Bacio Divino’s Cabernet Sauvignon program is just getting off the ground. The 2004 Cabernet Sauvignon To-Kalon Vineyard is a 400-case cuvee that has barely budged since I reviewed it last year. Its deep ruby/purple color is followed by notes of cassis, cedar, licorice, and a Pauillac-like purity and full-bodied, structured style. While proprietor Claus Janzen continues to fine-tune his Cabernet Sauvignon program, the strength of his portfolio remains his innovative blends.
