A beautiful, fully mature (if not past), classy and elegant wine is the 1995 Gigondas. Offering lovely notes of mint, cedary spice, licorice, garrigue and sweet dried fruits, it hits the palate with medium-bodied richness, impeccable balance and a still lively, seamless texture that makes it a joy to drink. At this stage, it's in a gradual decline, so don't hold off, however, it should keep nicely if stored correctly.
