The largest-scaled, ripest, and richest wine of the four 1993 Chablis' produced by Dauvissat is the 1993 Chablis Preuses. It boasts an exotic tropical fruit character, fuller body, lower acidity, and more power, glycerin, and intensity. This is one of the great grand cru vineyard sites on the slopes of Chablis, so it is not surprising that the grapes achieve higher sugar readings. It is a superb wine in a mediocre vintage - a tribute to Dauvissat's winemaking skills. Drink it over the next 5-7 years. One of the top three or four Chablis producers, Dauvissat continues to impress me with wines that are beautiful, rich, and elegant, displaying only a subtle hint of oak in their melange of flavors. 1993 was not an easy vintage in Chablis, but the wines reviewed in this segment are irrefutable successes for the vintage.
