86% Cabernet Sauvignon, 14% Cabernet Franc. Cold maceration in stainless-steel fermentation vessels and then fermented at 27–30 °C with frequent pumpovers and occasional délestage. After fermentation, a prolonged malolactic conversion occurred naturally in 225-litre barriques. The wine was matured for 20 months in 60% new French oak barriques from Sylvain and Saury. Natural cork. Tasted blind. Deep, shaded crimson. Now this has interest! Grip, structure and hidden depths. Very long and vibrant. Sweet and voluptuous. (JR)

The 2015 Cabernet Sauvignon Stellenbosch has a bold and expressive peppermint-tinged bouquet with plenty of black fruit. The palate is medium-bodied with a touch of game on the entry. Satisfying depth, lightly spiced, though there is some dryness on the finish, but there is real sophistication here. Tasted blind at the 10-Year-On horizontal in London.
