The 2022 Las Toscas was produced with Listán Blanco from ancient, ungrafted vines on volcanic soils at 1,400 meters above sea level. This had a slightly faster fermentation (five months!) and achieved close to zero residual sugar. It fermented and matured in barrel for close to one year with lees that were never stirred. It has an expressive nose, stonier and more austere with a rugged mouthfeel, pungent flavors and a long, dry and stony feeling. It has good ripeness, 13.5% alcohol and a low pH of 3.18. It was bottled in June 2023 without racking or any added sulfur at any point of the process. 1,550 bottles produced.
