The one cuvée that really transcends the vintage this year is Guffens's 2021 Pouilly-Fuissé Cuvée Unique, a complex, fleshy wine that wafts from the glass with aromas of clear honey, tangerine oil and pear mingled with freshly baked bread, white flowers and a deft touch of youthful reduction. Medium to full-bodied, ample and satiny, with a layered core of fruit, racy acids and a long, chalky finish, it's seamless and complete.

The 2021 Pouilly-Fuissé Cuvée Unique underwent two pickings, the second whereby the fruit was "levrouté" (late-picked with some residual sugar). There is just a touch of reduction on the nose. It's steely at first, with crushed stone and plenty of shucked oyster shells commingling with iodine. The palate is well balanced with a fine bead of acidity, linear and correct, quite penetrating with impressive length. With delicate precision towards the finish, this nascent Pouilly-Fuissé holds everything back for those with the nous to give it time in bottle.
