The Reynaud wines are the stuff of legend. Utter “Rayas” to a certain crowd and they will swoon. The singular style of this iconic Châteauneuf-du-Pape estate – pale, hauntingly aromatic, almost Burgundian in texture and incredibly long-lived – has a fervent following, a clan of Reynaud obsessives keen to seek out everything that Emmanuel Reynaud touched.  The property’s rustic charm – a far cry from the grandiose buildings of many famous estates – combined with the family’s inclination to shy away from their fame, happier quietly farming their vines, has only fanned the flames. Tucked away in the northern reaches of Châteauneuf-du-Pape, Ch. Rayas and its owners are elusive – only making them more sought-after.   There is no shortage of praise for these rare and special wines – whose appeal, given the Reynaud’s minimal-intervention approach, broaches the worlds of fine and natural wine. William Kelley is a loyalist, and is one of several to note how well the property performs in “off-vintages” – where the property’s distinctive profile shines through, above and beyond the vintage and region, revealing their “captivating perfume, sensual textures and eternal youthfulness”. Robert Parker described the 1990 Rayas as “one of the greatest young red wines I have ever tasted”. For Nicolas Grainacher (Vinous), “The substance, finesse and intensity packed into these wines make it hard not to fall in love with them.” Neal Martin (Vinous) perhaps put it most concisely: “God invented wine to drink wines like this.”    The history of the Reynaud empire  In 1880, Albert Reynaud, a notary from Avignon, lost his hearing aged just 45. No longer able to work as a lawyer, he bought an estate in Châteauneuf-du-Pape, in an area called Rayas, where he saw out his days farming vines, apricots and olives. In 1910, his son Louis Reynaud took over running the estate. Louis had studied agriculture in Angers and was particularly interested in viticulture. He uprooted trees to plant new vineyards and bottled the property’s first wine in 1920 – using the name “Rayas”, the name of the forest on their parcel of land. It was the beginning of Rayas as we know it today.  Louis famously added the wording “Premier Grand Cru” to the Rayas labels, a self-pronounced classification of the wine – and notoriously defying the appellation rules (introduced in 1936). Building the property’s reputation and sales, he started expanding the business. Between 1935 and 1938 he bought Ch. des Tours in Vacqueyras, entrusting his son Bertrand with the larger 58-hectare property northeast of Châteauneuf-du-Pape, not far from the town of Orange. Around the same time, he built a new cellar and winery at Rayas, bringing the buildings within the appellation’s boundaries. After the Second World War in 1945, Louis purchased Ch. de Fonsalette, an estate further north of Orange, in Lagarde-Paréol – and, with that, the full suite of Reynaud properties was in place.  By the time Louis passed away in 1978, the Reynaud wines were some of the Rhône’s most famous.  
After his death, his youngest son Jacques took over Rayas and Fonsalette, while Bertrand continued to run Ch. des Tours. With the shift in ownership at Rayas and Fonsalette, quality dipped a little – but soon Jacques was making wines that lived up to the Reynaud name.  The old vines at Rayas, planted on sandy soils, facing north/northeast, surrounded by pine forest, produce wines of exceptional elegance and aromatic finesse, wines with haunting perfume, pale colour and almost Pinot-like delicacy, yet phenomenal persistence and ageability.   Jacques was renowned for being eccentric. A recluse, happiest in the vines and never keen to welcome visitors, he was rumoured to, on occasion, lie in a ditch to avoid journalists or other members of the trade. His aversion to the limelight surely only added to the wines’ allure. He died rather suddenly in 1997, while shoe shopping in Courthézon. Having no children of his own, his nephew Emmanuel – Bertrand’s son, who had been running Ch. des Tours since 1989 – inherited both Rayas and Fonsalette, taking the reins across all three properties.  The transition between Jacques and Emmanuel wasn’t seamless, as Emmanuel renovated the estate and replanted parts of the site, but by the early 2000s quality was once more living up to the Reynaud name. The style has shifted between generations, and while Jacques’s wines were more structured and solid, Emmanuel favoured more sensual, perfumed expressions. Over the last two decades, little has changed across the Reynaud properties – the wines’ mythical status only confirmed with each release. The new generation – Emmanuel’s sons Louis Damien and Benoît – are now continuing the family’s legacy.    The Reynaud philosophy  The approach at Reynaud is old-school – here, tradition reigns. Modern monoculture is not the method – with various crops across the estates, and biodiversity nurtured with swathes of woodland. The vines – all bush vined, many with significant age – are farmed in exactly the way as they’ve always been, organically with minimal inputs, ploughed by horse.  The fruit is all hand-harvested, whole-bunch fermented with indigenous yeast in cement tanks. Since Emmanuel took over, parcels have all been vinified separately. Macerations are gentle, generally under two weeks with a single pump-over a day. Ageing is in large, old oak, with no new wood used anywhere across the properties – indeed the youngest demi-muid or foudre at the estate may well be 30 years in age. Sulphur additions are minimal, with only a small amount at fermentation and a final addition at bottling, with the wines bottled unfined and unfiltered. The method is simplicity at its finest, focused on expressing each site – and the results speak for themselves. The wineries are rustic farm buildings, offering only the basic requirements, with no modern technology employed – and, given the wines produced, not needed.  Grenache is the core of all the Reynaud wines – the grape that thrives in their terroir and is the magic behind Rayas. Beyond Rayas, Cinsault is used to bring elegance and suppleness, while Syrah was long avoided – used only at Ch. de Fonsalette. Louis Reynaud believed the variety belonged in the Northern Rhône, and other than the small portion that made it into the Côtes du Rhône, the rest of the Syrah was sold off in bulk under his reign (often to local restaurants, who used it in their sauces). The Côtes du Rhône Syrah cuvée only introduced under Jacques Reynaud’s tenure, at first sold to the restaurants who had seen its quality in their sauces. There is no Mourvèdre at any of the estates, as Emmanuel Reynaud believed that their soils are too dry for the grape.  The Reynaud wines and estates  The Reynaud family comprises three distinct estates – Rayas, Fonsalette and Ch. des Tours, although Fonsalette doesn’t have its own winery.   Ch. Rayas  Rayas is the original Reynaud estate, purchased in 1880, and takes its name from the climat. In the northern reaches of Châteauneuf-du-Pape lie the 12 hectares of vines, surrounded by 11 hectares of forest. Forget the region’s stereotypical galets roulés or pudding stones, known for their ability to hold heat, Rayas sits on red, iron-rich, sandy soils, over richer clay. The soils are poor and the bush vines planted at low density, with a mere 2,500 vines per hectare – yielding just 10 to 20hl/ha. Significant replanting took place in the 1980s, meaning the vines now average 40 years in age, although there are still some survivors from the 1940s.  The site’s northern exposition combines with the influence of the wooded areas, offering shade and humidity, making for an extended growing season and preserving freshness in the wines. The Reynauds are among the last to harvest, often only picking in October/November, as much as two months after their neighbours. The resulting wines, however, do not speak of intense ripeness – but are all about elegance and finesse.  While Châteauneuf permits 13 red varieties, at Rayas you’ll find only Grenache Noir, with two hectares dedicated to white grapes – Grenache Blanc and Clairette. The Grenache vineyards can be divided into three section: Le Levant, Le Coeur and Le Couchant, each taking its name from its exposure to the sun – respectively as it rises, at its peak and as it sets. Writing for The World of Fine Wine, William Kelley describes the three components of the vineyard thus: “Le Levant is the most floral and ethereal, contributing the wine’s spine; Le Coeur is the most complete, contributing Rayas’s skeleton; and Le Couchant, with its richer, more compote-like fruit tones, brings the fat.”  The fruit is all hand-picked. The Grenache is kept on its stems, the whole bunches crushed before a gentle maceration for maximum two weeks (one pumpover a day) and indigenous-yeast fermentation. The wine is pressed off and aged in old foudre for a little under two years.  The delicacy and finesse of the resulting wine is reminiscent of top Burgundy. Pale in colour, Rayas is deeply aromatic, with haunting floral notes and an ethereal, silken texture that balances the wine’s earthy, savoury intensity. Between 1,200 and 1,500 cases of the flagship Châteauneuf-du-Pape are produced each year. The wines age beautifully and Emmanuel himself recommended waiting 20-25 years before opening a bottle of Rayas to fully experience its evolution.  The white grapes are planted across three parcels in Le Levant, comprising two hectares. The Grenache Blanc was planted in the 1940s, ’50s and ’95, with the Clairette planted in 1986. Fermented in old (80 to 100 years old) foudre, purchased second-hand by Louis Reynaud (Emmanuel’s grandfather), Rayas Blanc is a 50:50 blend of Grenache Blanc and Clairette, aged in old oak for around 11 months. The wine is made in extremely limited volumes, with only 400 or so cases produced each vintage. Rich yet poised, this rare white is immensely fragrant with notes of almond and white flowers, intensely mineral and textured, and can age for at least a decade.  Pignan is sometimes considered a “second wine” at Rayas, but it in fact comes from it own, specific site on the estate, a single two-hectare block surrounded by pine trees on the northern edge of the property with less sandy soils. Also pure Grenache, made in exactly the same way at Rayas, it offers a more immediate and approachable expression of the Rayas style, yet similar perfume, purity and structure – and is still capable of extended ageing. It can, on occasion – and especially in cooler vintages, rival its older sibling, Rayas. Around 650 cases are produced each year.  The Rayas wines are all only released when entering their drinking window, with the reds often only emerging from the estate over a decade after the harvest.  Ch. de Fonsalette  The “latest” addition to the Reynaud galaxy, Ch. de Fonsalette was purchased by Louis Reynaud in 1945. The property is large, covering 120 hectares in total, but with 12 hectares of vines in amongst woodland, farmland and olive groves, north of Orange in Lagarde-Paréol. Today it sits largely within the Côtes du Rhône Villages Massif d’Uchaux appellation (established in 2005), however the wines are all labelled just as Côtes du Rhône. Further north, the microclimate is cooler than at Rayas, and stylistically the wines are more restrained than those of Ch. des Tours, for example, but not as ethereal as those of Rayas.  The soils here are very different to those at Rayas with gravel, sand and red pudding stones. The vineyards are planted to Grenache, Cinsault and Syrah for red grapes, and Grenache Blanc, Clairette and Marsanne for whites. The vines are generally old, with the oldest planted in 1929.  The philosophy in the vineyard and winery is exactly the same as at Rayas – and, as the property doesn’t have a winery of its own, the wines are even made at Rayas. The reds are whole-bunch fermented, with a maximum two-week maceration and one pump-over a day. The wines are aged in a combination of enamel-lined tanks and large, old oak, bottled around a year or so later.   There are three wines in the range at Ch. de Fonsalette. The Côtes du Rhône Rouge is a blend of 50% Grenache, 35% Cinsault and 15% Syrah, the notably high percentage of Cinsault giving the wine particular lift and aromatic finesse – a wine that whispers and draws you in. There is a second red, a Côtes du Rhône Syrah which is 100% Syrah – a structured, dark-fruited wine that offers restrained power and quiet depth. Under Louis Reynaud, this was sold off in bulk, only first bottled under Jacques Reynaud (from 1978) and sold locally, largely to restaurants, before being offered more widely under Emmanuel. The Côtes du Rhône Blanc is a blend of 80% Grenache Blanc, 10% Clairette and 10% Marsanne, producing a textural and complex white with notes of stone fruit and herbs, and a saline undertow.  La Pialade  This wine is a slight anomaly in the Reynaud line-up. Only made in certain vintages, La Pialade Côtes du Rhône is vinified and aged at Rayas, made with declassified parcels from either Rayas or Ch. de Fonsalette. The blend is typically 85% Grenache, 15% Cinsault and 5% Syrah. Produced in tiny volumes, and even rarer given it isn’t made every year, it is often described as an “everyday Rayas” – more open in style, but can match Rayas for its subtlety and delicacy, even if it does not have the same depth.  Ch. des Tours   Purchased by Louis Reynaud in the late 1930s, Ch. des Tours was Emmanuel Reynaud’s home estate – having taken over running the property from his father Bertrand in 1989. As it was entrusted to Bertrand from the beginning, and never managed by Jacques Reynaud, the estate has always stood apart from Ch. Rayas and Ch. de Fonsalette – however all three have fallen under Emmanuel since 1997. Benoît – Emmanuel’s son, who studied oenology in Switzerland – has recently taken the lead at Ch. des Tours, having worked closely alongside his father.  The property gets its name from the towers or tours that frame the château building. Located in Vacqueyras, not far from Orange and northeast of Châteauneuf, it covers 40 hectares, with grains and olives as well as grapes. As it was long run separately, the property has its own winery.  Although the Reynaud philosophy runs through all three estates, the wines at Ch. des Tours are stylistically distinctive, offering more structure, muscle and intensity versus the more subtle, high-toned, perfumed style of Rayas and Fonsalette. The winemaking is largely similar to at Rayas and Fonsalette, with fermentation is concrete and maturation in old oak. Although the red grapes are mostly whole-bunch fermented, this is the only property where small portions are destemmed. The range is more complex at Ch. des Tours with a selection of wines bottled under Ch. des Tours, some under Domaine des Tours and a rosé made under the Parisy label.  There are five wines under the Ch. des Tours label:  Vacqueyras: A blend of 80% Grenache and 20% Syrah, this is a structured and powerful wine made exclusively from the oldest vines on the estate.  Côtes du Rhône Rouge: A blend of 65% Grenache, 20% Syrah and 15% Cinsault, this is a supple, juicy red packed with fruit and spice.   Côtes du Rhône Rouge Grande Réserve: Only made in specific vintages, this is effectively the Vacqueyras declassified when there isn’t sufficient colour – made in 2002, 2014 and 2015.  Côtes du Rhône Blanc: Made in very limited volumes, this white is 100% Grenache Blanc – a floral, textural wine that is worth seeking out.  Côtes du Rhône Blanc Grande Réserve: Only made in certain vintages, this is not a declassified bottling (like its red sibling), but a special bottling of the property’s best Clairette and Grenache Blanc. The 50% Grenache Blanc, 50% Clairette wine was produced in 2003, 2014 and 2015.  The Domaine des Tours label is all sourced from Ch. des Tours however is a slightly separate project, generally offering more accessible wines, almost all labelled as IGP or Vin de Pays. There are four wines under the label:  Vin de Pays de Vaucluse Rouge: This is a deeply expressive field blend of Grenache, Counoise, Syrah, Cinsault, Merlot and a host of other varieties.  Vin de Pays de Vaucluse Merlot: This 100% Merlot comes from the richest, clay soils on the property, producing amore opulent and exuberant wine.  Vin de Pays de Vaucluse Merlot-Syrah: A blend of Merlot and Syrah, which shifts according to the vintage, is a concentrated wine that combines the generosity of Merlot with the spice of Syrah.  Vin de Pays de Vaucluse Clairette: This 100% Clairette is pure and fresh, driven by minerality.  Under its own label is Les Tours Grenache Blanc – a rich, ripe and generous 100% Grenache Blanc full of stone fruit, bottled under the Vaucluse appellation. The last wine from Ch. des Tours is the Parisy rosé, a dry, delicate Grenache/Cinsault Vin de Table designed for everyday drinking. The labels themselves don’t detail the vintage, with this information only visible on the cardboard case.  Which Reynaud wines are made where? Ch. Everything you need to know about Rayas

Domaine de Montille is one of the most historic estates in the Cote d’Or, founded in 1730 and family-run and owned ever since. Today Etienne de Montille is the ninth generation at the helm.  The De Montille story through the ages is a familiar one in Burgundy in which for a long period there was a dwindling of holdings as more and more of their prized vineyards were agonisingly sold off to make ends meet during the lean years of the early twentieth century. Etienne’s father, Hubert de Montille took over the estate in 1947, aged just 17, by this time the domaine had just 2.5 hectares to its name. Etienne’s father knew that he had to change tack if the domaine was to survive and worked both as a vigneron and a lawyer to finance returning the estate to its former glory. Like his father, Etienne used his earnings as a lawyer to build up the domaine’s acreage, including a novel acquisition approach that in 2005 saw him acquire one of the region's finest Premier Cru sites - Vosne-Romanee Premier Cru Les Malconsorts – neighbouring the Grand Cru of La Tache.  The estate now produces over 35 cuvées from appellations throughout the Cote d’Or. Etienne talks us through the De Montille’s bumpy history, its extensive vineyard acquisition in recent years, how he learnt to make white wine from his brother-in-law (who just so happened to be Jean-Marc Roulot), as well as mapping out the different flavour profiles of his favourite sites at the heart of the domaine in Volnay and neighbouring Pommard. 
The history of the domaine 
Based in Volnay, the De Montille estate has had its fair share of ups and down. It once had one of the finest portfolios of vineyards anywhere in the Cote d’Or (including Bonnes Mares, Musigny and Amoureuses), before these famed sites were sold off to make ends meet. Hubert de Montille on taking over the estate in 1947, brought renewed fame to the domaine, being one of the first in Burgundy to domaine bottle his wines and whose Volnay 1er crus quickly became some of the finest in the appellation. At this time, 90% of all Burgundy was made and bottled by the large négociant houses.  
Whilst historic estates such as Domaine de la Romanee Conti, Georges Roumier and Armand Rousseau were bottling their own wines, it was the Marquis d’Angerville of Volnay that no doubt set a trend in the Cote de Beaune by bottling his own wine, starting in the 1930s. Marquis d’Angerville chastised the exploitation of the main negociants at the time, who in response refused to bottle his wines, forcing him to bottle them himself.  As Etienne explains the Marquis d’Angerville was an important figure in Burgundy at the time, not only setting the trend of domaine bottling in the region but also becoming one of the main instigators behind developing the AOC framework of the Cote d’Or, mapping the official boundaries of the Grand Cru and Premier Cru sites, a process that began in 1935. 
The distinct influence of Hubert de Montille 
The De Montille estate became famed for Hubert’s single-minded approach of making wines how he wanted them, austere and built for long ageing, making them fairly unapproachable in their youth. He was also known for his minimal chapitalisation, a method which he discovered accidentally by miscalculating his sugar levels on one of his cuvees in the 1959 vintage. It was only a couple of years later that he discovered how much better this cuvee aged than his other wines of the 1959 vintage and therefore adopted this approach going forward.  
Whilst, as Etienne explains, chapitalisation (the addition of sugar to the grape juice prior to fermentation to increase alcohol levels) in top estates in the modern era is very rarely adopted, it certainly didn’t harm the estate’s reputation when critics in the '90s started to raise concerns over over-chapitalisation as a worrying trend in the region.  Whilst over-chapitalisaton is rare today, the process is still adopted in the wineries when necessary. Very rarely spoken about amongst vignerons, Etienne describes it as similar to the seasoning of food. Certain cuvees in certain vineyards may benefit from a light chapitalisation or even acidification if required; two processes that remain contentious outside of Burgundy. With De Montille famed for low chapitalisation and long ageing wines, the domaine's reputation continued to grow. 
Etienne takes on the domaine 
On taking over the domaine in 1998 (following a staggering 50-year stint by his father), Etienne de Montille was an early advocate of organic farming. He continued to grow the estate, incorporating more Chardonnay vineyards to what was previously exclusively a Pinot- Noir producing domaine. Their first white wine vineyard purchase was the 1er Cru Puligny Montrachet Le Caillerat bought by Hubert in 1993. Etienne learnt how to make white wine under the guidance of his brother-in-law, who just so happened to be Jean-Marc Roulot and only helped see the domaine’s reputation grow.  Etienne recounts how Jean-Marc Roulot had a similar route to winemaking in that they both had successful careers outside of wine before returning to their family estates. Jean Marc Roulot is an actor, and was based in Paris at the same time Etienne was working as a lawyer there. Having both a separate career and being a vigneron, Etienne believes, made them both very open-minded in their second profession as winemakers and Jean-Marc Roulot was happy to share his knowledge in white wine production as well as them both being more innovative with their methods.  
Having two professions was a tradition passed down from one generation to the next of the de Montille family, with one of the siblings always working in legal services either as judges or lawyers. Etienne explains how it was in fact Hubert de Montille’s work as a lawyer looking after the estates of Monsieur Chatron that led to the acquisition of De Montille’s first chardonnay vineyard – Puligny Montrachet 1er Cru Le Caillerets – one of the finest sites in Puligny neighbouring the Grand Cru of Montrachet.  
Hubert worked as his lawyer advising him on how to pay off his inheritance fees in order to pass down the estate to the next generation. To do this he had to sell off some vines and offered Hubert to buy the Le Cailleret vineyard in Puligny to thank him for his services. Although not an experienced white winemaker, with Jean Roulot recently marrying his daughter, it seemed to be the perfect opportunity to get him on board and teach the young Etienne his white wine philosophy. 
A novel acquisition approach  
Etienne’s experience as a lawyer gave him the confidence to incorporate a novel approach to acquiring vineyards in the Cote d’Or at a time when vineyard acquisition was and remains a contentious issue for vignerons in the region. It led to Etienne successfully buying up vineyards including one of the Cote d’Or’s greatest sites: Vosne Romanee 1er Cru Malconsorts, neighbouring the Grand Cru of La Tache. Etienne explains that although his father had successfully taken his 2.5 hectares estate to 10 hectares over a 50-year period, the land prices of Burgundy were becoming too expensive for this to continue.  With the Malconsorts vineyard along with the vineyards of the Thomas Moillard domaine put up for sale, Etienne thought the opportunity was too good to miss and approached the Seysses family (Domaine Dujac) to see if they would be interested in setting up a land company, buying the land together and using minority shareholders to finance the acquisition.  
These minority shareholders would then rent out their share of the land to the two estates and were often paid back in wine. Back then, Etienne states, it was the first time ever in Burgundy that two smaller family estates had bought a larger property. Etienne pioneered the legal structure to favour the vignerons with the controlling share and it became a popular method that was copied all over Burgundy by other vignerons following their success. Etienne states “this is unlikely to happen again, land in Burgundy between now and 2005 has gone up by almost 12 times the value”.  Despite this, Etienne successfully managed another huge acquisition following the financial crash of 2008 when he purchased Domaine de Puligny Montrachet. This estate was a property he had managed ever since he returned back to Burgundy from Paris in 2001. At that time it was owned by a bank and following financial pressures of the economic crash in 2008, viewed the estate as a non-performing asset and therefore put it up for sale. Due to Etienne’s connection, he was given first refusal.  Since taking over the property in 2009 an EU law that came into practice in 2017 banned the use of an appellation name to be part of a domaine name, so since 2017, the wines under the original Chateau de Puligny Montrachet have been incorporated into the De Montille domaine, increasing their holdings to a total of 37 hectares (20 in red; 17 in white) in 35 separate appellations. 
Etienne de Montille's winemaking philosophy 
But Etienne’s skills are not only in acquisition. He was an early advocate of organic farming, practising organic principles from 2003. He also changed the style of the De Montille wines making them less austere than his father’s with his influence coming through the wines from the 1998 vintage onwards. Etienne incorporates whole bunch fermentation but varies the quantity depending on the specific terroirs.  
Identifying the nuance of each site and how much whole cluster to use is the key to his red winemaking, ranging from 20% to 100% whole bunch depending on the site. He carries out no cold soak prior to fermentation which takes place at ambient temperatures with low-level extraction, punch downs are carried out only when necessary. All wine is aged in barrel between 5% to 60% new oak depending on the site and vintage conditions, followed by a long élevage prior to bottling. The approach to white wines, under the influence of Jean-Marc Roulot’s teachings, is to be very conscious of preserving the acidic backbone of the wine providing a precise length and expression of terroir. The wine is barrel fermented followed by long élevage (12 months in barrel) and aged further on the lees in tank - 2 to 6 months with one racking. The percentage of new oak again varies depending on the specific plots, ranging from 5% to 50% new oak barrel. 
Mapping Volnay and Pommard’s Premier Crus  
Etienne states that all the top Volnay Premier Cru sites are on the middle slopes of the appellation. Whilst slightly varying in topography and exposition, Etienne believes the flavour profiles of each of the vineyards is 80% to do with the geology and topsoil of the specific vineyard, with the winemaking of each producer, the vintage variation and the exposition of the vineyards combined making up the remaining 20%.  This highlights the overwhelming terroir influence of these Premier Crus.  Volnay 1er Cru Brouillards  "This is the most accessible of our Premier Crus and what is best described as 'very Volnay'. It has all the characteristics most closely associated with the appellation – pretty red fruit, very juicy, elegant light tannins and very approachable." Volnay 1er Cru Champans "The Champans is similar to Brouillard in its fruitiness and approachability, although the tannins are firmer and slightly more structured.  "But it is a very expressive and immediate, open-style Volnay. We use two-thirds whole cluster in this cuvee."  Volnay 1er Cru Mitans  "The Mitans is the most perfumed and fragrant of the Premier Crus in Volnay. And whilst the Champans is also very expressive, the aromas of Mitans are more serious, not just fruit but mineral too. Here we use 100% whole cluster fermentation." Volnay 1er Cru Taille Pieds "This is the flagship cuvee of our estate. It is the most mineral-driven wine in Volnay. Very spicy, very stony and lots of saline character. The wine has huge depth and a very long finish.  "It is however the least open and the less approachable requiring time in bottle to develop. Even at 40 – 60 years old the wine shows beautiful combination of rose petal, earth, morrel mushroom and truffle character. The wine has so many facets to it."  Pommard 1er Cru Rugiens Bas  "This wine is a planet on its own. It has the elegance and finesse of top Volnay site but with the depth and breadth and structure more akin to top Pommard vineyards. It is Grand Cru quality and the top site in Pommard."  Pommard 1er Cu Grands Epenots "The most classic Pommard in style. Deep clay soils give the wine huge structure, sometimes can be a bit rustic to start with. Tannic, big, powerful wine." 
Pommard 1er Cru Pezerolles "This is the most Volnay-like Pommard 1er cru in the appellation despite being the furthest site away from Volnay. It is the most elegant Premier Cru of Pommard."  Nuits Saints Georges 1er Cru Aux Thorey  Etienne describes how this single vineyard site was bought in the acquisition of the Thomas Moillard domaine, along with the Malconsorts vineyard. When identifying which vineyards to buy in the sharing of the estate Etienne heard that Sylvain Cathiard considered the Aux Thorey vineyard to be amongst the best terroirs in Nuits St Georges and that was enough to persuade him of its potential. The site is certainly more Vosne in profile than Nuits Saint Georges, with fine tannins, elegant structure and beautiful perfumes similar to the vineyards of the much admired La Damodes.

In 1991, Jean-Luc Thunevin made the first vintage of Valandraud. In the workshop next to his house, he produced just 100 cases of wine from tiny yields, de-stemming and punching it down by hand and ageing it in 100% new French oak. Although it didn’t have a name yet, the garagiste movement had been born.  As the Super Tuscans had in Italy, these maverick bottlings, operating outside the official classification, rocked the world of wine – especially in the conservative heartland of Bordeaux. At the same time, the likes of Harlan and Colgin were starting to prove the power of Cabernet Sauvignon in Napa. Meanwhile on the East Coast, a lawyer called Robert Parker had already gathered a loyal following for his newsletter, offering independent advice and a novel scoring system. The internet was just getting started. Everything in the world of wine was changing.  “In the 1990s there was formidable energy and consumers who were ready to accept something new,” says Thunevin. But the Bordeaux wine trade was stuck in the Middle Ages, he says; it was aristocratic, closed – and one reason why the garagistes, a collection of outsiders, caused quite such a stir. Thunevin himself had been in banking, while Jonathan Maltus (Le Dôme) was a British businessman and Stephan von Neipperg (La Mondotte) a German interloper. With the challenging conditions of 1991, the first vintage of Valandraud had little impact. He made a tiny volume of red, and then a rosé de saignée that he gave away to friends. “L’histoire, c’est ’92,” Thunevin tells me, almost whimsically. The wine, a product of much more favourable growing conditions, put him on the map. “I created a revolution,” he says today. The 1991 Valandraud was released to négociants for 13€; the 2022 came out at 118€.  It was Michel Bettane who coined the term “vin de garage”, sneeringly suggesting that these new-fangled wines could be made in someone’s garage. But, as Jean-Luc Thunevin told me, “By talking about me, they made me exist.” Without such outrage from wine’s more traditional core, the garagistes likely wouldn’t have had the same success. Combine Bettane’s throwaway comment with the rise of garage music in the US and UK, and the movement gained an accidental cool-factor – but that’s all changed now.  “I don’t think anybody wants to admit they were a garagiste anymore,” Jonathan Maltus – the Englishman who created Le Dôme in 1996 – says. He looks back on the time with relative fondness, however. He’d arrived in Bordeaux in 1994, buying Ch. Teyssier, having sold his petrochemical business and decided after a stint in Cahors that he needed to be in the “Formula One” of wine, making for Bordeaux. It was an English wine merchant who told him how a single-vineyard Pomerol called Le Pin was causing a stir – one of a handful of “cuvée wines” that were becoming incredibly popular. As a canny businessman, he decided to give it a go himself.  “It was really exciting – and there was no budget,” Maltus says frankly, explaining how the movement rapidly became a game of one-upmanship. They would instantly snap up any new machinery or equipment, pushing their concepts further and further to out-do each other. Green-harvesting and picking only the ripest berries in multiple passes was de rigueur; the vines often stripped of their leaves to expose the fruit to the sunshine and maximise ripeness (something climate change has put paid to). Yields were consistently low, with over 30hl/ha considered too much to produce the requisite concentration. Maltus explains how the introduction of double-sorting and cold-soaking was radical – both expensive tools, with the latter requiring protective gas and the ability to chill tanks. He would put the wine into one set of new French oak barrels for malolactic fermentation, before transferring the wine to another batch of new oak for ageing. The resulting wines were bold, rich and lavish. “I like to think of it as a kind of Vivienne Westwood period,” Maltus says.  Ask any of the garagistes who inspired them and they’ll point to, among others, Le Pin. Although owner Jacques Thienpont firmly believes Le Pin is not – and never was – a garage wine; he feels that it is sometimes mistakenly seen as one because it was so successful at the time. Ironically, the wine was originally made in a garage, from just one hectare of vines. It was the sensuality of the wine that inspired Jean-Luc Thunevin, he tells me. He visited Le Pin several times and Thienpont told him that wine was all about the quality of the soil, rather than winemaking. “In the cellar, there are no secrets,” Thienpont says. Thienpont wasn’t Thunevin’s only advisor; Alain Vauthier of Ausone happened to be a school friend, and helped the amateur winemaker.  This tension between terroir and technique is at the heart of the garagiste movement. Jean-Luc Thunevin tells me how Valandraud was not a garage wine, but a “garden wine” – from 300 vines he planted on 0.6 hectares, a single site captured in 300 bottles. For Stephan von Neipperg, who made the first vintage of La Mondotte in 1996, from 4.5 hectares, “It’s a terroir… without an outstanding terroir, you cannot make an outstanding wine.” The garagistes, in his mind, by contrast were about “making the wine easier to understand – round, ripe, sometimes too ripe, extracted” – it’s a term he assigns to the likes of Ch. Gracia – first made in 1997, in a back-alley of Saint-Emilion.  Whether you are convinced these wines were true expressions of site or not, they were a direct contrast to the Médoc Classed Growths – where vast swathes of land were used to create a blend each year. Was it a reaction to the Left Bank’s dependence on blending, maybe even a complacency? Perhaps, but it was also a consequence of what each of them could afford; none of them, at first, had the cash to buy any more land. Thunevin’s methodology, for example, wasn’t idealistic; he had to do everything by hand because he didn’t have a tractor or any other equipment, splurging on new barrels alone, and turning a profit for the first time only in 1995.  It’s hard to untangle the movement from Parker’s influence – but few of the early renditions earned the big scores one expects and associates with these vins de garage. Le Dôme, for example, only earned 100 points in 2010 – long after Maltus had started reining in the style, La Mondotte in 2009. Although 1992 Valandraud kickstarted the movement, Parker only gave it 87-88 points when he first rated it in February 1994. Time blurs lines, inevitably – and, although it’s undeniable that Parker’s palate aligned with plush, polished styles, the truth around his influence is more complicated.   “We realised that the whole thing was just becoming a parody of itself,” Maltus says. He points to 2002 a real turning point, but it was only from 2008 that he stopped double oaking, reduced the proportion of new oak to 80%, and more recently started picking earlier. It’s the same across the spectrum, with many of these rebel estates now part of the formal classification system – absorbed into the establishment.  The instigator Jean-Luc Thunevin was branded Bordeaux’s “bad boy” for having challenged the status quo. It’s a reputation that he worked hard to keep – continually pushing forward (indeed, he even makes wine under the Bad Boy name today). Asking what prompted him to create Valandraud – and make it so differently, he says, “I have always been out of my mind. I always wanted to do things that were a bit shocking.”  Today, Bordeaux has more competitors than ever before, with a world of fine wine that is now truly global. Thunevin feels it’s a region in crisis – in need of another bad boy to take the baton. He was an outsider with nothing but a romantic dream of making wine. Whether you like what he did or not, he changed Bordeaux for good. “Les rêves sont nécessaires à notre équilibre,” he tells me – dreams are essential for our balance. The state of Indiana is probably best known as the home of the 200-lap motor race, the Indy 500, but it is little known that it is home to America’s first commercial winemakers: a group of French-speaking Swiss settlers, who made their way from the Vaud to the not-yet-a-state of
Indiana in the late 18th century.  Unfortunately, the past two centuries has been unkind to the wine ambitions of the early settlers despite being home to vast swathes of vine-loving limestone; instead, the Hoosier state is more interested in corn and soybeans than grapes and it was in this rural farming environment that a young Jeb Dunnuck grew up, far from the burgeoning winelands of the western seaboard.  Raised in a non-wine drinking family, his late start in wine was clearly no handicap: in 2013, the world’s most important wine critic hired him. “I knew I’d found a younger version of myself,” wrote Robert Parker at the time. Parker had been a lawyer that turned his hand to writing wine reviews in the late 1970s. Dunnuck was a baby when The Wine Advocate was first published but in a similar vein to Parker, he had another career before wine paid the mortgage.  An aerospace engineer by training, he caught the wine bug while working for the listed security and aerospace firm Lockheed Martin in upstate New York. He was – and remains – an outdoorsy type and at weekends he would drive three hours to go rock climbing; en-route he stumbled across a wine store, which led to the start of another hobby and a new career. “I would always stop at this tiny, eclectic wine shop that had a great selection of Bordeaux. I think that was where I probably bought my first bottle of wine, “he says. “My wife Traci was a teacher, and we didn’t make much money at the time, but I still remember hiding $20 to $30 a week so I could buy a different bottle every Friday. Some of the first wines I purchased in any quantity were 1990 and 1996 Bordeaux.” Now firmly ensconced in Boulder, which is to mountain bikers what Bordeaux is to wine lovers, Dunnuck recounts how he went from being an aerospace engineer saving up to buy a single bottle of wine at the weekend to respected wine critic. “In 2008, I created the TheRhoneReport website and started writing professionally about wine. I was lucky that I knew web programming, so I designed an online database and built the original site over a weekend. I still use the same database today,” he says. “I would work during the day at Ball Aerospace, then write for The Rhone Report from about 8pm to 2am every night. I did that for five years.” His work ethic and output clearly impressed: in 2013 an email appeared in his inbox from Robert Parker, asking Dunnuck to work for him and you don’t say no to Parker.  
The Parker Years The remit at The Wine Advocate included California, Washington and southern France, including the Rhône, and his lively tasting notes made a refreshing change. “It’s funny you say that, as I truly can’t stand flowery prose,” says Dunnuck.  “I approach the job with an engineering viewpoint as opposed to that of a writer; I’m here to solve problems and the purpose of JebDunnuck.com is to help subscribers find wines they like. You do that by tasting as broadly as possible, writing straightforward vintage reports, and doing your best to
describe and give candid opinions on the quality of the wines. That is the goal”.  But in 2017, just four years later, Dunnuck handed in his notice and went solo. “I loved working at The Wine Advocate, particularly in the early years, when Parker was heavily involved. However, I disagreed with the direction of the company and management, and thought it wasn’t a good fit for me as time went on,” he explains. Within months of
handing in his resignation, JebDunnuck.com was launched.  He retains the principles of an Advocate reviewer, basing his business on a subscription model and paying his way rather
than relying on wine associations or producer groups to fund his trips. 
Dunnuck Drinks 
While he might be known for his love of all things Rhône-related, he has now included Bordeaux into his roster of regions and publishes major reports, which include reviews of up to 1000 wines at a time, as well as smaller articles on other regions and individual producers.  But what we all want to know is what’s in his personal cellar? “I’m a Francophile so my cellar is mostly Rhône and Bordeaux,” he says, revealing he’s just bought a case each of the 2017 Janasse Châteauneuf-du-Pape Cuvée Vieilles Vignes, 2016 Château Sansonnet from Saint-Émilion, and the 2017 Domaine du Pegau Châteauneuf-du-Pape Cuvée Réservée, “but I drink plenty of wines from California’s Central Coast, Sonoma, Napa Valley, Washington, Italy and Spain.” What Rhône vintages should FINE+RARE’s clients be opening? In the Syrah-dominant 
northern Rhône, the wines of the noughties are all ready to be opened. “For lovers of young wines or those with little patience, 2014 is an early drinking, moderately concentrated vintage that has lots of upfront charm. I think one of the greatest vintages ever for the Northern Rhône, the 2015s are massive and structured wines that will reward bottle age. However, Crozes-Hermitage, some Saint-Joseph, and some Cornas are approachable today. Meanwhile, the 2016s are classic, elegant wines that will have early appeal as well yet also age
gracefully.” Vintage-wise, it’s not such a different story in the southern Rhône, home to the appellations of Châteauneuf-du-Pape, Gigondas and more. If the label states 2009 or earlier, the drinking window has opened up and you should start enjoying; yes, you can open your 2010s but
there’s no rush. “Looking at younger vintages, the 2015s and 2016s should probably be held for a few more years, although there are plenty of 2016s drinking nicely, albeit in a youthful sense. 2016 is a great, great vintage for the southern Rhône, and the top wines are going to reward bottle age.” Dunnuck’s vintage is 1975. He’s clearly entered his working window in the past 10 years but will continue to hold and potentially improve for another 20 to 30 years. Based on the history of his home state’s wine scene, it’s clear he is already one of Indiana’s finest wine

Bordeaux 2019 En Primeur As the 2019s from Bordeaux begin to release, Dunnuck gives his picks for lesser known producers in the region. Looking in Bordeaux on the Right Bank and stepping outside the well-known names, some gems would be Château Badette, Château Sansonnet, Tour Saint-Christophe, Quinault l’Enclos, Château Barde-Haut, Château Ripeau, La Dominique, Clos Saint Julien, and Clos de Sarpe, among others. I absolutely love Jeremy Chasseuil’s Pomerol from Château Feytit-Clinet, and Château Laroque, under David Suire, has taken off as well.  On the Left Bank, some estates on the uptick would be Chateau Pédesclaux, Château Gloria, and Château Saint-Pierre in Saint Julien. I think Château Rauzan-Ségla is making their best wines ever while Château Labégorce and Marquis d’Alesme Becker, both under the helm of
Marjolaine de Coninck, are making brilliant wines today. Some other hidden gems would by Château Charmail, Clos Manou, Château Le Coteau in the Arsac region of Margaux, and Château Marojallia, just to name a few. While the US consumer doesn’t like second wines, given the incredible selection being made by the top estates, I’d wager the second wines today rival the grands vins of the past. The ship might have sailed already, but people should jump on the wines of Les Carmes Haut-Brion. Guillaume Pouthier is doing an incredible job there and is making world-class wines. I also think the dry whites from Olivier Bernard’s Clos des Lunes, which are based on Sémillon from old vines in Sauternes, don’t get the recognition they deserve. Last year Alessandro Mori completed his 47th vintage at Il Marroneto in Montalcino. Now aged 60, Il Marroneto has been his life’s work. Despite the challenges, his passion for winemaking has never wavered and when he speaks about the estate and its wines today, he sounds as giddy as the boy who first arrived at the winery, aged just 14. He discovered Il Marroneto in 1975. At that time, it was just a farm on the northern slopes of Montalcino, with a few vines growing alongside olive trees and a small orchard. His father was so taken by the view – stretching out 60km across the valley floor towards Siena, his hometown – he bought the property the next day. The entire family – a young Mori, his brother and their parents – would spend their weekends tending the vineyard, which they planted on arrival. Initially just half a hectare, this site would become Madonna delle Grazie – Brunello’s most lauded vineyard today. Those first few years working alongside his family were some of Mori’s happiest days – and would shape the rest of his life. Il Marroneto remained a family hobby, and when he finished school, Mori became a lawyer. It was only in 1994, aged 33, that he decided life behind a desk wasn’t for him. “I had to express myself,” says Mori, “so I decided to continue to live the life I started with my parents and my brother.” He moved to Montalcino with his wife and new-born baby, living and sleeping in one room. At the time, Il Marroneto was only producing 3,300 bottles a year. It was all very financially tight at the beginning. “It became a big problem for me,” admits Mori. “I only slept two to three hours a night, kept awake thinking how could I make this work? I was full of worry, but also I was happy because I loved my work. I really loved my work.” Mori explains how this lifestyle change brought him a welcome sense of freedom. “There is soul in what I do every day,” he says. “There is a soul to the region too. This work gives me freedom, freedom from all the everyday life lived today. The order you have to follow. I am free from this in my mind.” But Mori’s passion is more than just the freedom it has given him. He’s always felt the work he was doing, the wine he was producing, was something important. He was carrying on a tradition that stretches back thousands of years and that brought a sense of purpose and responsibility. After all these years Mori remains amazingly humble considering his success. If you have ever read an interview with Mori or had the pleasure of visiting him, he never fails to mention his debt to his teachers. These two wise men – the late Mario Cortevesio and Giulio Gambelli – are legends in winemaking circles, and they taught Mori everything he needed to know to make great Sangiovese. Mori was fortunate to have such mentors – especially when most were looking outside the region for expertise. As Brunello di Montalcino gained recognition, investment flooded the region. There were fewer than 50 wineries when Mori first arrived, but now there are 250. “The first thing these people do is look for a doctor in oenology and agronomy – to plant the vineyard and build the cellar,” says a bemused Mori.  New arrivals, looking to make their mark, rarely speak to people who have grown grapes in the region for decades, instead hiring outsiders – many of whom have never even been to Tuscany. “Now these people are using concrete eggs, amphora and oak from Austria,” he laughs, “but no one goes to the old people that live here and asks them, what is the way of our forefathers?” But that is exactly what his father did – looking to the village elders. In return they got the eyes and ears of first Cortevesio and then Gambelli. Coretvesio and Gambelli had an extraordinary influence on winemaking in Tuscany. “They were like two brothers,” says Mori. “Born in the same year, they studied together, they worked their whole lives together and they died within two months of each other.” They would split their time between Chianti and Montalcino. For Mori, they were his most important teachers when it came to making Sangiovese. Despite Cortevesio largely focusing on the Chianti region, for the first seven years at Il Marroneto it was Cortevesio who was their consultant (due to a friendship with Mori’s father). Mori remembers that when he was just 14, Cortevesio used to visit the farm and share his wisdom with him and his brother. “To make good wine, you need respect,” Cortevesio would say. “Respect, respect, respect – everywhere there must be respect! Respect the animals, the plants, the place, the people. You are starting to grow a grape that took more than 3,000 years to become perfect in this area, so you respect the grape!” Cortevesio was adamant it was the wonders of Sangiovese that lay behind the region’s great artists (“the real important guys that passed before us,” says Mori); Sangiovese had fuelled Da Vinci to paint La Giaconda (the Mona Lisa), Boccaccio to write Decamerone and Giotto to design the Campanile – the iconic gothic belltower of Florence’s cathedral. Speaking with vignerons today, often the emphasis is on work in the vineyard – believing that is where great wine is made. But Mori likes to contradict that claim: “Wine is born in the cellar,” he says defiantly. “The hand of the man, his actions, are the secret of everything. I use the same techniques as our forefathers. They didn’t have yeasts to start fermentations. They didn’t have sulphur. They used natural methods.” Mori explains that Cortevesio and Gambelli believed it was possible to make precise wines using traditional methods – but only if the vigneron was fastidious in everything they did. Right from the start it was Cortevesio’s influence – and his mantra “passion, precision and patience” – that promoted such a traditional approach at Il Marroneto. To make wine in this way requires a lot of hard work in the winery – indeed Cortevesio was fastidious about cleanliness in the winery. Mori remembers constantly cleaning barrels and the cellar to try to win his respect. In the early days, despite Mori’s best attempts, Cortevesio would still think the cellar was dirty. He would taste the wine and say, “It’s tired.” As Cortevesio got older, he suffered with pain in his throat following an operation on his neck. It became difficult for him to speak and so he rarely did. He famously used to communicate with a smile, recalls Mori, and even that was difficult for him. Mori remembers the day he first smiled after tasting Il Marroneto, calling the wine “precise”, the finest compliment any vigneron could hope to hear when judging a wine, Mori believes. While Cortevesio became largely mute, Gambelli – who hunted almost daily – was completely deaf. After 10 years, Gambelli took over consulting for Il Marroneto (from 1985) and continued to visit up until 1993. Like Cortevesio, Gambelli had a maniacal approach to cleanliness and extolled monastic-like patience when ageing the wine. Mori was amazed by how this duo – one mute, the other deaf – could communicate. While both famous for saying very little, what they did say mattered – and their legacy, the lessons they shared with Mori, lives on today. After 17 years of tutelage under Cortevesio and Gambelli, Mori went his own way. “The wine of Marroneto remains the wine of Cortevesio and Gambelli because I am their pupil,” says Mori. “I continue to make the wine as they taught me – but with my hand.” The biggest change for Mori was the introduction of the Madonna delle Grazie cuvée. Often considered the region’s finest wine, it is the only Brunello to have been awarded multiple 100-point scores from the Wine Advocate – and universally loved by critics and afficionados around the world. The wine comes from the estate’s oldest and original vineyard – the one he worked as a child – and is made completely differently to Marroneto’s classic Brunello. Mori continues to make the traditional Brunello exactly as he did when he was 14. This “true” Brunello “requires a lot of movement in order to extract the best parts of the grape – the pulp that sits one millimetre under the skin,” explains Mori, “this is where you find the best anthocyanins, the polyphenolics, the complex fruity smells. The first 48 hours following harvest extracting these are key.” Mori and his team are up for two days solid, constantly working the must. Mori comically compares it to the Big Bang. “The grape material explodes, the material goes everywhere; it is the birth of the universe, and the wine is born.” After 48 hours, they stop and the must – thanks to all the agitation and natural humidity created in the winery – immediately starts fermenting. After just a few hours, the must has heated up to 34-35˚C and sometimes reaches 40˚C. These are not temperatures ever mentioned in modern wineries, but Mori knows what he is doing. “Sangiovese likes to fly high like an eagle when fermenting,” he says, “it is important for the characteristics of the Sangiovese chemically to fix the volatile smells.” At these sorts of temperatures, the fermentation is over in a week. Mori deliberately makes Madonna delle Grazie completely differently – and contradicts all that he does with his classic Brunello cuvée, such is the quality of the grapes from this special vineyard. When the grapes arrive at the winery, the fruit is left alone. The fermentation is much slower and much cooler (between 28-30˚C), lasting 20-25 days. It is, in short, totally the opposite. “With the Madonna delle Grazie, to our surprise, we found no power,” says Mori, “but a complexity in which the Sangiovese is similar to that of Pinot Noir – the technique brings elegance.” “Every part of the Madonna is high (the acidity, the tannins, the alcohol, the polyphenolics, the anthocyanins, the fruity characters, all are high, but without the power –  altogether it makes a complex wine. Together it makes for an extraordinary equilibrium.” Mori has been perfecting his techniques over the last 27 years, but two years ago it was his turn to become the teacher as his son – Iacopo – joined him in the winery during the pandemic. “Now I try to let my son learn this kind of traditional winemaking – not simply as Gambelli and Cortevesio taught me, but Gambelli, Cortevesio with the hand of Alessandro,” he says. “Today, he is more careful in the cellar than I am. Sometimes a little too much,” laughs Mori. He has obviously taught him well. Mori has also been imparting his knowledge to Emilio Parri – his cellar hand and protégé, who has been working in the cellar since he was 18. Overriding everything, Mori’s job as a teacher, he believes, is to “transmit the passion”. Mori still has a strong bond with his wine – he talks to it every day. When leaving the winery he shouts down to the cellar – “Ciao ragazzi, see you tomorrow!” Mori’s underlying philosophy for making great wine is to make wine with sentiment. “You have a relationship with the wine – the more you give to the wine, it gives it you back 10 times more. You see the wine grow up like a child, it is fantastic.” Encouraging this relationship, encouraging both Iacopo and Parri to fall in love with the work and the wine is his goal. With Mori’s support, his son has created a new cuvée, the stunning Rosso di Montalcino Selezione Iacopo. Iacopo took different proportions of wines ageing in the cellar to concoct his own blend. The 2019 was the first limited release and has already been highly praised by the critics (Eric Guido wrote, “The word ‘wow’ does not do this justice.”). While Mori thinks his son could afford to relax a bit and “take it easy” – the skills he and Parri are showing in the cellar means perhaps it is Mori, after 47 years, who can now start to relax. While Mori contemplates his retirement, albeit just for 30 seconds, he knows he will never really leave.
