What springs to mind when you think of Bordeaux? Probably châteaux the size of medieval palaces, formal dinners, and rows and rows of pristine vines, neatly manicured rose bushes the only other signs of plant life. What you’re unlikely to be imagining are cow horns stuffed with manure buried in the ground, or horse-drawn ploughs churning through earthworm-rich soil. ‘In the past, in Bordeaux, you were scared to say you were growing biodynamically,’ says Corinne Comme, who manages 10ha of biodynamic vines at Château du Champ des Treilles in Entre-Deux-Mers with her husband Jean-Michel. ‘Now it’s trendy.’ An engineer and geologist, Jean-Michel Comme was behind the first transition of a grand cru classé estate on Bordeaux’s Left Bank to biodynamics. Although he and Corinne first came across the concept in the mid-1990s, he didn’t begin to advocate for the approach at Château Pontet-Canet in Pauillac until the early 2000s. ‘Corinne was scared,’ he recalls. ‘She thought they would fire me.’ "Behind the more esoteric elements is a series of principles that have been shown to improve soil health and vine strength" Originally laid out in a series of lectures by Austrian philosopher, scientist and social reformer Rudolf Steiner in 1924, biodynamic farming emerged as a holistic approach to agriculture before quickly evolving into formal certification movements. At its core, biodynamic farming centres on soil health and biodiversity; most distinctively, it operates according to the lunar calendar, with practitioners timing agricultural activities around specific ‘fruit days’, ‘root days’, ‘leaf days’ and ‘flower days’ to align with cosmic rhythms believed to influence plant growth and agricultural processes. For many in Bordeaux – Jean-Michel Comme included – this all sounded a bit wacky. ‘I was young, full of expectations about chemistry; the way biodynamics was presented was so remote that I felt it was crazy,’ Comme says. ‘But with experience, we did change our minds.’ Why? Because behind the more esoteric elements is a series of principles that have been shown to improve soil health and vine strength. In vineyards, biodynamic farming means specific practices such as hand-harvesting, using natural composts made with specific herbal and mineral preparations, avoiding chemical fertilisers and pesticides, and treating the entire vineyard as a self-sustaining ecosystem. In the cellar, there’s an emphasis on minimal intervention, using native yeasts, avoiding commercial additives, keeping sulphur use to under 70ppm, and employing gentle pressing and ageing techniques that respect the wine’s natural development. While biodynamics took root in regions like the Loire and Burgundy in the 1990s, biodynamic winemaking in Bordeaux largely began in the new millennium, with just two early St-Emilion exceptions: Château Meylet, which has been practising it since 1987, and Château Fonroque, experimenting since 1995 with direction from Loire legend Nicolas Joly. This delay largely stemmed from two factors. First, Bordeaux’s humid maritime climate means that vines are especially vulnerable to both downy and powdery mildew, making the avoidance of synthetic fungicides a risky business. Second, large châteaux with multimillioneuro operations were reluctant to abandon the technological viticulture and winemaking that had built their global reputations in the first place. Comme, however, was convinced of the virtues of biodynamics. He began by seeking the assistance of François Bouchet. The Loire Valley winemaker was one of the first in France to pioneer biodynamics, also consulting for Domaine de la Romanée-Conti, Domaine Leroy and Domaine Leflaive in Burgundy. Bouchet guided the transition to biodynamics at Comme’s Château du Champ des Treilles; then, he persuaded Château Pontet-Canet owner Alfred Tesseron of its merits. In 2004, it was trialled on 15ha (about 20% of the estate’s total growing area) of the fifth growth at which Comme was also technical director. A severe mildew outbreak in 2007 led to the use of pesticides, undoing three years of progress, but it then became a crucial lesson that strengthened their long-term commitment to biodynamics. ‘They believed the fruit had more expression, more brightness,’ says the current technical director at Pontet-Canet, Mathieu Bessonnet, who reveals that they converted the whole of the growing area soon after. ‘It’s obviously much more difficult, time-consuming and expensive, so it was very risky,’ he adds. Since then, biodynamic farming has become a significant and growing practice across different classed growths in the region, with some of the most prestigious estates – such as Château Latour and Château Palmer – adopting biodynamic methods (the latter certified). ‘The link between the wines and the place where the fruit came from had become less and less obvious,’ says Château Palmer’s technical director Thomas Duroux, commenting on the region’s turn to the trend. He notes that, since the noughties, many have adopted organic practices in a bid to reverse this perceived drop in terroir definition. ‘Biodynamics is, in a way, the same story as organic farming, but with a larger vision,’ he adds. This shared perspective has led to more cooperation between practitioners. Every spring, the Médoc branch of the Biodynamic Agriculture Movement gathers at Château Ferrière. After unearthing a thousand manure-filled cow horns and replacing them with silica-filled ones (a process reversed in autumn to produce preparations 500 and 501, required for Demeter certification), participants share wines and gardengrown salads. The humus removed from the cow horns is stored in a cold, damp facility and made available to members. ‘We do that for free,’ says Claire Lurton, owner of Château Ferrière. ‘It’s a community.’ Though ‘community’ might be too strong a word for some, these gatherings symbolise a deepening professional exchange that has emerged among estates of all sizes through the practice of biodynamic winemaking. In fact, the shift among the classed growths has happened at the same time as these practices have been adopted by smaller growers arriving in the region. Christophe Landry of Château des Graviers, for example, returned to Arsac in the 1990s and began practising biodynamics around the same time as Comme at Pontet-Canet. He’s consulted for the Lurton estates and other properties. Originally from Minervois in Languedoc, Michel Théron established Clos du Jaugueyron nearby and has been certified biodynamic since 2008, while Laurence Alias and Pascale Choime – who are both from southwest France – established Closerie des Moussis, a patchwork of sites across 2ha, including a 170-year-old pre-phylloxera plot leased from Théron. On the Right Bank, other producers began switching lanes even earlier. Le Puy, owned by the Amoreau family, began practising in 1998, with certification since 2013, and Château Gombaude-Guillot in Pomerol has been certified biodynamic since 2006. While larger estates like Latour and Palmer collaborate on issues like mildew, smaller producers tend to engage more with one another. Shared biodynamic practices, however, are definitely helping to break down barriers. For example, Château Haut-Bages Libéral maintains regular communication with its neighbours at Château Latour, and the son of Théron at Clos du Jaugueyron interned at Château Palmer for two months. Can we speak of a unity of praxis? Not exactly. There is considerable variation in which aspects of biodynamics winemakers emphasise, regardless of estate size. The primary aim across the board is achieving living soil with rich biodiversity to promote deep-rooted vines. In pursuit of this, some winemakers emphasise tree growing or cover cropping (like Haut-Bages Libéral, which also recently planted a variety of local and fruit trees). Others, such as Le Puy, let nature take its course, allowing a diverse array of plants and flowers to sprout from the earth. Whether certified or not, biodynamic practitioners throughout Bordeaux use homeopathic treatments like nettle teas for the vines – they are believed to stimulate soil health, enhance plant immunity and improve nutrient uptake. More important than any of this, however, is the concept of energy. How can the energy of the plant be retained as its raw material transforms into wine? Every winemaker I visited was at least intrigued by the concept – and most were captivated. After a few days in the sometimes eerily flat Médoc, I drive through the verdant hills of St-Emilion to Le Puy, arriving with a raised spirit. Standing before a 5,000-year-old Celtic cromlech, Harold Langlais, the estate’s director, tells me, ‘Le Puy is a place of energy and life,’ pointing to its deep history as an intersection of water springs. At modern-day Le Puy, this philosophy extends from the vines to the cellar. Indeed, many others I speak to express that, since adopting biodynamics, the most striking change in their wines has been an increase in ‘energy’. It’s a term without a precise definition, but according to Château Palmer’s makers, something shifted with the 2015 vintage, the second year after full conversion. ‘You cannot measure it,’ Thomas Duroux says. ‘You can just feel it.’ At Château Durfort-Vivens, where the vineyard was operating under biodynamic principles by 2013 (with full conversion by 2016), owner Gonzague Lurton recalls the 2014 vintage as ‘the first where you really feel the energy of biodynamics’. It’s tactile and warming, with a sophisticated grip and charm. ‘It’s what I love – the linearity of tannins, never weak from start to finish. With many of the estates I visited, their wines showed an immediate appeal, vibrant even in their youth. Is energy just another way of describing freshness? Laurence Alias at Closerie des Moussis trained as an agricultural engineer; for her, energy and vitality are tied to the physical properties of grapes grown biodynamically. ‘We have more acidity, that’s an analytic fact,’ she tells me, standing in front of a newly acquired plot of vines bordered by forest. It might be romantic to think of energy as something ineffable, but it’s also rooted in what remains within the grapes. ‘Our idea of energy is based more on Einstein than Steiner,’ Langlais later qualifies. ‘Energy is matter.’ Biodynamic winemaking in Bordeaux: five to follow Château Pontet-Canet At the 55ha Pontet-Canet estate in Pauillac, an immensely smooth operation is palpable. Winemakers here have spent almost two decades honing their biodynamic craft, continually moving towards a goal of self-sufficiency for the estate. Sturdy Comtois horses, introduced in 2008, now work half the vineyard, preventing soil compaction. Vineyards are sprayed over a single day using compost and herbal teas produced from plants grown in and around the property and processed in the state-of-the-art infusion room. Biodiversity-boosting fruit trees and hedges have been planted. The estate even employs a carpenter who repurposes wood from vats used on the property. Ageing involves custom-made wooden eggs and qvevri-style amphorae, with no fining and minimal filtration. The result? A Pauillac with untypical levels of energy and minerality, and a plush, velvety texture. But it’s more than that – according to Bessonnet, thanks to a low-intervention approach across the board, ‘you can really feel the soil.’ Château Palmer Thomas Duroux’s conviction in biodynamics is based in what he calls a ‘holistic vision’. ‘We started to see the entire place as a living organism,’ he says of Château Palmer, one of the most storied and historically significant third-growth estates in Bordeaux. When converting (a process that started in 2009), the Margaux estate was initially guided by François Bouchet’s son Matthieu, but now it follows its own evolving philosophy, integrating cover crops, animals for fertilisation and estate-grown vegetables and meat. ‘It’s just going back to agricultural common sense,’ Duroux says. ‘That was the way to grow anything before World War II.’ This respect for nature results in wines that are deeply tied to their terroir. ‘If I had to describe the wines how they are today, compared to how they were before, I’ll just say that it’s not a revolution, but we have the feeling that the wines have a better identity,’ says Duroux. He likens biodynamics to restoring an old painting: ‘Suddenly, you see small details that you were not able to see because of the dust.’ The estate uses stainless-steel vats for fermentation and temperature-controlled rooms for barrel-ageing, combined with nativeyeast and low-sulphur winemaking, to produce its esteemed Alter Ego and Château Palmer cuvées; both have been increasingly celebrated among critics and drinkers since the turn to biodynamics. ‘We just think it does help to go a little bit further in the interpretation of the place,’ says Duroux. Château Durfort-Vivens Standing over a rustic sorting table explaining how it used to work, Gonzague Lurton is visibly passionate about the savoir-faire of the past. This sensibility is reflected in the current winemaking practices, too, and in the second-growth Margaux estate’s reputation (and critics’ scores) increasing year on year. The thing to emphasise is that what began with a biodynamic approach in the vineyards led to a series of domino effects that changed the character of the wines. In search of what Lurton calls greater ‘singularity’, the proportion of Cabernet Sauvignon had already risen to over 90% by 2014 (from around 75%); and with the use of indigenous yeasts during fermentation and the reduction of sulphur levels over time (initially sparked by Demeter’s upper limits of 70mg/l), the wines have become more aromatically complex and expressive. The introduction of amphorae by Italian producer Tava has allowed for microoxidation without overextraction, contributing to a more delicate balance of flavours, with the 2019 estate wine a blend aged one third in amphorae and the rest in barrel. ‘It’s not a big wine,’ says Lurton. ‘And it’s what I was looking for with biodynamics, in terms of style.’ Château des Graviers Christophe Landry’s pioneering status in Margaux stems from an instinct refined over decades at his own estate. He grows medicinal plants — horsetail, absinthe, calendula, chamomile — for vineyard treatments, as well as using the manure from his own cows. ‘What we need to remember is that biodynamics isn’t just a practice,’ he tells me. ‘It’s about finding your own path to self-sufficiency.’ His precision extends to the cellar, where he uses concrete tanks, amphorae and oak barrels (produced according to the biodynamic calendar) tailored to each of the five cépages’ oxygenation needs, then ages the wines for different lengths of time. Timing is everything, with harvest choices also following the biodynamic calendar. Obsessive care for the vines’ life cycles goes hand in hand with the level of precision in the cellar. The outcome is two phenomenal wines that are, as Landry puts it, ‘thirstquenching’. Château des Graviers and Quintessence — which contains a higher proportion of Petit Verdot and is aged longer in barrel and amphorae — are aromatically expressive, velvety and strikingly lively, with the latter offering more depth and an enveloping finish. Expanding to 18ha, Landry has also turned his focus to Clos Dufourg, cultivating vines on previously wild land nearby and hand-building a striking new cellar with cement tanks painted with clay from the surrounding earth. Le Puy For technical director Harold Langlais, the Le Puy estate’s significance lies in how it challenges Bordeaux’s conventional identity. Outside of the region’s traditional focus on appellations and classifications, Le Puy sits on a plateau near St-Emilion. The estate’s land is unusual, with no topsoil but a deep limestone bedrock beneath red-brown clay, which forces the vines to develop deep roots to access the earth’s natural water and nutrients. This is further supported by horse-ploughing and biodynamic sprays made from horsetail, buckthorn and nettles, which grow on the property. ‘Our approach focuses on rooting the vine deep,’ Langlais explains, ‘encouraging it to search out hidden nutrients.’ A vigorous wind circulates around the vines, and Langlais explains the effects of the elements. ‘The beauty of Le Puy is that it’s an acid factory. The whole place creates acidity in the berries.’ The biodynamic philosophy extends to the winemaking, with two different processes applied to their 100% Merlot cuvées. Cuvée Emilien uses a ‘decantation method’, or ‘fermentation by infusion’, while Barthélemy is produced with zero sulphites and a process of lees-stirring called ‘dynamisation’, which is done on fruit days and involves a specific motion to create a vortex in the old barrels it ages in. ‘Barthélemy is much more intense,’ Langlais says. ‘All the matter taken by the plant is in there.’

Taking root: the rise of biodynamic winemaking in Bordeaux

The rare whisky market is a competitive place. Across countless auctions houses, online retailers, and secondary trading groups, collectors the world over close deals each day. Well-aged, limited bottles are at the forefront of the rare whisky market, however, there is another branch of whisky to invest in and enjoy that remains quite undiscovered when compared to
bottles. We’re talking about casks, and luckily, most of the world hasn’t heard of them yet.  For some, the returns of cask ownership has been staggering. Record-breaking sales of privately owned Macallan casks are amongst the greatest success stories. For others, the appeal is selecting and owning your very own privately bottled cask.  Sales are often tailored to a private buyer so there is little visibility meaning even connoisseurs are not yet aware of the process and benefits of owning their own casks. But worry not, here’s a full guide to buying your first cask of whisky. Why casks? While not yet at the level of bottle trading, the cask trading market is expanding. Owning your very own cask of whisky, which is stored in a distillery or warehouse in Scotland, is hugely appealing and (usually more so than bottles) the potential returns are huge. The main
difference between buying a bottle and a cask is that a cask continues to mature. Looking at long-term investment, one can buy a newly filled cask of spirit today, and 10 years from now this will have become a 10-year-old cask of whisky, containing over 300 bottles. If bought at the right price, the potential profit is huge. A 50-year-old bottle of whisky bought today will still be a 50-year-old bottle years from now. Cask trading is also free of many hindrances found in bottle trading Shipping is not an issue, as the cask remains in the care of the distillery/warehouse staff where it is stored Personal storage isn’t needed.  For a very low fee (usually between £40-60 a year) the warehouse staff keep your cask safe in a perfect, monitored environment Unlike bottles, casks vary in quality and taste, so there’s not a one-price-fits-all policy. No longer will you be sent crazy auctions prices for a comparison  You have an excuse to head to Scotland, to visit and taste your casks How it works The process of purchasing a cask is also quite simple:  However, there are many small points that come into play, such as annual storage fees, insurance, bottling specifications for the cask, moving the cask to another warehouse if the buyer chooses. However, all this is easily managed if you follow one point, the most important one in the entire process:  Know who you are buying from Because of the lack of knowledge surrounding the category and the large profits to be made, there are countless cask traders out there who take advantage of new buyers, trade low-quality casks, hide information, and lack transparency. Countless buyers have been scammed, so be careful. Do not be fooled by sleek websites and salespeople. Ask around about the company you are buying from, look for reviews, and check their history. It’s an unpleasant
feeling to purchase a cask with a 10-year plan in mind, only to find the company you bought it from shut down a few years after your purchase. As we do here at F+R, you need to be given a full plan for your cask, not only encompassing the purchase but also the years ahead and the final exit strategy. Exit strategies explained We’ve discussed the benefits and steps to buying your first cask, but what of the steps that follow? In what ways can you profit from your cask after you’ve allowed it to mature?  Sell on: the first exit strategy is the simplest, re-sell your cask. This is where the company you bought from can help you find a new buyer or company to take on your casks. These can go to a new investor, collector, an independent bottling company that plans to make a release out of it, or to a number of bars. After a consultation, you’ll know what your cask portfolio’s new value is and the profit that stands to be made.  Bottle it: If you’re a company owner, bar owner, or do business in whisky you may choose to create your own bottle and label design, and bottle your cask. Once again – your supplier should help you with each step of this process, right down to the delivery of the bottles. This, again goes back to the company you initially choose to work with.  Risks Of course, as with any investment, there are certain risks to consider. Firstly, the product is a wooden container of liquid and is prone to leaking. This is monitored by the warehouse team, however, sometimes there may be loss. It’s not a common occurrence, but a possibility nonetheless. When moving the casks the may drop, or break, a number or situations can occur. Therefore, the contract must be full proof before signing.   As with other investments, the growth of casks is hard to monitor especially as more time passes. The brand buyers invest in may grow more or less popular, and this point falls into bottle as well. At the very least, brand aside, an older whisky will command a higher price that a younger one so your cask will rise in value no matter the state of the whisky market
when you decide to sell.  Beyond stocks and cryptocurrency, whisky is an investment to both enjoy and profit from. Purchasing a cask is, above all else, an exciting adventure.  Perhaps you’ve decided to support the cask-selling program of a brand new, up-and-coming distillery, and alongside the cask, you can follow them on their journey. Perhaps you managed to buy a cask from the distillery you’ve loved for years but never knew how to become a part of it until now. Maybe you want to open your own independent bottling brand or bar, and need some casks to make that a reality. Or, you simply want to make some investments you actually enjoy, and wouldn’t mind an annual trip to Scotland to sample the progress your cask portfolio is making. There are many reasons to enter the world of whisky casks, with countless benefits along the way. The important part is to be safe, deal with trustworthy sources, and educate yourself along the way. Coming off the back of an extremely successful 2015 vintage, 2016 is a fascinating comparison. Both are exceptional but with distinctly different personalities. 2015 is exuberant, rich and decadent; 2016 is arguably more precise, detailed and elegant. No doubt these vintages will be forever compared, showcasing the extraordinary potential of Sangiovese in this special part of Tuscany.  Speaking to some of the top producers in the region, you can’t help but feel their personal preference is with 2016 – a vintage that might not be so immediate as 2015 but is more complex, classic and with a huge capacity to age. Either way, both vintages are a testament to the increasingly adept handling of the delicate Sangiovese grape in Montalcino in recent times, producing wines of great depth and complexity. 2016 is a touchstone vintage for Brunello di Montalcino. It is a vintage of purity, so free from affectation that it will no doubt be the benchmark against which all other vintages are compared, past and future. The growing season  For many vignerons in Montalcino the growing season in 2016 requires little exploration simply because it was so temperate. “2016 was the perfect vintage for my mental state” says Francesco Ripaccioli from Canalicchio di Sopra. From start to finish the growing season could not have been better. Francesco explains how in some vintages it is the growing climate that dictates the style of the vintage. If it is a hot vintage you feel it in the grapes, the sugar concentration, the berry flavour, the added alcohol and power this brings. In a cool vintage you feel the balsamic notes and the ethereal perfume. “Nature cannot be controlled but can be interpreted” he states, “and sometimes a big effort is needed to interpret a vintage”. But 2016 was the complete opposite. In 2016, nature did not dictate style. The moderation and clemency of the climate allowed the grapes to develop in pristine condition devoid of any characteristics brought about by extremes. This, Francesco contently concludes, “allowed for each of the territorial identities throughout Montalcino to shine through”. The year began with a very cold spell in January with 12 days below freezing, which cleaned the vineyards of disease and mildew spores from the previous vintage. Bianca Ferrini of Podere Giodo outlined the importance of the rainy winter that followed, building up good groundwater reserves for the drier summer months ahead. The spring brought more rain but the risk from fungal attacks stayed low, no doubt due to the cold winter leaving the vines in good health. Budding, flowering and fruit-set all came and went without issue. Ideal conditions saw impressive yields with good, even cluster formation and healthy vines right up to the point of veraison (when the grapes start to ripen). Despite good yields there is little concern this will lead to diluted wines, Francesco Ripaccioli commented. Under the DOCG, grapes grown within the Brunello di Montalcino designation have strict rules on production – capped at 8,000 kilos per hectare (which results in just 1.5 kilos of grapes per vine). Although Canalicchio di Sopra crop a little lower than that, over-production in the region more generally in 2016 is not an issue. Intermittent rain showers continued up until August meaning that Poggio di Sotto (who practices organic viticulture) found the growing season more challenging than most. Fortunately for them, explains Luca Marrone, the southern location of their vineyards and the “never-ending west breeze from the valley kept the vineyards dry”, protecting the grapes from any onset of mildew.  Bianca Ferrini also outlined the importance of the winds during the summer: “the constant breeze in the vineyards encouraged good balance in the vines and was central to the outstanding organoleptic properties that developed in the grapes”. For Bianca, the “regularly paced rainfall, the summer heat and the drying winds laid the foundations for a great vintage.”  Another key element to the style and success of the 2016s was the notable diurnal drop in temperature between day and night during the summer months. This ensured long, slow ripening of the grapes which Ferrini states “was crucial both for aromas and tannin development”. Riccardo Talenti also emphasised how this kept pH levels low in the grapes, giving the wine high levels of freshness and acidity despite the ripeness, a great sign for longevity. For Sabina Sassetti “2016 was another near-perfect vintage in Montalcino.”   “I cannot remember a better last 20 days prior to harvest.”  – Francesco Ripaccioli, Canalicchio di Sopra
 The most important part of the growing season is always veraison during the last 20 days leading up to harvest. It is here where rain, humidity, sun hours and diurnal temperatures are key. It is where the aromas, flavours and acid profile of the wines are formulated and in 2016 Francesco Ripaccioli cannot remember a better last 20 days prior to harvest. There was no huge temperature hikes of 40 degrees like 2015. The highest it reached was 35 degrees. A great vintage he believes, needs to reach 2000 on the Huglin sun hours index and in 2016 it was up to 2500. As Gianpiero Bertolini at Biondi-Santi states, right through veraison “the autumn day and night temperature swings played an important role in the final complexity of flavour and health of the grapes at harvest.” Biondi-Santi picked early, starting on the 19th September. “Our concept of “grape maturity” favours the fragrance of the fruity notes and a well-balanced alcohol content” states Gianpiero. Poggio di Sotto also picked some of their crop early, picking their first grapes three weeks earlier than most in Montalcino.  Harvest of the oldest vineyards at lower altitude (200 metres), where the berries are more sensitive to the heat, took place from the 2nd to the 15th of September. “We don't mind if the sugar content is relatively low for the current standard”, states Luca Marrone. “In 2016 the alcohol content was typical for Poggio di Sotto, around 13% to 13.5 % in the first days of picking and 14% in the last days”. Unlike 2015 it was a long harvest for them, picking their final plots in October. Riccardo Talenti started picking on the 18th September: “A normal picking date for Talenti in a great vintage”.  “2016 is the deepest and most elegant of vintages”  – Riccardo Talenti, Talenti For Canalicchio di Sopra the harvest was quick – just 10 days beginning on the 27th September. It was very clear to Francesco that all the fruit was ripe and ready, with very little concern regarding analysis. In vintages which are more difficult to read, he is constantly in the vineyard measuring potential sugar levels, tasting berries, and getting analysis from the laboratory to make picking decisions. In 2016 virtually no analysis was required, the quality of the fruit so effortlessly transparent. For Sabina Sassetti harvest began at the beginning of October. For her, this is when the grapes reached perfect ripening and, consequently, the proper accumulation of polyphenols, allowing tannins to be gentle and easily accessible on the palate.  Comparing two epic vintages in Brunello: 2015 versus 2016  2015 produced wines that were a product of the extremes of the vintage. The warmth brought a fantastic maturity to the fruit, a richness and opulence to the palate and generally more rounded tannins. 2016 in comparison is less forward and more serious. Francesco Ripaccioli describes the wines as “extremely elegant, more complex, more ethereal”. He appraises the vintages perfectly by describing the 2015s as horizontal wines and the 2016s as vertical wines. Whilst the 2015s might be more approachable and their appeal more immediate, the 2016s are more cerebral and he believes have “double the length of the 2015s on the finish”. He explains that 2015 was a vintage made great by the climate, and you can feel that impact in the wines. 2016 in comparison does not have the exuberance and warmth but instead offers complex floral sensations, tighter, more linear structure and a beguiling freshness which he believes will see the vintage age beautifully.  “2016 is a wine of “nerve” and energy, with lots of fresh fruit and a well present acidic backbone.” – Giampiero Bertolini, Biondi-Santi Francesco is still a great fan of 2015 and so he should be, his La Casaccia was awarded perfect scores in 2015. He believes 2015 and 2016 will be compared to the last great duo of top Brunello vintages: 2006 and 2007. It will be down to each drinker’s opinion which vintage is better. “The vintages will always be divided by personal preference”, he concludes. What is so exciting is that whilst 2016 and 2015 are both great vintages, they are also completely contrasting in style.  Biondi-Santi’s Giampiero Bertolini believes “2015 is a vintage of sun and warm temperatures. A vintage of generosity, both in structure and alcohol, where the ripe, fruity notes abound. Whereas 2016 is a wine of “nerve” and energy, with lots of fresh fruit and a well present acidic backbone.”  For Sabina Sassetti, the slightly cooler weather in 2016 versus the previous year, gives the wine a higher acidity, resembling the widely praised 2006 vintage. The result is a fresh and elegant wine with a firm structure. James Suckling’s recent report declared Sassetti’s 2016 Brunello potentially the wine of the vintage, awarding it 100 points.  “Think of the 2015s as horizontal wines and the 2016s as vertical wines” – Francesco Ripaccioli, Canalicchio di Sopra Riccardo Talenti feels “2015 is warmest and most voluminous, 2016 deeper and more elegant”, comparing 2016 to 2006 or a more complex 2010. Luca Marrone of Poggio di Sotto likes to consider the mood of 2015 as “explosive – already lively with the immediate impact of its complexity, in such a way mirroring the early ripeness of the vintage.” The wines of 2016 also imitate its growing season. “It was a slow and steady path. It's gentle and shy at the first approach, with an introverted talent that will reveal power and elegance in the long run.”  Canalicchio di Sopra also compares 2016 to 2006 and 2010 but believes 2016 is better. “It has something more than 2010, more identity, more freshness. He describes 2016 as a cross between 2013 (one of his favourite vintages for its freshness and floral notes) combined with the fruit purity and ripeness of 2010. For Biondi-Santi, 2016 in terms of freshness and ageing ability is similar to 2010, whilst Ferrini compares it to 2006, 2010, 2015 and 2019.  Perhaps the most important factors when it comes to considering your 2016 purchases are purity of site and style. The growing season being so perfect, so unaffected by any climatic extremes, 2016 offers the purest expression of terroir, of variety and of each of the individual Brunello winemaker’s talents. This is a touchstone of a vintage, against which all other vintages, past and future, will be compared. What is Port? Port is a fortified wine made in the Douro Valley in Portugal. Traditionally the wines were shipped along the river to Oporto (also known as Porto), from which the wine takes its name. A huge number of grapes are permitted for Port production, however, there are five main varieties used: Touriga Nacional (widely thought to be the best grape for Port, giving its name to Quinta do Noval’s top wine, Nacional), Tinta Barroca, Touriga Franca (or Touriga Francesa), Tinta Roriz (aka Tempranillo) and Tinto Cão. The vineyards sit on steep, terraced slopes alongside the Douro river. Thanks to these vertiginous slopes, much of the vineyard work has to be done by hand, with little mechanization possible. The further inland you go – moving east from Oporto – the hotter and drier the climate becomes. The vineyard area is divided into three key regions: Baixo Corgo: The coolest and wettest region which produces the lightest wines. Cima Corgo: With lower rainfall and higher temperatures, this is the traditional area for the best Port wines. Douro Superior: Particularly dry and hot, this lesser-planted region nevertheless can produce very high-quality wines. For red wines, the grapes are trodden – traditionally by foot, but also now by machine – and fermentation is cut short by the addition of neutral alcohol (called aguardente), thereby leaving residual sugar in the wine. Styles of Port 
There are two main types of Port – those aged in bottle and those aged in cask. Those
aged in cask are designed to be consumed upon release, while those aged in bottle need time to mature.  Ruby: The most basic, entry-level Port is Ruby. The wine tends to be aged in cask or tank for two to three years. Bottled while youthful, it’s bold and full of primary fruit, with a fiery kick from the spirit. No need to decant. Reserve: A step up from ruby, this wine is normally aged a little longer (again in bulk rather than bottle), perhaps being made with higher-quality fruit, so that it has more complexity than a ruby Port. No decanting necessary. LBV: Late Bottled Vintage Port comes from a single year, but spends more time maturing in cask (rather than bottle). Bottled between four and six years after its harvest, the wines are designed to be consumed long before vintage Port, but offer some of the complexity of the
style. Some wines are filtered and others aren’t, so it may or may not need decanting. Crusted: This style takes its name from the crust, or sediment, it throws while in bottle. A blend of several years, the wine is – like LBVs – aged a little longer in cask before bottling,
and likewise is designed to offer some of the complexity of vintage Port. Decanting is essential Vintage: The finest Ports come from a single vintage. This style accounts for a mere 1% of production, with the wines only made in certain years from the very best fruit. Traditionally vintages are either “declared” by producers (and therefore it is a year where they make a vintage Port) or not (with the official declaration classically announced on St George’s Day, a year and a half or so after the harvest). There are, however, a few years with “split declarations” where some producers chose one year, and others chose another for their vintage wines. While once there were only three or so declarations each decade, climate change has seen an increasing number of years producing fruit worthy of vintage wines, and therefore an increasing number of declarations. The wines tend to spend two or three years in wood, but are aged mostly in bottle. These
wines are built to last – having lots of tannin, flavour and alcohol. Spending decades in bottle, they develop extraordinary complexity. Because of the high tannin level, these wines throw a lot of sediment and it is essential to decant them. Single Quinta: These are vintage wines from single “quinta” or estate (while Vintage Ports are often a blend of estates), often produced in years that are not officially declared.  Tawny: Tawny Ports are aged oxidatively in cask, and thereby gradually losing colour to develop a “tawny” colour, while also developing nutty, dried fruit and caramel aromas. The longer it is aged, the more complexity it has. (The most basic examples are a blend of ruby and white Port to create the appearance of a Tawny, but none of the same flavour complexity.) Tawny Reserves have seen minimum seven years in cask, while many come with an age statement – 10, 20, 30 or Over 40 years old – indicating the average age of the blend.  Colheita is a Tawny from a single vintage, spending minimum seven years in cask prior to release (although it is often longer). They are designed to be consumed soon after bottling (a long time in bottle can in fact negatively impact the wine’s quality) and no decanting is
necessary, although you may want to chill the wine lightly. Given their oxidative nature, Tawnies can often last longer once open than their red counterparts.  White: White Port is mainly made with the Gouveio, Malvasia Fina and Viosinho grapes. Youthful examples can make for an excellent aperitif, sometimes served with tonic and lemon as a cocktail, but you can also find rare aged white Ports, carrying an age statement that – as with Tawny Port – is the average age of the blend. The name Andrew Rankin might not mean much to the average whisky drinker. But mention him to the whisky world – the one that exists behind the public glare, and is largely reliant on lasting relationships and mutual respect – and there’ll be little doubt who you’re referring to.   Throughout his career, Rankin has worked for two of the biggest names in the industry: Chivas Brothers and Morrison Bowmore. When we speak, on an overcast Monday in early November, he tells me it’s 47 years to the day that he joined the ranks as a trainee blender at Chivas.  It’s hard to imagine a wet-behind-the-ears Rankin embarking on his “old-fashioned proper blending training”. He remembers those days fondly, tasting hundreds of different distillates – including malts and grains from Scotland and the US – from the vast library, and getting stuck in with every aspect of the production process from distillation to the vatting and cask dumping. It wasn’t long before the young Rankin found his passion: casks.   “There was a lot of not-very-good wood filled in the industry way back in the 1970s and ’80s,” he tells me. “Even in those early days, I pushed to get some better quality wood in the system.”   Rankin learned from the old guard at Chivas who’d spent their life in the industry. In the early 1990s, he moved to Morrison Bowmore in a General Manager role, concentrating on blending, inventory management and, most importantly, cask trading. He spent 22 “lovely years” at the company until his position became untenable when Suntory (“in their infinite wisdom”, Rankin says wryly) decided to buy Morrison Bowmore’s owners Beam in 2014.   Rankin says the whole dynamic changed overnight and the decision to move global management of all spirits – including whisky – under American management in Chicago was the final straw for him, Chief Executive Mike Keiller and Finance Director Douglas Crawford, who all walked that same year. Rankin says he “doesn’t want to get into it all” but does say part of his motivation to leave was the fact he didn’t want to work for an American-managed company that late in his career – having already experienced a similar takeover with Chivas and Seagram many years earlier.   Rankin is a loquacious Scotsman. When you land on the right subject, he can talk endlessly with such knowledge and humour that it’s easy to lose track of time. In fact, when a small team from FINE+RARE visited his new distillery project, Ardross, in August, we did just that. One thing he doesn’t talk about, without great coaxing, is his immense success. This includes but is in no way limited to his work on Bowmore Black, the Trilogy releases, and the 50-year-old. He is a humble man, and has quite intentionally stepped back from the limelight, while some of his counterparts have been drawn to it.   Since setting up his own company in 2014, Rankin has not stopped working. Undoubtedly his biggest project has been Ardross, a new distillery in the Scottish Highlands. Rankin was given the mandate (and a healthy budget of £30m) to find a home for the new distillery by Ardross Single Cask Society founder Barth Brosseau. He found the dilapidated 50-acre site, which was formerly a farm, with its own seven-acre loch and moved heaven and earth to turn it into the stunning distillery we see today.   Rankin says the project has, and continues to be, “much much bigger” than he originally anticipated, and what started out as a little tree constantly grows branches all over the place. But, he says, it has been his biggest achievement to date.   The latest unwieldy branch is a second, small-batch distillery that is being built on the Ardross site, destined to become the Creative Suite – exclusively for Single Cask Society Members’ use. Once completed, it will be capable of producing 250 casks a year of almost any style of whisky that a Society Member could desire. When it is up and running, likely by the end of next year, Society members will be able to call Rankin or visit him at the distillery to discuss their requirements. He will advise them on certain elements and Sandy Jamieson – Ardross’s Distillery Manager with near-50 years’ experience, and hands-down one of the most hospitable people you will meet – will get involved in the “nittier grittier side of the distillation”.  “Society members have the flexibility of different malt styles, of different grain stills, of different blend styles, and the multi-cask options that we’ll have available,” Rankin says. “But always without getting to the gimmicky stage,” he adds gravely.   This is a word that comes up a lot in our conversations – “gimmicky”. Rankin is, by his own admission, a traditionalist and has baulked at the changes in the whisky industry over the past 47 years.    “In my mind, a gimmicky type thing that lets you say we were the first in the world to do x only lasts a day and then it’s old news,” he says. “So everything we do falls within traditional methods – but pushing the boundaries a wee bit in terms of the styles of whisky.”  After spending a number of hours with Rankin, you can tell he’s not the type to mince his words – his standards are exacting, and he’s been around the block enough times to know when he’s being sold a pony. For these reasons, and many more, he’s unafraid to tell Brosseau – who he on occasion butts heads with – and Society members what he thinks.      It’s this straight-talking, mixed with an unwavering sense of tradition, that has stood him in such good stead throughout his career. Relationships formed over the past four decades have been vital to getting Ardross off the ground and saved his bacon – and the whisky producers he’s worked for – countless times.   “I always made it my policy to not sit on the end of the phone negotiating prices or volumes never having met the person that’s at the other end,” he tells me. “I’ve made it a policy that we’d go and visit all the major suppliers. We’d have dinner with them. We’d get to know them.”  When Rankin first started visiting Kentucky – a place he has a real fondness for and has undoubtedly influenced elements of the Ardross build – the state was just coming back from a real depression. He got to know a lot of people in the cooperages and distilleries, and many of these relationships last to this day. You sense it is this longevity and being around throughout hardship that has fortified these ties. The same is likely true of Japan. Enviably, Rankin has a relationship with one of the oldest independent cooperages in Japan, from whom he sources a steady amount of the mystical Mizunara cask – something many producers would give their right arm for. As quite a coup, Ardross filled some of its first runs of new-make spirit into Mizunara in 2020.   Rankin is too humble to go into detail but he does say these relationships have proven useful over the years. “If barley is in short supply, which it was not that many years ago,” he says, “because of our relationship, we would always get priority. If casks were in short supply, we’d always get the priority.”   Sadly, this way of working is something Rankin sees diminishing in most industries. “Everything is done via Zoom and telephone and internet now,” he bemoans. “Having listened to some of COP26, the environmentalists will say that’s a good thing, you’re not using air travel, but there has got to be a balance.”  Another change Rankin “isn’t keen on” is “the quest to get something different all the time”. “All the limited releases,” he says downcast. “The best limited release now is the standard edition because [producers] push everything else and don’t push the standard edition,” he only half jokes.  “Make no mistake, Barth and I have had a lot of serious heated discussions on various things like all the different wines and tequila [finishes]. It’s not traditional,” he says impassioned. “Why would we want to put a perfectly good product into a cask that’s had tequila maturing for six months?”   He pauses for what seems like an eternity, and I’m unsure if he wants an answer, before he, mercifully, continues: “I ask the question and I’ll get the response that it’s what the modern market wants. To which I respond: ‘says who?’”  Throughout his career, Rankin says he’s always stuck to the more traditional casks, like Sherry and Port. But he’s quick to say that the market is a minefield, and you need to proceed with caution as producers are often offloading casks for a reason.   “Even Port is one that would be low down of my list of things to use,” he says. “Because historically, Port producers don’t generate a lot of casks. They only generate them when they are clearing a warehouse out. The casks will be sold to people in the whisky industry when there is absolutely no maturation left in them at all, so you’re achieving nothing by finishing in those types of casks.”   Rankin says the only chance you have of producing a decent whisky, or at the very least not ruining the good one you’ve got, is to deal with certain individuals who will give you a cask that’s not spent.   He tells me some horror stories from the Glasgow facility where he warehouses and oversees cask operations. “We see some of the casks come in, and we’ve gotta send it back. They’ll say the Sherry casks are new. They’re not. They are probably the oldest casks that have been lying in that bodega. I have to say to the client, ‘Trust me, you’ll lose half your whisky because it’s not good wood, it’s very porous-looking, the smell inside them is slightly sour and you can’t get rid of that. But, it’s your gamble’.” Unsurprisingly, they heed his advice and make another call pretty sharpish.   He adds: “You’ve just got to know what you’re looking for and be careful. Because you can ruin a perfectly good whisky.”   It’s rare to meet somebody with such candour in or out of the whisky industry. Marco Simonit has become something of a celebrity in the world of wine, but his specialisation – pruning – is not normally considered glamorous. Pruning is often low-paid work left to contract crews. But with his childhood friend Pierpaolo Sirch, he set up the Simonit&Sirch pruning consultancy that now has a team of 20 experts operating all over the wine world.  Partly this is because of the rise in grapevine trunk diseases, which are considered a major threat to viticulture. Simonit’s pruning methods are suddenly in high demand because they have the potential to vastly reduce the risk of trunk diseases. Now, in conjunction with FINE+RARE, he has made his first wines from old vines in Collio. The origins of Marco’s interest in the vine began with his background. "I lived with my grandparents because my father died and my mother worked," he says. "They had a small farm with cows, horses, sheep and goats, and also a small vineyard to make wine for the family’s consumption."  He says that it was a good environment to grow up in, surrounded by nature with a gentle pace of life. His real passion was animals, though – not vines – and he had set his heart on becoming a vet. But after studying agriculture at the local college in Cividale in Friuli, he had to take a job. He began working as the technical adviser for the Consorzio of the Collio DOC in 1988, a role he was to fulfill for a decade, offering guidance to growers on viticulture. "I loved the landscapes, and I loved to observe the trees, plants and hills," he recalls.  Then one day, he started drawing vines. "After work, I would go to the fields, and I drew the vines," says Simonit. "I drew the trunk and the arms and the canes and leaves, and I met the wounds. There were a lot of wounds. I started to think about what it must be like for the vine." Observing the pruning wounds and their effects on the old vines made a big impression on him. He asked a viticulturist if he could pull out an ailing old vine, and when he got permission, he approached one of his friends who was a carpenter. "I asked him if it would be possible to help me make a section through an old vine," Simonit recalls. "He said, this is a strange request. Why do you want to do this? I said I wanted to see inside."  So with the aid of the carpenter, Simonit cut the vine in half. "It wasn’t completely dead but it wasn’t in good health," he says. "It had an extraordinary impact on me: when I saw inside, a big part of the vine was destroyed. A small part of the wood was white (alive), but most of the inside of the trunk and the arm was brown and black, and with fungi. I was shocked." At that time no one in the schools and universities had sectioned vines to look at the consequences of pruning. "I called my professors and I spoke about this, and the professors said, Marco, since the beginning people have always approached pruning the vines in same way, so why are you going crazy taking the trunk and making sections to see what is happening inside? Just do a normal pruning like everyone has always done." None of the professors he spoke to were interested in his ideas. But he decided to carry on.  His growing obsession with old vines led him to start travelling, initially around Italy, and then further afield. He saw a similar pattern everywhere. "In these years the viticulture was changing," he says. "A lot of local training systems, such as pergola in Trentino, tendone in Abruzzo and albarello in Sicilia, were being transformed."  People were turning to more ‘modern’ ways of training vines, such as vertical shoot positioning (VSP), and then after 20 years these new vineyards were starting to lose vines to trunk disease. "The spacing for growing the vines wasn’t enough," he says. "In its natural state, the vine is a creeper, a liana. For sure, it is not easy for the vine to remain in the same position for a lot of time, with domesticated demands, without consequences for its health and longevity." He came back to Collio. "I asked some viticulturists if it would be possible for me to try to change the approach of the pruning in modern vineyards. I wanted to change the approach to pruning because the consequences were terrible. The response was they said they didn’t really understand what I wanted to do, but they let me try. In the beginning of 1990 I started to introduce a new technical approach to pruning and shoot thinning by myself in different places in Friuli." Simonit didn’t have a program, and at the time hadn’t heard of Guyot-Poussard pruning, which is an old system that’s somewhat similar to the technique he developed himself. Over a ten-year period he tried to find new solutions, observing old vines and applying different approaches. After this period of experimentation, he thought he had something worthwhile, and he began to approach professors and viticulturists, only to meet with disinterest. Attilio Scienza, professor of viticulture at Milan University, was the exception, though. "Scienza said to me, it is interesting what you do," he recalls.   "Scienza was impressed with my work and started to speak about it with important producers in Italy, such as Bellavista and Ferrari," says Simonit. "And in Schiopetto we built our campus, our laboratory. In Schiopetto today it is possible to see and touch the last 30 years of my work." This was the early 2000s, and although Simonit was starting to get his first consulting gigs, he wasn’t sure that pruning was going to be his professional future.  "But I thought: I believe in this. I had a passion for vines and wanted to help reduce the risks from bad pruning. And I thought, maybe the top wineries in Italy might be interested in my new approach for pruning and shoot thinning. I tried to call these guys and show them what I was doing in the campus of Schiopetto. One day I was in my car, and I looked up Angelo Gaja’s number. I thought this guy might be interested because the wines are expensive and high quality. Maybe he would be interested to keep his heritage vines." "I called and asked the secretary whether I could speak with Angelo." He was stunned to be put through to him. "I told him that I’d worked in a lot of vineyards over the last five years to find a new solution for pruning and shoot thinning, and I asked him if he was interested in coming to Friuli to see it in action.  He said yes, and two weeks later he came along with his entire team from Piemonte and Tuscany to Friuli. They were really impressed, and a few weeks later I had contracts with Angelo Gaja, Ferrari and Bellavista." This was in 2003, and Simonit finally began to see that this was going to be his future. He took his approach all over Italy, working with some of the top estates, including Frescobaldi, Planeta, Tasca d’Almerita, Feudo di San Gregorio and Ornellaia.  What is different about the Simonit approach?  There is no recipe because vineyards, regions and training systems are all different. But there are two main principles. The first is that the sap flow of the vine has to be respected, and pruning cuts are made with this in mind. The second is what Simonit describes as ‘ramification’. "One of the big principles for respecting vines is independent of the training system you use, or the variety," he says.  "It is ramification. You first build the trunk (the first structure), then the arms (the second structure). It is like a chronology. You need to build a chronology of wood." He points out that the vine is naturally a creeper, and that pruning should respect this as much as possible. "Our principle rule is ramification. Build a chronology of live wood: first floor, second floor, third floor and so on."  So, for example, with a double Guyot, the canes chosen on each side of the vine should be furthest from the head each time, with the replacement spur the outside cane, and the cuts should always be made on the upper branch. When a cut is made, it should be of young wood only – one or two years old. And the cut should not be made flush to the trunk, because there is always what is called a ‘cone of dessication’, roughly equal to one-and-a-half times the diameter of the cut, where the wood left dies back. This can interfere with the sap flow and make the vine susceptible to trunk disease.  But respecting the sap flow isn’t always key. "Not all the varieties suffer if you don’t respect the sap flow," says Simonit. "Some varieties are very sensitive, like Sauvignon Blanc, Cabernet Sauvignon, Cabernet Franc and Sangiovese. Others don’t suffer a lot. For example, Nebbiolo and Semillon. I work for Château d’Yquem. They called me because the Sauvignon Blanc is being destroyed by trunk disease after 20 years. The Semillon is not: it has super energy and lives a long time, because the genetics are different." "But always respect the ramification. If you think about the albarello in Primitivo in Puglia, they grow up vertically. The arms of the Primitivo grow up vertically. It isn’t possible to respect the sap flow. For other examples of alberello training with different varieties, such as Moscato d’Alexandria, to follow the sap flow is necessary. We need to find solutions for each variety in each terroir: it’s not always possible to take the same approach." Bordeaux came calling A big moment for Simonit was when he was contacted by the late Denis Dubourdieu in 2011. "Denis called me from Bordeaux, because with the Guyot Médocaine, after years and years, there wasn’t enough space for the canes. They wanted to know what to do." If canes are taken from the outside each time, after a while the vines grow out along the row, and when the planting is close, they run out of space.  In Bordeaux, their solution was to take a shoot from inside, close to the head, and then lay that down after cutting the old arm off. Often, this would result in fatal trunk disease. "They destroyed a lot of vines this way, trying to regain the space and reduce the risk of congestion of canes overlapping," says Simonit. "This was a disaster for the Médoc and all the double Guyots in the world, because the big wounds destroyed the vines." "We started with a new approach in the Médoc, introducing the spur in the sap flow, building the chronology, preparing new exits for two or three years in the way of the sap flow, and then cutting the big arm, far away from the position of the new spur. This is one of the smart solutions when you have lost a lot of spacing. But this problem is particularly present when the distance between the vines was not enough in the first place when they were planted." Simonit now has many prestigious clients in Bordeaux. The dangers of high-density planting High-density planting is very popular these days, but it is causing problems because the vines are planted too close to allow for sustainable pruning approaches. "The risk is that if you don’t have the idea of the vine architecture at the beginning for the next 50 or 60 years, it becomes a problem. I see this problem all over the world, not only in the double Guyot, but also in Bourgogne and Champagne and Provence: everywhere. The big problem is people and space: people are scared to leave space for vines. Then to create space they use pruning, and it is a disaster." "In the past in Bordeaux, particularly in the Médoc, the Cabernet Sauvignon was planted further apart. Now we find Cabernet Sauvignon vines planted 80cm apart. We need to think about this for the future sustainability of vines and vineyards. We need to speak about the space. If we build vineyards for the next generation we need to think about the spacing." One idea that Simonit has adopted from Dubourdieu was ‘curetage’. Dubourdieu gifted Simonit with a book: this was René Lafon’s 1921 title Modifications à apporter à la taille de la vigne des Charentes, taille Guyot-Poussart mixte et double: l'apoplexie, traitement préventif (méthode Poussard), traitement curative.  This book described the experiments on pruning carried out by Eugène Poussard, a viticulturist in the Charentes area. Poussard is responsible for the vine pruning system called ‘Guyot Poussard’, which is very similar to Simonit’s system. But he also treated affected vines using ‘curetage’, cutting away affected wood. "More than 150 years ago this man was trying to do some surgery on the vines with rudimentary tools," says Simonit. "Denis asked me to go to Sancerre, because he knew that a lot of older viticulturists had used small chainsaws to open the vines and clean the wood affected by fungi, and the vines survived." They headed to the Loire and visited different vineyards. Sancerre has been particularly badly hit because Sauvignon Blanc is very susceptible. "We shared experiences with François Dal [another pruning expert who works for Sicavac, the regional technical body], and he was also interested in working with chainsaws. We tried doing this surgery in the wineries of Denis Dubourdieu, like Château Reynon, Doisy-Daëne and Floridène. In 2014 we began teaching others how to do this." As soon as the first foliar symptoms are seen, then any soft wood that has been infected by the fungi is cut out of the trunk. The infected wood produces toxins, and once it is taken out, the vine usually recovers.   FINE+RARE x Simonit&Sirch Now, for the first time, Simonit has begun making wine from old vines, in conjunction with FINE+RARE. "On my trips and jobs around the world, I met a lot of old vines, and sometimes these vines are not vinified separately," he says. Making small parcels of wine appeals to him. "It is a ways of speaking to people about the importance of old vines for increasing the identity of wines, speaking about vineyard sustainability, and thinking about the relation between humans and vines." He adds, "I wanted to make wines that speak about this philosophy." "Patrick O’Connor [of FINE+RARE] and I share a mutual friend, and he knew about my idea," says Simonit. "One day Patrick called me to ask me if it’s possible to organise a meeting because he was interested in this old vines project. He was very excited about the idea, and he proposed starting this project in Friuli, where my heart is." "He asked me which varieties were most interesting for me. I chose Sauvignon because I love it, and it is very difficult to have old vine Sauvignon because of trunk disease. Many of the vineyards have vines of different ages, because after 25 years the original vines often begin dying, and people co-plant with new vines. Then they make wine with all the vines – young and old – together. Also, I chose Chardonnay: in Colli Orientali we have the oldest Chardonnay in Friuli, 80 years old. And after I chose Friulano, which is 50 years old." Winemaking is in the hands of Christian Patat, an old friend of Simonit’s. "Twenty years ago we started with a small project but it stopped because we were both so busy. So when FINE+RARE and I began working, I spoke to Christian seeing if he could make the wines. He married the owner of Ronco de Gnemiz, and he makes the wines there. This guy has an approach to wine that’s close to mine – we like the same sort of wines. Our goal was to make two or three barrels of each variety." This is Marco’s first wine project. "I have never thought about making wine before. Now I’d like to expand this project to other Italian regions, and also other countries, with a small production focusing only on old vines." "It is a unique approach because we try to vinify with just the oldest vines. In the Chardonnay project, for example, we don’t use all the vines. Part of the vineyard is 80 years old. We pick only the grapes from the original old vines to make this wine from. These wines speak about the relationship between humans and vines, sustainability, the importance of the age of the vine, the importance of terroir." Tasting notes The wines are called L’Età Più Bella (With Age Comes Beauty), and will be released as a mixed case of three separate cuvées – a Chardonnay, a Friuliano and a Sauvignon Blanc. L’Età Più Bella Sauvignon 2018 - Collio, Italy "13% alcohol. Lean, taut and chiselled, this is a bright lemony Sauvignon with good acidity and some fine herbal hints. It’s quite compact and mineral with precision and focus, finishing quite taut. Stylish stuff." L’Età Più Bella Friulano 2018 - Friuli Colli Orientali, Italy "14% alcohol. There’s good density here with taut pear, apple and lemon fruit, as well as a touch of richness on the mid-palate. This has a lovely focus, combining some richer notes with good acidity and a long, mineral, subtly nutty finish. Beguiling and elegant. " L’Età Più Bella Chardonnay 2018 - Friuli Colli Orientali, Italy "13% alcohol. Hazelnut, spice, honey and citrus on the nose. The palate has fresh fruit with an appealing cedary, woody, spicy undercurrent. Citrus, pear and white peach, with a warm spicy finish. Lovely intensity here, with good fruit purity."
