Almost incomprehensible concentration here. This has a deeply aged, toasty and dark nutty edge on the nose. Roasted honey, dark chocolate, coffee and roasted malt, too. The palate has implausibly concentrated flavors that follow the same threads shown on the nose, all swooningly sweet and rich. Yet, somehow it extrudes and balances to the point of lightness, leaving a trail of long, dark and toasted flavors of almonds. Extremely impressive and complex. Drink now. Screw cap.

A dense and very sweet fortified white with volatility, sliced burnt orange and toffee character. Burn coffee beans. Full body, deep and dense. Sweet wine unique to Oz. Drink now. Screw cap.
Muscadelle grapes. After fortification, the wine is transferred to casks and barrels for many years of maturation, where the wine will concentrate in flavour and gain more texture and lusciousness, and rancio and oak tannins impart their influence. pH 4.12, TA 3.8 g/l More of a caramel nose and more malty than the Seppeltsfield Paramount. Sultana rather than prune or raisin. Towards malted honey even though it is so dark. Sweet but with a fine tangy aftertaste. Less complex than the Paramount. Very thick and viscous on the palate. (JH)
