The 2016 Savennières Clos du Papillon is discreet in aromas but clear, deep and complex on the nose, with subtle slate, very fine sur lie and light stone-fruit scents. Grown on gray-green slate soils and from vines 20, 40 and 70 years old, this is a highly elegant and silky-textured Chenin Blanc with a very long and intense, well-structured and aromatic as well as salivating and salty finish. There are very fine tannins here as well. Linear and refined style. Evelyn accepts a bit of botrytis here to give the wine more depth and roundness, and indeed, it's a great classic for a dry Chenin from the Loire Valley. It can age terrifically well.
