When Jean-Marc Roulot wandered through the family estate’s cellars one, seemingly ordinary day, he happened upon something unexpected. The vigneron had walked the hallowed paths innumerable times during his legendary father Guy’s life and during the 15 years since his sudden passing in 1982. But there, in a long-forgotten corner of the cellars, lay 12 dusty bottles of apricot liqueur. Jean-Marc knew all about his father’s production of pear and apple brandy, and his family tradition of producing marc de Bourgogne and fine de Bourgogne. The still, which he used and remains in operation today, dates back to 1866 and used to be on wheels so the family could move from village to village. So well-known was this distillation heritage, in fact, that Jean-Marc’s mother used to joke that the still paid for their vineyards. What came as a surprise to the actor-cum-winemaker was the existence of L’Abricot. “I had never seen him make this liqueur,” the 65-year-old says. “It was absolutely delicious and I wanted to try to find this recipe.” This discovery in 2008 set Jean-Marc on a mission to reproduce the liqueur from instinct, as no recipe existed, and increase the estate’s staple of brandies, eaux de vie and liqueurs. In some instances, the winemaker was able to follow recipes and meet with fruit producers to reinstate his father’s relationships. For others, he had to forge his own path. “I wanted to reconnect with that [tradition],” he adds. Jean-Marc says he’s always had a passion for distillation, having learned the skill from his father, and feels it has influenced his winemaking. When distilling, Jean-Marc focuses on two things: purity and authenticity. When asked, he says it is of paramount importance that the end product tastes like the fruit. It seems obvious, perhaps, but this is not always the case with overly saccharine fruit-based liqueurs. In order to achieve these two things, Jean-Marc has reduced the sugar levels over time – from 180g/l sugar 10 years ago to 160g/l in the latest iterations. “Sugar is of course a flattering element in a liqueur, but it can also mask the fruit,” he says. “By lowering the sugar levels, I feel like I'm putting the fruit forward.” From more classic pear and raspberry to the most recent addition, lemon liqueur, Jean-Marc says the fruit choices have largely been emotive. “I chose to make a pear alcohol since my father already made this 40 years ago with fruits from the Hautes Côtes de Beaune,” he says. “He was doing the same thing in a much smaller amount with the raspberry than I am doing. For these two fruits in brandies, it is therefore a family tradition.” The pears are sourced from the same site in the Hautes Côtes de Beaune that his father used, while the apricots (previously from the orchards of Chave) come courtesy of Laurent Combier (of Domaine Combier) in the Rhône. While he used to be able to source them locally, raspberries are now hard to find – and these, along with his lemons, come from further afield (Bulgaria and Sicily, respectively). After finding the bottles of apricot liqueur and working with the fruit in that capacity, the idea occurred to Jean-Marc to ferment them to make brandy as well. He’s also turned his hand to lemon liqueur and doesn’t rule out further fruit experimentation, perhaps with grapefruit. When asked about these fruits in relation to terroir, Jean-Marc says he doesn’t think they can reflect their terroir “as well” or “as faithfully” as grapes. “Perhaps this is due to the size of the plant, the density of planting, the attention we pay to the work of the vineyard and all the care we take around the grape when it comes back to the winery,” he adds. “There is generally a ‘signature’ effect in grapes that I do not find in a fruit like pear for example.”  He does, however, think the distillation process has taught him a considerable amount. “As we are mainly winegrowers, we seem to think that our knowledge on this subject has influenced the work on the still, but I sincerely believe that the precision that distillation requires has influenced us in the other direction, towards our work as a winegrower.” One senses Jean-Marc’s discovery of those 12 unassuming bottles all those years ago had a much greater impact on him than merely influencing his production of superlative wines, and now, his fruit brandies, eaux de vie and liqueurs. “Time is necessary,” Paul-Etienne Defaix tells me. He should know – he is the 16th generation of his family to make wine in Chablis – and, at Domaine Daniel-Etienne Defaix, time is everything.  Wine has been made at the Domaine du Vieux Château (the property’s historic name, which still features on the labels today) for eight centuries, and under the Defaix family since 1610. Much has changed in Chablis over the past 400 years, however – and today the estate is a last bastion of the Chablis of yore.   Demand for Chablis was booming by the 1970s, and producers reduced the élevage (the time wine spends in barrel or tank), bottling, releasing and selling the wines earlier. These modern wines, often bottled within six to 12 months, were lean and crisp, but for Paul’s father Daniel-Etienne, they were disappointing – lacking the complexity and ageability of wines that spent longer on their lees (the dead yeast cells). Daniel-Etienne decided to do things differently – to return to making wine the way they had in generations past – and the family hasn’t looked back.  Generally, their approach is to let the wine be – waiting, watching and waiting some more. Fermentation is all with indigenous yeast and notably slow, taking up to six months, with malolactic fermentation left to rumble along on its own timescale, only finishing after up to two years. Their Premier Cru wines then spend up to nine years on their fine lees, while for the Grands Crus it can be up to 15 years, kept at a cool 10-12°C.  During the wines’ extended élevage, autolysis takes place – the enzymatic breakdown of the dead yeast cells, or lees. It’s the same process that takes place in Champagne and other traditional-method sparkling wines aged on their lees, and is the key to the Defaix – and once traditional – style of Chablis, giving the wine a rounder mouth-feel, and lending bready, toasty complexity. It is also, for Paul, “key to revealing terroir”. Although the tiny volumes of Defaix’s Grands Crus and Pinot Noir go into oak, most of the wines are aged exclusively in stainless steel, meaning it is only the site and time that you taste in the bottle. Once deemed ready, the wines are bottled and released into the world.  Ageing its wines in stainless steel tank for not months but years, Defaix creates textural, complex wines that are only released as they reach their drinking window. It is a rebellion, Paul tells me, against “a society of rapid consumption”.  Paul is now in charge of the property’s vineyards and winemaking, although his father is still involved in the business. Paul studied in Beaune, getting experience at a handful of estates – largely focused on Pinot Noir – before returning to the family domaine, working his way from the vines to the cellar. As Daniel-Etienne told him, “You need to learn your soil, your vines, then you can make the wine – and then you try to sell it.”  And, although it’s often the style of winemaking that steals headlines at Defaix, the domaine has some remarkable vineyards. The family farms 28 hectares in total. It has two Grand Cru parcels (0.15 hectares in Blanchot and 0.3 hectares in Grenouilles), but it’s the property’s Premiers Crus that have built its reputation – with four hectares each in Côte de Léchet and Vaillons. From these, they produce three wines: their Côte de Léchet, Les Lys and Vaillon. Importantly, the latter is Vaillon, not plural Les Vaillons – their parcel lying in the historic heart of this Premier Cru, prior to its expansion in 1976. Les Lys is a cooler climat within the larger Vaillons, and is often our favourite of the range, while the Côte de Léchet is drastically steep – with a 45% gradient.  The remaining hectares are largely dedicated to the estate’s village Chablis – their Vieilles Vignes. These vines are all over 45 years old, but some are very old – own-rooted, having survived phylloxera and now 145 years in age. When I ask Paul how this half-hectare has managed to survive ungrafted, he pauses, before saying: “I think God prays for these vines.”. They crop a mere 15hl/ha, but produce beautiful fruit (“For my bank, it’s bad; for my wine, it’s perfect!” Paul jokes) – and are now used for massal selection across the estate.  The final piece of the property is a tiny section of Vaillons planted to Pinot Noir, which is bottled as Bourgogne Rouge (as the land is only classified for Chardonnay production). Comprising less than a hectare, these vines too are ancient, planted in 1900, and still on their own roots.  Their spacious cellars are stocked with back-vintages, carefully maturing – a bank of wine that eases the vagaries of each specific growing season, protecting them from dramatic drops in yield – something that is a constant threat in Chablis. Take 2024, a year that was challenging across much of northern Europe with its wet conditions and high disease pressure, but in Chablis also brought hail that devastated huge swathes of vineyard – including Vaillons.  Global warming might have made it easier to ripen grapes in this marginal region, but it’s also made for more extreme conditions – highs and lows that keep producers on their toes. It’s also, arguably, made Chablis a little less Chablis. With riper fruit, the wines are less steely, taut and lean. Harvest dates are inevitably earlier, Paul notes, to preserve acidity and retain Chablisien backbone, but he also emphasises that the fruit requires not just sugar ripeness, but phenolic ripeness – to give dry extract and allow the wines to age. For him, working with old vines and low yields is key – both to phenolic ripeness and to preserving Chablis’s style.  The 2014 vintage – the first that Paul made – has finally just emerged from the cellar, over a decade after it was produced. Looking across the dramatic slopes of the Douro Valley, it’s easy to imagine that time has stood still here. While Port is steeped in tradition, however, recent decades have seen it leap into the modern era – with no shortage of diverging opinions about the “right” way to produce Port. Just put a handful of the region’s finest in a room and ask about co-planted or monovarietal vineyards, granite or stainless steel, de-stemmed or whole-bunch fruit, trodden by foot or machine, and feel the temperature rise as the debate unfurls.  There is, however, one element that gets surprisingly little press – the all-important fortification, an element that arguably defines Port, and until relatively recently was out of winemakers’ control. Originally spirit was added to harden the wines for long journeys in ships’ bows, preparing them for long voyages, and only became standard in the 19th century.   Once the fruit has been picked, trodden and starts fermenting, producers add spirit – or aguardente, often colloquially (and erroneously) referred to as “brandy” – to halt fermentation, thereby retaining the natural grape sugars that give Port its signature sweetness. The wine is a mere 5-6% alcohol at this stage, and the fortification brings it up to between 19 and 22%. Given the strength that the wine needs to reach, this spirit represents a massive 20% of the final product. Legally, aguardente must be a grape spirit of 77% – significantly lower in strength than the spirits used for other fortified wines (such as Madeira or Vins Doux Naturels, which use a highly rectified grape spirit of 95-96%). This lower alcoholic strength is key; meaning the spirit is less neutral, and therefore has even more of an impact on the final wine.  This spirit has a rocky history which isn’t free from scandal. After a local shortage, 1904 became known as the “Schnapps vintage” – having been fortified largely with a German spirit made from potato and grain. The 1972, ’73 and ’74 vintages saw industrial alcohol used instead of grape distillate. (Responsibility for this latter fraud fell to a French supplier who duped the unknowing Casa do Douro into buying Yugoslavian spirit.) Besides these occasional lapses, the spirit was mainly made from excess wine in the Douro during 19th and early 20th century, but in 1907 the Portuguese Prime Minister João Franco banned the distillation of wine from the Douro, meaning aguardente had to be found elsewhere. Despite presenting 20% of the wine, the spirit used today is far from local, sourced from far beyond Portuguese borders (often Spain and France).  The key date – however – is 1991. Under the authoritarian Estado Novo regime in the early 1930s, a monopoly on the spirit was established, with its supply state-controlled. This continued for over half a century, via the Casa do Douro, and then from 1976 via the Instituto do Vinho do Porto e Douro or IVDP. The freedom to choose which spirit used was only granted to shippers in 1991 – something that David Guimaraens (Head Winemaker at Taylor Fladgate) argues is one of the most significant changes in Port.  “We had no choice, the spirit quality was very average,” Guimaraens laments of the old days. He returned to Portugal, fresh from studying at Australia’s leading winemaking school Roseworthy, in 1990 – just before the shippers gained the freedom to choose their own spirit. “When you use a very clean, fine spirit, when it is young, your fruitiness comes out much more – making it more appealing in youth, almost entirely because of the quality of the spirit,” he explains. He cites two examples – Taylor’s Vargellas Vinha Velha and Croft’s Sērikos – both wines which are made from 100-year-old vineyards, made as they always have been in granite lagares. It is, he argues, only the spirit that has changed in these Ports.   For Guimaraens, the quality of spirit is most apparent in a vintage Port’s “teenage” phase – between 14 and 19 years of age, when it is starting to lose its fruit but not yet fully developed bottle maturity. This transitional phase is, in his view “much more attractive than it used to be in the past”, meaning Port drinkers are safer opening a bottle at any stage of its life. He points to 2000 as a pivotal vintage, when the quality of spirit started to really improve and produce, in his view, some of the region’s finest wines.  “Spirit has been crucial,” Richard Mayson – writer and author specializing in the wines of Portugal – agrees. “When vinification techniques were experimental – the late 1960s, ‘70s and ‘80s – you can certainly taste the poor quality spirit in the thinner-quality wines.” He explains that this period saw massive emigration and a resulting shortage of feet to tread the region’s harvests. The early autovinifiers used in lieu of the traditional foot-treading simply didn’t result in the same level of extraction – and therefore have, over time, revealed the underlying spirit quality. There are, of course, exceptions – with some great wines made. He, however, like Guimaraens, feels the 2000 vintage marked a real shift in the class of spirit used.  The uptick in the quality of spirit is one of the reasons – along with the quality of the fruit, viticulture and more – that Carlos Agrellos of Quinta do Noval feels the property has been able to declare every vintage since 2011. “It’s extremely important to choose the right one,” Carlos Agrellos of Quinta do Noval explains of the spirit. He is one of a group of 20 companies – including Niepoort – who have, over the past five years, clubbed together to buy spirit. As smaller operatives, grouping together gives them more clout, enabling them to secure higher-quality spirit for their wines – and fair prices. Each May they meet in Gaia, tasting through a selection of spirits sent over by three or four different producers – all of which are scored blind. In 2020, they tasted 20 different spirits that were approved.   The results of the tasting are shared with everyone, then each company will decide which they wish to buy for their wines. The spirits come from southern France, Spain or Portugal. There are two categories of spirit –those distilled from wine and those from wine lees. The two are very different: the former is favoured by most – having more delicate, fruit and floral aromatics; while the latter was only approved for use in 2014, and is usually stronger in flavour. While in general “wine” spirits are generally the best, the spirits from lees can offer additional complexity. “At Noval,” Agrellos explains, “we tend to blend these two and use them for different types of wine, from white Port to Tawny to Vintage Ports.” There’s no fixed blend, and it varies from year to year, but he tends to use both – with higher-grade spirits for Vintage Ports.   Symington and Fladgate – the giants of the Port trade – purchase such large volumes that they buy their spirit independently. Tom Symington – fifth-generation family member and part of the winemaking team – explains that the spirit used to be a wider cut, and today it’s narrower, resulting in a purer spirit. “We focus on the neutrality, the aromas and the way it reacts with the wine,” he says.   Talking to producers about the style of spirit they look for, there is a general consensus that neutrality is desirable – to what extent, however, varies significantly. Agrellos aims for a more neutral, but slightly floral spirit. The most important thing for him, however, is the volume on the palate: he believes that it is this volume and texture of spirit that is most important for vintage Port. “It’s what will hold the wines for years to come,” he says. He values this above and beyond aromatics, while of course looking for something very pure. It’s this texture that leads him to use some wine-lees distillate – which has much more to offer in that regard, as well as its stronger flavour. The wine distillate by contrast tends to be purer in terms of aromatics, and is sometimes even double-distilled.  While Symington uses the same spirit across all their Ports, David Guimaraens looks to use a different style of spirit depending on the style of Port in question. He is clear, however, that it shouldn’t be part of the house style – but a “neutral oenological product”. He chooses to use one batch of spirit across each style for all the houses, not wanting it to be a differentiating factor, or dominate the quality of the fruit. For example, the spirit used for his vintage wines costs twice as much as that for the most entry-level wines – “And you get your return,” he notes.  He blends his own “master spirit”, combining batches sourced mostly from Portugal and France. “In the early days, it wasn’t as simple as using a clean spirit. To get spirit we wanted, we had to get the wines fermented in a particular way,” Guimaraens explains. With an overly neutral spirit, you risk ending up with a lighter Port; but too high a component of higher alcohol and it interferes with the wine’s organoleptic character, subduing the fruit. Too many spirits are made with excess bulk wine – rather than wine that has been fermented with the express purpose of producing spirit.  Dirk Niepoort favours quality and a little bit of character. “The purest, the best, the most harmonious – but not necessarily the most neutral one” is what he looks for, he explains. At the group tastings, his tastes are reportedly well known, with many of his colleagues able to identify the aguardente he will choose. His preferred spirits are finer, lighter, with more precision, but – importantly – also character. He finds that they tend to come from France, often from Cognac, from vineyards specifically planted with the idea of producing a distillate – not just excess wine. “Our grapes are too good for distillation,” Niepoort explains – the best spirits, in his view, are made with grapes from cool climates, with high yields and high acidity. He normally chooses three different spirits, depending on availability and price, with the very best spirit reserved for his top wines. For any organic wines, of course, they require an organic distillate.   While Niepoort admits the quality of spirit has improved, he doesn’t believe that the quality was nearly as bad as some – such as Guimaraens – imply, telling me people are unnecessarily “ferocious” about it. “I think the Port Wine Institute did a fantastic job in selecting huge amounts of spirit. Considering the huge quantity needed, the average quality was extremely high.” It certainly isn’t stopping him drinking fine vintage Ports – such as a bottle of 1963 Noval he had the pleasure of uncorking recently. Nevertheless, he doesn’t deny that it was a significant step not having to buy a mass product, and it has really opened the market.  It’s not as simple as winemakers having total autonomy, however, with a strict approval system via the IVDP to ensure the quality of spirit being used meets their standards. “It’s not only complicated – it’s expensive,” Niepoort says of the process. He’s found it a struggle to get some spirits approved, with, for example, double-distilled spirits harder to get sign-off than column-distilled liquids – a clear source of frustration. While the process is clearly there to control quality, producers aren’t abusing this independence; in general they are spending more money than ever before – making the whole thing, in Niepoort’s view, futile. “We should have some freedom to do what we want,” he says.  Tom Symington feels that it’s more than just the quality of spirit that has improved the quality of Port. He believes other developments have been more significant, particularly emphasising advancements in winemaking (highlighting the introduction of stainless steel as well as robotic lagares) and viticulture, especially monovarietal vineyards which – he considers – allow them to achieve perfect phenolic ripeness, with no green or raisined fruit. It is more than just the equipment, he notes – it’s the know-how gained over time, and most importantly balancing that with tradition.  “Of course the modern young people will tell you that viticulture is much better today,” says Niepoort dismissively. He prefers to work with old-fashioned growers. Over 90% of his vineyards are over 60 years in age and traditional field blends. He feels that the shift to monovarietal vineyards – dedicated only to five of the region’s many indigenous varieties – is, along with a move toward de-stemmed fruit rather than foot-trodden whole bunches, responsible for changing the style of Port. “The wines became fruitier and darker, but at the same time, thinner,” he explains. Niepoort historically didn’t make any Port themselves, and the 1994 vintage was the first they produced in-house. For him, this shift – from the 1970s and ‘80s – for shippers to own vineyards, rather than merely buying wine in, is the greatest advancement in the region.  The Douro Valley has seen a run of top-rated vintages – with universal declarations in 2011, 2016 and 2017, and some shippers declaring 2018 and now 2019 (including Niepoort). The general rule of three declarations per decade looks set to become a thing of the past. How much can this be attributed to aguardente? Relatively little, perhaps, however it’s hard to argue that this liquid – making up a fifth of the final wine – doesn’t have a role – and depending on who you talk to, the heart – to producing the very best Port.   Read more Editorial or browse our range of Port

A spirited debate: the tale of Port’s 20%

Ch. Belle-Brise is a rather inconspicuous Bordeaux property with a “garden” vineyard of just two hectares and an annual production of just 800 cases. With such small quantities produced and a legion of loyal followers, the wine is little known outside of an exclusive list of top restaurateurs, a few lucky distributors and their clients. Henri-Bruno is the 20th generation of the de Coincy family, famous for their Armagnac production that dates back an incredible 700 years. Despite this impressive lineage, Henri-Bruno's winemaking skills are a much more recent labour of love. Similarly, Ch. Belle-Brise was late to commercial winemaking – an enterprise started by Henri-Bruno when he bought the property in 1991 – despite producing wine since the 18th century. Ch. Belle-Brise is often compared to the Grand Crus of Burgundy and has been referred to as the "Musigny of Pomerol", such is the elegance and weightless power this wine consistently seems to possess. Theories abound about why this is the case. Perhaps it is Henri-Bruno's  Burgundian wife's influence, or the pre-1956 vines, or small-scale operation? For De Coincy, it is all of the above that makes this little wine of Pomerol so unique. The foundations of Ch. Belle-Brise What is really special about the Belle-Brise vineyard is the age of the vines, more than 100 vines are a staggering 120 years old and the average vine age is around 70 years old.   It is rare to find any Pomerol vines that pre-date 1956, as devastating frosts that year destroyed virtually all the region's vineyards. Many vines planted in Pomerol post-1956 were reliable clones but not as good in terms of wine quality. This is not the case at Belle-Brise, where vines either pre-date 1956 or were propagated from the surviving old vines. Outside of Belle-Brise, there are just a few pre-1956 vines dotted around Pomerol and Saint-Emilion – most noticeably at Ch. Lafleur and Ch. Ausone. Old Cabernet Franc and Merlot vines, De Coincy believes, create an overall elegance, finesse and depth of flavour on the palate that is something really special. The Belle-Brise vineyard contains a split of around 80% Merlot and 20% Cabernet Franc. The soil has gravel on the surface and beneath, a layer of clay, chalk and crasse de fer (iron rich bands of sand that play an important role in the flavour characteristics of many top Pomerol wines). Many believe this is responsible for the truffle aromas commonly found in Pomerol wines. Others believe it provides viticultural benefits, limiting vigour and excessive leaf growth, in turn producing smaller concentrated berries. Natural winemaking at Ch. Belle-Brise Despite being an experienced Brandy producer, De Coincy's project in Pomerol required considerable learning on the job and was faced with a challenging start. His first crop in the 1991 vintage was largely decimated by frost, meaning he had very small quantities to work with and likely not enough to sell. This did, however, mean he was able to experiment with the vintage and trial different approaches. Three very challenging Bordeaux vintages followed as Mother Nature threw everything at De Coincy. It was a steep learning curve. When the more successful 1995 and 1996 vintages arrived, the winemaker was ready to produce Belle-Brise in his style, with confidence. The approach is artisan and natural. There is no electricity on site and everything is made much as it would have been centuries prior. The grapes are grown using biodynamic and organic principles, and De Coincy employs horses to work the vines. The grapes are all harvested within one day allowing pin-point accuracy on picking dates. They are then hand-sorted exclusively by women – something de Coincy is insistent upon. Once picked and sorted, the grapes are then left uncrushed in concrete vats in the winery. De Coincy then closes up the cellar and leaves the grapes for five days, so the natural coolness of the cellar retards the fermentation process. After five days, De Coincy returns to open up the cellar. As the heat of the day enters the cellar, the grapes naturally begin to ferment from natural yeasts. De Coincy tends to pump over the juice twice a day over six to 10 days depending on the vintage and then leaves the wine to settle in-tank prior to the pressing of the skins. This traditional method is not very common in modern winemaking as it can run the risk of contamination. De Coincy, however, believes this method helps extract the delicate aromatics from the wine. After this stage, De Coincy carries out a very slow pressing of the skins using an old manual vertical process, which he believes is another vital element in the process that retains a delicate finesse typically found in Belle-Brise. Many of these methods are not possible in larger estates as they are laborious and manual. The Belle-Brise wines are then matured in large 400-litre barrels (one-third new, one-third one-year-old, one-third two-year-old), eschewing smaller barriques which De Coincy feels has too strong an affectation on the wine. The Ch. Belle-Brise drinking window Ch. Belle-Brise has always been a fairly accessible wine in its youth with its compact but soft tannins already beautifully integrated. For De Coincy, Belle-Brise needs five years maturation in bottle before you can really benefit from the full impact of the wine and then, depending on your tastes, it drinks beautifully over the next decade. De Coincy has often served his wine blind to his restaurateur clients and found it has been mistaken for premium Burgundy. The similarity with Grand Cru Burgundy is difficult to fathom, considering the completely different varieties and different climates, yet Belle-Brise does boast the silkiness, finesse and almost weightless power of Grand Cru Burgundy, with a touch more opulence you expect from Pomerol. Ch. Belle-Brise's rarity With a mere two-hectare walled -garden vineyard, production at Belle-Brise is minuscule, making it one of the rarest wines on today's marketplace. The vast majority of liquid never reaches private clients as it is snapped up by some of France's finest three-Michelin-starred restaurants. In fact, 80% of three-star-Michelin restaurants in France (and 25 other countries) list the wine, including Georges Blanc and Alain Ducasse: Le Louis XV. The sheer number of distinctive styles of wine that emanate from France never fails to amaze. From the full-bodied, sumptuous Cabernets and Merlots of Bordeaux to the ethereal Pinot Noirs of Burgundy; from the mineral whites of the Loire to the aromatic spectrum of Alsace – everywhere you look there is variety. The Jura, situated in the remote central-eastern frontiers of France (bordering Switzerland) is another completely unique and distinctive French winemaking region – one which, perhaps because of its limited size and isolation, is not quite so universally known. But in recent years the region has grown in prominence and is now a real point of interest for collectors today – most notably for the quality of its white wines. Chardonnay and the native late-ripening white grape Savagnin produce wines that rival top Burgundy and, in many cases, offer better value. But it hasn’t been an easy road to recognition for the region. Following the phylloxera outbreak in the late 19th century, the Jura was on the brink of being wiped out altogether. Historically, it was a significant wine-producing region – 10 times bigger than it is today. But, in terms of size, it never recovered. Many of the vineyards were grubbed up, becoming farmland pastures; what remained amounts to just 2,000 hectares (a mere 10% of its original size). The leftfield oxidative style of the region’s wines also meant that as France’s wine exports grew, the Jura remained largely unnoticed. Traditionally, the region’s uniqueness came from the oxidative style of its white wines – the most famous, distinct and extreme of which is vin jaune. This white wine is made from Savagnin that is aged in barrels for over six years. During this time, the wine evaporates, allowing for oxygen ingress and a yeast film to form on top of the wine – protecting it from oxidation and at the same time strongly influencing the flavour. The process and effect is not dissimilar to Fino or Manzanilla Sherry, but the ageing is typically longer and the wine is neither fortified or blended – remaining single vintage. This style is distinct and, at its best, produces wines of outstanding complexity and fantastic ageing potential, but its intense flavours were never going to create mass appeal. Over the last 25 years or so, the younger generation of winemakers in the Jura have started to move away from only producing this oxidative style, influenced by their neighbours in Burgundy – whose vineyards are not dissimilar. The Jura – just 100km directly east of the Côte d’Or – shares similar soils of clay and Jurassic limestone and has the same continental climate, as well as growing both Chardonnay and Pinot Noir. In fact, many of the Jura’s younger vignerons cut their teeth making wine in Burgundy. Returning to their family domaines, they were more interested in producing wines styled on those of the Côte d’Or, focused on expressing site, rather than the region’s traditional style, dominated by oxidative characters and the influence of yeast. Young producers such as Jean-François Ganevat and Stéphane Tissot started to top their barrels, producing less oxidative, “ouillé” cuvées. This switch in style is arguably the most important recent development in the Jura. As these modern styles grew in popularity, the region started to attract a wider audience of fine wine drinkers.  Despite the similarities to Burgundy, the Chardonnay (sometimes blended with Savagnin) produced in the Jura brings its own elevated tautness and mouth-watering salinity and has acid-loving Chardonnay fans drooling. Burgundy producers themselves have even started to buy up land in the Jura; most famously Domaine Marquis d’Angerville set up Domaine du Pélican in 2012. Supposedly Guillaume d’Angerville was served a Chardonnay blind at Paris’s Taillevent restaurant and was convinced it was a top bottling of Burgundy. When he discovered it was from the Jura, he soon started exploring the region and before long had bought vineyards there. Fatter and richer in texture than Chablis, but more laser-like than the Côte d’Or – Jura whites have found a niche. What’s more, the vignerons’ knowledge of producing oxidative wines has given them the freedom to experiment with both reductive and oxidative characters (without going to the extremes of vin jaune), producing truly original wines. It is another distinct trait of the region that brings a lot of freedom to the winemaking and a lot of variety – even from just one producer. The Jura’s rise to prominence is also due to its association with low-intervention or natural wine – most notably the influence of Domaine Pierre Overnoy, based in the Jura hamlet of Pupillin. Overnoy is seen by many as the godfather of the natural wine movement – and his wines are today some of the most fiercely collected. The fanfare around this remarkable producer has been hugely influential on other producers in the region, at the same time raising the reputation of the region to an ever-widening audience. Other in-demand stars of Jura, who to one degree or another are classed as low-intervention producers and who make ouillé wines (though not exclusively) include Jean-François Ganevat and Stéphane Tissot. The difficulty today, at a time when Jura wines have never been more popular, is volume. Of all the regions in Europe, few have been hit as hard by spring frosts than the Jura. Successive vintages back to 2015 have seen production slashed. With rising demand, perhaps it’s time for the Jura appellation to expand once again and seek out sites that are less susceptible to frost. Domaine Pierre Overnoy aside, the top wines of Jura, for now, remain brilliant value – another reason fans of Burgundy are looking further afield. The white wine styles of the Jura Ouillé: Also described as modern or floral. In any other region, this is typically the “normal” style of any dry wine – in that the wine has no overt oxidative character. While traditionally barrels in the Jura might not have been topped up, allowing oxygen to influence the wine, for ouillé wines they are topped up to protect them from this. Sous voile: Also described as traditional or oxidative, these are the more traditional style of white wines from the region. Literally meaning “under the veil”, the wines are biologically aged with a film of yeast – like Manzanilla or Fino Sherry. Following fermentation, the wines are extensively aged in oak barrels that are not fully topped up. This encourages a film of yeast to form on the top of the wines, protecting them from oxidation and introducing yeast-influenced flavours. Depending on the winemaker, wines can be aged for one to 10 or more years using this method. The longer the wines are aged in barrel, the more oxidative flavours dominate the wine. Vin jaune is the most famous wine made in this style (see below). Vin jaune: A specific style of sous voile, with an official classification and made only with Savagnin. The wines have to spend over six years under flor before being bottled. Rich and complex, the most famous vin jaune is Château-Chalon. Vin jaune is also always bottled in a distinctive, squat 62cl clavelin bottle.

Macvin: This fortified Vin Doux Naturel is produced only in the Jura. It is made from the must of Savagnin which is then boiled – concentrating the must. It is then fortified with brandy to around 16% alcohol. Strictly this is not a wine since there is no fermentation process. Once fortified it is then aged for six years in oak. Vin de Paille: While not a style unique to Jura, it remains an important style of the region and with quite distinct rules under the appellation. Grapes (usually Chardonnay and Savagnin, and sometimes the red grape Poulsard and Trousseau) are typically picked early to retain acidity and then dried, concentrating the sugars. The wine is then fermented and must reach 14% alcohol. Depending on the grapes’ concentration, the residual sugar of the wine can vary from 60-130g/litre. The wine must be aged for a minimum three years (which includes 18 months in oak). The wines can be made in a fresh or oxidative style depending on the producer’s preference. The wines are always sold in half-bottles. Recommended wine producers in the Jura Domaine Pierre Overnoy: Since he was a boy, Pierre Overnoy was taught how to make wine by his father using traditional methods and without sulphur dioxide. Despite studying modern winemaking in Burgundy during the mid-1970s, he was disappointed by the results. Returning back to the Jura, he adapted his father’s traditional approach to produce wines to his liking – as well as making wines in a fresher non-oxidative style. In 1984, Overnoy stopped using sulphur during fermentation but continued to use a little at bottling. By 1986, he had stopped using SO2 at all. He has been hugely influential in the natural wine movement. In 2001, Pierre Overnoy retired at the age of 63, handing it over to his protégé Emmanuel Houillon, who worked alongside Overnoy from the age of 14. Overnoy’s almost evangelical following, along with miniscule levels of production, have made the wines highly sought-after. The release dates of the wines are not set, only released when Houillon deems them ready to drink, making it sometimes challenging for collectors. Houillon even bottles the same vintage of a wine at different dates – and only began to note bottling dates on the wine labels from 2018. Domaine Jean-François Ganevat: Ganevat is the 14th generation of his family to make wine in the Jura, with the family estate founded in 1650. Before joining the family estate in 1998, he worked with Jean-Marc Morey in Chassagne-Montrachet. Although the estate has just 8.5 hectares under vine, the domaine grows 45 different varieties – many of which are ancient, native varieties to the Jura, including two distinct red varieties Poulsard and Trousseau which are the most planted in the region along with Pinot Noir. His best wines however are his ouillé Savagnin and Chardonnay that can be outstanding. Benedicte & Stéphane Tissot: This is one of the largest and most important estates in the Jura today. Although the domaine name is officially still Domaine André & Mireille Tissot (named after Stéphane’s parents) the bottlings are labelled Benedicte & Stéphane Tissot. The domaine has 50 hectares under vine in both the Arbois appellation (where the winery is based) as well as the Côtes du Jura and Château-Chalon appellations. There is plenty of experimentation going on with the estate producing a wide array of cuvées from the traditional flor-aged Savagnin bottlings of place-designated vin jaunes of Château Chalon, La Vasée and Bruyères to their more modern ouillé single-vineyard Chardonnays. Tissot also produces a rosé made from a rare Chardonnay clone that has a natural pink tinge. Of the top cuvées, their single-vineyard Chardonnays from the Clos de la Tour de Curon, La Mailloche, Les Graviers and Les Bruyères vineyards are the most sought out.

Vega Sicilia is undoubtedly Spain’s most famous winery; a true icon in fine wine with a history dating back to 1864. Its success in retaining such a reputation, and in almost complete isolation in the Ribera del Duero region of Spain, is testament to the quality and consistency of its production, although its history has not been without its challenges. Vega Sicilia claims to be one of the longest-aged and longest-lived red wines in the world, with its flagship Unico capable of maturing in bottle for well over sixty years under the right cellar conditions. Developing its style in such solitary conditions has created a wine distinct from any other and whilst the Ribera region has flourished with the establishment of wineries such as La Pesquera in the 1970s and more recently the cult wine of Pingus, Vega Sicilia today remains at the apex of the appellation.  We explore the history of Vega Sicilia, the secrets behind its success and the changes afoot as it attempts to retain the traditional methods it has become famous for whilst modernising the winery and updating its processes. We also explore the contrasting range of wines it produces from the Valbuena to the Unico Reserva Especial: Vega Sicilia’s nod to the traditional Spanish practice of producing multi-vintage premium blends. The history of the estate The estate that would become known as Vega Sicilia was founded in 1864 by Don Eloy Lecanda Y Chaves, a Spanish vigneron who inherited the property in 1859. After visiting Bordeaux he brought cuttings of the Bordeaux varietals of Cabernet Sauvignon, Merlot, Malbec and Carmenere, as well as Pinot Noir, and planted 18,000 vines at the estate in Ribera del Duero alongside the native varietal of Tinto Fino (Tempranillo). By 1882 he had planted 500,000 vines on the estate, at the time known as Bodegas Lecanda.  The introduction of Bordeaux varieties was perhaps not that unusual at the time, since the Bordelais were becoming more and more influential in Spain (most notably in Rioja) having disbanded their operations in Bordeaux following the phylloxera outbreak and were actively looking for alternative regions to grow their grapes.  However, in Rioja, the Bordeaux varieties were soon replaced by the native Tempranillo which proved a much more reliable and profitable choice. Whilst Don Eloy Lecanda Y Chaves initiated a winery that was to change the history of fine wine, he was initially using the grapes to make brandy rather than still wine. Although the brandy was well received amongst the aristocratic families (no doubt piquing the interest of the Herrero brothers), the estate struggled financially to make ends meet and he died in 1894 never to witness the success of his venture.  The property was bought by the Herrero brothers in the early 1900s who renamed it Vega Sicilia. As phylloxera eventually reached Rioja, the négociant Cosme Palacio was looking further afield to maintain supply for his customers. On discovering Vega Sicilia, he immediately rented the property from the Herrero brothers.  He brought with him winemaker Domingo Garramiola Txomin who introduced the Bordeaux techniques of ageing wine in barrique as well as extending the élevage. He also initiated bottling the wine on the estate (Cosme Palacio was previously shipping the wines in bulk to Rioja).  The Herrero Brothers were a well-connected upper-class family who were galvanised to produce a wine of exceptional quality no matter the cost, to sell to their aristocratic friends. This quest for quality combined with the skills of Domingo Garramiola Txomin, as well as the unique combination of Bordeaux varieties and Tinto Fino (thanks to Don Eloy Lacanda Y Chaves), was the perfect recipe for producing Spain’s first iconic wine – Vega Sicilia Unico. The first vintage of Unico was produced in 1915.  Thanks to the connections of the Herrero brothers, within two decades Vega Sicilia had become the most revered winery in Spain. Even at this time the wine had built up a reputation for its extraordinary ageing capacity. At Vega Sicilia the Bordeaux varieties became a key component to their flagship wine of Unico and have remained in the blend right through to the present day. Throughout this time, the property became almost a self-contained village, with a school and chapel on site and many of the families working at the winery and living on the estate. Despite the winery changing hands a number of times over the last century, Garramiola’s legacy has lived on through the winemakers that followed in his footsteps; figures like Martiniano Renedo, who was initially Garramiolo’s assistant, and especially Jesús Anadón, who was instrumental in maintaining the quality and reputation of the wine through the middle of the 20th century.  Amazingly there are workers on the estate today whose families have worked at the winery for generations. Today the master cooper at Vega Sicilia, along with his brother Jesus Yanez, is the fourth generation of his family to work at the property. The winemaker between 1968 and 1998, Mariano Garcia, was the son of one of the farm workers on the property.  Despite its global reputation, its exclusive allocation list and long history, the winery and vineyards went through bouts of dilapidation during the 1950s, through to the late '70s, whilst at the same time producing some of the most legendary vintages. On purchasing the property in 1982 the Álvarez family began to make huge investments into the estate, renovating the winery and carrying out an extensive replanting program in the vineyards. 1982 was also the year Ribera del Duero was awarded its DO appellation status and no doubt helped further promote Vega Sicilia as the historical icon of the region. The winery and the appellation has never looked back since.  In the vineyard Vega Sicilia is situated on what is known as the “golden mile”, a stretch of road between Pañafiel and Tudela de Duero, where the prestigious wineries of Vega Sicilia, Pingus and Pesquera are all situated. Driving through, it is a somewhat underwhelming sight as far as vineyard vistas go, so much so you could almost pass through it without noticing.  Being an altiplano there are no sweeping mountainous views, you only feel the altitude from the freshness of the air. In the higher vineyards of Soria at the edge of the Ribera appellation you are rewarded with more vistas, as well as a sense of history with evidence of prehistoric cave-like dwellings where farmers sheltered from the extreme climatic conditions of this largely desolate region.
 Whilst there are pre-phylloxera ungrafted vines dating back over 100 years dotted around the region, the vines at Vega Sicilia - with vineyards at 700 meters - average around 35 years of age. Vega Sicilia have an extensive replanting scheme in their vineyards preferring the quality of their fruit in their mid-life as opposed to old age, with typical vine age in Unico around 60-65 years old, with the younger vines going into the Valbuena cuvée. The high altitude and continental climate mean extreme conditions are at work in the vineyards. Winters can be very cold whereas the summers can be fierce. Most notably in regards to grape growing, due to the altitude, there is a huge diurnal shift in temperatures from day to night helping to retain the acidity and freshness in the grapes whilst reaching high levels of ripeness. The main grape in all Vega Sicila wines remains the Tinto Fino (the particular clone of Tempranillo) distinct to the region. The Tinto Fino is said to produce smaller berries with higher concentration of tannins compared with the Tempranillo grown in Rioja. The Unico also has a proportion of Cabernet Sauvignon in the blend (anything from 6-20% in more recent releases) with a higher proportion in older vintages. In the Valbuena, the majority of the blend is Tinta Fino with a small amount of Merlot (typically 5%) . The property is huge in scale with 200 hectares of estate-owned vines producing anything from 40,000 to 100,000 bottles of Unico each year depending on the vintage.

 Unico  The style of the flagship cuvée of the winery has remained virtually unchanged since its inception in terms of production, although assemblage has modernised. Élevage times have reduced and the influence and proportion of Bordeaux varieties has become less in more recent releases.  In the past, Unico was only made using huge 40,000-litre fermentation tanks (this was all that was available at the winery) therefore in a difficult vintage, if this sort of volume was not possible at the quality level they expected, then no Unico would be released that year. Since 2010 the winery has introduced smaller 8,000-litre tanks, enabling smaller micro-vinification of their wines and suggesting a release of Unico every year (in varying quantities) is more likely. The winery today operates at a spec similar to the top estates in Bordeaux. They have introduced 81 separate fermentation tanks allowing them to carry out intra-plot fermentation. They have introduced highly sophisticated sorting tables, there is more temperature control of the wine and the winery is now completely gravity fed enabling greater precision when it comes to winemaking.   Following fermentation, the wines destined for Unico are blended in small oak barriques (50% French oak / 50% American oak) for 12-24 months depending on the vintage. The French oak is 100% new whilst the American oak, coopered on site, tends to be one to four years old. Following barrique ageing, the wine is then transferred to large old oak casks where it typically matures for five years before being bottled and aged further prior to release. Unico is typically released at 10 years old. Valbuena 5° The Valbuena typically comes from the younger vines of the estate and is aged in oak in barriques for 12-18 months before being transferred to larger old oak casks for a further 18 months prior to bottling. It is then aged for two years in bottle. Valbuena is typically released at five years old. Unico “Reserva Especial” The Reserva Especial is the mythical bottling that initiated the Vega Sicilia legend. It is made up of choice parcels from a blend of vintages (in recent releases it tends to be select parcels from three vintages). Prior to the 2001 release, details of the blends of older bottlings are not very easy to come by. With only 15,000 bottles produced this is the rarest cuvée from Vega

The smallest event can set us on our path. A chance encounter, a favourite book narrated to us as a child, or a popular culture icon that we’re desperate to imitate. For Meghan Ireland, it was a double-page spread in a magazine. She might not remember who it was about, but the subject lit a fire in her that burns just as brightly many years later. “I was like wow, that’s what I want to do,” she says – eyes as wide as saucers – in the back room of the WhistlePig farm-cum-distillery in Vermont. The Whisky Advocate feature on a female Master Distiller showed the second-year Chemical Engineering student and “total chemistry nerd” a career she hadn’t previously considered open to her. “I got super determined after that,” she says. After cutting her teeth in a craft cider role, Ireland joined WhistlePig, or “the playground for distillation” as she describes it, which was under the inimitable stewardship of distilling icon Dave Pickerell. “He was just an amazing guy,” Ireland says. “Big personality and incredibly smart. He was always pushing innovation and experimentation and that’s something that has really stuck with this company.” Pickerell’s untimely passing in 2018 sent shockwaves across the industry, and many still talk about the role he played in the craft spirits revolution and subsequent rye whiskey revival. Many twittered about the fate of WhistlePig without the great man and his boundless creativity. This speculation only intensified after his successor’s short spell at the helm of the company. Today, Emily Harrison and Meghan Ireland head up distilling and blending at WhistlePig and, if their enthusiasm and first whiskeys are anything to go by, then those naysayers were very wide of the mark. “Dave gave us the ability to kind of run wild and create different experimentation options,” Ireland says. This creative energy is palpable in Ireland’s words and evident in everything the team has produced to date. “To this day my CEO asks me on a weekly basis, ‘What’s your new idea? What are we trying this week? What’s the new concept?’ He is always pushing, and he is always asking.” For some, this relentless pursuit might be draining, but it seems to have the opposite effect on Ireland. “To actually be able to explore and experiment with different options has been awesome.” Since its inception in 2015, WhistlePig has gone from a slightly obscure project to a formidable force on not only the American whiskey, but global whisk(e)y, stage. To get the brand off its feet, Pickerell and founder Raj Bhakta were very transparent about the fact they sourced whiskey from elsewhere in Canada. Today, the distillery is making strides in becoming a truly farm-to-bottle rye whiskey. “As much as we can, we want to produce a product that is ours fully,” Ireland says. “We are excited about releasing more and more of our own stuff to show off to the world what we can do here in Vermont.” The 500-acre former dairy farm is in a unique position – conceptionally and geographically. While the land may be fertile and the agricultural produce is verdant, the soil and water are both incredibly hard. As a consequence, the team has continually experimented, adapted and learned the best ways to use its triple terroir – grain, water and wood – to its advantage. “It makes who we are,” Ireland says. “You’re starting with very simple ingredients – rye and water. So, they are going to make up a big part of your flavour profile. I think terroir is huge in any distillation process.” Another huge part of the innovation at WhistlePig and the thing that really excites Ireland is the single finish programme. The Whiskey Blender has carte blanche to pick barrels and make one-off products. Part of her role, and one you sense she relishes, is finding the barrels. Ireland scours barrel libraries and leans on her contacts for anything new and exciting that appears on the market. There’s little she won’t try at least once. “I’m willing to put whiskey into anything,” Ireland says with those wide eyes. “I’m always looking for something different and unique. It’s fun to see when it’s going to hit that sweet spot between under-finished and over-finished.” She has been experimenting with Triple Sec and apricot brandy barrels, and a “couple of different wine finishes” are all maturing when we speak. The way the stills are designed (by Pickerell) allow for flexibility and are perfect for experimentation on both the front and back end. As with any experimentation, there have been some less successful outcomes. “I did a coffee barrel that was awful,” Ireland says, stifling a laugh. “It was bad. I was thinking like Irish Coffees and I thought it could work really well.
