Matthew Fioretti is not everyone’s cup of tea. The man at the helm of Cerbaiona doesn’t mince his words – and he’s got firm views on, well, I suspect pretty much everything. But he’s also unwaveringly honest, with a frank approach that is enjoyably refreshing – and rather unusual in the fine wine arena. He’s got a vision and story, one that he wants to tell, but it’s not one that’s been spun by a PR agency; it’s his. Fioretti has long been involved in the world of wine, running an import business in the US (Summa Vitis), which focused largely on Italian wine. He moved to Italy in 2004, and shut down the Summa Vitis operation in 2009 as he set his sights on making wine himself. After a few false starts, he heard that Diego Molinari – the longtime owner of Cerbaiona – was looking to retire. Along with a group of investors (the most significant of which is the American collector Gary Rieschel), Fioretti purchased the property in 2015, reportedly for €5.8 million. Molinari was in his 80s and it was clear that – while the site itself was exceptional – the property was run down and needed work. As we reported a few years ago, he promptly embarked on a radical project to restore the property and unexpectedly decided to declassify the 2014 and 2015 vintages to Rosso di Montalcino, only releasing the first Fioretti-era Brunello in 2021, with the 2016 vintage – the first to be made entirely by the new team.  Now, almost a decade later, he’s starting to be able to realise his vision for the estate – as we discovered on a visit earlier this year, with problems that “aren’t easy to solve”. The challenge, he explains, has been evolving from an “artisan” to an “atelier”. Under Molinari, the property developed a legendary reputation, but the operation was rudimentary – a traditional, family business, doing things the way they had always been done. Fioretti wants to bring the estate into the modern era, elevating the terroir with technical precision to craft wines that continue the Cerbaiona legacy. It is, he says, “a transition I wasn’t expecting to make”, but one that he feels is essential to safeguard Cerbaiona’s future. The distinction between artisan and atelier is a nuanced one – but one that comes down to an emphasis on craft rather than art, with a commitment to consistency, for which precision and hygiene in the winery are key, as well as a high level of technical knowledge. He confesses that he had envisaged having a more hands-off approach in the winery, having imported a lot of natural wines in his previous career, but has rapidly realised that top-level winemaking is full of “necessary compromises” (diving into issues like the fault quercetin). As a craft, winemaking can’t just be subject to the “whims of the producer”, as he suggests is the artisanal way. “I prefer to work more meticulously,” he explains. The American talks at pace, flitting from TS Eliot and the concept of “the pure critic” to Albertolli and neoclassicism, in amongst technical detail about fining and filtering. The estate is closed to visitors, deliberately to avoid distraction from what Fioretti wants to be spending his time on – making wine. As he whizzes us round the winery, our heads spinning as we try to absorb every detail, he talks us through exactly how he’s bringing new exactitude to the operation. The vineyards have all been replanted and a steep-sloped olive grove replaced with vines, all with selected rootstocks and clones sourced from France’s Guillaume nursery, to give them the best possible raw material. Once seen as too labour-intensive to farm, he’s convinced the ex-olive grove might just be the best site on the property. The rustic old stables and granary that acted as the cellar and winery have been carefully renovated, with water and drainage installed throughout, and the equipment all updated. Importantly, Fioretti has added a full in-house laboratory – something that is exceedingly rare for a property of this size, let alone Italy where the high-tech approach is far from the norm. The fruit is now all chilled after harvest, de-stemmed and cold-soaked, using inert gas to protect the must. While he used upright wooden tanks for fermentation for his first five vintages, Fioretti switched to stainless steel to allow for better hygiene and temperature control (preferring a maximum 26̊C), as well as allowing him to programme them for automated punch-downs and pump-overs. He’s started co-inoculating for primary and malolactic fermentation, meaning the wines go into barrel very clean – and can be sulphured right away. These are tweaks, minor modernisations, but one of the most significant changes Foretti is making is the time the wine spends in wood. While Molinari favoured four-plus years in 500-litre tonneaux, Fioretti has gradually started bottling the wine earlier and uses a combination of 350-litre barrels and 15-hectolitre casks. “Even two years [the appellation minimum] in wood is too long,” he says – before quickly acknowledging that such a view is far from accepted, and he cannot legally reduce it any further. The various consorzios may not like it, but it’s a view that is increasingly common among younger producers in Italy, who are frustrated by minimum oak-ageing requirements and their contrast with the wines today’s consumers want to drink. As Fioretti says, however, “The notion of wood is very delicate.” And while he’d rather be able to age his wine in other vessels during their first two years of life, he acknowledges that élevage in oak has a beneficial impact on the chemistry of wine – aiding stability. With such a beloved wine, it might seem controversial to change anything – especially the way it’s made, but that hasn’t stopped Fioretti. Looking back at older vintages from the estate, even the legendary 100-point 2010, he is sometimes underwhelmed, feeling that there’s much greater potential. Part of his plan to reflect that potential is bottling earlier, allowing the fruit to shine through and give the wine better balance – something he feels is key for ageing potential. He’s also keen to make sure the wine is moderate in alcohol with maximum 14 or 14.2%, even in the warmest years. And most importantly, he says, good wine has to be delicious. Having tasted the 2019 and 2021 with Fioretti – the results so far really are. There’s a vibrancy and purity that makes them irresistible, while not sacrificing the structure that will allow these wines to go the distance. Alongside Cerbaiona, Fioretti has also created the M.L. Fioretti label, one he describes as “part garagiste, part petit château”. He was keen to explore indigenous grapes, which “are part of the family – but not all thoroughbreds”, as well as plots of Bordeaux varietals (grapes with undeniable pedigree) – provided they’re planted in the right place. The Casaglia Colorino is bright and spicy, while the San Vito (sadly the last vintage of which is 2021) is a beautifully lush and vibrant Merlot. These are fascinating wines that allow Fioretti to experiment more – outside the constrictions of the Brunello di Montalcino appellation. Controversially, Fioretti has declared Cerbaiona a “No Scores Zone”, echoing the sentiment of Teobaldo Cappellano that numerical ratings are divisive, at best – and don’t do justice to the craft of winemaking. In his notes on the 2018 vintage, Fioretti wrote: “This is another vintage for the connoisseur, that true lover of wine and the vine. So be it if the ‘collector’ misses out.” Feathers might be ruffled by such remarks, but the motivation here is clear: an earnest passion for wine. It’s something that shines through in our conversation – and in the wines he’s making. Le Pin doesn’t really do events. I guess it doesn’t need to. This tiny 2.7-hectare property produces on average 600 cases each year and the wines are instantly snapped up on release by collectors lucky enough to be privy to the merchants’ miniscule supply.  But FINE+RARE, after much searching, collated an extraordinary collection of Le Pin bottlings (some coming from Thienpont’s own personal cellar) right back to the inaugural 1979 vintage. The tasting consisted of 12 vintages of Le Pin, as well as three vintages from L’If, Thienpont’s relatively new project in neighbouring Saint-Emilion. We also persuaded Thienpont to come to London and share Le Pin’s fascinating story from the beginning. The setting was perfect for such an intimate event. With just a handful of guests alongside Jacques Thienpont and Diana Berrouet Garcia (MD of Domaines Jacques Thienpont), the dinner took place in Claridges’ L’Epicerie restaurant. L’Epicerie, which seats just 14 guests, is set within Claridges’ hallowed kitchens. It meant the guests could watch the chefs at work and discuss with them why they paired certain dishes with certain vintages. In hindsight, it was amazing just how versatile the Le Pin wines turned out to be. The younger vintages paired beautifully with poached lobster, fois gras terrine, black truffle and artichoke. The older vintages worked just as well with beef fillet and aged cheeses. But, however well the food worked, everyone was there to taste Le Pin.  Le Pin needs little introduction. The youngest of all the Right Bank icons, it became an almost overnight success thanks to the critical acclaim of the property’s fourth vintage in 1982. Combined with its tiny production levels and an ever-expanding collectors’ market, Le Pin became the ultimate wine collectable – and the market price of this tiny estate quickly rose to stratospheric levels.   Such are its size and popularity that it is rare to taste one bottle of Le Pin, let alone 12 vintages back-to-back. I’ve been lucky enough to taste the wine en primeur over the years, so I had some idea of what to expect, but it’s only at maturity that this extraordinary wine’s vivid personality really comes to life.  The elusive address has humble beginnings. From the 1920s to the late 1970s, the land was owned by the Loubie family. During this time, the wine was made by a contract-winemaker based in Lalande de Pomerol and was sold with little fanfare.  In 1979, Jacques Thienpont jumped at the chance to purchase the property when it came up sale, privy to the extraordinary terroir of the site, located next to his uncle Gérard’s esteemed Pomerol estate Vieux Château Certan. Thienpont named his new acquisition after a single pine tree that shaded the property. Over the years, he gradually expanded the vineyard to 2.7 hectares by purchasing slivers of land from adjacent producers.   It’s hard to imagine that a wine of such prestige came from what was – in the early days – a very basic operation. The project and space were so small that there was little flexibility when it came to vinification. Everything was done by hand and malolactic fermentation took place in barrel because Thienpont had nowhere else to store the wines (although this eventually set the trend for modern winemaking). In time, the Belgian vigneron made improvements in the winery and vineyard, including replanting a significant part of the land with new Merlot clones and re-trellising the vines. Now, 40 years later, Thienpont is as hands-on as ever, insisting he is involved in every stage of winemaking.   Wine experts consider Le Pin’s key advantage to be its unique terroir and soil composition. With sandy gravel topsoil on a pocket of gravel which runs five to 10 metres deep, the vineyard has perfect drainage. As it’s south-facing, it is a warmer site and that gives the vineyard great benefits, particularly in poorer, cooler vintages. It is notably different from surrounding vineyards. The vineyard contains a high proportion of iron oxide, aka “crasse de fer”, which Jacques Thienpont attributes to the soil’s fantastic drainage and feels helps Le Pin perform well in wetter vintages.   There are a few odd Cabernet Franc vines in the vineyard at Le Pin, but the wine is 100% Merlot. A significant portion (40%) of the vineyards were replanted in the late 1970s, and replanting has continued under Thienpont’s ownership. In fine wine terms the average age of the vineyards is relatively young. The fact that Le Pin can already produce such incredible wines suggests the future looks bright for the property.  The property produces low volumes but with great consistency, with the wine always expressing a beautiful integration of tannins, wonderful depth and detail. It also ages beautifully, as this stunning line-up showcased so well. Tasting a younger vintage (2018) earlier in the day, it became apparent how versatile Le Pin is. Despite its youth, the 2018 is drinking beautifully right now. Berrouet Garcia believes it is one of Le Pin’s trump cards – it just performs so well at any time, in its youth, at full maturity and any time in between, such is its openness and versatility.  With a couple years in bottle, the 2018 really expresses a signature trait of Le Pin, a trait that through the tasting is so distinctive and emanates from almost every vintage – a trademark tannin texture and mouthfeel. The best way I can explain it is as if the tannins are totally spherical in the mouth. There are no edges, you can feel they are there by their density on the palate. They are the “dark matter” equivalent of tannin – they are there but you just can’t feel them.  Before the Le Pin vertical, guests were introduced to Jacques Thienpont’s Saint-Emilion estate, L’If. Thienpont’s first vintage from this young estate was 2010 and the wines are the perfect antithesis to Le Pin. Whereas Le Pin is voluptuous and opulent, L’If is stricter, more linear and has amazing energy. Thienpont has fallen in love with the limestone soils of Saint-Emilion. While still similar in climate to Pomerol (warm and sunny) the limestone soils in Saint-Emilion keep freshness in the wine and importantly, in winemaking terms, the pH low.  Whereas Le Pin’s opulent levels of ripeness and high pH (due to the soils) can sometimes have problems with fermentations getting stuck (so much so from 2015 onwards that Le Pin has been fermented using a special commercial yeast that avoids this problem), L’If’s limestone soils mean they can push ripeness levels and never lose freshness. Like Le Pin, tasting through the vintages of L’If there is a strong character trait across the vintages – a vibrant energy that is just so expansive on the palate. The 2015, 2013 and 2012 all express distinct vintage traits too, the 2015 the most powerful, the 2013 lighter but beautifully clean and vertical, while the 2012 is soft and juicy with lovely floral delicacy.  Le Pin’s roundness and silk-like texture is such a lovely contrast to L’If and tasting them side by side only accentuates how different in style these two wines from Jacques Thienpont are.  The vertical of Le Pin starts with two legendary vintages – the 2010 and 2009. Strangely, the 2009 throws a lot of sediment, something not found in the other wines. It is hugely concentrated and opulent. Pushing the levels of ripeness, there is a touch of VA, but it doesn’t diminish the wine at all. Despite the richness and ripeness, it is very much on the red fruit spectrum– but the 2010 was even better. It has an electricity to it that adds another level of excitement to the dense, rich fruit and smoky tones. This electric energy was also present in my wine of the night – the 2001. This wine is so elegant and refined, and is in its perfect drinking window today, the light tertiary notes complement the exquisitely pure, fresh fruit. But it’s the clenched tautness to the wine and that extra burst of energy that makes it so special and surpasses even the hugely anticipated 2000. This too has the tension, the sinewy tannins, the textbook spherical mouthfeel but the tertiary development is more advanced than the 2001.  The 2008 was also a highlight for me. It had all the classic Pomerol hallmarks, the irony-minerality and opulent fruit. It was also impressively structured while remaining heavenly soft. It was perhaps the vintage that showed off this contrast best, but it was a trait running throughout. The 2007 was lighter, earthier even with a touch of menthol and shorter on the palate but still delightful. The 2006 for me also outshone the “better” vintage of 2005. The density of the 2006 is just so impressive. If anything, the 2005 tasted the least like Le Pin. It had an almost Cabernet-esque feel, more structured, more extracted and, in that sense, felt like the odd one out in the tasting.  The 1996 was fully developed with lovely tertiary notes and dried fruit flavours. But the spherical mouthfeel clearly synonymous with Le Pin was very much intact and there was still plenty of tension and a very long finish. The 1990 was a revelation, so light on its feet – almost Pinot Noir-like in its daintiness and purity. It had a lovely freshness still, despite the concentration from this warm vintage. Again, it is still spherical in character, with lovely mature Claret flavours.  The 1983 was slightly unclean on corking, perhaps unsurprisingly, but this blew off in the glass. It was fully mature, dominated by tertiary flavours, but the tannins interestingly were less dried out than the 1996. Finally, the inaugural 1979 vintage. Amazingly, this first vintage already has the Le Pin DNA on the palate. The spherical mouthfeel was there. It is a remarkably clean bottle considering the age. It tasted more youthful than the 1983 alongside and still had fresh fruit characters and more tertiary notes. The spherical tannins are beautifully integrated. What a wine and what condition! It’s quite incredible.  There were clear takeaways from the tasting. Firstly, Le Pin’s consistency was self-evident, performing year-in, year-out. Secondly, the DNA of Le Pin was distinct throughout the flight (bar the 2005) both in youth and at full maturity. Also, it is clear that its character, its distinctness exists right back to its humble beginnings. Le Pin is a special wine, a rare treat, but not just a wine for the well-initiated. Le Pin: from the beginning

The sheer number of distinctive styles of wine that emanate from France never fails to amaze. From the full-bodied, sumptuous Cabernets and Merlots of Bordeaux to the ethereal Pinot Noirs of Burgundy; from the mineral whites of the Loire to the aromatic spectrum of Alsace – everywhere you look there is variety. The Jura, situated in the remote central-eastern frontiers of France (bordering Switzerland) is another completely unique and distinctive French winemaking region – one which, perhaps because of its limited size and isolation, is not quite so universally known. But in recent years the region has grown in prominence and is now a real point of interest for collectors today – most notably for the quality of its white wines. Chardonnay and the native late-ripening white grape Savagnin produce wines that rival top Burgundy and, in many cases, offer better value. But it hasn’t been an easy road to recognition for the region. Following the phylloxera outbreak in the late 19th century, the Jura was on the brink of being wiped out altogether. Historically, it was a significant wine-producing region – 10 times bigger than it is today. But, in terms of size, it never recovered. Many of the vineyards were grubbed up, becoming farmland pastures; what remained amounts to just 2,000 hectares (a mere 10% of its original size). The leftfield oxidative style of the region’s wines also meant that as France’s wine exports grew, the Jura remained largely unnoticed. Traditionally, the region’s uniqueness came from the oxidative style of its white wines – the most famous, distinct and extreme of which is vin jaune. This white wine is made from Savagnin that is aged in barrels for over six years. During this time, the wine evaporates, allowing for oxygen ingress and a yeast film to form on top of the wine – protecting it from oxidation and at the same time strongly influencing the flavour. The process and effect is not dissimilar to Fino or Manzanilla Sherry, but the ageing is typically longer and the wine is neither fortified or blended – remaining single vintage. This style is distinct and, at its best, produces wines of outstanding complexity and fantastic ageing potential, but its intense flavours were never going to create mass appeal. Over the last 25 years or so, the younger generation of winemakers in the Jura have started to move away from only producing this oxidative style, influenced by their neighbours in Burgundy – whose vineyards are not dissimilar. The Jura – just 100km directly east of the Côte d’Or – shares similar soils of clay and Jurassic limestone and has the same continental climate, as well as growing both Chardonnay and Pinot Noir. In fact, many of the Jura’s younger vignerons cut their teeth making wine in Burgundy. Returning to their family domaines, they were more interested in producing wines styled on those of the Côte d’Or, focused on expressing site, rather than the region’s traditional style, dominated by oxidative characters and the influence of yeast. Young producers such as Jean-François Ganevat and Stéphane Tissot started to top their barrels, producing less oxidative, “ouillé” cuvées. This switch in style is arguably the most important recent development in the Jura. As these modern styles grew in popularity, the region started to attract a wider audience of fine wine drinkers.  Despite the similarities to Burgundy, the Chardonnay (sometimes blended with Savagnin) produced in the Jura brings its own elevated tautness and mouth-watering salinity and has acid-loving Chardonnay fans drooling. Burgundy producers themselves have even started to buy up land in the Jura; most famously Domaine Marquis d’Angerville set up Domaine du Pélican in 2012. Supposedly Guillaume d’Angerville was served a Chardonnay blind at Paris’s Taillevent restaurant and was convinced it was a top bottling of Burgundy. When he discovered it was from the Jura, he soon started exploring the region and before long had bought vineyards there. Fatter and richer in texture than Chablis, but more laser-like than the Côte d’Or – Jura whites have found a niche. What’s more, the vignerons’ knowledge of producing oxidative wines has given them the freedom to experiment with both reductive and oxidative characters (without going to the extremes of vin jaune), producing truly original wines. It is another distinct trait of the region that brings a lot of freedom to the winemaking and a lot of variety – even from just one producer. The Jura’s rise to prominence is also due to its association with low-intervention or natural wine – most notably the influence of Domaine Pierre Overnoy, based in the Jura hamlet of Pupillin. Overnoy is seen by many as the godfather of the natural wine movement – and his wines are today some of the most fiercely collected. The fanfare around this remarkable producer has been hugely influential on other producers in the region, at the same time raising the reputation of the region to an ever-widening audience. Other in-demand stars of Jura, who to one degree or another are classed as low-intervention producers and who make ouillé wines (though not exclusively) include Jean-François Ganevat and Stéphane Tissot. The difficulty today, at a time when Jura wines have never been more popular, is volume. Of all the regions in Europe, few have been hit as hard by spring frosts than the Jura. Successive vintages back to 2015 have seen production slashed. With rising demand, perhaps it’s time for the Jura appellation to expand once again and seek out sites that are less susceptible to frost. Domaine Pierre Overnoy aside, the top wines of Jura, for now, remain brilliant value – another reason fans of Burgundy are looking further afield. The white wine styles of the Jura Ouillé: Also described as modern or floral. In any other region, this is typically the “normal” style of any dry wine – in that the wine has no overt oxidative character. While traditionally barrels in the Jura might not have been topped up, allowing oxygen to influence the wine, for ouillé wines they are topped up to protect them from this. Sous voile: Also described as traditional or oxidative, these are the more traditional style of white wines from the region. Literally meaning “under the veil”, the wines are biologically aged with a film of yeast – like Manzanilla or Fino Sherry. Following fermentation, the wines are extensively aged in oak barrels that are not fully topped up. This encourages a film of yeast to form on the top of the wines, protecting them from oxidation and introducing yeast-influenced flavours. Depending on the winemaker, wines can be aged for one to 10 or more years using this method. The longer the wines are aged in barrel, the more oxidative flavours dominate the wine. Vin jaune is the most famous wine made in this style (see below). Vin jaune: A specific style of sous voile, with an official classification and made only with Savagnin. The wines have to spend over six years under flor before being bottled. Rich and complex, the most famous vin jaune is Château-Chalon. Vin jaune is also always bottled in a distinctive, squat 62cl clavelin bottle.

Macvin: This fortified Vin Doux Naturel is produced only in the Jura. It is made from the must of Savagnin which is then boiled – concentrating the must. It is then fortified with brandy to around 16% alcohol. Strictly this is not a wine since there is no fermentation process. Once fortified it is then aged for six years in oak. Vin de Paille: While not a style unique to Jura, it remains an important style of the region and with quite distinct rules under the appellation. Grapes (usually Chardonnay and Savagnin, and sometimes the red grape Poulsard and Trousseau) are typically picked early to retain acidity and then dried, concentrating the sugars. The wine is then fermented and must reach 14% alcohol. Depending on the grapes’ concentration, the residual sugar of the wine can vary from 60-130g/litre. The wine must be aged for a minimum three years (which includes 18 months in oak). The wines can be made in a fresh or oxidative style depending on the producer’s preference. The wines are always sold in half-bottles. Recommended wine producers in the Jura Domaine Pierre Overnoy: Since he was a boy, Pierre Overnoy was taught how to make wine by his father using traditional methods and without sulphur dioxide. Despite studying modern winemaking in Burgundy during the mid-1970s, he was disappointed by the results. Returning back to the Jura, he adapted his father’s traditional approach to produce wines to his liking – as well as making wines in a fresher non-oxidative style. In 1984, Overnoy stopped using sulphur during fermentation but continued to use a little at bottling. By 1986, he had stopped using SO2 at all. He has been hugely influential in the natural wine movement. In 2001, Pierre Overnoy retired at the age of 63, handing it over to his protégé Emmanuel Houillon, who worked alongside Overnoy from the age of 14. Overnoy’s almost evangelical following, along with miniscule levels of production, have made the wines highly sought-after. The release dates of the wines are not set, only released when Houillon deems them ready to drink, making it sometimes challenging for collectors. Houillon even bottles the same vintage of a wine at different dates – and only began to note bottling dates on the wine labels from 2018. Domaine Jean-François Ganevat: Ganevat is the 14th generation of his family to make wine in the Jura, with the family estate founded in 1650. Before joining the family estate in 1998, he worked with Jean-Marc Morey in Chassagne-Montrachet. Although the estate has just 8.5 hectares under vine, the domaine grows 45 different varieties – many of which are ancient, native varieties to the Jura, including two distinct red varieties Poulsard and Trousseau which are the most planted in the region along with Pinot Noir. His best wines however are his ouillé Savagnin and Chardonnay that can be outstanding. Benedicte & Stéphane Tissot: This is one of the largest and most important estates in the Jura today. Although the domaine name is officially still Domaine André & Mireille Tissot (named after Stéphane’s parents) the bottlings are labelled Benedicte & Stéphane Tissot. The domaine has 50 hectares under vine in both the Arbois appellation (where the winery is based) as well as the Côtes du Jura and Château-Chalon appellations. There is plenty of experimentation going on with the estate producing a wide array of cuvées from the traditional flor-aged Savagnin bottlings of place-designated vin jaunes of Château Chalon, La Vasée and Bruyères to their more modern ouillé single-vineyard Chardonnays. Ch. Rayas is truly special. The estate’s bottles – with their classic, simple red-and-black design and distinctive triangular neck label – command instant respect amongst afficionados.  Pure Grenache grown on the estate’s sandy soils, this remarkable Châteauneuf-du-Pape transcends its appellation. The wines are perfumed, pretty and elegant, with extraordinary finesse – reminding more of red Burgundy than the bolder wines that the Rhône is often associated with.   The Reynaud family has owned the estate since 1880, and their determined avoidance of any publicity has only increased the property’s allure. Indeed, it’s perhaps this, combined with an off-hands approach in the winery, that means they are one of the few producers to broach the fine wine-natural divide – lauded equally by more traditional fine wine drinkers and the natural wine brigade. Held back and only released once mature, in tiny allocations to markets around the world, the wines are incredibly hard to get hold of.  Earlier this year, we arranged a special dinner tasting through 22 wines from the estate – three of its rare white Châteauneuf-du-Pape and 19 vintages of the flagship red, stretching back to 1990. The vertical offered unique insight into the estate, its character shining through in each wine on show.  Indeed, it was the freshness of the wines that amazed everyone in attendance – including longtime fan and Wine Advocate Deputy Editor William Kelley – stamped on every wine.  Only 400 cases a year are made of the Châteauneuf-du-Pape Blanc, from two hectares of Clairette and Grenache Blanc, fermented and aged in old oak. White Rhône is a wine for true geeks – and this is an exceptional example – a wine about texture and minerality, almost approaching Grand Cru Chablis in its pure stoniness. Suited perfectly to pairing with all sorts of food, it was clear – even with just three vintages of this unicorn – how well it ages, the 1999 still an outstandingly fresh and fine wine.  Of course, the reds were the main event. Much to everyone’s surprise, it was the so-called “off-vintages”, years that might be deemed “lesser”, that were the most impressive – it was in these bottlings that the singularity of Rayas shone through, over-riding the character of the appellation or year.   The 2008 (given “only” 93 points by Parker back in 2012, upgraded from its original 90 in 2010) was the wine of the night for most people. By contrast, the top-rated 2009 from a blockbuster vintage was impressive, yet the vintage ever so slightly masked the Rayas style – making the wine feel more like another (very good) Châteauneuf-du-Pape.  Overall, the wines showed an effortless timelessness – drinking beautifully now, yet clearly showing the potential to evolve for another 10-15 years or more, depending on the vintage. The more mature wines might show evolution on the nose – with tertiary sous-bois notes – but on the palate, there remained a remarkable energy and vibrancy, with immense clarity of fruit. On several vintages a citrus, almost orange, note shone through, with a mineral thread and juicy acidity. Despite the undoubtedly high alcohol levels, the wines were all amazingly delicate – with no heat from the punchy ABV. And the tannins were effortlessly integrated, remarkably soft despite the structure designed for the long-haul.  Tasting through this line-up was an absolute privilege; for these rightly revered, rare wines are incredible. With no new oak, they are all about the purity and quality of fruit. They show exceptional longevity, an ethereality and easy grace that mesmerises. When people say they’ve put their blood, sweat and tears into something, more often than not, it’s a figure of speech. This is not the case for Bimber Distillery founder Dariusz Plazewski, who has put everything into the build of his dream Speyside distillery, Dunphail. The day before we speak, Plazewski was on the roof of one of his new distillery buildings, mucking in and making sure the mammoth project that was a lifetime in the making stays on track.   The Polish-born Plazewski is a third-generation distiller – or more accurately, moonshiner – who emigrated to London 20 years ago. After observing the English craft distilling boom from afar, the trained architect seized the opportunity to put his family’s legacy and knowhow to good use and set about building Bimber, a single malt whisky distillery based in West London. Bimber’s inaugural bottling, The First, sold out within three hours of release in 2019 – and demand has far outstripped supply ever since.    Fast forward three years and Plazewski is mere months away from realising his dream of producing a single malt Scotch whisky. But it hasn’t been easy.   “There are lots of challenges,” he tells me matter-of-factly. When we catch up, after two aborted attempts, the Master Distiller sounds ever-so-slightly weary – and it’s not hard to fathom why. Today, he is speaking from London, where he’s been “sorting out a few things” at Bimber. He’s boarding a flight back to Scotland in a couple of days and then he’s taking a much-needed holiday – where he confesses he will be on email constantly.   Rest is not in his nature. (Plazewski has been pinballing from one project to the next for decades. By the end of 2022, he says he will have “given up” his other business and solely focus on spirits.) Nor is adhering to the status quo.    Since founding Bimber in 2015, the Master Distiller has prided himself on being a bit of a renegade. Where others have embraced modern whisky-making practices, Plazewski has been staunchly traditional in his approach – and it has served him exceedingly well. “Whisky was always my passion and when I found out that there was a craft movement of whisky and gin distilling, I just started researching,” he tells me. “It took me a long time but I wanted to do something different. I wanted to always do something which was a bit old-fashioned.”  Plazewski’s father and grandfather before him (illegally) made wine, spirits and beer in his native Poland – Bimber translates as “moonshine” in Polish – and Plazewski was an eager protégé with a natural talent from a young age. I refrain from asking how young.   “The good thing is that I understand all the production, all the process, all the fermentation, and how to make alcohol,” he tells me. “Not only whisky but how to make any alcohol really. Sense of smell, touch, and all this just naturally comes to me.”   Plazewski says his fate was sealed the moment he travelled to Scotland and fell in love with Speyside single malts. Dunphail was always going to happen – he just didn’t know when. Starting his (legal) distilling career with Bimber was a shrewd decision. English whisky was then a relative unknown, so Plazewski used this scene as his sandbox to prove to himself and others that traditional whisky production should not be consigned to the history books.   Bimber was, and for the time being still is, a small-scale traditional whisky-making operation. Local barley is grown on a single farm in neighbouring Hampshire. It is floor-malted at Britain’s oldest maltster, Warminster Maltings, and hand-mashed. The two copper pot stills are direct-fired (with a flame, as the name suggests, rather than the more modern and efficient method of steam) and fermentation times are twice the industry average at seven days.  These practices are astoundingly rare in today’s modern whisky world. The majority of producers abandoned floor maltings (the method of malting grain by hand on large malting floors) in favour of industrial malting processes and did away with direct-firing stills (in favour of steam) decades ago, deeming them inefficient and costly. While it is possible to find distillers who adopt some of these techniques – notable examples being Laphroaig, Glenfarclas and Bowmore – it is incredibly rare to find a producer who is able or willing to apply all these labour-intensive and budget-zapping practices.   “I will never be a distiller without floor maltings,” he says physically baulking at the idea of producing whisky any other way. “Never. No. For me, it is crucial,” he adds.    With Dunphail, Plazewski is going one step further than Bimber and building his own traditional floor maltings on-site. This will put Dunphail in a highly exclusive group, and the move has received mixed responses from Plazewski’s peers.   “For me it is very important,” Plazewski says. “I know many people said, wow are you crazy because this is hard work, this is lots of involvement, why are you doing it?”  I can’t help asking him the same. To which he says: “Because nobody is doing this anymore and I want to continue this craft, I want people to see how the whisky was made before. I think it is going to be good fun and I think this is going to be a great feature for our distillery.”  In addition to floor maltings, Dunphail’s stills will also be direct-fired – Glenmorangie was the first to install steam-heated stills in 1887 and countless others followed until only a handful of direct-fired producers remained. Plazewski is the first to acknowledge the practice of heating stills in this traditional way is far less efficient and costly but for him it was non-negotiable and vital to produce the highest-quality Speyside whisky possible – fruit-forward, oily and medium-bodied. He is also in the minority sourcing Dunphail’s barley and peat locally. There are undoubtedly easier routes to produce whisky but the mere suggestion is sacrilege to Plazewski.  Steadfast on his goal, Plazewski set about finding the perfect location to produce traditional single malt Scotch whisky. After years of searching, he settled on a location in the heart of Speyside – a typically renegade move as the majority of new distilleries have been built outside this iconic region. He explains: “The location was really difficult and challenging as well to be honest.”  “I love Speyside – it’s my favourite part in Scotland. First of all, it is a great area because it has got microclimate, so it’s not too cold there and it’s not too rainy. And it’s pretty sunny.” Additionally, he says: “Speyside whiskies are my favourite.”  When asked if he feels the weight of this tradition or pressure to produce a stand-out Speyside whisky in one of the most densely populated whisky-making regions in the world, he says not.   “We are tiny. We’re not going to be competing with the big, established brands. Most of the new distilleries are not built in Speyside, they are mostly built in Fife area. And not many are really going the route we are with the floor maltings and old-fashioned techniques we are trying to apply.”  In addition to the many challenges that come with building a distillery to a blueprint that no longer exists, Plazewski has embattled with supply chain issues following Brexit, Covid and now the war in Ukraine. It’s a minor miracle – and a testament to the tenacity of Plazewski – that the Dunphail build is on schedule and production is set to begin, as planned, at the end of the year.   When asked how he feels, Plazewski pauses for a moment, takes a short intake of breath and hurriedly says: “It’s amazing. It’s hard work. I need a break. That’s why I need this holiday because it’s not only physical work, it’s the mental as well – planning everything.”  He pauses again. “It’s been a stressful and challenging time. But we are on schedule, we’ve planned this well.”  After Dunphail is up and running, and Plazewski has trained his dream team to the standard of Bimber, you wonder what’s next. You sense he won’t just stop after realising his Scottish dream, and that there will be a new North Star.    When asked, he responds to the question with a wry smile, indicating this is not the first time it has been posed to him by others, or even himself. “I would say yes, I’m done after this, but people I know and people around me are saying to me, you are never going to stop, you’re going to find something else.  “But I would say I think I’ve done my dream and when this [distillery] is going to be open, I’m thinking to really concentrate and not do anything more. I don’t think I will put too much pressure on myself and my family again.” A seed of doubt creeps in and then he says resolutely: “No, this is it, it’s going to be my dream, it’s going to be super exciting and I’m not going to go for anything else. I’m just going to enjoy the time and share the drams.” We’ll ask him again in five years’ time.   For the time being, at least, Plazewski (and the wider whisky world) is satiated with turning modern whisky-making on its head and bringing fiercely traditional practices back to one of the oldest and most prestigious whisky regions in the world.   Browse all Scotch whisky or read more Editorial

Few wine regions have seen a transformation as significant as Tuscany has over the last 15 years. These days the region regularly produces some of the finest wines found anywhere on the planet, while retaining a distinct sense of place.  Tuscany is the only region in the world to have truly tamed Sangiovese, with nowhere else able to grow this fussy grape variety and produce wines of the same level. At the same time, Tuscany has managed to produce some of the world’s finest renditions of the better-travelled international varieties such as Cabernet Sauvignon and Merlot; even Pinot Noir and Chardonnay are finding a foothold in this magical enclave of central Italy. Few have been as influential in this transformative journey than San Guisto a Rentennano’s Luca Martini di Cigala, who has managed to produce not one but two of the region’s most iconic wines – Percarlo (100% Sangiovese) and La Ricolma (100% Merlot). In his typically modest manner, however, he does not believe great wines are made by great winemakers – but by understanding where a vigneron must focus their attention in the vineyard. According to Martini di Cigala, winemaking can improve the quality of a wine by no more than 10%. “Great wine, however, is made with great fruit,” he says. So what is it about Tuscany that has resulted in the region’s recent renaissance? For Martini di Cigala, it has been understanding how the region’s unique soils and climate, if allowed, can produce wines where the character of the terroir prevales, rather than the varietal. “When it is the opposite and the varietal character is more evident than the character of the place, of the area, of the soil,” says Cigale, “to me it doesn’t make much sense.” It is the vineyard that must do the talking, not the grape variety, nor the winemaking. While the Tuscan wine renaissance began in the late 1970s and early ’80s, the meteoric rise of the region was far from linear. Among the new wave of pioneers, there was naivety too and, understandably, external influences started to impact how wine was being made. Back then, San Giusto A Rentennano didn’t have their own personal brand, and were selling wine to the big wineries like Antinori and Ruffino.  Following in the footsteps of the likes of Fontodi, Isole e Elena and Montevertini they decided to focus on improving the quality of their Sangiovese – which began, fundamentally, by reducing the yields in the vineyard. “Before that, we used to produce a good Chianti,” says Martini di Cigala, “a simple wine.” But, with these changes, “The stye completely changed and we began to focus on making wines for long ageing.” As the movement progressed, however, he began to sense a period of self-doubt looming. “Compared to today, where there is a big improvement in the culture of tasting wines and recognising the character of the different varieties,” he says, “people were used to drinking rounder, softer wines. And Sangiovese [made at lower yields] can be so aggressive, so hard with the tannins – especially when young. It was a problem.” At the time, many of the vignerons felt that in order to increase the wine’s ageing potential, the wines needed to be darker and more concentrated, while also exposing the wine to plenty of new oak and more oxygen – opting for smaller 225-litre barrels (barriques) rather than the region’s traditional larger casks. You could see the commercial attraction too, since this approach softened Sangiovese’s tannins. Emerging regions like Tuscany were all looking towards more established fine wine regions for inspiration. The use of new barriques was fashionable around the world but, most notably, part of the Bordeaux recipe of the time. Twenty years ago, Martini di Cigala believes, they wrongly followed these trends, producing intense, overripe, over-oaked wines. “It was a mistake because many wineries didn’t keep the character of the Sangiovese – either due to excessive use of wood, which does not integrate well with Sangiovese, or because it was blended with other varieties to build the wine’s intensity, while softening its aggressive nature.” For Martini di Cigala, even his Merlot plantings weren’t performing well – despite being a variety better suited to the current trends, with better resistance to new oak’s influence. The current recipe was not working for him – or for Tuscany. Early in its renaissance, the region began to stumble. Martini di Cigala’s success came when he realised that, despite sharing the same vineyards, his Merlot and Sangiovese had very little in common. To produce anything better than ordinary, he had to start treating the two varieties completely differently and let the vines do the talking. Sangiovese is a frustratingly fickle variety. It has the potential to produce wines as ethereal as the finest Pinot Noir and as rich and elegant as fine Bordeaux. Yet it has failed to make any real imprint outside Italy and, even today in Tuscany, it remains maddeningly inconsistent. “Compared to other varieties like Merlot, Cabernet Sauvignon and Syrah,” he says, “these varieties can produce wine everywhere. With Sangiovese it is hard because it needs calcareous soil in order to produce the right balance of tannins. In any other kinds of soil, it either increases acidity too much or the opposite, making the wine very flat. To produce a wine with a precise character with a lot of tannin but at the same time integrated with the fruit, Sangiovese needs calcareous soil.” But, he stresses, it is not only the soil but the climate that is important too. “It is difficult to have great Sangiovese that is very, very light, low in alcohol and low in polyphenols [tannins]. The wine must be rich,” he says. The region must be hot. The elegance and the precision, however, come from another distinct attribute of the hillsides of Tuscany: cool night-time temperatures. This, Martini di Cigala believes, is vital for the elegance of the wines – and something that can be lost in warmer vintages. “Sangiovese is very delicate, if there is too much concentration, the level of tannins risk damaging the wine’s natural elegance and the balance,” says Cigala. For me it is a great wine when the wine doesn’t need to show muscle. It is not important to be extremely concentrated or to have a lot of colour for a great vintage. It is more about the balance of the different factors.” He notes that some of the most celebrated vintages aren’t necessarily the longest-lived, highlighting that the cooler 2013 and 2014 vintages will outlive the much applauded, warmer 2015s – although he insists 2016 has proved to be spectacular. Percarlo evolved as Martini di Cigala gradually understood Sangiovese’s sensitivities. Up until 2008, Percarlo was aged 100% in barriques. First produced in 1983, the amount of new wood has been reduced over the years. Today he doesn’t use any barriques at all for Percarlo, or for any of his other Sangiovese wines (Chianti Classico and Riserva). He believes Sangiovese is too sensitive to oxygen to age in smaller barriques. Today it is matured 50/50 in large 5,000-litre and 3,000-litre barrels. Martini di Cigala didn’t start producing Merlot until 1993, but for the first 10 years, he managed the vines similarly to his Sangiovese – with mixed results. “Sometimes the vintage would be very Tuscan in style and then the opposite in other vintages – the aromas were more like Merlot from north Italy with more pepper on the nose. I was never convinced with the results,” he says. The Merlot in Chianti Classico is also very different to the Merlot grown on the Tuscan coast of Bolgheri. The bigger diurnal temperature shifts in the Tuscan hills produce Merlot with more acidity. The wines are, in Martini di Cigala’s words, “more vertical”. The real success of both Percarlo and La Ricolma, Martini di Cigala believes, lies in the bespoke adaptations he started to make in the vineyard for each variety. Sangiovese really benefits from an early green harvest in July – reducing the natural yield. Merlot, on the other hand, proves to be a disaster if you do the same thing and limit your yields so early in the growing season – causing a spike in sugar production at the expense of tannin development.  Martini di Cigala also painstakingly picks the Sangiovese destined for his Percarlo bunch by bunch, assessing each vine individually. Picking Merlot bunch by bunch, in contrast, makes no sense – “it is far too irregular”. While Sangiovese yields can be manipulated throughout véraison to its benefit, Merlot needs to be left alone. “The key for Merlot”, he says, “is to try to slow down its ripening. If the variety doesn’t have a long growing cycle, the wine remains short.” Over the years Martini di Cigala has moved his Merlot vines to the coolest parts of his vineyards. He admits his original La Ricolma Merlot plot is his worst, its west-facing exposition making it too warm. He much prefers his plots closer to the river where temperatures are lower. But the key viticultural work for both his Merlot and Sangiovese starts earlier – he is keen to point out that there is no recipe each year, the cultivation has to be very precise depending on the vines’ needs. “You have to be a good interpreter of the season. Often you don’t notice the stress in the vineyard until July, by which time it is too late. You have to follow the trends of the weather earlier – this is the most difficult point of our job and has become especially true in the last few hotter years.” Each viticultural step has to follow the trend of the season. That, for him, is the key. Over nearly 40 years Martini di Cigala has continued to make tweaks in the vineyards, further improving the wines. Up until 2004 he used to select the Percarlo grapes only from certain parts of the vineyard, but now the fruit is picked bunch by bunch – another fundamental reason, he believes, the wines’ quality has escalated. Martini di Cigala has proven that wines made from Sangiovese and Merlot can be both bold and beautiful, aligning the Tuscan hills’ unique climate with precision viticulture. The hot summers and cool night-time temperatures matched with the calcareous soils are the perfect combination for Sangiovese and are testament to Merlot’s adaptability. After a period of self-doubt and mixed results for the region, the Tuscan renaissance today has well and truly found its foothold and is on an extraordinary run. And it is Percarlo and La Ricolma leading the pack. “If you asked me to name 15 great wineries in Chianti Classico 20 years ago, I would be in trouble,” says Martini di Cigala. “Today I could arrive at 50 or 60.” What has changed most today, according to the winemaker, is a paradigm shift in focus from winery to vineyard. While he is a little disappointed more of them haven’t turned to organic farming (of which he is a longstanding proponent), he believes the change has been very positive. A noble name, a castle, or a famous winemaker today no longer makes the headlines in Tuscany. It is precision viticulture that has taken these distinct wines from the Tuscan hills to the top of many collectors’ wish lists. Luca Martini di Cigala, the man behind Percarlo and La Ricolma, is one of Tuscany’s viticultural pioneers. We spoke to the San Giusto a Rentennano winemaker about his role in the region’s renaissance and how he turned to the vineyard to reveal his wines’ true potential

Cerbaiona is widely recognised as one of the top estates in Montalcino, but has been a little elusive of late. Under Diego Molinari’s stewardship, the winery achieved cult status, but the property was sold in 2015, and hasn’t released any Brunello since. The new owner Matthew Fioretti has added to the radio silence, requesting critics not to score the wines, believing “a softer and more inquisitive form of journalism and criticism might be better than the score bazooka”.  Production is so small that Fioretti doesn’t need to rely on critics to promote the wines, but Cerbaiona has been noticeably absent from recent rave reports on the 2016 vintage from the likes of the Wine Advocate and Vinous. Our woman on the ground in Italy, Annalisa Florian, is one of the few people to have tasted the about-to-be-released 2016 Brunello, the first under Fioretti. Fioretti and his team have overhauled the estate. It’s a brave decision to make such a clear break from the past with a winery of such repute, and testament to their commitment to quality. Due to massive restructuring, Fioretti decided to declassify all the wine made in 2014 and 2015 to Rosso di Montalcino. As he points out, “Several aspects of this wine had formed before taking over the business.” Despite the obvious success of the 2015 vintage, Fioretti commendably didn’t want to rest on Cerbaiona’s reputation. All the vineyards are located on the Cerbaiona hill, just northeast of the town of Montalcino, and neighbouring another Brunello icon, Salvioni. The success of Sangiovese grown on this specific site long predates the Brunello appellation, with vineyards located here for hundreds of years and the wine historically produced known simply as Cerbaiona. The soil is a distinct limestone shale infused with sand and, according to Fioretti, “Almost by doing nothing, you can make an exceptional wine at Cerbaiona. Its vineyard location is that special and unique.” Fioretti, however, wasn’t happy with doing “nothing”. While praising Molinari’s legacy, he felt the estate desperately needed modernising – with serious work to be done in the vineyard and winery. He is very much inspired by what he calls a “tectonic shift” in winemaking in Italy (and elsewhere) over the last 30 years, with a move towards precision viticulture and a more hygienic approach to winemaking. Fioretti sees this as a shift from winemaking as an “art form” to winemaking as “craftmanship”.  In his mind, it was the pioneering efforts of producers like Romano dal Forno in Valpolicella and Luciano Sandrone in Barolo who have shown what can be achieved in Italy with such an approach. Just after taking over Cerbaiona, Romano dal Forno commented to Fioretti, “I’ll tell you what I told Molinari: you can’t make great wine in a barn.” Until recently, the sacristy of the small chapel was the fermentation cellar. The chapel itself was used for wine storage, while the granary and old animal stables acted as barrel cellars. “Hardly a precision and hygienic environment for winemaking,” Fioretti quips. As for the vineyards, “The rootstocks and clones of all the plantings at Cerbaiona were not selection massale nor specially selected material.  It was simply what the nurseries were selling at the time,” says Fioretti. “By 2010, the knowledge that had been gathered around Sangiovese was incomparable to what was understood in the 1970s and '80s.” Fioretti knew they needed replanting with better clones and rootstocks.  He retained and harvested the oldest vineyards for four harvests, working with top agronomists. “We made many attempts to overcome the shortcomings of these rootstocks and clones (which tended to produce enormous bunches, especially in wet years). But we all agreed: the sooner we replanted, the better off Cerbaiona would be.” As such, they’ve embarked on a six-year replanting program, making significant changes. The original three hectares (of which one hectare was dedicated to Bordeaux varieties) have been completely replanted to Sangiovese. An additional hectare of olive groves located on the steepest slope (and Fioretti believes the finest of the estate) has also been replaced with vines. Where possible, vines have been planted at a higher density and Fioretti has also converted the property to organic viticulture. Finally, with the release of the 2016, we find ourselves on the eve of the first Brunello release from Cerbaiona since the 2013 vintage. Fioretti believes 2016 to have been the “perfect” growing season. “The Sangiovese produced is captivating and sumptuous,” he tells me – the latter something he feels isn’t common for the variety. The moderate summer temperatures, the correctly timed rain and dry harvest conditions saw the Sangiovese thrive. The result, says Fioretti, is “a wine with fragrant aromas and a strong acidic shoulder – a guarantee of ageing”. It was in fact the latest harvest in the last five years at Cerbaiona. In Fioretti’s opinion, the 2016 is “not very far from” the 2010 – a vintage he feels is definitive for Montalcino – and comparable to other top modern Brunello vintages such as 2006 and 2007. There is tremendous excitement about the 2016 vintage, as well as the long-awaited return of this much-loved Montalcino estate. The 2016 Cerbaiona will no doubt be constantly compared to the wines made under Molinari, and it will be a fascinating comparison considering the effects of vine material, age of vines, viticultural techniques and winemaking practices versus overriding terroir.  What is clear is that Fioretti has no interest in resting on the laurels of this cult estate, nor simply following the footsteps of his predecessor. From what we’ve heard, it sounds like his labour-intensive approach both in the vineyards and winery is having the desired effect, and Cerbaiona’s legacy is safe. There’s been a buzz about the cult Montalcino estate Cerbaiona since it changed hands in 2015. Ahead of the release of the 2016 Brunello – the first under Matthew Fioretti’s ownership – we caught up with the new owner to find out more about how and why he’s transforming the property

Cerbaiona: a new era

As perhaps befits a man on the brink of his 9th decade, Bill Harlan measures time not in weeks, months or even years, but decades, half-centuries, centuries. It seems natural, sitting as we are among the grand oak fermenters at Harlan, having finished a tasting of 27 vintages of this most renowned of wines, to look at the broad sweep of time both forward and back. 
Harlan, who turns 80 in September, has talked before about his “200-year plan” for the great Napa estate. “This is a work in progress. If you have a long-term plan it makes short-term decisions easier – is this the best decision for the long term? So we ask, how many times a century will we be replanting? Then interplanting of rows and vines – should that be every 40 years or every 50 years?” 
Longevity has always been the plan, ever since 1984, when Harlan, Ric Forman and David Abreu identified six acres of hillside above Oakville as land with the potential to make first-class wine. It was a heavily wooded parcel, chiefly volcanic and sedimentary soil bedrock, which over time would be expanded to the 100ha (240 acre) horse-shoe of ridge, shallow valley and mountainside, with aspects to all points of the compass, that the winery sits on today. To stand on the terrace and look east over Napa is to get a sense of the extraordinary vastness and beauty of the land. Harlan's goal is simple: “We need to know how better to express the character of the property.” The soil is key, of course, but there’s a certain poetry to this slight, grizzled adventurer (something of a daredevil in his youth, he founded the Pacific Union real estate company in 1984 and went on to develop upscale resort Meadowood and co-found Merryvale winery before realising his dream in Harlan Estate. He’s said to be a ferocious negotiator. “You wouldn’t want to get into a poker game with him,” one observer has noted). “Most of the estate is wild land. You still have the animals, the fresh smell of the air, the forest floor. All these things make up the character of the wines.” 
Harlan has no intention of expanding the 16ha (40 acres) vineyard, which produces an average 2,000 bottles a year – just making it “better, and stronger”. He considers that the period of “stabilising” is over, and they are now into a process of “establishing”. 
It’s a subtle difference, and when Harlan hands over full responsibility to his son Will and daughter Amanda later this year (“an 80-year-old oughtn’t to be running anything”), they will have decades of experience to draw on. Bob Levy, the director of winegrowing, joined full-time in 1990, winemaker Cory Empting has been there 20 years, estate director Don Weaver since 1986 – two generations of treading the dirt. This is not to mention the “vinemasters” – veteran vineyard workers who are given total responsibility for sections of vineyard, in order to “get to know each vine,” as Harlan puts it. “The continuity is understanding the land.” 
The tasting took place at a long table in the fermentation room at Harlan Estate in early March 2020. As well as Bill and Will Harlan, Levy, Empting and Weaver were present, Harlan educator Kelli White, Jamie Ritchie, head of Sotheby’s fine wine, Jim Walker (a long-standing Harlan collector) and critic Elaine Chukan Brown. The vintages were tasted young to old, 2016 to 1990, in three flights of nine wines. Harlan talked of a work in progress: this was to see it in operation, a clear progression as vines get older, the estate increases in size and parcel selection gets more targeted. Today a blending session comprises up to 150 wines, taken from multiple different vineyard samples, tanks and barrels. This was, without doubt, one of the signature tastings of my career. These are some of the most expensive and sought-after wines in the world, and to spend a day tasting them – out of magnum – was a remarkable experience. This is not to say that the wines were approached with undue reverence. Harlan, his longstanding team, and the few guests examined each flight with concentration but not awe. The Harlan style runs through the vintages, getting stronger towards the present. The finest wines are brightly perfumed in youth and mellowing to dried petals and dried herb as they age; there is earth, blue fruit ageing to dark, a certain savouriness and sometimes an animal tang (“most of the estate is wild land”).  Another hallmark is understated energy, a pure and clear line that runs through each wine and through the decades. The wines have weight and heft – you know where you are with them – but only once was alcohol, or over-ripeness, mentioned. There is marked vintage variation – the notoriously cool and wet 2011, or the famously warm 1997, for example, are unmistakable. From Bordeaux to Napa, wines of great renown are sometimes described as “smart”, which means they are in some way tailored; they may be delicious, but they are made with an audience in mind. Harlan Estate doesn’t give that impression: you rather understand that here is a winemaker and a team searching for an interpretation of a terroir that is not fixed but changing as the vines age. Bill Harlan returns to this theme again and again. He talks of having “captured” the land, of its protean nature – “as the roots go deeper, the shapes of your blocks move and evolve like amoebas. It’s organic – you don’t lay out the blocks for good, you learn how they change, by being out there in the field.” As the land changes so do its stewards. The official handover to the next generation is imminent and Harlan is happy. “Everything seems to be in place,” he says. “They’ve never done this before, and I’ve never done it before, but it’s working well.” Tasting notes NB: All wines are Bordeaux blends of approximately 15% alcohol, with an average 75% Cabernet Sauvignon plus varying proportions of Merlot, Cabernet Franc and Petit Verdot.
