I tasted the final blend of the 2015 L'Etoile, the entry level 100% Chardonnay, which was going to be bottled the day after and mixes different vineyards. It was aged for nine months in fully topped up large foudres and later moved to Burgundy barriques that are not topped up for about one year, when the surface develops a veil of yeasts and the wine gets the light Jura taste. 2015 was a ripe and powerful vintage with moderate acidity and round, lush palates. This is a typical l’Etoile with the volume and the minerality of the limestone. In order to check how this wine ages, I had the chance to taste the 2000 of this wine, a vintage Nicole considers an easy but not great year (for example, she mentioned that her 1999 was a great year), one that was easy to work, and the 2000 had a very developed nose, still young, without any signs of oxidation and with years ahead of it.
