Undeniably Pavelot’s flagship, La Dominode is one of the most concentrated wines from Pavelot’s impressive array of Savigny Premiers Crus. Everything is mastered here; it’s a serious wine with a touch of welcome austerity, delicate fruit and power. There’s a hint of reduction, but this will disappear in bottle. The wine possessed such structure, with generous tannins. An amazing spectrum of red fruit arrives on the mid-palate, with a finish that lasts forever. It was a complicated vintage with five times more work in the vineyards, but it was worth it – with Hugues Pavelot doing everything to preserve quality. It is no exaggeration to say that if Savigny were to have a Grand Cru, it would be La Dominode.

The 2021 Savigny-lès-Beaune La Dominode 1er Cru has another complex bouquet from Pavelot, predominantly red fruit infused with damp earth, iodine and pressed iris flower aromas. The palate is medium-bodied with firm but quite chiselled, almost chalky tannins, certainly very saline with a focused, peppery finish that leaves the mouth tingling for 60 seconds afterwards. Bon vin.
