From humble beginnings in Beaujolais in the 1980s, the natural wine movement has become a global force. But what influence has it had just north in Burgundy’s long-established, terroir-focused appellations? Simon J Woolf explores the blurred line between classical and natural winegrowing

It’s not every day that you get to taste wines made over half a century ago – but earlier this month I got to trace CVNE’s flagship Imperial Gran Reserva all the way back to the 1947 vintage. Victor Urrutia, the fifth generation of his family to take the helm of this legendary Rioja producer, put together a tasting of what he called “the dirty dozen” – lining up 12 vintages of Imperial. The wines were chosen to show how the wine speaks across a range of vintages – not just the most famous, but the hot, the cold, the mighty and the mediocre.  CVNE has been making wine in Rioja Alta since 1879, so – even going back to 1947 – this tasting offered just a snapshot of its history. Imperial was created in the early 20th century (1917 is the earliest vintage Urrutia himself has tasted), conceived as “super Rioja”, Urrutia explained. The idea was to make the best wine possible, regardless of its commercial potential, at a time when Rioja didn’t have the prestige of today. Around 50,000 bottles are produced, but – importantly – Imperial isn’t made in every vintage, with the quality of the fruit in some years not meeting CVNE’s stringent standards (there was no 2003, 2006 or 2013, for example, and there won’t be a 2023 either).  For Urrutia, the goal with Imperial now is to reflect each vintage, and fine-tune the wine rather than look for revolution. The early vintages are their benchmark and inspiration. Across the vintages, however, Urrutia points to a “churchy” nose – something he finds is distinctly Imperial and reminiscent of the winery.  It’s easy, perhaps, to forget how well Rioja ages – and not just over a decade or two, but over half a century. The oldest vintage in this tasting, the 1947, was undoubtedly the star – a wine that has retained its freshness, with delicate aromatics and a beautifully long, pure, resolved palate. The entire flight impressed – with the quality of Imperial shining through. Some of Rioja’s legendary vintages featured (the 1970 and 1959, which sit alongside the likes of 1982 and 1964 in the history books), but my personal favourites were the aforementioned 1947, the still compact 2004 (named Wine Spectator’s Wine of the Year in 2013), the brooding 2011 and pretty, elegant 2018.   The Imperial vineyards  The fruit for Imperial Gran Reserva comes from CVNE’s best vineyards, all over 40 years in age and almost all bush vines, yielding around 4,000kg/ha (equivalent to circa 25hl/ha or less than 1.5 tons/acre). The parcels all sit close to the Cantabrian mountains, at around 500-600 metres’ altitude, and on poor but cool soils (clay and limestone) – lending the wines great freshness, even in hot and dry years, explains longtime Technical Director María Larrea.  The village of Villalba de Rioja has been the backbone of the wine since its conception. This village was where the Real de Asúa brothers (who founded CVNE) first bought vineyards, four kilometres from Haro. The vineyards are steep and south-facing, exposed to the winds and some of the vines therefore have to be trellised (cordón Royat), but it brings acidity and freshness to the wine – something that is essential for its ageing potential. Parcels in the villages of Briones and Torremontalbo were added later, in the 1960s. Briones has richer soils, gentle slopes and a warmer climate, giving structure and body to the wine, while Torremontalbo has steep, stony slopes with calcareous soils and a significant diurnal shift, adding minerality and finesse to the blend.  The Imperial blend  The blend has shifted over the years, with the wine originally around 40% Garnacha and 40% Tempranillo, with the remaining 20% Graciano and Mazuelo. The old vineyards were field blends, with the varieties interplanted and harvested together, meaning mixed ripeness levels – something that arguably brought balance and complexity to the wines, even if some of the fruit wouldn’t have been ripe. Nowadays, each variety is planted separately at CVNE – allowing them more control and precision, harvesting each grape at the perfect moment and crafting a blend in the winery.  There was a move away from Garnacha in the 1970s, with more and more Tempranillo planted instead. Garnacha was less appreciated, seen as a workhorse, an impression that was only reenforced when lesser, high-yielding clones were planted in the 1980s and 1990s. As Larrea also noted, Garnacha is much more prone to coulure and millerandage (poor flowering and fruit-set), which may have been another factor in its decline. There was also a time, Urrutia explained, when Bordeaux was the reference point for fine wine, and they looked to imitate the region, favouring Tempranillo for its darker colour versus the more thin-skinned and therefore pale Grenache. Today, the blend is dominated by Tempranillo (with the 2017 and 2018 Imperial both 85% Tempranillo), but Grenache is undergoing a revival across Rioja and – provided they can have the right clonal material and/or older vineyards – it may contribute more to the blend in time.  The proportion of Graciano and Mazuelo has been reduced slightly, but Larrea emphasises how important the two grapes are in the face of climate change. Mazuelo (aka Carignan/Cariñena) provides structure and colour, while Graciano contributes acidity and aromatic complexity.  The winemaking  Although she joined CVNE in 1991, María Larrea took over the winemaking for Imperial with the 2005 vintage, following on from Basilio Izquierdo, who had been running things for over 30 years (since 1973). Before Izquierdo came Ezequiel García, known as “El Brujo” (“The Wizard”), winemaker for CVNE for over three decades (he returned briefly in 2014 to recreate their legendary white, Monopole).  Across the three winemakers and almost 70 years, surprisingly little has changed. The winemaking here remains extremely traditional, although technology has allowed the team to monitor the wines more closely, and for better winery hygiene, as in most regions. Fermentation remains indigenous, although it’s no longer spontaneous – the wines have been inoculated with a selected strain of their indigenous yeast since the early 2010s (with some experiments in the 1990s). Traditionally fermentation was in concrete tank, however this moved to oak in the 1990s, with one lone vintage (1994) fermented in stainless steel when the vats hadn’t arrived in time.  The wines used to be stored in barrel and only bottled when they were sold, so some older vintages of Imperial spent over a decade in barrel, while today the wine normally stays in barrel for between two and three years. (The bottling dates for each of the vintages is included below – the 1947 wasn’t bottled until 1960!) Originally the oak was all American, simply because that is what they had access to via their historic trade routes, and the barrels were kept for decades (Larrea remembers using 40-year-old barrels when she arrived in the 1990s). CVNE gradually started introducing French oak in the 1980s, with around 30% French oak used in the 1990s and around 60-70% today, with the remainder American.   The wines: tasting eight decades of CVNE Imperial  A note on the bottles themselves: older vintages are in green glass, however they moved to brown glass around 10-15 years ago.  2018 Imperial Gran Reserva: This was a real highlight of the vertical. It is very youthful still, fruit-forward, yet with amazing finesse and delicacy. The nose is precise with dainty aromatics of spice, graphite and florals alongside the crystalline fruit. The palate is juicy and lithe, pure, silken and fresh with savoury tobacco and dried red berries filling the mouth-watering finish. Beautiful and very open, even now. Fermented in oak, 14% alcohol and bottled July 2021.  2017 Imperial Gran Reserva: Frosts swept across much of Europe in late April in 2017, although the rest of the season was relatively warm, producing a tiny crop of concentrated fruit. It’s a drastically different wine to the 2018, yet still with great freshness and a floral lift alongside ripe, sweet red fruit. The palate is tight, much less approachable than the 2018, with compact tannins, a bite of crunchy acidity and a grip of firm tannins, while smoky tones that fill the finish. Decant to enjoy now, but this will be even better with a couple more years in bottle. Fermented in oak, 14% alcohol and bottled July 2020.  2015 Imperial Gran Reserva: The 2015 Imperial is dark and intense, layered with rich bramble fruit, cedar, tobacco, spice and something meaty – a hint of biltong, perhaps. The palate echoes the concentration of the nose, with chewy tannins and a line of acidity that cuts through its intensity. Powerful, almost stern, with more dried fruit coming out with air, the finish is long and savoury, with a touch of red miso. Fermented in oak, 14.5% alcohol and bottled June 2018.  2011 Imperial Gran Reserva: Another standout in the vertical, the 2011 Imperial offers a dark and pure nose, still surprisingly primary with black cherry and cassis fruit, lifted by sweet spicy perfume. The palate is silken and pure, still so youthful, flowing across the tongue, framed by firm but integrated tannins. It’s concentrated and long, with floral aromatics dancing on the juicy finish. Hard to resist with great balance. Fermented in oak, 13.5% alcohol and bottled July 2014.  2009 Imperial Gran Reserva: This is a very serious Imperial now at a lovely stage of maturity – with savoury undergrowth and spicy notes sitting alongside the vibrant dark berry fruit. The palate is intense yet with a softness to it, despite the chewy framework of tannins. It’s juicy and expressive, with smoky, spicy, tobacco notes playing on the finish, and just the slightest hint of leather starting to appear. Fermented in oak, 13.8% alcohol and bottled January 2013.  2004 Imperial Gran Reserva: From “a textbook vintage” in CVNE CEO Victor Urrutia’s words, the 2004 is shining. Pencil shavings and bacon complement ripe, dark fruit. The palate is tight and compact, yet with a juiciness that elongates the whole thing, with acidity that drives through to the long finish. The tannins are supple and soft, integrated with the fruit, but still offer a grip on the finish. Bright and effortlessly balanced. Fermented in oak, 13.8% alcohol and bottled October 2008.  1994 Imperial Gran Reserva: This is an intriguing vintage of Imperial, the only one ever to have been fermented in stainless steel as they were switching from cement to wood, but the new vats didn’t arrive in time for the vintage. It was also served at the wedding of Spain’s Crown Prince, who later became King Felipe VI. After the 2004, this marks a shift towards wines dominated by tertiary notes, although there’s still plenty of fruit here. The nose is spicy with mushroom and undergrowth alongside incense and leathery tones. The palate is laden with umami – with fresh leather and dried berry fruit – as well as dried strawberries, supple tannins and refreshing acidity. Fermented in stainless steel, 13.16% alcohol and bottled June 1998.  1980 Imperial Gran Reserva: As CEO Victor Urrutia said, 1980 was “a shit vintage” – and has always been in the shadow of 1981 and 1982. Tasting the wine today, that’s probably fair – however it’s still an impressive wine. The nose has a distinctly herbal, menthol edge to the sweet fruit – macerated strawberries, with a balsamic hint. The tannins still offer bite, while the fruit shifts to darker, more bramble tones towards the finish. Fermented in concrete, 13.4% alcohol and bottled May 1985.  1970 Imperial Gran Reserva: The 1970 vintage was hot and produced powerful wines – earning it a reputation as one of Rioja’s finest vintages. After over 50 years, the wine is intensely savoury – combining soy, marmite and barnyard tones with intense, dark fruit. With air, the wine offers layers of spice (almost reminiscent of paprika), bacon frazzles and smoked almonds, complementing the concentrated core of fruit. It’s intense yet balanced, with bright acidity that keeps everything fresh and fills the long finish. Fermented in concrete, 12.97% alcohol and bottled March 1975.  1968 Imperial Gran Reserva: From a more difficult vintage, the 1968 Imperial has a charming nose that seamlessly combines savoury and sweet – with earthy richness that sits alongside incense-inflected berry fruit and a pleasing herbal note. The palate is elegant and vibrant, with plenty of fruit still driving through its core, while more savoury, smoky notes dominate the finish. Fermented in concrete, 12.7% alcohol and bottled April 1974.  1959 Imperial Gran Reserva: The 1959 vintage is another of Rioja’s most lauded, although I suspect this bottle was not showing its best. There’s a plushness and intensity to the palate, with a sharp drive of acidity, while the nose is dominated by leather, black liquorice and barnyard. Fermented in concrete, 13% alcohol and bottled February 1968.  1947 Imperial Gran Reserva: An amazing wine to tasted, the 1947 CVNE Imperial has a reputation – one that this bottle more than lived up to. Coffee and tobacco notes with bright fruit – ripe red cherry and raspberry, as well as florals, incense, black tea and sage, alongside smoky perfume. It’s long and fresh on the palate, seamless and fully resolved but pure and persistent, with a Bovril edge to the finish which is vibrant and long. Gorgeous now – drink it while you have the chance. An icon through the ages: CVNE’s Imperial Gran Reserva 

We normally taste Ch. Berliquet at Canon during en primeur, and with a tightly packed schedule there’s never enough time to visit both properties. This year, however, an extended trip allowed us to visit once most of the trade had left the region. On the sunny Monday after the week of en primeur, we arrived at Canon as normal – but, instead of disappearing into a tasting room, hopped onto some of the property’s iconic bikes (which are genuinely used by staff to travel between the two estates), and pedalled across the vineyards to Berliquet – a property that the Chanel team has quietly been transforming.  Ch. Berliquet is one of the oldest estates in Saint-Emilion, with roots dating back to the 1760s. The first known owner was Jean de Sèze, a contemporary of Jacques Kanon (the founder of Ch. Canon). This single plot of vines on the slopes of Saint-Emilion’s limestone plateau has remained unchanged for over 150 years. Southwest of the town, nestled between Ch. Bélair-Monange and Ch. Angélus, it offers much more than meets the eye. The wines were vinified by a local co-operative as recently as the late 1970s and the property only achieved Grand Cru Classé status in 1986. When Chanel acquired the property in July 2017, you would be forgiven for thinking that fruit from Berliquet would go into its more illustrious neighbour, Ch. Canon (which Chanel has owned since 1996); but that wasn’t what they had in mind.   “At the beginning, we took our time with Berliquet. To start with, we had to focus on ourselves,” Axelle Araud, the estate’s Wine Development Director, told me at a recent vertical tasting. The team credits the estate’s progression in part to a better understanding of their surroundings. Not long after their acquisition, the team carried out an extensive soil study which revealed that the estate’s slopes are home to all three of Saint-Emilion’s hallmark soils in equal measure: the vineyard’s plateau is made of limestone, the hillside a mix of limestone and deep clays, while the banks of the Dordogne river are predominantly sand and clay. The unique diversity of the soil helped to underline the estate’s identity.  “Ch. Berliquet is the expression of a specific landscape,” Araud says. One key element of this landscape is a Mediterranean belt that runs across the property (found at Bélair-Monange too), with Mediterranean species of plants naturally growing here – with cypress, fig, pine trees, lavender and laurel all at home. The team has looked to nurture this natural biodiversity, planting over 1,000 hedges, shrubs and trees since 2017, as well as installing nesting boxes for birds (to help as natural pest control). The property is certified organic as of the 2024 vintage.  Alongside this, Nicolas Audebert has embarked upon significant restructuring of the vineyards. At the beginning of Chanel’s tenure, the vineyard was planted with as much as 80% Merlot; but, in early 2018, following their soil analysis, the technical team realised the significant role that Cabernet Franc could play on the property’s clay-rich soils, on the slopes below the limestone plateau. Since then, the vineyard has gradually been restructured, with plots of Merlot replaced with Cabernet Franc. Today, 2.5 hectares of the vineyard have been replanted, taking the proportion of Cabernet Franc up to 40%. The goal in the long term is to bring the blend up to 50% Cabernet Franc.  In 2021, they also decided to plant some Malbec – 0.34-hectare plot of this grape that was – prior to phylloxera – widely planted in the region. Nicolas Audebert and his team believe that addition of malbec will add to the diversity of the fruit, the results of this change will be evident from the 2024 vintage, with its first inclusion in the blend.  While much of the work has been in the vineyard, part of Berliquet’s recent progress can be linked to the winery. Although Berliquet benefits from having the same technical team as that of Canon and Croix Canon, one of the thinks that marks Berliquet out from its stablemates is their use of amphorae. The estate started with just two amphorae in 2019, and today have 12 – deemed a key part of the wine’s character, with 10% of the blend matured in these clay vessels instead of oak. Araud pointed out that the amphora have helped to preserve the brightness of the fruit – carrying through their work in the vineyard to the final wine.  The 2023 vintage also saw the inauguration of what Araud calls “the playground” – their new vat room, complete with 22 stainless steel tanks. “Now that we have all the building blocks in place in the vineyard, we can pay more attention to each and every plot, resulting in greater precision and refinement in the final blend,” she explains.  The 2024 vintage is the eighth under team Chanel and, over that time, the team has continuously questioned their practices, making small adjustments in the vineyard and winery – making gradual but constant progression. And that progression is evident in the wine today, which has shaken off any rusticity it might once have displayed. As Jean-Basile Roland, Commercial Director for Chanel’s three estates, described to us back in April, they’ve been sharpening the wine’s silhouette – a wine that he describes as “telluric” versus Canon’s “ethereal” style. However you describe it, the wine is clearly better than ever before and well worth watching, with more improvements undoubtedly in the pipeline. Walking into the cooperage at Ch. Smith Haut Lafitte is like stepping back in time, filled with the smell of seasoned wood, an open fire and the same tools that barrel-makers have used for centuries. Few estates have the luxury of an in-house cooper. While producers inevitably work closely with the tonnelleries (barrel-making firms, such as François Frères, Stockinger and more), having an artisan on-site, working alongside the winemaking team to craft casks exclusively for your specific terroir is different. “It’s very important for the precision of the wine,” explains Cellar Master Yann Laudeho.  Florence and Daniel Cathiard, owners of the Pessac-Léognan estate, built a cooperage on-site almost 30 years ago, in 1995, and their current cooper, Yann Dez, has been working here since 2021. The Bordeaux native’s father was a metal worker, and Dez fell into the world of barrel-making entirely by accident – having a friend who was a tonnelier, and a job opening at an opportune moment. Before he knew it, Dez had learnt the trade from some of the best coopers in the country (including one who now makes the barrels at Ch. Margaux), and spending 15 years working under Didier Fesil. Fesil was the Cathiard family’s first cooper back in 1995, who went on to create his own small tonnellerie (Tonnellerie Bordelaise), and has been named the nation’s best “Master Cooper” – twice. Indeed, Fesil is still very involved with the estate, helping choose the wood for barrels and advising on all things oak; and it was Fesil who put Dez forward for the role at Smith Haut Lafitte.  “There are no books,” Dez says, when I ask about the art of barrel-making. “It’s passed on from tonnelier to tonnelier." The first evidence of coopering as a trade dates back to 900BC – with the craft passed down the generations ever since. “I continue the tradition,” Dez says, clearly with a sense of pride in this ancient, artisanal skill. But with the dust, noise and physical labour involved, tonnellerie schools, Dez tells me, are struggling to recruit young people. It’s common for coopers to have issues with their shoulders and ears (from the non-stop hammering) – and Dez himself has broken an elbow.  In theory, the process can be mechanised – but Dez is clear on how important it is to work by hand, and not just to preserve this ancient art. “I hear the nose, I feel the resistance,” he says. Each barrel, he explains, is different – with a slightly different number of staves and slightly different shape, all adapted according to the wood he’s working with. Selecting the right wood is key – “reading” it, he explains, looking at the grain to see where potential weaknesses are, understanding where will take the most pressure and placing each stave accordingly, ensuring not a drop can seep from the finished barrel. “It’s a job that is both physical, and at the same time requires thinking,” says Dez – and this combination is much of its allure for him.  Hearing the way Dez talks about barrels is fascinating; for him, they each have a unique personality. When I ask Dez how he knows he’s made a really good barrel, he shrugs: “On le sent.” (“You feel it.”) As you toast a barrel, he tells me, the scent of the smoke changes, releasing different aromas – something I smell as he works in front of me. Knowing when it’s spent the perfect amount of time over the fire is the secret – and it’s about more than just the smell, it’s a gut instinct that he can’t quite explain.  Smith Haut Lafitte sources oak from a range of forests, and are always trialling wood from different forests, toasts and doing blind tastings, although – after over 25 years – they know what works for their wine, and terroir. Cellar Master Laudeho explains that, for him, Tronçais and Jupilles are the best – “diamonds” that flawlessly complement their site. And that balance is key; the wood works for the wine, not the other way around.  It seems like a lonely job, I comment, hammering away in his tower – but it’s not something that bothers him. “I’m a bit of a perfectionist,” he tells me. Having only himself to depend on, and knowing that he can ensure each barrel meets his exacting standards, suits him. Indeed, he doesn’t even settle for standard tools – making most himself, custom-designed to suit the way he works. He talks me through a specific hammer that he made, and how it allows him to work better and more precisely, the wooden handle almost silken from the hours of use, shaped to his hand.   The lone electronic technology to have earned a place here are noise-cancelling headphones and a Marshall speaker. He’s a musician in his spare time, and an additional perk of working alone is that he gets to spend all day listening to music. “All the barrels I’ve made,” he says, “are made with music.” He avoids anything too modern or electronic, favouring old jazz, with some reggae, ska jazz and funk in the mix, depending on the day. While he doesn’t feel the music he listens to influences his coopering, he suspects his mood does – and music is a big part of that.  Woodwork is much more than a job for Dez. I spy a beautiful chest alongside his speaker, and it’s one that he made. He has a workshop at home too, spending his free time making everything from guitar stands and toys to chandeliers – anything, he says, that isn’t straight, and therefore can’t really be done by a machine.  It’s amazing watching him work – in the same way as coopers have for centuries – with a natural intuition, ease and precision. There’s definitely something musical to it, a craft that has its own rhythm. He makes around 300 barrels a year, and they may not be soloists – but each one contributes their own note to that year’s symphony.  Explore all current listings of Ch. One name that kept cropping up when speaking to winemakers about wine and cheese pairing was Bernard Antony, a man who now supplies 20 of the world’s 3* Michelin chefs as well as working alongside many of the world’s top winemakers matching cheese and wine at events for Guigal, Angelus, Humbrecht and many more.   We caught up with Jean Francois Antony (Bernard's son and protege) to find out more about Affinage (the ageing of cheese) and their perfect cheese and wine pairings. 45 years at the service of taste Bernard Antony is one of the world’s great cheese makers. Strictly speaking, his mastery
is in affinage, that is finishing and ageing cheeses. From humble beginnings working as a travelling grocer in Alsace, in 45 years he has gone on to become one of the most recognised men in the world of fine cheese.  Bernard Antony was the protegé of the late great Maitre Pierre Androucet – known as “the Pope of Cheese”. Bernard says of Pierre: "To me, he was like a father. He was the man who created me, who taught us everything, to my wife and me. He didn't like me to say it because he wanted to give me all the credit for my success”.  Following on from Androucet’s advice and support, Bernard set up his own cheese ageing cellars in the early eighties in the southern Alsace village of Vieux-Ferrette. The ageing cellars are made up of seven different chambers all at different humidity and temperature levels – ideal for raising and ageing various different styles of cheese. Only when the cheeses are deemed ready and at perfect ripening are they released to the markets and delivered to restaurants. Ageing of cheeses can range from just a few months for the fresher goat’s cheeses to several years for some hard cheeses. Speaking with Jean Francois Antony, Bernard’s son, who works alongside his father, running the day-to-day operations of the cellars, he identifies that the skills in good affinage revolve around a number of key elements. First of all, “raw (unpasteurized milk) is essential if one is to speak of cheese with authenticity…taking into account the breed of animal, the animal's diet, the talent of the cheesemaker and then of course the controlled process of ripening are also key”. website. They often pair the cheeses with fine wine so we thought who better to ask for advice on the ultimate cheese and wine pairings than the man himself.  Below is the Bernard and Jean Francois Antony’s essential guide to food and wine matching, split up between the different styles of cheese, with additional advice passed down from Pierre Androucet.  The Floury crust family of cheeses Camembert        Brie de Meux (un peu sale)         St Marcellin and St Marcellin (runny)     Petit Mosellan         Coulommiers         Chaource
 The classic pairing would be Champagne (Blanc de Blancs, Aged and even Rose Champagne) however Bernard Antony advises that you remove the crust as it can make the wine appear more harsh. The bubbles work brilliantly in refreshing the palate from these rich cheeses and the yeast flavours from the Champagne also work really well. Avoid tannic reds with these cheeses. One of Bernard's favourite matches include a Gevrey Chambertin 2012 from Domaine Denis Mortet with the St Marcellin. He states a white wine with both gentle oxidation and good acidity works particularly well with Petit Mosella (Saint Peray from
Domaine Tunnel or Alain Voge) or a fruity red wine with well-coated tannins such as a Beaujolais Cru wines with the Chaource and Colombier fermier. The Washed Crust family of cheeses Epoisses       Langres         Livarot     Munster  Maroilles    Vacherin         Pont-l’Eveque According to Androuet: robust and virile wines, with sap and generous bouquet work best with these potent washed crust cheeses. They require “solar wines“ which can harness the power of washed crusts. Gewurtztraminer Grand Cru from Albert Mann, Chambolle Musigny from Liger Belair would both work well. Pinot Noir from Zind Humbrecht, Bollinger 2008 Grande Annee also a particular favourites with Bernard Antony. The pressed crust family of cheeses Comte     Emmenthal        Beaufort         Gruyere Suisse According to Androuet the matches depend on the evolution of the cheese. Dry white or red wines with bouquet work well, red wine brings a balancing touch of bitterness. These cheeses flatter any red wine by erasing astringency and promoting fruit therefore making White or Red Burgundy a good match. With more ageing of the cheese, wines from the greater South-West, the Rhône Valley and Languedoc Roussillon become better matches. Other personal
favourites from Bernard Antony include Vernaccia di San Gimignano (Italy) White
wines from Valais (Switzerland), and Savignin wines from the Jura. The pressed (uncooked) crust family of cheeses Morbier   Tomme de Savoie fermiere       Mimolette demi étuvé         Salers     Roblochon  Sainte Nectaire Pairing again depends on the maturity of the cheese. The older the cheese the richer the wine. Chateau Latour 2001 is Bernard’s match with Morbier. Saint Joseph Pierre Gonon 2013 works well with Reblochon and Chateau Canon La Gaffeliere Grand Cru Classe St Emilion 2008 works well with Saint Nectaire. The family of blue cheeses Bleu d’Auvergne     Roquefort        Fourme d’Ambert      Blue de Gex          Stilton    Gorgonzola These are best paired with sweeter fruited wine or sweet wines. Avoid red wines as the mould changes the structure, the aromas and brings out the bitterness. Top picks are Rivesaltes Vins Doux Naturels, Pacharenc du Vic Bilh or aged Sauternes even red Vins Doux Naturels such as Maury, Banyuls work well with blue cheeses. The family of Goat and sheep cheeses Ossau-iraty         Brebis cremeux et parfume Brebis Corse     Chevre Frais    Chevre Moelleux et onctueux   Chevre Affiné. Vieux et sec   St Maure de Touraine Banon de Provence Chevrotin des Aravis With this family of cheeses the wine must tame the acidity of milk. The wine must work with the texture of the fat and complexity of the flavours. Androuet confirms the well-known phrase – match local wines with cheese of the same origin, particularly very dry and fruity whites. Dry white wines from the Loire – include the smoky Pouilly Fume, Sancerre, Menetou-Salon, Quincy and Reuilly work well with the goats cheeses from the region. From Burgundy, try the lighter Aligoté, Saint-Véran, Macon villages and from the Alpine pastures the white wines of Savoie or lighter reds of the Loire – Bourgueil and Chinon. There are interviews, and there are conversations. And this meeting with Italian cashmere tycoon, Brunello Cucinelli, definitely falls into the category of the latter. Cucinelli has conquered the world with his products, his perception of style and beauty, and has published a book outlining his particular approach to doing business which he defines as “humanistic capitalism”.   This distinction between interview and conversation is a necessary contemplation; understanding the meaning behind the words, selecting them carefully, tasting each of them in a silent meditation. This is, in fact, the first step to allowing you into Cucinelli’s world, where external quality is just as important as inner quality. To him, as to late 18th century German philosopher Kant, beauty is a moral interest.   The word “interview” is composed of two parts: “inter”, which implies reciprocity, and “view”, which refers to sight; each looking at the other, trying to truly see. It is not a given that this is always successful.   A conversation, however, is different. The word derives from the Latin “conversari”, composed of “con” meaning “with” or “together”, and “versari”: to reside, to find oneself. It is a meeting – a graceful way of getting to know each other, or getting to know each other better. It is a way to agree upon certain behaviours and visions in order to truly share a physical place, as well as a state of being. In this conversation, we meet Brunello Cucinelli in Solomeo, Umbria, Italy. He reminisces that, The New York Times once published a map of must-see places in Italy – in which Solomeo was included along with Venice, Florence, Rome and Naples. Cucinelli states this with no small amount of pride.  Despite the lockdown, and an obligation to talk through a screen, encouraged by both the pandemic and by a sense of caution, Solomeo is truly the location of our meeting – and not just because Il Sogno di Solomeo (The Dream of Solomeo) is the title of his book, in which he recounts his life story, the roots of his success, and his vision as an “entrepreneurial custodian”. Solomeo enters through the window, breathing audibly in the background of the words and thoughts which define our conversation. It speaks through Cucinelli’s expressions, bringing to light a kind of organised peace within his sense of time, its horizons are centuries-old, and reside in diligent silence. It speaks of a knowledge acquired through generations passed, to be shared with generations to come.  We are in Umbria, just 15 minutes from Perugia and only one hour from Florence. Only 800 people live in Solomeo – a stunning, almost-abandoned medieval village brought back to life by skilful restoration work led by Cucinelli over the last 25 years. The village of Solomeo was revitalised as an allusion to Rome, the city of Emperor Hadrian’s soul, according to French novelist and essayist Marguerite Yourcenar. Creativity needs a “genius loci”, a safe space. Cucinelli restored a village that was “robust, useful, and beautiful”, as instructed by Vitruvius. Onora tutti gliuomini (“honour all men”) is the inscription displayed in Solomeo’s Piazza delleArti, and is also the motto which inspired Cucinelli’s humanistic capitalism. He believes gift-giving to be one of the kindest forms of the soul, and he loves to give presents of homemade oils and wines; believing that, in every gift, there is also a piece of Solomeo.   Cucinelli’s love of philosophy, and his habit of allowing the great minds of history to dictate his approach to beauty, is also a lesson Cucinelli learned in youth as a farmer, when he used to pull the ox plough and till the fields. In the evenings, his father would encourage him to admire the beauty of those ploughed fields, the neat ridges stretching over the hills.   His sensitivity to the idea of living in harmony with nature was born from this, as was his ability to recognise that there is greater value in that which is carried out with beauty in mind. His more practical attention to the selection of raw materials also stemmed from these roots – his respect for producers and collaborators, and his ability to think in terms of centuries, not years. All this has rendered Brunello Cucinelli one of the world’s most famous luxury brands.   Beauty is also a form of truth. As three Buddhist monks remarked to him, upon visiting him in Solomeo, there are three things which cannot remain hidden: the sun, the moon and truth. In order to live well, beauty requires you to take care of your soul, your mind and your body. This is why, at Cucinelli’s company, at half past five in the evening, the computers are switched off, the working day completed. The body, mind and soul need a life outside work, to be able to look themselves in the eye and overcome the “soul-ache” that creativity can also help to alleviate.  To him, beauty is also a business method; his humanistic capitalism was not cast aside even during the crisis sparked by Covid, during which time Cucinelli did not let a single employee go, or ask for any discounts from producers or suppliers. This is part of an ethical business vision which considers humanity as an end, and never as a means; it is defined by considering the businessman as a “custodian of creation”. Developing this idea of being a custodian, Cucinelli sees that luxe can be interpreted as an orchestrator of sustainable development.   Brunello Cucinelli smiles. He likes the words of 15th century Florentine Republic ruler, Lorenzo the Magnificent – “How beautiful is youth, / though quickly it does flee! / be happy if you want to: / for tomorrow may not come” – which recall an Italian sense of national pride. Although home to only 0.7% of the globe’s population, Italy boasts one of the the world’s top 10 economies; it excels at quality manufacturing and craftsmanship; it offers a welfare state which leaves no one trailing behind. He sees a great country and a golden era, in spite of the crisis. He does so with a pinch of the “Italiote”, as Plato called the people of Syracuse when he reached Sicily from Greece, “a population which feasts twice a day and never goes to bed alone”.  We are also like this, he says, before returning to consider the ideas of creativity and responsibility. “It really is possible to live in harmony with creation. And this makes us custodians, not consumers. I also think of my product as something to be desired, something to be inherited. That is why I chose cashmere. I wanted something that was already precious. I’ve learnt to transform it over time. I’ve made mistakes, had teachers and guardian angels that have helped me and taught me. But the principle was already clear to me, right from the beginning: to create beauty, you need to begin with something beautiful, from an exceptional raw material. And you also need to believe that it will last for centuries, not for years. Before it became fashionable, we had already opened a restyling and reusing department for our garments. Because, for a jumper to be beautiful and precious, it must also stand the test of time.”   “Verum factum”, as stated by 17th century Italian political philosopher Giambattista Vico: nothing is true unless it has been done. The humanistic capitalism in Solomeo is evident: an art of Renaissance-style trading which has taken over the world, yes. But it has done so with honour. It possesses a beauty which is markedly exclusive, moving against the crisis of civilisation. It is something that manages to make itself be considered as rare, something precious, only for you. It requires time, artisanal hard work and precision, fighting against the culture of impatience. In fact, Solomeo’s theatre is crafted from hand-cut stones, with walls built to endure. The company itself is located within a restored factory which opens out onto gardens and spaces where it is impossible not to inhale the surrounding beauty.  Most of the employees and managers within Cucinelli are young: this is because they are hard workers. It is also because beauty and fairness produce brilliance. Cucinelli is the one to engender this genius. “Oh, myesteemed men!” (O miei stimati uomini!) Cucinelli quotes Marcus Aurelius. It is from this statement that he has learnt to recognise value, to respect and admire, and to never rise above dignity. He applies the concept of remote working only when strictly necessary, because creativity dwindles and becomes degraded by a lack of human contact.   The story of humanistic capitalism is so long to recount (and so wonderful to hear) that Cucinelli has summarised it within his book, Il Sogno di Solomeo. These ideas, typically influenced by previous generations, took inspiration from the manual The Book of the Art of Trade by Benedetto Cotrugli – an Italian merchant during the Renaissance era – which speaks about “getting rich honourably”. One can choose whether to be “a seeker of work or a creator of work”: therefore, an entrepreneur is someone who creates development for themselves and for others. On one hand, there is the revaluation of the role of whoever decides to take this risk; on the other, there is the idea that they are doing so by enforcing a strong sense of ethic. A sort of return to business. An important lesson.  Cucinelli notes that, in Cotrugli’s story, this is fulfilled out of duty rather than pleasure. The death of his father in 1438 forced him to abandon his studies and take the reins of the family business. This was during a time when Italy was bestowing the Renaissance upon the world; and Cotrugli, who originated from Ragusa (currently known as Dubrovnik – which, at the time, was considered the fifth Italian Maritime Republic), was catapulted to Naples, in an environment where ethics and morals evidently left a lot to be desired. The family business, and by extension, he as the owner, “bought wool in Barcelona; turned it into cloth and thread in Florence and Prato, to then sell it on again in Constantinople and Venice”. Cotrugli travelled, visiting cities which formed the heart of that golden era. He breathed in the air of Florence, which was, at the time, Europe’s most powerful guild, and produced figures such as Donatello, Masaccio and Brunelleschi.   Among the 15 golden rules for “getting rich honourably” outlined within The Book of the Art of Trade, Cucinelli feels a “deep resonance” not only because of its modernity and its entrepreneurial insight, “but mostly for the system of values it imposes and passes on”, to “get rich honourably” by creating work and development with consistency. And he thinks back to the crisis, echoing the words of Roman statesman Marcus Tullius Cicero, as quoted by Cotrugli: we must not waver in the face of adversity or lose ourselves in our own prosperity. “Let’s talk about what this year has brought us, not what it has taken from us,” he states.   And this is the truest representation of a dedicated and kind businessman, who has spent half his time gazing up at the stars and loves to watch a fire flicker because it makes him “drunk on pleasant thoughts”. Life is blessed. We eat only what we must, so that there is enough for everyone. There was Seneca, there was Epicurus, and now there is the wonderful dream of Brunello Cucinelli and his beloved Solomeo. He spends his years contemplating centuries past and considering those to come. The rare whisky market is a competitive place. Across countless auctions houses, online retailers, and secondary trading groups, collectors the world over close deals each day. Well-aged, limited bottles are at the forefront of the rare whisky market, however, there is another branch of whisky to invest in and enjoy that remains quite undiscovered when compared to
bottles. We’re talking about casks, and luckily, most of the world hasn’t heard of them yet.  For some, the returns of cask ownership has been staggering. Record-breaking sales of privately owned Macallan casks are amongst the greatest success stories. For others, the appeal is selecting and owning your very own privately bottled cask.  Sales are often tailored to a private buyer so there is little visibility meaning even connoisseurs are not yet aware of the process and benefits of owning their own casks. But worry not, here’s a full guide to buying your first cask of whisky. Why casks? While not yet at the level of bottle trading, the cask trading market is expanding. Owning your very own cask of whisky, which is stored in a distillery or warehouse in Scotland, is hugely appealing and (usually more so than bottles) the potential returns are huge. The main
difference between buying a bottle and a cask is that a cask continues to mature. Looking at long-term investment, one can buy a newly filled cask of spirit today, and 10 years from now this will have become a 10-year-old cask of whisky, containing over 300 bottles. If bought at the right price, the potential profit is huge. A 50-year-old bottle of whisky bought today will still be a 50-year-old bottle years from now. Cask trading is also free of many hindrances found in bottle trading Shipping is not an issue, as the cask remains in the care of the distillery/warehouse staff where it is stored Personal storage isn’t needed.  For a very low fee (usually between £40-60 a year) the warehouse staff keep your cask safe in a perfect, monitored environment Unlike bottles, casks vary in quality and taste, so there’s not a one-price-fits-all policy. No longer will you be sent crazy auctions prices for a comparison  You have an excuse to head to Scotland, to visit and taste your casks How it works The process of purchasing a cask is also quite simple:  However, there are many small points that come into play, such as annual storage fees, insurance, bottling specifications for the cask, moving the cask to another warehouse if the buyer chooses. However, all this is easily managed if you follow one point, the most important one in the entire process:  Know who you are buying from Because of the lack of knowledge surrounding the category and the large profits to be made, there are countless cask traders out there who take advantage of new buyers, trade low-quality casks, hide information, and lack transparency. Countless buyers have been scammed, so be careful. Do not be fooled by sleek websites and salespeople. Ask around about the company you are buying from, look for reviews, and check their history. It’s an unpleasant
feeling to purchase a cask with a 10-year plan in mind, only to find the company you bought it from shut down a few years after your purchase. As we do here at F+R, you need to be given a full plan for your cask, not only encompassing the purchase but also the years ahead and the final exit strategy. Exit strategies explained We’ve discussed the benefits and steps to buying your first cask, but what of the steps that follow? In what ways can you profit from your cask after you’ve allowed it to mature?  Sell on: the first exit strategy is the simplest, re-sell your cask. This is where the company you bought from can help you find a new buyer or company to take on your casks. These can go to a new investor, collector, an independent bottling company that plans to make a release out of it, or to a number of bars. After a consultation, you’ll know what your cask portfolio’s new value is and the profit that stands to be made.  Bottle it: If you’re a company owner, bar owner, or do business in whisky you may choose to create your own bottle and label design, and bottle your cask. Once again – your supplier should help you with each step of this process, right down to the delivery of the bottles. This, again goes back to the company you initially choose to work with.  Risks Of course, as with any investment, there are certain risks to consider. Firstly, the product is a wooden container of liquid and is prone to leaking. This is monitored by the warehouse team, however, sometimes there may be loss. It’s not a common occurrence, but a possibility nonetheless. When moving the casks the may drop, or break, a number or situations can occur. Therefore, the contract must be full proof before signing.   As with other investments, the growth of casks is hard to monitor especially as more time passes. The brand buyers invest in may grow more or less popular, and this point falls into bottle as well. At the very least, brand aside, an older whisky will command a higher price that a younger one so your cask will rise in value no matter the state of the whisky market
when you decide to sell.  Beyond stocks and cryptocurrency, whisky is an investment to both enjoy and profit from. Purchasing a cask is, above all else, an exciting adventure.  Perhaps you’ve decided to support the cask-selling program of a brand new, up-and-coming distillery, and alongside the cask, you can follow them on their journey. Perhaps you managed to buy a cask from the distillery you’ve loved for years but never knew how to become a part of it until now. Maybe you want to open your own independent bottling brand or bar, and need some casks to make that a reality. Or, you simply want to make some investments you actually enjoy, and wouldn’t mind an annual trip to Scotland to sample the progress your cask portfolio is making. There are many reasons to enter the world of whisky casks, with countless benefits along the way. The important part is to be safe, deal with trustworthy sources, and educate yourself along the way. A couple of years ago, I wrote a book called Time Tamed. In retrospect it is an ambitious title. Even at the time I realised as much, describing man’s efforts to tame time as being a task as Sisyphean as it is Canute-like. Humankind invented time to make sense of the world around us. It can be argued that an understanding of time – and the ability, however rudimentary, to track it and act according to it – is right up there alongside the ability to fashion tools and communicate using spoken language, as one of the characteristics setting humans aside from the other species with which our planet is shared. In the beginning at least, the extent of our relationship with time was a cognitive reaction to phenomena that permitted the prediction of cyclical seasonal events such as the migration of animals, and later forecasting the effect of variations in terms of temperature and daylight hours on the flowering and fruiting of crops.   The triumph of human intellect, and the beginning of our species’ march to its position at the apex of life on our planet, was to make conscious use of this intellectual edge that allowed us to benefit from the recurring patterns of events foretold by observation of such astronomical phenomena as the rising and setting of the sun, the waxing and waning of the moon, and the lengthening and shortening of the diurnal span. Lunar phases repeat themselves in a cycle of 29½ days; the tropical year as measured, say, from winter solstice to winter solstice (when the day is shortest and night longest) is approximately 365¼ days. The interaction of the solar and lunar calendars, providing, respectively, the year and the 12 months in it, gave us the framework upon which to build civilisation. “If time was conceived as the precise measure of an ordered succession of states, it should come as no surprise to find that its first criterion of measurement in every known civilization should have been the movement of the stars (which is both movement and return, in other words a ‘constant periodical appearance’)”, wrote Umberto Eco. He next posed the rhetorical question: “Even if there were nothing more to time than this, it would still be interesting to ask why, for so many centuries, men measured out the years, the months, and the days, but came so late to measuring hours and minutes. The main stumbling block was the need for mechanically precise instruments to measure them.” Calendars of varying degrees of sophistication have been in use for millennia. In my book, I wrote about a series of 12 fire pits in Scotland that – in conjunction with the known location of sunrise through a mountain pass on the morning of the winter solstice – functioned as a calendar in the Mesolithic period, 10,000 years ago. Compared to that, widely available accurate timekeeping is only a relatively recent phenomenon. Had you asked a medieval peasant the time, he would have probably told you what season it was and, as recently as the mid 19th century, time was measured according to local meridians that gave a local solar noon. Britain, at the time the world’s preeminent industrial power, only got its first real taste of unified national time in 1851, when millions visited the Great Exhibition, travelling from all corners of the Kingdom by trains that ran to a single national time. But in the last couple of centuries the pace has hastened: we have become, as Eco put it, “children of a clock civilization”, and I am sure there are those who would argue that it is from there that many of our problems have arisen.   The industrialisation of time was of particular interest to Karl Marx. “The clock is the first automatic machine applied to practical purposes,” he wrote to Friedrich Engels in 1863, “and the whole theory of production of regular motion was developed on it.” Even though abstract, time had become the ultimate economic commodity. Life became lived according to the maxim ‘time is money’ and with a Gradgrindian myopia we have concentrated on ever smaller divisions of time until we have become not children but slaves of the clock. Time was never tangible, but in the past it linked human experience to the cosmos through the tracking of solar and lunar cycles. The division of time into units that are independent of astral cycles has distanced us from the natural rhythms of life. Division of time into small units standardised around the world has facilitated the synchronisation of activities that enable us to live in our modern world of ‘just-in-time’ production, conurbations with populations of millions, and a network of integrated transport systems that allow us to travel from one side of the world to the other well within the span of a single day. It has taken the recent and as yet unresolved upheaval wrought upon our carefully organised world by the COVID-19 pandemic to reveal the humbling fragility of the system by which we live and regulate our lives. Moreover, one could argue that it is the application of monetised time that is responsible for the ravages that we have perpetrated on our planet in pursuit of our industrial goals. But before we blame the rise of the timepiece for the ills of the world, there is an aspect to watchmaking that can enable us to reconnect with the cosmos in a way that is familiar to those conversant with the world of biodynamic winemaking. So, when the editor of FONDATA suggested biodynamic winemaking as the prism through which to view watchmaking, I was intrigued. Once upon a time, a long time ago, I did work in the wine trade. However, we parted company during the 1980s, some time before biodynamic winemaking became what I believe is called ‘a thing’. Obviously, all readers of FONDATA understand the basic principles of biodynamics, but I needed to undergo a quick crash course in what is just one of the legacies of the quite extraordinarily colourful and at times controversial Rudolf Steiner; the late 19th- and early 20th-century Austrian philosopher, social reformer, writer, educationalist, editor, architect, spiritualist, scientific spiritualist, mystic, Goethe superfan, campaigner for the independence of upper Silesia – and much more besides. He came up with everything from a new, quasi-religious movement called ‘Anthroposophy’, to a new approach to medicine; a new artform, ‘Eurythmy’, to a new form of agriculture, ‘Biodynamics’. Steiner turned his fecund and agile mind to the problem of agriculture in the early 1920s and addressed many of the concerns that we are still grappling with a century later, advocating a sustainable ecologically-oriented approach to farming that eschewed chemical pesticides and fertilisers in favour of natural alternatives and conducting agriculture based on an astronomical and astrological calendar. Steiner is memorable because he could enliven even the relatively practical activity of growing things with woo-woo mumbo jumbo of a level to which even Gwyneth Paltrow can only aspire: for instance, burying manure in a cow horn over winter and then exhuming it; or controlling infestations of field mice by sprinkling fields with the ashes obtained by burning the skin of a “fairly young mouse” obtained “at a time when Venus is in the sign of Scorpio”. And yet, such was the power of his way of thinking that it would be wrong to characterise him as a total crank: Steiner was apparently taken seriously by Hitler as a threat to National Socialism.  But back to wine. Prima facie, there is little to link the joyous celebration and bounteousness of viniculture with the mechanical slicing of hours into minutes, into seconds into milliseconds. However, to view watchmaking as being just about the business of telling the time is to underestimate what is in my opinion one of the most engrossing areas of human ingenuity and creativity, where science, mathematics, mechanics and art meet. I like to think about watchmaking as being connected to the detection and calibration of rhythms and patterns … biodynamic farming is all about rhythms and patterns, especially those of the lunar calendar. In his writings, there are times when Steiner could be writing the script for Star Wars – when he talks of entering into “the forces that regulate growth, crucially the ‘fully-evolved Moon-force’”.  The Biodynamic Association uses less picturesque language to summarise the approach, saying that the philosophy of biodynamic farming is founded on “the influences of the moon, planets and constellations on plant growth”. “Each month the moon moves through all twelve constellations of the zodiac in turn. This is referred to as the moon’s sidereal cycle and forms the basis of the biodynamic calendar. Although the waxing and waning (synodic) cycle is the most well-known lunar rhythm, it plays a small part in this calendar.” The indication of moon phases has long been a feature of watchmaking, and even if knowing whether one is living under a waxing gibbous moon is not of primary importance to most of us, the function is undeniably decorative when artistically transferred to a watch face – the moon disc, often decorated with a background of stars, making a complete rotation once every 29½ days. Watches with more advanced astronomical functionality feature sidereal time as well. And this year, the long-established watchmaker Jaeger-LeCoultre demonstrated that it is capable of getting seriously cosmological. To celebrate the 90th anniversary of its famous Reverso model, it released the world’s first four-sided watch, the Hybris Mechanica Quadriptyque. As its name suggests the Reverso flips over to reveal its back. Initially conceived as a protective measure, more recently the back has been used to display other information (another time zone for instance). Now, the cradle in which the watch sits on the wrist has also been mechanised to offer two further planes for display – much in the way that one can connect multiple screens to a single computer rather than having to be constantly opening and closing windows. And Jaeger’s watchmaking wizards have turned faces three and four into a banquet of lunar information.  On the interior face of the cradle there are three displays giving the synodic cycle in the northern hemisphere, the draconic cycle (the height of the moon) and the anomalistic cycle (apogee and perigee, when the moon is respectively furthest from and nearest to the Earth), while the fourth side of the watch gives the synodic cycle in the southern hemisphere.   It sounds like an observatory on the wrist and according to the makers: “the Hybris Mechanica Quadriptyque can predict the next global incidence of astronomical events such as supermoons and eclipses – the world’s first wristwatch to provide such a deep reading of the cosmos.” I imagine even Steiner would be impressed especially as in biodynamic circles cosmological connections are crucial. Biodynamic agricultural activity is governed by knowledge of the behaviour of celestial bodies: ascending moon days favour certain agricultural activities while other tasks are better performed on descending moon days. Eclipses, apogee, perigee, and new moons all have their associated agricultural messages for the biodynamic farmer.   “It’s connected into the cosmos,” explains Philippa Hegarty of Hegarty Chamans, a vineyard in the foothills of the Montagne Noire in the Minervois. “We find an explanation that people respond to is; if the Moon has such a strong tidal influence then it can certainly move sap up and down a vine and that’s what we work with at different times of the year.” Providing timing of the movement of the tides is another function that the mechanical clock or watch can perform; indeed it is one of the oldest, predating the minute hand, the second hand, the wristwatch and even the pocket watch. The provision of times of high tide by a mechanical timepiece can be traced back to the 14th century and the famous Astronomical Clock designed by Richard of Wallingford, Abbot of St. Albans – which as well as showing the fixed stars and charting the movements of the sun and moon (complete with ecliptic nodes – another important feature for biodynamic winemakers) gave the times of the tides at London Bridge.   In fact, the technical leap forward accomplished by clockmakers in the 14th century rivals that of computer networks in our own time: at the end of the 13th century time was still being told by clepsydrae (like an hour glass but with water instead of sand) and by the middle of the following century, man was mapping the cosmos using mechanical machines of unimaginable complexity. If Giovanni de Dondi’s Astrarium of 1364 looks a little like a lunar landing module, then that was not the only thing it predicted. About a metre high and standing on protruding feet, the Astrarium featured seven panels with dials that showed the movements of the sun, moon and the then-known planets: Mercury, Venus, Mars, Jupiter and Saturn. Further dials indicated dates of fixed and moveable religious feast days, the intersections of the solar and lunar orbits, and time of sunrise and sunset. In comparison, the 24-hour clock seems prosaic, almost otiose. Another common feature of these miracle machines of the Middle Ages was the zodiac. Rather than being relegated to the horoscope section of the tabloid press, astrology was as much of a science as astronomy, and a medieval megaclock could not take itself seriously without a dial or two depicting the signs of the zodiac. The celebrated Three Kings Clock of Strasbourg Cathedral was no exception. As well as its astrolabe dial, ecclesiastical calendar, carillon mechanism that filled the air with religious music, and the automata that replicated the nativity, an illustrated panel linked signs of the zodiac to body parts, connecting human health with the movements of the celestial bodies, thus indicating propitious or hazardous times for that key medical procedure of the times: bloodletting. The influence of the zodiac constellations is an important part of the biodynamic playbook. “Since ancient times the twelve zodiac constellations have been associated with each of the four elements: earth, water, air and light,” observes the Biodynamic Association. “Three constellations are connected to each element, and each element is related to a part of the plant: thus, Earth – root; water – leaf; air – flower; fire – fruit.” “For example, for sowing or harvesting carrots, an earth – root day should be chosen; for lettuce, a water – leaf day; for beans and apples, a fire – fruit day; and for flowers and broccoli, an air – flower day.” As the example of the Jaeger-LeCoultre Hybris Mechanica Quadriptyque shows, thanks to the technological advances that have accrued during the last 20 or 30 years, the miracle of modern mechanical watchmaking is that it is able to miniaturise cosmological functions and place them on the wrist. Recent years have seen some truly spectacular wristwatches enter the market. Patek Philippe’s double-faced Sky Moon Tourbillon is regarded as one of the trophies of modern watchmaking: featuring minute repeater with ‘cathedral gongs’; tourbillon; perpetual calendar with retrograde date hand; day, month, leap year in apertures; hours and minutes of mean solar time; moon phases; and on the reverse, moon-focused watch face, sidereal time, sky chart, and phases and orbit of the moon. Van Cleef & Arpels caused a stir when it released a watch that condensed the workings of a planetarium onto the wrist with a watch charting the movement of the five planets visible to the naked eye from Earth: Mercury, Venus, Mars, Jupiter and Saturn; each planet orbiting on its own disc in its real rotation time. Blancpain, meanwhile, has tackled the notoriously complex lunisolar Chinese calendar to create a watch that displays the ten celestial pillars, the five celestial elements, the phases of the moon, the animal associated with the year and the date as given by the Gregorian calendar. I am neither watchmaker nor winemaker, but given the approaching centenary of Steiner’s 1924 series of agricultural lectures which gave birth to biodynamics, now might be a propitious time to consider a mechanical timepiece that displays the cosmological information pertinent to biodynamic viticulturists and farmers.
