For the aperitif For Domaine Long-Depaquit’s Matthieu Mangenot it is the energy and power of Champagne Brut Nature Les Marnes Blanches from Jeaunaux-Robin, that makes it his choice at Christmas. “I can't say for sure if it is the 100% Chardonnay selection or the very elegant vinification in Burgundy barrel that is this Champagne’s (hidden) tribute to our region but there is absolutely no ‘make up‘ with this Champagne. With no dosage it is a true expression of Chardonnay and terroir. To me, it is the best sparkling to get you ready for Christmas dinner!”  Klaus-Peter Keller (Weingut Keller) and his family love Champagne Bérèche & Fils or Krug, “but we will definitely enjoy some sparkling wines from Germany too!” he adds. Gianlorenzo di Neri from Montalcino’s Casanova di Neri is also choosing something local, with a 2002 Trentodoc – Giulio Ferrari Riserva del Fondatore, as well as a family favourite, Champagne Egly-Ouriet’s Blanc de Noirs. Saskia de Rothschild (Ch. Lafite-Rothschild) breaks the mould and prefers to drink ice-cold Sauternes as an aperitif rather than sparkling wine. She is still toying on whether to go young or old, deciding between a 2017, an 2007 or 1989 from Ch. Rieussec. The whites White Burgundy seems the overwhelmingly popular choice for the Christmas table. Francisco Baettig (Viña Errázuriz, Viñedo Chadwick and Baettig wines) opting for a bottle of Pulingy-Montrachet Les Combettes from Etienne Sauzet. “I love the elegance and balance of this appellation, and the purity of the wines from this producer.” Neri is saving his last bottle of 2005 Bourgogne Blanc by Coche-Dury alongside a 1991 Terlano Rarita, a Pinot Bianco blend released 25 years after it was made, proving the incredible ageing potential of top whites from Alto Adige. Mangenot has also opted for a rarity for the special day – a magnum of 2012 Nuits-Saint-Georges Blanc from Château-Gris (Albert Bichot). Chardonnay accounts for just 2% of the Nuits-Saint-Georges appellation. “The wine has a lot of richness and a beautiful tension due to the altitude of the vineyards,” says Mangenot: he is pairing it with cod fillet and citrus cream. Keller is bucking the trend and unsurprisingly opting for dry Rieslings, specifically from the 1990s, along with an eagerly awaited bottle of 1959 Mosel Piesporter Schubertslay. In 2008, Keller (although based in Rheinhessen) took over 0.7 hectares of this incredibly steep slope in the Mosel and he is using his Christmas dinner to do some research on this Mosel site with some serious bottle age. The reds Keller is not holding back on the reds: he’s got a 1966 Ch. la Mission Haut-Brion and a 1991 Clos de la Roche Grand Cru from Hubert Lignier lined up. Gianlorenzo di Neri is also opting for a Clos de la Roche, although his is a 2006 from Armand Rousseau. At the Neri household they love to compare Grand Cru Burgundy with their Brunellos, “It should be amazing to taste our 2006 Tenuta Nuova alongside.” Beyond Brunello and Burgundy, they will also be enjoying some top Nebbiolo, but it’s not an easy choice. “For Barolo we love so many producers, Elio Grasso’s Runcot – 2008 should be delicious now – or possibly Giacosa’s 2007 Barbaresco Asili Riserva.” For Mangenot, “The middle of winter is a good period to open a bottle of sunshine like Cornas Vin Noir 2012 from Domaine du Tunnel (my wife loves it!) – concentration, density, beautiful complexity, silky tannins… And a bunch of aromas that turns your dinner into a summer journey in a convertible car with your nose in the wind!” Beattig is also opting for Northern Rhône Syrah from his favourite producer Pierre Gonon, a Saint-Joseph. “I love the complexity of aromas, the spiciness. The structure of the wine, but at the same time the polished tannins. The mix of freshness, complexity and depth... love it.” At the Rothschild household it will of course be Lafite: “1988 or/and 1996: two absolute favourites of mine these days,” Saskia explains. “The 1988 is pure Lafite, extremely complex and evolving and the ’96, thanks to its perfect balance, is just so easy to drink that you’ll finish the bottle without even noticing it.” Jean-Guillaume Prats (CEO of Domaines Barons de Rothschild Lafite) is staying pretty loyal too, opting for Pomerol’s Ch. l’Evangile 2010. To finish Finally the sweets and fortifieds: there is never a better time to open aged Ports to go with the cheese and desserts of Christmas. For Lafite’s Jean-Guillaume Prats it will be Dow’s 1977 – in his words, “perfection”. Mangenot is also going for Vintage Port: Graham’s Quinta dos Malvedos 2001, “to go with a homemade chocolate mousse, and the rest of the bottle definitely to enjoy slowly by the fire with the family… Fruits, flowers, creamy character, it is a treat for the nose and the palate I wouldn't miss it at any price.” Keller decides on the sweet wines more spontaneously: “One of our favorite combinations is matching 40 and 50-year-old Ausleses with game dishes. It can taste so great. The anticipation is already great.” If fortifieds are not your thing, then take Jean-Sébastien Philippe of Lafite’s recommendation: he’ll be having a glass (or two) of Cognac de Lafite Très Vieille Réserve. Montrachet, Chambertin, Richebourg: these names will send chills down the spine of any Burgundy lover. But many of the Côte d’Or’s most famous domaines are looking beyond these grand names, making wines from vineyards and appellations that might otherwise fly under the radar. With reputations at stake, the likes of Domaine d’Auvenay, Coche-Dury and Bizot put as much effort and care into these “lowly” wines as for their Grands Crus. Quality in these appellations is soaring – with better vine material, cooler sites that are benefitting from the warming climate, not to mention better winemaking and know-how all contributing. Here we offer a guide to just a handful of the treasures to be found in Burgundy if you look a bit further afield. Auxey-Duresses Right in the middle of the Côte de Beaune, Auxey-Duresses is a small, sleepy village situated above Meursault. Prior to AC regulations, the white wines of Auxey-Duresses were sold as Meursault and the Pinots sold as Pommard or Volnay. While probably better known for Pinot Noir production, some of its top wines are Chardonnays made in a specific part of the appellation directly bordering Meursault.  Here, high up on the hill, over the brow of Meursault’s highest vineyards you will find vineyards facing unusually north-west. While these vineyards are too cool to adequately ripen Pinot Noir, they have proven to be a great climate for Chardonnay, particularly in today’s warming climate. In a warm vintage, the whites can give the top Meursault vineyards a run for their money. Domaine Leroy, one of Burgundy’s most eminent estates run by Madam Lalou Bize-Leroy, has holdings in this part of Auxey-Duresses in Les Lavières, while Domaine d’Auvenay also regularly produces an Auxey-Duresses Blanc on this particular northwest-facing slope from the vineyards of La Macabrée and Les Boutonniers. Depending on volumes D’Auvenay can produce three separate Auxey-Duresses Blanc cuvées in one vintage or if volumes are down will blend into one. While these are expensive options, the quality is undoubtedly there and this is a great lesser-known spot in the Côte d’Or to source outstanding Chardonnay, particularly in warmer vintages.  Domaine Roulot, Olivier Leflaive and a Jasper Morris MW favourite Domaine Diconne (which has vines dating back to 1924) also produce excellent Auxey-Duresses Blanc on these slopes adjacent to Meursault. While stricter in style than their neighbours, they remain fantastic value. For reds, Domaine Comte Armand’s Premier Cru Auxey-Duresses is another great buy. Made from two complimentary Premier Cru sites – La Duresses (whose brown clay soil brings density and tannic structure) and Les Breterins (on lighter soil bringing fruitiness) combine to make a fabulous Auxey-Duresses well worth discovering. Monthélie Next door to Auxey-Duresses, sandwiched in between Meursault and Volnay, is another lesser-known appellation which has an impressive line-up of producers on its roster. Comtes Lafon, Coche-Dury, Philippe Pacalet, Domaine Roulot and Leroy all produce Pinot Noir from this little, oft-forgotten appellation.  Monthélie is actually one of Bize-Leroy’s favourite appellations for her Maison Leroy selection. Historically, Monthélie tended to produce Gamay more than Pinot Noir, but that is not the case today. While the village wines tend to be a little lean and err too far towards vegetal flavours, the Premiers Crus within the appellation deserve much more attention. Domaine Coche-Dury produces a Premier Cru Les Barbières, while Comtes Lafon’s Premier Cru is in Les Champs Fulliot.  Both have full south exposure, enabling the wines to ripen fully even at higher Hautes-Côtes-like altitudes. In the warmer vintages, you could be justly rewarded for sourcing wines from this under-appreciated little corner of Burgundy. Monthélie is also home to Domaine Potinet-Ampeau, whose collection of older bottlings can wow the senses, provides a fascinating and educational insight into mature Burgundy. Pernand-Vergelesses Few Chardonnay appellations in the Côte d’Or are as underrated as Pernand-Vergelesses. Proximity to Corton-Charlemagne makes this unsurprising. This winemaking enclave, tucked behind the hill of Corton, has long been a consistent appellation where you find outstanding quality at a fantastic price.  While consistent in quality, it is often inconsistent in quantity due to its position between two rising hills. The lay of the land produces natural airflow that attracts hailstorms and is also susceptible to frost as cold air sits in this natural pocket of vineyards. If the region escapes these climatic perils, the Chardonnays are linear and have a flinty, mineral character. The wines can age well, gaining richness as they mature. A top producer of particular note is Domaine Rapet – of whom Wine Advocate critic William Kelley recently noted, “It’s a mystery these wines are not better known or distributed.” Being the biggest landowner of Corton-Charlemagne, they are one of the region’s most consistent white wine producers. Domaine Chandon de Brailles (based in Savigny-lès-Beaune) is also widely recognised for producing the best Pinot Noir in the appellation.  Their Pernand-Vergelesses Premier Cru Ile de Vergelesses regularly competes with top Pinot Noirs made in the more famous appellations and is often described as one of Burgundy’s bargains given the quality. Other better-known producers such as Dugat-Py and a more recent purchase in 2012 by Domaine Jean-Claude Ramonet (one of the world’s top Chardonnay producers) – testify to the quality found here. Perennial FINE+RARE favourite, Domaine Jean-Marc & Hugues Pavelot, also produce outstanding Chardonnay from Pernand-Vergelesses. Morey-Saint-Denis While Morey-Saint-Denis can hardly be described as under the radar, it continues to be undervalued amongst its neighbours despite its obvious pedigree. Morey-Saint-Denis’s prime location in the Côte d’Or sandwiched between Gevrey-Chambertin and Chambolle-Musigny, for some reason – despite being home to five Grands Crus (Clos de la Roche, Clos de Tart, Bonnes Mares, Clos des Lambrays and Clos St Denis) – never gets the same limelight as either of its neighbours.  It’s possible to blame the autonomous nomenclature of its Grands Crus – with only Clos St Denis having a clear link to the village. It has meant that Morey-Saint-Denis as an appellation is seen as somewhat lesser in quality than its neighbours. Another reason might be that, like Auxey-Duresses, before the AC regulations came into play, the wines of Morey-Saint-Denis were either sold as Gevrey-Chambertin or Chambolle-Musigny.  Outside the Grands Crus, our excellent recent discovery is Domaine René Bouvier. Their  Morey-Saint-Denis En la Rue de Vergy is a simply stunning Pinot Noir no matter where it is from. While only classified as village, this vineyard is surrounded by Morey-Saint-Denis’s most illustrious Grands Crus – Clos des Lambrays, Clos de Tart and Bonnes-Mares – on the border with Chambolle-Musigny. In a sunny vintage, this cooler site has excelled and remains one of the great value-buys of 2019. Chassagne-Montrachet Rouge It is not simply lesser-known appellations that get missed. While its Chardonnays get all the attention today, Chassagne-Montrachet was historically a Pinot Noir appellation (as was Meursault). Today, Pinot Noir only represents about 20% of production within the Chassagne-Montrachet Premiers Crus, but until the 1960s, the appellation was dominated by the red grape. Some of the top Pinot Noir sites here were judged to be as good as Musigny, Clos de la Roche and Clos de Tart. Today Chardonnay is the better variety in the village, but there are still top examples of Pinot Noir to be found – often at a great price for the quality. The red wines from the Clos Saint Jean Premier Cru are often described as a unique expression of Pinot Noir – a wine of fantastic finesse, quite at odds with the appellation’s reputation for robust reds. It is arguably the finest site for red wine in Chassagne-Montrachet. Jean-Claude Ramonet produces a top example and Premier Cru La Boudriotte is also great, if not a little leaner in style. Marsannay Most Burgundy buyers rarely explore further north than Gevrey-Chambertin in search of the next big thing, but all indications point in that direction. Marsannay was only given appellation contrôlée status in 1987, encompassing three districts of Chenôve (on the outskirts of Dijon’s urban sprawl), Marsannay La Côte and Couchey.  Unique to the appellations of Burgundy, Marsannay can produce a rosé wine from Pinot Noir.  The foundation for the village’s reputation, many vineyards within the appellation are dedicated exclusively to rosé production. If a red wine is made in these vineyards, it must be declassified to Bourgogne Rouge). While Sylvain Pataille and René Bouvier make the most serious and age-worthy rosés in the appellation, the whites and reds are arguably the most exciting development in recent times. The village of Marsannay is arguably producing the best Pinot Noir for the money in the whole of Burgundy. Cult producers such as Domaine Bizot with Jean-Yves Bizot’s Marsannay Clos du Roy and his Bourgogne Le Chapitre, situated just south of Dijon, are already on aficionado's radars.  These wines are made in tiny quantities and has only further increased the collectability of these wines made in a distinct style (100% whole-bunch fermentations and zero sulphur additions). If sourcing Bizot wines is too painstaking and out of one’s budget, there are plenty of other exceptional growers in this region. Domaine Audoin is producing outstanding Premier Cru Marsannay that can compete with some of the top Gevrey bottlings and the wines still remain fantastic value. Domaine René Bouvier also makes exceptional wines from Marsannay. Côte Chalonnaise: Givry, Montagny and Rully Outside the Côte d’Or, to the south in the Côte Chalonnaise, Mercurey dominates the limelight compared to neighbouring appellations Rully, Montagny and Givry. When handled correctly, however, Givry, can produce fantastic, powerful Pinot Noir that also offers finesse. Rully and Montagny are also a great source of Chardonnay and remain outstanding value.  Montagny only produces Chardonnay – the top producers being Domaine Stéphane Aladame, Domaine Bruno Lorenzon and Domaine Maxime Cottenceau. Rully produces white and red, but the domaine's Chardonnay represents one of Burgundy’s best-value white wines. Producers worth looking out for include Domaine Jaeger-Defaix and Domaine Vincent Dureuil-Janthial. Domaine Joblot is the leading producer in Givry. Their wines consistently compete with those in the Côte d’Or, a beacon for the appellation’s reputation, yet remain sensibly priced. Of the estate’s 14 hectares, nine are Premier Cru, including some of the village’s finest plots such as Clos de la Servoisine and Cellier aux Moines.  L’Empreinte –  a blend of their four red Premier Cru sites (Clos de la Servoisine, Cellier  aux Moines,  Clos  Marole  and  Les Bois  Chevaux – is the property’s top wine. The white, Cuvée Mademoiselle, is a blend of  their  older-vine  Premier Cru  Chardonnay from  En  Veau  and  Clos de la  Servoisine. Joblot is rightfully praised by the likes of Clive Coates MW,  Robert Parker, Allen Meadows and Jasper Morris MW for being the leading address in Givry and one of the greatest estates in Burgundy. Hautes-Côtes de Nuits Situated over the brow of the main Côte d’Or slope and further to the west are the vineyards classified as the Hautes-Côtes (the higher slopes) of the Côte de Nuits. Typically around 100 metres higher in altitude, only the southwest and southeast slopes are warm enough to ripen grapes, but geologically parts of the region are identical to the Côte d’Or.  With warmer vintages, quality here is greatly improving and you can find some outstanding wines at a great price. Two top examples of this come from Vosne-Romanée’s Domaine Gros Frère & Sœur and Domaine David Duband. Both estates have invested heavily in the region believing in the potential of these cooler sites in a warming climate. Aubert de Villaine’s Domaine de la Romanée-Conti also produces an Hautes-Côtes de Nuits Blanc, from grapes grown on the slopes below the historic Abbaye de Saint Vivant. Barolo remains the most important region in the world for Nebbiolo. This variety is one of the world’s most sensitive and difficult to grow, rarely found outside Piedmont. While there are a handful of other high-quality enclaves across Piedmont including Valmaggiore (24km north of Barolo) and the cooler sites of Gattinara and Ghemme – collectively known as Alto Piedmont (or Alto Piemonte), nowhere else matches Barolo and neighbouring Barbaresco for complexity and ageing potential.  The wines are typically pale ruby in colour with grippy tannins, high acidity and a flavour profile of red cherry, mulberry, camphor and rose petal. The grape’s almost transparent character (similar to Pinot Noir) makes it a great transmitter of terroir – producing many nuanced styles, flavours and aromas – from the most delicate and floral to the most structured and mineral, and everywhere in between. It is this complex variety within such a small region that makes the grape, and the varying communes of Barolo, so interesting. Barolo has a cooler microclimate compared to nearby Barbaresco, resulting in a longer ripening season. While this means it is more sensitive to vintage variation, in the best years the wines reach highs unmatched anywhere else. Dry Barolo has been produced in the region since the mid-1800s. A wine that was a favourite amongst the aristocratic families of the Savoy dynasty, it is thought to have been first produced in this style by King Carlo Alberto’s estate in nearby Pollenzo. The aristocracy bankrolled wine production in Barolo, helping the pioneering winemakers at the time – such as Staglieno and the French oenologist Oudart – improve the quality and reputation of the wines. Their aristocratic link earned Barolo the nickname “the king of wines and the wine of kings”. Understanding the variety of styles of Barolo to a large extent depends upon where the grapes are grown. The landscape of Barolo is made up of many small undulating hillsides where exposition, topography and altitude all play important roles in the final character of a wine made in a specific part of the region or vineyard. Historically the sub-regions were not so important, largely due to the fact that Barolo wines existed exclusively as blends of fruit from across the region (often including grapes from the vineyards of Barbaresco). The 1961 vintage, however, represents a significant turning point when both Prunotto and Vietti released single-vineyard Barolos from Barolo Bussia and Rocche di Castiglione. While it was common knowledge amongst the local grape brokers which parts of the valley produced the best Nebbiolo, it wasn’t until the 1970s when these place names first came to print in Luigi Veronelli’s map. At the most basic level Barolo is divided into two valleys: the Central Valley and the Serralunga Valley. The Central Valley – including sub-regions of La Morra, Barolo and Novello – produce a more approachable style, noted for their fragrance and elegance, thought to be due to the distinct blue-grey marl content in the Tortonian soils found in these vineyards. The Serralunga Valley – with its sub-regions of Serralunga d’Alba and Monforte d’Alba – tend to create more powerful, tannic, concentrated wines due to the higher content of clay, limestone and sandstone found in the Serravalian soils. In Castiglione Falletto there is a richer concentration of sandstone and this is generally thought to produce a middle ground between the more structured character of the Serravalian soils and the elegance brought about by the Tortonian soils.  While these variations in soil throughout the sub-regions play some part in the differences in the structure and flavour profile of different Barolos, this is just one factor and should be understood as broad generalisations. The complex terroirs are defined not just by the soils, but by the varying expositions, altitudes, viticutural techniques, clones, pruning and winemaking methods which vary from estate to estate – making it impossible to provide a completely definitive profile of each area.    
A guide to Barolo's communes  There are 11 village communes within the Barolo DOCG: La Morra, Barolo, Castiglione Falletto, Serralunga d’Alba, Cherasco, Diano d’Alba, Grinzane Cavour, Monforte d’Alba, Novello, Roddi and Verduno. Below you’ll find a guide to the distinctive style of the main communes, as well as the best growers from each.  La Morra Wines from La Morra can be some of the most perfumed Barolo, typically with soft, smooth tannins. It is believed that the fine sandy soil of the region is behind the wines’ elegance. As the largest Barolo subregion, however, La Morra is the most diverse both in style and quality. Typically, these wines can be much more approachable in youth and tend to fair better in cooler vintages. Top producers in the region include Roberto Voerzio – who makes a unique style for the region, with strict pruning leading to miniscule yields and austere, tannic wines with long ageing potential. Poderi Oddero is more typical for the commune, producing bright, fruity Barolos with distinctly elegant tannins. Elio Altare is known for more modern-style Barolos which are matured both in traditional large barrels, as well as smaller barriques, and some new oak for their single-vineyard wines. Top vineyards: Brunate, Cerequio, Rocche dell’Annunziata Barolo Similar to La Morra, the Barolo sub-region produces broad, open, velvety Barolo but often with a bit more structure and concentration than those from La Morra. The region is home to some of the most historic sites, including Cannubi – a Cru that was singled out as an exceptional site even before the creation of the Barolo appellation (with the earliest bottled example of this site dating back to 1752). It is also home to some of the most respected producers in the region, who make markedly different styles of Barolo – further confirming that location is only part of the puzzle. Fierce traditionalists Bartolo Mascarello famously don’t make single-vineyard wines but their blended Barolo remains one of the region’s finest. Guiseppe Rinaldi’s winery is also staunchly traditional in their winemaking, seeing cross-commune blends as the ultimate expression of Barolo. winery is also staunchly traditional both in their winemaking, and blending of vineyards, seeing cross-commune blends as the ultimate expression of Barolo. Luciano Sandrone is more modern in style, the wines made in an elegant style that is more approachable in youth but also offers fantastic ageing potential – making them some of the region’s most collectable. Top vineyards: Cannubi, Ravera, Bricco delle Viole Castiglione Falletto  Although situated in the Serralunga valley, Castiglione Falletto falls somewhere in the middle between the elegant and fragrant qualities of La Morra and Barolo, and the boldness and concentration of Serralunga and Monforte. This is due to the aspect of the best slopes here, where the vines have maximum exposure to the sun, meaning riper fruit and added concentration. Giuseppe Mascarello produces one of Barolo’s most famous single-vineyard wines from the Monprivato Cru. Traditional in style, the wine is fermented in tank and aged in large oak. Vietti – a true pioneer of single-Cru Barolos – is also based here, as it has been since the 1800s. This estate has not only some of the best label designs in the world, but access to some of the finest Crus in Barolo, including Ravera, Rocche di Castiglione and Brunate. Top vineyards: Rocche di Castiglione, Fiasco, Villero Serralunga d’Alba  Serralunga is defined by its high concentration of Sant’Agata soils. Growers here talk about the vines feeling pain, as the harder soils put more stress on the vine, producing wines of great depth and power – as well as some of the highest tannin levels and the most full-bodied Barolos of any region. The wines can often have a distinctive bitter orange aroma. The wines are solid and typically austere, but can also be incredibly elegant and expressive, some of the most terroir-driven and long-lasting Barolo. By far the most famous and revered wine from Serralunga is Giacomo Conterno’s Monfortino. Monfortino was in fact the first ever producer-named Barolo made in the Riserva style, with the first vintage made in the 1920s (today it comes from the Cascina Francia Cru). Although based in Barbaresco, Bruno Giacosa produces two of Barolo’s most revered wines from the Serralunga Cru of Falletto, released only in top vintages. These are two of the most consistent expressions of top single-vineyard Nebbiolo in Barolo. Top vineyards: Cascina Francia, Falletto, Ornato Monforte d’Alba Defined by concentration and structure, the soils in Monforte d’Alba contain more clay than limestone – the opposite of Serralunga. The resulting wines tend to have more volume on the palate and boldness, making them the most concentrated Barolos. The wines exhibit classic rose petal, clay pot, clove, camphor and cardamom aromas, and particularly bold tannins. Look out for bottlings from Elio Grasso whose Case Matè Barolo comes from Ginestra. Bussia is one of the most famous, but also largest Crus, producing many different styles. Prunotto’s Emanuele Baldi has an encyclopedic knowledge of Barolo. Listening to his stories about the last century in the region is fascinating, providing context to how and why Barolo and the surrounding Piedmontese regions have developed as they have. Perhaps one of the biggest developments over this time was the birth of wines from a single Cru or vineyard.  A trend that Prunotto, along with Vietti, started in the early 1960s, these single-vineyard wines completely transformed how Barolo was sold. Today it is rare for producers not to sell both single-vineyard wines as well as their Barolo “Classico” made from a blend of vineyards and regions. But this trend wasn’t necessarily Prunotto’s intention, believing only certain vineyards had the capacity to produce wines as complex as those of the blended Barolos the region had become famous for. It was Prunotto’s winemaker at the time, Beppe Colla, who came up with the idea, inspired by a trip to Burgundy with both Vietti’s Arturo Bersano and the famous Italian wine journalist, Italian gastronome and intellectual Luigi Veronelli. On discovering the region’s obsession with terroir and single-vineyard designations, they recognised the link between the region’s complex soils and wine - something familiar with certain Barolo Crus, which has a distinct imprint. The concept of the single-vineyard Barolo was born. The transition to producing a single-vineyard Barolo was not such a difficult progression, since back then Barolo producers like Prunotto were based in the city of Alba, rather than the vineyard hamlets themselves. Following the harvest, the grapes were brought to the town square on carts and for many grape growers it was only at this point that they bartered their goods with the town’s wine producers. Winemakers, Baldi told me, would famously bargain for the grapes. They would often complain that the prices were too high and that they should come back tomorrow with a better price, with the grapes already decomposing in the growers’ carts. The growers had little option but to drop their prices before their crop became worthless. Prunotto, along with the likes of Pio Cesare, was one of a handful of prestigious producers happy to pay a premium for the best grapes. With no bargaining, they saved precious time (preserving the quality of the fruit), while also securing the cream of the crop. Because different smallholders brought their separate carts of grapes, it became easy to identify the different qualities depending on the vineyards they came from. Initially, Prunotto found the Bussia grapes stood apart from the rest – which is why it became their – and the region’s – first single-vineyard Barolo (along with Vietti’s Rocche di Castiglione) in the 1961 vintage. But why did the Bussia vineyard stand out, earning a solo bottling? The historic region of Bussia (which today represents Upper Bussia) is a perfect amphitheatre of vineyards, in which different parts of the same vineyard produced grapes with different, complementary characteristics that together create a complex wine when fermented.  Baldi feels that Nebbiolo is typically best when it is a blend of different vineyard sites. Most Barolo vineyards on their own, he thinks, don’t provide the balance, intensity, and complexity of a multi-site blend. “Each of the individual vineyards are like parts of an orchestra,” he explains. Each vineyard adds a layer of complexity, whether it be perfume, tannic structure or a rich mid-palate which, if on its own, would be too simple. “Have you ever listened to hours of music played just by a double bass?” Baldi quips. “But some vineyards in Barolo are an orchestra in themselves.” And this is exactly what he, and Prunotto, feel is true for upper Bussia – an amphitheatre that can produce something truly distinct and complex. For Prunotto it is Bussia’s “grace and balance” that sets it apart. Upper Bussia is situated right in the middle of the two dividing styles of Barolo: to its east are the vineyards of Serralunga, known for their tannic structure and power; to its west are the vineyards of La Morra and Barolo, known for their elegance and florality. Upper Bussia is one of the perfectly situated Crus (similar to Cannubi and Rocche di Castiglione), capturing the best of both these styles.  The estate’s two flagship wines – Barolo Bussia and Barolo Riserva Vigna Colonnello – are both from Upper Bussia. Following the success of their 1961 single-vineyard Bussia, Prunotto went on to produce many other single-vineyard cuvées, including the Crus of Ginestra, Cannubi and Barbaresco’s Rabaja and Montestefano, but the winery always kept going back to Bussia, which has become its spiritual home. That’s also why, upon their arrival at Prunotto back in the late 1980s, the Antinori family immediately focused their attention on the Bussia Cru, purchasing seven hectares in the area. Barolo built its reputation on its blends. More often than not, these multi-vineyard blends are wines of fantastic complexity and balance. Today, however, most Barolo producers’ single-vineyard Cru wines are their most prized (and expensive) wines.  Clearly, top Crus such as Bussia, Falletto, Villero, Monprivato and more have developed a huge following amongst collectors and connoisseurs. Prunotto’s and Vietti’s pioneering leap, introducing the concept of single-vineyard wines to the region, brought a new layer of complexity to drinking Barolo. It’s even prompted cartographers to map out the region in extraordinary detail. 2019 Meursault, Premier Cru, Gouttes d’Or, Louis Jadot Gouttes d’Or is one of the cooler Premier Cru sites in Meursault and therefore excels in warmer vintages. It was certainly one of our picks from Louis Jadot in 2019. It has a beautifully rich golden colour and a lovely expressive florality on the nose. It is pure opulence on the palate, full-bodied, exhibiting huge, spherical breadth which fills the palate. Honeyed melon, yellow plum and white peach fruit are in abundance but the wine tightens up nicely on the finish. This is a wonderfully intense and serious Chardonnay. 2019 St Aubin, Premier Cru, La Chatenière, Joseph Colin The talented Joseph Colin (brother of Pierre-Yves Colin Morey) continues to impress with his superb range of whites. This dry, stony plot gets an hour less sun, shielded from the rising sun by the slopes of En Remilly/Dents de Chien – an hour that makes a huge difference in the resulting wine, which was a stand-out from the range. On the nose, it’s pretty, floral, dainty and mineral, while the palate is soft and supple, with the most  extraordinary silken texture. By contrast, the flavour profile is tightly wound, with a mineral line, concentrated citrus and subtle white blossom. Ethereal yet powerful, it will be a joy to watch this evolve. 2019 Puligny-Montrachet, Premier Cru, Clos de la Mouchère, Domaine Henri Boillot Guillaume Boillot is particularly pleased with the 2019s – with their perfect balance and, for the whites, a real floral character that runs through the range. The four-hectare monopole vineyard Clos de la Mouchère is always a favourite – this sub-section of Perrières producing a particularly honeyed expression of the site. There’s a real roundness to the wine in 2019; it’s soft, intense and long. Vibrant citrus fruit and minerality drives the wine, but there’s a suppleness that surrounds a core of real energy. With air, notes of white nectarine, acacia honey and freshly cut hay emerge – adding richness and weight. Particularly concentrated and fine. 2019 Vosne-Romanée, Premier Cru, Les Suchots, Domaine Lamarche Nicole Lamarche has no doubt made some of the most ethereal reds in the vintage. Picking at least a week earlier than most of her neighbours, all her wines sit comfortably below 13.6% alcohol. Her winemaking is reliant on her continual tasting of fruit, must and wine to dictate her vinification processes. Every cuvée is approached differently. Despite this bespoke approach, the consistency across the board is commendable. It makes it difficult to pick a favourite in the range but her Suchots is incredibly serious – competing with wines 10 times its value. It is an endorphin-releasing Pinot Noir in which the purity of fruit and exceptional balance leaves you forgetting about flavour and thinking about feeling. It reminds you how good red Burgundy can be with fantastic terroir and an adept hand. 2019 Clos de la Roche, Grand Cru, Domaine Georges Lignier Benoît Stelhy believes 2019 is “amazing”, the vintage of his career – or at least he did until 2020 arrived. No less, the 2019s here are superb, although there’s sadly not a lot of them – with yields down by up to 50%. His Clos de la Roche really shone at our tasting. Delicate florals combine with crunchy red fruit to make a truly delicious wine. It’s intense, with the tannins building subtly in the mouth – they’re round and soft, yet coat the cheeks and gums. The sweetness of the new oak (40%) coats the dark fruit, while the palate has a savoury freshness thanks to the whole-bunch (30%). It finishes long, with a chalky line and redcurrant bite. 2019 Beaune-Grèves, Premier Cru, Le Vigne de l’Enfant Jésus, Bouchard Père & Fils Frédéric Weber at Bouchard thinks 2019 is “a huge vintage for the future” – and the domaine’s iconic Vigne de l’Enfant Jésus is case in point. This section of Les Grèves Premier Cru is the “filet mignon” of the vineyard – the most desirable section, right in the middle of the slope, with well-drained gravelly soil which tends to ripen earlier. The resulting wine has a distinct spicy, floral nose – think black pepper, cloves and violets, with a toasty edge. There’s real richness and weight, with a luxurious creaminess to the wine on the palate, which is laden with muddled black berry fruit, cut by chalky minerality and juicy raspberries. Vibrant, balanced and concentrated with seamless tannins, this is superb. 2019 Chambertin Clos-de-Bèze, Grand Cru, Olivier Bernstein The wines of Olivier Bernstein are a masterclass in dynamism. The wines feel so alive when you taste them. It’s hard not admire Olivier Bernstein’s honesty when he says how each of his cuvées take it in turns to show up: one week the Clos de la Roche might be flexing its muscles, another week it is the Mazis-Chambertin. The Clos de al Roche was one of the highlights of a spectacular set of Grands Crus in 2018, a vintage Bernstein believes to be his best, but another favourite was the Chambertin Clos-de-Bèze which effortlessly ticks all the boxes for what you want in a Grand Cru. The tannin structure is built like a cathedral, so detailed and compact, while at the same time fleshing out on the back-palate and providing so much breadth. The berry fruit remains precise and fresh, and distinctly red-fruited, while the finish is sapid and saline. It is truly a magical wine. 2019 Vosne-Romanée, Premier Cru, Les Malconsorts, Domaine du Clos Frantin, Albert Bichot The Albert Bichot wines continue to improve under Alain Serveau’s stewardship. They are the largest owners of Malconsorts, with 1.76 hectares of this excellent Premier Cru. In 2019, there’s something almost imperial about the wine – both sophisticated and opulent. The nose fills with a richness of red cherries, complemented by a touch of plum. The palate is intense and tight, the tannins fine and supple. Laden with ripe, bright red berry fruit and juicy acidity, it’s a gorgeous wine in 2019. 2019 Corton, Clos des Cortons Faiveley, Grand Cru, Domaine Faiveley Faiveley today is the sixth-largest domaine in Burgundy and, despite its expanding size, the wines are only getting better – most notable with a change in winemaking from 2006, shifting to a much lighter touch during extraction. The renovation of their magnificent winemaking facilities in Nuits-Saint-Georges has also improved their ability to find detail and distinct personality in each of their wines. With huge barrel cellars, they are also able to have extended élevage to 16 to 18 months, creating wines with great volume and integration. The true star of their extensive collection of vineyards in the Côte d’Or must be the monopole Clos des Cortons Faiveley Grand Cru. The detail on the nose is extraordinary – dried aromatic tea interspersed with pristine red berry fruit, blood orange and a gorgeous vinosity. The spectrum of flavour is staggering, whie remaining succulent and generous in both breadth and concentration. It’s another remarkable wine in a fantastic vintage for the estate – albeit with 30% less made this year. 2019 Clos des Lambrays, Grand Cru, Domaine des Lambrays Domaine des Lambrays’s flagship site is almost but not quite a monopole, with an ouvrée – less than 0.2 of the total 8.84 hectares – at the bottom of the clos belonging to Taupenot-Merme. Yields here were down to a measly 15hl/ha in 2019 – although winemaker Jacques Devauges assigns this partly to their ongoing conversion to organics, but the quality is clearly there. Most of the vines (71%) date from between 1898 and 1935, while the lowest section of the vineyard is 40 years old, and 3% of the vines are spritely 20-somethings. It was fascinating tasting the three sections of this large Grand Cru separately and then as a blend, seeing how each one contributes its own character.  There’s the exoticism of the side near Clos de Tart; the more angular, structured and firmer top section; and the intense, vibrant fruit of the lowest part of the vineyard. Combined, the wine has remarkable concentration – much more than a sum of its parts, building gradually on the palate with layer upon layer of bold, blueberry fruit and sweet-savoury spice, yet plenty of the vintage’s moreish acidity. As Jacques said rather modestly, “You want to drink it.” We might be inclined to go a little further, given the quality and ageing potential on show here – but it’s hard to resist now. Based in the village of Morey St Denis, the domaine is today run by the ever-thoughtful
Benoit Stehly, the great grandson of Georges Lignier, who has been in charge of
the property since 2007.  It remains one of the great value domaines in the Cote de Nuits and the wines are undoubtedly the top-value picks from these top sites in 2018.  This week we met with Benoit in London for a second look at his 2018s, following our initial autumn tasting at the domaine. The times are changing Benoit’s honest approach to his viticulture, his confidence to experiment and his continual
strive towards creating “thought-provoking” rather than “perfect” wines, always makes for an inspiring visit. He is not one to shy away from making changes in the vineyard in accordance with the
undeniable rise in temperatures over the last decade in Burgundy. Warm vintages are becoming commonplace and therefore he thinks a fresh approach is required to make the most of it.  Benoit is unique in Morey in keeping a permanent grass cover in the vineyard creating competition with the vines and forcing deeper root systems. It also serves to increase humidity, off-setting the heat of a hot vintage and slowing down the ripening, thus retaining freshness and protecting against the grapes cooking on the vine.  It also protects against erosion as well as creating more biodiversity in the soils. Others in Morey have since tried and failed with the same technique and this he believes was down to his own luck. First planting the grass in 2012 he was fortunate to have had three consecutively wet springs that enabled the roots to bed in. His neighbours who have since tried have seen much drier Springs in 2014, ’15, 16, ’17 and not been able to maintain them. 
In a warmer vintage like 2018, Benoit looked to similar steps he took in 2015 to best deal
with the heat. He has thrown out the rule book of picking 100 days after flowering, knowing that in vintages like these the grapes ripen much quicker.  “Two distinct style changes today exist in Burgundian Pinot Noir due to climate
change”  Benoit believes the very real effects of climate change has seen two quite different
styles develop in the Cote du Nuits and in recent vintages this has only become further
exacerbated by ever warmer summers. According to Benoit, about a third of Burgundy producers, typically the younger (or at least younger-spirited vignerons), of which he includes himself, are picking on freshness. The older generation continue to pick on ripeness – governed by the general rule of picking 100 days after flowering.  Both styles have their advantages, picking later gives you fully developed aromatic
complexity but with the risk of escalating alcohol levels and less freshness. Benoit prefers to pick on freshness, retaining “classical” alcohol levels – between 13.2 – 13.6% abv and terroir specificity, whilst avoiding what he believes is over-ripeness in the fruit flavours. The risk seems to of paid off with his 2018s.  The French government no longer calls the shots in a warmer Burgundy Picking times were regulated by the French government in Burgundy up until 2005. The
practice was discontinued following the disastrous timing by the government during the very hot 2003 vintage in which they only allowed picking to start in September (too late for many). The delay was due to government officials unable to declare until they returned from their summer holidays. Many vignerons broke the law to save their crop, others were not so lucky. Following the outcry, the government in 2004 declared that producers could pick from August 1st, effectively making their declaration pointless. Ever since, the practice has
been discontinued. However, as Benoit explains, many vignerons had become reliant on officials to tell them when to pick, rather than making their own judgements. Abandoning the declaration exposed all the vignerons that had little understanding on when was the right time to pick. It also further debunked the now outdated notion that you pick 100 days after flowering. A fresh approach 
Many of Benoit’s neighbours, even in 2018, were still picking 100 days after flowering and in his opinion were producing overripe wines with huge alcohol levels. For Benoit, Burgundy over 14% abv loses its typicity and sense of place. He states how Burgundy has always been one of the coolest regions in the world to produce Pinot Noir, and in the past the leaner, difficult vintages were all too common.  Climate change has produced warmer, riper vintages which according to Benoit has at least given the vigneron more choice in the style of wine they want to produce. With the warmer weather, one can either opt for a fresher style or a riper style and this comes down to choice of when to pick.  For Benoit, the picking time is the key factor to get right and remains the most stressful time
of the year. With high temperatures and a persistent drying wind at harvest, picking times in 2018 had never been more important. Picking just five days later saw the alcohol level rise by 1%. Fortunately, Benoit was one of the first out in the Morey St Denis vineyards beginning to pick from the 5th September, with all the grapes in within 10 days, starting with his Grand Crus and ending with his coolest Village sites. The 2018 wines Chambolle Musigny 2018 The oldest vines dating back to the 1930s gives this village wine plenty of personality coming from two plots north of the Chambolle village whose soils are rich in iron. The wine has wild floral aromas and light mineral ferric notes with silk-like melted tannins. The purity of fruit on the palate is fantastic with great mid palate weight and expansive breadth. This is excellent
quality for village level. 
Morey St Denis 1er Cru 2018 Bright translucent purple colour with perfumed notes of violets, wildflowers and red berries. The palate has a lovely spectrum of fruit from vibrant crunchy blackberry fruit to more candied red cherry and cassis. This interplays with a more Morey-esque savoury tone of fresh soil, hints of sage and bay providing more refreshing earthiness to offset the ripe fruit. The tannins are beautifully integrated and very fine, well-balanced with refreshing crunchy acids. Morey Saint Denis 1er Cru – Clos des Ormes 2018 Benoit calls this his baby Clos de la Roche, sitting directly below the Grand Cru vineyard and sharing the darker spice, brooding fruit and complex perfumes of orange bitters and sweet herb notes alongside rich plush blackberry fruit. This is a very serious gourmand style of Burgundy that is built to age and will develop beautifully in bottle over the next decade.  Gevrey Chambertin 1er Cru Les Combettes 2018 Surrounded completely by Grand Crus, this has a lovely elegance and sweetness on the nose,
the intensity and generous character of top Gevrey and a really wonderful balance. Red fruits, raspberry, a touch of juniper, pepper, silky tannins that are already so soft and integrated. Mulberry and macerated raspberry on the finish. Great length and freshness. This is serious. 
Clos Saint Denis Grand Cru 2018 Vines between 60 and 70 years old – powerful red fruits with fresh peppery notes and minerality on the nose. Superbly balanced tannins with a light sweetness, an expansive palate of dark berries and cherries opening to a long and elegant acidity, which amplifies the minerality of the terroir. Dry and powerful, the spine of this Clos St Denis provides amazing structure and exciting length on the finish. Will age incredibly well.

Clos de la Roche Grand Cru 2018 Deep nose of blueberry and purple fruit, savoury herbs and spice. Tightly wound and intense, the palate shows a hint of dark chocolate, oak, dark cherry and red fruits. A chunky personality, touch of pepper on the finish and good length. So much potential here. 
Bonne Mares Grand Cru 2018 Grown exclusively on the red limestone soil (Morey-side) of Bonnes Mares rich in iron, from 100-year-old vines. A captivating nose of mandarin, touches of spice and a broad spectrum of red and dark berry fruits. A core of red cherry and raspberry on the palate, mouth-watering acidity balanced by sensuous tannins. Structured yet elegant with an intense fresh berry finish. Outstanding. Explore more Editorial

Wines sold en primeur will be released from the producer after bottling, typically 18 months after the so-called campaign ends. Upon arrival your wine will be stored at Vinfolio in our temperature-controlled warehouse until you decide to take delivery.

When a wine is on "pre-arrival", it means that we have a confirmed order on the bottles from our supplier and we are simply waiting for the winery or distributor to ship the wine to us. The delivery timeframe for pre-arrival wines varies significantly, depending on where the wine is coming from. We will notify you once they arrive at our warehouse and, at that point, you can decide to arrange shipping or list them for sale.
