Drink 2029-2040, Vinfolio, Nov 2025

Undeniably the standard-bearer at this address, La Dominode is one of the most concentrated wines in Pavelot’s impressive array of Savigny Premiers Crus. There’s a significant swathe of old-vine fruit, with 40% from 90-year-old vines, 30% from 40- to 50-year-old vines, and the remaining 30% from young vines (10-15 years in age). The 2024 Savigny-lès-Beaune 1er Cru Les Dominodes opens with a seductive interplay of dark fruit and red berry notes, subtly lifted by floral hints and a charming touch of tobacco leaf. The palate is medium-bodied yet serious in intent, combining silky texture with vibrant, mouth-coating tannins that bring a gentle bitterness through the mid-palate. Beautifully well balanced, it shows great acidity and a strong sense of mineral tension, giving energy and precision to the wine. The oak is already well integrated, framing the fruit without excess. Elegant and cohesive, this is still very young and will benefit from 3 to 4 years in bottle to fully unfold its depth and refinement, finishing with a chalky, persistent, and poised expression.

The 2024 Savigny-lès-Beaune La Dominode ler Cru has an impressive nose, the most mineral-driven among Pavelot's Premier Crus, nicely detailed with crushed stone infusing the red fruit. The palate is medium-bodied with fine tannins, fresh and focused with a tad more backbone and grip on the finish. The energy in this La Dominode will serve it well.

A concentrated and noble purple. The fruit is the classiest to date, albeit quite backward. Dark cherry and raspberry. I find considerable concentration, definitely more structure, a cut above the others as Dominode tends to be. Excellent integration of dark fruit and acidity, fine persistence.
