The NV Extra-Brut L'Ouverture ( trois rondelles ) is a terrific wine for the year. Lemon peel, chamomile, dried flowers, mint and tangerine oil are beautifully delineated. This release is 70% 2023 and 30% 2022, bottled with an experimental longer cork that is not typically used for Champagnes at the NV level because of prohibitive cost. In a somewhat fragile vintage like 2023, the longer cork retains more freshness, resulting in a far more satisfying wine, with the cork compensating for some of the lightness of the vintage. Dosage is 3 grams per liter. Disgorged: October 2025.

The NV Champagne Premier Cru L'Ouverture Extra Brut pours a copper/straw color and opens with a lovely spice of reduction and flinty stones, giving way to fresh peach, quince, cherry blossoms, and strawberries. Medium-bodied, it has a supple, stony texture, an approachable, open nature, elegant detail, a refined, creamy mousse, dewy freshness, and a lasting finish, with hints of toast and spice. As it opens, more orange zest and citrus shine. Drink 2025-2035. Disgorged in March 2025.

Disgorged in January 2025 with a dosage of 3.5 grams per liter, the latest release of Savart's NV L'Ouverture is predominantly based on the 2022 vintage (60%), with the remainder from the 2021 and 2020 vintages. Crafted entirely from Pinot Noir grown in Écueil, it includes 40% purchased fruit, which Savart’s team harvests themselves. The wine is vinified in 350-, 400-, 500- and 600-liter barrels, with 5% to 10% of the barrels being new. Wafting from the glass with aromas of pear, red apple, pastries and spices, it's medium-bodied and fruit-forward, with succulent yet vibrant acidity and an expansive finish. Among Savart’s range, this particular wine may come across as somewhat straightforward.

A blend of 2015, 2016 and 2017 vintages, fermented in barrels and rested for 6 months on gross lees. This is 80% cuvée and 20% taille. A super smooth rendition of pure pinot noir, this is supple and very vinous with red cherries and pink grapefruit, as well as a smooth and creamy texture. Turns crisp and carries plenty of red-fruit flavor in a fine, gently spicy finish. Drink now. Disgorged May 2018. 4g dosage.
