Only made previously in 2003, the 2007 Chateauneuf du Pape les Baud is a 115-case blend of 85% Grenache, 10% Mourvèdre, and 5% Syrah that was destemmed and aged mostly in stainless steel and 20% in new barrels. It lacks the classic, Provencal character of the other two cuvees yet has stunning depth and density in its pure black fruits, toasted spice and licorice-laced aromas and flavors. Rich, concentrated, full-bodied and unctuous, with sweet tannin, it too has another 10-15 years of prime drinking.

A relatively new offering, the Chateauneuf du Pape Les Baud (I have incorrectly spelled it “Baudes” on occasion) has only been produced in 2003 and 2007. The 2007, a 115-case blend of 50% Grenache, 35% Mourvedre, and 15% Syrah, is the most concentrated of the three 2007s as well as backward, tannic, and massive. There are copious notes of new saddle leather, truffles, graphite, and earth, but this wine requires 4-5 years of cellaring. It appears that the Versino family is trying to make an exceptionally long-lived Chateauneuf, but purchasers should not touch a bottle for at least five years. It should age for two decades or more.||The Versino family is another that immigrated from Italy to Chateauneuf du Pape. The current proprietor, Jean-Paul Versino, has produced a bevy of beautiful wines from the Bois de Boursan’s 40+ acres of vineyards. In 2008, none of the special cuvees were made.
