(from all Dijon clones) Good dark red. Aromas of blueberry, dried cherry, violet and menthol, plus a musky meaty nuance. Then broad and quite dry in the mouth, with a mineral note adding complexity to the berry flavors. Finishes with firm, slightly dusty tannins that call for a year or two of bottle aging.
