The 2021 Rosado wants to be a rosé with aging potential through harvesting ripe grapes to make a wine with the soul of a red. It has a bright pink color and a perfumed nose. The blend has changed from last year, and this is 50% Garnacha and 25% each Graciano and Mazuelo that fermented separately in small stainless steel vats and matured in concrete and barrels for 17 months. It has 13.84% alcohol, a low pH of 3.26 and six grams of acidity. Having more Garnacha means the color is a little lighter, and for some reason, the nose is also more serious—there are no sensations of strawberry or caramel, with a touch of fennel and aniseed. It's tight and a little more reductive and is now sold with the Reserva category (which it was before but not explicitly noted on the label). It feels more serious than previous years. 3,159 bottles were filled in March 2023.
