An outstanding wine is the 1995 Cabernet Sauvignon. A blend of 75% Cabernet Sauvignon and the rest Merlot and Malbec from their vineyard near the Margaret River, this impressive, highly-extracted, dark purple-colored, backward Cabernet requires 2-3 years of cellaring. It should keep for two decades. The Bordeaux-like nose of cedarwood, tobacco, red and black currants, and licorice, is followed by a ripe, full-bodied, dense, powerful wine that still plays it close to the vest. Merely hinting at its ultimate potential, this Cabernet Sauvignon should be purchased only by those with the discipline to wait 3-4 years.
