From the "best vineyard plots" on the chalky soils of the villages of Champtin and Bué-en-Sancerre, the 2014 Sancerre Sauvage opens clear, precise and fresh, as well as dense and complex on the nose. The fruit has certainly another character on the nose than all of the other Pascal Jolivet wines that I have tasted for this report. It's much more subtle but also intense and individual, and it is perfectly intertwined with the mineral flavors that shine in this bouquet. On the palate the mineral flavors dominate everything and give vitality, grip and tension to this expressive and naked wine, which is a big step above the others in term of character, expression and drinking pleasure. The fruit is clear, pure and fresh, rather white than yellow, and there are no signs of charming creaminess, roundness or impressive power. This is pure and expressive Sancerre of great character and quality. It has been fermented and aged for 12 months in stainless steel and bottled without filtration.
