The 2007 Cabernet Sauvignon is from a hot, dry year in Margaret River, and the wine today is showing the ripeness and density of flavor that one would expect from the season. However, at 18 years of age, it bears noting that it is looking exceedingly fresh and grainy currently, with tannins that linger almost as long as the flavors. While this is not a "big" wine, it is substantial in both flavor and impact.
