Old, low-yielding vines. I’ve written that phrase more times than I’d like to confess. But how much does it really mean when it comes to the quality of the wine in your glass? The 2023 vintage in Burgundy (read our full vintage report here) produced generous yields. In farming terms, that’s a good thing: a plentiful crop that restocks the cellars (and coffers). But the sheer volume of fruit (“a wall of grapes”, as Bouchard’s winemaker Frédéric Weber told us) posed its own challenge – and much of our time in the region’s cellars this year was spent diving into how they managed, or controlled, the yield. It seemed fitting, therefore, to address the topic in greater detail.  In the Old World, appellation rules will limit yields, with the yield generally decreasing as you move up the appellation system (see below a table detailing the maximum yields for Burgundy, for example). Of course, this indicates a relationship between yield and quality, implying less is better – and there is no doubt that excessive yields don’t produce fine wine. But how low is too low? There is a fashion for prizing vines that barely manage to ripen a bunch or two, but do they really make better wine than those producing a decent crop? Beyond our obsession with rarity, what are the consequences of less fruit per vine – and therefore, what does more entail? A note on measuring yield Before we get into the weeds of the matter, let’s address how we talk about yield. In the Old World, the most common measurement of yield is hectolitres per hectare (hl/ha), measuring the volume of juice or wine per hectare of vineyard area. In Champagne the standard measure is kilos per hectare and in Italy you may see reference to quintales per hectare (qt/ha or q/ha, with one quintal translating to 100kg), while in the US, producers are more likely to use tons per acre. We’ll dive further into the many variables here, but it’s worth highlighting that vine density isn’t taken into account by any of these measurements. Although a higher number of vines per hectare will generally mean a higher yield across the vineyard, the increased competition will also likely reduce the yield per vine. For this article, we have spoken to producers from a range of regions, but do note that yields are not comparable between varieties or region. Climate – with heat, sunlight and water availability, as well as the varying size of berries and clusters of any given variety, mean that there is no number that can be deemed a global average when it comes to yield. (Do look at this table compiled by the Wine Advocate’s William Kelley, comparing vine density, cluster weight and juice yields for various classic fine wine regions, to give you an idea of the differences between regions.) Given this, “high” and “low” yields aren’t equated to specific numbers here, but the concept discussed more broadly – and arguably more relevantly for those of us drinking wine rather than making it. Bearing all of this in mind, extremely approximate conversions can be made as follows: one tonne per hectare is approximately 7hl/ha, while one ton per acre is around 17.5hl/ha (Oxford Companion to Wine). Yields: how low is too low? “It’s not extreme mythology: low yields produce better quality,” Cerbaiona’s Matthew Fioretti tells me; for him, high yields risk dilution and sanitary problems – and at excessive levels, that is certainly true. But, as Myriad’s Mike Smith told me, the relationship is “not linear”. Mike Dunn (Dunn Vineyards) generally has low yields, but that’s not necessarily about concentration, he explains: it’s simply about how much they can ripen before winter hits. Up on Napa’s Howell Mountain, their poor soils and farming (avoiding irrigation and fertilisation where they can) naturally produce lower yields. He recently changed some of their Cabernet Sauvignon to cane (rather than cordon) pruning and, although they’re getting more fruit off the same vines, there’s been no loss in quality. “It’s all relative,” says Ivan Massonnat at Belargus in Anjou. He points to Saumur with its limestone soils, where producers can crop 45-50hl/ha without a problem, but on the schist soils that lie beneath his vineyards: “Forget about doing much more than 30-35hl/ha,” he says. And even that has proven challenging for him. In the seven vintages he’s produced at the estate, only two have come close to 30hl/ha, with the average around 15hl/ha, simply due to the challenges of each vintage. He’d have loved to crop more – but nature had other ideas, and vignerons have to adapt to the vintage. Massonnat explains how if you farm to produce yields that are overly low, you can end up with fruit that has high technical, or sugar, maturity, but isn’t yet phenolically ripe – leading to unbalanced wines. Smith echoes this, talking specifically about Beckstoffer Dr Crane, one of Napa’s legendary vineyards, which he finds likes to produce more – around five tons an acre (versus four in most of the vineyards he works with). He sees producers cropping to just three tons per acre there, and in warm vintages the fruit ripens too quickly for the phenolics to catch up. Philippe Bascaules – who was first appointed Estate Director at Ch. Margaux in 1990 – offers an interesting perspective, arguing that there’s no direct relationship between yield and quality. In Bordeaux in the 1970s, he tells me, yields were consistently low – 25-30hl/ha, with wines that were inconsistent. As the wines became more popular, with demand from the US in particular for the 1982 vintage, producers started aiming for significantly higher yields and chaptalizing much more. Soon, average yields had doubled to 50-60hl/ha – a level that was unsustainable, especially in challenging vintages such as 1992, ’93 and ’94. Gradually they implemented changes, introducing green-harvesting (in 1986 at Ch. Margaux) and reducing fertilisation levels in the 1990s. Today, he and his team aim for around 45hl/ha, “a good production” in his mind – but a level which also offers insurance against inclement conditions. Lowering yields is something that, for him, has brought greater consistency to both the estate and region across vintages – ensuring they can ripen the crop each year. Deliberately reducing the yield beyond this, however, wouldn’t offer any serious benefit, he says. Similarly, across the Durantou family’s estates on the Right Bank, including Ch. l’Eglise-Clinet, Noëmie Durantou Reilhac targets a yield of circa 42hl/ha. “The vine wants to produce fruit,” she says, “so if the yield is really, really low, something went wrong.” For her, it’s the balance that matters most. With very high yields, the resulting wines will lack concentration (“You cannot make in tanks what nature hasn’t done before,” she says), but equally if the berries are so small that there is barely any juice, you’ll have little but tannins left to work with. And, while hail or frost will reduce your yield, they won’t result in greater concentration. “I think it just comes down to stress,” Dunn tells me. And that’s a common thread for several producers, arguing that vines need to struggle to produce quality. As Sébastien le Golvet – of Champagne Henri Giraud, who works with the poor soils of Aÿ – says, “genii are born of suffering”. Suffering doesn’t always mean lower yields, however: arguably, Dunn says, in high-vigour sites, keeping higher yields will help increase stress, pushing the vine to work harder – and therefore produce higher quality. Elements impacting yield While it’s impossible for us to address every factor that influences yield, it’s worth – relatively briefly – highlighting a few additional influences beyond site (with poorer or richer soils), variety and vintage: Trellising: Trellising – the shape in which a vine is trained – can be used to control yield. At Cerbaiona, Fioretti emphasises how using alberello or bush vines is key to helping contain Sangiovese’s natural vigour. At Tiberio, Cristiana Tiberio’s oldest vines are pergola-trained, with a traditional Abruzzese system that encourages competition but also increases the canopy to aid photosynthesis and ripening. Vine material/rootstock: The material used in a vineyard is integral (as with Quinta do Noval’s Nacional vineyard, see below). Mike Dunn, for example, mentioned how one of his older vineyards was planted on St George rootstock, known for shatter and therefore limiting yields even further. Jean-Marie Fourrier (Domaine Fourrier) argues that the use of selected clones, rather than massal selection, has resulted in higher yields and the need to green harvest, something that he never does – aided further by the age of his vines (see below for more on this). Vine age: There’s no doubt that the element of vine age is conflated with yields and quality, with older vines often producing better fruit – but less of it. As Mike Dunn told me, the wines from his oldest vines are “more intriguing”, but at some point economics comes into play, and the level of production is financially unsustainable. It’s another non-linear relationship, however, as Durantou Reilhac explains: “Some 70-year-old grandmas can run and dance, and others are weaker.” Although most old vines will produce less fruit, she finds it’s far from uniform in her vineyards – and sometimes there will be young vines that produce less. Virus and millerandage: Virused vines will produce lower yields, and as with old vines, will reach a point where they are unsustainable. While on the surface virus is negative, certain producers do value the reduction in yield or slower ripening that is a result of disease – South Africa’s Hamilton Russell being one (with leafroll virus). Quinta do Noval persists with its own-rooted Nacional vineyard, suffering from phylloxera, with the vines slowly dying and yielding tiny volumes, to produce a particularly special and rare Vintage Port. Similarly, millerandage is a condition most commonly a consequence of poor weather at fruit-set, producing grape clusters with unevenly sized grapes, combining larger and smaller (or shot) berries – sometimes referenced as hen-and-chick. While this reduces yield, the phenomenon is sometimes valued for giving increased concentration to wine. Indeed, some particular clones – such as the Mendoza, Wente or Gingin clones of Chardonnay – are valued for their bunches with hen-and-chicks, and Bret Brothers, for example, even makes a special Cuvée Millerandée – with millerandée Chardonnay – from Les Quarts (a Pouilly-Vinzelles site recently awarded Premier Cru status). Cover crops: At Henri Giraud, Sébastien le Golvet feels that cover crops are essential to the quality of their fruit – and the yield. Sewn just before harvest, the cover crops provide competition up until flowering when they roll the grass mix, creating a bed that holds water and offers nitrogen to the soils, acting as a natural fertiliser – in a way both moderating then fuelling the vines’ growth. This is one hint at the extent to which the type of soils and level of organic matter, not to mention water availability, dictated by site and the farming methods, are all key. The previous vintage: There are two theories at play here. Firstly, conditions during what is known as the initiation phase of the vine cycle, which takes place alongside flowering, will dictate the yield of the following vintage. In 2023 in Burgundy for example, one of the factors in yield was that the spring of 2022 offered perfect conditions, laying the groundwork for 2023’s plentiful crop. As Sébastien le Golvet also explained, however, a large crop in one vintage can tire the vines, meaning they have less to give the following year. How wine producers manage yield The vine naturally wants to reproduce, to grow, ripen fruit and spread its seeds. Vignerons are tasked with taming the plant to focus its energies to develop fruit of concentration and complexity that will make fine wine. This is done in many ways, some of which include: Pruning: The first stage to set up the yield in an existing vineyard is pruning, leaving the appropriate number of buds per vine for the season ahead. The timing of this varies according to the producer, from December through to March, with later pruning helping delay the vine cycle, which is sometimes desirable. Alvina Pernot, for example, specifically pruned her vines shortly (ie to offer a lower crop) in 2023 to help the vines recover from the relatively high-yielding 2022 vintage. Lalou Bize-Leroy famously works with very low yields, and emphasises how important pruning is in this (Domaine Leroy harvested just under 30hl/ha in 2023, its highest ever yield – a number which would still be low by many producers’ standards). De-budding or suckering: In spring, producers will de-bud or sucker the vines, removing lateral shoots and providing further control of the potential yield, as well as the spacing and position of the crop. In 2023 in Burgundy, many producers emphasised how important this was. Hugues Pavelot described it as “drastic”, while Philippe Jouan passed through his vines twice. At Bouchard, Frédéric Weber explained how some of the buds produced two or three bunches in 2023 (rather than the normal one), meaning that even with extensive de-budding yields were very high. Green harvesting: Green-harvesting is the most discussed method of yield control, and one that divides producers. We spoke to several Burgundian vignerons who avoid it (Dominique Lafon, Jacques Devauges at Domaine des Lambrays, Philippe Jouan and Jean-Marie Fourrier, to name a few) – some of whom felt that they had no choice but to use the method in 2023, despite their best efforts. The reason against green-harvesting is that the vine will try to compensate, and that it can be avoided with managing the vineyard in other ways. That said, there are many top-tier producers that green-harvest, and feel it is key to the quality they produce (Ch. Margaux, Eglise-Clinet, Georges Noëllat and Olivier Bernstein, to name a few). And it’s not a decision that any take lightly, well aware that they are literally throwing away potential income. At Cerbaiona, Fioretti compares the vines to runners or cyclists – needing to carry as little weight as possible to get over the finish line. With Sangiovese, he finds it’s unavoidable, especially with the presence of “wings” or “shoulders” (smaller separate clusters that sit on the shoulder of the main bunch). The timing is key, and many producers emphasise the importance of green-harvesting early in the season. For Noëmie Durantou Reilhac, she aims to have this done prior to véraison to avoid twisting the stems (which would impact sap flow) and damaging the skins of the remaining bunches. She’ll do a final pass through her vineyards just before harvest, but this is a method of sorting rather than impacting the ripeness of the grapes on the vine. “There’s a certain point where you can reduce fruit, say a month away from picking, but it won’t do anything,” says Myriad’s Mike Smith. Like many producers, he favours green-harvesting mid-véraison to drop anything that is behind, helping even the ripeness of the crop – as Bascaules does at Ch. Margaux. In 2023, several Burgundy producers highlighted having to do multiple passes to reduce the crop – doing what was sometimes referred to as a “pink” or “blue” harvest on top of a green harvest. Canopy management: A vine’s leaves are its engine – responsible for photosynthesis. The larger the canopy, the larger the engine, therefore trimming the vine’s canopy can help lower its vigour, while keeping a larger leaf area can help encourage vigour. This needs to be considered alongside airflow (to avoid disease pressure) and shading of the bunches (which could delay ripening). If the canopy isn’t balanced with the volume of fruit, it can also negatively impact fruit composition – especially the acid make-up and development of colour and phenolics. Ivan Massonnat (Belargus) explained that in 2022 and 2023, for example, he used a high trellis, allowing a larger leaf area, to capture maximum light and photosynthesis to fuel the vines; but in 2022 he did the opposite, wanting to reduce the size of the “sugar machine”. It has, he notes, become common for large canopies to be used alongside low yields, especially by producers in Burgundy, something he feels has gone too far at certain addresses: “You can kill a wine with concentration,” he says. Some argue that trimming the canopy can encourage it to grow further, while others want to retain a large canopy to encourage root growth (Olivier Lamy feels that the vine has the same amount of growth above and below ground, therefore wanting to retain his canopy to the roots to drive deep into the soil). Lamy is one of a cohort of producers using “tressage”, or braiding, to tame the canopy – a technique pioneered by Lalou Bize-Leroy. For her the aim is to avoid cutting the apex (or growing tip) which would otherwise encourage the growth of lateral shoots. Producers such as Charles Lachaux have taken this even further, training vines to a single stake (more common on the steep slopes of Priorat, Côte-Rôtie or the Mosel) and weaving the shoots into distinctive arches.  The relationship between yield and quality is undoubtedly a tricky one – and one that every producer I spoke to feels is deeply complex. We couldn’t touch on everything here (the tiny yields for botrytised sweet wines, for example, or typically higher yields used for sparkling wine), but there’s plenty to consider. While it remains clear that excessive yields can produce dilute wines, with so many variables play, it’s also clear that less isn’t always better. Read more Editorial

Yield and quality: is less really more?

If you haven’t already heard about Baettig, we urge you to read some of our previous coverage of this rising-star producer. Conceived by Francisco Baettig (the winemaker behind Errázuriz, Seña and Chadwick) and Carlos de Carlos (previously Commercial Director at Errázuriz, he now works for Paul Hobbs) over dinner in London in 2010, Baettig is one of Chile’s most exciting projects – crafting site-driven wines from Malleco and the Maule.  The duo spent years seeking out the right site – realising that to find vineyards that met their standards, they’d have to plant them themselves. In 2013 they put their first vines in the ground, planting Burgundy clones of Chardonnay and Pinot Noir in Traiguén, in the Malleco province. Both Francisco and Carlos had family ties to the region – making it seem like fate.  The site, however, wasn’t chosen purely for their emotional connection to the area, but with an eye on sustainability and quality. This is one of Chile’s southernmost wine regions, with red clay, clay loam and volcanic soils, cool conditions, 25% less sunshine than the Central Valley and – most importantly – plentiful rainfall, allowing them to dry-farm the vines and produce restrained, Burgundy-inspired Pinot Noir and Chardonnay with moderate alcohol levels, bright acidity and vibrant fruit. Francisco is clear that the quality of their vine material has been key to their success – as it is only relatively recently that Chile had access to high-quality, clean Burgundy clones.  While Baettig started with Chardonnay and Pinot Noir, the producer has since added Cabernet Sauvignon from old vines in the Maule to the range, unsurprising given Francisco made his name making Chile’s icon wines.  Fourteen years after they first imagined their joint project, we welcomed Francisco to London to look back at the Baettig journey so far – tasting through a vertical and exploring how the project has developed and evolved.  About the Baettig range  There are currently two tiers to the Baettig range, with the idea that a top tier, single-vineyard offering that will be their “Grand Cru” of sorts, is likely to be added in the future. The current range comprises:  Vino de Viñedo: these wines are a vineyard selection designed for earlier drinking, effectively a “village” equivalent. The Chardonnay and Pinot Noir at this level go by the name of Los Parientes (“the relatives”, a reference to the closeness of the different parcels), while the Cabernet Sauvignon is called Los Compadres (“close friends” – a tribute to the growers with whom they’re working). Los Compadres is sourced from various dry-farmed, cool plots in the more coastal areas of the Maule, with the vines all over 30 years in age and some up to 150 years old, creating lively, juicy and intense expressions of Cabernet Sauvignon. The first vintage of the Los Parientes Pinot Noir and Chardonnay was 2019, while the first vintage of the Los Compadres was 2021. These may be the entry point to the Baettig range, and they are made to drink on release, but they also – like good village Burgundy – have capacity to evolve and will only benefit from an extra year or two in bottle.  Selección de Parcelas: their “Premier Cru” equivalent range, made in smaller volumes from specific parcels and built for longer ageing. These wines see a higher proportion of new oak and longer ageing prior to release. The Chardonnay and Pinot Noir are labelled under the Los Primos name (“the cousins”), while the Cabernet Sauvignon is named Los Padrinos (“the godparents”). The Pinot Noir comes from their El Primo, Chuir, and La Cuñada parcels, chosen for their elegance, structure and ageing potential; while the Chardonnay comes from the Triángulo and Llaima parcels, creating mineral, vertical wines that are all about tension. The first Los Primos Chardonnay and Pinot Noir were made in 2016, with the first wide release from 2017, and Los Padrinos was first made in 2022. Volumes of these wines are tiny, with just 300 to 350 cases made of each of the Selección de Parcelas.  About the winemaking The emphasis with Baettig is firmly on expressing site – and as such the winemaking is very “light touch”, allowing the sense of place to shine through in the wines. The style has evolved, with the use of oak reduced a little from the earliest vintages, generally shifting toward less time in barrel, larger casks and smaller portions of new wood. The fruit is all hand-picked and fermented with indigenous yeasts. The cooler sites, combined with the way Baettig farms and when they harvest, produces fruit with naturally low pH, allowing them to use minimal amounts of sulphur (although with sufficient doses to allow the wines to age and be shipped around the world).  For the Chardonnay, it is all whole-cluster pressed and cold-settled, prior to native ferment in old French barriques. Malolactic fermentation on the Chardonnay is left to happen or not, according to the vintage conditions (with often around a third going through). The élevage for all the wines varies according to the vintage, but the Los Parientes Chardonnay normally spends eight to 10 months in cask, with up to 15% new oak, while the Los Primos spends between 10-15 months in barrel with up to 35% new oak. The new oak for the Chardonnay is all larger 300- and 400-litre casks. A portion of the Pinot Noir is whole-bunch fermented (typically 10-20%), with the rest de-stemmed – with fermentation all in used oak. The Los Parientes stays in barrel for around eight to 10 months, with up to 15% new oak; for the Los Primos, it is 15-16 months, with up to 40% new wood – with the new oak all 300-litre barrels.  For the Cabernet Sauvignon, the fruit is all de-stemmed. Fermentation temperatures are low at around 24-28˚C, with maceration for a maximum 20 days, given the natural concentration and structure of the fruit. The Los Compadres is aged for 10 months in French oak (20% new), while the Los Padrinos spends 15 months in 65% new oak (including around a third in larger 300-litre barrels).  Tasting through the range, there is a clear stamp of style – a flinty restraint, with the emphasis on crunchy fruit and minerality, vibrant acidity, moderate alcohols. While some of the earlier vintages might have offered more overt oak in their youth, this has integrated with time in bottle – and the wines offer at most a subtle spicy complexity. They are beautifully judged, pure expressions of Traiguén.   About the vintages 2022: Generally speaking, 2022 was an outstanding vintage. In Malleco, the year was cooler than average. Winter was relatively dry, with little rain in spring and cool conditions including frost in September and October, leading to particularly low yields. Weather warmed up in February before cooling again in March and April, which also saw quite a lot of rain. This resulted in a late harvest of a small crop of fruit, with great intensity, concentration and excellent tension – with high acidity levels retained thanks to the cooler conditions. In the Maule, the season was moderately warm, producing a more generous yield than further south but similarly high quality. The weather here was warmer in December and temperatures close to average from January through to March. Moderate rainfall in March and April refreshed the season and eased the final stage of ripening, with the fruit offering good acidity, colour and aromatic intensity. The 2022s offer an up-front richness of fruit, with good backbone of acidity – in some ways a combination of 2020 and 2021.  2021: The 2021 vintage was a cooler year – producing wines where the emphasis was on elegance, finesse and tension, perfect for the Baettig style. The winter in Malleco was rainy, with 650mm of water over June and July, laying the groundwork for a good budbreak. Spring was dry and reasonably warm, although a late frost in September reduced yields. Summer was cool, with some rain over December and January (90 mm in total across the two months), allowing the fruit to ripen slowly ahead of a late harvest, developing great aromatic complexity and preserving the acidity levels. These should age particularly well.  2020: This was a warmer year versus 2021, producing richer-styled wines. There was plenty of rain in June and July, however this dried up in August, with little rain for the rest of the growing season. Temperatures rose and the hot, dry conditions allowed the grapes to ripen easily, although an early harvest was key to preserve freshness and tension to complement their natural intensity and generosity. Offering a little more flesh, particularly at this more youthful stage, versus the 2021s, the 2020s are juicy and open, yet with everything in balance. The one we’d pick for drinking now, although there is certainly no rush here.  2016: A rainy winter led on to a cool and rainy spring, with later-than-normal flowering and fruit set and a small crop. Summer was dry and largely warm, and the fruit was harvested early, producing wines that combine refreshing acidity and good density of fruit. The 2016 Los Primos Pinot Noir and Chardonnay were never released, the tiny volumes of Baettig’s first crop, so it was a real treat to taste these special bottles, offering a glimpse of the wines’ ageing potential – with both drinking beautifully.  The vertical: tasting Baettig Chardonnay 2022 Vino de Viñedo Los Parientes Chardonnay: This was really showing well, even though it has only just been released. It’s tight, full of energy, with a punch of minerality, bright taut citrus and crisp green apple. It’s lean and sleek, but with a fleshy, juiciness that makes it hard to resist now. A wine that’s singing. Aged for eight months in 15% new oak. Production: 7,254 bottles  2021 Vino de Viñedo Los Parientes Chardonnay: There’s a lick of lime curd on the nose here, with tightly wound greengage emerging with air. It’s pure and linear, driven with its intense, stony purity, but there’s a pleasing fatness to the fruit behind, with a mouth-wateringly juicy finish and long, saline tang to the finish. Aged for 10 months in only used oak. Production: 16,909 bottles  2020 Vino de Viñedo Los Parientes Chardonnay: The warmth of the 2020 vintage, combined with the cool climate of Traiguén and Baettig’s trademark flinty, lean style, has created a gorgeous Los Parientes in 2020. Now with a few years in bottle, it’s drinking beautifully. The wine remains taut – dominated by vibrant citrus that drives through its core, and the bright acidity brings incredible tension. Yet, there’s also a softness to the wine, with a suppleness to the palate and its ample riper stone fruit that flawlessly complements the mouthwatering zest of the long finish. Punches well above its weight. Aged for 10 months in 10% new oak. Production: 15,240 bottles  2021 Selección de Parcelas Los Primos Chardonnay: The 2021 Los Primos is incredibly impressive – and the step up from Los Parientes clear. There’s a creamy, lactic note on the nose, working alongside lemon curd, honeysuckle and bright citrus and green fruit. There’s a lushness to the fruit, with gorgeous length and energy, outstanding tension and an everlasting finish, with stony, saline minerality that lingers long after the wine is gone. You can drink this now, but it will be even better if you can give it a couple of years in bottle. Aged for 15 months in 35% new oak. Production: 3,480 bottles  2020 Selección de Parcelas Los Primos Chardonnay: Much more open now than the 2021, the 2020 Los Primos is rich and concentrated, with riper white peach fruit and honeyed complexity. There’s a softness to the wine, reminiscent of the suppleness of the 2020 Los Parientes, but additional depth here. It’s round and enticing, still with a backbone of taut acidity, and a long finish with just a touch of oak spice. Hard to resist now, drink this over the next five years. Aged for 15 months in 38% new oak. Production: 4,069 bottles  2016 Selección de Parcelas Los Primos Chardonnay: The first vintage of Selección de Parcelas, with the very first fruit from the Baettig vines, and never released. The 2016 is showing some beautiful development, with honey, sweeter plump peach and nutty complexity. Cooked apple and dried mango sit alongside a zing of limey citrus, with a line of bright acidity that runs through the palate and brings lovely energy. Gorgeous. Aged for 16 months in only used oak. Production: 2,160 bottles  Pinot Noir  2022 Vino de Viñedo Los Parientes Pinot Noir: There is 10% whole-bunch in this vintage, and combined with the youth of the wine, it is shining on the nose – with overt pepper spice, floral perfume and stemmy complexity that makes it aromatically enticing. The palate is pure and bright, with juicy but concentrated mulberry and black cherry, with a saline edge and fresh, chalky purity. Incredibly moreish. Aged for eight months in 14% new oak. Production: 13,205 bottles 2021 Vino de Viñedo Los Parientes Pinot Noir: For this cooler vintage, Francisco opted to reduce the portion of whole-bunch fermentation a little. The wine is bright, crunchy and pure, with a lovely restraint from the extended growing season. Floral tones (rose, violet) sit alongside crunchy red fruit, leading to a palate of effortless purity and length. Vibrant, mouth-wateringly fresh with an earthy, saline finish and very fine tannins. Aged for 10 months in 10% new oak. Production: 13,400 bottles  2020 Vino de Viñedo Los Parientes Pinot Noir: This is in a lovely spot right now – sharing the supple texture of its Chardonnay sibling. It is beautifully elegant, with tealeaf aromatics, gentle spice and crunchy berry fruit. Structurally, it is fine-boned – the fine, chalky tannins adding a graceful outline to the mouth-watering fruit. Gloriously fresh, the finish is saline with the slightest hint of smoke. Dangerously drinkable and incredible value. Aged for 10 months in 10% new oak. Production: 15,180 bottles  2021 Selección de Parcelas Los Primos Pinot Noir: This is such a baby at the moment – and clearly needs time to reveal its full potential. It’s much more savoury than the 2020. There’s some gunflint reduction, but beneath that smoky intensity and an earthiness, alongside the subtle florals, bright redcurrant and raspberry. There’s more grip to the tannin, a tightness to the fruit, but the structure and length offer great promise. A wine of tension. Made with 20% whole-bunch fermentation, aged for 16 months in 34% new oak. Production: 3,409 bottles 2020 Selección de Parcelas Los Primos Pinot Noir: It’s immediately evident that this is Baettig’s Premier Cru – with notably more concentration and complexity. The warmer 2020 vintage produced a vibrant and intense wine, with vivid, juicy red cherry and raspberry fruit, complemented by more delicate floral notes. Alongside the impressive weight of fruit, there’s a pomegranate freshness and mineral line, with the slightest hint of smoke and spice, and a framework of superfine, supple tannins. Made with 20% whole-bunch fermentation, aged for 15 months in 38% new oak. Production: 4,102 bottles 2016 Selección de Parcelas Los Primos Pinot Noir: This was, for me, the star of the tasting. The nose was effortlessly complex, shifting between soft florals, spice, violets and crunchy red fruit, with a dried-earth note too. There was a glorious suppleness here, silken and flowing across the palate, with a fine, chalky texture to the tannin, juicy cherry and a subtle, savoury finish. Beautiful. Everything was destemmed in this vintage and the wine aged exclusively in used oak. Production: 1,440 bottles  Cabernet Sauvignon  2022 Vino de Viñedo Los Compadres Cabernet Sauvignon: This is a glorious expression of bright, modern Cabernet – pure and pristine with crunchy red and black fruit, vivid pencil shavings and an herbaceous green-pepper edge. There’s such intensity to the palate, with its tart red berry fruit, mouth-wateringly fresh and juicy. The abundant fruit is framed by graphite tannins, leading on to a spicy finish. Aged in 20% new French oak for 10 months. Production: 17,000 bottles  2022 Selección de Parcelas Los Padrinos Cabernet Sauvignon: The first vintage of Los Padrinos is only offering more since we first tasted it in February. It’s strikingly different to Los Compadres – a much darker, spicier and smokier expression. The two wines share their tension, with firm acidity that forms the backbone of this wine and drives the long finish, as well as gloriously crunchy and fresh fruit. The nose is savoury and brooding at first, but sweeter plum and cassis fruit lurks behind, while there’s a tart, bright bite to the palate. It still feels compact at this youthful stage, the power and gum-drying tannins needing time to unfurl. Aged for 15 months in 65% new French oak. The seasons have shifted. Drizzle is once more the order of the day, russet tones spreading across the landscape, the soft tread of fallen leaves underfoot – and a new vintage from Burgundy on the horizon.  This week, we made our first, fleeting trip to the region – dipping a toe in the waters of 2021. We tasted with a handful of growers and négociants, getting an initial feel for the year, ahead of our more comprehensive trip and tasting later in the season.  The cellars were full of the familiar scent of fermentation – raw and intoxicating – as the 2022s settled into barrel. Producers were unable to contain their relief at having finally been able to harvest a full crop – especially given the tiny 2021 yields.  As with Bordeaux 2021, the year’s conditions were far from easy. While neither 2019 nor 2020 brought generous harvests, in 2021, Mother Nature conspired against these vine-growers – demanding more than a pound of flesh.  The winter was wet, replenishing the soils’ water reserves. Spring arrived early, with a warm March encouraging the vines to waken, but as has become almost the norm, April brought severe frosts. For three days the region’s vignerons lit candles and did everything to try and shield their precious crop, with snow even falling on the higher vineyards – especially the Grands/Premiers Crus.  Once beyond that hurdle, growers were faced with another – a wet June and July that led to widespread mildew. As in Bordeaux, it was a particular challenge for the increasing number of growers working organically. August was dry, and harvest dates returned to more conventional timing in mid-September – a contrast to the warmer 2018, ’19 and ’20. But thanks to the frost, there simply wasn’t much fruit to harvest.  With the damp conditions, sorting was key – and demanded more of the already small crop be sacrificed. With the health of the fruit imperfect, extraction was a challenge, with a gentle touch required – and chaptalisation once more the norm. Yields everywhere are drastically low – reduced by between 60 and 70%, across both whites and reds, and every quality tier. The volumes are so small that there simply wasn’t enough fruit to produce some cuvées, and we’ll see more blended Premiers Crus as a result.   We have not tasted nearly enough to make declarations about the vintage – once we’ve tasted more widely we’ll publish a full report on the year. What we can say so far is that we tasted some very good whites – the cooler conditions lending themselves to restrained, mineral, high-acid white Burgundy.  The year marks a distinct return to old-school, high-acid, pale-coloured red Burgundy – with alcohols back down to 12-13%. From what we’ve tasted so far, the Pinot Noirs are lighter with a juicy freshness and “buvabilité” versus the bolder 2019 or 2020s. As in Bordeaux in the vintage, the year asked much of wine-growers and quality seems to vary, so we’ll be choosing wines carefully. We look forward to tasting and talking more, getting fully under the skin of the vintage.

Our first thoughts on Burgundy 2021 en primeur

In Bordeaux, you can’t buy wine directly from producers. Instead wines are sold via a complex three-tier system, as they have been since the 17th century. This distribution network – La Place de Bordeaux – is how the wines find their way into markets around the world. So, how does it work? Château X will sell its wine to a négociant (essentially a wholesaler) via a middleman or broker, known as a courtier – originally introduced to avoid the aristocratic owners of châteaux dealing directly with the merchant classes. The négociant will then sell Château X’s wine to merchants around the world – like FINE+RARE – who then sell the wine on to consumers. While, over time, the aristocratic owners of châteaux have in many cases been replaced by banks and insurance companies, the system remains in place. La Place de Bordeaux is seen by many as antiquated and cumbersome, bloated with middlemen taking their cut. However, it’s hard to ignore that more often than not the system works, providing an established and efficient route to the global market – meaning a château can sell its entire vintage in a matter of hours. Initially, the system was a way to reduce risk, and manage supply and demand as effectively as possible. The courtiers’ job is to understand the current market conditions, liaising with the 400 or so négociants to calculate demand and advise châteaux on appropriate pricing for their wine. While the courtiers don’t always get it right, this market insight and propensity to adapt pricing to wider circumstances provides a flexibility rarely seen elsewhere in the wine market. Take the 2019 en primeur releases, for example: many top châteaux reduced their prices by as much as 30% in response to global economic uncertainty, despite the exceptional quality of the vintage. The négociants take on the burden of distributing the wine – meaning châteaux don’t need their own network of salespeople around the world. This is particularly useful for wines where demand outweighs supply; the négociants are responsible for distributing the limited volumes as fairly and as globally as possible. In addition, the system helps with tracing provenance: having a set number of distributors means the wines can be more easily tracked – by both producers and consumers. These different elements make La Place a fast, low-cost and efficient way of distributing wines – and a reason that the system is no longer limited to Bordeaux’s top wines. While most (but not all) Bordeaux will be sold en primeur in the spring, September now sees a second flurry of activity on the Place – with new vintages of top wines from Napa, Chile, Argentina and Italy’s Super Tuscans. The first non-Bordeaux wines to make their way onto La Place were Almaviva and Opus One – Bordeaux-style blends made in partnership with First Growth Ch. Mouton Rothschild. Despite their prestigious pedigree, at first négociants struggled to sell the wines alongside the depth and breadth offered by Bordeaux alone. Today, however, it’s a different story: a shift toward more elegant wine styles in the New World, combined with critics’ praise, has created a global audience hungry for the latest releases from California, Chile and Argentina. William Kelley has rapidly risen up the wine-writing ranks. He started writing for Decanter in 2015, covering the 2015 and 2016 Burgundy vintages, before joining the Wine Advocate in 2018, where he now looks after Burgundy, Champagne, Madeira and English Sparkling Wine. But it’s clear that Burgundy is his passion – spending half the year in the region’s cellars and vineyards. “It is a region that grabbed me the first time I visited (as a student, in winter 2008/2009),” he explains. “For all that it has changed over the last few years, it remains an immensely rich and individualistic wine culture, which never loses its capacity to surprise. Nothing is ever quite what it seems! That, combined with the fact that the Burgundian model has become in a sense the driving paradigm for contemporary wine culture, makes it a very exciting place to be.” As anyone following him on Instagram knows, he seemingly tastes and drinks more old Burgundy than most. But – since 2018 – he’s been doing much more than just drinking the wines, trying his hand at making wine himself, an experience that he feels has only helped him talk and write about the region. “There is no substitute for experiencing first-hand the stressful choice of when to pick; for handling and tasting the grapes at harvest; or for following their progress from must in a tank to wine in a barrel,” he explains. “In 2018, for example, I used very little press wine; but in 2019 I couldn’t get enough of it, the tannins were so velvety… Insights of this nature, in turn, make it much easier for me to discuss the vintage with producers.” In fact, one factor in his decision to start making wine was the rising prices in the region – something that he fears puts some wines “beyond the reach of a new generation of consumers”. However, he still feels that Burgundy can offer value – it’s simply about knowing where to look, and his advice is to look for the best farmers and winemakers working in “lesser” appellations.  “I have championed growers such as Mercurey’s Bruno Lorenzon, Rully’s Vincent Dureuil-Janthail, the Mâconnais’s Jean-Marie Guffens, and Santenay’s Jean-Marc Vincent in the pages of The Wine Advocate, and the results are indisputable when their wines are tasted blind in the company of others from grander appellations. Rather than looking for second-tier producers of the famed Premiers and Grands Crus of the Côte de Nuits and Côte de Beaune, the smart thing to do is to look for real vignerons like these, who are smashing the glass ceilings that have long been imposed by the appellation hierarchy.” As for 2019 in Burgundy, it’s the latest vintage in a growing trend for ever warmer, dryer years – something that he feels is, or should be, forcing vignerons to question the way they work both in the vineyard and winery, with conventional practices adapted to cooler, wetter conditions that are now a thing of the past. But he’s excited about the wines the warm, dry year produced: “The vines adapted to the conditions better than I think anyone could have hoped,” he says. The whites are proving harder to read at this stage, and therefore feels it’s going to be particularly important to revisit them in bottle. But he’s “impressed by how chiselled many 2019s remain, despite their huge levels of concentration” – there are, in his view, “some great bottles in the making”. As for the reds, they are, in his view, “simply brilliant”. For him, the vintage combines elements of 2005, 2009, 2015 and 2017: “If 2019 must clearly be numbered among what the French call ‘solaire’ vintages (ie those shaped by warm, sunny conditions), it also remains very classically Burgundian.” Explore all Burgundy or read more Editorial

Four days, 28 producers and over 300 wines tasted (with a few additional bottles enjoyed over dinner): it’s been a busy few days, travelling up and down the Côte d’Or tasting the 2019 vintage.   It’s a strange time to be travelling – and sending a team to Burgundy, with the burden of quarantine and potential risks, wasn’t taken lightly. We’d normally taste the vintage over three trips – in September, October and November: this year, we weren’t sure what would be possible. For Bordeaux en primeur, we were able to taste samples in the UK. But for Burgundy, with the tiny volumes involved – especially in a vintage like 2019 where yields are down by up to 50% – such an endeavour simply isn’t possible for the vast majority of domaines. These producers just don’t have enough wine to send a bottle of each cuvée – of which there may only be one barrel – to distributors around the world.  It might seem an indulgence to travel to Burgundy to taste fine wine. But tasting the vintage is about so much more than just the wines: it’s about being able to talk to producers, get into the vineyards and cellars, to really see what made the wines the way they are. It’s about us being informed, to be able to share with our colleagues and customers exactly what we think of the vintage – which wines we loved, which we didn’t, and, most importantly, why. It’s also about supporting our producers – doing what we can for these true artisans, many of whom are much more than business contacts, but have become friends. Some are fledgling wine projects that are already facing the challenges of small yields (as in both 2019 and 2020), as well as today’s economic uncertainty – and we want to, and must, champion these exciting projects, for they are people we believe are doing truly great things.  A small group from FINE+RARE visited the region in July, tasting a handful of the 2019s – but in an even more youthful stage, when the wines can be hard to read. Nevertheless, these early conversations with producers formed the foundation of our visit. It was clear, however, that we needed to taste – and talk – more. So we decided to send a group of six, that would be divided in two to fit into the often small cellars and wineries of the region’s various villages, and to cover as much ground as possible over four days. 
Of course, things were a little bit different this year. Each of our groups had a mini-van so that they could socially distance at all times, wearing masks as we dashed up and down the D974. Wherever possible, we wore masks, as did the vignerons we visited. Bottles of hand sanitiser had appeared in the corners of barrel rooms, or at the doors of wineries. While their smiles might have been covered, each one welcomed us warmly – offering an amazing amount of time and wisdom with us as they shared precious samples of their 2019s, guiding us through their range and the vintage. The region as a whole was quiet. As one producer explained, normally he would have four or five visits a day at this time of year; with Covid, he’s only doing that number a week. As a result, winemakers seemed particularly happy to see us, and were – fortunately for us – able to share even more of their time than normal.  Tasting was, this year, a joy – the ripeness of the vintage, combined with its acidity, makes even these youthful samples effortless to taste. The wines are superb – and we’ll be publishing our full thoughts on the vintage in due course. We hope to go back to taste even more, if we can, although it seems increasingly unlikely. I’m writing this from the Eurostar, returning to London just as it shifts to Tier 2, with socialising outside your household banned as of today. With lockdown looming (not to mention our 14-day quarantine), our dinners in Beaune became a final hurrah – as I’m sure others did in London this week, seizing the opportunity to break bread, open bottles, share them and talk about them. On the ground: digging into Burgundy's 2019s

Bordeaux has several different classification systems. While the Right Bank has only Saint-Emilion’s system (one that is a source of controversy), the Left Bank has a more complex web of rankings.   
The 1855 classification is the gold standard. The most famous and influential of them all, it lists the Left Bank’s very top estates. But beyond this crème de la crème, there are several other systems ranking properties – namely the Graves classification, the Crus Bourgeois and Crus Artisans.  
The Graves classification  
Almost 100 years after the famous 1855 classification, producers in the Graves decided to create their own equivalent. Other than Ch. Haut-Brion, the region’s properties had not been included in the 1855 classification. A draft of the classification was drawn up in 1953, then the official list ratified in 1958, with some changes in 1959.  
The Graves classification is much simpler than the 1855 classification. There is only one tier, with estates declared “Grand Cru Classé de Graves” for white wine, red wine, or both. Sixteen estates in total were defined as the region’s best. Couhins, Couhins-Lurton and Laville Haut-Brion were classified for only their white wines, while Fieuzal, Haut-Bailly, Haut-Brion, La Mission Haut-Brion, Pape-Clément, Smith Haut Lafitte and La Tour Haut-Brion were classified only for their reds.  
Interestingly,. Ch. Haut-Brion is only classified for red, however this is not because its white was not deemed worthy, but because it did not apply for classification, given production of the illustrious wine is so small. It remains one of the region’s highest-rated and most expensive whites. 
Although there have been no changes since 1959, some of the wines are no longer made under the same name. Both part of the Clarence Dillon family, Ch. Laville Haut-Brion is now bottled as Ch. la Mission Haut-Brion Blanc, while fruit from La Tour Haut-Brion is now used for the second wine of La Mission, La Chapelle de la Mission Haut-Brion (read more about the genealogy of the Haut-Brion estates here).  
The Pessac-Léognan appellation was only introduced in 1987, so some of the wines are bottled under this today.  1959 Graves classification  Ch. Bouscaut (red and white)  Ch. Carbonnieux (red and white)  Domaine de Chevalier (red and white)  Ch. Couhins (white only)  Ch. Couhins-Lurton (white only)  Ch. de Fieuzal (red only)  Ch. Haut-Bailly (red only)  Ch. Haut-Brion (red only, also part of the 1855 classification)  Ch. Latour-Martillac (red and white)  Ch. Laville-Haut-Brion (white only, now the white of La Mission Haut-Brion)  Ch. Malartic-Lagravière (red and white)  Ch. La Mission Haut-Brion (red only)  Ch. Olivier (red and white)  Ch. Pape-Clément (red only)  Ch. Smith Haut Lafitte (red only)  Ch. la Tour-Haut-Brion (red only)  The Crus Bourgeois  The term “Cru Bourgeois” has long been used casually, but it was introduced as a formal classification in 1932. There have been many changes to the classification over the years. There were 444 properties in the original group, many of whom used the term on their labels even though the classification was never officially ratified. In 2003, after three years of debate, the classification was updated and split into three tiers (with Cru Bourgeois Supérieur and Exceptionnel added), only to be annulled in 2007, with the term then banned from labels. In 2010, the Cru Bourgeois classification was re-introduced and assigned to wines rather than estates, with their status re-assessed each year, but this too was soon replaced.  
In 2020, a new version of the classification was unveiled, going back to the three tiers of Cru Bourgeois, Cru Bourgeois Supérieur and Cru Bourgeois Exceptionnel. The top rank of “Exceptionnel” includes just 14 estates, with 56 Crus Bourgeois Supérieurs and 179 Crus Bourgeois (adding up to a total 249 properties). The classification is only being assessed every five years, with the next iteration set to be announced in 2025.   
The classification is decided based on the quality and consistency of the wine (assessed via rigorous blind tasting), traceability and authentication, with sustainability encouraged and rewarded. While these wines are not as highly regarded or sought after as those in the 1855 classification, the wines generally offer good value, and all come from the Médoc, Haut-Médoc, Listrac, Moulis, Margaux, Saint-Julien, Pauillac and Saint-Estèphe. The Crus Artisans  
The Left Bank also has the Cru Artisan classification, designed to highlight smaller operations where the manager/owner is involved in every stage of production. The term has been used for over 150 years, however its official meaning was introduced in 1989. The classification was launched in its current guise in 2006, open to estates in the Médoc, Haut-Médoc, Listrac, Moulis, Margaux, Saint-Julien, Pauillac and Saint-Estèphe. Generally family-owned, properties must grow their own grapes, then make and sell the wines.  
There were 44 Cru Artisan estates in 2006, but the latest classification (unveiled in 2018) included only 36 – with many addresses sold/absorbed by other producers, some retiring, as well as a handful of new names added. The classification is based on a visit to the estate and blind tasting of its wines. On average, Crus Artisans have just 10 hectares of vines. For up to 499 bottles in storage, the rate is 39¢/bottle per month or a $50 minimum monthly charge (this covers up to 142 bottles). For over 500 bottles, the storage rate is 35¢/bottle per month.

Storage is charged at HKD 40 per 12-bottle case per month. A minimum monthly storage fee of HKD 80 applies, covering up to 24 bottles.

By selecting third-party shipping, you will take full responsibility for all aspects of legal compliance and authorize Vinfolio to transfer the items to the party specified in your instructions. Items shipped via third parties will remain in their original packaging.

Collection times are between 8:30am - 12pm & 1:30pm - 4:30pm, Monday to Friday. Wines at Will Call, that are not picked up within 10 business days, will be transferred to storage and subject to a $1.50 per bottle stocking fee.

Wines sold en primeur will be released from the producer after bottling, typically 18 months after the so-called campaign ends. Upon arrival your wine will be stored at Vinfolio in our temperature-controlled warehouse until you decide to take delivery.

We will source this item at the guaranteed price from our network of suppliers and arrange expedited shipment to FINE+RARE.
 The lead-time depends on many variables, but 2-4 weeks is typical for expedited sourcing.

When a wine is on "pre-arrival", it means that we have a confirmed order on the bottles from our supplier and we are simply waiting for the winery or distributor to ship the wine to us. The delivery timeframe for pre-arrival wines varies significantly, depending on where the wine is coming from. We will notify you once they arrive at our warehouse and, at that point, you can decide to arrange shipping or list them for sale.
