Brunello di Montalcino is so well-established in today’s world of wine that it is hard to believe how relatively young its international reputation is. This pure expression of Sangiovese, from the vineyards around the hilltop town of Montalcino in Tuscany, was first produced in the 1860s, named by Ferruccio Biondi-Santi (of Biondi-Santi). The name Brunello di Montalcino comes from the supposedly superior clone of Sangiovese identified by Ferruccio’s father, Clemente Santi – known as Sangiovese Grosso or Brunello. Prior to 1968 (when Montalcino was first awarded DOC status), however, there were just 11 producers operating in the region, working around 60 hectares of vines. It was these pioneering wine-growers who went on to set up the Brunello Consorzio (consortium), determined to promote and protect the region’s vinous heritage. By 1980, when Montalcino was granted DOCG status, that number had grown to 53. Today there are over 250 producers, with more than 2,000 hectares under vine, and Brunello di Montalcino is one of Italy’s most famous appellations. As the vineyards have expanded, so has the range of styles, showcasing the varied terroir and distinct characteristics of single vineyards or Crus. Made exclusively with Sangiovese, Brunello di Montalcino is released a minimum five years after the vintage, spending at least two of those in oak. Riserva wines are aged an additional year prior to release. Producers generally also make a Rosso di Montalcino, with an additional 500 hectares classified for Rosso di Montalcino production. These wines can be released after just one year, with any vessel permitted – producing a softer, earlier-drinking style of Sangiovese. The famous Brunello clone long thought to define the wines is a myth, and various clones are planted in the region today. Subzones or crus? Despite the climatic differences in Montalcino, the concept of subzones within the region is still in its infancy and not without controversy. Some producers are reluctant to endorse a terroir-specific identity to Montalcino because many have vineyards throughout the region. They use this to their advantage, identifying how certain sites perform better than others in different vintages, allowing them to play around with their blends when designating what becomes their Brunello and what is relegated to their earlier-released Rosso di Montalcino. Another reason for their reluctance is that there is plenty of variation even within these subzones – with microclimates varying dramatically, most notably in altitude. It is the altitude of the site that, for many Brunello producers, is the central factor in determining the style and in many cases the quality of the wine. If this is the case, high-altitude vineyards could have more in common with each other than neighbouring vineyards lower down the slope that sit within the same subzone. For this reason, single vineyards or Crus could be a more accurate way to divide and break down Montalcino’s terroir. Subzones may not tell the whole story, but it is easy to understand why producers with vineyards located in a specific subzone with a distinct identity are keen to highlight this area – a village, so to speak, rather than single vineyard or Cru. The north-south divide The Montalcino vineyards are positioned in a circle around the eponymous hilltop town. At the simplest level, the sub-zones to the north of the town are cooler than those to the south. Producers in the northern regions of Montosoli and Canalicchio tend to pick their grapes later than those in the south. In the 2016 vintage, for instance, lower sites in the south were picked three to four weeks earlier than those in the north. However, altitude and prevailing winds also play an important role in the microclimate of a site. The vineyards in the hottest region of Montalcino in Castelnuovo dell’Abate are also some of the closest vineyards to Mount Amiata, which – at 1,740 metres’ altitude – is large enough to create its own weather patterns. This is hugely beneficial, creating a larger diurnal shift in temperature. While each of the sub-zones (particularly Montosoli) has a distinct flavour profile, the important factors of altitude, picking dates and winemaking techniques all play a role in influencing the region’s rich and varied tapestry of wine styles. The North Montosoli Directly to the north of Montalcino sits the Montosoli hill, perhaps the most distinct terroir in the region and certainly the sub-region that most strongly champions the sub-zoning of the appellation. Montosoli is distinct not just because of the cooler climate but also because of its soil, a distinct calcareous galestro. Wines from Montosoli have a finesse to the tannins as well as heightened aromatic capacity. The galestro rock brings a sapidity and mineral salinity to the wines. Despite the notable elegance, the wines also match the power and intensity of some of the other great sites within Montalcino. Altesino was the first producer in the region to produce a separate exclusive Montosoli cuvée in 1978. Baricci (one of the founding fathers of Brunello), however, has only ever had vineyards in Montosoli and has long been aware of the qualities of the subregion, claiming that it has been legendary for wine production for hundreds of years. Key producers: Altesino, Baricci, Caparzo, Livio Sassetti, Canalicchio di Sopra, Valdicava Other wineries based in the north of Montalcino, outside Montosoli, make some of the region’s best single-vineyard Crus, including Il Marroneto’s Madonna delle Grazie and Castiglion del Bosco’s Campo del Drago. Torrenieri To the far northeast lies Torrenieri; here the compact clay soils create more tannic, burly examples of Montalcino. Key producers: Sasso di Sole, Citille di Sopra Central + The South Tavernelle Tavernelle is home to some of the most famous producers in Italy. Soldera’s Case Basse vineyard is situated here, alongside neighbouring Pieve Santa Restituta, the Brunello estate owned by the Gaja family. For Gaja, Tavernelle is in a particularly privileged position, facing south and southwest with an altitude ranging from 320 to 350 metres, characterised by an extremely windy, dry, and bright microclimate. The wind protects the vineyard from damp, alleviating disease pressure, while the altitude slows ripening, allowing the grapes to gain flavour complexity but retain freshness. Poggio Antico is also based in Tavernelle and has some of the highest vineyards in the whole of Montalcino, with an average elevation of 480 metres. At this height, the soils are rockier and more calcareous, providing good drainage for the vines while the vineyards are exposed to sea breezes coming from the Tyrrhenian Sea, extending the ripening period and creating more flavour complexity in the grapes. Key producers: Soldera, Pieve Santa Restituta, Poggio Antico Sant’Angelo in Colle To the southeast of Tavernelle, these south-facing vineyards feel the full effect of the localised weather patterns caused by Mount Amiata. Here lies an historic part of the Montalcino appellation with many of the original founders of the consorzio based here, including Lisini, Il Poggione, Talenti, Argiano and Col d’Orcia. This region is known for producing the most muscular and powerful styles of Brunello. Key producers: Lisini, Giodo, Talenti, Il Poggione, Argiano, Col d’Orcia
 Castelnuovo dell’Abate Castelnuovo dell’Abate – the warmest subzone in the appellation – expanded considerably in the 1980s and 1990s. Here the wines – such as those of Poggio di Sotto and Mastrojanni – are known for their balance between elegance and power. Alongside its two vineyards in Central Montalcino, Le Ragnaie also has a vineyard in the region. The slopes are south-facing, however their warmth is moderated by the cooling winds of Mount Amiata, which are particularly noticeable at night. This diurnal shift slows ripening, retains acidity and allows for more complex aromatic and flavour components to develop in the grapes. The mountain also acts as a protector, helpfully diverting storms from the region and protecting it from hail. The varied altitudes within the subzone can produce contrasting styles of Brunello: Poggio di Sotto, for instance, will harvest its vineyards on lower slopes four to five weeks before their higher vineyards. Key producers: Poggio di Sotto, Le Ripi, Mastrojanni, Le Ragnaie Central Montalcino + Le Croce The central vineyards, located directly to the southeast of the town of Montalcino, are home to some of the most traditional styles of Brunello, known for their ageing potential. Both Fuligni and Salvioni have southeast-facing vineyards that sit between 380 and 450 metres above sea-level on soils of chalk, schist and stony marl – and Salvioni in particular argues that this altitude is key to producing the best Brunello. Further south in the Croce subzone, Cerbaiona has become a cult name in Montalcino, offering a unique expression of the appellation largely due to its distinct patch of terroir. The vineyards of Cerbaiona are located on limestone shale and sandy soils, which – combined with a gentle touch in the winery – produces a particularly elegant style of Brunello. Of course, Le Croce is also home to Biondi-Santi – the estate that started it all. The original Il Greppo property is situated at 480 metres above sea-level and, despite the high altitude, the estate likes to pick early, opting for a distinctly fresher, structured Brunello that is austere in youth but built to age for decades. Your guide to Brunello di Montalcino

We learn a lot from winemakers around the world but often it extends well beyond their vocation. No more so than with Champagne Henri Giraud winemaker Sébastien Le Golvet, whose philosophy as a vigneron extends far beyond the vineyard. Under the mentorship of his father-in-law Claude Giraud, Sébastien believes a total immersion in one’s surroundings is essential to better understand it. Working with something that is alive, Sébastien believes, requires the nurturing of a symbiotic relationship between himself, his vines and more broadly with the natural world.  Henri Giraud, one of Champagne’s most celebrated producers, takes this immersion philosophy to the extreme, from tasting their own soils to identifying varying terroirs of oak within the Argonne forest that produce the barrels for their barrel-fermented Champagnes. Sébastien guides us through the extraordinary lengths they go to, his determination to reconnect with nature, and learning to trust one’s senses.  Inquisitive wine drinkers are eager to extrapolate why doing something in the vineyard or the winery leads to the flavours in the glass. When speaking to a vigneron it is rare to receive straightforward answers, but as Sébastien explains, it is a succession of small details. In Henri Giraud’s case, a minimum of 10 years of activity and adjustments go into a single glass of Henri Giraud Champagne, as well as a lifetime of experience to help guide decisions throughout the process.  Sébastien compares his winemaking philosophy to climbing a mountain: there are many ways up and some options are more difficult than others, some can even lead to a fall, but each time he tackles that mountain, he claims he emerges with a better understanding. He remembers the pitfalls of previous vintages, or fermentations that go wrong, he takes inferences that might have led one way and chooses a different direction. Slowly finds the right path while remaining humble to the many routes available.  The multitude of factors at play in growing grapes and making wine, explains Sébastien, means a vigneron has to learn to trust one’s own sensibilities. His inferences are broad and multifaceted and not necessarily linked to winemaking. He talks about how important childhood memories of picking fresh cherries as a young boy, or the smells of his mother’s cooking, are, all providing him with a memory bank of senses that he refers to today.  100% barrel fermentation The domaine has had a fascination with oak from the Argonne forest, east of the Champagne region, since Claude Giraud took over from his father in the 1980s. Its top cuvee is even named after the forest (home to their barrels) of which 100% new oak is used in fermentation of their Argonne cuvee. Oak plays a central role across the range, with the sole exception the amphora-fermented Dame Jane Rose.  Since 2016 they have stopped using any stainless-steel tanks at all in the winery, even with their “Esprit” entry-level cuvee. Historically there were more than 150 coopers working in the Argonne forest producing barrels for Champagne production, but with the introduction of stainless-steel fermentation tanks, this tradition almost completely died out in the region. The cheaper more efficient effects of stainless steel led to most Champagne houses giving up on barrel fermentation. The obsession with oak at the domaine was not a whim. Initially, Claude Giraud invested in stainless steel to test and compare the effects of different fermentation vessels on the wine. They also tested extensively with different types of amphora including cement and terracotta before eventually opting for sandstone jars, offering the right amount of porosity to imprint texture and flavours, they are looking for. The problem with stainless steel, in Sébastien’s view, is that it doesn’t retain the tension in the wine in the same way as oak barrels; they don’t believe it translates their beloved Aÿ terroir. The reasons might not be clear cut, but their evidence in extensive tasting was enough to convince.  Sébastien states that the exchange during fermentation is much quicker in stainless steel, just two months, whereas in barrel it is between six to 12 months. This long exchange of solids, yeast and lees, according to Sébastien, creates much better equilibrium in the wine, more texture and more complexity. The small volume vessel (the barrels are just 228 litres) also creates more power and intensity in the wine.  Dealing with smaller vessels, according to Sébastien, also means more control of the product and less concerns with oxidation lowering the need for additions of sulphites (anti-oxygen agents) as well as giving Sébastien so many more options when it comes to blending. Each vintage he is managing over 1,000 barrels. While it sounds like a lot, in Champagne terms this would typically amount to four or five large tanks (maximum 10 smaller tanks) which when considering the Henri Giraud domaine has over 200 different separate vineyard plots, fermenting these all together in stainless-steel tanks would lose the specific terroir inferences that remain a vital element to the Henri Girard philosophy.  The terroirs of the Argonne Forest While Krug, Bollinger and Selosse are strong advocates of oak barrel fermentation in Champagne, perhaps the most unique element about Domaine Henri Giraud is the lengths they go to in determining what oak they use. Henri Giraud believes the terroir of the forest plays an essential role in the final effects in their wines. The wood is sourced from the Argonne forest but within the forest based on the varying soils, different parts of the forest offer different expressions. The domaine has identified at least 10 distinct terroirs within the Argonne forest. The three main regions they predominantly source from are Les Châtrices, La Contrôlerie and Les Haut-Bâtit. What is important about these specific terroirs, according to Le Golvet, is the geological positioning of the tree and the specific soil: a very poor, dry soil, causing the trees to grow very slowly producing wood with the tightest grain in the forest.  The tighter the grain, the more delicate the effect and flavour of the wood has on the wine. For Sébastien, the wines of Aÿ are very delicate and while they want to incorporate the terroir of the forest into the wine, they don’t want to overpower it. These trees take up to 250 years to reach maturity and thus Henri Giraud has partnered with the French National Forestry Office to invest in replanting programmes. For Sébastien, each of the terroirs brings distinct characteristics to the wine. The oak from Les Châtrices can emphasize the effect of acidity in the final wine as well as mineral freshness. The oak from La Contrôlerie brings red fruit and apricot notes. The oak of Les Haut-Bâtit brings power and depth and is often used in cuvees that lack the balance from maturity. How this all works they do not know, but again on tasting you can identify clear differences in the effect of using different oak from different terroirs of the forest. Sébastien is keen to share this with anyone who is interested. At Henri Giraud, they make a point of making their Vin Clair wine (still Champagne wine prior to the second fermentation in bottle) available to taste for visitors at the domaine throughout the year. They have the same cuvee fermented in the different types of oak for visitors to get a direct experience of how different they taste.
 Bespoke barrel toasting at the domaine One particular skill of Sébastien, seemingly fairly unique in the wine world, is that he toasts his own barrels. Trusting only his sense of smell and how specific toasts will affect different cuvees, Sébastien sources the barrels untoasted and toasts each one. Typically wine barrels are toasted for 30 to 40 minutes but he prefers a much lower heat but for around 90 minutes – sometimes longer –  depending on each barrel and using only his nose to guide him.  When the toasting process starts, he describes the wood smelling of flour, and as it cooks further the aromas develop to white bread, then darker, wholemeal bread, the bitterness of the green tannins drops out from the barrel and croissant buttered notes develop.  He identifies the character he is looking for, depending on the different vineyard sites, to produce a delicate balancing act between fruit and wood. Even before harvest, he has already decided how he will separate his 200 separate plots of vineyards, identifying which grapes will be fermented in specific barrels. The terroir of the Grand Cru village of Aÿ Transparency is a key part of the Giraud philosophy. They were among the first Champagne houses to farm organically, their vines have been pesticide-free since 1996. But whilst they are not officially certified, they believe recording the actual amount of chemical residuals found in the soil is a more transparent approach than an organic certification. They now identify on every bottle the molecular analysis of the wine via a QR code, identifying exactly what trace elements have reached the wine.    Receiving over 5,000 visitors every year, they are keen to share their philosophy of complete terroir immersion and transparency. Not only can you taste the different terroir effects on the oak, but they are keen to extol the virtues of the Grand Cru village of Aÿ. Sébastien explains how Aÿ has a distinct terroir, identifying key factors that resonate in the glass. The vineyards of Aÿ have a thin layer of very rich topsoil with high levels of iron oxide of which below is deep chalk mixed with clay.  The south exposition brings sun intensity that “roasts” the grapes, but a small river creates a fresh breeze that blows across the vineyards, preserving freshness. There is a distinct aniseed taste from the wines of Aÿ that brings freshness; the density of chalk, its structure and flavour can be tasted in the mouth as well as providing a distinct salinity. A part of their terroir immersion at the domaine involves tasting these elements with visitors, mixing the chalk, the clay and the iron oxide with water and tasting the effects in the mouth.  It is clear, explains Sébastien, that tasting these elements helps you to understand where you feel minerality in wine – where each element sits in the palate. Sébastien’s conviction in terroir immersion and the power of one’s senses is best extolled in the raising of his children. He has three sons aged between seven and 16 and from a very early age he and his wife were keen to immerse them in nature, to encourage them to explore their senses, and to connect them to nature. They spend much of their time in the vineyards, in the forests and the kitchen.  Sébastien recounts his memories of his mother’s cooking, the picking of fresh cherries from the tree – these are smells you never forget. He wants his children to savour these childhood memories, to help them build an extensive memory bank of sights, sounds and flavours. This immersion in their senses he believes is key to becoming a good vigneron of which he hopes his children (the 14th generation of the Henri Giraud domaine) will put into practice as Henri Giraud’s vignerons of the future. What defines a fine wine? For many, it is a bottle’s ability to improve with age. A wine’s longevity is even seen, by some, as the ultimate measure of its quality. It’s true that aged wine can be some of the most memorable – capturing an essence of time that’s impossible to recreate. The ageing process can be central to a wine’s (or, for that matter, whisky’s) progression to another, unparalleled level of complexity. Yet how a wine ages remains something of a mystery to both winemakers and collectors. There is still a great deal of conjecture about how a wine will develop, why it does so, and whether it is even worth the wait. Unlike whisky, wine is much less stable on its journey into maturity. As Christian Moueix puts it, “Wine is a complex matrix of thousands of compounds suspended in a delicate equilibrium.” This equilibrium is fragile, age a potential threat and a wine’s trajectory therefore incredibly difficult to predict. There was a time when wine drinkers dismissed the New World. Today, fortunately, that’s not the case – and it’s rightfully acknowledged for producing fine wine. However, some snobbery remains. Drinkers tend – beyond a handful of the very top names – to drink New World wines much younger than their Old World counterparts. Ask any oenophile about the oldest bottle they’ve drunk, and we’d put money on it being from Europe – Bordeaux, Burgundy, the Mosel, Alsace or Douro. Of course, one element is undoubtedly availability. The traditions of drinking Bordeaux (even from modest châteaux), for example, at full maturity – 20 or 30 years down the line – is not uncommon, and these wines continue to be regularly traded among collectors. New World wines at full maturity are much more of a rarity. Many of the younger regions in the New World still haven’t had the chance to build up such an extensive back catalogue, yet the wines have everything they need to comfortably age as long as their counterparts. Burgundy maestro Jean-Marie Fourrier, who now also manages Mornington Peninsula winery Bass Phillip in Australia, is an advocate for New World wines’ ageability, with Bass Phillip’s Pinot Noirs a case in point. But he believes the reputation for a shorter drinking window is partly due to practical, economic necessity. “When you start making wine at a young winery, you need a quick turn over, a quick return on investment,” he says. Therefore, producers craft wines that can be drunk younger. It is only once a winery, or a region, is established that winemakers can afford to have a longer-term approach and deliberately make wines to age or hold back stock. In this respect, the established classical regions of Europe have hundreds of years of history to fall back on. Napa has long since proved its mettle producing wines that can age. But just what it is that allows a wine to improve with age has been a hot topic of conversation in the region for decades. Tor Kenward – of Tor Wines – recollects a conversation between himself, Robert Mondavi and another legendary Napa winemaker, André Tchelistcheff over 40 years ago. Sitting around a table, they were trying to determine the key factor that makes great wine age. Was it the winemaking? The quality or concentration of the grapes? Or was it all about harvesting at the right time? Tchelistcheff – who trained in Europe and, by this time, had been making wine in Napa for over four decades – contemplated the suggestions. High acid levels (low pH), high concentration of tannins and oxygen management were all tabled and, while he accepted all were important, for him, a great wine for ageing needed “flesh”. By this, recalls Kenward, he meant the grapes needed a certain type of ripeness – not over, not under, but perfect physiological ripeness. Forty years on and Kenward still believes Tchelistcheff was right, yet it is an aspect often forgotten in the discussion of a wine’s ability to age. Finding this perfect window of physiological ripeness can be a challenge in warmer regions, and a warming climate, and therefore remains an obstacle for much of the New World. These regions tend to be warmer than historically marginal wine-growing regions of Europe, and therefore grapes can ripen quickly, but with this fast ripening comes a risk of reaching sugar ripeness before the skins have had the necessary time to reach maturity. Christian Moueix is one of the world’s most experienced winemakers, having managed both Pétrus, Trotanoy and other top Pomerol estates, as well as Napa’s Dominus. He agrees with Tchelistcheff that picking the grapes at optimum ripeness is a hugely important factor when producing wines that can age. “If harvested too early, grapes have a smaller quantity of extractible phenolic compounds and […] may not have formed the longer chains and bonds that make them stable.” On the other hand, when overripe, “These phenolic compounds are degraded through oxidation.” For Moueix, the temperate climates in Europe are ideal for “developing and maintaining a high ratio of phenolic compounds”, whereas in many New World regions, there is a propensity for excessive heat, over-ripeness and therefore oxidative winemaking which he feels is, “likely to contribute to wines that age prematurely”. In warmer climates, Moueix believes, “extreme heat, enzymatic and physiochemical reactions degrade anthocyanins within the berry, lowering the concentration of total phenolic compounds and subsequently, the wine’s capacity to resist oxidation, leading to premature aging”. For Moueix, then, a temperate climate (whether in the New or Old World) is key to producing wines that can age. It is, he believes, the reason why Dominus ages so well. This corner of the southern Napa Valley is relatively mild, thanks to the San Pablo Bay’s cooling influence. This slows sugar accumulation and gives the berries time for the tannins to ripen. They also don’t use irrigation, putting the vines under more stress, producing small berries with high phenolic concentration. Like Moueix and Tchelistcheff, Fourrier believes picking dates and high concentration of tannins is important – but he ties this to vine age, rather than the microclimate. “As vines get older, the size of the berries gets smaller,” explains Fourrier. It is this that gives a high skin-to-juice ratio and natural concentration. For Fourrier, this natural concentration is what gives ageing potential – rather than any actions in the winery. All are in agreement that the ageing ability of red wines comes down to the quality of the berries, rich in anthocyanins (ideally then from older vines) and picked at the right time in order to extract them at their optimal level of ripeness. But these factors affect Old World producers as much as those in the New World. Paul Roberts – Master Sommelier and COO of Colgin in Napa – makes a compelling point that New World regions in the right climate regularly produce higher concentrations of tannins than the Old World’s cooler climates. In fact, they have to pay close attention to extract less tannin during the winemaking, not more, to maintain the balance in the wine for it to age. Colgin’s mountainside IX Estate vineyard on Pritchard Hill produces berries that are, on average, 30% smaller than those grown in Pauillac. Often, Roberts notes, Napa Cabernets have higher skin-to-juice ratios than the Bordeaux First Growths – and therefore much more “anti-oxidant” tannins than their Bordeaux counterparts. According to Moueix’s belief that it is the concentration of tannins and phenolics found in the skins that protects wine from oxidation and degradation, this should mean that top Napa wines have the potential to outlive Bordeaux wines at the top level. Andy Smith, winemaker at the Russian River’s DuMOL estate, makes some of the region’s top Pinot Noir and, like Colgin, has no shortage of tannins in his grapes. Compared to Burgundy, his Pinot Noir has smaller berries, “with uncommonly thick skins that create huge natural power if you choose to extract fully”. For Smith, “this leads to a potential for powerful, deep wines with high structure for aging, and high natural acidity”. Like Colgin, it is an overabundance of tannins that is more of a concern at DuMOL. “The key is balancing the extraction,” says Smith, “to take the positive and leave behind the excessive elements from the skins.” For leading Chilean winemaker Francisco Baettig (Errazuriz, Seña and Chadwick) it is an excess of tannin, and an excess of extraction in some more ambitious wines, in the New World that has tainted its reputation for producing wines with long ageing ability. “There was an obsession for creating monster wines, with lots of extraction, trying to extract as much tannin as possible,” Baettig notes, looking back 10-15 years. Many producers in Bordeaux were doing the same at the time, but the different climates – the same elements highlighted by Roberts and Moueix for leading to higher concentrations of tannin – influence the tannin and extraction. “In Chile with higher intensity and higher levels of ripeness, the extraction happens much quicker,” he explains. This resulted in over-extraction – “wines that were rough, too tannic and did not age well”. For New World producers, better tannin management is clearly key to producing wines that can age. Producers like Tor, Colgin, DuMOL and Baettig all believe gentle extraction of tannin and reducing the wines’ contact with oxygen is fundamental for ageing. In cooler, less sunny European climates, it could be argued that in the past, due to the less easily extracted tannins, producers could get a way with being a lot less precise in their tannin management. With this in mind, Baettig notes the Old World might need to learn from the New World, how best to adapt their winemaking to the effects of climate change – and, in many ways, they already are. Vignerons are already looking back at sunny vintages such as 2005 and 2010 (with high levels of extractable tannins) and questioned some producers’ apparent over-extraction of tannins, adapting accordingly in years like 2019 and ’20. The transformation of grapes into wine is magical; the secondary transformation that can take place with maturity is possibly even more extraordinary. However, a wine with so much promise can disappoint if left too long – a frail, bitter example of its former self. It is no surprise that many drinkers choose to avoid such risks and savour wines in their more muscular youth. There is a cultural change too. DuMOL’s Smith notes that the average US consumer is not particularly interested in ageing their Pinot Noir and questions whether ageing wine is an outdated notion. In a society that favours immediate gratification, modern consumers are impatient and few have cellars in their homes. And the savoury flavours that come with maturity aren’t to everyone’s tastes. “There’s a big difference between positive evolution, plateau-ing and the gradual downward slope of oxidation,” he says. “All wine ultimately wants to become vinegar!” Because of this, some winemakers are deliberately pulling back from making wines that peak at 20 years, instead looking to produce wines that will appeal in youth and peak closer to 10 years, since that’s what their customers want. Even the most tannic red wines from the more traditional regions are these days much more approachable in their youth, something that just wasn’t possible just a few years ago (as noted by Lisa Perrotti-Brown MW). Making fine wine is an art – and especially so when it comes to building a wine for the future. Choosing the perfect moment to pick in the given climate, as well as the right style and level of extraction in the winery will determine a wine’s ageability – but only if the underlying quality of fruit is sufficiently high. With better winemaking equipment, we no longer need to wait for tannins to soften to enjoy even the best Bordeaux or Napa. Does that mean you can’t age it for a half-century? Or that it won’t improve over that period? Absolutely not. How to make wine for the ages

Coming off the back of an extremely successful 2015 vintage, 2016 is a fascinating comparison. Both are exceptional but with distinctly different personalities. 2015 is exuberant, rich and decadent; 2016 is arguably more precise, detailed and elegant. No doubt these vintages will be forever compared, showcasing the extraordinary potential of Sangiovese in this special part of Tuscany.  Speaking to some of the top producers in the region, you can’t help but feel their personal preference is with 2016 – a vintage that might not be so immediate as 2015 but is more complex, classic and with a huge capacity to age. Either way, both vintages are a testament to the increasingly adept handling of the delicate Sangiovese grape in Montalcino in recent times, producing wines of great depth and complexity. 2016 is a touchstone vintage for Brunello di Montalcino. It is a vintage of purity, so free from affectation that it will no doubt be the benchmark against which all other vintages are compared, past and future. The growing season  For many vignerons in Montalcino the growing season in 2016 requires little exploration simply because it was so temperate. “2016 was the perfect vintage for my mental state” says Francesco Ripaccioli from Canalicchio di Sopra. From start to finish the growing season could not have been better. Francesco explains how in some vintages it is the growing climate that dictates the style of the vintage. If it is a hot vintage you feel it in the grapes, the sugar concentration, the berry flavour, the added alcohol and power this brings. In a cool vintage you feel the balsamic notes and the ethereal perfume. “Nature cannot be controlled but can be interpreted” he states, “and sometimes a big effort is needed to interpret a vintage”. But 2016 was the complete opposite. In 2016, nature did not dictate style. The moderation and clemency of the climate allowed the grapes to develop in pristine condition devoid of any characteristics brought about by extremes. This, Francesco contently concludes, “allowed for each of the territorial identities throughout Montalcino to shine through”. The year began with a very cold spell in January with 12 days below freezing, which cleaned the vineyards of disease and mildew spores from the previous vintage. Bianca Ferrini of Podere Giodo outlined the importance of the rainy winter that followed, building up good groundwater reserves for the drier summer months ahead. The spring brought more rain but the risk from fungal attacks stayed low, no doubt due to the cold winter leaving the vines in good health. Budding, flowering and fruit-set all came and went without issue. Ideal conditions saw impressive yields with good, even cluster formation and healthy vines right up to the point of veraison (when the grapes start to ripen). Despite good yields there is little concern this will lead to diluted wines, Francesco Ripaccioli commented. Under the DOCG, grapes grown within the Brunello di Montalcino designation have strict rules on production – capped at 8,000 kilos per hectare (which results in just 1.5 kilos of grapes per vine). Although Canalicchio di Sopra crop a little lower than that, over-production in the region more generally in 2016 is not an issue. Intermittent rain showers continued up until August meaning that Poggio di Sotto (who practices organic viticulture) found the growing season more challenging than most. Fortunately for them, explains Luca Marrone, the southern location of their vineyards and the “never-ending west breeze from the valley kept the vineyards dry”, protecting the grapes from any onset of mildew.  Bianca Ferrini also outlined the importance of the winds during the summer: “the constant breeze in the vineyards encouraged good balance in the vines and was central to the outstanding organoleptic properties that developed in the grapes”. For Bianca, the “regularly paced rainfall, the summer heat and the drying winds laid the foundations for a great vintage.”  Another key element to the style and success of the 2016s was the notable diurnal drop in temperature between day and night during the summer months. This ensured long, slow ripening of the grapes which Ferrini states “was crucial both for aromas and tannin development”. Riccardo Talenti also emphasised how this kept pH levels low in the grapes, giving the wine high levels of freshness and acidity despite the ripeness, a great sign for longevity. For Sabina Sassetti “2016 was another near-perfect vintage in Montalcino.”   “I cannot remember a better last 20 days prior to harvest.”  – Francesco Ripaccioli, Canalicchio di Sopra
 The most important part of the growing season is always veraison during the last 20 days leading up to harvest. It is here where rain, humidity, sun hours and diurnal temperatures are key. It is where the aromas, flavours and acid profile of the wines are formulated and in 2016 Francesco Ripaccioli cannot remember a better last 20 days prior to harvest. There was no huge temperature hikes of 40 degrees like 2015. The highest it reached was 35 degrees. A great vintage he believes, needs to reach 2000 on the Huglin sun hours index and in 2016 it was up to 2500. As Gianpiero Bertolini at Biondi-Santi states, right through veraison “the autumn day and night temperature swings played an important role in the final complexity of flavour and health of the grapes at harvest.” Biondi-Santi picked early, starting on the 19th September. “Our concept of “grape maturity” favours the fragrance of the fruity notes and a well-balanced alcohol content” states Gianpiero. Poggio di Sotto also picked some of their crop early, picking their first grapes three weeks earlier than most in Montalcino.  Harvest of the oldest vineyards at lower altitude (200 metres), where the berries are more sensitive to the heat, took place from the 2nd to the 15th of September. “We don't mind if the sugar content is relatively low for the current standard”, states Luca Marrone. “In 2016 the alcohol content was typical for Poggio di Sotto, around 13% to 13.5 % in the first days of picking and 14% in the last days”. Unlike 2015 it was a long harvest for them, picking their final plots in October. Riccardo Talenti started picking on the 18th September: “A normal picking date for Talenti in a great vintage”.  “2016 is the deepest and most elegant of vintages”  – Riccardo Talenti, Talenti For Canalicchio di Sopra the harvest was quick – just 10 days beginning on the 27th September. It was very clear to Francesco that all the fruit was ripe and ready, with very little concern regarding analysis. In vintages which are more difficult to read, he is constantly in the vineyard measuring potential sugar levels, tasting berries, and getting analysis from the laboratory to make picking decisions. In 2016 virtually no analysis was required, the quality of the fruit so effortlessly transparent. For Sabina Sassetti harvest began at the beginning of October. For her, this is when the grapes reached perfect ripening and, consequently, the proper accumulation of polyphenols, allowing tannins to be gentle and easily accessible on the palate.  Comparing two epic vintages in Brunello: 2015 versus 2016  2015 produced wines that were a product of the extremes of the vintage. The warmth brought a fantastic maturity to the fruit, a richness and opulence to the palate and generally more rounded tannins. 2016 in comparison is less forward and more serious. Francesco Ripaccioli describes the wines as “extremely elegant, more complex, more ethereal”. He appraises the vintages perfectly by describing the 2015s as horizontal wines and the 2016s as vertical wines. Whilst the 2015s might be more approachable and their appeal more immediate, the 2016s are more cerebral and he believes have “double the length of the 2015s on the finish”. He explains that 2015 was a vintage made great by the climate, and you can feel that impact in the wines. 2016 in comparison does not have the exuberance and warmth but instead offers complex floral sensations, tighter, more linear structure and a beguiling freshness which he believes will see the vintage age beautifully.  “2016 is a wine of “nerve” and energy, with lots of fresh fruit and a well present acidic backbone.” – Giampiero Bertolini, Biondi-Santi Francesco is still a great fan of 2015 and so he should be, his La Casaccia was awarded perfect scores in 2015. He believes 2015 and 2016 will be compared to the last great duo of top Brunello vintages: 2006 and 2007. It will be down to each drinker’s opinion which vintage is better. “The vintages will always be divided by personal preference”, he concludes. What is so exciting is that whilst 2016 and 2015 are both great vintages, they are also completely contrasting in style.  Biondi-Santi’s Giampiero Bertolini believes “2015 is a vintage of sun and warm temperatures. A vintage of generosity, both in structure and alcohol, where the ripe, fruity notes abound. Whereas 2016 is a wine of “nerve” and energy, with lots of fresh fruit and a well present acidic backbone.”  For Sabina Sassetti, the slightly cooler weather in 2016 versus the previous year, gives the wine a higher acidity, resembling the widely praised 2006 vintage. The result is a fresh and elegant wine with a firm structure. James Suckling’s recent report declared Sassetti’s 2016 Brunello potentially the wine of the vintage, awarding it 100 points.  “Think of the 2015s as horizontal wines and the 2016s as vertical wines” – Francesco Ripaccioli, Canalicchio di Sopra Riccardo Talenti feels “2015 is warmest and most voluminous, 2016 deeper and more elegant”, comparing 2016 to 2006 or a more complex 2010. Luca Marrone of Poggio di Sotto likes to consider the mood of 2015 as “explosive – already lively with the immediate impact of its complexity, in such a way mirroring the early ripeness of the vintage.” The wines of 2016 also imitate its growing season. “It was a slow and steady path. It's gentle and shy at the first approach, with an introverted talent that will reveal power and elegance in the long run.”  Canalicchio di Sopra also compares 2016 to 2006 and 2010 but believes 2016 is better. “It has something more than 2010, more identity, more freshness. He describes 2016 as a cross between 2013 (one of his favourite vintages for its freshness and floral notes) combined with the fruit purity and ripeness of 2010. For Biondi-Santi, 2016 in terms of freshness and ageing ability is similar to 2010, whilst Ferrini compares it to 2006, 2010, 2015 and 2019.  Perhaps the most important factors when it comes to considering your 2016 purchases are purity of site and style. The growing season being so perfect, so unaffected by any climatic extremes, 2016 offers the purest expression of terroir, of variety and of each of the individual Brunello winemaker’s talents. This is a touchstone of a vintage, against which all other vintages, past and future, will be compared. Brunello 2016: a magical year in Montalcino

The 2018 vintage in Montalcino is certainly one to get excited about – particularly for those who love fresh, floral vintages packed with tension. Vintages like this are becoming ever rarer in today’s warming climate, and therefore all the more precious. Despite the pleasing results, the growing season was far from easy. A very wet and then humid spring and summer made it very demanding for vignerons – but the results are much better than expected, with some stunning wines.  While it might not have the power of 2015 or the structural intensity of 2016, the wines have fantastic energy and elegance, and plenty of acidity making it a versatile vintage that can be enjoyed in its youth or will age well. “I will certainly be cellaring many bottles of 2018 myself,” says Canalicchio di Sopra’s Francesco Ripaccioli, a vigneron but also a Brunello collector, who always gives an insightful description of the vintage. Ripaccioli believes that this “fresh” vintage might be overlooked by critics looking for power, but he sees many similarities with 2008. That vintage passed with little fanfare on release but proved to mature into a stunning year that aficionados just can’t get enough of these days. Certainly, for Ripaccioli, the 2018s share 2008’s purity and, while it doesn’t have the structure of his favourite overlooked vintage 2013, it has many similarities to this year as well.
 For Riccardo Talenti, 2018 is “a classic year” reminiscent of the Brunello of the 1990s. “The wines have excellent acidity, well-built and persistent tannins with a very fresh base of fruit.” For Sabina Sassetti (Livio Sassetti), the vintage produced wines with “extremely soft, elegant tannins and great aromatic extraction”.
 There is a lovely transparency to the vintage and single-vineyard sites really prove their mettle – offering very distinct interpretations dictated by terroir. Argiano’s single-vineyard Vigna del Suolo, Canalicchio di Sopra’s Vigna Casaccia and Casanova di Neri’s Tenuta Nuova are all outstanding examples.
 Giacomo Neri was surprised by the 2018 Tenuta Nuova’s “quality of tannic texture, depth, persistence and the salinity”, something he believes “has been manifesting for some years in an increasingly intense way”, and really came to the fore in 2018. For him, the wines are “not wide but long, fresh, with great scents, complexity, elegance and have great ageing potential”. For Poggio di Sotto, the wines are “rich in aromas and structure, very recognisable and characterful with good acid and alcohol content”. 
 The season started with plenty of rain in the winter months which was much needed following the drought conditions of the blistering 2017 summer. This helped re-balance the water reserves in the soil and the cold winter allowed the vines to reach adequate dormancy. Budburst and flowering all happened with little mishap, and yields looked very healthy. Spring and summer remained moderate in temperature with just one heat spike in July where temperatures reached 35-36˚C. From mid-June to the end of August temperatures sat around, but rarely exceeded, 30˚C, keeping the vine in good health with no shutdown, encouraging the berries to reach full phenolic ripening and no scorching of berries.
 Cerbaiona’s Matthew Fioretti emphasised how the rainy spring and humid weather that followed resulted in downy mildew which would go on to cause difficulties in the vineyards right up until harvest. And there was a lot of rain. Poggio di Sotto’s Maarten Leereveld noted that by the end of May they had already exceeded the rainfall for the whole of 2017. Sabina Sassetti highlighted that great attention was required in the vineyard to maintain concentration. If there was any concern it was the combination of high yields and moderate temperatures that meant grapes could struggle to achieve full sugar ripeness – so most producers did a green harvest in August to offset this.  Ripaccioli is a firm believer that a vintage is best judged by the last 30 days prior to harvest and, despite ambient weather for much of the year, two significant rainstorms on 1st and 17th September impacted the harvest. Unlike in 2017 where the dehydration of the berries was a problem, the grapes swelled following the rain, with dilution of flavour and structure a danger. While it no doubt had some impact, it was heavily moderated by strong westerly winds that blew throughout September. In fact, Ripaccioli explained how the grapes lost 30% of their berry weight in the two weeks prior to harvest thanks to the wind’s dehydrating effect.  
For Giacomo Neri of Casanova di Neri, the distinct diurnal temperature shifts leading up to harvest resulted in a slow and constant ripening of the grapes. It meant the wines built up aromatic complexity and retained high levels of acidity, giving the wines a lovely freshness. 
With its high-altitude vineyards, the strong, warm, westerly winds in September were very welcome for Biondi Santi, really helping dry out the vines and grapes following the rain. Biondi Santi was able to start harvesting as early as 16th September. 
For many, harvest was typically delayed by around five days to encourage the grapes to reach full ripeness. Berry-by-berry selection was necessary to ensure optimum results for what was potentially a large crop with uneven levels of ripeness. Despite the potentially high yields, the final numbers in terms of production throughout Brunello saw 2018 volumes among the lowest of the last six years, around 25% below 2016 and 2017, and similar to 2019 (set to be released next year). Green harvesting and extensive selection at harvest was clearly adhered to. At Canalicchio di Sopra this meant 10% of grapes were removed at sorting – compared to just 1% in 2016.

Sassetti delayed harvest until 10th October. They felt the mild September and later harvest enabled them to bring in very healthy grapes that had “finally” reached perfect ripeness.
With all the grapes in, the numbers were impressive – both alcohol and pH levels were the same at Canalicchio di Sopra as they were in 2016. It is a pH level that is one of the lowest in recent years – giving the wine a great level of freshness and huge ageing potential. The Canalicchio wines sit at 14.5% alcohol – as is typical – thanks to the removal of more dilute berries at sorting.  Tasting a wide range of 2018s, the wines generally have an immediate appeal. The texture is noticeably elegant and there is lovely clarity to the fruit. The wines are medium-bodied, making them immediately seductive and, in some, there are lovely floral, perfumed, almost Pinot-Noir-esque aromatics. The best wines are full of energy. This is certainly a vintage of sophistication, creating wines with transparency, fine textural elegance, plenty of tension and impressive length. Producer styles and picking dates (from fresh to raisined fruit) still tend to dominate over and above vintage influence. Those who managed to balance the freshness with concentration and keep the oak in the background, produced excellent wines. Very few were lacking concentration and the best have great length, a tensile, racy appeal and beautiful, lifted aromatics. The 2018s will bring lots of drinking pleasure. Brunello di Montalcino 2018: elegant and age-worthy

In an era where minimal intervention is so applauded, discussing the art, skill and work of a winemaker can be unfashionable. Producers can seem keen to gloss over or shy away from discussing the tricks of their trade. And tricks there undoubtedly are – as vintages like 2021 prove.  Jean-Antoine Chaptal was a man of many talents. Working in the late 18th and early 19th centuries, he was a scientist and statesman whose interests varied from sugar beets to gunpowder and merino sheep. For wine-lovers, he has been immortalised thanks to his 1801 paper, L’art de faire, de gouverner et de perfectionner les vins – in which he introduced what we now call “chaptalisation”. It was nothing short of revolutionary.   During fermentation, yeast converts sugar into alcohol and carbon dioxide. Chaptal realised that if you added additional sugar to raw grape juice, you could increase the final alcohol content of the wine. The sugar would, along with the natural sugars from the grapes, be fermented, producing a dry, but stronger wine, and – with alcohol a natural preservative – one that would keep better. Suddenly producers could give wines from cooler years a boost (with the alcohol adding much more than just ethanol). Some winemakers, of course, abused the technique – at one point in the early 20th century, the Languedoc reportedly produced twice as much wine as was feasible for the volume of grapes harvested.  Today the practice is strictly controlled by regulatory bodies, only permitted in cooler regions where it is deemed a useful tool, limited according to region and vintage conditions to protect quality. In marginal climates where ripeness isn’t guaranteed, chaptalisation has been the norm. Although you won’t find them in marketing pamphlets or Instagram feeds, bags of Tate & Lyle are widespread in the cellars of Champagne, Burgundy and England, in particular. It’s one reason why climate change has, for many such regions, been a blessing of sorts – the warmer conditions allowing them to more reliably bring in a crop of sufficiently ripe fruit.    Throughout the 19th century in Bordeaux, wines were often blended with those from warmer climes – the finest had a dose of Hermitage (something which Ch. Palmer pays tribute to today with its Historical XIXth Century Wine), while lesser wines had a dollop of something Spanish. Chaptalisation took over in the 20th century, and was widespread – considered part and parcel of making wine in the region.   Global warming and the technology that has revolutionised viticulture and winemaking in the region has changed that, but 2021, with its frost, mildew and generally cool conditions, saw many of northern Europe’s winemakers forced to chaptalise once more – or at least consider it.  Setting off to taste Bordeaux 2021 en primeur, I was braced for the polished spiel of the world’s grandest estates. But perhaps signalling a broader move towards transparency in the industry, what I found was a refreshing frankness. Not a single producer looked to mask the incredible challenges of the year – and the often unspoken reality of making wine in such conditions.  We asked about the potentially contentious topic at every property we visited, receiving only a small handful of slightly wary responses on the topic (“We did what we had to do,” one winemaker said, with a smile). The vast majority of producers felt it was a necessity in the year, although not everyone agreed.  At Ch. Cheval Blanc, Pierre-Olivier Clouet firmly stated, “We never touch the natural balance of the wine.” That said, they did chaptalise three plots in the end, but none of them made it into the Grand Vin. Delphine Kolasa of Margaux’s Marquis d’Alesme believes that you can almost always feel a warmness from the additional, unnatural alcohol – although she noted a few properties who had managed it so well you could barely tell.  At Les Carmes Haut-Brion, Guillaume Pouthier highlighted the balance needed with the year’s acidity levels. The relative lack of sunshine resulted in grapes high in malic acid, meaning that the malolactic fermentation (where hard, green-apple malic acid is converted into softer lactic acid) had a greater impact in the wines, reducing the overall acidity. With this in mind, he felt that chaptalisation could lead to wines feeling “flat” – but it wasn’t a necessity for him, given he managed to reach 13.5% natural alcohol thanks to the property’s warmer, suburban microclimate. These producers weren’t alone – Beychevelle, Léoville-Poyferré and Lafite-Rothschild all opted to work with what nature gave them.  But there were plenty of outstanding estates which felt it was an essential element to success in the year. At Le Pin, Jacques Thienpont remarked how they had to employ “forgotten methods”, noting that it was more than 20 years since he’d had cause to chaptalise in Pomerol. He used it on a couple of vats. Joséphine Duffau-Lagarrosse – the young vigneronne who has taken over her family’s estate – joked about having to learn how to do it, so alien is the process to a millennial winemaker. (“I called Burgundy,” she said, laughing mischievously.)  Similarly, Christian Moueix – another of the Right Bank’s old guard – noted how he used it almost every year in the 1970s, but hadn’t needed to for a long time. For him the key was not to overdo it, enough to add a maximum 1% alcohol. There was a clear consensus on this among proponents – adding half or one degree (of alcohol) was beneficial, but if you pushed things too far, you’d lose balance in the wines. That touch of additional alcohol added body, carried flavour and allowed for more extraction.  At Ch. Canon and Ch. Berliquet, they noted that they always pick on phenolic rather than sugar ripeness, but one of the quirks of 2021 was that the skins ripened before the sugar had accumulated to the expected level. They therefore picked and chaptalised to bring the wine up to 13.5%.  Omri Ram – who produced a particularly exquisite flight of 2021s at Ch. Lafleur – emphasised that he wasn’t anti-chaptalisation, but was anti it being popularised. He used it on a handful of parcels (the most humid plots) where he felt they would benefit from just “a little bit more” – with all the wines ending up between 13.4 and 13.6%. Ch. Margaux was notable for highlighting that, at least for them, chaptalisation wasn’t abnormal. They also used it on a couple of plots in 2017, 2019 and 2020.   There’s no doubt that chaptalisation can be done badly. But tasting through the 2021 vintage in Bordeaux, it’s also clear that it can be done well – used seamlessly to produce wines that are better for that spoonful of sugar. Chaptalisation – the addition of sugar to enrich wines – isn’t fashionable but it’s a practice that has long been common (and often essential). The 2021 vintage saw many Bordeaux winemakers turn to the technique; here we dig into exactly what it is – and why it shouldn’t be dismissed

A spoonful of sugar

“Two generations ago everyone made Chablis like this. Now I am the only one left,” says Daniel-Etienne Defaix proudly. It is amazing to think that production methods could completely reverse in such a short time, no doubt fuelled by the “Chardonnay boom” of the mid-70s onwards. This insatiable global demand for crisp, clean, saline-tinged Chardonnay has shown no sign of abating ever since.  The commercial success of Chablis (one of the few white wines found in practically every supermarket, off-licence and fine wine store around the world) is staggering, particularly as the region in itself is remarkably small. While both premium growers and commercial production have, in many ways, sat comfortably alongside each other (even among the top traditional premium growers such as Raveneau, Dauvissat, Billaud-Simon and Droin, the length of élevage has reduced considerably in this time. Despite being the oldest domaine in Chablis, established in 1610, his father (like most other producers in Chablis when exports boomed) started to produce Chablis in the modern way. The time spent ageing the wine on its lees dropped down to six to nine months, in order to release the wines as soon as possible, and meet market demand. Unimpressed by his father’s results and the wines’ ageing capacity, it was Daniel-Etienne’s decision to change tact and to retrace his grandfather’s footsteps, performing a longer élevage – which for Defaix brings out the complexity and terroir characteristics Chablis is truly capable of.   So why has Etienne persisted? What is it that makes this technique so valuable to him? He admits he is fortunate to own the largest cellars in Chablis, claiming to have seven to 10 times more cellar space than anyone else in the village. ”This gives me a lot more freedom,” he explains – both in terms of ageing his wines (of which he has up to 15 vintages of each Premier and Grand Cru in the cellars at any one time), but also financial freedom. “My wines are my own bank: I don’t need to take out loans when there is a poor harvest,” he says. This no doubt puts Defaix in a minority in Chablis, where yields have been pretty catastrophic over the last decade, plagued by spring frosts. Financial autonomy has allowed him to continue making his Chablis in a traditional long-ageing method, while at the same time keeping pricing incredibly fair.  According to Defaix the key to long-ageing Chablis is protecting the glycerol content in the grapes, since it is the glycerol that takes around two years on the lees to break down and starts to act as an anti-oxidant. He does this by carrying out slow, three-hour press cycles of the grapes and keeping only the first press for bottling. He ferments at a cool 18°C, again to preserve the glycerol in the must. “Glycerol provides the balance in aged Chablis between sugar and alcohol. Glycerol gives fat and seduction to the wine,” says Defaix. “It brings a brioche taste to the wine, without being sweet.” But this takes time to produce: Defaix typically ages his Premiers Crus a staggering seven to nine years on the fine lees in tank; for his Grands Crus it can be eight to 15 years!    It might come as a surprise that – despite making this almost forgotten, ultra-traditional style of Chablis – Defaix machine-picks all his grapes. But this decision was not made easily, nor without extensive testing. He explains that they were, in fact, one of the last domaines to buy a machine harvester. Back in the ’80s his father, sceptical of others’ results, started his own research – picking half the grapes by hand and half by machine. After 10 years in bottle each year, they invited wine professionals, chefs and sommeliers to blind taste both. Every single time, the wines by machine were unanimously thought to be better. Defaix came to the conclusion that the exact timing of the harvest is more important than the hand selection. He also states that the technology makes today’s picking machines extraordinarily accurate: ripe fruit falls in the basket, rotten fruit is too light and is easily filtered out, while any green grapes stay on the vine. Turbines attached to the machine suck in the leaves and insects and are removed prior to the grapes reaching the winery. During his experiments, his machine harvested-fruit was a full 1.5% higher in alcohol than the hand-selected fruit in poor vintages.  Daniel-Etienne is the 15th generation of his family to produce wine in Chablis over the last 400 years. Daniel-Étienne Defaix: Chablis built to age

When visiting the cellars of Domaine Hubert Lamy, you are likely to come out a lot wiser than you were when you went in. Olivier Lamy has been experimenting ever since he joined his father at the domaine in 1995, and he loves to share his findings.  On our last visit we were given two white wines blind and asked to assess them. One thing seemed immediately clear: with its deeper colour and more developed savoury tones, one wine was older than the other. “No” he replied. “They are the same age.” Okay, perhaps the reason for such variation in development is due to the wines coming from two different quality sites – a Grand Cru versus a village wine for instance? “No, it is the same vineyard,” he replied. Perplexed, the only other solution I thought must be his high-density plantings. (Olivier has planted parts of his vineyard three times the density of the norm in Burgundy, with up to 30,000 vines per hectare), the result being smaller, more flavourful berries. Wrong again.   “Wrong experiment,” he smirks, leaving us completely stumped. He presents the two bottles and the answer lies with the capsules. Both wines have the same cork closure but one has the traditional metal capsule seal, the other bottle has been dipped in wax. It is the wax capsule that seems not only younger and fresher, but more texturally complex, yet both the wines are from exactly the same vineyard, with the same vine density and vintage. It is simply the closure that has preserved one wine so much better.   Olivier has been experimenting with closures for years. There have long been concerns about natural cork, with the risk of cork taint top of the list of potential problems, but it was the issue of premature oxidation, particularly with white Burgundy, that led Olivier to investigate whether maybe the problem lay with the closure.  Despite the drop in natural cork’s popularity and their replacement with alternative, “technical” corks and screwcaps, the natural cork still has plenty of advocates, and it remains the most sustainable and natural of solutions for many. A better understanding of the causes of cork taint has vastly improved the natural cork’s reliability and reputation, yet “being a natural product there remain irregularities in the cork,” says Olivier. Natural cork is irregular in structure, therefore allowing different levels of oxygen ingress, meaning that the same wine can mature differently depending on the specific cork, and resulting in bottle variation.  Olivier also believes the irregularities of cork have become worse in recent years due to climate change, with the warmer temperatures resulting in even less consistent cork.  The benefit of the wax capsule, according to Lamy, is that it acts like a “bandage”, offsetting the irregularities of the cork. His grandfather and many other winemakers often used wax capsules for wines destined for their personal cellars; it was the reliable ageing capacity of these wines that prompted his experiments. Trialling the effects of waxed and unwaxed capsules since 2009, he decided to use wax capsules on all his wines in 2016. Over this time, he has experimented with varying diameters and lengths of cork, different treatments, as well as testing plastic, agglomerate, and technical corks before concluding that longer (54mm), technical DIAMs (a natural cork-based agglomerate closure), under wax seal produce the best results and best protect against premature oxidation.  Does this mean we have a definitive answer to the question that has plagued white Burgundy for the last couple of decades regarding premature oxidation? While his experiments certainly seem to imply that the irregularity of natural corks could be one of the biggest culprits and wax capsules one of the most successful solutions, he does not believe it is only the cork which is at fault. “There are two problems,” he says. “Poor-quality corks and the fact that wines are more fragile these days.”  The increased fragility of white Burgundy, Lamy believes, is a modern phenomenon. Climate change produces riper grapes, combine this with too many new barrels, modern presses that are too protective and you have wines that are more susceptible to oxidation. All too aware of this concern, many vignerons, Lamy believes, attempt to overprotect their wines, adding too much anti-oxidative sulphur dioxide (SO2) throughout the winemaking process. Counter-intuitively, this in fact makes the wines more susceptible to oxidation. When wine is made in a more protective environment, the more volatile phenolics remain in the wine, whereas these will drop out of a wine  when it is made oxidatively at the early stages of vinification, resulting in a much more stable wine.   Despite vignerons’ better understanding of the effects protective winemaking has on long-term ageing, these techniques are still used by many because it makes the wines so much more approachable in their youth. Many white wines today are built on developing these youthful aromas at the expense of ageing potential, Lamy argues. This is, he says, is in direct contrast with the past, where wines were built on texture, remaining fairly closed in their youth, with the aromas only developing with age.  There are still many traditional vignerons in Burgundy producing textural white wines built to age – with Lamy (who does not enjoy young, aromatic Burgundy) being one of them. With the warming climate, he has, however, had to adapt his winemaking to protect these more fragile wines. These days he manages the press cycle according to the vintage and allows for more solids when required.  With all the wines now bottled under DIAM and wax capsules, all Lamy can do now is wait. But, if his experiments are anything to go by, the risks of premature oxidation are low. Of course, he’s not sitting back – the dynamic winemaker is looking to experiment even more, pushing the boundaries to produce the best, and most age-worthy, wine possible.
