The red Beaune Clos des Mouches, always one of this firm's best wines, has a moderate deep color, a lovely ripe cherry and spicy oak bouquet, good flavor concentration, and moderate tannins. It should be at its best between 1988-1995. The Drouhin 1983s were given an intense filtration, no doubt because many of them are placed on American restaurant wine lists, where one is unlikely to find many who understand the virtues of sediment.
