William Kelley has rapidly risen up the wine-writing ranks. He started writing for Decanter in 2015, covering the 2015 and 2016 Burgundy vintages, before joining the Wine Advocate in 2018, where he now looks after Burgundy, Champagne, Madeira and English Sparkling Wine. But it’s clear that Burgundy is his passion – spending half the year in the region’s cellars and vineyards. “It is a region that grabbed me the first time I visited (as a student, in winter 2008/2009),” he explains. “For all that it has changed over the last few years, it remains an immensely rich and individualistic wine culture, which never loses its capacity to surprise. Nothing is ever quite what it seems! That, combined with the fact that the Burgundian model has become in a sense the driving paradigm for contemporary wine culture, makes it a very exciting place to be.” As anyone following him on Instagram knows, he seemingly tastes and drinks more old Burgundy than most. But – since 2018 – he’s been doing much more than just drinking the wines, trying his hand at making wine himself, an experience that he feels has only helped him talk and write about the region. “There is no substitute for experiencing first-hand the stressful choice of when to pick; for handling and tasting the grapes at harvest; or for following their progress from must in a tank to wine in a barrel,” he explains. “In 2018, for example, I used very little press wine; but in 2019 I couldn’t get enough of it, the tannins were so velvety… Insights of this nature, in turn, make it much easier for me to discuss the vintage with producers.” In fact, one factor in his decision to start making wine was the rising prices in the region – something that he fears puts some wines “beyond the reach of a new generation of consumers”. However, he still feels that Burgundy can offer value – it’s simply about knowing where to look, and his advice is to look for the best farmers and winemakers working in “lesser” appellations.  “I have championed growers such as Mercurey’s Bruno Lorenzon, Rully’s Vincent Dureuil-Janthail, the Mâconnais’s Jean-Marie Guffens, and Santenay’s Jean-Marc Vincent in the pages of The Wine Advocate, and the results are indisputable when their wines are tasted blind in the company of others from grander appellations. Rather than looking for second-tier producers of the famed Premiers and Grands Crus of the Côte de Nuits and Côte de Beaune, the smart thing to do is to look for real vignerons like these, who are smashing the glass ceilings that have long been imposed by the appellation hierarchy.” As for 2019 in Burgundy, it’s the latest vintage in a growing trend for ever warmer, dryer years – something that he feels is, or should be, forcing vignerons to question the way they work both in the vineyard and winery, with conventional practices adapted to cooler, wetter conditions that are now a thing of the past. But he’s excited about the wines the warm, dry year produced: “The vines adapted to the conditions better than I think anyone could have hoped,” he says. The whites are proving harder to read at this stage, and therefore feels it’s going to be particularly important to revisit them in bottle. But he’s “impressed by how chiselled many 2019s remain, despite their huge levels of concentration” – there are, in his view, “some great bottles in the making”. As for the reds, they are, in his view, “simply brilliant”. For him, the vintage combines elements of 2005, 2009, 2015 and 2017: “If 2019 must clearly be numbered among what the French call ‘solaire’ vintages (ie those shaped by warm, sunny conditions), it also remains very classically Burgundian.” Explore all Burgundy or read more Editorial

The four-wheel drive pulls up and we pile out – Marco Pallanti’s two Jack Russells (Bach and Masetto) leading the charge as they tumble down and into the vineyard in front of us. The vines stretch down a steep slope, three triangular slithers slanting severely to a point, forming a natural amphitheatre, and Siena’s iconic tower just visible on the horizon, 20km to the south. CEO Lorenza Sebasti, her and Pallanti’s son Arturo, our Buying Director Corentin Margier and I are standing in Castello di Ama’s Montebuoni vineyard, which gives its name to their Riserva bottling. It’s the final stop in our tour of the various sites that make up the property’s 75 hectares of vines.  Just tasting Castello di Ama’s wines tells you that this is a special place, but of course there is no substitute for getting your feet on the ground, walking the vines and seeing the site yourself. Since four Roman families re-discovered this hilltop site in the 1970s, it has been lovingly restored, with significant investment in the vineyards and winery – and the original 55-hectare estate has grown to 115 hectares today (with 75 hectares of vines and 40 of olive groves), not to mention the extensive art collection that dots the property.  The vineyards are spread across four valleys, with each site within a 1.5-kilometre radius of the winery in Gaiole-in-Chianti. For winemaker Pallanti, this proximity is one of the keys to quality, not only allowing them to really understand each site, but also ensuring there is minimal time between picking fruit and getting it into the winery. For each parcel, they aim to have the fruit in the tank in under two hours. The property all sits between 420 and 530 metres above sea-level, on the higher side for the region and another defining element for Castello di Ama, lending their wines great freshness and finesse.  The northern flank of the estate is the 16.1-hectare La Casuccia, dominated by stony clay soils and surrounded by stone walls. Here the “rich, fat soil” (as described by Arturo Pallanti) is home to largely Sangiovese, with one historical parcel of Merlot. The tenderloin of the property, it produces opulent and expressive wines, and a single-vineyard Gran Selezione is made in only top vintages (as for Bellavista).  Moving south you come to San Lorenzo which forms the foundation of the eponymous Gran Selezione, a wine made every vintage. While the vintages from 1982 to 1990 were made exclusively with fruit from this vineyard, it has evolved to become a blend of plots – including fruit from Bellavista and La Casuccia in particular in the years they aren’t made. The soils here are chalky yet with plenty of clay-rich schist – a site that doesn’t have the extremes of Montebuoni, Bellavista or La Casuccia, but brings together some of the best characters of them all in its 16.5 hectares.  Sandwiched between San Lorenzo and Bellavista lies L’Apparita, the special three-hectare plot of Merlot that is behind Tuscany’s first – and one of its most iconic – Merlot wines. Clay, chalk and the altitude (500 metres) create a wine that has both power and freshness. The neighbouring Bellavista produces some of Castello di Ama’s most powerful, yet fine and floral, wines – and is home to their oldest vines. South/southwest-facing, its 22.5 hectares of vines (around 80% Sangiovese, with the remainder Malvasia Nera) bask in the sunshine, sitting in stony, clay-chalk soils. In top vintages, they produce a single-site Gran Selezione from Bellavista (first made in 1978) – an impressive and age-worthy wine.  The final piece of the puzzle is Montebuoni – where we’re standing. Pallanti and Sebasti purchased this 14.7-hectare slice of vineyard in 1997, naming it after the village opposite. Arturo tells us how as a child he once tried to ride his bike up the slope – a mistake he never made again. The gradient here is so drastic that even driving down it in a pick-up frays the nerves, working from the chalky scree that feels destined to leave the wheels skidding, down to the more clay-rich foot of the vineyard. The vines here are divided between Sangiovese (around half the site), with Merlot, Cabernet Franc and Malvasia Nera – and the wines reflect the site’s angular slopes, pointed and driven with a backbone of bright acidity.  It’s been over 40 years since Pallanti arrived at the estate, and over 30 since Sebasti took over as CEO. Together they have nurtured this remarkable property, weaving together the threads of these special vineyards to craft wines that set the benchmark for the region. The latest from Latour In the wake of last week’s launch of the 2016 vintage of the First Growth’s third wine, Pauillac de Latour, the Pauillac powerhouse will be releasing the 2013 vintage of the Grand Vin, as well as 2015 Les Forts de Latour, its second wine. The 2013 is only the second vintage of the Grand Vin that the property has released since it moved away from en primeur – and there’s no doubt, despite the vintage’s sometimes maligned reputation, that this is going to be highly sought-after. New from Champagne March brings with it a bounty of fine fizz releases. Top of our wish-list are the new wines from Henri Giraud – a House that produces small volumes of outstanding, terroir-driven wines, almost all of which are oak-fermented (and is, for that reason, often compared favourably to Krug). We’ll see the latest release of its multi-vintage cuvée (described by Jancis Robinson MW as “a sort of Montrachet of Champagne”) and the new, 2013 vintage of their top wine, Argonne. Keep an eye out also for 2007 Bollinger R.D. and Pol Roger’s 2012 Sir Winston Churchill.  Single-farm spirits The unfailingly modish and exciting Irish distillery Waterford has been making waves in recent weeks, having scientifically proven terroir’s influence in whisky. This month will see the latest spirits from the Irish distillery released – two single-farm single malts that offer a chance for you to explore the concept yourself. One comes from Hook Head – a site on the southern coast with clay-loam soils, while the other hails from Lakefield, with deep loam soils in County Laois. Burgundy There are still a few 2019s emerging from the Côte d’Or – including wines from Domaine des Lambrays and Le Grappin. Clos des Lambrays was a stand-out from our trip in October last year, while Aussie Andrew Nielsen’s Le Grappin wines (a darling of London’s restaurant scene) offer brilliant value year in, year out. The 2021 collection from Maison Leroy has almost entirely sold out, however we’ll also see the latest releases from the rest of Lalou Bize-Leroy’s empire – Domaine Leroy and Domaine d’Auvenay. Available, as ever, in tiny volumes, these are some of the world’s most collectable wines, and unmissable for Burgundy aficionados. Italian icons After a series of superlative 2016s from Brunello, Tuscany is on the mind. While Castello di Ama’s 2017 San Lorenzo is already available, the 2018 vintage of the Chianti Classico property’s flagship wine, L’Apparita, will be released in the coming weeks. Tasting through a selection of the range with our team, CEO Lorenza Sebasti told us that she and winemaker Marco Pallanti feel it’s “the best we’ve ever made”. We’ll also see the new vintage of Ornellaia’s entry-level bottling – Le Volte dell’Ornellaia, which provides an affordable and earlier-drinking taste of this Super Tuscan estate, ahead of the release of Ornellaia “proper” in April.

This year sees the release of the 20th vintage of Cheval des Andes – Cheval Blanc’s operation in Mendoza. Since the team from the legendary Saint-Emilion estate embarked on the venture with Terrazas de los Andes, 25 years ago, much has changed – and this is the start of a new era for the property. What was once a working concept has taken root.  “This is the beginning of our adult life,” says Technical Director Pierre-Olivier Clouet. “We have a real identity today.” It’s taken a quarter-century for the property to shake off the uncertainty of youth and find firm footing – something that hasn’t necessarily been easy.  “We made mistakes,” Clouet confesses. Not having a historic reputation to rely on, the team at Cheval des Andes had sought out high scores, chasing points to prove their worth. But, in a still Parker-dominant era, that meant making wines with “ripe grapes, a lot of extraction, a high level of alcohol – you [had] to show the muscle to explain that you are a great wine”, explains Clouet. “For a long time, the recipe was in the cellar; nobody cared where the vines were.” Now, however, that’s all changed.  From 2011, the team started shifting focus to the vineyard, working more closely with their French counterparts and vice-versa. The arrival of Lorenzo Pasquini (now the man at the helm of Ch. d’Yquem) in 2015 was key to the transition, as Cheval des Andes started to focus on a shared vision of fine wine – one that is about freshness, balance and ageing potential, and one that defines Cheval Blanc.  Only with a few wrong turns, however, can you be sure you’re on the right path – and Clouet is clear that those first 16 years, figuring out what Cheval des Andes should and could be, has been “super important” in helping them build “something with real sincerity, real authenticity”. Most importantly, Cheval des Andes is not intended to be, nor is a copy of Cheval Blanc: “It is, in our mind, absolutely an Argentine wine,” says Clouet.  The original 31-hectare vineyard is in Las Compuertas in Luján de Cuyo, a subregion of Mendoza. It is on these clay-dominant soils at around 1,000 metres’ altitude that Pierre Lurton discovered a plot of ungrafted Malbec in 1998. Planted in 1929, the vine material pre-dates phylloxera, descended from a selection imported to Argentina in 1852 – back when the grape dominated Bordeaux. This selection is key to the DNA of Cheval des Andes and, along with the huge diurnal shift, produces Malbec that is fresh, precise, perfumed and delicately structured. For Clouet, the “true” Malbec is closer to Pinot Noir in style – more floral than fruit-led, vibrant and even ethereal.  In 2001, the team purchased an additional parcel in La Consulta in the Uco Valley, at higher altitude and with more gravel-driven soils, a cooler site that has an even more significant diurnal swing in temperature. While they once might have used only a fraction of the estate to produce the flagship wine, they have moved to using as much as they can – to create a pure expression of the entire property, declassifying only plots that don’t fit in the blend or meet their stringent quality standards.  All 50 hectares are farmed with the same philosophy as their vines in Saint-Emilion – employing extensive cover crops, trees scattered throughout the vineyard, and with the same incredible attention to detail and focus on sustainability. “We work with the same vision and the same conviction,” says Clouet. One key difference, of course, is that irrigation is essential in this part of Argentina – but, here again, they’ve changed tack over the last decade or so. Rather than traditional modern drip irrigation where necessary water would be eked out drop by drop over the season as needed (“too artificial”, Clouet tells me), they irrigate extensively over the winter to ensure the soils are replenished fully between seasons (as well as help protect ungrafted vines against phylloxera), then – on a plot by plot basis – when the vines are starting to suffer, they give the vines around 40mm of water (still via drip irrigation), over 24-48 hours, replicating a day or two of steady rainfall.  They’ve reduced the height of the canopy (the engine of the vine for sugar production), while using trees, cover crops and minimal leaf-pulling to avoid sunburn. They’ve started pruning each vine according to its vigour, and are now picking significantly earlier – as much as two months earlier than 15 years ago. With this detail in the vineyard, the challenge is simply to guide the fruit through the winery: “No mistakes is enough in the cellar,” says Clouet.  In some ways, the wine echoes Cheval Blanc. While the Saint-Emilion property blends Cabernet Franc and Merlot, Cheval des Andes focuses on Malbec and Cabernet Sauvignon – the Malbec bringing freshness and silkiness that complements the backbone of powerful Cabernet. And the Cheval Blanc style, one of restraint and precision, shines through in recent vintages of the wine – and especially the soon-to-be-released 2021. As Clouet tells me, “Our vision is absolutely delicacy, freshness, balance, ageing potential, complexity.” Unlike Cheval Blanc, however, which needs 10 years in bottle to start even hinting at its potential, Cheval des Andes offers an immediacy – something that Clouet is clear doesn’t inhibit its ability to last; the 2021, for example, can be drunk now, but will evolve over the next 25 years at least, he tells me.  Even the association with the Cheval Blanc name doesn’t make Cheval des Andes an easy sell to fine wine lovers; but that, says Clouet, is part of what makes it fun – a challenge for the team to be pushed. Even better, his team gets the chance to learn and make wine not just once a year, but twice, as well as gaining additional insight on how Cheval Blanc might adapt to climate change. But Cheval des Andes isn’t just an intellectual exercise (that is merely an added bonus), Clouet firmly believes in the potential of this site – something they’re now finally beginning to realise. For 25 years, Cheval Blanc – one of Saint-Emilion’s leading names – has been crafting wine in Argentina. We sat down with Pierre-Olivier Clouet to find out more about the project today, and why the 2021 vintage is the most exciting to date

Turning the page at Cheval des Andes

The Langhe is unspeakably beautiful. You may have seen Allessandro Masnaghetti’s 3D maps – a painstaking project by this now-iconic cartographer to translate these terroirs to paper. Their textured surfaces speak of Barolo and Barbaresco’s complex geology – and yet they don’t fully convey its endless curves and corners, winding roads and intricate jigsaw of villages and vineyards, nestled in amongst each other. This is a landscape carved and sculpted by nature over 15 million years; the vines cling to precipitous slopes, sweeping down toward the valleys. Like the effortless lines of Michaelangelo’s marble, it’s a masterpiece.  We’ve just returned from a trip to Piedmont’s most prestigious vineyards, dipping a toe in the waters of this fascinating area over three days. With the layers of region, village (11 in Barolo, three in Barbaresco), its Crus (officially known as MGAs, Menzione Geografica Aggiuntiva) and individual vigne or vineyards, Barolo and Barbaresco are often compared to Burgundy. These layers of complexity and nuance are what wine-lovers thrive on, the detail that allows us to indulge new levels of geekery. Add to this the finesse and aromatic perfume of Nebbiolo, and it’s easy to see why Pinot Noir lovers fall for the region.   While wine has long been made in the Langhe (for at least 2,000 years), the first dry Barolo is thought to have been bottled in 1844, with wines before that often sweet or lightly sparkling. It’s only really in the 1960s that the region’s reputation started to be built. Wines were – as in Burgundy – mainly made by négociants until this point, when individual estates started making their own wine. Traditionally wines from across the region were blended to create an expression of Barolo as a whole, but this too started to change. Prunotto and Vietti were the first to identify and vinify individual plots in Barolo, following a trip to Burgundy in the 1950s and ’60s (read more about the birth of Barolo’s Crus here); while in Barbaresco, it was Angelo Gaja who started to make wine exclusively from vineyards the family owned (from 1961) and then bottled the single vineyard Sorì San Lorenzo separately for the first time in 1967.  Traditionally the wines were made with long maceration times (leaving the wine in contact with the skins for 50 or more days) and several years in large oak casks, to extract colour, tannin and flavour from the thin-skinned Nebbiolo. These wines were immensely age-worthy, but their rasping tannins often needed time to become approachable – in some cases the fruit would fade while waiting for the tannins to come round. Winemaking – as elsewhere – was rudimentary, and the late 20th century brought with it modern technology and better hygiene. But the 1980s also saw Barolo divided.  This was the period of Parker and Parkerization, with rich, voluptuous wines with sweet fruit and vanilla tones from new French oak all the rage. Barolo couldn’t be further from this style – and its winemakers were humble farmers, with little recognition (financial or otherwise) for their work. But then a group of producers, led by Elio Altare, embraced the barrique (the traditional 225-litre French oak barrel), looking to put Barolo and its wines on the world map. These modernists, sometimes known as the “Barolo boys”, used new oak, and shorter, more vigorous extractions to craft wines that were fruitier, darker and more immediate – and received instant acclaim. The traditionalists of the region, however, fiercely defended the Langhe’s historical ways, the use of long macerations and large, old botte casks. Bartolo Mascarello famously released a label stating “No Barrique, No Berlusconi” (adorning the 1998 and 1999 vintage), decrying the use of new oak and Berlusconi’s right-wing politics.   Modernisation was essential – and better hygiene, with the arrival of stainless steel, was revolutionary. Today, as more and more producers around the world turn to large oak casks, it’s unsurprising that many in Barolo and Barbaresco are returning to their botti, and new oak has generally fallen from favour (at least in high proportions), yet the barrel certainly lives on, even if still controversial.  “Barrique… it’s an ugly word here in the Langhe,” says Dave Fletcher, the Australian producer who left the Yarra to make wine in Piedmont over a decade ago (under Fletcher Wines and Cantina della Stazione). He avoids new wood, but prefers barrels for the ability to vinify plots separately – something he feels is important for quality. There are also  those who feel that the minimum ageing requirements (18 months in oak for Barbaresco and 24 months in oak for Barolo) are old-fashioned, forcing the production of wood-heavy wines that are removed from current tastes – even suggesting that there’s a movement for these minimum times in oak to be adjusted.  As in Burgundy, whole-bunch has become a divisive topic. Some wines have traditionally been made with whole-bunch fermentation (as with Burlotto’s Monvigliero), but now some producers feel a small percentage can help bring freshness in warmer vintages, while others feel it distracts from the terroir, and doesn’t suit Nebbiolo.  Climate change is seeing a shift in the most prized plots, with some producers now feeling south/southwest-facing sites (historically the most desirable) too warm, and north/northeasterly exposure better for the long term, or finding other ways to manage global warming. Land prices have been rising, and there’s an increasing amount of outside investment, as well an increasing number of producers arriving from beyond Piedmont – although there are still those, such as Vietti’s Eugenio Palumbo, Burlotto’s Alessandria or Gaja’s Gaia Gaja, who were born and bred here, and have been embedded in the industry, and often their family business, their entire lives. We dove into recent vintages, especially the very different yet both excellent 2020 and 2021s, the former open and approachable, the latter closed and needing time. We talked about clones and rootstocks, the persistence and suitability of Chardonnay in the Langhe, the pressure on the region’s biodiversity – and much, much more.  We’ll be publishing more in the coming weeks and months, as well as shining a light on the wines of the region – one that should be part of any collector’s cellar. But, as with the wines here, there is so much to consider. As Nicola Oberto of Trediberri told us, “It doesn’t need to be obvious – it needs to be interesting.” And that, the endless nuance and complexity, is what makes the region’s great Nebbiolo so enchanting.  Keep an eye out for more on Piedmont over the coming months or browse all current listings from the region

The constant tension in wine is between art and science; the best winemakers managing to toe the line between the two to create something that can be inspirational. This relationship is most tangibly expressed on the labels of the world’s most iconic wines, with the likes of Ch. Mouton Rothschild, Leeuwin Estate or Domaine de Trévallon bearing specifically commissioned works. But at Castello di Ama, art is much more than an aesthetic afterthought; it is entwined with the very substance of the forward-thinking Chianti Classico estate. While the property has a long history – its hilltop location praised for the quality of its wines as long ago as the 18th century – the most recent chapter in Castello di Ama’s tale starts in the 1970s, when four friends identified the potential of the abandoned hamlet. It was, however, the arrival of Marco Pallanti in 1982, and then with current CEO Lorenza Sebasti in 1993 – daughter of Lionello Sebasti, one of the founding four – that proved pivotal. Together this duo has drawn equally on the worlds of art and science to thrust the estate to the forefront of Italy’s winemaking scene. When Pallanti arrived, fresh from his studies in Bordeaux, the cellar had been built, the vineyards established. The winery was remarkable for Tuscany – flush with stainless steel and temperature-control technology, lightyears ahead when much of Italy (and Europe) was still making wine in the same way their grandparents and great-grandparents had. The vineyards, however, needed work, planted at low densities and on overly vigorous rootstock. Pallanti gradually transformed the vineyards, switching them over to the lyre system – an open trellis that allowed more exposure for the fruit and fuller ripening, tweaking the varieties planted and using only the finest fruit in the cellar.  While the winery has all the latest gadgetry, there are no hard and fast rules for Pallanti – it’s all about having the option to tailor his winemaking to each cuvée. This palette of possibilities is a luxury of being, in his words, a “pedestrian winemaker” – being amongst the vines and barrels all year round, able to respond and adapt accordingly. “I’m not a consultant… I have the possibility to taste the berry, taste during the ageing and can decide step by step,” he explains. In many ways science allows him the luxury of playing the artist – armed with the knowledge and tools to craft each wine. Over four decades at the estate for Pallanti, and almost 30 years for Sebasti, one thing remains consistent: the importance of their role as “guardians” of Castello di Ama. “I never follow the fashion,” Marco Pallanti tells me. “It’s not about changing vats, or using another kind of temperature, or ageing more or less in barrels… but truly having more and more spiritual identity of the vines. This strong personality – this is what we have to keep. This is a gift.” In search of this spiritual identity, Pallanti has adapted his oak usage over the years – and how he talks about it, placing more emphasis on size rather than origin. At first he worked with big casks, of 20 to 40 hectolitres, but as the wines gained in body, they could support small casks – something which he feels is important for the stabilisation of colour. His aim, however, is never for the oak to be too present; in fact, over the last decade, the portion of new oak used at the estate has been halved, as he seeks to unmask the fruit and its terroir. Their responsibility is not to fads or fashions, but to the soul of this special site. Sebasti and Pallanti (previously married) have always loved modern art – but the inspiration for Castello di Ama’s remarkable project was the restoration of its cellars in 1998-99. Stripping it of concrete and artificial lighting, there was a huge wall just as you entered the winery with a line of large casks no longer in use. The duo felt intensely that they needed to get rid of them. “It didn’t show how we feel about the wine and the winemaking,” Sebasti explains. “Looking at this space, we both dreamed… this is a great space for a contemporary art sculpture.” They had recently been to see a Michelangelo Pistoletto show, and they thought maybe they could invite him to create something. He did just that, finishing his work L’Albero di Ama in 2000.  Since then, 15 artists – including Anish Kapoor – have produced pieces of art that are now part of the estate, gradually infiltrating the gardens, vineyards and winery. Initially the works were commissioned via the influential Galleria Continua, but since 2015 Philip Larratt-Smith has been in charge of curating the collection. The most recent addition, by Miroslaw Balka, was conceived over nine visits, with the Polish artist spending more than two months in total at the property. But every single artist visits Ama – the artwork inspired by the place and its wines, the finished pieces eventually returning to inspire Sebasti and Pallanti in their own art. “I believe our pieces of art can explain my wine better than me,” Pallanti says.  “Our dream has been to develop this collection,” Sebasti explains. “All the artists that we have met, they fall in love with the place… [They] get inspired by the story, by the history, the real methodology of our winemaking, that we don’t produce only from our vines. Somehow the art of wine and the art itself, they can have a dialogue.” That dialogue sparked the creation of Haiku, Ama’s other Super Tuscan – a blend of Sangiovese, Cabernet Franc and Merlot. Daniel Buren’s Sulle Vigne: Punti di Vista consists of a mirrored wall, two metres high and 25 metres long, that stretches along the edge of their San Lorenzo vineyard, offering five different windows, or five different impressions, of the same site. “So strong, so powerful… it’s about wine, art, history, landscape – everything is there,” Sebasti says of the work. It was standing in front of this impressive installation that Pallanti was inspired to make Haiku, a wine which he sees as an alter ego of the estate.  These remarkable contemporary sculptures are scattered around the hilltop site, providing a dramatic contrast to the original 16th century buildings – and a neat reflection of the estate’s philosophy. “We have this grafting with the new, with the rootstock of the past,” Sebasti says. “We work in a traditional place, with traditional varieties, but for the new world, for the consumer of today.”  The latest installation will be revealed later this year, 22 years after the first piece was commissioned for the collection. “As human beings, we all live with art,” Sebasti says. “If we can bring art into everyday life, it’s a great strength.” Combining respect for their history with the latest technology, she and Pallanti are forging a path ahead, artfully curating the story, and soul, of this extraordinary estate. Montrachet, Chambertin, Richebourg: these names will send chills down the spine of any Burgundy lover. But many of the Côte d’Or’s most famous domaines are looking beyond these grand names, making wines from vineyards and appellations that might otherwise fly under the radar. With reputations at stake, the likes of Domaine d’Auvenay, Coche-Dury and Bizot put as much effort and care into these “lowly” wines as for their Grands Crus. Quality in these appellations is soaring – with better vine material, cooler sites that are benefitting from the warming climate, not to mention better winemaking and know-how all contributing. Here we offer a guide to just a handful of the treasures to be found in Burgundy if you look a bit further afield. Auxey-Duresses Right in the middle of the Côte de Beaune, Auxey-Duresses is a small, sleepy village situated above Meursault. Prior to AC regulations, the white wines of Auxey-Duresses were sold as Meursault and the Pinots sold as Pommard or Volnay. While probably better known for Pinot Noir production, some of its top wines are Chardonnays made in a specific part of the appellation directly bordering Meursault.  Here, high up on the hill, over the brow of Meursault’s highest vineyards you will find vineyards facing unusually north-west. While these vineyards are too cool to adequately ripen Pinot Noir, they have proven to be a great climate for Chardonnay, particularly in today’s warming climate. In a warm vintage, the whites can give the top Meursault vineyards a run for their money. Domaine Leroy, one of Burgundy’s most eminent estates run by Madam Lalou Bize-Leroy, has holdings in this part of Auxey-Duresses in Les Lavières, while Domaine d’Auvenay also regularly produces an Auxey-Duresses Blanc on this particular northwest-facing slope from the vineyards of La Macabrée and Les Boutonniers. Depending on volumes D’Auvenay can produce three separate Auxey-Duresses Blanc cuvées in one vintage or if volumes are down will blend into one. While these are expensive options, the quality is undoubtedly there and this is a great lesser-known spot in the Côte d’Or to source outstanding Chardonnay, particularly in warmer vintages.  Domaine Roulot, Olivier Leflaive and a Jasper Morris MW favourite Domaine Diconne (which has vines dating back to 1924) also produce excellent Auxey-Duresses Blanc on these slopes adjacent to Meursault. While stricter in style than their neighbours, they remain fantastic value. For reds, Domaine Comte Armand’s Premier Cru Auxey-Duresses is another great buy. Made from two complimentary Premier Cru sites – La Duresses (whose brown clay soil brings density and tannic structure) and Les Breterins (on lighter soil bringing fruitiness) combine to make a fabulous Auxey-Duresses well worth discovering. Monthélie Next door to Auxey-Duresses, sandwiched in between Meursault and Volnay, is another lesser-known appellation which has an impressive line-up of producers on its roster. Comtes Lafon, Coche-Dury, Philippe Pacalet, Domaine Roulot and Leroy all produce Pinot Noir from this little, oft-forgotten appellation.  Monthélie is actually one of Bize-Leroy’s favourite appellations for her Maison Leroy selection. Historically, Monthélie tended to produce Gamay more than Pinot Noir, but that is not the case today. While the village wines tend to be a little lean and err too far towards vegetal flavours, the Premiers Crus within the appellation deserve much more attention. Domaine Coche-Dury produces a Premier Cru Les Barbières, while Comtes Lafon’s Premier Cru is in Les Champs Fulliot.  Both have full south exposure, enabling the wines to ripen fully even at higher Hautes-Côtes-like altitudes. In the warmer vintages, you could be justly rewarded for sourcing wines from this under-appreciated little corner of Burgundy. Monthélie is also home to Domaine Potinet-Ampeau, whose collection of older bottlings can wow the senses, provides a fascinating and educational insight into mature Burgundy. Pernand-Vergelesses Few Chardonnay appellations in the Côte d’Or are as underrated as Pernand-Vergelesses. Proximity to Corton-Charlemagne makes this unsurprising. This winemaking enclave, tucked behind the hill of Corton, has long been a consistent appellation where you find outstanding quality at a fantastic price.  While consistent in quality, it is often inconsistent in quantity due to its position between two rising hills. The lay of the land produces natural airflow that attracts hailstorms and is also susceptible to frost as cold air sits in this natural pocket of vineyards. If the region escapes these climatic perils, the Chardonnays are linear and have a flinty, mineral character. The wines can age well, gaining richness as they mature. A top producer of particular note is Domaine Rapet – of whom Wine Advocate critic William Kelley recently noted, “It’s a mystery these wines are not better known or distributed.” Being the biggest landowner of Corton-Charlemagne, they are one of the region’s most consistent white wine producers. Domaine Chandon de Brailles (based in Savigny-lès-Beaune) is also widely recognised for producing the best Pinot Noir in the appellation.  Their Pernand-Vergelesses Premier Cru Ile de Vergelesses regularly competes with top Pinot Noirs made in the more famous appellations and is often described as one of Burgundy’s bargains given the quality. Other better-known producers such as Dugat-Py and a more recent purchase in 2012 by Domaine Jean-Claude Ramonet (one of the world’s top Chardonnay producers) – testify to the quality found here. Perennial FINE+RARE favourite, Domaine Jean-Marc & Hugues Pavelot, also produce outstanding Chardonnay from Pernand-Vergelesses. Morey-Saint-Denis While Morey-Saint-Denis can hardly be described as under the radar, it continues to be undervalued amongst its neighbours despite its obvious pedigree. Morey-Saint-Denis’s prime location in the Côte d’Or sandwiched between Gevrey-Chambertin and Chambolle-Musigny, for some reason – despite being home to five Grands Crus (Clos de la Roche, Clos de Tart, Bonnes Mares, Clos des Lambrays and Clos St Denis) – never gets the same limelight as either of its neighbours.  It’s possible to blame the autonomous nomenclature of its Grands Crus – with only Clos St Denis having a clear link to the village. It has meant that Morey-Saint-Denis as an appellation is seen as somewhat lesser in quality than its neighbours. Another reason might be that, like Auxey-Duresses, before the AC regulations came into play, the wines of Morey-Saint-Denis were either sold as Gevrey-Chambertin or Chambolle-Musigny.  Outside the Grands Crus, our excellent recent discovery is Domaine René Bouvier. Their  Morey-Saint-Denis En la Rue de Vergy is a simply stunning Pinot Noir no matter where it is from. While only classified as village, this vineyard is surrounded by Morey-Saint-Denis’s most illustrious Grands Crus – Clos des Lambrays, Clos de Tart and Bonnes-Mares – on the border with Chambolle-Musigny. In a sunny vintage, this cooler site has excelled and remains one of the great value-buys of 2019. Chassagne-Montrachet Rouge It is not simply lesser-known appellations that get missed. While its Chardonnays get all the attention today, Chassagne-Montrachet was historically a Pinot Noir appellation (as was Meursault). Today, Pinot Noir only represents about 20% of production within the Chassagne-Montrachet Premiers Crus, but until the 1960s, the appellation was dominated by the red grape. Some of the top Pinot Noir sites here were judged to be as good as Musigny, Clos de la Roche and Clos de Tart. Today Chardonnay is the better variety in the village, but there are still top examples of Pinot Noir to be found – often at a great price for the quality. The red wines from the Clos Saint Jean Premier Cru are often described as a unique expression of Pinot Noir – a wine of fantastic finesse, quite at odds with the appellation’s reputation for robust reds. It is arguably the finest site for red wine in Chassagne-Montrachet. Jean-Claude Ramonet produces a top example and Premier Cru La Boudriotte is also great, if not a little leaner in style. Marsannay Most Burgundy buyers rarely explore further north than Gevrey-Chambertin in search of the next big thing, but all indications point in that direction. Marsannay was only given appellation contrôlée status in 1987, encompassing three districts of Chenôve (on the outskirts of Dijon’s urban sprawl), Marsannay La Côte and Couchey.  Unique to the appellations of Burgundy, Marsannay can produce a rosé wine from Pinot Noir.  The foundation for the village’s reputation, many vineyards within the appellation are dedicated exclusively to rosé production. If a red wine is made in these vineyards, it must be declassified to Bourgogne Rouge). While Sylvain Pataille and René Bouvier make the most serious and age-worthy rosés in the appellation, the whites and reds are arguably the most exciting development in recent times. The village of Marsannay is arguably producing the best Pinot Noir for the money in the whole of Burgundy. Cult producers such as Domaine Bizot with Jean-Yves Bizot’s Marsannay Clos du Roy and his Bourgogne Le Chapitre, situated just south of Dijon, are already on aficionado's radars.  These wines are made in tiny quantities and has only further increased the collectability of these wines made in a distinct style (100% whole-bunch fermentations and zero sulphur additions). If sourcing Bizot wines is too painstaking and out of one’s budget, there are plenty of other exceptional growers in this region. Domaine Audoin is producing outstanding Premier Cru Marsannay that can compete with some of the top Gevrey bottlings and the wines still remain fantastic value. Domaine René Bouvier also makes exceptional wines from Marsannay. Côte Chalonnaise: Givry, Montagny and Rully Outside the Côte d’Or, to the south in the Côte Chalonnaise, Mercurey dominates the limelight compared to neighbouring appellations Rully, Montagny and Givry. When handled correctly, however, Givry, can produce fantastic, powerful Pinot Noir that also offers finesse. Rully and Montagny are also a great source of Chardonnay and remain outstanding value.  Montagny only produces Chardonnay – the top producers being Domaine Stéphane Aladame, Domaine Bruno Lorenzon and Domaine Maxime Cottenceau. Rully produces white and red, but the domaine's Chardonnay represents one of Burgundy’s best-value white wines. Producers worth looking out for include Domaine Jaeger-Defaix and Domaine Vincent Dureuil-Janthial. Domaine Joblot is the leading producer in Givry. Their wines consistently compete with those in the Côte d’Or, a beacon for the appellation’s reputation, yet remain sensibly priced. Of the estate’s 14 hectares, nine are Premier Cru, including some of the village’s finest plots such as Clos de la Servoisine and Cellier aux Moines.  L’Empreinte –  a blend of their four red Premier Cru sites (Clos de la Servoisine, Cellier  aux Moines,  Clos  Marole  and  Les Bois  Chevaux – is the property’s top wine. The white, Cuvée Mademoiselle, is a blend of  their  older-vine  Premier Cru  Chardonnay from  En  Veau  and  Clos de la  Servoisine. Joblot is rightfully praised by the likes of Clive Coates MW,  Robert Parker, Allen Meadows and Jasper Morris MW for being the leading address in Givry and one of the greatest estates in Burgundy. Hautes-Côtes de Nuits Situated over the brow of the main Côte d’Or slope and further to the west are the vineyards classified as the Hautes-Côtes (the higher slopes) of the Côte de Nuits. Typically around 100 metres higher in altitude, only the southwest and southeast slopes are warm enough to ripen grapes, but geologically parts of the region are identical to the Côte d’Or.  With warmer vintages, quality here is greatly improving and you can find some outstanding wines at a great price. Two top examples of this come from Vosne-Romanée’s Domaine Gros Frère & Sœur and Domaine David Duband. Both estates have invested heavily in the region believing in the potential of these cooler sites in a warming climate. Aubert de Villaine’s Domaine de la Romanée-Conti also produces an Hautes-Côtes de Nuits Blanc, from grapes grown on the slopes below the historic Abbaye de Saint Vivant. Off the beaten track in Burgundy

Sauternes might be the most distinctive wine on the planet. Its combination of power, unctuosity and aromatic complexity is unparalleled. These extraordinary wines consistently compete with the finest wines made anywhere in the world. But unlike most wines of the world, Sauternes’s journey from vine to bottle is a tumultuous affair. Typically, over half the crop is sacrificed in order to reach the heady levels of complexity the region is famous for. The journey from berry to bottle is one of the most fascinating molecular transformations and one of wine’s greatest miracles. Bérénice Lurton of Ch. Climens describes the process “as a sacrifice, death and resurrection all in one. It is like the rising of the phoenix,” she says. “Within the process of the grapes’ destruction is the ability for transcendence and transmutation into something else, something beautiful.” Every Sauternes vintage is a rollercoaster ride of unknowns – one that would leave most vignerons at the end of their tether. “All the rules you know about wine production: forget about them,” Lorenzo Pasquini – who recently arrived at Ch. d’Yquem – says. The grape’s reaction to its terroir, to humidity, to the process of noble rot: it’s all a gamble and, often, a gamble you lose. No one understands this game of chance better than Bérénice Lurton. The crop at Ch. Climens has been decimated in the last few years. She hasn’t made a sweet wine of any volume for five vintages in a row. Frost has become the biggest threat of late, completely wiping out the most recent 2021 crop as well as 2017. The severity of the damage to the vines in 2017 encroached on 2018 too, where coulure (poor fruit-set) and mildew also dwindled production to zero. In 2019 it was the attack of the drosophila fly that destroyed almost the entire crop, and in 2020 it was hail’s turn to wipe out production. No one in Sauternes is left untouched by the risks involved. Once – and if – your crop survives, there are several key elements to a successful vintage in Sauternes. Pasquini thinks it is best to think of Sauternes as having two ripening phases per season. The first is like any other wine region: the maturation of the grapes. The varied terroir here plays its role. The gravel and clay soils at Yquem, for instance, are vital in reducing the vigour of the vines, naturally producing small bunches of concentrated fruit. Pasquini remembers being taken into the vineyard to try the grapes when he first arrived at Yquem. “It was just incredible how tasty they were,” he says. This concentration is an essential part to the finest Sauternes. At Ch. Doisy-Daëne and Climens, it is Barsac’s limestone soil, which brings added florality, salinity, freshness and aromatic complexity to the final wine. This first phase of ripening will determine the style of vintage (rather than the final quality). Lurton describes how 1997, 2002, ’04 and ’07 were all dull summers in Bordeaux; while not great for the region’s reds, they were incredible vintages for Sauternes. The cooler temperatures produced a brighter, more acidic style with great tension. The development of botrytis following this was a great counterbalance, adding richness, intensity and aromatic complexity. “But it doesn’t have to be a cool vintage in Sauternes to be a great one,” says Lurton. Dry, sunny years like 2005, ’09 and ’15 produced a richer style of wine – with botrytis only adding to the opulence and richness of the year. Once the grapes have reached maturity, and only then, do vignerons pray for botrytis to arrive. “The botrytis plays two roles,” says Ch. Doisy-Daëne’s Jean-Jacques Dubourdieu. “Most famously it is known to digest the skin of the berry and this allows for the water evaporation from the berry, and therefore concentrates the sugar in the grape.” But Dubourdieu believes its second role is just as important, but less well known. “The botrytis causes a chemical reaction in the berry. As a way to fight the botrytis, the berry produces precursor aromatics in the grape. Depending on the maturity of the berry when the botrytis arrives, this directly affects the concentration of aromatic precursors produced.” The magic number for Dubourdieu is a potential alcohol level of 13%. “If the berry is at this level of maturity, it can produce up to 50 times the number of aromatic precursors than less mature grapes.” Once the botrytis sets in, the vignerons then pray (and there is a lot of praying) for another dry period in which the grapes can further concentrate under the effects of botrytis. This is where the wind – a key feature of Sauternes’s microclimate – becomes vital. The wind can quickly concentrate the grapes – but, depending on the varying exposures and terroirs within the region, different styles of botrytis aromatics and flavours develop adding even more complexity to the wine. “Having more botrytis grapes to choose from, creates more flavour complexity in the final blend,” says Pasquini. This is, in many ways, Yquem’s greatest asset – with 113 hectares under vine. In some vintages, quality botrytis might only be successful in one part of the vineyard, but in a great vintage there is opportunity to blend the different botrytis styles from across different microclimates for a more complex expression. This is what brings such variation in style from château to château, and vintage to vintage. Production in the last few years has been on a worrying sliding scale. The sacrifices made seem to be greater with every vintage. For a winegrowing region whose fortunes are so much in the hands of Mother Nature, is Sauternes at risk? Is there a danger that we will lose the unique conditions necessary to make these unique sweet wines? For Dubourdieu, the warming climate has, on the contrary, brought many benefits. Firstly, the grapes much more often reach 13 degrees potential alcohol before botrytis sets in, meaning there are more years in which he can craft “great” wine. His biggest concern, however, is that the climate is pushing the onset of botrytis later and later. “The 2020 is a perfect example of this,” he explains. “The grapes had reached significant maturity by the end of August, but botrytis didn’t arrive until mid-October.” The dry, warm, sunny September held off any onset of botrytis. “The danger of this is if botrytis comes too late, there won’t be enough power from the sun to concentrate the berries through the all-important evaporation process. Also there is the risk of the acidity dropping too.” Beyond mid-October, if no botrytis has formed the whole vintage could potentially be lost. Fortunately this hasn’t yet been the case, but 2020 came close – and it could become more of a threat in the future. “For now, the issue is quantity, not quality,” says Dubourdieu. “The increased levels of mildew in the summer, the hail and the spring frosts – these are our concerns.” Sauternes has had a long line of great vintages, however volumes have been decimated. Whatever the appetite in the market is, there is very little Sauternes available from the most recent vintages. There’s often a question over the appeal of these luscious wines – but Sauternes production is so limited that its audience can only ever be small. Yquem, Climens and Doisy-Daëne all describe themselves as guardians of this unique craft, rather than vignerons feeling commercially pressured to produce a drier style in greater volume. They know that for many wine enthusiasts drinking Sauternes is not a regular occurrence – but they want it to be one of the most memorable wine experiences of their lives when they do. And that’s the magic of these wines. Despite the low volumes, Pasquini, Dubourdieu and even Lurton are optimistic about Sauternes’s future. Quality has never been better and they’re in a long-term game: they look at yields over 20-year, not five-year, cycles. There is a new buzz coming from a rise in tourism in the region, while the spirits industry’s recent interest in Sauternes barrels for cask finishing is yet another alternative income (with old barrels selling for five or six times more than they bought them for), not to mention the publicity – bringing Sauternes to a whole new range of potential consumers. Unfortunately, 2021 is looking like another miniscule vintage for the region and that’s even before botrytis has arrived. But not even this dampens Dubourdieu’s mood: “If you want to control everything, you certainly wouldn’t be a vigneron. As a vigneron you learn to live with uncertainty.” For Lurton, “Living with such uncertainty keeps your feet on the ground.” As the region continues to develop, their experience of uncertainty and necessary sacrifice, Lurton believes, means Sauternes “will never lose its soul”. Wines sold en primeur will be released from the producer after bottling, typically 18 months after the so-called campaign ends. Upon arrival your wine will be stored at Vinfolio in our temperature-controlled warehouse until you decide to take delivery.

We will source this item at the guaranteed price from our network of suppliers and arrange expedited shipment to FINE+RARE.
 The lead-time depends on many variables, but 2-4 weeks is typical for expedited sourcing.

When a wine is on "pre-arrival", it means that we have a confirmed order on the bottles from our supplier and we are simply waiting for the winery or distributor to ship the wine to us. The delivery timeframe for pre-arrival wines varies significantly, depending on where the wine is coming from. We will notify you once they arrive at our warehouse and, at that point, you can decide to arrange shipping or list them for sale.
