“C’est quoi, traditionnel, aujourd’hui?” Marion Raphet half-jokes as we talk about the 2019 vintage, tasting her family’s bottlings at Domaine Gérard Raphet. Since 2011, it feels like Burgundy’s vignerons have been on a rollercoaster: with hail (2012, 2013, 2014 and 2016), heatwaves (2018, 2012), frost (2016 and 2017 for Chablis) and even the influx of Drosophila suzukii – an Asian fruit fly – after a particularly mild winter (2014). While global warming is nothing new to farmers – in Burgundy or elsewhere, 2019 feels like it marks a shift, with the threat of climate change suddenly all the more tangible. The year was full of extremes, from an unusual hard frost in April to a hot, dry season that really challenged vines – and growers. But in a region where tradition reigns supreme, where the way in which producers farm their vines and make their wines is passed down from generation to generation, evolution is now imperative – and, as Mickaël Haratyk of Domaine Joblot lamented, “Some producers don’t change.”  Harvest dates have gradually been creeping back, and – as Frédéric Weber at Bouchard explained – “It’s more and more difficult to pick a good date.” In 2020, Burgundy saw some of the earliest harvest dates on record – often extremely similar to those of 2003. Joseph Colin pointed out, however, that August harvests aren’t new – in 1553 producers started picking in Meursault on 14th August. He argues that the region has always had periods of warm weather that lasted 20 to 30 years; it’s a cycle. The question, however, is how long the cycle lasts – and whether growers or the vines can make great wine with fruit that is picked on 1st August. Haratyk echoed this sentiment, noting that harvests today are a month earlier than 25 years ago; with that pace of climate change, it’s hard to imagine what things will be like in another 25 years’ time.  The focus for growers used to be on getting enough sugar ripeness, with chaptalisation almost rote in decades of yore, but now it’s about retaining balance in the wines. The decision of when to pick is driven by acidity levels, to retain the essential freshness and elegance that defines fine Burgundy as we know it. At Joblot, there was a time when 11.5% potential alcohol equated to fruit that was ready for picking; now it is naturally never less than 14%. They know they’ll have the necessary sugars and maturity (with phenolic ripeness achieved easily), the challenge is to make sure nature’s generosity is off-set by the requisite acidity. But what else are the region’s vignerons doing to adapt to a new, warmer Burgundy? In the vineyard, producers can look at how they manage between the rows: ploughing is increasingly avoided, as it releases valuable moisture from the soils. The use of cover crops is another consideration; while they can help avoid erosion and preserve top soil on slopes, they also present a rival for precious nutrients and water. Growers can delay pruning, which in turn can delay budburst, helping to limit the impact of frost on the vines. Something that many producers emphasise is the importance of a thicker, taller and leafier canopy. While once vines would have been trimmed neatly, and leaves stripped to allow the sun to reach the grapes and aid ripening, today producers are limiting this work, wanting to shield grapes from the heat and limit their exposure. Charles van Canneyt, for example, still trims his vines, but lets them grow higher than he used to, and doesn’t leaf-strip at all. At Joblot, they work with a thicker canopy these days, and let the lateral shoots – that previously they’d have trimmed – grow freely. However, a thicker canopy brings its own potential problems, as Philippe Jouan noted, explaining that oidium (powdery mildew) is now the biggest issue in the vineyard. A thicker canopy means less airflow, creating a more humid environment within the canopy and therefore disease pressure. Many producers believe that mature vines are key – their deeper root systems able to reach water reserves, and with age are thought to gain a natural stability, enabling them to withstand more extreme temperatures. Marion Raphet (Domaine Gérard Raphet) explained how her old vines were so much more resistant to the rising temperatures; noting that even in a year as hot as 2020, the old vines were still green when we visited in mid-October. But some producers have seen old vines struggle in the dry conditions of 2019 and 2020. Benoît Stelhy at Georges Lignier, a proud proponent of permanent grass grown between his vines, saw his old vines seriously impacted by water stress, with the resulting yields so unviably low that they have made him seriously question the way he is working. He is now wondering if perhaps having intra-row grass cover is more important in young vineyards, where their natural vigour needs to be countered by competition. In the winery, there are plenty of benefits to the riper fruit: there’s no need for chaptalisation, and it is in general easier to extract colour, tannin and flavour. However, that same ripeness and the associated lower acidity levels, can pose problems. As Chantal Tortochot explained this year, above 13% alcohol, natural yeasts can struggle – meaning that we may see more commercial yeast (which can guarantee wines ferment to dryness) in use.  The higher pH of these musts also increases the risks of bacterial spoilage, hence producers need to be particularly careful handling them – with hygiene, temperature control and/or the careful use of sulphur of increasing importance. Benoît Stelhy described how he is trying to recreate the cold of yesteryear’s winters; he cools his wines before putting them into barrel, therefore delaying the onset of malolactic fermentation (as the region’s cool temperatures would naturally have done after an October harvest). By doing so, he can avoid adding sulphites at this stage, feeling the wines can therefore benefit more from micro-oxygenation in barrel, before malolactic fermentation takes place when the wines naturally warm up in the spring. But these measures will only work in the short-term; as the region warms further, producers need to start looking further ahead. Re-planting vineyards with rootstocks better suited to today’s climate is likely to be necessary (not to mention considering other issues posed by current rootstock selections). “The vines that are in their prime today,” William Kelley explains, “were planted with a view to early ripening in a marginal climate; in much warmer conditions, the choices of rootstock and vine genetics made in the 1970s, 1980s and 1990s – even by producers aspiring to high quality – are close to the opposite of what’s required today.” Such a shift, of course, takes time – with the need to leave vineyards fallow between re-planting for several years, and a minimum three-year wait for vines to produce fruit, or longer for fruit of serious quality. Experimental plantings of Syrah and Malbec in the region feel a little ahead of the curve, but there will certainly be a need to adapt clonal selections. The rise in the popularity of Aligoté – frost-resistant, early-ripening and high-acid – is no coincidence, and some suggest that it could be a solution for retaining freshness in the region’s whites. Small percentages of Aligoté and Pinot Blanc were once planted amongst the Chardonnay in even the grandest of Crus, and it’s something William Kelley would like to see make a comeback, feeling it “would help white Burgundies retain the tension and acidity we prize so highly”. As the mercury rises, we’re already seeing a shift in the sites that thrive. Until now, many of the sites considered the “best” are mid-slope with good exposure and drainage, basking in the sun, often with relatively little topsoil; increasingly this simply isn’t what is needed in the climate. “The big winners are places such as the Hautes-Côtes,” Kelley explains, “which are today enjoying a climate that’s very similar to what the Côte de Beaune and Côte de Nuits experienced in the 1990s.” Gros Frère & Soeur has even planted a plot of Pinot Noir at the very top of the Côte, beyond the limits of the Burgundy appellation, at altitudes that would once have been impossible.  Plots that were once unviable now are, and sites previously deemed “lesser” for their cool, marginal temperatures are being favoured. Similarly, sites with deeper, more clay-rich soils, with greater waterholding capacity, are becoming more desirable with drier conditions. As Benoît Stelhy noted in 2019 and 2020, Clos Saint-Denis with its poor soils struggled more than, say, Clos de la Roche. Alvina Pernot noted that two of her parcels either on the edge of or in the middle of forested areas (Meursault Premier Cru La Pièce sous le Bois and Puligny-Montrachet Premier Cru Clos de la Garenne) are shielded from the sun, preserving acidity and freshness in the wines. The long-term viability of some sites, however, is hanging in the balance. Producers are increasingly aware of the threat that climate change poses. As Charles van Canneyt explained, at the moment they are only seeing the benefits – with riper fruit and more concentrated musts – but they’ll need to learn how to handle, and battle, the negatives too. While the future might be uncertain, producers are slowly but surely adapting. As Benoît Stelhy noted when discussing the benefits of organics, it’ll do for now – but does it give an answer for tomorrow? “We have to go further,” he said, a sense of urgency in his voice. It’s a call to arms, and one that producers will have to follow. For now at least, the wines are arguably better than ever; let’s hope that will long be the case. We were fortunate to have a one-to-one tasting with Jean-Charles Cazes, the managing director of Chateau Lynch-Bages, Chateau Haut-Batailley and Chateau Ormes de Pez. Not only did we have the opportunity to taste the fantastic range of 2019 wines from the estates, but we were also given the opportunity to dig a little deeper into what makes Lynch-Bages such a special and unique wine in Pauillac. Ch. Lynch-Bages's recipe for success Whilst there is plenty of talk in Bordeaux these days about restraining the extraction of tannin  during vinification and for many Chateaux this has been to their benefit, it was also comforting to hear Jean-Charles talk with tenacity about how a high level of extraction remains a huge part of the recipe for Chateau Lynch-Bages and today remains a key factor in the wine’s signature structure and its consequent ageing ability.  There is confidence in this method and the levels of extraction the estate can go to, whilst retaining balance in the wines is impressive. It is no doubt thanks to the distinct gravel terroir in Pauillac, which seems particularly present at Lynch-Bages, where the magical union between Cabernet Sauvignon and gravel soils seem to exude possibly more than anywhere else. It is clear that in the past, the Chateaux that lack that special terroir but have copied the approach and style have ended up with over-extracted wines and a loss of character and freshness. Whether it is the trend in the reduction of extraction, better technology for the handling of tannins or a better understanding of individual terroirs and their varying abilities to absorb tannin whilst remaining balanced, high levels of extraction is on the decrease in the Medoc. But thankfully Lynch-Bages has not swayed to the fashion, knowing that their terroir is built for such a purpose. 

The 2019 is a stunning wine and Lynch Bages does seem to flourish in a warm vintage. Asked where the suppleness comes from in the 2019, Jean-Charles states "rather than any restriction on extraction, it is more to do with the glycerol-rich quality of the Merlot in 2019 that adds wonderful flesh to the distinct Cabernet Sauvignon structural profile. It is this warmth of the vintage that brings suppleness to the wine as the freshness exudes from the
union of graphite minerality and mouthwatering Cabernet tannins." The 2019 vintage Whilst it was a warm vintage in 2019, Jean-Charles states that "the winter of 2018-2019 was very wet and with high humidity periods both in April and June which provided a huge amount of water reserves that meant the vines suffered no vine stress despite what was to be a very hot, dry summer. Temperatures at times were similar to those seen in 2003 but whereas then the vines completely shut down, in 2019 they remained active and pushed on through, reaching a beautiful phenolic ripeness in the tannins." The Echo de Lynch-Bages is also easily the best example I can remember tasting and for Jean-Charles the quality of the second wine is a great indication of the overall quality of the vintage.  He states "whilst the Echo has distinct vineyards closer to the river with more clay in the soil, how the grapes behaved in these lesser sites is quite remarkable." The IPT (tannin levels) between the two wines are different with Echo at 78 IPT and Lynch-Bages at 91 IPT. While technically Echo is therefore less structured, Jean-Charles explains that "the tannins tend to be slightly grippier in the Echo and with the general refinement of the tannins being a signature of the 2019 vintage, it has produced a very serious second wine." The Lynch-Bages specially cultivated yeast Vinifications at Chateau Lynch-Bages are quite particular in that since 2013 the property has cultivated their own indigenous yeast that originates from their vineyard. They worked with the University of Bordeaux experimenting with the yeast strains until they found the perfect formula.  Using indigenous yeasts these days in Bordeaux is fairly rare due to the  potential risk of bacterial spoilage as alcohol levels have risen, but for Lynch, with their own cultivated yeast they have found what is essentially a compromise between the two, an incredibly
reliable fermentation, even in warmer vintages, whilst the indigenous yeast adds a distinct character and complexity to the Lynch-Bages flavour profile. Pioneers of Pauillac The reputation of Chateau Lynch-Bages as an over-achieving Fifth Growth was initially built up by Jean-Charles’ great-grandfather (his namesake) who was a real pioneer in Bordeaux during the 1950s and 1960s. Jean-Charles describes him as a real risk-taker. He was the first winemaker in Bordeaux at that time to take the risk of picking later.  Jean-Charles explains "in those days most producers in the Medoc were too nervous of autumn rains to hold out", the result harvesting grapes with unripe, green tannins, that required years to soften. Alongside Jean Bouteiller of Chateau Pichon Baron and Edouard Gasqueton of Chateau Calon Ségur, Jean-Charles believes  "they single-handedly steered Bordeaux towards a richer, riper style."  The wines of Lynch-Bages became recognised for their opulent, fruity style. But this was not without forfeit. The family used to joke about his risk-taking. In 1964 with the onset of rain he refused to pick, preferring to wait until the bad weather passed, but it just rained and rained and the vintage was ruined. But it was the great vintages of 1953, 1955, 1959  and 1961 along with the lesser vintages of 1952 and 1957 that built the reputation for Chateau Lynch Bages, producing some of the finest wines of the vintage.  Jean-Charles was in fact the first Cazes to own Chateau Lynch-Bages - taking a huge gamble in buying the property. He was initially a lowly baker in the town of Pauillac and he bought the estate in the 1930s during the Great Depression, seeing an opportunity during the economic turmoil. He managed to accrue the money to secure the estate. With very little capital he had to sell every single bottle he produced, and this continued when his son Andre took over and is the reason why Lynch Bages has such a small back catalogue of vintages at the estate.  But the quality of the wines was evident even back in the early days.  During the 1950s and 1960s Alexis Lichine (then owner of Chateau Prieuré-Lichine) used to hold blind tastings with the trade in Bordeaux – typically made up of negociants, courtiers and merchants. In these tastings, Chateau Lynch-Bages famously performed well.  Jean-Charles talks fondly about how his great-grandfather would carry Alexis Lichine’s little book of blind-tasting results with him everywhere he went and used this to build up the reputation of the Chateau to merchants around the world. It seems Chateau Lynch-Bages has been over-achieving ever since and if the 2019 is anything to go by it continues to produce some of the best wines in the Medoc whilst retaining such a strong Pauillac quality. The recent purchase of Chateau Haut-Batailley Jean-Charles carried on in his ancestors’ risk-taking footsteps when he purchased Chateau Haut-Batailley in 2017 - a gamble that just a few years later seems to be paying off. The site is positioned in some of the finest terroir in Pauillac, neighbouring the vineyards of Chateau Latour, Chateau Pichon Lalande and Chateau Grand Puy Lacoste. Bordering Saint Julien the wine is much less structured than Lynch-Bages but more seductive and elegant. 2019 is undoubtedly the top wine they have made at the estate. 
 With Cabernet Sauvignon performing so well in 2019 they were able to put more than ever before in the blend, producing real clarity on the fruit and a real flair and energy on the finish. The wine is very different in style to Chateau Lynch-Bages, more of a cross between the seductive elements of Saint Julien and the graphite minerality of Pauillac. Both the second wine Verso and Chateau Haut-Batailley are fantastic additions to the Cazes portfolio.  Their third Chateau in the Medoc – Chateau Ormes de Pez in Saint Estephe, is arguably one of the best value wines in Bordeaux producing fantastic consistency in recent vintages and adept at handling the different tannin profiles you find in Saint Estephe. The wine is juicy, fleshy and more open-knit than the Pauillac wines but has a wonderful power and seriousness despite its roundedness. The quality and purity of the fruit typical of 2019 is also outstanding at Chateau Ormes de Pez. All three properties come highly recommended. Tasting notes Chateau Lynch-Bages 2019, Pauillac Gorgeous dense, focused aromas -dark black fruit both fresh and ripe, scented tea leaf, clove, vanilla, chocolate, tobacco, graphite. Stacked fine, close-knit tannins provide impressive detail, density and intensity on the palate. There is fantastic energy in this wine, pulsing as a
glycerol-rich fleshy concentration of fruit washes over a stony minerality. There is finesse and power and so much minerality. Stunning wine. 
Echo de Lynch-Bages 2019, Pauillac Lovely lifted tones to the wine - open dark berry fruit, sweet leather and scented clove as well as distinct graphite minerality and pencil lead. Succulent palate, juicy, fleshy glycerol rich and then the tannins start to define structure underneath a generous fruited full body. Integrated,
balanced power. Very clean, there is elegance and power and a lovely energy to the wine. Very impressive for a second wine. Click here to buy. 
Chateau Haut-Batailley 2019, Pauillac Inky purple colour, Brooding dark / black fruit aromas. High-quality oak tones of scented clove, scented tea leaf and dark chocolate. Deep, beautifully ripe, delineated black fruit - cassis, blackberry, plum - puckering but refined, structural tannins. Earthy, savoury tones on the finish. The sustain on the finish and the energetic lift add complexity to the wine. Excellent. Click here to buy. 
Verso 2019 (Second Wine of Chateau Haut Batailley), Pauillac Dry spice, brooding nose. Soft, juicy blackberry coulis fruit - fleshy and generous. But there is also detail on the palate, the tannins have structure and layers. It doesn't have the refinement of tannins that the Haut-Batailley has but it's still serious. Refreshing acid and mineral freshness offset the generous fruit. Definitely over-achieving in 2019. 
Chateau Ormes de Pez 2019, Saint Estephe Juicy, open-knit fruit with distinct savoury saddle leather and violet St Estephe tones. Juicy, opulent, generous fruit with lovely mid-palate weight and concentration. Tannins are sinewy but beautifully integrated, and textural giving lovely framework and depth to the palate. Interview with Jean-Charles Cazes of Chateau Lynch-Bages

Much has been written about Promontory. The property was discovered by Bill Harlan in the 1980s, hidden behind a ridgeline in Oakville, and its story – one that almost feels mythical – has been told many times (including by us).   Those stories, however, don’t prepare you for standing in this vineyard. “The territory”, as the team refers to the estate itself, is totally hidden from view – a good 10-minute drive from the winery (which looks out over the Harlan Estate vineyards), tucked to the south, over the hills from Dominus, found via a warren of dirt-tracks that cut through the forest, until – suddenly – you’re there.  Perched at the top of just one of the various parcels of vines, Cory Empting (Managing Director of Winegrowing) stops the truck as our jaws drop. We scramble to get out, blinking in the peaceful sunshine that beats down on an enchanting, untamed idyll. “There’s a quality to the silence out here,” Empting says – breaking the quiet that we’ve been soaking in. As the crow flies, Promontory isn’t far from Harlan Estate – yet the difference is, in Empting’s words, “kinda scary”. Fault lines make for a unique mix of soil types – sedimentary, volcanic and, most importantly and rare for Napa, metamorphic. Plots of vines are sparsely scattered across the wild, forested mountains, the undulating, varied slopes offering an almost endless range of aspect and microclimate. (As one alum told me, laughing, “It’s beautiful – but a total b**** to farm.”) The elevation is higher than at Harlan Estate – with the lowest point at Promontory the equivalent altitude of the highest point at its sibling property – making it generally cooler. Harlan Estate is manicured, while Promontory has a rawness about it – a sense that it isn’t, and never will be, totally domesticated. It's taken a long time to get here. Bill Harlan’s quest to create a Californian rival to Bordeaux’s First Growths (started in the 1970s) had kept him hunting for land, enough that would allow him to produce the same volume as the Left Bank’s most grandiose addresses. He bought his first 40 acres in 1984, the founding stone for Harlan Estate, and has continued tracking down special vineyards ever since, first for Harlan, then BOND and Promontory.  Although he’d first identified the location for Promontory in the 1980s (while hiking through this part of the valley), the property was developed by Girard Winery in the meantime, and he didn’t have the chance to buy it until 2008. Bill got a call that it was going on the market – and that’s when he rang up Will (his son, now Managing Director for the Harlan family of wineries) and Empting. “Then the economy started tanking,” Empting says – and suddenly the property that had been a stretch became increasingly affordable as its price dropped. The decision to buy was easy. But there was no reference point for the project, no historic bottlings to judge against, just a feeling about the place, and its potential.  “It was the wild west when we got out here,” Empting explains. The vineyard was in terrible shape – trees had been cut down and left where they fell. There were weeds growing taller than the vines. It had been left to become truly feral. There were even end-posts suggesting a row of Pinot Noir that was clearly Cabernet Sauvignon, while there were Cabernet Sauvignon clones that looked like nothing they’d seen before.  They committed to farming the site for three years before changing anything, so they knew what they were dealing with. But it soon became clear that the soils had been destroyed, robbed of organic matter, the vines emaciated, producing truncated shoots.  To date, they have replanted half of the 80 acres of vines. And the redevelopment work has been substantive, including un-doing terracing. They worked with superstar consultant agronomists Claude and Lydia Bourguignon (the first in the US to do so) to help regenerate the soils. But the philosophy here is ultimately Fukuoka-inspired: “How can we do one thing less? … That’s our church,” says Empting.  Fifteen acres have been replanted, rather unconventionally for Cabernet Sauvignon, untrellised – goblet-trained. This is partly because the metamorphic rock is so fractal that a unified hedge just didn’t make sense. Air flows in all directions, the sun hits each vine differently, they’re resilient for dry-farming and it allows the team to pick and move in any direction in the vineyard. Even more unusually, they’re planting rootstocks by themselves, grafting only once they’re three or four years old – when deemed ready. “I’m a Montessori parent,” Empting jokes, referencing what he describes as his “mixed pace” vineyards, letting each vine develop at its own rate. And this sense of responding to and working with, rather than against, the vines is key.  In a move that’s incredibly rare for hillside or mountain sites in Napa, their goal is to dry-farm. While the inspiration might have been wine quality (looking for more concentrated, balanced fruit), it is now ultimately about long-term survival in a changing climate. “We’re not going to have the water,” Empting says frankly. Convention suggests that each vine in the ground acts like a straw, sucking water from the soils. But, as Promontory have proven through experiments, it is not that simple – relating to the number of leaves on the vine, as well as its age, among other things. In fact, they have found that higher density plantings are easier to dry-farm.  To help avoid irrigation, they focus on respecting the vine energy – that means they don’t hedge or leaf-pull, and will only green harvest if they absolutely must (when nature throws them a curveball) – pruning to what they want the vine to grow, avoiding wasting any inch of the plant’s efforts. The resulting clusters are tiny, with yields reaching a maximum 38hl/ha, but often a mere 20hl/ha.   Cover crops and permanent grass cover, as well as grazing, have been key to repairing the soils. They’re still having to use a little bit of compost in some areas, Empting confesses almost guiltily – something he considers “a sign of imbalance”. Animals are a key part of “holistic farming”, Empting says, and he’d love to have chickens in the vineyards – “If the coyotes didn’t see them as a free meal,” he jokes. They’ll bring sheep in to graze early in the season, so that the cover crop has time to grow back. The regrowth can then be trampled naturally by the vineyard team as they work – operating as a rustic form of crimping or rolling. This aids water retention, the natural layer of “thatch” keeping the soils cool and preventing evaporation. If it’s not already clear, this isn’t a standard vineyard or estate – or, more accurately, family of estates. This is all part of Bill Harlan’s original vision, a 200-year plan to create a wine dynasty to match those of the Old World. The level of detail, effort and expense that goes into BOND, Harlan and Promontory is remarkable. They have a team dedicated to Research & Development – ensuring that they are at the forefront of viticulture and vinification, pushing any and every boundary in the name of quality.  One key element of this is their Vine Masters program – elevating what might historically have been seen as blue collar work to the skilled profession it really is.  The large majority of vineyard workers in California are of Mexican origin (some statistics suggest as high as 95%). There’s reason for this, with a long history of seasonal-working that stretches back to 1917, yet there’s often a division between vineyard and winery – a division that the family is working hard to broach.  The Vine Master program was first introduced at Harlan. The principle is not alien – a “Vine Master” is dedicated to a specific block, giving a sense of ownership, yet also meaning they know that block inside out. But – and this is what sets Harlan apart – to earn that responsibility (and it is a significant responsibility when the wine sells for upwards of £800 a bottle), the Vine Master has to go through a modular education program (developed in-house), passing both theory and practical exams. The Vine Masters can then take ownership for a block, and have the freedom to do what is required for their plot of vines. In what feels distinctly Californian and ever-so-slightly hippy-inspired, they’re also encouraged to, for example, hike through the surrounding hills, helping them think laterally.  Empting explains how one of the Vine Masters was sitting in his block on a break, looking up at a tree, and realised that trees naturally find their balance by dividing the diameter of their trunk fairly at each divide – only if there is sufficient girth will it split. He took this concept and pruned his block accordingly, only leaving multiple shoots where the vine could handle it. In the dry 2020 vintage, his vines were the only ones that reached the top wire (of the trellis), with the others all struggling. His methodology was rapidly implemented throughout the vineyard. The vineyard supervisor is more like a coach than a manager, and the vineyard work is more integrated with the final product. For example, the pruning process starts with tasting the wine from the previous vintage, so they can align on the energy of the vines and any challenges, before taking their shears to the vine. “You can’t prune a vine without thinking what it tastes like,” Empting says – yet that is what many vineyard workers will have to do.  This responsibility isn’t something that everyone wants – but skilled labour is, along with water, key to the future in California.  Empting expects the valley floor to be entirely mechanised in the imminent future – and if that’s the case, the question is: “How are you going to retain the talent that you have – and gain more?” he says. While originally they didn’t want to give each Vine Master too much land, they’ve found they work almost 40% faster than a crew – able to work more efficiently, doing what is needed when it’s needed, saving on the transition time within plots.  There’s been a constant evolution in the winery as well, inevitable as they learn more about this remarkable place, and realise the potential of its terroir. The challenge is to tame the significant phenolics – and the shift here fits with that familiar pendulum swing, with a move towards elegance. As with the vineyard, the goal is to do less not more – something that isn’t always easy. “We wait all year to turn grapes into wine,” Empting explains – the excitement sometimes becoming overzealous.  While soil health was, as Empting describes it, “the first hurdle”, David Cilli (Winemaker at Promontory) had been doing much in the winery, gradually dialling in the extraction, with shorter macerations and cooler temperatures (with a maximum of just 26˚C), halving the number of pump-overs. The wine is now mainly fermented in concrete (all with indigenous yeast) and aged in Stockinger foudre – ranging in size from 10 to 60 hectolitres – for 30-36 months.  When they first made the wine, they thought that they’d want and need to separate out the different blocks – since they had such varied profiles. They decided they were willing to sacrifice as much volume as was needed to make the best wine possible for the first vintage, and set about making various micro-blends, as well as one that included everything. The whole was so much more – its harmony so much more appealing. “They need each other, in a weird way,” Empting explains.   Until now, the wine has been made exclusively with the old vines, those that were planted when they arrived, with the new vines not yet mature enough (the young-vine fruit has instead been used for The Mascot). The 2022 will be the first vintage to include some of their earliest replants, which are now 10 years old.  While shifts here have mainly been gradual, 2020 was a significant moment. The first wildfire took hold on 18th August, although it was across the valley – far enough away for there to be no urgent threat, but the team was (especially with 2017’s fires fresh in their memory) on edge. Empting recalls spending time driving up and down the valley watching what was happening. They grouped together and decided to start picking on 22nd August – a good two weeks earlier than normal. They weren’t certain it was the right decision, but also weren’t prepared to risk everything to wait. Two weeks after they finished, the Glass Fire swept through the valley. Anyone that hadn’t picked was at significant risk of smoke taint.  Nature might have forced their hand, but it was a push they needed. The resulting wine stunned them all. It’s a world away from the high-octane reds that Robert Parker favoured – and any Napa stereotype. This is a bright, pure and elegant expression of site that sits at around 13%. And while the team’s fear was that it might not have the tannic depth of a true “Grand Cru” – a wine destined to be cellared – that is simply not the case.  They realised they didn’t need those extra two weeks on the vine for phenolic ripeness. The dry growing season had meant the vine only had a small crop to ripen, helping them out, but the year totally shifted their perspective. In 2021, they picked on the same date. In 2022 – a noticeably hot and dry year – they picked even earlier.  Tasting the 2020 alongside the 2016, ’17 and ’18, the difference is drastic – although the progression is there in the earlier vintages. It marks a sea-change for the estate – one that may divide pundits. But the 2020 matches their vision of this place: while they think of Harlan as a wine of gravity, Promontory is a wine of “lift”.  The Harlan family’s wines don’t come cheap – but you aren’t just paying for good wine (and it is, undoubtedly, very good). Yes, it’s a smart winery, with the very best equipment. But the money isn’t going on new barrels and expensive consultants each year, it’s being invested in the people, place and practices that guarantee its legacy. The 2018 has only just been released, so the 2020 won’t hit the market until 2025. But like anything these visionaries do, it will be worth waiting for. Tasting Promontory 2016 Promontory Will Harlan describes the 2016 vintage as one of the first wines that they felt allowed them to compete on a global stage. Still incredibly youthful, it’s somehow almost approachable yet has significant structure behind. There’s a plush richness to the fruit, a firmness and depth to the tannins that needs time, yet a vibrancy too. It’s just starting to become more supple, yet the phenolics grip onto the finish, drying it out very slightly. The fruit is starting to mellow, mingling with savoury tones. Significantly more weight than the other vintages. 2017 Promontory Deeper and darker, the 2017 shows an intensity and firmness – its framework almost aggressive after the 2016. The structure is boxy, yet also refined, and starting to meld together with the bright, fresh fruit. With air the wine shifts from black to red fruit, relaxing into itself. Fruit reverberates on the mouth-watering finish. 2018 Promontory The 2018 confirms the direction of change. Although on paper the wine looks similar to 2016 (in terms of analytics), this is significantly different – offering a transparency and vibrancy. Empting describes it as “athletic” – a fitting way to describe a wine that feels lithe. The fruit sits on the red spectrum, with super-fine velvet tannins forming a chiselled, linear structure. There’s a lift and florality to the nose, complementing the long, pure palate. 2020 Promontory This is a wine of amazing precision and perfume. A pivotal vintage for the estate, picked two weeks earlier than normal and before fires swept through the valley, it’s a stunning wine. Extraction was gentler and the alcohol is around 13%. It’s a wine of brightness and texture – a fine, chalky, powdered grip of tannins that complements the seamless fruit. The nose shifts with florals and earthier minerality, a savoury, saline edge to the crunchy fruit and juicy acidity. There’s purity and delicacy, with a finesse that is truly remarkable.
