and its dominance in their blends in the long term. Being such a large wine-growing region and with plenty of investment, Bordeaux is a hotbed for change, but Ducru-Beaucaillou's Bruno Borie thinks the addition of new varieties is premature. He reminds us that Bordeaux is one of the more moderate climates in Europe. It wasn’t that long ago his father was forced to plant more Merlot to avoid having to chaptalise the wines (add sugar to the must) because the Cabernet Sauvignon wasn’t ripe enough. “Without being arrogant and with all sincerity, we benefit from having Cabernet Sauvignon riper much more often than in the past,” he says. “Bordeaux is the northern limit for ripening the grape and here there is no need to replace it.”  Merlot’s future is perhaps a little less assured on the Left Bank, as Borie admits – but he believes the alternative to Merlot is likely to be already permitted varieties, rather than new ones. “Petit Verdot and Cabernet Franc should keep us going another 50 to 70 years at least,” he says. Asked why not just switch to 100% Cabernet Sauvignon, Borie believes that however hot or dry it gets, the low-lying, clay riverbed vineyards would never ripen Cabernet. Despite concerns for Merlot’s future, grown in the right places the variety continues to thrive on the Left Bank. Just look at its success in 2020, a very hot vintage. Rainfall at just the right time helped retard alcohol levels in the Merlot. For those whose cooler Cabernet Sauvignon parcels didn’t fully mature, their Merlot replaced it and played a more significant role in the blend and saved the vintage. The grape is still fulfilling its role as the balancing variety in today’s Bordeaux blend. Despite Cabernet Sauvignon’s and Merlot’s impressive performances of late, plenty of experiments are going on, even at the very top estates. Ch. Lafite-Rothschild is already trialling massal selection of their own vines and new varieties including Touriga Nacional, Marselan and Malbec. For the moment it is too early for Lafite to draw any conclusions, but they’re keeping an open mind.  While the major estates aren’t switching up the blend yet, producers are looking at peripheral Bordeaux varieties as potential alternatives. On paper, Malbec seems a good option. Before phylloxera, Malbec was the most planted variety in Bordeaux, but never really made a comeback after the outbreak. But seeing Malbec’s success in the hotter, drier mountain valleys of Argentina, could it rise back to prominence with global warming? Nicolas Audebert – winemaker at Rauzan-Ségla and previously at Cheval des Andes in Mendoza – is not so sure. Malbec in French literally means ‘”bad beak” or “bad nose”, thanks to the negative reputation the variety had in Bordeaux, even when more dominant in the blend. “Prior to phylloxera, Malbec was used as a ‘filler‘ grape,” Audebert says, “used to balance out problems in the vineyard – namely providing more colour and ripeness to the wine.” Audebert compares it to Pinot Meunier in Champagne, whose role is similar. “Pinot Meunier is less sensitive to frost, so it is planted in the more frost-prevalent lower slopes, rather than the best terroirs. It never had the chance to reach the potential of Chardonnay or Pinot Noir. Malbec suffered the same issue.” Audebert has planted Malbec at Ch. Berliquet in Saint-Emilion. He believes Malbec on clay could be extremely interesting and is keen to see how it works in the blend. But Malbec has its problems: it’s very sensitive to coulure (flowers not developing into berries, therefore producing lower yields), as well as mildew. Of the Bordeaux varieties, it responded the least well to grafting – hence why it wasn’t replanted widely in Bordeaux after phylloxera. Audebert reminds us that Argentina didn’t have these problems: “Low humidity in Mendoza meant mildew was not a problem in spring and there was no grafting, as the region used flood irrigation to battle phylloxera.” Since these remain challenges for the variety in Bordeaux, he doesn’t see it becoming more dominant in the future. Many wineries up and down the Médoc are lowering the proportion of Merlot in their blends, opting instead for more Cabernet Franc. “Blending just 5% of Cabernet Franc in with Merlot can be an effective method of lowering the alcohol, as well as adding freshness,” says John Kolasa (ex Director of Ch. Canon ). “It is something Pétrus did with the 2019 vintage. Look at the success of Ch. Figeac in 2019 – a third Cabernet Franc, a third Merlot and a third Cabernet Sauvignon. This is a big increase of Cabernet Franc in the blend and is performing better in the warming climate.” There aren’t many wineries in Bordeaux not increasing the Cabernet Franc plantings in their vineyards, given its improved performance in a warming climate. Pichon Comtesse, L’Eglise Clinet and of course long-term believers Cheval Blanc and Lafleur are all confident of the variety’s future and its growing role in the Bordeaux blend, both on the Left and Right Bank. Petit Verdot is another late ripening variety that thrives in the hotter, drier conditions. Could this peripheral variety become a star performer in Bordeaux’s future? Unlike Cabernet Franc it has yet to become more prominent in blends, often because just a small amount can dominate the structure and flavour of the wine and overpowers the more nuanced characters of Cabernet. Nicolas Glumineau is unsure that the variety is a saving grace, however. “I have some difficulties with Petit Verdot, it is a very tricky grape to grow… it’s very fragile – to wind, to rain, to many things and finally you just can’t pick it absolutely ripe every year.” While the new appellation rules allow new varieties, is changing the blend really the best solution to the ongoing issues of global warming? Ch. Margaux’s Philippe Bascaules certainly doesn’t think so. For him, changing the grape varieties is far too extreme when there are other, more subtle changes that, he believes, would be much more effective. “Currently we are at 10,000 vines per hectare but we don’t have to be,” he says. “Changing the row orientation would also have good results. Good for changing the effect of sunburn on the grapes.” Ch Pontet Canet's Justine Tesseron is another advocate of making alterations in the vineyard, not changing varieties. She is happy with how the Cabernet performs on her gravel soils and feels that there’s simply no need to experiment with other grapes. For Tesseron, the way in which the vines are farmed is more important: “A biodynamic vineyard is better placed to cope with the extremes. We treat individual vines based on their individual needs – it is all about the small details.”  Pierre-Olivier Clouet at Cheval Blanc sees a change in varieties as a last resort. He and his team have long been thinking about how to tackle global warming. “We are sure that the answer is in the vineyard management,” he says. They are looking at rootstocks, the size of the canopy, the yield (“If we want to preserve freshness, it’s better to have a little more yield”), cover crops, ploughing or no-till farming and how polyculture can help. Clouet is another Bordeaux vigneron who sees the problems – but also plenty of potential answers. They experiment a lot at their other property, Ch. Quinault l’Enclos. “We try to always be very open minded,” he says. But he is clear also that “We should never forget who we are.”  Bordeaux is awash with a mix of cautious optimism, as well as open-minded experimentation. For the time being, it doesn’t look – at least amongst the more prestigious classified estates – like they will be adding new varieties to the blend any time soon. Is climate change threatening the Bordeaux blend?

Anyone who’s had the misfortune of tasting a de-alcoholised version knows that alcohol is key to wine. Take it away and it leaves a gaping void in the glass – stripping the liquid of body and flavour. Those attempting to craft alcohol-free alternatives look to make up for its absence with sugar or flavourings, but the results don’t come close to the real thing. And of course the very fermentation process is key to complexity – there’s a reason we aren’t collecting single-site examples of even the finest raw grape juice. But alcohol’s a hot topic – and not just because of any health considerations. Trends and shifts in climate have seen the average ABV (alcohol by volume) inch upwards. Indeed, a report last year from Liv-ex suggested the average alcohol level has leapt almost an entire 1% for both California and Bordeaux since the 1990s. While once 14 or 14.5% might have been the purview only of the New World, it’s rapidly become the norm in Bordeaux. Rising temperatures are one element, as indeed is technology and know-how – harvesting cleaner, riper fruit and more efficient winemaking. Then, of course, there’s the fashion factor – the pendulum swing, arguably driven by Robert Parker, for bold, ripe, sweet and inevitably high-alcohol wines. “He loved that weight, that impression of sweetness,” Paul Hobbs tells me. “We jumped on the wagon – but we didn’t know what we were jumping on.” A cult name, Hobbs crafts some of Napa’s highest-scoring and most expensive Cabernets; indeed, Parker named him his Wine Personality of the Year twice. Born in New York State, the Davis-trained winemaker founded his namesake estate in 1991. He’d started his career at Robert Mondavi (arriving in 1977), working at Opus One and Simi before setting up on his own, with a flurry of personal projects and list of consultancies that has grown ever since. He openly admits that he got caught up in “Parkerisation”, crafting big, bold wines – no great surprise given the scores, and sales, that followed for those who did. But he’s been pulling back in recent years, and has never quite fit the cookie-cutout for the cult Cabernet crew. Ever since he first started making his own wines in the 1990s, he’s championed native yeasts (relatively radical at the time), and no fining or filtering. While he embraces oak, he’s always been aware that it’s the quality of fruit in the vineyard, preserved by operating a flawlessly clean winery, that is key to producing fine wine. Make no mistake that Hobbs makes rich, plush wines – and the alcohol levels certainly don’t sit at 12.5% – but for him there is much more to alcohol than one number. “I didn’t give much thought to it in the beginning,” Hobbs says. “And there wasn’t really much reason to.” When he was at Mondavi, the wines tended to sit at 13.5% – but then they started to go up. “There was a time when 16% was normal,” he confesses with some amazement. “Some of these wines were difficult. They didn’t age. They would get tired,” Hobbs says. “But all that took us time to learn – no one had ever been in that domain before.” He notes that there was “a backlash” in the British press against wines that didn’t please the palates of “the Hugh Johnsons, the Jancis Robinsons and Anthony Roses”; a response he clearly feels was a little unjust. “It’s far more complex than a simple number,” he says. “15 isn’t always 15.” And it’s true – alcohol doesn’t feel the same. How many times have you looked at the label of a wine and been surprised – either for better or worse? Alcohol is one element working in tandem with a wine’s body, concentration and flavour complexity – and there’s no easy figure to tell you how it integrates with these other components. But there’s another key reason why the same alcohol level can seem so different: the nature of the alcohol. The main alcohol in wine is ethanol (a molecule with two carbons), however fermentation produces other types of alcohols – specifically superior or higher alcohols. Often known as fusel oils – from a German term “Fusel” which is colloquial for low-quality booze – these alcohols have three to six carbons in their molecular form and are significantly more viscous (hence “oils”).  While ethanol is pure and relatively neutral, these heavier superior alcohols can – in low volumes – bring flavour, texture and interest. “It’s what makes something more than vodka,” Hobbs explains. Hexanols can add herbaceous aromas; 2-phenylethanol gives a rose-like scent. But they’re also associated with headaches and hangovers. In the world of spirits, these fusel oils are what runs out of the still last – forming the “tails” of distillation, which are used to varying degrees depending on the type of spirit being produced. “Alcohol is alcohol? Well, yes and no,” says Hobbs. It's high numbers of these superior alcohols, he believes, that can make one 15% wine feel clumsy and lumbering, while another – with lower fusel oil levels – can carry the same ABV with ease. The production of these superior alcohols depends on many things – yeast strain, temperature, oxygen availability and acidity. In general, red grapes produce more of the compounds (which is partly why spirits tend to use white grapes as their base). But Hobbs thinks it ultimately comes back to the vineyard: he’s started noticing that if berries are heat-damaged, they produce more superior alcohols. “Our goal is to keep these superior alcohols as low as possible – and that’s just about harvesting not sun-damaged fruit,” Hobbs explains. Under the warmth of the Californian sun, it’s common to get sun damage early in the season, but shrivelled berries tend to fall off nascent clusters of their own accord; more concerning is fruit that can be damaged internally and then won’t go through véraison, which needs to be sorted out. Late in the season, Hobbs and his team look to walk through the vines and cut off any “shoulders” (the side cluster at the very top of a bunch of grapes) that have been exposed. With global warming, this is an increasing threat – and an element of climate change that is only now being considered. If grapes are sunburnt or shrivelled, they tend to struggle with fermentation, and the stressed yeasts produce more of the superior alcohols. “The wine is going to be fat and heavy on the palate,” says Hobbs. “You can lower the alcohol by adding water – but it doesn’t change its personality.” If the fruit is in good shape – he says – you simply don’t have that issue, even at 15.5%. And those wines, provided they’ve got the requisite balance, age amazingly. Rajat Parr (star sommelier turned winemaker) and Jasmine Hirsch (of Hirsch Vineyards) founded In Pursuit of Balance (IPOB) in 2011 to champion lighter wines that they felt “weren’t chasing after ratings from wine critics”. These “new California” wines (Jon Bonné published his book The New California Wine in 2013) tended to have lower alcohols and less oak – following the swing of the pendulum back the other way; an anti-Parker effort in many ways. I attended the last London IPOB tasting in 2016, catching the crest of the wave as the movement called it quits – feeling they’d achieved their aim of building the reputation of an alternative California. Paul Hobbs arguably sits at the opposite end of the California wine spectrum (“Should all wines be 13.5%?” he says to me, “Why is that the magic number?”) – but philosophically, they’re surprisingly aligned. It’s not about the number, it’s about the balance – and Hobbs, like any posterchild of the new California movement, will tell you that the secret lies in the vineyard. The challenge is to farm and pick the perfect fruit – to find the sweet spot between flavour, sugar and phenolic ripeness. As Hobbs says to me, “That’s the dance between man and nature.” Forget the maths; this is farming. A note on the numbers Strictly speaking, the alcohol level on any label isn’t exactly what’s in the bottle. For wines sold in the EU and UK (both those made here and imported), producers are given 0.5% leeway – meaning that what’s on the bottle is generally reflective of its contents. In the US and Australia, however, wines sold domestically can differ by as much as 1.5% from the label – meaning a wine labelled as 14% could be anything from 12.5 to 15.5%. The circus is back in town. This week saw the world’s wine trade touch down in Bordeaux to taste the latest vintage en primeur. The primeurs week is a remarkable thing, with the world’s grandest châteaux hosting thousands of members of the trade – at tastings, dinners and lunches – as they unveil a new vintage. After a two-year hiatus, it was a privilege to be back in person, abandoning the Zoom calls and samples that have provided an efficient – if far less enchanting – alternative. And producers seemed just as delighted to be flinging their doors open, dusting off their finery and polishing the endless glassware to finally lay on the show that has been stuck in rehearsal since March 2020. The hospitality shown was extraordinary – and we can’t thank the many producers who welcomed us enough. We didn’t know what to think of 2021 prior to our arrival. We were determined to be open-minded – after the year had received coverage only for its challenges. As is now becoming the normal, spring frosts led to sleepless nights for the region’s vignerons, and a wet spring resulted in significant mildew pressure – a particular trial for producers working organically and biodynamically (as many now do, even if they aren’t officially certified). Overall the season was cool and – after the sunny 2018, 2019 and 2020 vintages – ripening fruit was not a given. Chaptalisation was a necessity for many – and is something we’ll be delving into more. This was a totally different year that asked much of producers in both the vineyard and winery, with nerves of steel, exceptional dedication and attention to detail.  There is much to discuss when it comes to the year – and we’ll be publishing our full report in due course, digging into the specifics. But given the conditions producers faced, it was all the more important to be in Bordeaux this year, tasting the wines and talking to winegrowers about the nuances. For while headlines of mildew and frost might cause fright, there are some fantastic wines. On the Left Bank, Cabernet Sauvignon thrived, with Merlot suffering from coulure – and as a result Cabernet takes the starring role in blends (in some instances representing the highest percentage of the blend ever). Generalisations are difficult when there were so many decisions that influenced the final wine, however Pessac-Léognan as an appellation seems to have fared particularly well, while there are many individual estates worth seeking out. On the Right Bank, Merlot escaped issues with coulure, and there seems to be more consistency in Saint-Emilion and especially Pomerol than in the Médoc.  Quality (and indeed quantity – with yields down by as much as 50% at some estates and cellars full elsewhere) is not homogenous, but the best wines show great elegance, with crunchy fruit, floral aromatics, vibrant acidity, a framework of chalky tannins and lower alcohols (often 12.5 to 13.5%). They speak of place, offering a transparency that comes with cooler conditions. Some might deem it an “British” vintage – with an old-school charm that is deemed to suit palates used to “proper Claret”; some consider it “classical”, with its sappy freshness and modest alcohols. We aren’t so ready to pinhole it; the best wines are more sophisticated than those of yesteryear – and take full advantage of the technology and know-how that winemakers are armed with today. This is a year that demanded to be assessed château by château – hanging on the choices, means and mettle at each address. If you look past the headlines, however, you’ll find wines that surpass expectation, surprising and delighting with a finesse that blockbuster years rarely deliver. The spirits market is booming. In October 2019, a bottle of 1926 Macallan FINE+RARE 60-Year Old became the most expensive bottle (of either wine or spirits) ever sold at auction in the world, going for £1.5 million – £300,000 more than the same whisky had sold for a year before.  That record may not have been broken yet, but it’s likely only a matter of time. There was a 33.37% increase in the volume of single malt Scotch whisky sold at auction in 2019, with 143,895 bottles sold, worth close to £58 million – a 41.54% increase on 2018. Over the last 10 years, rare whisky has outperformed every other alternative luxury asset, with 353% growth to 2020 Q2. “The rare whisky market has performed phenomenally well over the last decade, outperforming many other categories. We’ve seen growing demand in premium whisky from clients globally,” says Craig Norton, our Managing Director for the UK and Ireland. In five years, we’ve seen the number of spirits buyers rise by 601%, with spirits sales in the same timeframe growing by 698%.  It’s an exciting time for whisky, with a growing international audience as Scotch whisky exports rise (105% in the last 10 years), especially in developing markets like China (up 323% in 10 years). There are also an increasing number of younger consumers diving into the category nose-first; Sotheby’s first online spirits auction last year saw 42% of buyers aged under 40.  The market has so far been dominated by a handful of the biggest names in single malt Scotch, with The Macallan representing an astonishing 40% of the market by value; however
Japanese whisky isn’t far behind. A bottle of 55-year-old Yamazaki sold for HK$6.2 million (US$795,000) in August last year, setting a new record for the category.  The now-closed Karuizawa has become a cult name among collectors, and had something of a halo effect, as our Head of Spirits David Walters said, “Japanese whisky is still going crazy. We sold the Karuizawa Pearl Geisha 37 Year Old (56.9%) pre-release for £12,500 in bond; just a year later it was going for £24,800. The most expensive single bottle of whisky we’ve sold was a Yamazaki 50-year-old (2011 release), for £170,000.” The last two to three years has, however, seen a shift, with a new focus and interest on not buying just bottles but whole barrels or casks. “The ability to personalise or customise single cask bottling has proven extremely appealing to clients,” Norton says, “However, it’s not simple. Barriers can be a lack of understanding of value, the process of maturation or
reselling, or gaining access to the market.”  “The challenge can be guaranteeing provenance,” explains Walters. “Our preference is always to work directly with the distillery.” The IWSR estimates the value of the Scotch whisky cask market at $40 million – and forecasts a trend for cask sales in other categories, such as Bourbon, rum and other US whiskey. While occasionally we see more mature casks (such as a mature Macallan Sherry butt we sold last year, for £600,000), it is more common to see casks as futures, much like en primeur.  Given the long-term timeframe for producing fine whisky, with the first product often not released for five or 10 years, cask sales have fast become a way for the rising number of new distilleries to build revenue in their early years. It is rare for casks to be sold after the first year of production, however, making them a once-in-a-lifetime opportunity to get in on a new distillery – one that may just be the next big thing. It’s this excitement, Walters says, that should attract buyers who are also in it for the journey. Naturally, “founders’ casks” – as they are known – are finite in supply, adding to their appeal for collectors. The spirits market remains dominated by single malt Scotch – with Brora, Karuizawa, Dalmore, Bowmore and Springbank amongst the most collected names – but consumers are branching out. “We’re beginning to see collectors diversify their portfolios,” says Walters, “discovering premium and collectable rums.” He highlights the popularity of Caroni – a Trinidad distillery, no longer in production, that has parallels with Karuizawa – and Hampden, in particular. Fortunately, Covid seems to be having little impact on sales. Even in the last year, the
market has seen 12% growth; as Knight Frank reports, “Anecdotally, drinkable investment classes have always down well in a downturn, perhaps as their owners have looked to drown their sorrows.” In fact, IWSR data shows that “between 2008 and 2012, global prestige-plus
spirits (generally $100+) grew 82% in volume, and almost 230% in value, [reinforcing]
the resilience of high-end spirits after economic challenges”. Nevertheless, our advice is always to buy only what you are prepared to drink – a worst-case scenario that few wine or spirits lovers find much of a burden. Browse all whiskies or read more Editorial

When visiting the cellars of Domaine Hubert Lamy, you are likely to come out a lot wiser than you were when you went in. Olivier Lamy has been experimenting ever since he joined his father at the domaine in 1995, and he loves to share his findings.  On our last visit we were given two white wines blind and asked to assess them. One thing seemed immediately clear: with its deeper colour and more developed savoury tones, one wine was older than the other. “No” he replied. “They are the same age.” Okay, perhaps the reason for such variation in development is due to the wines coming from two different quality sites – a Grand Cru versus a village wine for instance? “No, it is the same vineyard,” he replied. Perplexed, the only other solution I thought must be his high-density plantings. (Olivier has planted parts of his vineyard three times the density of the norm in Burgundy, with up to 30,000 vines per hectare), the result being smaller, more flavourful berries. Wrong again.   “Wrong experiment,” he smirks, leaving us completely stumped. He presents the two bottles and the answer lies with the capsules. Both wines have the same cork closure but one has the traditional metal capsule seal, the other bottle has been dipped in wax. It is the wax capsule that seems not only younger and fresher, but more texturally complex, yet both the wines are from exactly the same vineyard, with the same vine density and vintage. It is simply the closure that has preserved one wine so much better.   Olivier has been experimenting with closures for years. There have long been concerns about natural cork, with the risk of cork taint top of the list of potential problems, but it was the issue of premature oxidation, particularly with white Burgundy, that led Olivier to investigate whether maybe the problem lay with the closure.  Despite the drop in natural cork’s popularity and their replacement with alternative, “technical” corks and screwcaps, the natural cork still has plenty of advocates, and it remains the most sustainable and natural of solutions for many. A better understanding of the causes of cork taint has vastly improved the natural cork’s reliability and reputation, yet “being a natural product there remain irregularities in the cork,” says Olivier. Natural cork is irregular in structure, therefore allowing different levels of oxygen ingress, meaning that the same wine can mature differently depending on the specific cork, and resulting in bottle variation.  Olivier also believes the irregularities of cork have become worse in recent years due to climate change, with the warmer temperatures resulting in even less consistent cork.  The benefit of the wax capsule, according to Lamy, is that it acts like a “bandage”, offsetting the irregularities of the cork. His grandfather and many other winemakers often used wax capsules for wines destined for their personal cellars; it was the reliable ageing capacity of these wines that prompted his experiments. Trialling the effects of waxed and unwaxed capsules since 2009, he decided to use wax capsules on all his wines in 2016. Over this time, he has experimented with varying diameters and lengths of cork, different treatments, as well as testing plastic, agglomerate, and technical corks before concluding that longer (54mm), technical DIAMs (a natural cork-based agglomerate closure), under wax seal produce the best results and best protect against premature oxidation.  Does this mean we have a definitive answer to the question that has plagued white Burgundy for the last couple of decades regarding premature oxidation? While his experiments certainly seem to imply that the irregularity of natural corks could be one of the biggest culprits and wax capsules one of the most successful solutions, he does not believe it is only the cork which is at fault. “There are two problems,” he says. “Poor-quality corks and the fact that wines are more fragile these days.”  The increased fragility of white Burgundy, Lamy believes, is a modern phenomenon. Climate change produces riper grapes, combine this with too many new barrels, modern presses that are too protective and you have wines that are more susceptible to oxidation. All too aware of this concern, many vignerons, Lamy believes, attempt to overprotect their wines, adding too much anti-oxidative sulphur dioxide (SO2) throughout the winemaking process. Counter-intuitively, this in fact makes the wines more susceptible to oxidation. When wine is made in a more protective environment, the more volatile phenolics remain in the wine, whereas these will drop out of a wine  when it is made oxidatively at the early stages of vinification, resulting in a much more stable wine.   Despite vignerons’ better understanding of the effects protective winemaking has on long-term ageing, these techniques are still used by many because it makes the wines so much more approachable in their youth. Many white wines today are built on developing these youthful aromas at the expense of ageing potential, Lamy argues. This is, he says, is in direct contrast with the past, where wines were built on texture, remaining fairly closed in their youth, with the aromas only developing with age.  There are still many traditional vignerons in Burgundy producing textural white wines built to age – with Lamy (who does not enjoy young, aromatic Burgundy) being one of them. With the warming climate, he has, however, had to adapt his winemaking to protect these more fragile wines. These days he manages the press cycle according to the vintage and allows for more solids when required.  With all the wines now bottled under DIAM and wax capsules, all Lamy can do now is wait. But, if his experiments are anything to go by, the risks of premature oxidation are low. Of course, he’s not sitting back – the dynamic winemaker is looking to experiment even more, pushing the boundaries to produce the best, and most age-worthy, wine possible.

The air is cool and crisp, with the radiant blue skies that only late winter can provide. On the crest of the hill in front of me, a troupe is studiously pruning Ch. Lafite Rothschild’s oldest Cabernet Sauvignon vines, their roots sinking deep into the precious gravel soils that define the First Growth’s wines. Looking over a junior member of the team’s shoulder is Luís Pinto, making sure that no mistakes are being made as they shape the vines for the future, laying the groundwork for not just 2024, but the vintages beyond that. Sporting navy-blue Domaines Barons de Rothschild overalls (vintage, sadly out of production and unavailable for purchase – I asked), Pinto has been working at the estate for over 30 years, and now leads one of the vineyard teams. As you might guess given his name, his family is Portuguese, although he was born and raised in Bordeaux. In fact, his mother even worked the harvest at Lafite, and Pinto has pictures of himself as a child at the on-site nursery the château then had for workers’ offspring – perhaps sewing the first seeds of his future profession. As Louis Caillard, Vineyard Manager at Ch. Lafite Rothschild and Ch. Duhart-Milon, explains, Pinto isn’t an anomaly. Caillard heads up the 80-strong team which works across both properties (and are managed identically when it comes to the vines). The vast majority of this team are extremely local, coming from within a 20-kilometre radius of the château, and once they join the team, few ever leave. Much has changed over Pinto’s many years working these vines – offering an on-the-ground view of viticultural trends. He remembers a time when they would rip out hedges and trees to make room for vines, focused more on yield, now coming full-circle to reinstate the biodiversity that existed before. Today there’s more appreciation of the craft and calling of a vigneron, or vine-grower – a return to traditional vineyard management.  Looking at pruning, for example, Pinto explains how there are no set rules: “Each person prunes a vine as they wish,” he tells me. They respond to each vine, its needs, looking at the sap flow and thinking about its long-term future, rather than just the next season. It’s very Simonit&Sirch in approach – although Pinto is bemused by such a suggestion; for him, it’s how he learnt to understand vines. “All it is, effectively, is that we think,” says Caillard. “It’s always existed; it’s just that we had forgotten it a little.” The challenge is teaching this sort of instinctive approach to managing a vineyard. “I don’t follow a recipe anymore,” says Pinto. It’s not just knowledge he is trying to pass on to his team, but “a way of thinking”, he says, one that inevitably comes from experience, from making mistakes and learning from them. There’s a drastic difference between studying the theory from a book, and standing in front of a vine, secateurs in hand. Of course, the idea of making mistakes when the wine commands the reputation (and price) that Lafite does might seem daunting – but it’s this that sets top addresses apart. Lafite’s scrupulous approach to quality, declassifying any fruit that doesn’t meet its very high standards, is a luxury that not all producers can afford. For Pinto, it’s this dedication to quality and long-term view that has kept him at Lafite all these years. There are plenty of properties that will rip vines out once they reach a certain age, all in the name for better crop loads, but at Lafite, the philosophy is to see “how far we can take the vine”, nurturing parcels into old age. His work might be cyclic, following the vine’s yearly progression, but there are changes every year – an effort to constantly evolve and improve. This, perhaps, is what – for me – is most interesting about Lafite. It’s not just the finesse and elegance of its pinpoint Grand Vin that sets this estate apart, but the way in which it has quietly been changing the way Bordeaux works, pushing forward in its pursuit of excellence. For over a decade, they’ve had Manuela Brando leading their Research & Development; talking to her is fascinating, with trials on everything from biodynamics, rootstocks and treatments to umbrella-like covers as an alternative way to combat mildew. If successful, these trials are transferred to the wider vineyard – with training that means the team never stops learning. Just the other day, Pinto tells me, they had a session on agroforestry – something that he’s clearly fascinated by. Pinto seems relaxed, joking lightly with us, but is also quietly serious when it comes to his work, knowing that every decision they make in the vineyard is critical to the quality of the wine that eventually emerges from the cellar. “Every decision has an impact,” echoes Caillard – “and, in fact, nothing is simple.” Difficult it might be, but Pinto is pleased with the progression he has seen over the years. “You can feel the terroir a bit more again,” he says. The shift to organic, re-introduction of hedgerows and trees to the vineyard, which in turn has brought an array of fauna – butterflies and ladybirds, for example, has transformed the property. As an apiarist, he’s acutely aware of the wildflowers that now blossom and abundant bees they attract. At the end of the day, however, there’s no wizardry, he suggests, to what they do – it’s simple: “We respect the vines a bit more.” With the gloss of an estate like Lafite, a First Growth whose reputation is so immense, it’s easy to forget the work that happens behind the scenes. But, as Caillard knows all too well, “You cannot achieve anything technical without the people; people are key to everything we do.” People like Pinto, so clearly at one with their calling, the place and vines, are what make truly great wine – separating the excellent and exceptional. As our conversation draws to a close, Pinto returns back to his team, his stocky frame receding down the row of vines and weathered face turned once more to the bright sunshine, as deeply rooted in this terroir as the Cabernet Sauvignon that surrounds him.
