The growing season in 2019, as is becoming the norm these days, started with a warm February and March, leading to an early budbreak at the beginning of April. An early budbreak leads to a nail-biting spring for the vignerons, where the window for frost damage is only extended. Fortunately, there were only a couple of occasions where temperatures dropped to dangerous levels, with most Chablis producers today well equipped either with smudge pots, electrical heating wires or water sprays to offset the frost damage.  At Long-Depaquit they lost just 5%, which was not a concern. Samuel Billaud notes that the frost was much more dangerous on the lower slopes of Chablis where damage was higher than the 1er Cru and Grand Cru sites which were largely undamaged. For Olivier Bailly, winemaker at Domaine Billaud Simon, it was not simply the direct damage of the frosts (particularly on the night of 14th April) but the resultant stress on the vine following the outbreak that saw yields further affected. However, the real issue in regard to yields, came down to flowering rather than frost, with a windy, rainy, wet period during May which meant yields were notably affected. This period led to a lot of heterogeneity in the bunches and also noticeable millerandage (which results in very small berries): this does not affect quality but markedly lowers yield. Unlike 2018, therefore, 2019 is a low-crop vintage with producers’ yields ranging from 20 to 40% below normal. Despite the poor flowering, the rest of the growing season was straightforward, with very little rain and plenty of sunshine, which meant excellent sanitary conditions in the vineyard with no rot at all and very little sorting required at picking. There were two short heatwaves, one at the end of June and another at the end of July, which did cause sunburn damage to exposed grapes but other than that, no sorting was required. Regarding temperatures and rainfall, it was similar to 2018 with average rainfalls down 50% on average. Temperatures were also a full 2.2 degrees above average during the growing season, which is quite extraordinary. When comparing the similar effects of drought and sunshine in the 2018 vintage, vignerons talked about how the high yields helped dilute the intensity of the sun. With half the crop, how did the grapes survive in 2019? Was this to be a low-acid vintage with abnormal tropical fruit tones like 2015 or 2003? Matthieu Mangenot, winemaker at Domaine Long-Depaquit, describes how something quite unusual happened. In the later part of the growing season, the grapes concentrated – with water in the berries evaporating from the skins. This increased sugar levels and therefore alcohol (typically to 13.4 to 13.8%, which is high for Chablis, but it concentrated the acid levels too. Despite the drought and heat, the acid levels sit close to great vintages such as 2008, 2014 and 2018, with a pH of 3.25 to 3.3 after malolactic fermentation. Olivier Bailly at Domaine Billaud Simon had even higher acidity levels (between 3.10 - 3.25 pH), stating, “It is the magic of Chablis to find Chardonnay retaining such acidity, despite the warm weather”.  The result is, as Mangenot told us, “undoubtedly a ripe, concentrated, powerful vintage, but with a freshness too, at the same time retaining real Chablis mineral typicity. It is a hot, warm vintage but it does not really behave like that in the glass.” The fruit ripeness is similar to ’15 – but there are no excess aromatics of over-ripeness or yellowness in the wine that is typical of the low-acid vintages like ’05 and ’06. The acid profile is much more like ’17, and very much still retaining a sense of place, avoiding the tropical fruit aromas of 2015. Samuel Billaud describes 2019 as “highly concentrated Chablis with sun-kissed aromatics – it is concentrated, with balanced structure and excellent minerality. It is a ‘gourmand’ [moreish] vintage, yet with tense, structural minerality.”  Our own impressions is there is no doubt a concentration and aromatic pungency to the wines, yet the nose retains the Chablis-esque chalky minerality and savoury dried-straw tone, as well as lifted floral aromatics. There is noticeable power, weight and warmth to the palate even on the Premiers Crus, with the top examples retaining mouth-watering acidity despite this opulence and concentration. They really have a wonderful combination of intensity and power, while retaining mineral typicity. Producers such as Samuel Billaud still has a majority of his 2019s undergoing élevage, with the Grands Crus left another six months in tank before being bottled. Despite them being babies the wines are already showing a lot of promise. Billaud compares his 2019s to the 2016s in terms of riper aromatics, but with much more concentration and minerality. It also has similarities to the 2017 vintage when it comes to structure and minerality, he says.  For Mangenot, the power and concentration allied with vibrant acidity and minerality makes this vintage hard to compare, “It doesn’t really taste like any other,” he says, “but for Chablis-lovers, it makes it a fascinating vintage to discover.” Read more Editorial

Historically peat was used as a fuel source. In recent history, it has been a source of great fervour and one-upmanship as whisky producers clambered to create the peatiest whisky on the market.  For the most part, this narrative and competition has played out on the remote and beguiling Hebridean isle of Islay and its nine malt distilleries. One even deciding the prefix “super” was required on the label because “heavily-peated” was no longer sufficient. But this could all be about to change as Seattle-based Westland Distillery finetunes an industry first: locally-peated American single malt whiskey.   “We are not trying to make it taste like Islay,” Co-Founder and Managing Director Matthew Hofmann says. “We want Solum to exhibit its own terroir and its own flavour influence so long as it tastes good.”   In the 10 years since it was founded, Westland has sought to challenge every stage of whisk(e)y-making convention from barley, casks and now peat. For the past five years the team has been encountering setbacks while they navigated the uncharted territory of producing peated malt in the United States. The first was the discovery that a peat malting company didn’t exist in America, despite Washington State boasting 50,000 acres of peat.   While Hofmann worked on options closer to home, Westland turned to the historic Glasgow-based malt producer Baird’s. But he knew he had struck on something and eventually started working with a start-up malting company, Skagit Valley Malting, to produce what the company believes is the first commercially produced batch of peated malts in America.   Pioneering a locally-peated whiskey created all sorts of headaches – or as Hofmann calls them “interesting challenges” – for the team. In one of the first blind tastings, peat flavour notes were entirely absent.   “When you are trying something new like this, there is an inherent amount of risk,” Hofmann says. “It’s very much an ongoing process and we are far from being finished. It’s more accurate to say we have barely begun on this project.”   Westland uses approximately two cubic yards of peat from a local 30-acre bog which equates to a month’s production and roughly 100 casks of whiskey a year. Whereas others typically cut and drain peat – which has a negative impact on carbon dioxide and methane release, and damages the ecology of the area – Westland uses a different process with a backhoe which keeps the bog intact apart from the small amount of peat they use.   “The stuff we have got out here is wild,” Hofmann says with unfettered excitement. “There’s 11 different species of stagnant mosses. There’s wild cranberries. There’s wild crab-apples. There’s a lot more woody materials – cedar – that end up making it into the bog itself because the area is still heavily wooded as well. So, the result on the peat and aroma is very different.”   Hofmann said Westland will release Solum – Latin for “soil” – in winter 2023 but admits he doesn’t know what the product will taste like yet. He says there is a Mezcal profile at this stage, with vegetal smokiness and spice, but cask impact factors are currently unknown.   “This has been one of the most difficult things we have worked on here at Westland,” he says. “Which is saying something because we have a habit of diving headfirst into things we know very little about.”  One of the main challenges, Hofmann says, is the lack of industry and by extension experts in the country. “Nobody understands the impact of peat and how to use it,” he explains. “That can be quite interesting because when you’re learning it from scratch and you have zero base line knowledge, you tend to approach things in a different way.”   This has led to further innovation in production with engineers at the helm of the project and meant sustainability has been high on the agenda in the notoriously eco-cognisant region.   “We don’t quite know yet what the path is with Solum,” he adds. “Is it going to be about the different areas of the bog and peat flavours you might get from that – kind of like Colere is with barley? Or is it going to be about a general Washington State peat flavour?”  The exact destination may be unknown, but it’s guaranteed to be an entirely new take on a very old tradition.   Browse all current whisky listings or read more Editorial

It will likely come as no surprise that our team entered en primeur week this year with a certain degree of trepidation. Ever since the 2023 growing season ended, the general press surrounding the vintage has largely focussed on the negative; absorbed with the struggles faced by the vignerons rather than the highlights. Bordeaux-bashing is a facile yet favourite pastime for some, and this has led to some collectors and even merchants pre-emptively dismissing the vintage out of hand – before the wines have even been tasted. The Bordeaux marketing machine, it must be said, should take its share of culpability for this attitude. Too often the hype surrounding solar vintages, with phrases such as “best ever” practically shouted from the rooftops, leaves both the press and collectors thinking that anything less than a string of superlatives means the new vintage is a dud. There is no room for middle ground or a happy medium. Enter 2023. We started our week in Saint-Estèphe – historically a tough place to make truly great wine in any but the most relaxed growing season. Starting with Calon Ségur, making our way through the range, culminating with the Grand Vin, it gradually dawned on us that these wines aren’t just good, aren’t just classic; they’re something else entirely. Our next visit, at Montrose, cemented this. It is certainly one of the vintage’s highlights and confirmed beyond any doubt that it was absolutely possible to make exceptional wine in 2023. Our full vintage report, due next week, will cover the ins and outs in more detail, but suffice to say that through our tastings across the Left Bank we found plenty to get excited about. A vintage in which Cabernet Sauvignon took the fore (at many châteaux it represents the highest ever proportion of the final blend), fans of Pauillac, Margaux, Saint-Julien et alia will find a great deal to like in the classical freshness of dark-berry fruit, spice, graphite and cedar aromas. In the best wines, this is balanced by a more modern palate of suave tannins, depth of flavour and elegant but plush-textured bodies, donated by the (largely unreported) warmth of the growing season. As for the Right Bank – having lived and worked in Saint-Emilion in my 20s, entering the town always feels a little like homecoming for me, but this year it was tinged with foreboding. Merlot had struggled on the Left Bank, and we were concerned as to what we would find on the other side of the river, where it is the dominant grape. I was therefore relieved and frankly delighted to discover that our fears were largely baseless. Throughout our tastings across properties in Pomerol and a few in Saint-Emilion (several of our team remain in Bordeaux and will visit more châteaux here on Monday), we actually found a higher level of homogeneity than on the Left Bank. Some strikingly beautiful wines have been made. Characterised by delicate floral and mineral aromatics, sensual tannins and pure, precise flavours, terroir really shone through in 2023. Many of the absolute highlights of the vintage can be found here – I left Cheval Blanc wondering which kidney I could sell in order to get my hands on some (a moot question as after 15-plus years in the industry, nobody would pay money for my kidneys). Lafleur was so special I don’t want to sully it with hyperbole. Anyone who tells you there were no great wines made in 2023 didn’t put in the effort to travel to the region and taste properly – it’s as simple as that. As to the market, there is no getting away from the fact that conditions are tough. Through our extensive conversations with the châteaux, we are relieved to confirm that they are well aware of this, and it is now all but confirmed that action will be taken in the form of significant price reductions. As was the case with the 2019 vintage, this is an exciting prospect for Bordeaux lovers. William Kelley neatly summarises this in his report, released just two days ago: “Word in Bordeaux was that the 2023s would be released at significantly lower prices than the region’s last three vintages. If that is so, consumers will have the opportunity to acquire exceptional wines for an attractive price.” With releases due to start as early as tomorrow (with Ch. Batailley), and with the First Growths and other top châteaux promising to lead the way and set the tone, there is little time for us to unwind the many mis-informed vintage pre-conceptions. I will therefore end by saying this – as is the case with all vintages, there will be triumphs, and missed opportunity for others. Some châteaux will listen to the market and release at reasonable prices, others will allow ego to dominate their decisions and make costly mistakes. All eyes are now on Bordeaux for what is undoubtedly a pivotal en primeur campaign. Think of a cocktail. Is vermouth in it? If you’re thinking of a classic cocktail, there’s every chance it is. The Martini, Negroni, Manhattan – I could go on. And on. For whatever reason, vermouth has not always received the recognition it deserves for propping up so many exquisite mixed drinks. In fact, I’d hazard that a fair amount of cocktail lovers don’t know vermouth is in their glass at all, or, if they do, their knowledge of the liquid might be a little patchy. When it comes to vermouth, there are a few things you need to know. Vermouth is an aromatised wine which hails from Torino, Italy. It is generally accepted that vermouth – as we know it, not the kind prescribed by Hippocrates in 400BC for ailments – was invented in the 16th century. In 2019, a Geographical Indication was introduced to protect the style and quality of vermouth from its birthplace, Turin. Under these regulations, vermouth must be made with at least one Italian wine, wormwood must be the predominant flavour and the wormwood used must be grown in Piedmont. The final liquid must also be between 16% and 22% alcohol in order for it to be labelled “Vermouth di Torino”. The two most common styles of vermouth are sweet and dry. The former is red in colour and as such is often called Rosso. This is the style used in your Manhattan and Negroni. Dry vermouth is white (Bianco) in colour and will be used in your classic Martini. Four classic Vermouth-based cocktails The Negroni It might be hard to believe given the Negroni’s current notoriety, but this simple serve of equal parts vermouth, Campari and gin was incredibly slow to catch on. As is often true in cocktail lore, there are a couple of people credited with its invention. The most widely accepted is a Count named Camillo Negroni who asked a bartender at Caffè Casoni in Florence to make his Americano cocktail a touch stronger. They duly obliged and switched the soda water for gin. This is believed to have taken place in 1919. A smaller camp credits a man named General Pascal Oliver Comte de Negroni with the invention of the cocktail in Senegal between 1855 and 1865. Setting aside the inventor for the moment, the Negroni, unrefutably, became de rigueur in the early 20th century – requested across Europe and favoured for its bitterness and alcoholic strength. Orson Welles was a very high-profile fan, famously quoted in 1947 for saying: “The bitters are excellent for your liver, the gin is bad for you. They balance each other.” In the years that followed, the Negroni’s popularity waned when appetites became more saccharine in nature. In the early 2000s, things shifted again as the Negroni began to appear on cocktail menus at some of the best bars in the world. It wasn’t long before the recipe featured in cocktail books and drinks sections of influential titles, such as The New York Times. Fast forward to today and the Negroni is regularly named the most popular cocktail by patrons and bartenders alike. There are countless riffs on the original recipe and an entire week is dedicated to celebrating it. How to make a Negroni 30ml sweet vermouth 30ml Campari 30ml gin Ice Slice of orange (garnish) Pour all ingredients into a glass with ice and stir well. Add garnish. The Manhattan The Manhattan has assumed many guises over the years, making its exact origin a hotly contested subject. Some believe Sir Winston Churchill’s mother was served the first Manhattan cocktail at the eponymous club in New York in the early 1880s. Others question the validity of this claim as she was likely in the UK, pregnant with the future Prime Minister, around this time. Some believe a New York bartender by the name of Black invented the recipe at the Hoffman House. The earliest known record of the Manhattan, in which this name and the recognised recipe, appear is in The Sunday Morning Herald in September 1882. Unhelpfully, some referred to a very similar recipe as a Jockey Club or Turf Club Cocktail. The classic recipe consists of Rye or Bourbon, sweet vermouth and bitters. During Prohibition, it was not uncommon for people to use a different whiskey as the base ingredient. If you substitute American whiskey for Scotch whisky, you have a Rob Roy cocktail. How to make a Manhattan 50ml Bourbon 25ml vermouth 3 dashes of orange bitters Cocktail cherry (garnish) Add all ingredients into a glass filled with ice and stir. Strain into coupe or Martini glass and garnish. The Americano The Americano recipe was invented at Gaspare Campari's bar in Milan in the 1860s. The cocktail of equal parts Campari, vermouth and soda water, was originally named “Milano-Torino” after the principle ingredients’ home towns of Milan and Torino respectively. The simple serve was renamed in honour of its growing fanbase: American tourists. The Negroni recipe was based on the Americano and contains two of the three main ingredients – with the soda water switched for gin. While many associate James Bond with the Vesper cocktail or a Martini – shaken, not stirred – the first cocktail associated with 007 in Ian Fleming’s work was actually an Americano in Casino Royale. It is later written, in A View To Kill, “Bond always had the same thing – an Americano”. How to make an Americano 30ml sweet vermouth 30ml Campari Soda water Slice of orange (garnish) Fill glass with ice, add Campari and sweet vermouth. Top with soda water and stir gently. Garnish. The Adonis A slightly less well-known vermouth-based cocktail, the Adonis was invented in honour of its Broadway musical namesake. The musical, based on William Gill’s novel, first opened in Chicago in 1884 and went on to become the longest-running show of its era. As the name suggests, the story follows a beautiful male statue who comes to life and ultimately opts to return to stone. The first reference to the Adonis cocktail was written in 1887. How four vermouth-based cocktails became classics

The history of vermouth in cocktails: shaken not stirred 

It’s easy to make assumptions about William Kelley. In some ways, he seems like a caricature of the stereotypical wine writer: an excruciatingly RP English drawl, a doctorate in 19th century history from Oxford, a childhood divided between London’s Belsize Park and more rural Suffolk, and a cellar of seemingly endless depths (or so his Instagram suggests). And yet, there’s much more to the Wine Advocate’s Editor-in-Chief than meets the eye. Kelley sprung from anonymity rapidly. His mentor was Hugo Dunn-Meynell, a family friend who had been a protégé of André Simon and managed the Wine & Food Society for 15 years; organising Dunn-Meynell’s cellar formed Kelley’s early vinous education. He joined Oxford’s famous Wine Circle, acting as President for three years during his studies, which concluded with a PhD. “Education in the humanities is the only form of institutionalised punishment where you get extra time for good behaviour,” Kelley says with a chuckle. Academia wasn’t for him, but, as he tells me, with a casual shrug: “I kept getting scholarships and things, so I kept on doing it.” Wine, meanwhile, played an ever-growing role in his life – from pillaging his college’s cellars, helping the staff decant old vintage Ports, increasing involvement in the Wine Circle, and trips to visit producers. Kelley penned his first feature for Noble Rot in 2015, a spotlight on the late, elusive Henri Bonneau. He was published in Decanter the following year, where he soon secured the North American beat. He covered Burgundy’s 2015 and 2016 vintages for the magazine, before joining the Wine Advocate team in 2017 – just two years after he’d first started writing about wine. In March of this year (2024), he took over as Editor-in-Chief – arguably the biggest job in wine writing. That’s quite the trajectory for someone who fell into the job. “I always wanted to make wine,” Kelley says. “Writing about it sounded like a good idea to make some money, you know? I found the meaning afterwards.” And that meaning is what makes Kelley so interesting, both as a writer and an editor – one that is quietly leading a revolution at the Wine Advocate. I always wanted to make wine,” Kelley says. “Writing about it sounded like a good idea to make some money, you know?  “What we do can be amazingly useful in disrupting hierarchies and forcing critical reflection,” Kelley tells me. “I don’t think we do enough of those things currently – but this is something we’re going to do more of.” In his mind, the Wine Advocate’s purpose is “to keep everybody honest”. The publication was purchased by the Michelin Guide in 2019 (having held 40% since 2017), and Kelley’s been talking to the Michelin team – about how they choose which restaurants get reviewed, and the criteria on which they’re judged, looking for possible synergies. The difference between two and three stars, for example, is more subjective than whether or not an establishment makes it into the guide – and it’s similar with wine. Although there will always be an element of subjectivity, especially when it comes to the two- or three-star equivalents, Kelley is trying to bring more consistency to the way wines are scored. He’s brought in technical training for the entire reviewing team – looking at perceptive thresholds for faults such as brettanomyces and mouse, while also ensuring that they’re all using the same lexicon – that one person’s cinnamon isn’t another’s clove. He cites the world of perfume, where training is intensively scientific and perfumers have to pinpoint hundreds, if not thousands, of specific scents – strikingly different to the world of wine, where tasting is often just “free association”. The team even sends samples off to a laboratory for analysis. This is all part of how Kelley hopes to tackle the inflation, and compression, of scores (“a huge problem” he confesses) – which in turn is devaluing both ratings and the role of those that give them. Kelley is unusual in the critical sphere, for both making wine and reviewing it. He’s received criticism for this duality, although openly declares any interests in reviews (such as for Domaine Felettig, an estate from which he buys fruit). His experience in the vineyard and winery, however, gives him a unique perspective and allows him to engage with producers on a deeper level – something he wants to see more of across the team. What we do can be amazingly useful in disrupting hierarchies and forcing critical reflection When I ask how the publication determines what gets reviewed, Kelley explains how, for a long time, writers at the Wine Advocate had KPIs for the number of reviews published – trying to tackle as much as possible of the increasingly diverse world of fine wine in a bid for relevance. But he’s clear that needs to change: “We need to embrace the idea of reviewing fewer wines in more depth and following them more closely, because that reflects how people consume today,” he says. Part of that, for him, involves getting into vineyards and wineries to see how people are working, and spending enough time to fully understand it. He wants to put an end to gathering samples in anonymous tasting spaces; for him, the supposed neutrality of that experience is limiting. “How do you invest in the stock market if you know nothing about a company’s performance?” he says. “How do you define authenticity? For me, it’s about taking risks. It’s about exposure to negative consequences in pursuit of a goal, a conviction,” Kelley tells me – and it’s authenticity that he wants the Wine Advocate to be championing. “We’re in a period when winemaking conditions are more extreme, where traditional hierarchies of sites are being upended, and for the industry to digest all of that, we can be immensely useful voices.” He's clear that wine remains old-fashioned in many ways with an “aura of tradition” that consumers like, whether the family pedigree of certain estates (“We don’t want seventh-generation politicians, but suddenly we like nothing better than to buy a seventh-generation wine.”) or antiquated classifications (“Having a great classification is very nice – but it shouldn’t be a licence to print money. It should be an obligation to do better.”). The Wine Advocate, however, has the ability to champion young producers, shine a light on new names and question the current state of the industry. It can – in short – disrupt the status quo. One of the challenges with wine is that critics and writers are often dependent on producers for access, especially when it comes to the rarest and most sought-after wines. Truly impartial judgement is difficult when a low score or negative review risks not being invited back. (Kelley himself has been banned from estates – and sometimes later un-banned.) The industry is riddled with such conflicts of interest. But, for Kelley: “It’s not actually about avoiding [conflicts of interest], because you can’t… our business is about managing them; it’s about being very transparent.” We’re in a period when winemaking conditions are more extreme, where traditional hierarchies of sites are being upended While there are of course strict rules in place regarding hospitality and producers, the Wine Advocate’s expenses policy is generous enough, Kelley assures me, to allow writers to “engage with [producers] as an equal” – and ensure there’s no pay-to-play. Wine criticism isn’t renowned for its generous salaries, yet Kelley notes how important it is for reviewers “to be paid enough to buy the wines and have an independent relationship with [them]”. He highlights how it’s the bottles that he might have misjudged that have shaped him most professionally – lingering long in the memory as he tries to unravel how and why he might have misread a wine. Inevitably, Kelley is having to take a step back from reviewing to allow him to steer the ship. He’s expanding the team and plans to keep writing about Burgundy for now, but is keen to avoid “sitting on” any particular region (“I want to actually try to create new voices,” he says). When we talk, he hasn’t even hit six months in his role as Editor-in-Chief, and there is clearly more he wants to tackle, bringing further nuance to the way the Wine Advocate rates and reports on wines and producers. Wine writing was never the goal, however, and as he approaches a decade in his accidental career, his feet are getting itchy. He’s juggling his small project in the US (Beau Rivage) and his Burgundy label (largely négociant with two tiny parcels of his own, Beaune Premier Cru Les Chouacheaux and Côte de Beaune) alongside the job – and that’s where he wants to be. Once he’s finished his work reforming the Wine Advocate, he’ll be found among the vines in Burgundy. Wine is – and always will be – his life. “If it’s not an obsession, you’re not doing it right,” he says. Peat in whisky is divisive – both in terms of its intense flavour profile, but also its sustainability. It has long been used in Scotch whisky, adding complexity to the region’s spirits, but has – over the last two decades – been thrust into the limelight.  Essentially, peat is baby coal – decomposed organic matter, in particular sphagnum moss, that takes thousands of years to form. Historically, these peatlands – wetlands such as bogs and fens – were used for fuel, especially where other energy sources weren’t readily available. Slabs of peat, cut out of the ground and left to dry, were burnt, valued for their ability to (like coal) smoulder steadily. Peat would have originally been used to heat pot stills, giving off intensely scented smoke that distillers eventually looked to capture.  Today, energy sources are largely more sustainable, and peat is used in significantly smaller volumes in the kilning process. After the barley has been malted, it is kilned (essentially dried). For peated whiskies, this is done (at least in part) over a peat-fed fire, so that the barley picks up the flavours from the smoke. This barley is then milled, mashed, fermented and distilled to produce the whisky, with the peat smoke lending flavours that range from soot, smoke and asphalt to seaweed and iodine.   Peatlands have been put in the spotlight with climate change, given their incredible capacity to hold carbon – and release it. As a NatureScot report (2023) states, “Although peatlands cover less than 3% of the world’s surface, it is estimated that they store double the amount of carbon held in global forest biomass and more than 30% of the total global soil carbon store (Bonn et al., 2016). Peatlands make up some 9.5% of the UK’s land area with an estimated carbon store of over 3,200 million tonnes, of which 1,600 million tonnes are estimated to be in Scotland (Bonn et al., 2016).” But while they have an impressive ability to lock away carbon, once peatlands are damaged they release some of that carbon – and the same report estimates that degraded peatlands account for circa 13% of Scotland’s carbon emissions. (It’s worth noting that the same institution – then known as Scottish National Heritage – came under fire in 2020 for its agreement with Diageo, allowing for unlimited peat extraction on Islay.)  Peat accumulates at a mere 1mm a year, so it’s easy to see why peat extraction is a hot topic. Protecting and restoring Scotland’s peatlands are firmly on the national agenda, and in 2020, the Scottish government announced £20 million earmarked for restoration, with a commitment to invest more than £250 million by 2030. Unsurprisingly, it’s put Scotch whisky’s use of peat under the magnifying glass. In reality, a fraction (just 1%) of Scotland’s peat goes to the spirits industry – with horticulture the main culprit.  As Bruichladdich’s Head Distiller Adam Hannett says, however, it has provided “a great lens to look at what we’re doing with peatlands”. For him, “It’s about responsible extraction.” Bruichladdich’s production director is also looking at restoration projects with local farmers. In 2021, two giants of the industry announced significant projects – one from Diageo’s Johnnie Walker, partnering with the RSPB to repair wetlands, and a more ambitious pledge from Beam Suntory, with its Peatland Water Sanctuary Initiative. The project aims to restore twice the volume that the company harvests for use in whisky production, with $4 million invested by 2040. Some producers – such as Nc’nean – have sworn off peat totally, while others are moderating usage, or looking for alternatives.   In Sweden – where peatlands represent up to 20% of the entire land area, Mackmyra’s Blender Lii Johnson explains how there is strict regulation around their usage. They are one of a growing number of producers looking to use peat as another way to explore their terroir. As few producers malt and kiln their own barley today, often this is shipped from Scotland (in turn adding to distilleries’ carbon footprints). At Mackmyra, they instead use Karinmossen – local peat, harvested around 40km south of the distillery – seasoned with juniper twigs. She estimates they use a mere 0.1% of the peat bog, bringing in around 30 cubic metres per year.  Johnson feels that it is the juniper in the Karinmossen, along with the small twigs they add (picked from the woods around the distillery), which give a light citrus, almost medicinal note to their peated malts. In Seattle, Westland has pioneered using local peat, and a process with a backhoe to keep the bog intact and limit their carbon footprint. Co-Founder and Managing Director Matthew Hofmann feels the local peat brings Mezcal-like aromas to their peated whisky, Solum.   This quest for sustainability, combined with emphasis on the concept of terroir in whisky, has had interesting results at distilleries around the world. In Minnesota, Brother Justus sources peat from the Boreal Forest and has trademarked a cold-peating process to produce more delicate aromas. Tasmanian distillery Lark looks to Browns Marsh for its peat (around one cubic metre a year) and has had the International Mire Conservation Group confirm that it is having zero impact on the marsh. Others are looking to use alternatives – New Zealand’s Thomson Whisky uses manuka, while Archie Rose has looked to Australian hardwoods and, perhaps most distinctively, Iceland’s Eimverk sources sheep dung from local farms in lieu of peat.  As we’ve touched on, however, it’s not just what is used to peat malt – but how it’s used, that impacts the flavour of the final whisky. “Duration, in my opinion, is the key,” says Mackmyra’s Johnson, emphasising that it is how long the barley spends in contact with the peat smoke that influences the level of peatiness, while it is only the type of peat (or peat alternative) that will effect the nature of the peat flavour. She explains how whether the barley is peated pre- or post-break is also important: it’s most common to do pre-break, as if it is done post-break, when the barley is largely dry on the surface, it doesn’t pick up phenols – the compounds that produce peat’s smoky flavours. For Mackmyra’s peated barley, it is kilned for one day with peat and then for a second day just with hot air.  There are other factors too however – with fermentation times and cuts often a focus. While longer ferments are generally thought to engender complexity, shorter ferments preserve phenols. There are three factions to a still run – the foreshots, heart and feints. The foreshots and feints, the liquid that runs off first and last, are generally discarded, and the cuts between these determine the character of the heart. Phenols generally come late in the distillation process, so later cuts can be preferential when looking for peat character. For Mackmyra’s Extra Rok 2.0 – an extra-peated malt, they do shorter ferments and a later cut, to preserve the phenols.   It's become fashionable to talk about “ppm” in peated whisky – parts per million (perhaps familiar to wine lovers as the same term that is used for sulphur levels), to measure the level of total phenolic compounds. It’s perhaps unsurprising that the compounds are the same as those for smoke taint, including guaiacol and 4-methylguaiacol, for example, but while in the world of wine these are avoided, distillers of peated whiskies have competed to produce the spirit with the highest. This race to make the peatiest whisky possible was arguably inspired by Compass Box’s Peat Monster (first produced in 2003), building to and culminating with Bruichladdich’s Octomore 8.3 (released in 2017) – a whisky with a remarkable 309ppm, the highest level measured to date (compare this to the first Octomore release which had 131ppm). In this frenzied period, Ardbeg’s Dr Bill Lumsden even buried a barrel of peated whisky in a peat bog (which was released as an NFT in 2022, Ardbeg Fon Fhòid). But while one number is an easy way for whisky drinkers to grasp how peaty a spirit is, not everyone believes it’s helpful.  “We don’t like to talk about those numbers,” says Johnson. She explains how ppms are somewhat farcical, in her view. When the reading is taken varies from distillery to distillery, and therefore provides something that is almost impossible to compare. While most are taken at the mashbill stage, if you are later blending, it’s an estimate at best. Not only that, but the make-up of the phenolic compounds will influence how peaty one 100ppm whisky is versus another 100ppm whisky. For Mackmyra, their pure peated malt sits at around 300ppm, but the mashbill for their peated and extra peated whiskies are respectively around 70 and 140ppm, Johnson reluctantly tells me. The level of phenols can also vary significantly between batches of barley – and at Mackmyra they aim to combat this by doing one kilning a year, distilling all their peated whisky at once and blending the batches to create a consistent product.  It's almost for this exact reason that Bruichladdich created Octomore, Head Distiller Adam Hannett explains. The project’s numbered releases have significantly different levels of peatiness, and were a project inspired by their curiosity to see how far they could push the peat level, as well as their partnership with Bairds maltings, who had batches of barley with irregular phenol numbers.   Although peat is intrinsically associated with Islay’s malts, things aren’t as clear-cut today – and as Hannett says, “You can’t categorise flavour by region”. Islay-based Bruichladdich produces both peated and unpeated whiskies. Originally the distillery made heavily peated malts, switching to unpeated styles in the 1960s, and today makes both. Its Port Charlotte brand was first conceived to capture what Bruichladdich would have been like in the old days, as a heavily peated malt. Intriguingly, Bruichladdich briefly tried using Islay peat, however found that they couldn’t get the phenol levels as high. Hannett highlights that another element in phenol levels is the depth the peat is cut from – with lower levels having more vegetation and therefore more phenols.  For Bruichladdich, when they’re looking for an overtly peated spirit, the quality of the underlying spirit is key – working with the right barley and fermentation times, for example. While peated malts might be thought of as heavy, oily and medicinal, they try to avoid this character. He deliberately won’t delay making a cut in the name of phenols, with that decision based on quality – and the result, he feels, is that, “The essence of the peat smoke is light – it’s barbecued.” For him, it’s about the balance between the peat character and everything else.  For blending specialists, House of Hazelwood, peated whisky “is a tool in our arsenal we can use to build a complex blend”, says Eilidh Muir from their Whisky Blending Team. She emphasises that using peat doesn’t necessarily equate to a smoky whisky, but can contribute something to a blend that is much harder to pin down – but something you’d notice if it wasn’t there. “A whisky dominated by a single flavour is often too one-dimensional,” she says – they too are looking for that fine balance.  Peat is just one element that can be used to shape a spirit – and there remains a certain amount of mystery to its influence. The sustainability question isn’t going away, but – as Bruichladdich’s Hannett says, “I don’t know what the solution is at the moment… but we’re looking for one.” As producers look for an answer, they’re pushing boundaries – experimenting with local sources and alternatives – something that will only benefit whisky-lovers, and the environment.  Browse a range of peated whisky or read more about spirits
