Much has been written about Promontory. The property was discovered by Bill Harlan in the 1980s, hidden behind a ridgeline in Oakville, and its story – one that almost feels mythical – has been told many times (including by us).   Those stories, however, don’t prepare you for standing in this vineyard. “The territory”, as the team refers to the estate itself, is totally hidden from view – a good 10-minute drive from the winery (which looks out over the Harlan Estate vineyards), tucked to the south, over the hills from Dominus, found via a warren of dirt-tracks that cut through the forest, until – suddenly – you’re there.  Perched at the top of just one of the various parcels of vines, Cory Empting (Managing Director of Winegrowing) stops the truck as our jaws drop. We scramble to get out, blinking in the peaceful sunshine that beats down on an enchanting, untamed idyll. “There’s a quality to the silence out here,” Empting says – breaking the quiet that we’ve been soaking in. As the crow flies, Promontory isn’t far from Harlan Estate – yet the difference is, in Empting’s words, “kinda scary”. Fault lines make for a unique mix of soil types – sedimentary, volcanic and, most importantly and rare for Napa, metamorphic. Plots of vines are sparsely scattered across the wild, forested mountains, the undulating, varied slopes offering an almost endless range of aspect and microclimate. (As one alum told me, laughing, “It’s beautiful – but a total b**** to farm.”) The elevation is higher than at Harlan Estate – with the lowest point at Promontory the equivalent altitude of the highest point at its sibling property – making it generally cooler. Harlan Estate is manicured, while Promontory has a rawness about it – a sense that it isn’t, and never will be, totally domesticated. It's taken a long time to get here. Bill Harlan’s quest to create a Californian rival to Bordeaux’s First Growths (started in the 1970s) had kept him hunting for land, enough that would allow him to produce the same volume as the Left Bank’s most grandiose addresses. He bought his first 40 acres in 1984, the founding stone for Harlan Estate, and has continued tracking down special vineyards ever since, first for Harlan, then BOND and Promontory.  Although he’d first identified the location for Promontory in the 1980s (while hiking through this part of the valley), the property was developed by Girard Winery in the meantime, and he didn’t have the chance to buy it until 2008. Bill got a call that it was going on the market – and that’s when he rang up Will (his son, now Managing Director for the Harlan family of wineries) and Empting. “Then the economy started tanking,” Empting says – and suddenly the property that had been a stretch became increasingly affordable as its price dropped. The decision to buy was easy. But there was no reference point for the project, no historic bottlings to judge against, just a feeling about the place, and its potential.  “It was the wild west when we got out here,” Empting explains. The vineyard was in terrible shape – trees had been cut down and left where they fell. There were weeds growing taller than the vines. It had been left to become truly feral. There were even end-posts suggesting a row of Pinot Noir that was clearly Cabernet Sauvignon, while there were Cabernet Sauvignon clones that looked like nothing they’d seen before.  They committed to farming the site for three years before changing anything, so they knew what they were dealing with. But it soon became clear that the soils had been destroyed, robbed of organic matter, the vines emaciated, producing truncated shoots.  To date, they have replanted half of the 80 acres of vines. And the redevelopment work has been substantive, including un-doing terracing. They worked with superstar consultant agronomists Claude and Lydia Bourguignon (the first in the US to do so) to help regenerate the soils. But the philosophy here is ultimately Fukuoka-inspired: “How can we do one thing less? … That’s our church,” says Empting.  Fifteen acres have been replanted, rather unconventionally for Cabernet Sauvignon, untrellised – goblet-trained. This is partly because the metamorphic rock is so fractal that a unified hedge just didn’t make sense. Air flows in all directions, the sun hits each vine differently, they’re resilient for dry-farming and it allows the team to pick and move in any direction in the vineyard. Even more unusually, they’re planting rootstocks by themselves, grafting only once they’re three or four years old – when deemed ready. “I’m a Montessori parent,” Empting jokes, referencing what he describes as his “mixed pace” vineyards, letting each vine develop at its own rate. And this sense of responding to and working with, rather than against, the vines is key.  In a move that’s incredibly rare for hillside or mountain sites in Napa, their goal is to dry-farm. While the inspiration might have been wine quality (looking for more concentrated, balanced fruit), it is now ultimately about long-term survival in a changing climate. “We’re not going to have the water,” Empting says frankly. Convention suggests that each vine in the ground acts like a straw, sucking water from the soils. But, as Promontory have proven through experiments, it is not that simple – relating to the number of leaves on the vine, as well as its age, among other things. In fact, they have found that higher density plantings are easier to dry-farm.  To help avoid irrigation, they focus on respecting the vine energy – that means they don’t hedge or leaf-pull, and will only green harvest if they absolutely must (when nature throws them a curveball) – pruning to what they want the vine to grow, avoiding wasting any inch of the plant’s efforts. The resulting clusters are tiny, with yields reaching a maximum 38hl/ha, but often a mere 20hl/ha.   Cover crops and permanent grass cover, as well as grazing, have been key to repairing the soils. They’re still having to use a little bit of compost in some areas, Empting confesses almost guiltily – something he considers “a sign of imbalance”. Animals are a key part of “holistic farming”, Empting says, and he’d love to have chickens in the vineyards – “If the coyotes didn’t see them as a free meal,” he jokes. They’ll bring sheep in to graze early in the season, so that the cover crop has time to grow back. The regrowth can then be trampled naturally by the vineyard team as they work – operating as a rustic form of crimping or rolling. This aids water retention, the natural layer of “thatch” keeping the soils cool and preventing evaporation. If it’s not already clear, this isn’t a standard vineyard or estate – or, more accurately, family of estates. This is all part of Bill Harlan’s original vision, a 200-year plan to create a wine dynasty to match those of the Old World. The level of detail, effort and expense that goes into BOND, Harlan and Promontory is remarkable. They have a team dedicated to Research & Development – ensuring that they are at the forefront of viticulture and vinification, pushing any and every boundary in the name of quality.  One key element of this is their Vine Masters program – elevating what might historically have been seen as blue collar work to the skilled profession it really is.  The large majority of vineyard workers in California are of Mexican origin (some statistics suggest as high as 95%). There’s reason for this, with a long history of seasonal-working that stretches back to 1917, yet there’s often a division between vineyard and winery – a division that the family is working hard to broach.  The Vine Master program was first introduced at Harlan. The principle is not alien – a “Vine Master” is dedicated to a specific block, giving a sense of ownership, yet also meaning they know that block inside out. But – and this is what sets Harlan apart – to earn that responsibility (and it is a significant responsibility when the wine sells for upwards of £800 a bottle), the Vine Master has to go through a modular education program (developed in-house), passing both theory and practical exams. The Vine Masters can then take ownership for a block, and have the freedom to do what is required for their plot of vines. In what feels distinctly Californian and ever-so-slightly hippy-inspired, they’re also encouraged to, for example, hike through the surrounding hills, helping them think laterally.  Empting explains how one of the Vine Masters was sitting in his block on a break, looking up at a tree, and realised that trees naturally find their balance by dividing the diameter of their trunk fairly at each divide – only if there is sufficient girth will it split. He took this concept and pruned his block accordingly, only leaving multiple shoots where the vine could handle it. In the dry 2020 vintage, his vines were the only ones that reached the top wire (of the trellis), with the others all struggling. His methodology was rapidly implemented throughout the vineyard. The vineyard supervisor is more like a coach than a manager, and the vineyard work is more integrated with the final product. For example, the pruning process starts with tasting the wine from the previous vintage, so they can align on the energy of the vines and any challenges, before taking their shears to the vine. “You can’t prune a vine without thinking what it tastes like,” Empting says – yet that is what many vineyard workers will have to do.  This responsibility isn’t something that everyone wants – but skilled labour is, along with water, key to the future in California.  Empting expects the valley floor to be entirely mechanised in the imminent future – and if that’s the case, the question is: “How are you going to retain the talent that you have – and gain more?” he says. While originally they didn’t want to give each Vine Master too much land, they’ve found they work almost 40% faster than a crew – able to work more efficiently, doing what is needed when it’s needed, saving on the transition time within plots.  There’s been a constant evolution in the winery as well, inevitable as they learn more about this remarkable place, and realise the potential of its terroir. The challenge is to tame the significant phenolics – and the shift here fits with that familiar pendulum swing, with a move towards elegance. As with the vineyard, the goal is to do less not more – something that isn’t always easy. “We wait all year to turn grapes into wine,” Empting explains – the excitement sometimes becoming overzealous.  While soil health was, as Empting describes it, “the first hurdle”, David Cilli (Winemaker at Promontory) had been doing much in the winery, gradually dialling in the extraction, with shorter macerations and cooler temperatures (with a maximum of just 26˚C), halving the number of pump-overs. The wine is now mainly fermented in concrete (all with indigenous yeast) and aged in Stockinger foudre – ranging in size from 10 to 60 hectolitres – for 30-36 months.  When they first made the wine, they thought that they’d want and need to separate out the different blocks – since they had such varied profiles. They decided they were willing to sacrifice as much volume as was needed to make the best wine possible for the first vintage, and set about making various micro-blends, as well as one that included everything. The whole was so much more – its harmony so much more appealing. “They need each other, in a weird way,” Empting explains.   Until now, the wine has been made exclusively with the old vines, those that were planted when they arrived, with the new vines not yet mature enough (the young-vine fruit has instead been used for The Mascot). The 2022 will be the first vintage to include some of their earliest replants, which are now 10 years old.  While shifts here have mainly been gradual, 2020 was a significant moment. The first wildfire took hold on 18th August, although it was across the valley – far enough away for there to be no urgent threat, but the team was (especially with 2017’s fires fresh in their memory) on edge. Empting recalls spending time driving up and down the valley watching what was happening. They grouped together and decided to start picking on 22nd August – a good two weeks earlier than normal. They weren’t certain it was the right decision, but also weren’t prepared to risk everything to wait. Two weeks after they finished, the Glass Fire swept through the valley. Anyone that hadn’t picked was at significant risk of smoke taint.  Nature might have forced their hand, but it was a push they needed. The resulting wine stunned them all. It’s a world away from the high-octane reds that Robert Parker favoured – and any Napa stereotype. This is a bright, pure and elegant expression of site that sits at around 13%. And while the team’s fear was that it might not have the tannic depth of a true “Grand Cru” – a wine destined to be cellared – that is simply not the case.  They realised they didn’t need those extra two weeks on the vine for phenolic ripeness. The dry growing season had meant the vine only had a small crop to ripen, helping them out, but the year totally shifted their perspective. In 2021, they picked on the same date. In 2022 – a noticeably hot and dry year – they picked even earlier.  Tasting the 2020 alongside the 2016, ’17 and ’18, the difference is drastic – although the progression is there in the earlier vintages. It marks a sea-change for the estate – one that may divide pundits. But the 2020 matches their vision of this place: while they think of Harlan as a wine of gravity, Promontory is a wine of “lift”.  The Harlan family’s wines don’t come cheap – but you aren’t just paying for good wine (and it is, undoubtedly, very good). Yes, it’s a smart winery, with the very best equipment. But the money isn’t going on new barrels and expensive consultants each year, it’s being invested in the people, place and practices that guarantee its legacy. The 2018 has only just been released, so the 2020 won’t hit the market until 2025. But like anything these visionaries do, it will be worth waiting for. Tasting Promontory 2016 Promontory Will Harlan describes the 2016 vintage as one of the first wines that they felt allowed them to compete on a global stage. Still incredibly youthful, it’s somehow almost approachable yet has significant structure behind. There’s a plush richness to the fruit, a firmness and depth to the tannins that needs time, yet a vibrancy too. It’s just starting to become more supple, yet the phenolics grip onto the finish, drying it out very slightly. The fruit is starting to mellow, mingling with savoury tones. Significantly more weight than the other vintages. 2017 Promontory Deeper and darker, the 2017 shows an intensity and firmness – its framework almost aggressive after the 2016. The structure is boxy, yet also refined, and starting to meld together with the bright, fresh fruit. With air the wine shifts from black to red fruit, relaxing into itself. Fruit reverberates on the mouth-watering finish. 2018 Promontory The 2018 confirms the direction of change. Although on paper the wine looks similar to 2016 (in terms of analytics), this is significantly different – offering a transparency and vibrancy. Empting describes it as “athletic” – a fitting way to describe a wine that feels lithe. The fruit sits on the red spectrum, with super-fine velvet tannins forming a chiselled, linear structure. There’s a lift and florality to the nose, complementing the long, pure palate. 2020 Promontory This is a wine of amazing precision and perfume. A pivotal vintage for the estate, picked two weeks earlier than normal and before fires swept through the valley, it’s a stunning wine. Extraction was gentler and the alcohol is around 13%. It’s a wine of brightness and texture – a fine, chalky, powdered grip of tannins that complements the seamless fruit. The nose shifts with florals and earthier minerality, a savoury, saline edge to the crunchy fruit and juicy acidity. There’s purity and delicacy, with a finesse that is truly remarkable. A couple of years ago, I wrote a book called Time Tamed. In retrospect it is an ambitious title. Even at the time I realised as much, describing man’s efforts to tame time as being a task as Sisyphean as it is Canute-like. Humankind invented time to make sense of the world around us. It can be argued that an understanding of time – and the ability, however rudimentary, to track it and act according to it – is right up there alongside the ability to fashion tools and communicate using spoken language, as one of the characteristics setting humans aside from the other species with which our planet is shared. In the beginning at least, the extent of our relationship with time was a cognitive reaction to phenomena that permitted the prediction of cyclical seasonal events such as the migration of animals, and later forecasting the effect of variations in terms of temperature and daylight hours on the flowering and fruiting of crops.   The triumph of human intellect, and the beginning of our species’ march to its position at the apex of life on our planet, was to make conscious use of this intellectual edge that allowed us to benefit from the recurring patterns of events foretold by observation of such astronomical phenomena as the rising and setting of the sun, the waxing and waning of the moon, and the lengthening and shortening of the diurnal span. Lunar phases repeat themselves in a cycle of 29½ days; the tropical year as measured, say, from winter solstice to winter solstice (when the day is shortest and night longest) is approximately 365¼ days. The interaction of the solar and lunar calendars, providing, respectively, the year and the 12 months in it, gave us the framework upon which to build civilisation. “If time was conceived as the precise measure of an ordered succession of states, it should come as no surprise to find that its first criterion of measurement in every known civilization should have been the movement of the stars (which is both movement and return, in other words a ‘constant periodical appearance’)”, wrote Umberto Eco. He next posed the rhetorical question: “Even if there were nothing more to time than this, it would still be interesting to ask why, for so many centuries, men measured out the years, the months, and the days, but came so late to measuring hours and minutes. The main stumbling block was the need for mechanically precise instruments to measure them.” Calendars of varying degrees of sophistication have been in use for millennia. In my book, I wrote about a series of 12 fire pits in Scotland that – in conjunction with the known location of sunrise through a mountain pass on the morning of the winter solstice – functioned as a calendar in the Mesolithic period, 10,000 years ago. Compared to that, widely available accurate timekeeping is only a relatively recent phenomenon. Had you asked a medieval peasant the time, he would have probably told you what season it was and, as recently as the mid 19th century, time was measured according to local meridians that gave a local solar noon. Britain, at the time the world’s preeminent industrial power, only got its first real taste of unified national time in 1851, when millions visited the Great Exhibition, travelling from all corners of the Kingdom by trains that ran to a single national time. But in the last couple of centuries the pace has hastened: we have become, as Eco put it, “children of a clock civilization”, and I am sure there are those who would argue that it is from there that many of our problems have arisen.   The industrialisation of time was of particular interest to Karl Marx. “The clock is the first automatic machine applied to practical purposes,” he wrote to Friedrich Engels in 1863, “and the whole theory of production of regular motion was developed on it.” Even though abstract, time had become the ultimate economic commodity. Life became lived according to the maxim ‘time is money’ and with a Gradgrindian myopia we have concentrated on ever smaller divisions of time until we have become not children but slaves of the clock. Time was never tangible, but in the past it linked human experience to the cosmos through the tracking of solar and lunar cycles. The division of time into units that are independent of astral cycles has distanced us from the natural rhythms of life. Division of time into small units standardised around the world has facilitated the synchronisation of activities that enable us to live in our modern world of ‘just-in-time’ production, conurbations with populations of millions, and a network of integrated transport systems that allow us to travel from one side of the world to the other well within the span of a single day. It has taken the recent and as yet unresolved upheaval wrought upon our carefully organised world by the COVID-19 pandemic to reveal the humbling fragility of the system by which we live and regulate our lives. Moreover, one could argue that it is the application of monetised time that is responsible for the ravages that we have perpetrated on our planet in pursuit of our industrial goals. But before we blame the rise of the timepiece for the ills of the world, there is an aspect to watchmaking that can enable us to reconnect with the cosmos in a way that is familiar to those conversant with the world of biodynamic winemaking. So, when the editor of FONDATA suggested biodynamic winemaking as the prism through which to view watchmaking, I was intrigued. Once upon a time, a long time ago, I did work in the wine trade. However, we parted company during the 1980s, some time before biodynamic winemaking became what I believe is called ‘a thing’. Obviously, all readers of FONDATA understand the basic principles of biodynamics, but I needed to undergo a quick crash course in what is just one of the legacies of the quite extraordinarily colourful and at times controversial Rudolf Steiner; the late 19th- and early 20th-century Austrian philosopher, social reformer, writer, educationalist, editor, architect, spiritualist, scientific spiritualist, mystic, Goethe superfan, campaigner for the independence of upper Silesia – and much more besides. He came up with everything from a new, quasi-religious movement called ‘Anthroposophy’, to a new approach to medicine; a new artform, ‘Eurythmy’, to a new form of agriculture, ‘Biodynamics’. Steiner turned his fecund and agile mind to the problem of agriculture in the early 1920s and addressed many of the concerns that we are still grappling with a century later, advocating a sustainable ecologically-oriented approach to farming that eschewed chemical pesticides and fertilisers in favour of natural alternatives and conducting agriculture based on an astronomical and astrological calendar. Steiner is memorable because he could enliven even the relatively practical activity of growing things with woo-woo mumbo jumbo of a level to which even Gwyneth Paltrow can only aspire: for instance, burying manure in a cow horn over winter and then exhuming it; or controlling infestations of field mice by sprinkling fields with the ashes obtained by burning the skin of a “fairly young mouse” obtained “at a time when Venus is in the sign of Scorpio”. And yet, such was the power of his way of thinking that it would be wrong to characterise him as a total crank: Steiner was apparently taken seriously by Hitler as a threat to National Socialism.  But back to wine. Prima facie, there is little to link the joyous celebration and bounteousness of viniculture with the mechanical slicing of hours into minutes, into seconds into milliseconds. However, to view watchmaking as being just about the business of telling the time is to underestimate what is in my opinion one of the most engrossing areas of human ingenuity and creativity, where science, mathematics, mechanics and art meet. I like to think about watchmaking as being connected to the detection and calibration of rhythms and patterns … biodynamic farming is all about rhythms and patterns, especially those of the lunar calendar. In his writings, there are times when Steiner could be writing the script for Star Wars – when he talks of entering into “the forces that regulate growth, crucially the ‘fully-evolved Moon-force’”.  The Biodynamic Association uses less picturesque language to summarise the approach, saying that the philosophy of biodynamic farming is founded on “the influences of the moon, planets and constellations on plant growth”. “Each month the moon moves through all twelve constellations of the zodiac in turn. This is referred to as the moon’s sidereal cycle and forms the basis of the biodynamic calendar. Although the waxing and waning (synodic) cycle is the most well-known lunar rhythm, it plays a small part in this calendar.” The indication of moon phases has long been a feature of watchmaking, and even if knowing whether one is living under a waxing gibbous moon is not of primary importance to most of us, the function is undeniably decorative when artistically transferred to a watch face – the moon disc, often decorated with a background of stars, making a complete rotation once every 29½ days. Watches with more advanced astronomical functionality feature sidereal time as well. And this year, the long-established watchmaker Jaeger-LeCoultre demonstrated that it is capable of getting seriously cosmological. To celebrate the 90th anniversary of its famous Reverso model, it released the world’s first four-sided watch, the Hybris Mechanica Quadriptyque. As its name suggests the Reverso flips over to reveal its back. Initially conceived as a protective measure, more recently the back has been used to display other information (another time zone for instance). Now, the cradle in which the watch sits on the wrist has also been mechanised to offer two further planes for display – much in the way that one can connect multiple screens to a single computer rather than having to be constantly opening and closing windows. And Jaeger’s watchmaking wizards have turned faces three and four into a banquet of lunar information.  On the interior face of the cradle there are three displays giving the synodic cycle in the northern hemisphere, the draconic cycle (the height of the moon) and the anomalistic cycle (apogee and perigee, when the moon is respectively furthest from and nearest to the Earth), while the fourth side of the watch gives the synodic cycle in the southern hemisphere.   It sounds like an observatory on the wrist and according to the makers: “the Hybris Mechanica Quadriptyque can predict the next global incidence of astronomical events such as supermoons and eclipses – the world’s first wristwatch to provide such a deep reading of the cosmos.” I imagine even Steiner would be impressed especially as in biodynamic circles cosmological connections are crucial. Biodynamic agricultural activity is governed by knowledge of the behaviour of celestial bodies: ascending moon days favour certain agricultural activities while other tasks are better performed on descending moon days. Eclipses, apogee, perigee, and new moons all have their associated agricultural messages for the biodynamic farmer.   “It’s connected into the cosmos,” explains Philippa Hegarty of Hegarty Chamans, a vineyard in the foothills of the Montagne Noire in the Minervois. “We find an explanation that people respond to is; if the Moon has such a strong tidal influence then it can certainly move sap up and down a vine and that’s what we work with at different times of the year.” Providing timing of the movement of the tides is another function that the mechanical clock or watch can perform; indeed it is one of the oldest, predating the minute hand, the second hand, the wristwatch and even the pocket watch. The provision of times of high tide by a mechanical timepiece can be traced back to the 14th century and the famous Astronomical Clock designed by Richard of Wallingford, Abbot of St. Albans – which as well as showing the fixed stars and charting the movements of the sun and moon (complete with ecliptic nodes – another important feature for biodynamic winemakers) gave the times of the tides at London Bridge.   In fact, the technical leap forward accomplished by clockmakers in the 14th century rivals that of computer networks in our own time: at the end of the 13th century time was still being told by clepsydrae (like an hour glass but with water instead of sand) and by the middle of the following century, man was mapping the cosmos using mechanical machines of unimaginable complexity. If Giovanni de Dondi’s Astrarium of 1364 looks a little like a lunar landing module, then that was not the only thing it predicted. About a metre high and standing on protruding feet, the Astrarium featured seven panels with dials that showed the movements of the sun, moon and the then-known planets: Mercury, Venus, Mars, Jupiter and Saturn. Further dials indicated dates of fixed and moveable religious feast days, the intersections of the solar and lunar orbits, and time of sunrise and sunset. In comparison, the 24-hour clock seems prosaic, almost otiose. Another common feature of these miracle machines of the Middle Ages was the zodiac. Rather than being relegated to the horoscope section of the tabloid press, astrology was as much of a science as astronomy, and a medieval megaclock could not take itself seriously without a dial or two depicting the signs of the zodiac. The celebrated Three Kings Clock of Strasbourg Cathedral was no exception. As well as its astrolabe dial, ecclesiastical calendar, carillon mechanism that filled the air with religious music, and the automata that replicated the nativity, an illustrated panel linked signs of the zodiac to body parts, connecting human health with the movements of the celestial bodies, thus indicating propitious or hazardous times for that key medical procedure of the times: bloodletting. The influence of the zodiac constellations is an important part of the biodynamic playbook. “Since ancient times the twelve zodiac constellations have been associated with each of the four elements: earth, water, air and light,” observes the Biodynamic Association. “Three constellations are connected to each element, and each element is related to a part of the plant: thus, Earth – root; water – leaf; air – flower; fire – fruit.” “For example, for sowing or harvesting carrots, an earth – root day should be chosen; for lettuce, a water – leaf day; for beans and apples, a fire – fruit day; and for flowers and broccoli, an air – flower day.” As the example of the Jaeger-LeCoultre Hybris Mechanica Quadriptyque shows, thanks to the technological advances that have accrued during the last 20 or 30 years, the miracle of modern mechanical watchmaking is that it is able to miniaturise cosmological functions and place them on the wrist. Recent years have seen some truly spectacular wristwatches enter the market. Patek Philippe’s double-faced Sky Moon Tourbillon is regarded as one of the trophies of modern watchmaking: featuring minute repeater with ‘cathedral gongs’; tourbillon; perpetual calendar with retrograde date hand; day, month, leap year in apertures; hours and minutes of mean solar time; moon phases; and on the reverse, moon-focused watch face, sidereal time, sky chart, and phases and orbit of the moon. Van Cleef & Arpels caused a stir when it released a watch that condensed the workings of a planetarium onto the wrist with a watch charting the movement of the five planets visible to the naked eye from Earth: Mercury, Venus, Mars, Jupiter and Saturn; each planet orbiting on its own disc in its real rotation time. Blancpain, meanwhile, has tackled the notoriously complex lunisolar Chinese calendar to create a watch that displays the ten celestial pillars, the five celestial elements, the phases of the moon, the animal associated with the year and the date as given by the Gregorian calendar. I am neither watchmaker nor winemaker, but given the approaching centenary of Steiner’s 1924 series of agricultural lectures which gave birth to biodynamics, now might be a propitious time to consider a mechanical timepiece that displays the cosmological information pertinent to biodynamic viticulturists and farmers. The Scotch whisky world is a fickle beast. In its 500-year history, the number of distilleries in Scotland has swelled and contracted many times. There have been myriad casualties, and very few have lived through these downturns without shedding stills and stocks to stay afloat.  The less fortunate were shuttered temporarily, mothballed for inordinately long periods of time, or were ghosted with no hopes of revival. In many cases, everything – lock, stock and, quite literally, barrel – was sold to pay off debtors, and the site was razed to the ground. In the years that have followed, these silent or so-called ghost distilleries have taken on an almost mythical new name: lost distilleries. While these producers were invariably unknown while in active production, the allure of what is no more has made them astoundingly popular, sending prices into the tens, and in many cases, hundreds of thousands. In the 40-plus years since the last whisky loch, when a devastating number of distilleries were forced to close, some producers have languished in relative obscurity, with only the most devout knowing of their existence and diligently sourcing their precious nectar. Others have developed a cult-like status and become exceptionally collectable as a consequence. So collectable, in fact, that their owners have moved heaven and earth to bring them back to life. The most famous are those considered the “Holy Trinity” of lost distilleries: Port Ellen, Brora and Rosebank. “They are the lost history of Scotland’s distilling and whisky heritage,” Stephen Rankin, Director of Prestige at independent bottler Gordon & MacPhail, says wistfully. “They are from a time when whisky was made slightly differently from today. It’s a lost character. We cannot go back and make these whiskies like they were originally made. They reflect both the time as well as the people and place in our history,” he adds. When the vast majority of these distilleries were in production, huge quantities of their output was destined for blends. Their young single malts simply were not available, or more accurately, were not widely available, as distillery bottlings. If it hadn’t been for independent bottlers like Gordon & MacPhail, who prudently bought stock and squirreled it away, when distilleries were closing down in their droves, then these whiskies would almost certainly have been consigned to the very dusty history books. “I think the popularity has a lot to do with the mystery of times gone by and what older whiskies used to be,” the newly appointed Rosebank Distillery Manager Malcolm Rennie tells me. “There’s a certain element of the misty-eyed past being better in some way,” he muses. “Not always the case in my opinion – the exception being Rosebank, of course,” Rennie quips. For James Mackay, Head of Rare & Exceptional Spirits at Diageo, which owns Port Ellen, Brora (and Rosebank until 2017), it’s all about the experience. “Due to the very nature of ghost distilleries and their finite stocks, these are whiskies we will never be able to taste again. When you share a whisky from a ghost distillery with a friend, they’ll know that they're being treated to something completely irreplaceable and there is something very special about that.” This special experience is a costly one. Collectors – and flippers – have driven the price of lost distillery bottlings to exorbitant highs. Questions have been raised about what the reawakening of these lost distilleries will do to the prices of existing bottlings and where these new-old whiskies from the likes of Port Ellen, Brora and Rosebank will sit in terms of price and taste profile. On this last point, Mackay says: “This is the big question we’re all asking ourselves.” He continues: “We are confident that the new Brora and Port Ellen whiskies will sit amongst the best in the world, however we’ll have to wait two or three decades before we know for sure!” In terms of taste profile, Rennie says the new Rosebank will be a “very accessible” whisky “on the lighter end of the scale with a typical fresh, fruity smooth character but with an additional dimension of distillery character giving some depth also”. On the question of price, he says “I couldn’t comment.” Adding: “It would depend on age, I’m sure. Safe to say Rosebank will be viewed as a premium whisky.” In many ways, Rosebank was the least likely lost distillery revival, as Diageo offloaded the distillery site to British Waterways in 2002, and the original three pot stills and mash tun were stolen by thieves in 2008. Rennie says it has been a real honour to be entrusted with resurrecting the distillery, which was mothballed in 1993. When we speak, three new copper pot stills are being delivered to the site – a landmark moment in any distillery’s history, old or new. A new distillery team is being assembled and the goal is clear: emulate the original, heavy and oily triple-distilled style of Rosebank spirit. The new Distillery Manager says no expense has been spared on equipment and operating systems to give the team as much control as possible. He acknowledges there will be a lot of trial and error to get the spirit character to where they all want it to be, but he is confident the finished article will be “as good as, if not better, than the original”. “It may take a few goes but we will get it,” Rennie adds determinedly. When asked why he thinks the Lowland distillery has become such an icon, Rennie says: “I think the fact that Rosebank was always a sought-after whisky way back in time says a lot. It was in demand 100 years ago by blenders, so the spirit was always special. It didn’t become special only because it closed, not like some other lost distilleries. “Rosebank has always been seen as the ultimate Lowland whisky and deservedly so. When it was closed in 1993 that reputation was only going to be enhanced and [it was] a real loss to the local area and overall whisky industry.” Rosebank’s location on the banks of the Forth & Clyde Union Canal was integral to its prosperity and eventual closure. In many ways the distillery’s fate was sealed when the canal which connected Scotland’s two main cities, Edinburgh and Glasgow, closed in 1963. When the whisky industry spluttered and stalled in the 1990s, the then-owners made what many believe to be the wrong decision to officially mothball the distillery. To great surprise and delight, Ian Macleod Distillers announced in 2017 that Rosebank would be revived having secured the site from Scottish Canals – a former division of British Waterways – and acquired the remaining stock from Diageo in preparation for the £10 million project to bring Rosebank back to life. The decision to restore Brora and Port Ellen was also made in 2017, 34 years after their closure. Mackay says this was partly a response to the demands from whisky enthusiasts but also as a result of the strong growth in single malt Scotch and the opportunity to create a new generation of whisky consumers. He says the £35 million restoration process – which started at the same time for Brora and Port Ellen – has required enormous support from local communities, teams of highly skilled engineers, whisky noses and the Diageo archives. Brora, in the Highlands, took little under four years to bring back to life and opened in May 2021. Port Ellen on the isle of Islay has taken slightly longer and should begin distilling in spring 2023.
 With an eye to the future, many speculate which ghost distilleries could be earmarked for revival next – Diageo alone owns another 15 of them. Rankin believes there are very few left that could come back, but when pushed suggests there could be one or two, depending on the condition of the buildings, their current broader environment and land use around them, and the financing structure in place of those doing the resurrection. He remains tight-lipped on which. Regardless, there has arguably never been a more exciting time in Scotch whisky, with lost distilleries being brought back to former glory, a glut of new distillery builds and collectability at an all-time high. “It is a unique time for whisky lovers,” Rankin agrees. “Scotland shall be seen as the home of single malt and blended whisky. Those overseas are starting with a blank canvas and are making their own history, while those new in Scotland have the legacy of a 500-year-old industry to build upon. “Even if the whisky that draws them in is one distilled in Japan or the USA, India or Switzerland, they will find their way to Scotland and in turn to past bottlings from our history, as well as to new expressions from long-established brands, resurrected ones, or brand new ones. “As my grandfather said: ‘The future is shaped by what you do today, while today reveals what we did in the past.’” As the past and present meet, there will be a keen eye on these formerly lost distilleries and what their resurrection means for those fortunate enough to own bottlings from a bygone era. Five of our favourite lost distilleries Glenury Royal Highland whisky distillery Glenury Royal has a rather ill-fated history. Severe fire, a distillery worker death in a boiler-incident and ultimate closure in 1985 have all befallen the distillery which once stood near Stonehaven in Aberdeenshire. Despite all this, the Glenury Royal name has survived, and very aged bottlings are increasingly scarce and collectable. Diageo has released some remarkable aged Glenury Royal bottlings (including a 50-year-old) as part of its highly sought-after Cask of Distinction series. Gordon & MacPhail has also bottled some rare Glenury Royal single malts. Littlemill Littlemill is the oldest licensed whisky distillery in Scotland. Whisky from the Lowland producer is incredibly rare and is no longer being produced after the distillery was closed, demolished and consumed by fire. Some independent bottlings and very rare own labels have been released. To date, Testament – a 44-year-old limited expression distilled in 1976 – is the oldest single malt from Scotland’s first distillery. Celestial Edition (40 years), Private Cellar (25-, 27- and 29-year-old) and a 1991 vintage have all been released in extremely limited quantities. Port Ellen The  Port Ellen distillery on the south coast of the Hebridean island of Islay is responsible for some of the rarest peated single malts on the market. The distillery, founded in 1825, was a victim of the whisky downturn and eventually shuttered for good in 1983. As stocks decreased, secondary market demand for Port Ellen intensified and bottlings regularly fetched five-figure sums. The distillery is being brought back to life with two copper pot stills that are faithful replicas of the originals, and two smaller stills which will produce more experimental and innovative spirit.  Brora Brora distillery – or Clynelish as it was originally known – was established in 1819 by the Marquis of Stafford, later the Duke of Sutherland. Sadly, Brora was a casualty of the 1980s whisky loch and closed its doors in 1983. In the years that followed, Brora has become one of the most highly sought-after Scotch whiskies. Some of the most expensive bottles ever sold have included the 40-year-old Brora bottlings from 1972 which have sold for upwards of £26,000. Many believe bottlings from the late 1960s and early ‘70s to be the most exciting in Brora’s distilling history. There are some remarkable official and independent bottlings from the early 1970s as part of the Rare Malts series and Douglas Laing & Co’s whiskies. Rosebank Rosebank is a highly sought-after and respected Lowland producer, famed for its triple-distilled whisky, that was mothballed in 1993. In the years that followed, Rosebank joined Port Ellen in Islay and Brora in the Highlands as one of the hallowed, and highly collectable, trinity of lost distilleries. The so-called “King of the Lowlands” developed a cult following for its triple-distilled whisky – a practice that is highly irregular in Scotland as most double distil. With new whisky from the distillery unlikely to appear until 2030, there will be heightened interest in and demand for the last remaining bottles from the original distillery. Some of the most collectable whiskies are those from distilleries that no longer exist. These ghost or lost distilleries hold a unique allure – but as attempts to revive Scotland’s so-called “Holy Trinity” get underway, Holly Motion explores whether it’s really possible to turn back the clock

Last year Colgin celebrated its 30th harvest. In a relatively short time, this Napa estate has become one of the most successful wineries in the region, if not the world. Its three single-vineyard wines – Cariad, Tychson Hill and IX Estate – regularly receive 99-100 points scores across the board, establishing it as one of the region’s cult Cabernet estates that has put Napa on the international fine wine map. Despite its international repute, however, Paul Roberts – Master Sommelier and Colgin’s COO – believes the estate, and Napa Valley as a whole, is still only just starting to tell its story. Napa, more than anywhere else, has been massively influenced by wine critics’ scores. While there is much fanfare over being awarded a perfect 100 points, these headline-grabbing scores have distracted from the actual reasons why this hugely heterogeneous region can produce such great wines, and that the wines themselves are distinctly varied, both in style and flavour profile. For some collectors, if a wine from Napa doesn’t have a 99 or 100-point score then they aren’t interested; however more engaged collectors are starting to identify the nuances within the region and are eager to learn more. Roberts has noticed this first-hand. “[People] don’t want to rely only on a score for guidance but instead begin to look for reasons why they really like these wines from Pritchard Hill, for instance… this is an evolution.” It reminds Roberts of a conversation he had with Dominique Lafon (Domaine des Comtes Lafon) when visiting Burgundy. Lafon said to Roberts, “When Domaine Faiveley sued Robert Parker in 1993, it was the best thing that could have happened to Burgundy. Parker left Burgundy and no other critic at the time had the influence like he did.” Lafon felt that it forced the wineries in Burgundy to focus on the story behind their wine – the characteristics of each vineyard – instead of a score. “This has to be the next evolution in understanding the great wines and the great terroirs of Napa,” says Roberts.  While Roberts emphasises that Colgin doesn’t trade on its scores, it is fortunate to have them. “But Napa is about a place – and we need to talk about this more,” he says. “The place is going to outlive you, me, Robert Parker, Lisa Perrotti-Brown, Antonio Galloni, all of us will be dead and gone, but the land abides. The place will hopefully begin to take on its own unique story, just in the same way you think Romanée-Saint-Vivant is different to Richebourg.” Tasting Colgin with Roberts, you quickly realise that for him tannins (their shape, intensity and mouthfeel) are an important aspect of understanding Napa’s different terroirs, as well as what really sets Napa apart from other Cabernet-growing regions around the world. Firstly, there’s the sheer volume of tannins. Top Napa Cabernets have higher skin-to-juice ratios than even the First Growths, notes Roberts, and therefore much more “antioxidant” tannins than their Bordeaux counterparts, vital for long ageing and development in bottle. Colgin’s mountainside IX Estate vineyard on Pritchard Hill produces berries that are, on average, 30% smaller than those grown in Pauillac and, to Roberts, have a completely different tannin profile. “While we love and enjoy drinking Bordeaux wines,” says Roberts, “Napa shoots itself in the foot every time we keep comparing our wines to Bordeaux. The climate, the terroir, the soils, they are just completely different.” When asked to describe the differences between the various regions within Napa, Roberts wants the tannins to guide you. While the reality is more nuanced, generally Roberts finds that the further south you are, the more elegant the tannin profile. In the south it is slightly cooler, something further exaggerated by the elevation. The northern part of the valley, however, produces “exotic, fleshy, powerful wines”. He finds that the mountain appellations – Spring Mountain, Howell Mountain and Diamond Mountain – produce powerful, dense, tannic, structured wines.  
Today Napa wines are often divided into those from the valley floor and those from mountain sites. While this binary division is one way to approach the geographical distinctions within Napa, but it is, Roberts feels, overly simplistic. Most importantly, it doesn’t allow for wines that are neither valley floor or mountain – the hillside vineyards, such as Colgin. 
Napa’s climate is influenced heavily by marine fog. Every day during the growing season, a layer of fog forms over the vineyards. Valley floor vineyards sit below the fog line and are protected from the full daytime power of the sun, moderating the climate. Mountain sites are above the fog line and are therefore constantly exposed to the California sunshine, which, according to Roberts, produces “a different berry structure” to the grapes on the valley floor. “The berries are smaller and have much thicker skins, very different tannins and much later picking cycles, since the mountain appellations are cooler due to elevation,” he explains.

“This cloud layer, that determines whether you are in a valley floor appellation, or a mountain appellation, tops off around 1,400 feet,” says Roberts. “ Howell Mountain’s vineyards starts at 1,400 feet; Diamond Mountain – most properties sit between 1,600-2,600 feet; Spring Mountain have some vineyards at 3,000 feet.” These then sit comfortably above the fog line and are rightly classified as mountain appellation wines. But Colgin, along with some others, Roberts believes, are wrongly considered mountain wines.

Colgin’s vineyards sit between 300 and 1,400 feet, and remain in or below the fog line. So, in some ways, they are similar to the valley floor, but, because they are on a hillside, they benefit from what Roberts calls “the devigourating nature of a hillside rocky soil”. These hillside vineyards have their own distinct climatic and geological influence – that doesn’t fit with mountain terroir or valley floor, but shares elements of both. For Roberts, Colgin’s vineyards are better described as a mid-slope hillside appellation, and it finds itself in good company.  
“If you look back at the time when we released our first vintage,” says Roberts, “we were labelled among a number of wineries as one of the cult Cabernet estates. Harlan Estate, Bryant Estate, Eisele Vineyards and ourselves – you look, and all of them are planted on mid-slope hillsides." Screaming Eagle (another cult Cabernet estate), Roberts admits, is strictly valley floor, but it is still on a slope. “A lot of people at the time said you are not going to be able to get Cabernet ripe and it’s too hard to plant in the rocky soils on these mid-slopes,” says Roberts. “But now this is where you see a lot of the great estates are situated.” “Even if you look at a famous vineyard like To Kalon,” says Roberts, “it is roughly the same size as Clos Vougeot. We all know Clos Vougeot is a Grand Cru, but within the vineyard it has some Grand Cru quality terroir, some not so good Premier Cru quality and even some village quality terroir, all within the same delineated boundary. Well, To Kalon is the same. If you get close to the road (Highway 29), it is a totally different style of wine than if you are further back on the toe of the hill where there is deeper gravel. That to me is like the Grand Cru part of To Kalon and that part, like Screaming Eagle, is on a slope, and behaves closer to a mid-slope hillside appellation than valley floor.”  The great advantage of these mid-slope hillside appellations, according to Roberts, is not only better drainage and the natural devigouration of the rocky soils, but a different ripening cycle. Because the soils are that much drier, they warm up quicker at the beginning of the season, pushing the hillside vineyards to bud earlier and to ripen more quickly than those on the valley floor and in the mountain appellations. This helps them avoid the late season rain that can disrupt a vintage. The result, therefore, is much more consistency year to year. Roberts notes that more and more producers are realising the virtues of the Napa hillsides, with the likes of Tim Mondavi now planting on Pritchard Hill. Despite demand for these hillside plots, which have proven their potential, Roberts doesn’t expect to see the “appellation” expand much more. Regulation and restrictions from California’s Land Use Law prevents any new plantings on Napa’s hillsides, preserving key natural habitats. And that might be no bad thing, since the residential properties being developed in the region and their ornamental plantings of lavender and rosemary, Roberts argues, pose a huge fire risk for the region. California faces a tumultuous future. As aquafers dry up and fires rage around the state, California sometimes feels like a perilous place that needs protecting. Colgin know the dangers only too well. On 17th August 2020, a freak storm hit California. The state saw 10,000 lightning strikes in 24 hours. One of the two huge fires that the storm caused started directly opposite Colgin’s vineyards. “Within four hours, we were in an evacuation zone,” says Roberts. “The fire couldn’t be put out by a fire crew because it was on such a steep hillside, they couldn’t get to it. All air assets had been deployed to southern California, since that is where they thought the storm would hit.” Fortunately, vineyards act as firebreaks and Colgin’s vineyards were saved – although they didn’t make any wine in 2020 because of the smoke damage. Such a close call has Roberts and his team doing everything they can to minimise the risks. A massive amount of brush clearing, putting in fire roads as well as bringing in new technology to minimize the risks. At the top of Colgin’s vineyards, Roberts recently approved a heat camera that can sense and detect the emergence of a fire, allowing them to deploy helicopters and put fires out early, before they have a chance to spread.

While these issues have become a day-to-day concern in the region, Roberts is confident Napa is turning a page in its history. If you look beyond the headlines of high scores and wildfires, Napa’s vineyards and varied terroir are starting to find a voice – and that’s where the real story is. Your guide to Colgin’s three single vineyards: IX Estate, Tychson Hill and Cariad While Colgin’s three single vineyards all share mid-slope hillside positioning and the climatic benefits this brings, the sites produce three very different styles of Cabernet, due to their different soils and microclimates. IX Estate IX Estate is an 8.07-hectare vineyard situated on Pritchard Hill overlooking Lake Henessey at an altitude of between 1,100 and 1,400 feet. The IX Estate vineyard’s bedrock is made up of old lava flow, full of iron. The soil looks red, dotted with large volcanic boulders. According to Colgin’s COO Paul Roberts MS, the iron component gives an almost sanguine nature to the tannins. “There are lots of them, but they are very, very fine,” says Roberts. “Then there is an almost bloody note – not as much as in the Northern Rhône – not full blood – not that extreme, but more mouth-watering, not from the acidity but from the flavour/nature of the tannins.” The wines from IX Estate have a distinct red fruit profile on the palate which is a classic element of this part of Napa. The wild flora and fauna around the vineyard, to Roberts, “add an almost herb component, as close as you get to garrigue in the south of France – thyme, rosemary, wild sage.” Tychson Hill Tychson Hill is an historic vineyard site, first planted in the 19th century. The vines were pulled out during prohibition, with the site only replanted by Anne Colgin in the mid-1990s. The vineyard is north of the town of St Helena at an altitude of 300-422 feet. In total 2.42 hectares are planted to vines. The bedrock is also volcanic, but with a very different volcanic origin to IX Estate, with a mix of gravel and obsidian black stone (a black volcanic glass). According to Roberts, the wines from Tchyson Hill has less tannin than IX Estate and they are rounder, without the edges you get in IX Estate. “The tannin quality of the wine begins to emulate the shape of the stones you find in the vineyard,” says Roberts. “Tychson Hill is a much older material – so a finer quality of tannin.” The diurnal shift at Tychson Hill also has a distinct effect on the wines, with a shift of up to 9-10˚C – which provides much more aromatics and more red fruit character. “The climate can fully volatilise and metabolize tannins,” says Roberts, “so they appear much softer.” It is also, he believes, Colgin’s most approachable wine in its youth. Cariad Cariad is a steeper vineyard site, 3.2 hectares in the western hills of St Helena at an altitude of 400-500 feet. The vines are grown on what is an uplifted, old gravel riverbed. The tannins, according to Roberts, are “more spherical because of the rounded stones in the vineyard”. The fruit is more purple in character. Earlier vintages of Cariad were a Cabernet Sauvignon/Merlot blend that typically was the slowest maturing of the three, needing the longest time for the tannins to fully integrate, but today much of the Merlot has been replaced with Cabernet Franc, which Roberts believes brings a much “fleshier beauty” early on in its maturity. Wines sold en primeur will be released from the producer after bottling, typically 18 months after the so-called campaign ends. Upon arrival your wine will be stored at Vinfolio in our temperature-controlled warehouse until you decide to take delivery.
