Noel Verset is a true wine legend of Cornas. In fact, the fine wine region might not even have existed today were it not for his resilience and that of his compatriots Auguste Clape and Rene Balthazar.  Today, Cornas is widely recognised as one of the world's greatest sites for Syrah production and although the history of winemaking in this village dates back over a thousand years, just 50 years ago it was largely a forgotten backwater of the Rhone Valley. Even up until the 1990s Cornas' top producers did not share the gravitas of the more established nearby villages of Côte-Rôtie and Hermitage. But it is now common for Noel Verset’s wines to out-price top  Côte-Rôtie and Hermitage due to its rarity and historical importance. Like much of Europe’s viticultural regions, Cornas was left devastated by the Phylloxera outbreak in the late 1800s. The onset of World War I, The Great Depression and World War II only further damaged the region. Production levels were in continual decline and many vineyards were left abandoned. Despite its dwindling production, however, Cornas was awarded its appellation status in 1938. Noel Verset and his vigneron father witnessed much of this downfall. Born in Cornas (in 1919)  Verset was working with his father in the vineyards by the age of 12. Despite the region being on its knees at this time, Noel and his father continued to manage vines on the steepest, most difficult and low-yielding granite sites, which they knew produced the finest wines in the region.  In 1943, after marrying his wife Aline Balthazar (sister of Rene Balthazar, another godfather of Cornas), Noel stopped working with his father and set up his own business. Five years later, Noel Verset purchased Domaine del Sabarotte, a 1.3-hectare vineyard,  from Cornas négociant Delaygue. Verset continued to secure arguably the finest plots in the Cornas appellation, including the lieu-dits of Chaillots, Champelrose and Reynard which are all very steep granite sites. The industrialisation boom in the 1950s further depopulated the region making it a largely forgotten site for wine production. According to John Livingstone Learmonth’s book on Northern Rhone, Cornas remained in a time warp right through the 1970s. From 1968 to 1976 Verset, now in his mid-fifties, was forced to take on a second job in the town of Valence,
unpacking parcels from railway wagons, working evening shifts whilst managing his vineyards during the day.   However, the northern Rhône's star was starting to rise, as wine collectors from around the world started to look beyond Bordeaux and Burgundy. Neighbouring Hermitage and Côte Rôtie were starting to enjoy fame and although Cornas was playing catch up, quality improvements were taking place as growers started to bottle their own wine.  It was slow progress. Auguste Clape was the first to bottle his Cornas in 1955 and by the 1980s only 20 of the 60 growers, including Verset, had followed suit. However, the greatness of these low-yielding, estate-bottled expressions needed time to show its potential. Verset and Clape's benchmark style for Cornas was fiercely traditional, rugged Syrah, built for bottle maturation.   Cornas was brought back from the brink by the tireless efforts of Noel Verset, Auguste Clape and Rene Balthazar. Between the 1970s and 2005, the appellation had doubled in size to more than 100 hectares and there was growing demand for its vertiginous sites. In 2001, and nearing retirement at 82 years of age, the sale of his original Sabarotte vineyard to Auguste Clape and Laurent Courbis yielded four times more than it had been valued at just six years earlier. Finally, the vineyards of Cornas and Verset's wines had gained the recognition they deserved.  
In 2015, Verset passed away, aged 95, but his legend lives on in his wines, which often fetch prices exceeding the very best Côte Rôtie and Hermitage bottlings.  A number of the most prized 21st-century Cornas wines hail from the plots Verset nursed over eight decades. Thierry Allemand bought his Reynard vineyard and would go on to become the darling of the new generation of Cornas while his nephew Franck Balthazar took over the Chaillots vineyard in 2006 and has become a highly respected Cornas producer in his own right. The current custodians of these have inherited the Cornas earth and they have Verset to thank for it. Noel Verset also used to sell two barrels of wine to respected négociant Tardieu Laurent who were producing their top Cornas Vieilles Vignes cuvee made from Verset’s wine blended with another Cornas legend Robert Michel’s wine. On discovering the connection we couldn’t believe our luck when we were able to source the cuvee from the widely respected 1999 vintage retailing at under £40 a bottle. If you can even find a Verset bottle from this period it is retailing at well over £400 a bottle. Of course, it is not the same thing, but the interwoven web of wine production can sometimes lead you to some pretty magical discoveries. Whilst the odd case of Noel Verset’s Cornas comes up on the market every now and then, you might have more luck sourcing the Tardieu Laurent Cornas Vieilles Vignes which he contributed to, up until the 2006 vintage. It is hard to write the history of the future, but I hope that I am on safe ground when I say that the global pandemic of 2020 will be the defining event of the early 21st century. I say ‘hope’ because God help the human race if there is anything more defining waiting around the corner. By saying as much, I do not in any way diminish the other spectres that have haunted the dawning decades of the third millennium: among them mankind’s age-old companions, intolerance, religious fundamentalism and greed. Nevertheless, the pandemic has humbled humanity in a new and special way, combining our oldest foe, disease, with swift, easy, international travel – until recently one of the most central aspects of our technical and cultural advancement. Death and destruction, like everything else in life, are neither evenly nor democratically apportioned. Nevertheless, there can be few, if any, people on the planet whose lives have been untouched. Maybe there is a tribe of rainforest-dwelling Pygmies, cut off from what we hubristically call civilisation and which continues to exist in a state of prelapsarian Stone-Age ignorance. But the rest of us have been simultaneously confronted by our mortality, the fragility of our lives and, in many cases, the vacuity of our dreams. We reacted in different ways, retreating into what we found comforting. Some (yes, you, David Geffen) used social media to let the world know that they were safe on their yachts. Others explored the restorative powers of one of the most fundamental and symbolically domestic of rituals: baking bread. My own reaction was somewhere between these two poles. Within just a few days of the pandemic being declared in the UK, I had taken to the virtual airwaves with films – exquisitely directed by my younger son – of me smoking cigars with my elder son and dilating on the joys of the fragrant blue smoke of Havana cigars. Trivial perhaps, superfluous almost definitely, but to me immensely significant. It is hard to express the emotional impact of this activity without resorting to cliché, but then clichés tend to be clichés because there is an element of truth in them. And while the term ‘intergenerational male bonding’ is an arid form of words that traduces the emotional value of the experience, it also begins to explain its worth. But more than just finding a new way of communicating with my children, I like to feel that I am passing on something from which they can derive satisfaction; I was first inculcated into the world of the cigar by my stepfather-in-law – who splendidly encapsulated the appeal as being “the feeling of well-being” derived from learning how to wield this refined instrument of pleasure. Pleasure and well-being are the inspirations of these broadcasts (as I rather self-consciously, antediluvially, call them), and to my surprise they established a moderate but relatively enthusiastic following. Given that I am old enough to have children in their 20s, I am also old enough to regard the idea of using a telephone to make a home movie that has no actual physical presence, and that can be viewed via another intangible medium, as being pretty close to witchcraft. I find it remarkable that as many as 15,000 people – most of whom I have never met, living I know not where – tuned in to watch two men in slightly extravagant clothes (we wore safari suits, cowboy outfits, boating blazers, dinner jackets, business suits and tweeds) set fire to tubes of tobacco and try and convey a sense of the flavours they were tasting. But more than a degustatory sensation to be relayed, it was, in its way, an act of cultural transmission that in its essence is not very different to the role of say, indigent troubadours that wandered the courts of 12th and 13th century Provence, or the griots of the Mali empire of the 14th century, telling stories of noble exploits of the past. As we sat amongst its fragrant swirling wisps and gossamer tendrils; the sacred smoke of the cigar would unlock the past and liberate fragments of memory from wherever it is that memories are imprisoned and presumed forgotten. As we shared the flavour and the experience, recollections of my visits to Havana over the last quarter-century would be summoned unbidden – oxymoronic though that may sound. I remembered names of rollers, long conversations with factory directors and days spent in the fields of the plantations. I recalled meeting an ancient torcedor who had started work as a child and he remembered rolling cigars for Winston Churchill. I was reminded of a long afternoon spent on the terrace of the simple home of the late Alejandro Robaina, the Cuban tobacco farmer, whose time-furrowed face would give the pachydermic features of W.H. Auden stiff competition. He sat in his rocking chair and retrieved his own memories of how the climate had changed over the course of a generation, and of the taste of his first cigar, enjoyed before the age of 10 during the 1920s. However imperfectly, I was able to transmit these memories to my children in a setting and an atmosphere that made those memories theirs too. It is the associative power of the cigar to stimulate memory that raises it beyond the mere intake of nicotine, and instead elevates it to the level of a cultural activity. Proust had his madeleine and I have my cigar. I pick the cigar because it has been a personal comfort during a difficult time, but the same can be said to be true of any skill-laden and ritual-rich activity that is passed from generation to generation. I enjoy traditionally made clothes and I find the idea appealing that many hands contribute to the making of a single garment. It may be better-made than its ready-to-wear counterpart, it is likely to last longer and fit better – but these are only the tangible aspects. At the risk of sounding pretentious, there is what one might call a spiritual element to having clothes made. There is something uniquely appealing about clothes that have been made only for you and it is an appeal to which I succumbed almost 40 years ago. I first got into having clothes made for me long before I could afford it, when, as an undergraduate at Oxford, I fell under the spell of a charming old tailor called Stamp, Mr Stamp to his friends. He was a fabulous old boy with a shop on Broad Street, or The Broad as I believe we were encouraged to call it at the time, just down from Castell where he had started as an apprentice half a century earlier during the 1930s. He made me a pair of trousers, a blazer and few other items including several remarkable waistcoats. One of the best moments came when I took in a 50-year-old, double-breasted waistcoat for him to copy. He looked at it, examined a label sewn into the underside of the backstrap, peered at the stitching around the buttonholes, and then told me that the garment had been made for a well-known Spitfire test pilot, gave me the price of the fabric per yard in 1936 and – most impressive of all – informed me of the name of the man who had stitched the buttonholes.  My first shoemaker Eric Cook also beguiled me when he took a look at a pair of Lobb correspondent shoes, turned them over and was able to identify the man who had finished them because of the slightly elliptical curvature of the heel and the spacing of the nails.  For me, such knowledge is just as impressive as that of the connoisseur who can identify a long-lost masterpiece by examining the brushstrokes and the state of the canvas or wooden panel on which the paint was laid. But, unlike the admiration of an acknowledged masterpiece by a globally renowned artistic genius, the quality of such pleasures is more personal and, arguably, more meaningful. It was Franz Liszt who said, “A good Cuban cigar closes the door to the vulgarities of life,” but the same is true of the contemplation of a well-sewn buttonhole, or the anglage of a well-finished watch movement. Such pleasures may be only fleetingly experienced, but I would argue they are all the more precious for their intimacy: watches and clothes are worn on the body, the cigar is consumed – becoming in some way part of the body and stimulating the mind. These are things that ornament life, that raise the quotidian to the memorable and that transcend the disagreeable nature of too much of life today. I suppose that this is what is meant by ‘luxury’. I had been hoping to get to Paris to catch an exhibition, at the Musée des Arts Décoratifs, devoted to the controversial subject of luxury, mounted under the aegis of my friend Pierre-Alexis Dumas, creative director of Hermès, who understands the field better than most. “While the luxury object resists definition by any single concept, drawing instead on shifting, eclectic visions, we might nonetheless agree that it possesses one distinctive characteristic above all others,” he told me. It is, he believes, “an object we keep, respect and cherish, one that archaeological discoveries across the globe reveal as speaking timelessly to us, its human power undimmed, resonant with distant emotions. Today, at a time when luxury seems to hold omnipresent status, in the media and in social networks, it is perhaps pertinent to recall that the luxury object is precisely one that is preserved and passed on – a magnificent, enduring conduit of culture and knowledge, bearing witness to human ingenuity.” The overuse of the word ‘luxury’ has led to its trivialisation, but there is a sense in which the pandemic has helped me transmit to my children something of my view of its true meaning. In a world of ever abbreviated communication, the chance to spend time in contemplation of what I love with those I love has been a gift – and the suspension of the ceaseless restless turmoil that we regard as normality, has shorn many so-called luxury items of their status-conferring function, allowing us to see them for what they are, to winnow the impostor from the authentic. I hope that I have conveyed, however clumsily, what it is that I appreciate, and uncovered something of the culture and values that make them important to me. My sons are fascinating people, their company is genuinely instructive for me, I see things anew through their eyes and this in turn has added further richness to life’s pleasures: not just appreciating the intrinsic qualities of, say a cigar or a suit, but in enhancing that appreciation by seeing it reflected in my children. It is a powerful combination of culture, emotion and enjoyment. Whether a vessel of personal memory, a conduit for the great values of humanity, or a bulwark against the deadening combination of fear and tedium of recent months: the superfluous, to misquote Voltaire ever so slightly, has seldom been so necessary. The growing season in 2019, as is becoming the norm these days, started with a warm February and March, leading to an early budbreak at the beginning of April. An early budbreak leads to a nail-biting spring for the vignerons, where the window for frost damage is only extended. Fortunately, there were only a couple of occasions where temperatures dropped to dangerous levels, with most Chablis producers today well equipped either with smudge pots, electrical heating wires or water sprays to offset the frost damage.  At Long-Depaquit they lost just 5%, which was not a concern. Samuel Billaud notes that the frost was much more dangerous on the lower slopes of Chablis where damage was higher than the 1er Cru and Grand Cru sites which were largely undamaged. For Olivier Bailly, winemaker at Domaine Billaud Simon, it was not simply the direct damage of the frosts (particularly on the night of 14th April) but the resultant stress on the vine following the outbreak that saw yields further affected. However, the real issue in regard to yields, came down to flowering rather than frost, with a windy, rainy, wet period during May which meant yields were notably affected. This period led to a lot of heterogeneity in the bunches and also noticeable millerandage (which results in very small berries): this does not affect quality but markedly lowers yield. Unlike 2018, therefore, 2019 is a low-crop vintage with producers’ yields ranging from 20 to 40% below normal. Despite the poor flowering, the rest of the growing season was straightforward, with very little rain and plenty of sunshine, which meant excellent sanitary conditions in the vineyard with no rot at all and very little sorting required at picking. There were two short heatwaves, one at the end of June and another at the end of July, which did cause sunburn damage to exposed grapes but other than that, no sorting was required. Regarding temperatures and rainfall, it was similar to 2018 with average rainfalls down 50% on average. Temperatures were also a full 2.2 degrees above average during the growing season, which is quite extraordinary. When comparing the similar effects of drought and sunshine in the 2018 vintage, vignerons talked about how the high yields helped dilute the intensity of the sun. With half the crop, how did the grapes survive in 2019? Was this to be a low-acid vintage with abnormal tropical fruit tones like 2015 or 2003? Matthieu Mangenot, winemaker at Domaine Long-Depaquit, describes how something quite unusual happened. In the later part of the growing season, the grapes concentrated – with water in the berries evaporating from the skins. This increased sugar levels and therefore alcohol (typically to 13.4 to 13.8%, which is high for Chablis, but it concentrated the acid levels too. Despite the drought and heat, the acid levels sit close to great vintages such as 2008, 2014 and 2018, with a pH of 3.25 to 3.3 after malolactic fermentation. Olivier Bailly at Domaine Billaud Simon had even higher acidity levels (between 3.10 - 3.25 pH), stating, “It is the magic of Chablis to find Chardonnay retaining such acidity, despite the warm weather”.  The result is, as Mangenot told us, “undoubtedly a ripe, concentrated, powerful vintage, but with a freshness too, at the same time retaining real Chablis mineral typicity. It is a hot, warm vintage but it does not really behave like that in the glass.” The fruit ripeness is similar to ’15 – but there are no excess aromatics of over-ripeness or yellowness in the wine that is typical of the low-acid vintages like ’05 and ’06. The acid profile is much more like ’17, and very much still retaining a sense of place, avoiding the tropical fruit aromas of 2015. Samuel Billaud describes 2019 as “highly concentrated Chablis with sun-kissed aromatics – it is concentrated, with balanced structure and excellent minerality. It is a ‘gourmand’ [moreish] vintage, yet with tense, structural minerality.”  Our own impressions is there is no doubt a concentration and aromatic pungency to the wines, yet the nose retains the Chablis-esque chalky minerality and savoury dried-straw tone, as well as lifted floral aromatics. There is noticeable power, weight and warmth to the palate even on the Premiers Crus, with the top examples retaining mouth-watering acidity despite this opulence and concentration. They really have a wonderful combination of intensity and power, while retaining mineral typicity. Producers such as Samuel Billaud still has a majority of his 2019s undergoing élevage, with the Grands Crus left another six months in tank before being bottled. Despite them being babies the wines are already showing a lot of promise. Billaud compares his 2019s to the 2016s in terms of riper aromatics, but with much more concentration and minerality. It also has similarities to the 2017 vintage when it comes to structure and minerality, he says.  For Mangenot, the power and concentration allied with vibrant acidity and minerality makes this vintage hard to compare, “It doesn’t really taste like any other,” he says, “but for Chablis-lovers, it makes it a fascinating vintage to discover.” Read more Editorial

Chablis 2019: a first look at the vintage

After the stresses of 2020 – with severe drought, heat and widespread wildfires, the 2021 vintage provided much-needed relief for Napa’s wine producers. Not only was the growing season reassuringly uneventful, but the resulting wines are fantastic. Concentrated, pure with vibrant acidity, this is a vintage that sits alongside 2013, 2018 and 2019 – the best in recent years. “I’m very happy to move on from talking about 2020! It was stressful to go through and stressful to relive,” said Maya Dalla Valle, winemaker at the eponymous estate founded her parents. Most winemakers and vineyard managers held their breath as the 2021 season progressed, anxious about the potential return of hazardous wildfires that increasingly seem to be the new normal in Northern California, but the danger never materialised.   The most significant factor influencing the 2021 harvest was instead drought, which unfortunately entered a second year. Conditions were exceedingly dry – historically so, says Chris Phelps of Ad Vivum, who noted that it was one of the driest years he can remember. Napa’s Mediterranean climate dictates that nearly all precipitation falls during the months of October-March, and the rains generally begin in the weeks following the close of each harvest, but this didn’t happen in 2020. While early winter was quite cold, helping to push the vines into dormancy, but rain didn’t arrive until January, February and March 2021. With around seven inches measured in Oakville, this was significantly lower than normal and far less than the total amount needed to reinvigorate the roots and replenish the water table.  Access to water, either from precision irrigation, or the benefit of a location with good water supply, therefore, was critical to shoot growth and canopy development. Sleeping Lady Vineyard in southern Yountville – the fruit from which Ad Vivum is crafted – backs up against the Mayacamas Mountains that form the western edge of Napa Valley. Here, natural springs funnel moisture down to the vineyard. In other locations, such as the eastern hillsides of the valley, long sunlight hours and faster-draining soils presented a greater challenge. The solution at Dalla Valle was to begin irrigation much earlier than normal, and at a greater volume, in order to mimic the rainfall that didn’t happen naturally. Although 2021’s growing season was quite warm, it was cooler than 2020 and, importantly, there were very few heat waves – and those that did take place were mercifully short. The first of these spikes, where the daily temperature reached over 37˚ Celsius, occurred in mid-June, a point early enough in the growing season where its impact was negligible. The remainder of the summer was consistently warm, with little variation, up until late August and early September, when the valley saw two minor heat spikes. The diurnal swing that Napa is known for, with nights quickly cooling down after sunset, was also in full effect in 2021, helping to preserve the grapes’ natural acidity. Given the steady weather and lack of wildfire risk, winemakers had the luxury of time when deciding to pick. For most, harvest began in the first two weeks of September – slightly earlier than average, but not drastically so. The year’s dry conditions reduced yields, which was not surprising, though “sometimes harrowing” as Andy Erickson (of Favia, and star consultant winemaker) described. The resulting clusters were lighter than normal, comprised of small berries with thick skins. While Phelps reported that the yields at Ad Vivum were down by 15%, he emphasised the positives that have emerged from these small, compact clusters: “The colour is extraordinary, with higher than normal levels of anthocyanins due to the long, slow ripening.” Others reported an even more drastic reduction in yield – up to 30% in some locations – though variation depends on not just access to water, but also soil type and depth. Vine age can also help mitigate drought conditions. Lisa Togni of Philip Togni Vineyard, perched at nearly 2,000 feet at the top of Spring Mountain, said that her yields were more or less normal, something she credits to the 32-year average age of her vines, which, remarkably, have never been irrigated. She feels that her vines’ well-established roots are able to reach deeper and access more water than younger vines. The low yields also sparked some wineries to change course in the vineyard prior to harvest, in regard to both shoot thinning and dropping fruit. Opus One made the decision to halt their green harvest. This process – during which a certain number of clusters per vine are removed, lowers yield and increases the intensity of the remaining fruit while also eliminating any slightly under- or over-ripe clusters – was always standard for Opus One, as it is for many wineries in Napa. This decision to change course was an easy one to make in a year like 2021, winemaker Michael Silacci said, and he is thrilled with the results, describing “more of a range of ripeness, with more layers and texture, and more vineyard character” in the final wine.  In the winery, tannin management was crucial. With a reduced skin-to-juice ratio, it was important to handle the fruit gently. For Tony Biagi, winemaker at several Napa Valley wineries, including Hourglass, Amici, The Vineyardist and To Kalon Vineyard Co, the main puzzle was how to coax colour from the fruit, while avoiding over-extraction of the tannins. “We were meticulous in how we macerated; we shortened the window,” he explained. Biagi said that the firm tannins are reminiscent of 2013, though perhaps not quite as muscular, as the more stable weather of 2021 allowed “more time to buff the edges”. At Dalla Valle, the decision was made to leave the wines in barrel for an additional two months because they displayed so much power and concentration. Despite the smaller berries and low yields, the condition of the fruit was described as nearly perfect by everyone. Low disease pressure and the lack of heat spikes produced uniformly healthy, good-looking clusters. Silacci recalls perhaps the most worrying moment of the 2021 harvest at Opus One, when their optical sorter broke down just as the fruit began arriving at the winery. Fortunately, however, the quality of the fruit made a stressful moment less so: “If ever there was a vintage we didn’t need a sorter it was 2021!” Early impressions of the final wines are uniformly positive – glowing with praise, even – and not simply because the year was a welcome relief following the trials of 2020. As we found in our tastings, the wines offer concentration and intensity with real purity of fruit, all balanced by refreshing and somewhat surprising acidity – allowing them to age beautifully. Phelps noted that the 2021s remind him of 2016, 2018 and 2019, all vintages with “great concentration, tension and generosity”. For Biagi, the vintage instead portends a new direction for the region, while referencing other hallmark great vintages of the past. “For me, the 2021s are classically Napa Valley. They are not crazy ripe, and you get a sense of the new style Napa is moving towards, with both power and freshness,” he opined. Napa 2021: rich, fresh and a relief

Three of the five First Growths are situated in Pauillac. What is it that makes this appellation so special? As Chateau Lafite neighbours Saint-Estèphe does it share an affinity with both appellations?

We can only be very biased when making comments on the Pauillac appellation, having two Chateaux in the appellation (Chateau Lafite & Chateau Duhart Milon). We are Pauillac
lovers and defenders! It is deeply rooted. The capacity to combine density, complexity
and elegance is unique. The capacity to age the wines is remarkable, such is the potential to seduce wine lovers with captivating aromas. One phrase, not from us, that we feel symbolises Pauillac’s wine is “an iron fist in a velvet glove”. When it comes to Saint-Estèphe, we are also very biased as we have four hectares planted next door to Cos d’Estournel and Lafon-Rochet. Those four hectares produce remarkable Cabernet Sauvignon which goes into the Lafite Grand Vin nearly every year. It is part of the original estate of Chateau Lafite, which is one of the reasons why we have a specific authorisation to include it in our final blend. Ripeness, structure, capacity to seduce are really what makes our Saint-Estèphe grapes so special. In the past you have talked about how well the terroir of Lafite manages with warm vintages – why do you think that is?

The Lafite terroir is extraordinary, it is such a privilege for us to work on this very particular piece of land. The density and depth of gravel, the capacity to restrain water, the quality
of the vegetative material, the high proportion of Cabernet Sauvignon… all those elements combined are certainly part of the answer. Cabernet Sauvignon is a fascinating grape in that regard, the resistance and capacity of never becoming too extreme is very fortunate. But Lafite is not only one terroir. People think about the hill of Lafite of course, but we have Anseillan which is a very interesting territory to explore, we have Bel Air on the South West not far from Duhart-Milon which is a bit more arid, we have the Plateau des Carruades –  a playground for Grands Vins for a century, and we also have the Caillava in the Saint-Estèphe appellation which makes us a bit unique in that regards. Our fortune is to be able to play
with this diversity in the final blend, always challenging ourselves every year. Tell us more about the five defining terroirs of Chateau Lafite: Plateau de Lafite: Located just outside the Chateau from our cellar up to the hill of Lafite down south on one side, and up to the villages of Milon and Loubeyres going west on another side. This plateau, from the quaternary period is a mix of very deep Clayey gravel on top of the hill, sandy-gravel closer to the Chateau on the western part, and some parcels planted on aeolian sandy soil. All is mainly planted with old Cabernet Sauvignon. This is the backbone of Lafite Grand Vin nearly every year. It gives fruit elegance, texture, and exceptional density. The magical playground for us. Plateau des Carruades:  The iconic and historic terroir des Carruades nestled between the south of Duhart-Milon and Mouton, is one of the most extraordinary pieces of deep clayey gravel soil from the
quaternary period. This plateau is planted with great Cabernet Sauvignon but also with the best Merlot of Lafite. It is today a terroir of experimentation for us where we conduct most of our biodynamical analysis. As for the Plateau de Lafite, it is a core component of our Grand Vin blend nearly every year bringing structure. Le Caillava: Le Caillava is unique and is one of the reasons why we believe Lafite has something special. Le Caillava is located in Saint-Estèphe between Cos d’Estournel and Lafon-Rochet. A wonderful terroir of deep clayey-gravel soil from the Quaternary period. Planted in 1927, Cabernet Sauvignon on this terroir gives spicy, ripe and structured grapes entering every year in the final blend of Lafite Grand Vin. Bel Air, Passe-Temps, Berret:  Our most southern and arid terroir is located south of Duhart-Milon vineyards, next door to our cooperage. Most of the terroir is gravel soil from the quaternary period, with some
blocks mixed with more sandy soil. Grapes from those two terroirs are very expressive, generous, and sometimes more hard than other plateau, but always useful in blends. Our plot of Cabernet Franc is also planted in this part. 
Anseillan:  Located on the eastern side of the estate, the closest to the riverside, on the other side of the road from Pauillac to Saint-Estèphe. Some terroir of clayey gravel soil on top of Anseillan
surrounding the village. On the lower part of Anseillan down the road and up north closer to the Saint-Estèphe border the terroir is alluvial-clay-limestone from the tertiary period. It is relatively evenly planted in Cab Sauv and Merlot, and with our parcel of Petit Verdot. It is a new terroir of exploration for Carruades that looks very promising. An even more precise “laser-cut approach” towards parcel management enabling us to pick lovely grapes bringing us joy and confidence for the future of this terroir that we better master. 
Making a wine for such a historical estate, do you feel the pressure to maintain the status quo? Making wine and working in such a historical estate is a privilege, first of all. And because it is such a privilege, we have a moral duty of not maintaining status quo and always challenging ourselves. What can we do better? How is Bordeaux evolving? What is
driving wine lovers’ appetites today?...  Great companies and chateaux are led with an entrepreneurial spirit. We work for the long term, to prepare the estates for the next generation, the decisions we take when it comes to
investment or vineyard management are really long-term. This is strongly rooted in values of Lafite and the Rothschild family. 
How do you balance this with your own desires as a winemaker to make an impression on the wine? It’s a very good question! It was a little bit difficult at the beginning for a young agronomist/oenologist arriving at Lafite. At this age, you always think that you will be able to start the revolution and change everything and have a huge effect on the wine. But, rapidly, you understand that Lafite is not yours and belongs to the family of course, but also to the World, to the great clients, and to the history. Thus, when that is understood, your action is only focused on increasing the quality step by step, but with respect to all those who are waiting for Lafite. 
With the 2019 vintage what do you feel are the most important elements behind the vintage? 
The vintage started beautifully with a dry and mild winter. Fine weather continued in early spring with an early vegetative cycle. Cold came between March and May and we crossed our fingers/held our breath 6 times fearing that frost might hit us badly. Careful vigilance from the team was key, so was the use of candles. The first flowers appeared in Pauillac around 28th May. This flower was unfortunately capricious due to important rains arriving during the second part of flowering, leading to small amount of “coulure” and “millerandage”. Early summer was the warmest recorded since 2003, fortunately relatively short, and the vineyards showed beautiful resistance. Rain miraculously arrived on 26th July with 45mm in Pauillac  – ideal for “veraison” to start. August was then fine, with average temperatures and some rain. Early September was dry, enabling us to start the harvest on 19th September in Pauillac, 13th September at L’Evangile and 8th October in Rieussec. As always at Lafite we follow our philosophy and DNA of wine with freshness, tension and beautiful ageing capability. We have a viticulturist approach to winemaking, 80% of a great wine comes from the quality of the fruit and the investment we put in the vineyards. What have been some positive surprises of the vintage? This year we had lovely surprises from “outsider vineyards” producing pure and elegant wines that have been replacing some typical vineyards in the final blend – as always testing is key, such as the capacity to always question ourselves. This is particularly true for the Merlots planted on more gravely-clay terroirs showing beautiful tension this year. For Carruades (the second wine of Chateau Lafite), the very important work done over the last year of precision and exploration of our Anseillan terroir is really paying off. The Merlots of Anseillan and our Cabernet Franc are giving a lovely density and elegance to the pure Lafite DNA. Overall for Lafite, this is a vintage that we call “modern-classic”. In the pure Lafite style, very Cabernet led, very pure, very precise, with some ripeness. This is reflected in the final blends that is 94% Cabernet Sauvignon, 5% Merlot, 1% Petit Verdot for Chateau Lafite Grand Vin, and 68% Cabernet Sauvignon, 27% Merlot, 5% Cabernet Franc for Carruades. Our gut feel is that just as there will always be a discussion between 2009 and 2010, we will have the same between 2018 and 2019. 2018 being closer to 2009, and 2019 being closer to 2010. What are the most important factors in regard to Chateau Lafite’s winemaking philosophy? 
When it comes to winemaking, we have a very traditional and, we could say, “hands-off” approach to preserve the quality of the fruit and reflect the vintage conditions. As an example, we always use a high proportion of press wine as we don’t go for “maceration pre-fermentaire à froid” or even “maceration post-fermentaire à chaud”. We don’t do “delestage”, we have always been very gentle on vinification at Lafite.  We don’t push on the dregs/marc - we are always very soft and traditional. This explains why we then have super high quality press wine that we can include in the final blend, this year up to 15% of the blend comes from the press wine! Normally this is closer to 10-12%. 
Have you made any changes at Lafite due to global warming? We are already very well equipped at Lafite in the context of global warning. The extraordinary terroir we mentioned previously, our strong Carbernet Sauvignon planting, the quality of vegetative materials are strong assets.  Nevertheless, we try to anticipate these changes. We have an internal research and development team running some tests with different plantings, with grass development (enherbement) in vineyards, with canopy management.  We are not sure that the future will be the introduction of new grape varietals, given the Cabernet Sauvignon is already a very resistant grape. The topic of density of plantation is more important, and we are working on a slow decreasing of it. The main change in Bordeaux is the succession of extraordinary vintages. In the past, once every 5 years we had a great vintage and every 10 years an exceptional vintage. Now nearly every year the vintage conditions are such that we can produce very good wines.  How we can sustain beautiful vintages year on year in the markets is one of the big questions for the future. But it is a great challenge to have – we prefer to have amazing wine every year, it will always be drunk at some point! It is our duty as owners and producers to create the moment for wine lovers to open our bottles. Something that Bordeaux Chateaux have not been particularly active on in the past. 
How do you feel Bordeaux’s reputation has changed in the world of fine wine in the last 20 years? 20 years ago Bordeaux was by far the leading region in the world of fine wine, maybe followed by Napa and Piemont. Then Burgundy and Northern Rhone were under the spotlight. Today we have seen the rise of other regions like Tuscany… Cabernet Sauvignon was the acclaimed varietal also, now Pinot Noir is trendy - of course from Burgundy but also from Central Otago in New Zealand, and from Oregon State. The world is more open, wine lovers are maybe more curious, the loyalty to big names in the world of fine wine (as in other categories) is also weaker. This can explain why today younger generations may enter the world of fine wines through other regions, when in the past Bordeaux was the point of entry. What is also striking is how Bordeaux is modernising itself with more professionalism in many Chateaux, more willingness to travel and meet wine lovers, more open to welcome people at the property, a better understanding of the world of fine wine. With the quality of the wines produced, with more willingness to travel and understand consumers, with greater attention on crafting experiences and creating occasions for people to open bottles, there is no reason to doubt that Bordeaux will continue to shine and seduce the younger generations of wine lovers that today might not consider Bordeaux as a preferred choice. What is Bordeaux's greatest asset? We don’t see many regions in the world like Bordeaux that have the capacity to produce extraordinary wines year on year with significant volume to create a very capillary distribution. The investments that are made both in the vineyards and in the cellar are absolutely impressive in Bordeaux. Bordeaux is one of the greatest and most dynamic cities in France today, very well reachable from Paris, London, Amsterdam, Geneva…, with many things to do for a week or weekend in the region. Many Chateaux have invested in great hospitality experiences to provide customers with a memorable experience. Bordeaux has everything in its hands to really stand out and continue to seduce wine lovers from around the world, we just need to communicate it! 
What is Bordeaux’s biggest challenge? Its lack of capacity to communicate the assets discussed previously. There is no other region in France and in the world that is experiencing so much “bashing” over the last few years. Are all the criticisms unfair? Certainly not, but everything is exaggerated, and Bordeaux is not able to speak with one voice on some big topics, to have a consensus, to unite forces to make people realise how Bordeaux has changed, how modern and open to world things are now, on top of the extraordinary quality of the wines produced! How have you been affected by Coronavirus? We have been observing the evolution of this terrible pandemic for several weeks, and we have been taking immediate measures in line with the authorities. Our first priority is the safety and well-being of our people in our Chateaux, in our Bordeaux and Paris offices, in our Domaine of Aussière, but also in our properties in China, Chile and Argentina. The second priority has been to maintain minimal staff in the properties for mandatory activities – we are right in the middle of harvest in South America, we were planning the bottling of Duhart-Milon 2018, we were finishing the blending of vintage 2019 in our
Bordeaux Chateaux… We hope strongly that this terrible situation will pass very soon for everyone. 
With En Primeur tastings postponed how will this affect the release of Chateau Lafite 2019? You know that we are very strong believers in the en-primeur system as it is a unique platform for Bordeaux wines enabling the Chateaux to have the best reach and international spread possible. However, as with every system it needs to be fine-tuned, recreating a
sense of magic to maintain desirability, and needs to provide a customer incentive to purchase en-primeurs. So yes, postponing the en-primeurs is not a decision taken easily, but given the circumstances it is a choice that had to be made. It is almost impossible to have a clear view of when this terrible crisis will end and thus when we would be able to reorganize the en-primeurs. One thing is for sure, as soon as the conditions are in place for people to travel safely, which we all hope to be in June/July, we will be delighted to meet them for tastings (either in Bordeaux or around the world) to share the wines of the 2019 vintage, and share our passion and dedication to produce some of the best wines in the world! There are myriad fascinating twists and turns in Scotch whisky’s long and storied past. From dizzying boom times to disastrous downturns, the distilling landscape – and the major players within it – has been redrawn countless times. 
There's one era, however, that is legendary – whisky's "golden age". Between the 1950s and '80s, some of the industry's most nuanced single malts were crafted. These are now widely regarded as the greatest ever released, which is reflected in the eyewatering secondary market prices – should they ever appear on the auction block. 
These perfectly imperfect, characterful and wonderfully unique liquids, produced at distilleries that no longer exist, or exist in a very different way today, will never be bottled again – making them real unicorns for whisky collectors. 
To understand what makes them so special, it is important to first appreciate just how little liquid exists from this time. The single malt whisky market was unfathomably small before and during this period and entirely dwarfed by blends. A mere fraction of a distiller’s finest liquid would be bottled as a single malt. These minuscule quantities were also made via practices that are now lost in the annals of history, making them more desirable for collectors. 
For context, Scotch whisky was largely made as it always had been until the 1950s, drawing on traditional methods that had been passed down for centuries. Distillers would use their sight, smell and taste to determine when a liquid was ready to cask, and later, bottle. Whisky-making took mastery and patience – something producers could ill afford when demands on the industry intensified and there was a concerted push to produce more for less during the 1970s. While many producers made these changes around the same time, they didn’t all happen at once, creating a wonderfully varied time capsule of whiskies. 
The 1960s – when some of these great bottlings were produced – was sandwiched in between two vastly different decades. Production in the ‘50s was steady but small. By the 1970s, however, distillers – both large and small – were forced to increase their output by almost double, and names that had fallen silent were reawakened once more as global demand for Scotch whisky grew. 
Sadly, by the mid-1970s, the tide started to turn. The bountiful supply of whisky was not met by demand, resulting in a devastating whisky loch in the 1980s and some of the most difficult years the Scotch whisky industry has ever endured. Swathes of distilleries were forced to close, including the now-legendary Port Ellen and Brora – both of which shut their doors in 1983. This depression continued well into the 1990s with a further 20 casualties (of these, only three ever reopened), before the pendulum finally swung back in the early 2000s when the seemingly unquenchable thirst for single malt whiskies, that is still in full force today, began. 
From the 1950s onwards, holders of the increasingly frayed purse strings sought to reduce inefficiencies in the traditional, labour-intensive practice of whisky-making – which defined the golden age. With the introduction of modern, more mechanised, safer processes, it was a new dawn for Scotch whisky.  During this period in history, every single stage of whisky production was “streamlined”. The money men closed floor maltings, introduced distillers’ yeast, reduced fermentation times, installed semi-lauter tuns, made the switch to indirect-fired stills, replaced worm tubs with shell-and-tube condensers, and introduced ex-Bourbon barrels. By the end of the 1970s, you could almost count on one hand the number of distillers who retained traditional methods. 
It’s important to remember that tweaking one of these processes can alter the entire flavour profile of a whisky – just ask Glenfarclas who reverted back to direct-firing their stills after their new-make spirit lost its characteristically heavy and oily profile during their ill-fated flirtation with steam in 1981. And yet, in many instances, producers permanently changed many of these processes. Traditional practices and know-how that varied slightly at every distillery began to be outsourced as they turned to professional maltsters and installed modern, industrial-scale equipment that increased efficiencies and consistency but in some cases compromised the craft and character of the final spirit profile. 
“Every distillery has its own story and evolution of style,” whisky authority Serge Valentin explains, “their own ups and its downs.” 
Valentin was ahead of his time when he started collecting single malt Scotch, almost exclusively from Old Clynelish and Brora. He couldn’t possibly have predicted what his passion project of buying as many different bottlings as he could “simply because they were [his] favourites”  would become. 
Both Clynelish and Brora – as it would be known – produced heavily peated malt during the late 1960s and early ’70s. Bottlings from this time until 1983, when Brora became a victim of the whisky loch and fell silent, have become highly collectable in recent years. Old Clynelish bottlings, (Valentin’s favourites), which are robustly distinctive with aromas of scented wax and heather, are astonishingly rare and modern collectors clamber over one another to get their hands on these golden-age gems for many times the price Valentin would have paid. 
Stephen Rankin has been fortunate to sample whiskies from one of the most remarkable single malt libraries in the world at Gordon & MacPhail. His team is able to pull out liquids from what he calls “pre-evolutions within distilleries” thanks to his family’s foresight to buy barrels from cash-strapped producers who were selling their stocks for survival. The Elgin-based independent bottler had the luxury and fortitude to bide their time and store casks that would otherwise have been bottled young or blended. He has a particular affection for single malts from what was Milton Distillery, known since 1951 as Strathisla, which he describes as a “great example of a whisky that has the flavours of this past era.” 
Independent bottlers like Gordon & MacPhail played a vital role in bringing many of these now-legendary whiskies into the world. One man in particular, Silvano Samaroli, was responsible for bottling single malts that are now widely regarded as some of the greatest ever released.  
Rome-based Samaroli released his first Scotch whisky series in 1968 in the form of the now-iconic, dumpy Cadenhead bottlings – making him the first independent Scotch whisky bottler outside the United Kingdom. Today, Samaroli’s Bowmore, Glen Garioch, and  Springbank releases are held in especially high regard and his  Laphroaig single malts from 1967 and 1970 are in a league of their own. 
“The late 1960s to the ’80s is definitely one of the most remarkable periods,” Samaroli’s Daniele Liberati says, “largely due to the appearance of certain expressions for the first time.”  
“We started to propose different bottlings, moving away from the classic blends and official distillery releases,” Liberati adds. These included single-cask expressions, numbered bottlings and cask-strength releases, all of which are commonplace today but were revolutionary at the time.
 
In recent years, a handful of new distillers have turned to old whisky-making practices in an attempt to recapture some of its magic. Fledgling Speyside distiller Dunphail, for instance, has faithfully – and at great cost – installed traditional floor maltings, direct-fired stills and wooden, open washbacks where fermentation times are considerably longer than the industry average, to produce a fruit-forward, oily, medium-bodied Speyside whisky. Today, however, these traditional methods are always adopted in conjunction with modern practices in order to achieve all the desirable characteristics of yore in a more efficient way.   While there is the temptation to look back on this era with a rose-tinted view, as there are undeniably some exceptional bottlings from this time, it is wrong to believe that all whisky produced in the golden age was of the same standard. Whisky-making 40 to 50 years ago was imperfect, there was very little consistency in quality and for one good cask, a distiller would likely have 10 or 20 bad ones that never saw the light of day.  It’s also important to appreciate that many of these modernisations were vital to guarantee the safety of distillery workers as several stages in production were unstable. These advancements have also resulted in unprecedented consistency. While nuance and singularity might have been sacrificed, it’s now incredibly hard to find a bad dram.   As times evolve – as they inevitably do – it’s highly unlikely whisky from Scotland’s golden age will ever not be considered precious.    Browse all Scotch whisky or read more Editorial

Ardross is a new Scotch whisky distillery. You’d be forgiven for rolling your eyes about now. Over the past few years there’s been a spate of new distillery openings across the bucolic Scottish landscape and each espouses to be different from the last. Many have an impressive roster of whisky talent at the stills and little expense has been spared on the distillery itself and surrounding architecture. This is something Ardross Single Cask Society founder Barthélémy Brosseau is all too aware of. “I wouldn’t want us to be completely perceived as normal,” he says. “What I mean by that is that we have a great building, great location, great people, great quality spirit but everybody is claiming more or less the same.” As the name may suggest, Barthélémy – or Barth as he introduces himself – Brosseau was born in Bordeaux and is a very atypical Scotch whisky distillery founder. “You don’t see me wearing a suit and speaking very gravely about the Scotch whisky tradition with a Scottish accent, and there is a reason behind this,” the 32-year-old adds. As he is quick to point out, with a smile that rarely leaves his face during our one-hour call, when it comes to the whisky, he takes a giant step back. “Who am I as a Frenchman to tell them how to produce Scotch whisky?” This side of the business is very much driven by distilling legend Andrew Rankin of Bowmore fame. When we speak, the Ardross team is preparing to officially launch its Single Cask Society. A website is in development with an ever-nearing launch date (the designers require a “bit of a kick”), the existing 49 members are regularly in contact with Brosseau (he has most of them on WhatsApp), and he’s not getting quite as much sleep as he might like after the birth of his second daughter. With all these plates spinning, you’d forgive him for being a little flustered. Instead, he is cool personified. He seamlessly weaves the conversation from topics including, but by no means limited to, philosophy, travel and literature (Leo Tolstoy’s War & Peace is among his favourites). It is soon apparent why Brosseau is the butterfly in the company logo. With his tendency to flit from one subject area to the next and, to take his more philosophical approach, his current emergence from a chrysalis of sorts into the Scotch whisky world. Conversely, Rankin, with his near 50-year experience, is the steadfast, knowledgeable other animal in the logo. “Don’t tell Andrew he is the tortoise,” the Frenchman says with that smile. This symbiotic relationship in many ways is an unlikely one, but it’s key to Ardross’s current and future success. “Without Andrew, we would not be where we are today,” Brosseau says. “It would be an absolute mistake for me to say that I am driving this. Andrew is driving Ardross as a distillery and it is thanks to Andrew and his connections in Jerez, in Japan, in the US that we are where we are today. “I have all these crazy ideas and he is the wise guy who has the years and the knowledge and the erudition. And that is why it is interesting – sometimes we are completely at odds. And that’s normal. And from this friction, I think, that creativity ensues.” Ardross is the Scotch whisky arm of Greenwood Spirits Ltd, which is owned by Vevil International who boast London’s The Ned and The Wolseley in their impressive portfolio. Part of their modus operandi is faithfully restoring and renovating Grade 1 and 2 listed buildings and Ardross was no different. After seeing the opportunities that lay within the Scotch whisky sector, the team quickly recognised the need to partner with an industry icon for the project to succeed. After meeting Rankin, the team gave him a mandate to find the Scotch whisky with a big vision a new home. Rankin describes finding the beautiful dilapidated farm called Ardross as serendipitous. He recalls seeing the six- to- seven acre Loch Dubh and snow-covered pine trees, and falling in love right away. The 50-acre site with 19th century farmhouse buildings has since been restored brick by brick at the cost of £30 million and a new distillery built to produce a traditional, quality single malt with a slightly sweeter profile. Although expectations were high after such an investment and the assembly of a production team with a combined experience of over 150 years, few could scarcely have imagined the quality of the spirit after one run. Rankin says it was a “Eureka moment” when they realised the new-make spirit was 95% of the way there – this process typically takes two to three months. The reason for this success right off the bat? Extremely long fermentation times of 121 hours (compared to the industry standard of 60), one of the best, if not the best, production teams in the business, and a relentless pursuit of quality, according to Brosseau. The only thing left to create the Ardross single malt they’d all envisaged was the wood and time itself. For this, Rankin drew on his industry ties and sourced the highest-quality wood from Jerez, Kentucky and Japan. Even for seasoned professionals with decades upon decades of whisky distilling experience under their belts, the chance to work at a new distillery from day one represents a career first. Despite all their achievements, of which there are many in the case of this team, to a certain extent they have been following somebody else’s blueprint and colouring within the lines. Working at a distillery like Ardross, with all its financial backing, represents an opportunity for this illustrious team to create their own blueprint in a way that only 150 or so others ever have. And Ardross, arguably more than most, has the flexibility to dictate what this framework should look like. “We have the luxury of thinking about the future almost in generational terms,” Brosseau says. “We are insulated from the vagaries of short-termism.” Brosseau says the decision was made early on to remain an independent distiller and not team up with the “big boys” for investment or distribution deals. He doesn’t rule this out in the future but says this approach has given the team an opportunity to learn and get their own scars and will make their growth and achievements that much sweeter because they have “done it all themselves from the beginning”. In addition to the distillery, Ardross also owns its own bottling line and warehouse, so they’re not dependent on others. Where other distilleries might be burdened with lofty marketing and distribution costs, and fielding shareholders’ dividends demands, Brosseau says Ardross is “resolutely adopting a different stance”, will not rush to produce a non-age-statement and is under no pressure whatsoever to bottle whisky until the team is good and ready. “For us, Scotch whisky is about time. It is about the long term,” he adds. “The idea is that when you are entering Ardross as a member, you are with us for the long-term and the value proposition unfolds over time. “If you are in a rush and you want to buy your cask and sell the next day, we are not for you. And we are completely honest about it. Go elsewhere basically.” The French charm quickly returns and he says with a smile: “I mean, you will always be welcome of course – but what I am saying is you won’t potentially be happy.” While he is tightlipped about how this value proposition might unfold, Brosseau teases it won’t be via “necessarily classical routes”. “We are not putting everything in front of you all at one time,” he explains. “The idea is to make you discover, or enter our world, almost sequentially. It’s frustrating I think for people sometimes because we live in a world where everything is available straight away – one click and you have everything you want. “And we are quite contrarian in that regard. We are not building right now to enjoy the fruits right away. The idea is to build value and the ripeness of the fruits come over time.” For this reason, and many others, Brosseau says Ardross is “very reasonably priced”.  “You have lots of people today who are selling whisky casks that they don’t really own,” he adds. The Frenchman describes the cask investment trade as a “complicated one” and is very gallant in not wanting to discuss other schemes that are slightly less above-board. Instead, he says: “We are not trying to fool anyone. We know who we are and we know what we are doing quality-wise. “We’re not pretending to be Macallan or Dalmore or whomever. We have a world-class quality team with world-class expertise, among the best in the industry. But we don’t have 200 years of history.” Whereas other propositions might require an accountancy qualification to understand, Brosseau says Ardross is “doing something that is very simple”. “We have the credibility of the industry professionals in everything that is related to production. For the rest, we are out-of-the-box thinking professionals.” While he might not be willing to divulge the “special” things Ardross is doing at the end of this year and next, we can speculate it’ll be worth the wait.
