Wine, statistics & serendipity: A Harvard journey

Seeking simplicity in statistics, complexity in wine, and everything else in fortune cookies 

“Time is necessary,” Paul-Etienne Defaix tells me. He should know – he is the 16th generation of his family to make wine in Chablis – and, at Domaine Daniel-Etienne Defaix, time is everything.  Wine has been made at the Domaine du Vieux Château (the property’s historic name, which still features on the labels today) for eight centuries, and under the Defaix family since 1610. Much has changed in Chablis over the past 400 years, however – and today the estate is a last bastion of the Chablis of yore.   Demand for Chablis was booming by the 1970s, and producers reduced the élevage (the time wine spends in barrel or tank), bottling, releasing and selling the wines earlier. These modern wines, often bottled within six to 12 months, were lean and crisp, but for Paul’s father Daniel-Etienne, they were disappointing – lacking the complexity and ageability of wines that spent longer on their lees (the dead yeast cells). Daniel-Etienne decided to do things differently – to return to making wine the way they had in generations past – and the family hasn’t looked back.  Generally, their approach is to let the wine be – waiting, watching and waiting some more. Fermentation is all with indigenous yeast and notably slow, taking up to six months, with malolactic fermentation left to rumble along on its own timescale, only finishing after up to two years. Their Premier Cru wines then spend up to nine years on their fine lees, while for the Grands Crus it can be up to 15 years, kept at a cool 10-12°C.  During the wines’ extended élevage, autolysis takes place – the enzymatic breakdown of the dead yeast cells, or lees. It’s the same process that takes place in Champagne and other traditional-method sparkling wines aged on their lees, and is the key to the Defaix – and once traditional – style of Chablis, giving the wine a rounder mouth-feel, and lending bready, toasty complexity. It is also, for Paul, “key to revealing terroir”. Although the tiny volumes of Defaix’s Grands Crus and Pinot Noir go into oak, most of the wines are aged exclusively in stainless steel, meaning it is only the site and time that you taste in the bottle. Once deemed ready, the wines are bottled and released into the world.  Ageing its wines in stainless steel tank for not months but years, Defaix creates textural, complex wines that are only released as they reach their drinking window. It is a rebellion, Paul tells me, against “a society of rapid consumption”.  Paul is now in charge of the property’s vineyards and winemaking, although his father is still involved in the business. Paul studied in Beaune, getting experience at a handful of estates – largely focused on Pinot Noir – before returning to the family domaine, working his way from the vines to the cellar. As Daniel-Etienne told him, “You need to learn your soil, your vines, then you can make the wine – and then you try to sell it.”  And, although it’s often the style of winemaking that steals headlines at Defaix, the domaine has some remarkable vineyards. The family farms 28 hectares in total. It has two Grand Cru parcels (0.15 hectares in Blanchot and 0.3 hectares in Grenouilles), but it’s the property’s Premiers Crus that have built its reputation – with four hectares each in Côte de Léchet and Vaillons. From these, they produce three wines: their Côte de Léchet, Les Lys and Vaillon. Importantly, the latter is Vaillon, not plural Les Vaillons – their parcel lying in the historic heart of this Premier Cru, prior to its expansion in 1976. Les Lys is a cooler climat within the larger Vaillons, and is often our favourite of the range, while the Côte de Léchet is drastically steep – with a 45% gradient.  The remaining hectares are largely dedicated to the estate’s village Chablis – their Vieilles Vignes. These vines are all over 45 years old, but some are very old – own-rooted, having survived phylloxera and now 145 years in age. When I ask Paul how this half-hectare has managed to survive ungrafted, he pauses, before saying: “I think God prays for these vines.”. They crop a mere 15hl/ha, but produce beautiful fruit (“For my bank, it’s bad; for my wine, it’s perfect!” Paul jokes) – and are now used for massal selection across the estate.  The final piece of the property is a tiny section of Vaillons planted to Pinot Noir, which is bottled as Bourgogne Rouge (as the land is only classified for Chardonnay production). Comprising less than a hectare, these vines too are ancient, planted in 1900, and still on their own roots.  Their spacious cellars are stocked with back-vintages, carefully maturing – a bank of wine that eases the vagaries of each specific growing season, protecting them from dramatic drops in yield – something that is a constant threat in Chablis. Take 2024, a year that was challenging across much of northern Europe with its wet conditions and high disease pressure, but in Chablis also brought hail that devastated huge swathes of vineyard – including Vaillons.  Global warming might have made it easier to ripen grapes in this marginal region, but it’s also made for more extreme conditions – highs and lows that keep producers on their toes. It’s also, arguably, made Chablis a little less Chablis. With riper fruit, the wines are less steely, taut and lean. Harvest dates are inevitably earlier, Paul notes, to preserve acidity and retain Chablisien backbone, but he also emphasises that the fruit requires not just sugar ripeness, but phenolic ripeness – to give dry extract and allow the wines to age. For him, working with old vines and low yields is key – both to phenolic ripeness and to preserving Chablis’s style.  The 2014 vintage – the first that Paul made – has finally just emerged from the cellar, over a decade after it was produced. Worth the wait: the wines of Domaine Daniel-Etienne Defaix   

The Thienponts reign over Bordeaux’s Right Bank. At Vieux Château Certan, Alexandre Thienpont – almost always dressed in his Barbour – rules, producing Pomerol of immaculate pedigree, as his family has for over a century now. Nearby, cousin Jacques Thienpont holds court at Le Pin, Pomerol’s original cult address. Nicolas Thienpont is another cousin whose domain stretches out from Saint-Emilion – from Pavie Macquin and Larcis Ducasse across to several estates in the Côte des Francs. And the dynasty continues to grow, as each thread of this complex family finds a new corner of the region to master.  The Flemish family has a long history in the world of wine, having traded French wine (especially Bordeaux) since 1842. Georges Thienpont – grandfather of Jacques, Alexandre and Nicolas) was the first to move into production, buying Ch. Troplong Mondot in 1921, then Vieux Château Certan in 1924. It wasn’t long before the Great Depression hit, however, and Georges Thienpont was forced to sell Troplong Mondot in 1934. Reportedly the only reason he kept Vieux Château Certan was that no one wanted to buy it – with vines holding little allure at the time. It was the château itself at Troplong Mondot, positioned at the highest point in the region and with a view across the village of Saint-Emilion, that allowed him to sell the Saint-Emilion estate. Georges continued to make wine through the Second World War and the devastating frost of 1956. Despite a challenging start, “VCC” (as it is affectionately known by wine-lovers) has become one of Bordeaux’s leading names.  It was Jacques Thienpont, however, who thrust the family firmly into the limelight. It was in 1979 that Jacques, then still a Belgian wine merchant, purchased a 1.6-hectare vineyard in Pomerol. The site had produced generic Pomerol, but Jacques started making tiny volumes of opulently styled wine, naming it after the lone pine tree (“le pin”) that stood on the property. The 1982 vintage was pivotal, receiving significant critical acclaim – especially from Robert Parker – and soon Le Pin became one of the world’s most desirable wines.  Just over 30 years after that first vineyard purchase, it seemed like fate when Jacques went to see a plot of land in Saint-Emilion right next to Troplong Mondot. Previously known as Ch. Haut-Plantey, the potential of the site was clear to Jacques and the symmetry of the Thienponts returning to where their family’s winemaking legacy began seemed fitting. He bought the property in 2010 and put Cyrille Thienpont (his cousin once removed) in charge of its daily running. In keeping with the arboreal theme, he named the Saint-Emilion venture L’If (the yew tree).  The first project the team undertook was a detailed soil map to get to grips with the site. The winery is in Saint-Laurent-des-Combes, just to the east of Troplong Mondot, with five hectares of vineyard around it and another two hectares of west-facing vines next to Saint-Hippolyte. The lower parcels are more eroded and sandier, but much of the vineyard sits on pure limestone and clay. They set about restructuring the vineyard – getting rid of the 5% Cabernet Sauvignon and increasing the portion of Cabernet Franc, with around 25% across the property today (any new plantings were with a massal selection from Pavie Macquin).  In 2013, Jacques bought another hectare or so of vines in Saint-Etienne-de-Lisse, right next to Ch. Puy-Blanquet. Despite the quality of the soils, Jacques was hesitant about buying such a “distant” plot, a whopping three kilometres as the crow flies – or a circa 10-minute drive. They pulled the vines out and replanted this additional parcel, harvesting its first fruit in 2018. Despite its youth, the fruit from the plot has made it into the final blend for every vintage of L’If since 2020 (“Worth the trip,” jokes Cyrille). Even with the significant replanting and this new plot, the average age of vines across the estate is around 40 – with the oldest over 60 years in age.  Work on a new winery finished just in time for the 2023 harvest, allowing greater precision and flexibility – with more space to work (and 16 concrete tanks for their eight hectares of vines). You might expect a flashy building, perhaps designed by a famous architect – but that’s not the Thienpont way. Understatement is everything for this family – and the winery is an almost exact replica of what stood there before, simply with more space inside, designed for simple functionality. In one corner stands an otherwise anonymous stainless-steel tank – the first one that Jacques bought for Le Pin back in 1979.  It was perhaps inevitable that L’If would sit in Le Pin’s shadow. But now, 15 years after Jacques Thienpont bought the estate, with a new winery and the significant work in the vineyards completed, L’If is building its own reputation.  Although the same team is largely involved in both estates, L’If is a totally different site and wine. The cool soils have better water-holding capacity, and budburst is around 10 days later than at Le Pin with its warm free-draining gravels – a gap that often widens as the growing season progresses, meaning harvest is significantly later here. Diana Berrouet Garcia – who acts as Managing Director for Domaines Jacques Thienpont, including both Le Pin and L’If – notes how at L’If the terroir seems to speak louder than the vintage and can better adapt to more challenging conditions, while the vines can struggle – especially in hot, dry years – at Le Pin. Where Le Pin is round, supple and exotic, L’If is linear, taut and mineral; one sensual and spherical, the other just on the right side of severe, with a crystalline quality. Even in the last few years, it’s amazing how the wine is evolving – nipping at Le Pin’s toes in terms of quality. Re-tasting the 2019, it’s amazingly approachable with a perfumed nose and juicy, pure fruit that complements the wine’s natural tension.   It's still comparatively early days for L’If –  and the team has invested significantly, focusing on shaping the vineyard and ensuring they have the tools in the winery to translate the work in the vines. For now, over half the vineyard is being used for the second wine, Les Collines d’If – something that will change in time, as they continue to replant parcels. As it happens, yews grow incredibly slowly – but are also some of the longest-living trees (Perthshire in Scotland is home to the Fortingall yew, thought to be 2,000-3,000 years old and one of the oldest trees in Europe). The Theinpont family is just settling in at L’If, but as they lay down roots, the potential is clear.   The Thienpont family: who does what?  Jacques Thienpont: Owns Le Pin, L’If and L’Hêtre (the latter with his sister Anne de Raeymaeker), but is also a co-owner of Vieux Château Certan. He oversees the family’s original Belgian wine merchant business, the Belgian Royal Warrant-holding Thienpont Wine, which is managed by his wife and award-winning wine writer Fiona Morrison MW.  Alexandre Thienpont: Co-owns and manages Vieux Château Certan with his son, Guillaume, as well as co-owning Le Pin with Jacques. Alexandre and Guillaume also farm the vines at Le Pin, L’If and L’Hêtre, as well as Vieux Château Certan.  Guillaume Thienpont: Manages Vieux Château Certan with his father, Alexandre, as well as making L’Etoile and Les Fillottes with his second cousin, François Thienpont. He also now manages Ch. Guillot-Clauzel, which is not owned by the family.  François Thienpont: Manages the family’s négociant business, Wings, as well as making L’Etoile and Les Fillottes with Guillaume Thienpont and is a co-owner of both Vieux Château Certan and Ch. The 2022 vintage was the second in a row to be marked by drought. In his first look at the vintage, Walter Speller (jancisrobinson.com) emphasised how the winter offered little to no snow – and therefore snowmelt. While heavy rains can often run off the slopes, the trickle of snowmelt is more easily absorbed by the soils, meaning that in 2022 the already depleted water reserves (after the dry 2021 growing season) weren’t replenished.  The dry weather continued through the spring, and in late May the mercury started to rise. Flowering took place early (around 10 days ahead of normal). July became warmer and drier, and producers were conscious of managing canopies to avoid potential sun damage. The lack of water resulted in small berries and clusters, meaning a high skin-to-pulp ratio, but the main concern with the water stress was that it may block ripening – and in particular impact phenolic maturity.  Thanks to the steady, warm conditions, harvest got underway early, with all the Nebbiolo in by early October – producers looking to preserve aromatics and freshness in the heat. With no rain, there was little – if any – disease pressure, but sorting was still important to avoid shrivelled or sunburnt berries. Indeed, at Produttori del Barbaresco, Aldo Vacca said they lost around 10% via sorting, while with the small berries and sorting, Dave Fletcher (Fletcher Wines) had between 20 and 30% less than a normal year.  To succeed in the year, producers had to preserve acidity and manage the potentially excessive tannins from the small bunches produced, as well as sorting out any sun-damaged fruit.  At Burlotto, Fabio Alessandria told us that 2022 was “something never seen” – an atypical growing season that doesn’t compare to any that came before it. With warm, dry conditions and low yields, he expected big, rich, tannic wines – but has been surprised by their gentle approachability. It’s not a classic or great vintage in his books, but one that offers great pleasure. Similarly, Nicola Oberto (Trediberri) finds the wines don’t reflect the intensity of the year’s conditions.  Few critics have reviewed the vintage yet, although there’s a clear consensus that it is not an outstanding vintage and sits behind 2021, with more fruit-forward, but also approachable, wines. Vinous’s Antonio Galloni has been pleasantly surprised by the wines so far. He emphasises that managing yield was key, ensuring the crop load was low enough for the vine to ripen the fruit. Despite the risk of phenolic under-ripeness, he has found the wines to be softer than he anticipated, with generally less oak used, producing wines that will offer “near to medium-term drinking”, if not great ageability.   Keep your eyes peeled for additional reports on the vintage; we’ll add to this feature as and when we have more information. Piedmont 2022: vintage focus 

When Alain Hudelot retired in 2008, it was his grandson who stepped up to take over the family estate, Domaine Hudelot-Noëllat. Charles van Canneyt – then just 20 years old and fresh from his wine studies – suddenly found himself managing 10 hectares of vines and running a winery. But he wasn’t any 20-year-old.  Gradually modernising the estate’s equipment and tweaking the winemaking (particularly toning down the extraction), he transformed the reputation of the domaine. Rapidly he became known as one of Burgundy’s rising stars, with Domaine Hudelot-Noëllat soon among the region’s most revered names. Not one to be complacent, he started a négoce label in 2012 – offering another avenue for Burgundy-lovers to get access to his winemaking talent.   Now he has – along with his wife Anne-Sophie – taken on a new challenge, having purchased a new estate: Domaine des Chézeaux. It’s unlikely you’ll know the name of this Gevrey-Chambertin property, but you’ll almost certainly know its vineyards.  This history of Domaine des Chézeaux  Domaine des Chézeaux was created by François Mercier in 1982, although the family has had vines in the village of Gevrey-Chambertin since 1928. The estate’s name comes from the Clos des Chézeaux, the walled vineyard next to the domaine. The family were land-owners rather than winemakers, so all their vines were leased out – en métayage – to other producers. This arrangement is common in Burgundy: the vignerons renting the vineyards manage them year-round and make the wine, giving a portion of their production (often around a third) to the vineyard-owner by way of rent.  This historic estate grew from its original holdings and – as of 1994 – consisted of around four hectares. The vines were split between three producers: Domaine Ponsot (and later Laurent Ponsot), René Leclerc and Domaine Berthaut (later Domaine Berthaut-Gerbet).  Ponsot rented the property’s original 0.89-hectare plot of Griotte-Chambertin, as well as Domaine des Chézeaux’s parcels of Clos Saint-Denis*, Chambertin and Chambolle-Musigny Premier Cru Les Charmes. Domaine Berthaut leased the two Gevrey-Chambertin Premiers Crus (Les Cazetiers and Lavaux-Saint-Jacques) as well as the property’s village parcels, including the Clos des Chézaux. While technically the latter is a monopole, because Berthaut didn’t own the land it couldn’t be called as such.  Ahead of the 1994 vintage, the Mercier family purchased another parcel of Griotte-Chambertin, an additional 0.68 hectares that had been owned by Suzanne Thomas of Thomas Bassot, giving them the largest holding of this Grand Cru. The Esmonin family had been farming the vines in this parcel, selling some fruit to Jadot, and the Mercier family then leased it to René Leclerc (although the Esmonin family also continued to bottle the wine, with vintages of Frédéric Esmonin Griotte-Chambertin up to and including 1999 available). A portion of each of the finished wines was bottled under the Domaine des Chézeaux label, but was identical to that under the Ponsot, Leclerc or Berthaut labels – often at a fraction of the price.  Domaine des Chézeaux today In 2021, Charles van Canneyt managed to buy the estate and its enviable vineyard holdings. With all the vines under métayage contracts, the next challenge was to reclaim the vines – negotiating with each producer. By 2022 he had secured the monopole Clos des Chézeaux and Premier Cru Les Cazetiers, but sold the fruit. In 2023, having regained a parcel of Griotte-Chambertin, he made his first wines from the property.  By the time 2024 came around, he had managed to recover all the vineyards – adding Chambertin, Clos Saint-Denis and Chambolle-Musigny Premier Cru Les Charmes. As part of the extensive negotiations, the Lavaux-Saint-Jacques parcel, some Gevrey-Chambertin village vines and two small sections of Griotte-Chambertin were sold.  The vines are generally old across the property, and the farming and winemaking is identical to that at Hudelot-Noëllat, with the fruit entirely de-stemmed and seeing very gentle extraction. The first vintages were vinified at Domaine Hudelot-Noëllat (but are being aged in the cellars at Domaine des Chézeaux), and work has started on a new winery that is set to be finished later this year (2025). Interestingly Van Canneyt has already seen the wines maturing differently at Chézeaux, with the particularly cool, humid cellar meaning the wines develop more slowly during élevage and need topping up less. He therefore anticipates ageing the wines slightly longer than those of Hudelot-Noëllat. The estate is retaining its historic name, but with new labels – helping differentiate from older bottlings made prior to Van Canneyt’s arrival. The name has the same origin as Echezeaux: chesaux – plural of chesal (which comes from the Latin, casellum or casalis) – meaning a stone house or building.   The Domaine des Chézeaux holdings   The estate now has around three hectares of vines, over half of which is Grand Cru, spread across six appellations:  Gevrey-Chambertin Clos des Chézeaux: This monopole vineyard covers half a hectare, with some of the vines almost 100 years in age (planted in 1929). Mid-slope and facing southeast, the village site has deep, clay-rich soils with gravel, sitting just below Premier Cru Cazetiers and neighbouring another monopole village site, Clos du Château, farmed and produced by Armand Rousseau.  Gevrey-Chambertin Premier Cru Les Cazetiers: Chézeaux has 0.216 hectares of this Premier Cru split over two parcels: one of 0.1615 hectares in the northern section and 0.045 hectares in the south.  Chambolle-Musigny Premier Cru Les Charmes: Van Canneyt farms around 0.6 hectares in this Chambolle-Musigny Premier Cru, which he also has a parcel of under Domaine Hudelot-Noëllat.  Clos Saint-Denis Grand Cru: There is a plot of 0.3776 hectares in Clos Saint-Denis, which will briefly be appearing in the range for 2024 (with just one barrel), but is now being replanted and out of action until 2029 at least.  Chambertin Grand Cru: A parcel (combining one tiny plot that sits next to their main plot) in the heart of this Grand Cru represents 0.143 hectares.  Griotte-Chambertin Grand Cru: Chézeaux is the largest vineyard holder in this Grand Cru, with an impressive 1.264 hectares of vines, a parcel in the heart of this tiny appellation.  Spotlight on Griotte-Chambertin  Griotte-Chambertin, also known as En Griotte, is the smallest of the Chambertin Grands Crus, totalling 2.69 hectares (and is among the smallest Grands Crus in the Côte d’Or, along with La Romanée, La Romanée-Conti and La Grande Rue for Pinot Noir). It sits below Clos de Bèze on the slope, just below the Route des Grands Crus and sandwiched between Chapelle-Chambertin and Charmes-Chambertin, facing northeast. This aspect is important, allowing the vines here to ripen more slowly, not receiving as much morning sun. The wines made here tend to be more delicate, aromatic and perfumed, less muscular than is perhaps typical for the village of Gevrey-Chambertin, and therefore highly prized. Pebble-rich, chalky topsoil sits over deep, limestone bedrock, with more clay the further down the slope you go.  Domaine des Chézeaux is the largest owner of the site, with 1.246 hectares – almost half of the vineyard. Other producers who own vines here are: Joseph Drouhin (0.53 hectares), Fourrier (0.26 hectares), Claude Dugat (0.15 hectares), Marchand Frères (0.13 hectares), Joseph Roty (0.08 hectares) and Duroché (0.02 hectares), as well as now Laurent Ponsot (0.11 hectares) and an investor who has leased his small portion of the Grand Cru to Cécile Tremblay (circa 0.2 hectares). The origin of the vineyard’s name is disputed. Some argue that it comes directly from “griotte”, the word for morello cherry – tied either to trees that were once planted in the site, or as a reference to the character of wine it typically produces. Most, however, now suggest it comes from “criotte”, the diminutive of “crais”, referring to the chalky pebbles that are found in its soils.    Insider knowledge: Domaine des Chézeaux Griotte-Chambertin Historic bottlings of Domaine des Chézeaux Griotte-Chambertin have been something of an insider’s secret, as some are Ponsot Griotte-Chambertin under a different label. Some were the wine made by René Leclerc, and it’s not always possible to know which.  1982 to 1993 vintages inclusive: Domaine des Chézeaux only had their original parcel of Griotte-Chambertin during this time, and it was leased to Domaine Ponsot  1994: Reportedly, only one wine was produced under the Domaine des Chézeaux label in 1994 – the first vintage in which Chézeaux had their second parcel of Griotte, which was leased to René Leclerc. The wine from both parcels was blended together for the Domaine des Chézeaux bottling.   1995 to 2001 vintages inclusive: Two identical Domaine des Chézeaux bottlings of Griotte-Chambertin were produced during these years, with nothing on the label to indicate which producer made them.  2002 onwards: The producer of the Griotte-Chambertin is detailed on the Domaine des Chézeaux labels from the 2002 vintage. While there continued to be two bottlings up to and including 2004, from 2005 onwards, René Leclerc’s Griotte was only occasionally bottled by Domaine des Chézeaux, with the wine more often sold off in bulk. (The 2010 and 2011 vintages are the exception, with the Leclerc bottling returning to the Chézeaux line-up, but with the producer name detailed on the label still.)   The Ponsot wines also have the Ponsot name embossed on the bottom of the bottles. Laurent Ponsot retained the lease for the vineyard when he left the family domaine, 2017 onwards.   The future of Domaine des Chézeaux  While Domaine des Chézeaux has a surprisingly deep history for such a modern estate, it’s surely only the beginning. With a talented vigneron like Charles van Canneyt at the helm and such enviable vineyard holdings, quality at this address is only going in one direction – and we’ve no doubt the wines will soon be as hard to secure as anything else he produces.  Domaine des Chézeaux’s 2023s 2023 Gevrey-Chambertin, Clos des Chézeaux: This monopole vineyard covers half a hectare, with some of the vines almost 100 years in age (planted in 1929). Mid-slope and facing southeast, the village site has deep, clay-rich soils with gravel, sitting just below Premier Cru Cazetiers and neighbouring another monopole village site, Clos du Château, farmed and produced by Armand Rousseau. Charles van Canneyt noted how managing the surrounding woodland (in particular removing some trees) had totally changed the site – bringing better airflow and more sunlight to the vineyard. His first vintage is scented, with bright and lush dark red-berry fruit, alongside iris and violet florals. The palate is vibrant and juicy, but with a fine-grained grip – nubuck-like tannins that frame the fruit, while there’s a savoury, saline note on the long finish. 2023 Gevrey-Chambertin, Premier Cru, Les Cazetiers: The vines in the Domaine des Chézeaux parcel of Cazetiers are very old, lending additional intensity to this brilliant Premier Cru. The wine is delicate, with chalky minerality and delicate floral perfume that entices on the nose. The palate has an earthy minerality, but that’s complemented by beautifully transparent dark berry fruit. It’s firm in texture, with savoury mineral tannins that balance the wine’s natural juiciness. Effortlessly balanced, long and impressive. Five barrels were produced in 2023. 2023 Griotte-Chambertin, Grand Cru: Griotte-Chambertin is the jewel in Domaine des Chézeaux’s crown, with the largest holding of this small Grand Cru site – renowned for producing gloriously aromatic and elegant wines. Charles van Canneyt’s first vintage is seductive, with sweet spice and just the lightest touch of toast sitting alongside waves of supple red cherry fruit. The wine is bright – offering an instant intensity and fullness, plush and voluptuous, yet with effortless elegance. It’s tight at this nascent stage, but you can see how much more it has to offer, with a structure that deserves time. Smoky tones linger on the long finish. A superb début. *This wine is famously the one that got fraudster Rudy Kurniawan caught, after he was found selling older vintages of Domaine Ponsot Clos Saint-Denis, although the property didn’t produce the Grand Cru prior to taking on the Chézeaux holding in 1982.  Keep an eye out for the first wines from the new Domaine des Chézeaux, which will be released soon; in the meantime, read more about Burgundy 

In 2021, Charles van Canneyt – of Domaine Hudelot-Noëllat – purchased the little-known Domaine des Chézeaux. Ahead of the release of his first vintage, we dive into the backstory of this Gevrey-Chambertin property – one that is set to be one of the Côte de Nuits’s most exciting new addresses

This year sees the release of the 20th vintage of Cheval des Andes – Cheval Blanc’s operation in Mendoza. Since the team from the legendary Saint-Emilion estate embarked on the venture with Terrazas de los Andes, 25 years ago, much has changed – and this is the start of a new era for the property. What was once a working concept has taken root.  “This is the beginning of our adult life,” says Technical Director Pierre-Olivier Clouet. “We have a real identity today.” It’s taken a quarter-century for the property to shake off the uncertainty of youth and find firm footing – something that hasn’t necessarily been easy.  “We made mistakes,” Clouet confesses. Not having a historic reputation to rely on, the team at Cheval des Andes had sought out high scores, chasing points to prove their worth. But, in a still Parker-dominant era, that meant making wines with “ripe grapes, a lot of extraction, a high level of alcohol – you [had] to show the muscle to explain that you are a great wine”, explains Clouet. “For a long time, the recipe was in the cellar; nobody cared where the vines were.” Now, however, that’s all changed.  From 2011, the team started shifting focus to the vineyard, working more closely with their French counterparts and vice-versa. The arrival of Lorenzo Pasquini (now the man at the helm of Ch. d’Yquem) in 2015 was key to the transition, as Cheval des Andes started to focus on a shared vision of fine wine – one that is about freshness, balance and ageing potential, and one that defines Cheval Blanc.  Only with a few wrong turns, however, can you be sure you’re on the right path – and Clouet is clear that those first 16 years, figuring out what Cheval des Andes should and could be, has been “super important” in helping them build “something with real sincerity, real authenticity”. Most importantly, Cheval des Andes is not intended to be, nor is a copy of Cheval Blanc: “It is, in our mind, absolutely an Argentine wine,” says Clouet.  The original 31-hectare vineyard is in Las Compuertas in Luján de Cuyo, a subregion of Mendoza. It is on these clay-dominant soils at around 1,000 metres’ altitude that Pierre Lurton discovered a plot of ungrafted Malbec in 1998. Planted in 1929, the vine material pre-dates phylloxera, descended from a selection imported to Argentina in 1852 – back when the grape dominated Bordeaux. This selection is key to the DNA of Cheval des Andes and, along with the huge diurnal shift, produces Malbec that is fresh, precise, perfumed and delicately structured. For Clouet, the “true” Malbec is closer to Pinot Noir in style – more floral than fruit-led, vibrant and even ethereal.  In 2001, the team purchased an additional parcel in La Consulta in the Uco Valley, at higher altitude and with more gravel-driven soils, a cooler site that has an even more significant diurnal swing in temperature. While they once might have used only a fraction of the estate to produce the flagship wine, they have moved to using as much as they can – to create a pure expression of the entire property, declassifying only plots that don’t fit in the blend or meet their stringent quality standards.  All 50 hectares are farmed with the same philosophy as their vines in Saint-Emilion – employing extensive cover crops, trees scattered throughout the vineyard, and with the same incredible attention to detail and focus on sustainability. “We work with the same vision and the same conviction,” says Clouet. One key difference, of course, is that irrigation is essential in this part of Argentina – but, here again, they’ve changed tack over the last decade or so. Rather than traditional modern drip irrigation where necessary water would be eked out drop by drop over the season as needed (“too artificial”, Clouet tells me), they irrigate extensively over the winter to ensure the soils are replenished fully between seasons (as well as help protect ungrafted vines against phylloxera), then – on a plot by plot basis – when the vines are starting to suffer, they give the vines around 40mm of water (still via drip irrigation), over 24-48 hours, replicating a day or two of steady rainfall.  They’ve reduced the height of the canopy (the engine of the vine for sugar production), while using trees, cover crops and minimal leaf-pulling to avoid sunburn. They’ve started pruning each vine according to its vigour, and are now picking significantly earlier – as much as two months earlier than 15 years ago. With this detail in the vineyard, the challenge is simply to guide the fruit through the winery: “No mistakes is enough in the cellar,” says Clouet.  In some ways, the wine echoes Cheval Blanc. While the Saint-Emilion property blends Cabernet Franc and Merlot, Cheval des Andes focuses on Malbec and Cabernet Sauvignon – the Malbec bringing freshness and silkiness that complements the backbone of powerful Cabernet. And the Cheval Blanc style, one of restraint and precision, shines through in recent vintages of the wine – and especially the soon-to-be-released 2021. As Clouet tells me, “Our vision is absolutely delicacy, freshness, balance, ageing potential, complexity.” Unlike Cheval Blanc, however, which needs 10 years in bottle to start even hinting at its potential, Cheval des Andes offers an immediacy – something that Clouet is clear doesn’t inhibit its ability to last; the 2021, for example, can be drunk now, but will evolve over the next 25 years at least, he tells me.  Even the association with the Cheval Blanc name doesn’t make Cheval des Andes an easy sell to fine wine lovers; but that, says Clouet, is part of what makes it fun – a challenge for the team to be pushed. Even better, his team gets the chance to learn and make wine not just once a year, but twice, as well as gaining additional insight on how Cheval Blanc might adapt to climate change. But Cheval des Andes isn’t just an intellectual exercise (that is merely an added bonus), Clouet firmly believes in the potential of this site – something they’re now finally beginning to realise. Serge Valentin has been one of the few truly independent voices in the Scotch whisky world since the early 2000s. For two decades and counting, the Alsace-native has published his tasting notes and scores to an astoundingly large and loyal audience with his characteristically good humour and impartiality in what can be a deafening echo chamber.   Despite being one of the most well-respected authorities in the industry, Valentin has always written about whisky in his spare time, very much considering it a pastime that he dabbles in for fun. This is somewhat of a surprise, given the many people who part with thousands of pounds based on his views alone.  “Contrary to what many believe, I’ve never been a pro and have never actually worked in whisky,” the jaunty Valentin is quick to tell me. “It is all a kind of super-hobby to me and if you ever see me doing gigs, for example at whisky festivals, it is always for free, for fun and for friends.”   Valentin’s “proper work”, as he calls it, is in advertising and marketing, where he owns two agencies which employ around 2,000 people. These agencies, he says glibly, are “supposed to pay for my whiskies…luckily, they do”. It was a very different landscape when Valentin started writing about Scotch in 2002. Single malts had been marketed for 30-plus years but there wasn’t the seemingly insatiable demand and record-breaking prices that are commonplace today. It all began when Valentin, armed with bottles of his favourite Old Clynelish and Brora, sat down and shared his musings on his aptly named website WhiskyFun. This wasn’t a vanity project or a vehicle for freebies, this was a man writing about the whiskies he loved, just because he wanted to. From humble beginnings, WhiskyFun has become one of the most well-respected hubs for commentary on Scotch. Valentin follows a 100-point scoring system, like some of the great critics in the world of wine. For Valentin, however, 80/100 is a good score. His methodology is largely unchanged. He will spend an average of 30 minutes tasting a whisky (he does, on occasion, score rums and other spirits) – this can increase up to an hour if it’s a “good one” and take nearer 10 minutes if it is a “bad one”. He always compares several similar spirits, almost always from the same distillery, and never scores “out of the blue”. He tastes “alone, using the same parameters” (place, time of day, glassware, water etc.) and always writes as he tries, and then publishes once a day.  His write-ups are always short, honest, and unmistakably him. After all these years, it’s dumbfounding that he has the time or inclination to produce the near-constant stream of reviews that appear on his website.    It’s fascinating to see which liquids he scores – and, sometimes more intriguingly, the ones he doesn’t. “The choices rather depend on what I get and what I source, but my sample library is much larger than my tasting capacity,” he explains.   This all started as a passion project for Valentin and it’s abundantly clear that that fire burns just as bright today. He never takes himself too seriously and is evidently ill at ease with any comparison between himself and the greatly respected critics in the world of wine.    This is, in part, because the role of a critic in spirits is nowhere near as established as it is in wine. There are leading voices in the Scotch whisky world who undoubtedly carry considerable clout, but they aren’t critics in the traditional sense. While they might be prolific in their output and have seemingly healthy book retainers, they rarely score spirits and if they do, their tasting notes will be almost entirely positive (often because they are in a producer’s employ). The closest the spirits world has to a Robert Parker or Jancis Robinson MW is probably Valentin – although, he wouldn’t agree.   “I would say the roles are more and more the same in wine and spirits,” Valentin says, “even if there are fewer actual ‘critics’ in spirits. But it is coming in whisky.”  Valentin does feel there is a need for scores in collectable spirits, as – like wine – there isn’t always the opportunity for people to try before they buy. But the issue is not black and white, as is true of many things Valentin and I discuss.   “I see that scores [in whisky] become more like stock market recommendations these days,” he says.“I’m not too happy about that but that wouldn’t be the case if spirits, especially whisky, had remained a reasonably priced commodity,” he says, before adding: “But the cardinal sins are what they are.” It’s clear whisky drinkers respect Valentin’s voice, as they flock to his site in droves. What’s less clear, however – as an outsider looking in – is how producers feel about Valentin’s refusal to kowtow and sugar-coat his reviews.  “Producers have never quite known how to deal with independent voices,” he explains. “In general, they prefer influencers that they can pay and control, even if their audiences are smaller and less ‘on target’,” he adds, “for which I can’t blame them. Fortunately,” he continues, “not all distillers are the same. Some corporations are smarter than others and that often depends on the people within.”   When asked why he thinks people return to his site, which doesn’t have any of the bells and whistles you might expect from an ad man and is as no-frills today as it was two decades ago, Valentin says, as self-deprecatingly as ever: “I’m not really aware of everything that’s happening in the reviewing landscape, I have to say. If indeed people keep coming back to my assessment, that’s partly, I believe, because I started early and simply because they trust me. Trust is number one.”   In many ways, Valentin’s website is a collection. It’s a receptacle for his innermost thoughts and feelings about the things that matter most to him. Valentin has always been collector at heart. With an interest in stamps from childhood, he then graduated onto watches, wine and then whisky. The father of three has a broad and eclectic range of interests, including music (“all kinds”), advertising, motorcycling, wine, watches, food and travel which he has nurtured and indulged. Throughout the years, Valentin has had a front-row seat to the evolutions within these industries and the so-called art of collecting.   “Old-school collectors used to buy what they liked, never what was meant to see its value rise,” he says. “In the old days, you had to travel, to make phone calls, to go to festivals etc. Today,” he says somewhat ruefully, “you can buy anything, as long as you’ve got the money.” Valentin was ahead of the curve when he made the choice many years ago to buy as many different Old Clynelish and Brora single malts as he could, simply because they were his favourites. At the time, and up until 2005 to 2010, all whiskies – even the rarest – remained relatively cheap. After 2010, it was silly season and whiskies you could previously source were nigh on impossible to find or prohibitively expensive for some.  Valentin’s favourite whiskies have become some of the most desirable on the secondary market. Old Clynelish, produced before the distillery was rechristened Brora, have gained a huge following globally as people were charmed by the story and the characterful liquid the two distilleries produced. Now Brora is set to be re-opened, these single malts will only become more valuable. While his collection is no-doubt impressive – exact bottlings are not disclosed – there are some unicorns which still elude Valentin.   “Rather bizarrely and inexplicably, I prefer fatter spirits and fresher wines,” Valentin says, “in both cases with as little straight oak influence as possible. So, fat distillates, such as some coastal malts, some Jamaican rums etc. In wine, that would be the bright whites, Jura, Savoie, Rueda, Pacherenc, Irouleguy, Alsace, Wachau and Andalusia.”    “I know oak is crucial,” he adds, “you just shouldn’t feel it as such, according to my personal taste. But I insist, that’s personal.” Oak is a topic Valentin returns to several times. He feels it is the low-hanging fruit when it comes to innovation in the Scotch whisky industry.   “Sure, there are a few innovations around the casks,” he says, “but all makers use more or less the same.” The woods used are usually more active, which allows producers to sell much younger whisky for a good price while widening the ranges at the same time, he says.   “I’m not saying that’s bad,” he quickly adds, “but not many people are talking about the distilling regimes, the stills and so on, which was the number one topic 20 years ago.” He continues: “It is now all about wood. But, when we talk about wood that includes their flavouring with other spirits, wines, or even whiskies from other distilleries such as some peated ones, which is the latest trend, to peat single malts by doing some in-cask blending rather than bother with brewing and distilling some peated malt. “So, cutting corners for sure but on the other hand, I believe the average quality has risen pretty sharply. So, all remains good and well…”  This seems to be Valentin’s baseline. The whisky world might have changed but he believes it is the same at its core. There is an increase in branding and marketing (which is likely a source of joy and consternation for an ad man), there are more malts, and for the past five or six years, more distilleries from almost all countries.   “I’m not bored yet,” he says in his frank way, “and in general, whisky has got better on average, even if there are fewer utter glories and fewer total duds.”  If a man with Valentin’s reputation of no-holds-barred honesty is broadly happy, then we probably all should be too.   Browse all Scotch whisky  or  read more Editorial

Local delivery is free for orders over HK$1,800 (to a single location). For orders below this value, delivery is HK$150 for up to four cases and HK$50 per case thereafter.

Shipping starts from €15 within Italy and €45 to Switzerland and the rest of Europe for up to 48 bottles (75cl). Costs vary by destination. Larger shipments can be quoted on request.

Wines sold en primeur will be released from the producer after bottling, typically 18 months after the so-called campaign ends. Upon arrival your wine will be stored at Vinfolio in our temperature-controlled warehouse until you decide to take delivery.

We will source this item at the guaranteed price from our network of suppliers and arrange expedited shipment to FINE+RARE.
 The lead-time depends on many variables, but 2-4 weeks is typical for expedited sourcing.
 Once your order is confirmed, we'll keep you updated on its ETA.
 Every item is checked on arrival by our expert team, with photographs available on request (please note that charges may apply).

When a wine is on "pre-arrival", it means that we have a confirmed order on the bottles from our supplier and we are simply waiting for the winery or distributor to ship the wine to us. The delivery timeframe for pre-arrival wines varies significantly, depending on where the wine is coming from. We will notify you once they arrive at our warehouse and, at that point, you can decide to arrange shipping or list them for sale.
