Full bottle 1,176 g. 'Muy seca – Very dry' on the label.  Straw, struck-match smokiness. Super-dry and tense, with a molasses maltiness and intensity – almost like a double-fermented soy sauce (which is a bit of a head-bender, when you have this pale white-gold liquid in the glass. Notes of oyster liquor. Very salty and dramatic with a beautifully long, tangy finish. Not for sherry newbies. (TC)

Lustau have released three half-litre, stoppered bottles from 'three cities and three types of ageing' to celebrate their 125th anniversary and this is the lightest of them. This one is described on the handsome accompanying literature as 'a version which has never been seen before where a long biological ageing of eight years allows a slight oxidation'. Bright gold. Pungent and herbal on the nose. Smells like bread dough and blue cheese. Smooth and caressing on the palate with quite a bit of weight. Then a finish that manages to be both dry and luscious. Funnily enough there are some similarities – texture perhaps – to the Georgian qvevri whites I have just been tasting. Long and very satisfying but much more 'serious' than the average Manzanilla. Average age five years. Delicate and salty. So salty and so fresh. Tangy, achingly dry and mouth-watering. (JH)

Fabulousy briny intensity. Super-dry and smoky/sweaty on the palate – a definite lapsang character and a salty soy finish. Not for the shy or anyone after a more delicate style of Manzanilla. VGV (JH)
