The nose of Pavillon Blanc is chalky and bright with a sea-spray scent, lime and green apple. It’s lithe and elegant on the palate, layered with zingy grapefruit and lime, concentrated, tightly coiled and full of energy. Driven with mineral tension, it’s mouthwateringly fresh and long, with a definitively saline finish. Another superb Pavillon Blanc. 13% alcohol and 3.2pH. Blend: 100% Sauvignon Blanc

Really pure and precise, with a fascinating mineral drive to the fruit. Bright but textured on the palate, with a medium to full body. There is a subtle saline twist but it’s refreshing and driven, with excellent weight and length. The acidity really brightens it. 100% sauvignon blanc.

Gorgeous aromatics. Gooseberry, greengage, red and white currant, white current leaf, jasmine, elderflower and elderberry and then 50 shades of citrus. A little pear and quince even (a note I usually associate more with Sémillon). Some exotic fruits too – guava, passionfruit. A little hint of the limestone terroir and a crushed rock mineral note. So intense and yet soft and gracious on the attack. Fresh and vivid and vibrant in its vertical lift. Upward swirls of freshness, as if with a different and higher viscosity animate the palate. A lovely delicate limestone and saline minerality. So pure and fresh and linear on the rippling long finish. Exquisite.

Entirely crafted from Sauvignon Blanc, the 2024 Pavillon Blanc reveals a delicate bouquet of confit citrus, boxwood, pear and spices. Medium to full-bodied, seamless and layered, it's built around bright acids and a lively mid-palate that segues into a fresh and herb-inflected finish. This is a slightly more opulent and expressive rendition compared to the more restrained 2021 and 2017 vintages.
