The Clos des Goisses vineyard – originally known as Les Goisses – has been planted with vines since the 16th century and was well-known in the region long before it was ever made into a single vineyard wine. The name is taken from the local dialect “Gois” which means very steep. The vineyard is the steepest, directly south-facing in the whole of Champagne (between 30- 45% gradient), and the hottest site in the region. The plot was indirectly purchased by Charles Philipponnat's
grand-uncle Pierre Philipponnat who purchased it from his cousins, the Bouché family, after they were made bankrupt in 1935.  Pierre was well aware of the quality of the vineyard as it had already enjoyed some fame as “Les Goisses” around 1900, but had since been almost abandoned during the Phylloxera crisis, WWI and through the Great Depression period. Once purchased, Pierre Philipponnat immediately set to bottling “Les Goisses” in 1935. Its reputation really took off around the mid-'50s and it was around this time that its name was altered to Clos des Goisses. In the vineyard This 5.5-hectare narrow site is perfectly positioned to push the natural ripeness of the grapes to a level unmatched anywhere else in Champagne. In a region where there is an over-reliance on chapitalisation (the adding of sugar prior to fermentation to boost body and alcohol) as well as high dosage (the addition of sugar post-disgorgement to increase the perception of sweetness), there is little necessity of either in a vineyard site where good ripeness levels are reached every year. The vineyard also benefits from a pure Belemnite chalk soil that accumulates heat, further promoting optimum ripeness levels.  Clos de Goisses is very much dominated by Pinot Noir – a sun-loving varietal that brings weight, density, richness and red and black fruit flavours to the palate. Clos des Goisses is typically a blend of 65% Pinot Noir and 5% Chardonnay grown on the site, although this does vary from one release to the next. The 2006 vintage saw the first release of Les Cintres. This represented Philipponnat’s top single plot of Pinot Noir situated within the Clos des Goisses vineyard. These are some of the finest and oldest parcels (70+ years old) in the vineyard. For Charles Philipponnat, the intention was to show off the best parcels of Pinot Noir in a Burgundian fashion: one varietal, one place, one vintage.  Despite its prestige, Clos des Goisses is not a Grand Cru vineyard and for Charles Philipponnat, the Grand Cru/Premier Cru designation in Champagne is more an outcome of history rather than quality. He believes the classification system is not very precise because it concerns whole villages. He goes on to say: “It actually relates to the grape buyers' preferences before WWI. Whilst it roughly corresponds to the better areas, with chalky subsoils, it is not always very accurate. Mareuil sur Ay is rated 99% not 100% because the large buyers would rather have the grapes brought to their press houses in Ay than go fetch them in Mareuil, back before WWI." Mareuil vineyard owners have filed a request for Mareuil to be recognised a Grand Cru,
but no one wants to shake the lees too much in Champagne. An old local saying goes: “Ay le nom, Mareuil le bon”, meaning “Ay has the name, Mareuil the goodness”. Pierre Philipponnat used to have it printed on his labels and stationery. In the winery Champagne is a highly processed wine and whilst the terroir remains important, precision in the winemaking is essential. For Charles Philipponnat, it’s a sum of details, always keeping in mind quality, age-ability, and truthfulness to the House’s style.  Healthy and ripe fruit, careful pressing, using only the purer first press juices, and proper ageing on the lees are the most important steps. And at all times, avoiding green bitterness, as well as (at least at Philipponnat) the loss of fruit through oxidation. Outside of the vintage expressions of the single vineyard sites, Philipponnat is a strong advocate for the Solera ageing process and use of high proportions of reserve wines. Around one-third of reserve wines is typical in their NV wines adding complexity to the wine. Charles Philipponnat goes on to say that the solera system allows for older elements to develop complexity while keeping the blend fresh and protected from early oxidation. Clos des Goisse “L.V” 1995 The L.V. release of Clos des Goisses is the rarest bottling to come from the vineyard in which only a few hundred bottles are ever released. These are Champagnes that are aged for 25 years unmoved in the Philipponnat cellar and disgorged just six months prior to release. The
wines are only sold directly through “ambassadors” of Philipponnat of which Fine+Rare is proud to be one, with a few magnums reserved for auction sales. The L.V. is an intrinsically exceptional Champagne, a perfect reflection of the unique characteristics of an unparalleled, pure chalk hillside, and Philipponnat’s expertise in crafting wines. What is Port? Port is a fortified wine made in the Douro Valley in Portugal. Traditionally the wines were shipped along the river to Oporto (also known as Porto), from which the wine takes its name. A huge number of grapes are permitted for Port production, however, there are five main varieties used: Touriga Nacional (widely thought to be the best grape for Port, giving its name to Quinta do Noval’s top wine, Nacional), Tinta Barroca, Touriga Franca (or Touriga Francesa), Tinta Roriz (aka Tempranillo) and Tinto Cão. The vineyards sit on steep, terraced slopes alongside the Douro river. Thanks to these vertiginous slopes, much of the vineyard work has to be done by hand, with little mechanization possible. The further inland you go – moving east from Oporto – the hotter and drier the climate becomes. The vineyard area is divided into three key regions: Baixo Corgo: The coolest and wettest region which produces the lightest wines. Cima Corgo: With lower rainfall and higher temperatures, this is the traditional area for the best Port wines. Douro Superior: Particularly dry and hot, this lesser-planted region nevertheless can produce very high-quality wines. For red wines, the grapes are trodden – traditionally by foot, but also now by machine – and fermentation is cut short by the addition of neutral alcohol (called aguardente), thereby leaving residual sugar in the wine. Styles of Port 
There are two main types of Port – those aged in bottle and those aged in cask. Those
aged in cask are designed to be consumed upon release, while those aged in bottle need time to mature.  Ruby: The most basic, entry-level Port is Ruby. The wine tends to be aged in cask or tank for two to three years. Bottled while youthful, it’s bold and full of primary fruit, with a fiery kick from the spirit. No need to decant. Reserve: A step up from ruby, this wine is normally aged a little longer (again in bulk rather than bottle), perhaps being made with higher-quality fruit, so that it has more complexity than a ruby Port. No decanting necessary. LBV: Late Bottled Vintage Port comes from a single year, but spends more time maturing in cask (rather than bottle). Bottled between four and six years after its harvest, the wines are designed to be consumed long before vintage Port, but offer some of the complexity of the
style. Some wines are filtered and others aren’t, so it may or may not need decanting. Crusted: This style takes its name from the crust, or sediment, it throws while in bottle. A blend of several years, the wine is – like LBVs – aged a little longer in cask before bottling,
and likewise is designed to offer some of the complexity of vintage Port. Decanting is essential Vintage: The finest Ports come from a single vintage. This style accounts for a mere 1% of production, with the wines only made in certain years from the very best fruit. Traditionally vintages are either “declared” by producers (and therefore it is a year where they make a vintage Port) or not (with the official declaration classically announced on St George’s Day, a year and a half or so after the harvest). There are, however, a few years with “split declarations” where some producers chose one year, and others chose another for their vintage wines. While once there were only three or so declarations each decade, climate change has seen an increasing number of years producing fruit worthy of vintage wines, and therefore an increasing number of declarations. The wines tend to spend two or three years in wood, but are aged mostly in bottle. These
wines are built to last – having lots of tannin, flavour and alcohol. Spending decades in bottle, they develop extraordinary complexity. Because of the high tannin level, these wines throw a lot of sediment and it is essential to decant them. Single Quinta: These are vintage wines from single “quinta” or estate (while Vintage Ports are often a blend of estates), often produced in years that are not officially declared.  Tawny: Tawny Ports are aged oxidatively in cask, and thereby gradually losing colour to develop a “tawny” colour, while also developing nutty, dried fruit and caramel aromas. The longer it is aged, the more complexity it has. (The most basic examples are a blend of ruby and white Port to create the appearance of a Tawny, but none of the same flavour complexity.) Tawny Reserves have seen minimum seven years in cask, while many come with an age statement – 10, 20, 30 or Over 40 years old – indicating the average age of the blend.  Colheita is a Tawny from a single vintage, spending minimum seven years in cask prior to release (although it is often longer). They are designed to be consumed soon after bottling (a long time in bottle can in fact negatively impact the wine’s quality) and no decanting is
necessary, although you may want to chill the wine lightly. Given their oxidative nature, Tawnies can often last longer once open than their red counterparts.  White: White Port is mainly made with the Gouveio, Malvasia Fina and Viosinho grapes. Youthful examples can make for an excellent aperitif, sometimes served with tonic and lemon as a cocktail, but you can also find rare aged white Ports, carrying an age statement that – as with Tawny Port – is the average age of the blend. Anyone who’s had the misfortune of tasting a de-alcoholised version knows that alcohol is key to wine. Take it away and it leaves a gaping void in the glass – stripping the liquid of body and flavour. Those attempting to craft alcohol-free alternatives look to make up for its absence with sugar or flavourings, but the results don’t come close to the real thing. And of course the very fermentation process is key to complexity – there’s a reason we aren’t collecting single-site examples of even the finest raw grape juice. But alcohol’s a hot topic – and not just because of any health considerations. Trends and shifts in climate have seen the average ABV (alcohol by volume) inch upwards. Indeed, a report last year from Liv-ex suggested the average alcohol level has leapt almost an entire 1% for both California and Bordeaux since the 1990s. While once 14 or 14.5% might have been the purview only of the New World, it’s rapidly become the norm in Bordeaux. Rising temperatures are one element, as indeed is technology and know-how – harvesting cleaner, riper fruit and more efficient winemaking. Then, of course, there’s the fashion factor – the pendulum swing, arguably driven by Robert Parker, for bold, ripe, sweet and inevitably high-alcohol wines. “He loved that weight, that impression of sweetness,” Paul Hobbs tells me. “We jumped on the wagon – but we didn’t know what we were jumping on.” A cult name, Hobbs crafts some of Napa’s highest-scoring and most expensive Cabernets; indeed, Parker named him his Wine Personality of the Year twice. Born in New York State, the Davis-trained winemaker founded his namesake estate in 1991. He’d started his career at Robert Mondavi (arriving in 1977), working at Opus One and Simi before setting up on his own, with a flurry of personal projects and list of consultancies that has grown ever since. He openly admits that he got caught up in “Parkerisation”, crafting big, bold wines – no great surprise given the scores, and sales, that followed for those who did. But he’s been pulling back in recent years, and has never quite fit the cookie-cutout for the cult Cabernet crew. Ever since he first started making his own wines in the 1990s, he’s championed native yeasts (relatively radical at the time), and no fining or filtering. While he embraces oak, he’s always been aware that it’s the quality of fruit in the vineyard, preserved by operating a flawlessly clean winery, that is key to producing fine wine. Make no mistake that Hobbs makes rich, plush wines – and the alcohol levels certainly don’t sit at 12.5% – but for him there is much more to alcohol than one number. “I didn’t give much thought to it in the beginning,” Hobbs says. “And there wasn’t really much reason to.” When he was at Mondavi, the wines tended to sit at 13.5% – but then they started to go up. “There was a time when 16% was normal,” he confesses with some amazement. “Some of these wines were difficult. They didn’t age. They would get tired,” Hobbs says. “But all that took us time to learn – no one had ever been in that domain before.” He notes that there was “a backlash” in the British press against wines that didn’t please the palates of “the Hugh Johnsons, the Jancis Robinsons and Anthony Roses”; a response he clearly feels was a little unjust. “It’s far more complex than a simple number,” he says. “15 isn’t always 15.” And it’s true – alcohol doesn’t feel the same. How many times have you looked at the label of a wine and been surprised – either for better or worse? Alcohol is one element working in tandem with a wine’s body, concentration and flavour complexity – and there’s no easy figure to tell you how it integrates with these other components. But there’s another key reason why the same alcohol level can seem so different: the nature of the alcohol. The main alcohol in wine is ethanol (a molecule with two carbons), however fermentation produces other types of alcohols – specifically superior or higher alcohols. Often known as fusel oils – from a German term “Fusel” which is colloquial for low-quality booze – these alcohols have three to six carbons in their molecular form and are significantly more viscous (hence “oils”).  While ethanol is pure and relatively neutral, these heavier superior alcohols can – in low volumes – bring flavour, texture and interest. “It’s what makes something more than vodka,” Hobbs explains. Hexanols can add herbaceous aromas; 2-phenylethanol gives a rose-like scent. But they’re also associated with headaches and hangovers. In the world of spirits, these fusel oils are what runs out of the still last – forming the “tails” of distillation, which are used to varying degrees depending on the type of spirit being produced. “Alcohol is alcohol? Well, yes and no,” says Hobbs. It's high numbers of these superior alcohols, he believes, that can make one 15% wine feel clumsy and lumbering, while another – with lower fusel oil levels – can carry the same ABV with ease. The production of these superior alcohols depends on many things – yeast strain, temperature, oxygen availability and acidity. In general, red grapes produce more of the compounds (which is partly why spirits tend to use white grapes as their base). But Hobbs thinks it ultimately comes back to the vineyard: he’s started noticing that if berries are heat-damaged, they produce more superior alcohols. “Our goal is to keep these superior alcohols as low as possible – and that’s just about harvesting not sun-damaged fruit,” Hobbs explains. Under the warmth of the Californian sun, it’s common to get sun damage early in the season, but shrivelled berries tend to fall off nascent clusters of their own accord; more concerning is fruit that can be damaged internally and then won’t go through véraison, which needs to be sorted out. Late in the season, Hobbs and his team look to walk through the vines and cut off any “shoulders” (the side cluster at the very top of a bunch of grapes) that have been exposed. With global warming, this is an increasing threat – and an element of climate change that is only now being considered. If grapes are sunburnt or shrivelled, they tend to struggle with fermentation, and the stressed yeasts produce more of the superior alcohols. “The wine is going to be fat and heavy on the palate,” says Hobbs. “You can lower the alcohol by adding water – but it doesn’t change its personality.” If the fruit is in good shape – he says – you simply don’t have that issue, even at 15.5%. And those wines, provided they’ve got the requisite balance, age amazingly. Rajat Parr (star sommelier turned winemaker) and Jasmine Hirsch (of Hirsch Vineyards) founded In Pursuit of Balance (IPOB) in 2011 to champion lighter wines that they felt “weren’t chasing after ratings from wine critics”. These “new California” wines (Jon Bonné published his book The New California Wine in 2013) tended to have lower alcohols and less oak – following the swing of the pendulum back the other way; an anti-Parker effort in many ways. I attended the last London IPOB tasting in 2016, catching the crest of the wave as the movement called it quits – feeling they’d achieved their aim of building the reputation of an alternative California. Paul Hobbs arguably sits at the opposite end of the California wine spectrum (“Should all wines be 13.5%?” he says to me, “Why is that the magic number?”) – but philosophically, they’re surprisingly aligned. It’s not about the number, it’s about the balance – and Hobbs, like any posterchild of the new California movement, will tell you that the secret lies in the vineyard. The challenge is to farm and pick the perfect fruit – to find the sweet spot between flavour, sugar and phenolic ripeness. As Hobbs says to me, “That’s the dance between man and nature.” Forget the maths; this is farming. A note on the numbers Strictly speaking, the alcohol level on any label isn’t exactly what’s in the bottle. For wines sold in the EU and UK (both those made here and imported), producers are given 0.5% leeway – meaning that what’s on the bottle is generally reflective of its contents. In the US and Australia, however, wines sold domestically can differ by as much as 1.5% from the label – meaning a wine labelled as 14% could be anything from 12.5 to 15.5%. The nature of the numbers: Paul Hobbs on alcohol

Ch. Belle-Brise is a rather inconspicuous Bordeaux property with a “garden” vineyard of just two hectares and an annual production of just 800 cases. With such small quantities produced and a legion of loyal followers, the wine is little known outside of an exclusive list of top restaurateurs, a few lucky distributors and their clients. Henri-Bruno is the 20th generation of the de Coincy family, famous for their Armagnac production that dates back an incredible 700 years. Despite this impressive lineage, Henri-Bruno's winemaking skills are a much more recent labour of love. Similarly, Ch. Belle-Brise was late to commercial winemaking – an enterprise started by Henri-Bruno when he bought the property in 1991 – despite producing wine since the 18th century. Ch. Belle-Brise is often compared to the Grand Crus of Burgundy and has been referred to as the "Musigny of Pomerol", such is the elegance and weightless power this wine consistently seems to possess. Theories abound about why this is the case. Perhaps it is Henri-Bruno's  Burgundian wife's influence, or the pre-1956 vines, or small-scale operation? For De Coincy, it is all of the above that makes this little wine of Pomerol so unique. The foundations of Ch. Belle-Brise What is really special about the Belle-Brise vineyard is the age of the vines, more than 100 vines are a staggering 120 years old and the average vine age is around 70 years old.   It is rare to find any Pomerol vines that pre-date 1956, as devastating frosts that year destroyed virtually all the region's vineyards. Many vines planted in Pomerol post-1956 were reliable clones but not as good in terms of wine quality. This is not the case at Belle-Brise, where vines either pre-date 1956 or were propagated from the surviving old vines. Outside of Belle-Brise, there are just a few pre-1956 vines dotted around Pomerol and Saint-Emilion – most noticeably at Ch. Lafleur and Ch. Ausone. Old Cabernet Franc and Merlot vines, De Coincy believes, create an overall elegance, finesse and depth of flavour on the palate that is something really special. The Belle-Brise vineyard contains a split of around 80% Merlot and 20% Cabernet Franc. The soil has gravel on the surface and beneath, a layer of clay, chalk and crasse de fer (iron rich bands of sand that play an important role in the flavour characteristics of many top Pomerol wines). Many believe this is responsible for the truffle aromas commonly found in Pomerol wines. Others believe it provides viticultural benefits, limiting vigour and excessive leaf growth, in turn producing smaller concentrated berries. Natural winemaking at Ch. Belle-Brise Despite being an experienced Brandy producer, De Coincy's project in Pomerol required considerable learning on the job and was faced with a challenging start. His first crop in the 1991 vintage was largely decimated by frost, meaning he had very small quantities to work with and likely not enough to sell. This did, however, mean he was able to experiment with the vintage and trial different approaches. Three very challenging Bordeaux vintages followed as Mother Nature threw everything at De Coincy. It was a steep learning curve. When the more successful 1995 and 1996 vintages arrived, the winemaker was ready to produce Belle-Brise in his style, with confidence. The approach is artisan and natural. There is no electricity on site and everything is made much as it would have been centuries prior. The grapes are grown using biodynamic and organic principles, and De Coincy employs horses to work the vines. The grapes are all harvested within one day allowing pin-point accuracy on picking dates. They are then hand-sorted exclusively by women – something de Coincy is insistent upon. Once picked and sorted, the grapes are then left uncrushed in concrete vats in the winery. De Coincy then closes up the cellar and leaves the grapes for five days, so the natural coolness of the cellar retards the fermentation process. After five days, De Coincy returns to open up the cellar. As the heat of the day enters the cellar, the grapes naturally begin to ferment from natural yeasts. De Coincy tends to pump over the juice twice a day over six to 10 days depending on the vintage and then leaves the wine to settle in-tank prior to the pressing of the skins. This traditional method is not very common in modern winemaking as it can run the risk of contamination. De Coincy, however, believes this method helps extract the delicate aromatics from the wine. After this stage, De Coincy carries out a very slow pressing of the skins using an old manual vertical process, which he believes is another vital element in the process that retains a delicate finesse typically found in Belle-Brise. Many of these methods are not possible in larger estates as they are laborious and manual. The Belle-Brise wines are then matured in large 400-litre barrels (one-third new, one-third one-year-old, one-third two-year-old), eschewing smaller barriques which De Coincy feels has too strong an affectation on the wine. The Ch. Belle-Brise drinking window Ch. Belle-Brise has always been a fairly accessible wine in its youth with its compact but soft tannins already beautifully integrated. For De Coincy, Belle-Brise needs five years maturation in bottle before you can really benefit from the full impact of the wine and then, depending on your tastes, it drinks beautifully over the next decade. De Coincy has often served his wine blind to his restaurateur clients and found it has been mistaken for premium Burgundy. The similarity with Grand Cru Burgundy is difficult to fathom, considering the completely different varieties and different climates, yet Belle-Brise does boast the silkiness, finesse and almost weightless power of Grand Cru Burgundy, with a touch more opulence you expect from Pomerol. Ch. Belle-Brise's rarity With a mere two-hectare walled -garden vineyard, production at Belle-Brise is minuscule, making it one of the rarest wines on today's marketplace. The vast majority of liquid never reaches private clients as it is snapped up by some of France's finest three-Michelin-starred restaurants. In fact, 80% of three-star-Michelin restaurants in France (and 25 other countries) list the wine, including Georges Blanc and Alain Ducasse: Le Louis XV. For up to 499 bottles in storage, the rate is 39¢/bottle per month or a $50 minimum monthly charge (this covers up to 142 bottles). For over 500 bottles, the storage rate is 35¢/bottle per month.

Storage is charged at HKD 40 per 12-bottle case per month. A minimum monthly storage fee of HKD 80 applies, covering up to 24 bottles.

By selecting third-party shipping, you will take full responsibility for all aspects of legal compliance and authorize Vinfolio to transfer the items to the party specified in your instructions. Items shipped via third parties will remain in their original packaging.

Collection times are between 8:30am - 12pm & 1:30pm - 4:30pm, Monday to Friday. Wines at Will Call, that are not picked up within 10 business days, will be transferred to storage and subject to a $1.50 per bottle stocking fee.

Wines sold en primeur will be released from the producer after bottling, typically 18 months after the so-called campaign ends. Upon arrival your wine will be stored at Vinfolio in our temperature-controlled warehouse until you decide to take delivery.

We will source this item at the guaranteed price from our network of suppliers and arrange expedited shipment to FINE+RARE.
 The lead-time depends on many variables, but 2-4 weeks is typical for expedited sourcing.

When a wine is on "pre-arrival", it means that we have a confirmed order on the bottles from our supplier and we are simply waiting for the winery or distributor to ship the wine to us. The delivery timeframe for pre-arrival wines varies significantly, depending on where the wine is coming from. We will notify you once they arrive at our warehouse and, at that point, you can decide to arrange shipping or list them for sale.
