I. Distractions In 1987, when I was 18 and a dollar was worth more than twice as much as it is today, I started reading magazines: M, Esquire, GQ. Nearby, in our somewhat cultured Texas town, a new bookstore opened in a cavernous space that had formerly housed the shag-carpeted roller skating rink of our childhood. Through the front windows, which had before been darkly tinted to give the place an alluring den-of-prepubescent-iniquity vibe, now streamed bright, clean light, showcasing a look and layout that would become the interior design gestalt of today’s national-chain, big-box book superstore. The rows upon rows of open, dustless shelving bearing a veritable warehouse of volumes; the ceiling hung with its industrial innards on display; the enfilade of check-out cubicles; and the wall – the great wall – that displayed a preposterous-to-behold assortment of glossies, quarterlies, journals, newsweeklies, fanzines, tabloids, almanacs, and all other flora and fauna of magazines arrayed upon a rack perhaps 50 feet long.  I went in there to look for a book. I liked books, and, one day, I was sure I wanted to write one. But I got distracted and bought a magazine instead – that August’s issue of GQ, which still stands out in my mind as a thing of formative significance. At that time, the zeitgeist was defined by a Walkman-wearing version of the American Renaissance Man – the highly-ambitious, status-obsessed, money-motivated, health-nut known as a Yuppie. No magazine positioned itself more authoritatively in defining this new sociological creature’s lifestyle than GQ, and it did it with whiter teeth, snappier suspenders, better accessories, bigger polka dots and more caffeine in the ink of its display copy.  I remember that issue less for the photos by Richard Avedon or Steven Meisel, the words of Martin Amis or Frederick Exley, than for this: Erzeugerabfüllung. It was one of the longest, strangest strings of letters from the Roman alphabet I had ever seen. Neither did it seem designed to come out of someone’s mouth. But there it was in Alan Richman’s Wine & Spirits column, accompanied by a lovely still-life photograph of his topic: two bottles of Riesling Kabinetts on a white, sun-dappled tablecloth. Richman’s main point – made almost 35 years ago – still holds true: estate-bottled, table-quality German wines remain some of the least expensive, most delicious wines in the world, chiefly because – then as now – the labels, as he wrote, “cannot be understood by anyone who is not a part-time oenophile, linguist and cartographer”. One US dollar in Richman’s pocket, as I have already said, bought what roughly two-dollars-and-fifty-cents does today; what he was on the hunt for was a good dry white in a range that would now cost somewhere between 12 and 30 bucks, and he easily accomplished that by finding a dealer in New York City who carried a good selection of wines from the Mosel and Rheingau. At the time, I didn’t know the meaning or significance of any of this, but it staked a claim in my brain. The only wine I had ever tasted was the one served at our Episcopal church during Eucharist on Sundays. The flavour it had was of a strange, super-concentrated jam that somehow warmed your upper body. Even as a young kid, I liked it. But the adjectives these German bottles were squeezing out of Richman – “citrus-like”, “honeyed”, “tart-sweet” – weren’t close to describing what was in that chalice, even if you believed in transubstantiation. Was it because Richman’s wine was white, and the parish’s was red? Perhaps, but both colours of grape juice bottled by Welch’s tasted pretty much the same to me. No, I sensed there was something – a lot – I had to learn, and, along with the romance and beauty of the labels, and the contextual air of well-bred taste and cultural with-it-ness featured on the other pages, this, I feel sure, was the decisive moment, the true origin point, when I came to believe that among the many extraordinary things that make life worth living, not just words but wine reigns at the top.  I warned you about distractions, didn’t I? Because that would be my excuse for now informing you, as a quite apropos footnote, that, yes, there was something unusual about our church’s Communion wine. It was, as I have confirmed with the church, actually port (Taylor’s Tawny, to be more accurate), cut, according to tradition, with water. There is a good and fascinating reason for this. In 1701, when the War of the Spanish Succession kicked off, France also became an enemy of England, and its wines, as a result, were no longer made available for import. The Anglican Church searched for and found a replacement, the fortified wines of its new ally, Portugal, and port continues to be an acceptable option to pair with the Host.  II. Distillations A satisfying story, not unlike a satisfying life, is one that surprises you with the mystery of its unfolding. A thing pulls in a certain direction long enough to reach the proximity of something else which then turns toward a new destination. I had actually gone into that bookstore, as I said, to look at books. But I came out, even though I didn’t yet know it, with a different compass point. Within a few years, shortly after graduating from college, in 1992, I got hired by The New Yorker, where I stayed for almost nine years. I then met my future wife, who wisely laughed at the thought we might be able to survive in New York City on my meagre salary, so I went to Vogue, and soon after became the founding editor of Men’s Vogue. After 23 issues, and four years, the financial crisis laid an axe to many magazines, including that one. Eventually, I took on the editorship of Town & Country. Then, finally, in 2016, I moved up to Esquire, the magazine, as it happens, that didn’t offer me a job when The New Yorker did, and became that storied magazine’s editor in chief, until – well, you best read about that in The New York Times.  As far as distractions go, magazines were a good one. They made me who I am, gave me a tremendously worldly education, honed my taste, introduced me to all manner of accomplished people, required me to build quite a wardrobe, and paid me pretty well to do all of this, often with a glass of wine not far out of the picture. There was really no other way I would have ever got to taste all the bottles I have (a lot of the big names people whisper about from Burgundy and Bordeaux, Champagne and also Piedmont, Tuscany and Napa). I built a modest cave à vin of my own by buying the Smith Haut Lafittes of the world way before hedge-fund hoi polloi ran up the prices, and by having access to rare offerings, like 12 bottles of Fiorano, the legendary white wine Alberico Boncompagni Ludovisi, prince of Venosa, made before ripping out all his vines. I smelled the musty perfume of Margaux in the cellar as I watched the workers rack the wine by candlelight. I lured Jay McInerney away from the Wall Street Journal to become my wine columnist; and I once stood in Bordeaux’s town square, tight on 2002 Pétrus, trying with great focus to commune with the statue of Michel de Montaigne while my French friend, a true oenophile, extolled the majesty of the Big Mac’s special sauce.  As the editor of a magazine, curiosity is your profession, even to the point of distraction. Editors – writers, too – are prone to it. It’s a hazard of the gift, and having a jumble of ideas, if you’re any good, is key to making a magazine of any real intellectual or creative daring. Now as a husband and father of three, working from home and trying to be ‘present’, and a still youngish former editor and occasional micro-influencer trying to stave off the solitude to fathom and plot the next phase of a fruitful future, this skill of mine, the strength of which became even more magnified over two decades, is something of a family project.  The way I most often hear the word ‘distraction’ now, for instance, is when it’s being hurled at me in verb form by my wife or daughters accusing me of being more of a phone-enslaved screen vegetable than they are. (I respectfully disagree.) But it’s a sore point for two reasons. One, what I did as an editor is, in a nutshell, now what a smartphone essentially does. Not very imaginatively, of course, and not with taste or charm or originality, but with a bloody, money-grubbing ruthlessness that stalks every step of our digital peregrinations and doesn’t give a twist if the algorithms that are its brain make us its slave by retrofitting our attention spans for kindergarten.  The smartphone – not the former me or any of my fellow kind still in the media biz – is now the true croupier of culture, dealing out a targeted shuffle of Pavlovian temptations to the point of daily mental exhaustion. And, though this thing is in many ways my personal nemesis, I am, against every fibre of my being, too often its obedient servant. Aiming not to live according to the famous line by T.S. Eliot – “distracted from distraction by distraction” – I recently decided to at least take a serious inventory of my favourite ones, both those of the pre-digital sort (tennis, The Walking Dead, checking the mailbox, my sock collection) and those of the post-digital sort (the any and everything I do because my phone wants me to). Then I caught myself watching tennis on my phone and realised this might be harder than I thought. It’s enough to drive a person to drink, thank god! With that in mind, I like to keep a special something for the occasion around, in this case – what else? – two bottles of Riesling Kabinett, for it had struck me as more than a little weird that I’ve probably tasted fewer than a handful of German wines in my entire life. Part of the reason is that those I had were bad, and, like a lot of other simpletons about this great wine region of the world, I’d come to think of Riesling as a cloying elixir equal parts green Jolly Rancher, apple cider vinegar, and hairspray. This, I knew, was wrong, not true and, in terms of wine equity and inclusion, on the wrong side of history. But, if you happen to live in a place like I do – a bourgie swathe of Connecticut bordering New York City where the shops cater heavily to Cali-Fran-Taly banker’s tastes – it might take you a few stops to find what Richman recommended, an erzeugerabfüllung (estate-bottled) Kabinett (wine made from grapes with a minimum must weight/sugar content) Riesling, and when you do it will probably be coated in a fine sift of years-old dust. I bought a green (Mosel) bottle for US$16 and a brown (Rhine) bottle for US$20, both handsomely labelled. I opened them a few minutes ago and took several investigative swigs. The words bright, invigorating and snappy came to mind. One is indeed sweeter, and, though not my usual jam, it is tamped by a pleasing peachy tartness, and the classic overtone of honey isn’t making my palate feel doused with syrup. The other example is, as Richman said so long ago, a very finely layered creature with mineral clarity and an echo of baked bread, something a gluten-free person like me finds particularly appealing. A rather obvious thought: why haven’t I been buying this instead of throwing a ton of endless money at affordably bad white Burgundy, which is mostly a product aimed at fulfilling a desired outcome, like White Claw hard seltzer? III. Words But don’t let me get distracted, again. A writer really has to be careful about such things. Just think about it. Unlike, say, a painter or musician or actor or photographer, the process of writing requires zero physical exertion, no chance to score an endorphin release while sitting staring anxiously at a blank page. Of the many things in life that vie against the counter intuitive impulse to be glued to a desk, Cyril Connolly, in Enemies of Promise, his classic study of the things that distracted him (and others) from becoming a great writer, names the temptations but does not say much about why they’re so deeply tempting to someone who would otherwise be sitting alone in an empty room. Praise, money, fame, social prominence, affairs and journalism are the most common boltholes, according to Connolly, who, as a famously late sleeper that married three times, might have also added the bliss of unconsciousness and excessive alimony. In 1938, the year the book was published, he would never have imagined how hard the task might get without a cigarette. Smoking is a death wish, I know, but when you want to off yourself for still having a hundred pages to go, being able to snap open a nice lighter, flick some ash, stub a butt and inhale some lungfuls of focus-enhancing nicotine must have been kind of helpful. Connolly also doesn’t have much to say about drink except that artists who drink to excess do so “out of the consciousness of wasted ability”. According to that, the 20th century’s most famous literary alcoholics – Dorothy Parker, Truman Capote, F. Scott Fitzgerald, William Styron, Elizabeth Bishop, James Joyce, Raymond Chandler, William Faulkner – might have left behind even greater treasures than they did. Because Ernest Hemingway did almost everything with more gusto than any of his peers, including running up his bar tab, as a drinker he belongs in his own sentence. He is the novelist who most romanced a good drink or nice bottle of wine as one of life’s great pleasures. Who didn’t want to have a vermouth with Jake when reading The Sun Also Rises? (Don’t, it’s gross, at least if you order it at one of those kiosks in Montmartre where the bottles are hung upside down with spring-loaded dispensers.) Or, track down a bottle of Valdepeñas, Hemingway’s favourite variety of Spanish wine. Or, get a drink at the bar named after him at the Ritz, in Paris, and then go somewhere on the Left Bank to order “a dozen portugaises and a half-carafe of the dry white wine”.  In the early work, he is not boastful about drinking so much as he is the possessor of an unusual appetite for a good buzz. He is also, like Connolly, aware of the need to keep writing separate from drinking, and drinking within his control. It is hard to read the first paragraph of A Moveable Feast, in which he describes an “evilly run café where the drunkards of the quarter crowded together and I kept away from it because of the smell of dirty bodies and the sour smell of drunkenness”, except as a kind of terrifying admonition to himself. It is tragic that he didn’t heed his own advice. Late in his life, Hemingway became fond of rum daiquiris at the Floridita, his favourite bar in Havana, which might explain his taste for a prose style that soon became too often cloying self-parody. In one of the most extraordinary drinking sessions ever committed to words, in the roman à clef Across the River and Into the Trees, a 50-year-old Hemingway, who was smitten with a teenage Italian countess from Venice, fictionalises his infatuation with a last muse. In one stretch (that covers an evening-to-dawn crawl from Harry’s Bar, the grill at the Gritti Palace, a gondola and a hotel room), one half or another of the couple imbibes: one scotch whisky and soda; six Montgomery Martinis (15 parts gin; 1 part vermouth), two of which are described in size as ‘super’; a bottle of Capri Bianco; two bottles of Valpolicella; two bottles of Roederer Brut ’42; and two bottles of Perrier-Jouët. That is, I suppose, one extreme, and, clearly, not one to be tried at home.  The other might have been espoused by Dr. Samuel Johnson, the great critic and lexicographer. As a young man, he’d drained “many a bottle of wine” but loved port especially. (Perhaps Johnson, a devout Anglican who was born in 1709, in the midst of England’s 14-year war with Spain, also first encountered port as a boy at the Communion altar.) He describes himself to friend and biographer James Boswell as having been “apt to go to excess in it”, adding that, “therefore, after having been for some time without it, on account of illness, I thought it better not to return to it”.  Boswell, who worried about his own dependence on alcohol, even keeping a journal of his intake in an attempt to enforce moderation, argued for a third way, which some of the Romantics later adopted. Wine, he claimed, “produces truth; in vino veritas”. Hoping to persuade Johnson of his point, Boswell once convinced the critic to come down off the wagon for just one glass of claret, so Johnson “might judge, not from recollection, which might be dim, but from immediate sensation”. Boswell reports what happened after the glass was emptied: “Johnson shook his head, and said, ‘Poor stuff! No, Sir, claret is the liquor for boys; port, for men,’” adding, “‘A man would be drowned by it before it made him drunk.’”  That actually reminds me of something I think I forgot to mention about Riesling Kabinetts – they’re also highly admired for their low percentage of alcohol. How one became another  

What springs to mind when you think of Bordeaux? Probably châteaux the size of medieval palaces, formal dinners, and rows and rows of pristine vines, neatly manicured rose bushes the only other signs of plant life. What you’re unlikely to be imagining are cow horns stuffed with manure buried in the ground, or horse-drawn ploughs churning through earthworm-rich soil. ‘In the past, in Bordeaux, you were scared to say you were growing biodynamically,’ says Corinne Comme, who manages 10ha of biodynamic vines at Château du Champ des Treilles in Entre-Deux-Mers with her husband Jean-Michel. ‘Now it’s trendy.’ An engineer and geologist, Jean-Michel Comme was behind the first transition of a grand cru classé estate on Bordeaux’s Left Bank to biodynamics. Although he and Corinne first came across the concept in the mid-1990s, he didn’t begin to advocate for the approach at Château Pontet-Canet in Pauillac until the early 2000s. ‘Corinne was scared,’ he recalls. ‘She thought they would fire me.’ "Behind the more esoteric elements is a series of principles that have been shown to improve soil health and vine strength" Originally laid out in a series of lectures by Austrian philosopher, scientist and social reformer Rudolf Steiner in 1924, biodynamic farming emerged as a holistic approach to agriculture before quickly evolving into formal certification movements. At its core, biodynamic farming centres on soil health and biodiversity; most distinctively, it operates according to the lunar calendar, with practitioners timing agricultural activities around specific ‘fruit days’, ‘root days’, ‘leaf days’ and ‘flower days’ to align with cosmic rhythms believed to influence plant growth and agricultural processes. For many in Bordeaux – Jean-Michel Comme included – this all sounded a bit wacky. ‘I was young, full of expectations about chemistry; the way biodynamics was presented was so remote that I felt it was crazy,’ Comme says. ‘But with experience, we did change our minds.’ Why? Because behind the more esoteric elements is a series of principles that have been shown to improve soil health and vine strength. In vineyards, biodynamic farming means specific practices such as hand-harvesting, using natural composts made with specific herbal and mineral preparations, avoiding chemical fertilisers and pesticides, and treating the entire vineyard as a self-sustaining ecosystem. In the cellar, there’s an emphasis on minimal intervention, using native yeasts, avoiding commercial additives, keeping sulphur use to under 70ppm, and employing gentle pressing and ageing techniques that respect the wine’s natural development. While biodynamics took root in regions like the Loire and Burgundy in the 1990s, biodynamic winemaking in Bordeaux largely began in the new millennium, with just two early St-Emilion exceptions: Château Meylet, which has been practising it since 1987, and Château Fonroque, experimenting since 1995 with direction from Loire legend Nicolas Joly. This delay largely stemmed from two factors. First, Bordeaux’s humid maritime climate means that vines are especially vulnerable to both downy and powdery mildew, making the avoidance of synthetic fungicides a risky business. Second, large châteaux with multimillioneuro operations were reluctant to abandon the technological viticulture and winemaking that had built their global reputations in the first place. Comme, however, was convinced of the virtues of biodynamics. He began by seeking the assistance of François Bouchet. The Loire Valley winemaker was one of the first in France to pioneer biodynamics, also consulting for Domaine de la Romanée-Conti, Domaine Leroy and Domaine Leflaive in Burgundy. Bouchet guided the transition to biodynamics at Comme’s Château du Champ des Treilles; then, he persuaded Château Pontet-Canet owner Alfred Tesseron of its merits. In 2004, it was trialled on 15ha (about 20% of the estate’s total growing area) of the fifth growth at which Comme was also technical director. A severe mildew outbreak in 2007 led to the use of pesticides, undoing three years of progress, but it then became a crucial lesson that strengthened their long-term commitment to biodynamics. ‘They believed the fruit had more expression, more brightness,’ says the current technical director at Pontet-Canet, Mathieu Bessonnet, who reveals that they converted the whole of the growing area soon after. ‘It’s obviously much more difficult, time-consuming and expensive, so it was very risky,’ he adds. Since then, biodynamic farming has become a significant and growing practice across different classed growths in the region, with some of the most prestigious estates – such as Château Latour and Château Palmer – adopting biodynamic methods (the latter certified). ‘The link between the wines and the place where the fruit came from had become less and less obvious,’ says Château Palmer’s technical director Thomas Duroux, commenting on the region’s turn to the trend. He notes that, since the noughties, many have adopted organic practices in a bid to reverse this perceived drop in terroir definition. ‘Biodynamics is, in a way, the same story as organic farming, but with a larger vision,’ he adds. This shared perspective has led to more cooperation between practitioners. Every spring, the Médoc branch of the Biodynamic Agriculture Movement gathers at Château Ferrière. After unearthing a thousand manure-filled cow horns and replacing them with silica-filled ones (a process reversed in autumn to produce preparations 500 and 501, required for Demeter certification), participants share wines and gardengrown salads. The humus removed from the cow horns is stored in a cold, damp facility and made available to members. ‘We do that for free,’ says Claire Lurton, owner of Château Ferrière. ‘It’s a community.’ Though ‘community’ might be too strong a word for some, these gatherings symbolise a deepening professional exchange that has emerged among estates of all sizes through the practice of biodynamic winemaking. In fact, the shift among the classed growths has happened at the same time as these practices have been adopted by smaller growers arriving in the region. Christophe Landry of Château des Graviers, for example, returned to Arsac in the 1990s and began practising biodynamics around the same time as Comme at Pontet-Canet. He’s consulted for the Lurton estates and other properties. Originally from Minervois in Languedoc, Michel Théron established Clos du Jaugueyron nearby and has been certified biodynamic since 2008, while Laurence Alias and Pascale Choime – who are both from southwest France – established Closerie des Moussis, a patchwork of sites across 2ha, including a 170-year-old pre-phylloxera plot leased from Théron. On the Right Bank, other producers began switching lanes even earlier. Le Puy, owned by the Amoreau family, began practising in 1998, with certification since 2013, and Château Gombaude-Guillot in Pomerol has been certified biodynamic since 2006. While larger estates like Latour and Palmer collaborate on issues like mildew, smaller producers tend to engage more with one another. Shared biodynamic practices, however, are definitely helping to break down barriers. For example, Château Haut-Bages Libéral maintains regular communication with its neighbours at Château Latour, and the son of Théron at Clos du Jaugueyron interned at Château Palmer for two months. Can we speak of a unity of praxis? Not exactly. There is considerable variation in which aspects of biodynamics winemakers emphasise, regardless of estate size. The primary aim across the board is achieving living soil with rich biodiversity to promote deep-rooted vines. In pursuit of this, some winemakers emphasise tree growing or cover cropping (like Haut-Bages Libéral, which also recently planted a variety of local and fruit trees). Others, such as Le Puy, let nature take its course, allowing a diverse array of plants and flowers to sprout from the earth. Whether certified or not, biodynamic practitioners throughout Bordeaux use homeopathic treatments like nettle teas for the vines – they are believed to stimulate soil health, enhance plant immunity and improve nutrient uptake. More important than any of this, however, is the concept of energy. How can the energy of the plant be retained as its raw material transforms into wine? Every winemaker I visited was at least intrigued by the concept – and most were captivated. After a few days in the sometimes eerily flat Médoc, I drive through the verdant hills of St-Emilion to Le Puy, arriving with a raised spirit. Standing before a 5,000-year-old Celtic cromlech, Harold Langlais, the estate’s director, tells me, ‘Le Puy is a place of energy and life,’ pointing to its deep history as an intersection of water springs. At modern-day Le Puy, this philosophy extends from the vines to the cellar. Indeed, many others I speak to express that, since adopting biodynamics, the most striking change in their wines has been an increase in ‘energy’. It’s a term without a precise definition, but according to Château Palmer’s makers, something shifted with the 2015 vintage, the second year after full conversion. ‘You cannot measure it,’ Thomas Duroux says. ‘You can just feel it.’ At Château Durfort-Vivens, where the vineyard was operating under biodynamic principles by 2013 (with full conversion by 2016), owner Gonzague Lurton recalls the 2014 vintage as ‘the first where you really feel the energy of biodynamics’. It’s tactile and warming, with a sophisticated grip and charm. ‘It’s what I love – the linearity of tannins, never weak from start to finish. With many of the estates I visited, their wines showed an immediate appeal, vibrant even in their youth. Is energy just another way of describing freshness? Laurence Alias at Closerie des Moussis trained as an agricultural engineer; for her, energy and vitality are tied to the physical properties of grapes grown biodynamically. ‘We have more acidity, that’s an analytic fact,’ she tells me, standing in front of a newly acquired plot of vines bordered by forest. It might be romantic to think of energy as something ineffable, but it’s also rooted in what remains within the grapes. ‘Our idea of energy is based more on Einstein than Steiner,’ Langlais later qualifies. ‘Energy is matter.’ Biodynamic winemaking in Bordeaux: five to follow Château Pontet-Canet At the 55ha Pontet-Canet estate in Pauillac, an immensely smooth operation is palpable. Winemakers here have spent almost two decades honing their biodynamic craft, continually moving towards a goal of self-sufficiency for the estate. Sturdy Comtois horses, introduced in 2008, now work half the vineyard, preventing soil compaction. Vineyards are sprayed over a single day using compost and herbal teas produced from plants grown in and around the property and processed in the state-of-the-art infusion room. Biodiversity-boosting fruit trees and hedges have been planted. The estate even employs a carpenter who repurposes wood from vats used on the property. Ageing involves custom-made wooden eggs and qvevri-style amphorae, with no fining and minimal filtration. The result? A Pauillac with untypical levels of energy and minerality, and a plush, velvety texture. But it’s more than that – according to Bessonnet, thanks to a low-intervention approach across the board, ‘you can really feel the soil.’ Château Palmer Thomas Duroux’s conviction in biodynamics is based in what he calls a ‘holistic vision’. ‘We started to see the entire place as a living organism,’ he says of Château Palmer, one of the most storied and historically significant third-growth estates in Bordeaux. When converting (a process that started in 2009), the Margaux estate was initially guided by François Bouchet’s son Matthieu, but now it follows its own evolving philosophy, integrating cover crops, animals for fertilisation and estate-grown vegetables and meat. ‘It’s just going back to agricultural common sense,’ Duroux says. ‘That was the way to grow anything before World War II.’ This respect for nature results in wines that are deeply tied to their terroir. ‘If I had to describe the wines how they are today, compared to how they were before, I’ll just say that it’s not a revolution, but we have the feeling that the wines have a better identity,’ says Duroux. He likens biodynamics to restoring an old painting: ‘Suddenly, you see small details that you were not able to see because of the dust.’ The estate uses stainless-steel vats for fermentation and temperature-controlled rooms for barrel-ageing, combined with nativeyeast and low-sulphur winemaking, to produce its esteemed Alter Ego and Château Palmer cuvées; both have been increasingly celebrated among critics and drinkers since the turn to biodynamics. ‘We just think it does help to go a little bit further in the interpretation of the place,’ says Duroux. Château Durfort-Vivens Standing over a rustic sorting table explaining how it used to work, Gonzague Lurton is visibly passionate about the savoir-faire of the past. This sensibility is reflected in the current winemaking practices, too, and in the second-growth Margaux estate’s reputation (and critics’ scores) increasing year on year. The thing to emphasise is that what began with a biodynamic approach in the vineyards led to a series of domino effects that changed the character of the wines. In search of what Lurton calls greater ‘singularity’, the proportion of Cabernet Sauvignon had already risen to over 90% by 2014 (from around 75%); and with the use of indigenous yeasts during fermentation and the reduction of sulphur levels over time (initially sparked by Demeter’s upper limits of 70mg/l), the wines have become more aromatically complex and expressive. The introduction of amphorae by Italian producer Tava has allowed for microoxidation without overextraction, contributing to a more delicate balance of flavours, with the 2019 estate wine a blend aged one third in amphorae and the rest in barrel. ‘It’s not a big wine,’ says Lurton. ‘And it’s what I was looking for with biodynamics, in terms of style.’ Château des Graviers Christophe Landry’s pioneering status in Margaux stems from an instinct refined over decades at his own estate. He grows medicinal plants — horsetail, absinthe, calendula, chamomile — for vineyard treatments, as well as using the manure from his own cows. ‘What we need to remember is that biodynamics isn’t just a practice,’ he tells me. ‘It’s about finding your own path to self-sufficiency.’ His precision extends to the cellar, where he uses concrete tanks, amphorae and oak barrels (produced according to the biodynamic calendar) tailored to each of the five cépages’ oxygenation needs, then ages the wines for different lengths of time. Timing is everything, with harvest choices also following the biodynamic calendar. Obsessive care for the vines’ life cycles goes hand in hand with the level of precision in the cellar. The outcome is two phenomenal wines that are, as Landry puts it, ‘thirstquenching’. Château des Graviers and Quintessence — which contains a higher proportion of Petit Verdot and is aged longer in barrel and amphorae — are aromatically expressive, velvety and strikingly lively, with the latter offering more depth and an enveloping finish. Expanding to 18ha, Landry has also turned his focus to Clos Dufourg, cultivating vines on previously wild land nearby and hand-building a striking new cellar with cement tanks painted with clay from the surrounding earth. Le Puy For technical director Harold Langlais, the Le Puy estate’s significance lies in how it challenges Bordeaux’s conventional identity. Outside of the region’s traditional focus on appellations and classifications, Le Puy sits on a plateau near St-Emilion. The estate’s land is unusual, with no topsoil but a deep limestone bedrock beneath red-brown clay, which forces the vines to develop deep roots to access the earth’s natural water and nutrients. This is further supported by horse-ploughing and biodynamic sprays made from horsetail, buckthorn and nettles, which grow on the property. ‘Our approach focuses on rooting the vine deep,’ Langlais explains, ‘encouraging it to search out hidden nutrients.’ A vigorous wind circulates around the vines, and Langlais explains the effects of the elements. ‘The beauty of Le Puy is that it’s an acid factory. The whole place creates acidity in the berries.’ The biodynamic philosophy extends to the winemaking, with two different processes applied to their 100% Merlot cuvées. Cuvée Emilien uses a ‘decantation method’, or ‘fermentation by infusion’, while Barthélemy is produced with zero sulphites and a process of lees-stirring called ‘dynamisation’, which is done on fruit days and involves a specific motion to create a vortex in the old barrels it ages in. ‘Barthélemy is much more intense,’ Langlais says. ‘All the matter taken by the plant is in there.’

When the Bordeaux Chamber of Commerce ranked Bordeaux’s leading estates by price for the Exposition Universelle in Paris in 1855, I doubt they anticipated we’d still be using it over 150 years later. Napoleon III had asked the team to put together an exhibition for the world fair, and the Chamber of Commerce neatly passed the buck to the region’s courtiers or brokers, asking them to create a list of the region’s best wines, broken into five tiers. They did so in just two weeks, basing the list almost exclusively on price.  The original classification ranked 58 properties, from First to Fifth Growth, or Premier to Cinquième Cru Classé (with Cru Classé literally translating as “classed/classified growth”). At the very top of this quality pyramid was Ch. Lafite, deemed the “premier des premiers” of the time. The properties were almost exclusively in the Médoc, with Ch. Haut-Brion in Pessac-Léognan the one exception.  It is often said that there has only been one change since the 1855 classification’s creation, however that’s not quite true. Ch. Cantemerle was added in 1856 (having been left out of the original ranking by accident). Ch. Pichon split in two, the Léoville estate into three and Batailley was also divided – but two properties also merged (Pouget and Pouget Lassale), while Dubignon was absorbed entirely by other addresses. Interestingly, Ch. Gloria consists exclusively of vineyards that were classified originally, although the château wasn’t classified in 1855.   The most significant change, and the one most often mentioned, was in 1973 when Ch. Mouton Rothschild was upgraded to First Growth status. The property had only just been acquired by the Rothschild family in the 1850s, so was intially ranked as a Second Growth but Baron Philippe de Rothschild made it is life mission to get it officially recognised as one of the Left Bank’s five leading addresses. For years the property’s labels had read “Premier ne puis, second ne daigne, Mouton suis” (“First I cannot be, second I do not deign to be, Mouton I am”), which was changed to “Premier je suis, second je fus, Mouton ne change” (“First I am, second I was, Mouton doesn’t change”) after the Baron’s bid was successful, and the estate’s premiership was legally recognised.  There are 61 estates in today’s classification, with five First Growths, 14 Second Growths, 14 Third Growths, 10 Fourth Growths and 18 Fifth Growths. Unlike in Saint-Emilion’s classification, a property is free to buy and sell vineyards, with their expansion or contraction not impacting their classed growth status.  Although the classification has never been reviewed, it remains largely (and surprisingly) accurate – the premium price associated with higher status and quality seemingly providing sufficient incentive for producers, and the market effectively deciding on a property’s status.  Today there is also an unofficial group known as the “super seconds” – estates that are thought to produce wines that are as good as those of the First Growths. This includes Pichon Baron, Pichon Comtesse, Lynch-Bages, Léoville Las Cases, Léoville Barton, Ducru-Beaucaillou, Cos d’Estournel, Montrose, Palmer, Pontet-Canet and La Mission Haut-Brion.  While we tend to consider only the red wines of the northern Gironde in reference to the 1855 classification, the sweet whites of Sauternes and Barsac were also ranked. The wines were only put into two classes, with 21 estates included. Nine estates were deemed worthy of First Growth status, 11 as Second Growths, with Ch. d’Yquem earning its own special category as “Premier Cru Supérieur”.  As with the red classification, the number of estates has grown as they have divided over the years (such as the Doisy estates), with one disappearing entirely (Pexoto – its vineyards are now part of Ch. Rabaud-Promis). There have otherwise been no changes.  The sweet wine classification is of little consequence today, however the estates collectively represent 45% of the surface area of Sauternes and Barsac, and produce 30% of the area’s wines today.  Beyond the 1855 classification, the Left Bank also has its Crus Bourgeois and Crus Artisan, as well as the 1959 Graves classification (read more about these here). The Right Bank still only has the Saint-Emilion classification – one that has caused enough controversy to put Pomerol off doing anything similar. Maylis Marcenat does not fit the stereotype for a Bordeaux producer. Lively, down-to-earth and humble, she’s as unstuffy as they come. She is the fourth generation of her family to run Clos de Sarpe – a small Grand Cru Classé Saint-Emilion estate that has long gone under the radar.  The history of Clos de Sarpe  The Clos de Sarpe name first appeared in 1897, given by a Monsieur A. Ducarpe to his property on the Sarpe plateau. Baron Henri du Foussat de Bogeron bought the vineyard in 1905, merging it with the vines of nearby Badette to create Ch. Haut-Sarpe. Jean Beyney bought Clos de Sarpe in 1923 and revived the original name. His son, Yvan Beyney, took over in 1952, who in turn passed the property to his son Jean-Guy Beyney in 1986. Jean-Guy still owns the estate today but retired in 2021, handing it over to Marcenat, who is his niece. (Jean-Guy has a son, Charles, who gives his name to the property’s second wine and will inherit Clos de Sarpe eventually but isn’t interested in running it day to day.)  The style of the Clos de Sarpe wines through the ages  The style and winemaking have evolved over time – with each generation putting their own stamp on the wines. In the early days, the wine was all whole-bunch fermented, with long macerations (40 to 50 days) and spent several years in concrete tank before bottling. Indeed, under Yvan, this continued. He only sold wine to those who could store the wine properly, and as such some wines spent extended periods of time in tank – the 1966 was in concrete for 10 years, for example. Yvan looked for purity of fruit, picking comparatively late (he was always proud to say he picked at the same time as Figeac, Marcenat says) and didn’t ever use oak. The wines were hard in their youth, needing time to soften, yet having great stability from their long élevage.  Under Marcenat’s uncle, who arrived in 1986, things started to change – with the late 1990s a pivotal moment. Jean-Guy favours powerful wines and reduced the amount of time the wines spent in tank, introducing de-stemming (gradually, from 1997, at first all done by hand) and oak barrels – with the élevage shifting from all concrete to 100% new oak between 1997 and 1999. He hired Michel Rolland to consult from 1998, and reduced yields – cropping a maximum 25hl/ha.  In 2005, Jean-Guy introduced a mechanical destemmer and densimetric sorting  – both of which contributed to a significant shift in quality, and everything has been destemmed since 2010, to encourage a rounder tannin profile in youth. In 2012, the property was granted Grand Cru Classé status – recognising their efforts. Marcenat joined the team officially in 2014, bringing her own vision, pushing for further change from 2016 and finally taking full control in 2021.  Clos de Sarpe today  The Clos de Sarpe vineyards cover 3.68 hectares, all in one block on the Sarpe plateau and south/southeast facing, just a kilometre from the village of Saint-Emilion itself and close to both TrotteVieille and Troplong Mondot, as well as Sansonnet and Haut-Sarpe.  The topsoil is thin here – with just 20cm in places – and lies over limestone bedrock, which contributes to the very high acidity of the wines (normally with a low pH of 3.2-3.4). Over half of the vineyard is between 60 and 80 years old, with the oldest Cabernet Franc now over 100 years in age, planted by Marcenat’s great-great-uncle in 1923.   The vine age combines with the limestone bedrock to help this site weather hot, dry conditions – a particular boon as the climate shifts. The limestone acts like a sponge, holding water, and the roots reach deep into the bedrock, accessing these reserves. Yields are naturally low given the age of the vines, and recent vintages have seen some tiny yields but Marcenat aims for around 35hl/ha in a good year (more than under her uncle and the Rolland influence).  To preserve the age of the vineyard, Marcenat is gradually starting to replant the site. As part of this project, she has added a little more Cabernet Franc, as well as a tiny portion of Petit Verdot. Previously 85% Merlot and 15% Cabernet Franc, today the vineyard comprises 78% Merlot, 20% Cabernet Franc and 2% Petit Verdot.   The family has always worked organically, with no pesticides or herbicides ever used, but the vineyard has been officially certified since the 2020 vintage – something that is of particular importance to Marcenat. For her, the work is all done in the vineyard rather than the winery and the philosophy very Burgundian, with everything kept as simple as possible.  The team is tiny and Marcenat does almost everything herself, supported by Frank Bartolomucci. Today the fruit is all picked by hand, chilled overnight, destemmed and then density-sorted. Each parcel is vinified separately, with most fermented in the concrete tanks that have been used since the 1950s, however the oldest Cabernet Franc is fermented in a 600-litre new oak barrel. She only uses indigenous yeast so fermentations are slow, at least 10 days generally. Maceration times are long, with the wine normally spending around 40, and up to 50 days on the skins, depending on the vintage, but with very gentle extraction. Malolactic fermentation can be challenging with the low pH, so she routinely has to inoculate to force this through (malolactic is essential for wine stability, particularly for wine intended for long ageing).  The portion of new oak has been toned down, with Marcenat ageing the wine for a year in around 70% new oak, with the rest in second-fill barrels (and occasionally some concrete if required). It is then blended together and aged in concrete for around six months prior to bottling without filtration. The oak is all 228-litre Burgundian barrels (versus Bordeaux’s traditional 225 litres), largely Tronçais oak from the cooper Taransaud. Marcenat feels Burgundian barrels pair better with the wine, liking the thicker staves and longer seasoning (30 months versus the 24 that is the norm for Bordeaux).  The Clos de Sarpe wines today  Clos de Sarpe makes two wines: the eponymous Grand Vin and a second wine, Charles de Sarpe, which was introduced in 1997, named after Charles Beyney – Jean-Guy’s son and Marcenat’s cousin. Up to and including the 2015 vintage, the second wine was a saignée of the Grand Vin, used to increase the concentration of the Grand Vin. Since then, it has only been made in certain vintages when there is enough fruit to make a second wine – such as 2019 and 2023.  While most producers will talk about the freshness in their wines coming from the Cabernet Franc, for Marcenat it is the Merlot that brings the acidity, while the Cabernet Franc provides the wine’s structure.  Tasting Clos de Sarpe back to the 1960s, the site’s freshness shines through consistently, as well as a distinctive earthy minerality. The purity of a wine like the 1966 is extraordinary – and it’s holding up beautifully today. You can still see traces of the immense structure the 1975 and 1988 must have had in their youth – providing a gentle grip today alongside their savoury intensity. While the wines were significantly more powerful in style in the late 1990s and 2000s, that power feels balanced today, the 100% new oak integrated and unobtrusive – and the 2001 a particular standout. The 2010 and 2015 vintages of Charles de Sarpe are beautiful wines, with a softer feel and elegance – juice that would be worthy of many Grands Vins.   These wines might once have been known for their power and punch, but Marcenat has tweaked the style, leaning into the natural freshness of the site. She looks for silky tannins and a purity that makes the wines more approachable in youth. It is, she will tell you, very simply the wine she likes and wants to make. Tasting the wines en primeur since she took over suggests that only good things lie ahead here. With each vintage, Marcenat’s imprint on the wines feels clearer and quality belies the growing season’s conditions, testament to both her talent and the terroir.  A note on the Clos de Sarpe labels  As you can see in the line-up for this tasting (below), the labels have changed over the years. The oldest wines made under Yvan Beyney bear a very traditional label, which changed in 1986 to have a blue border when Jean-Guy (Marcenat’s uncle) took over. When the style of wine shifted in the 1990s, Jean-Guy changed the label again (from the 1998 vintage) to one with a gold foil border. The current label was introduced in 2012 when the property achieved Grand Cru Classé status.   The vertical tasting: Clos de Sarpe 1966-2015  2015 Charles de Sarpe: Maylis Marcenat recalls the 2015 harvest vividly – as it took place around the same time that she gave birth to her twin daughters. It was the last vintage in which the second wine was produced as a saignée of the Grand Vin, echoing its proportions of 85% Merlot and 15% Cabernet Franc, and effectively a less powerful version, aged in 50% new oak and 50% one-year-old oak. The wine is still lithe and vibrant, offering bright red berries on the nose. The palate displays more savoury tones, with macerated red plum and a fine chalky coating of tannins, cut by bright acidity that drives through to a mouthwatering finish. This is in a beautiful spot now.   2015 Clos de Sarpe: The typical blend of 85% Merlot and 15% Cabernet Franc (as with every vintage shown in this vertical), the 2015 Clos de Sarpe was aged in 100% new oak. As you might guess from the élevage and the power of the vintage, this is not a shy and retiring wine – yet Clos de Sarpe’s trademark acidity drives through its core and balances the wine’s intensity. It still feels youthful, packed with dark cherry fruit on the compact nose, that gradually offers sweeter, scented tones with time in the glass. There’s a solidity to the palate – with a mass of rich, concentrated fruit, yet there’s a juiciness here to that makes it mouthwatering, with a sweet plumpness. It’s round and full, with a firm grip of tannin on the finish. Decant to enjoy now, with plenty of air, but this will unfurl over the next decade and beyond.  2010 Charles de Sarpe: The 2010 vintage was the first in which the fruit was all destemmed at Clos de Sarpe. Tasting the second wine with winemaker Maylis Marcenat, she can’t help but wonder why her uncle didn’t put such gorgeous juice into the Grand Vin. It’s a supple, beautiful example of mature Saint-Emilion now – the nose subtle, shifting between sweet fruit, lifted florals and black truffle complexity. The palate is long and balanced, beautifully resolved, seamless and soft, still with mouthwatering freshness and an earthy mineral edge to the long finish. Lovely.  2001 Clos de Sarpe: This was a standout in our vertical – and a wine that holds a special place for Marcenat. As she told us, “For me, it’s better than 2000 – with more freshness, more balance, more everything.” The 100% new oak is integrated, with the nose now showing plenty of tertiary complexity: iron, sousbois and a subtle leafiness mingles with the still fresh, soft strawberry fruit. There’s a transparency here, yet still plenty of concentration – the palate still lithe with soft, plummy red fruit and high juicy acidity that supports the fruit and fills the long finish, complemented by an earthy note. Superb.  1998 Clos de Sarpe: This was one of the first vintages to be aged in oak, seeing 80% new wood for its élevage. It was a great vintage for the Right Bank – as is clear from this wine. The 1998 Clos de Sarpe is beautifully mature, with savoury, leathery aromas and darker bramble fruit versus the more red-fruited 2001 shown alongside. The palate has a savoury iron seam, the tannins still offering a satisfying chewy grip to frame the juicy hedgerow fruit. This blossomed in the glass, revealing further complexity and vibrancy. Long, balanced and very impressive.  1988 Clos de Sarpe: The 1988 vintage offered few challenges and is a fairly classic year. It comes from the era when Clos de Sarpe was all whole-bunch fermented and saw no oak (aged only in concrete) – as with the two vintages below. There was a slight mustiness to this wine at first, but gradually the wine revealed its true character, with sweet, dried fruit and intense, savoury notes – an umami richness reminiscent of marmite. There is still surprising structure and power here, although the wine isn’t quite as concentrated as the 1998, for example. The acidity keeps things fresh, with the scent of truffle and undergrowth lingering on the finish.  1975 Clos de Sarpe: This was recorked in 2020. The 1975 vintage produced some particularly tannic wines – and you can still feel the structure of the year here, with a phenolic grip that frames the palate. The nose is intensely savoury, appealing to lovers of old-school Bordeaux with barnyard and horse leather, gradually revealing a herbal lift – something almost menthol-like. Although this is firmly tertiary in profile, there’s still vibrancy to the palate, with soft waves of fruit and an iron-edged finish.  1966 Clos de Sarpe: Some older vintages of Clos de Sarpe spent extended periods of time in tank before bottling – as is the case with this 1966, which stayed in concrete for almost 10 years. It was recorked in 2019 and is an amazing wine that is singing today. The nose still offers surprising fruit purity – soft, cooked plum and deeper bramble fruit, as well as savoury sousbois and – with time in the glass – liquorice and an almost marmite intensity. It’s ripe and vibrant, with amazing freshness on the palate, the tannins are seamlessly integrated with the sweet fruit. Few people have heard of Ch. Clos de Sarpe – and even fewer have followed its evolution in recent years. We sat down with Maylis Marcenat – the fourth generation of her family to run the 3.7-hectare estate – to taste through a vertical and explore the site’s identity through the ages

While Bordeaux’s Left Bank was classified in 1855, the Right Bank didn’t establish an equivalent ranking until the 1950s. There are classifications for the Graves, Sauternes and Barsac, as well as the Médoc across the Gironde, but it is only Saint-Emilion that has been classified on the Right. How does Saint-Emilion’s classification work?  The classification was first established in 1955, dividing the appellation’s properties into three levels of quality based on a scoring system. The top wines are classified as Premier Grand Cru Classé A, followed by those that are Premier Grand Cru Classé B and then the Grand Cru Classé.  From the beginning, the idea was to try and create a more democratic system that rewarded estates’ efforts and avoided complacency. While the 1855 Classification was assigned to the château – essentially the brand, rather than the wine or specific vineyards (meaning properties could expand and shrink, yet their status wouldn’t change), the Saint-Emilion classification is judged both on terroir and the château’s performance. The classification is also reassessed every 10-15 years, with the most recent update in 2022. How are properties in Saint-Emilion classified?  As mentioned, the ranking of estates is based on a scoring system, out of 20.  For the Premiers Grands Crus Classés, the score is based on: a tasting of 15 vintages (representing 30% of the score); the property’s national and international reputation, its promotion and distribution (35%); the quality and consistency of the terroir (30%); and the property’s approach to viticulture, vinification and traceability (5%). To sit within this bracket, estates must earn 16 out of 20, with the best earning Premier Grand Cru Classé A status.  For the Grands Crus Classés, the score is based on: a tasting of 10 vintages (representing 50% of the score); the property’s national and international reputation, its promotion and distribution (20%); the quality and consistency of the terroir (20%); and the property’s approach to viticulture, vinification and traceability (10%). In essence, there is more focus on the tasting and the property’s practices, and less on terroir or its reputation and representation in the market. To achieve Grand Cru Classé status, a property must earn 14 out of the possible 20 points.  Because there is a detailed assessment of the soils, properties can have some but not all of their land classified. For example, Ch. Angélus had only 27 of its 39 hectares deemed worthy of Premier Grand Cru Classé A and Ch. Canon only has 24 of its 34 hectares classified as Premier Grand Cru Classé B. Why is Saint-Emilion’s classification controversial?  While the intention to try and create a classification system that was both dynamic and about the land was noble, it hasn’t quite worked out that way. There is much debate about the different factors that contribute to a property’s score, with the proportion tied to distribution and marketing a particular point of contention. With its constant evolution, this gives more room for controversy – with anyone demoted inevitably disgruntled. All in all, the result is a legal battleground, with accusations of undue influence and more.   The initial classification took three years to finalise, and it has since been re-drawn in 1969, 1986, 1996, 2006, 2012 and 2022. After the 2006 classification, five estates filed lawsuits against their demotion, while the 2012 only brought more cases to the courts.   Ahead of the 2022 classification, most of the Premier Grand Cru Classé A estates left the classification (Ch. Ausone, Ch. Angélus and Ch. Cheval Blanc), leaving just Ch. Pavie in the top rank of the classification, joined by Ch. Figeac in 2022. Read more about the classification’s recent controversies here. What about Saint-Emilion Grand Cru? Saint-Emilion Grand Cru is – confusingly – very different to Saint-Emilion Grand Cru Classé. This isn’t a classification but an appellation – one that has the exact same geographic area as Saint-Emilion AC.  Properties need to apply to be part of the classification but can otherwise make wine under the area’s two appellations – Saint-Emilion AC or Saint-Emilion Grand Cru AC.   “Grand Cru” status is not tied to the quality of the terroir but dictated by yields (a lower maximum of 40hl/ha), a higher minimum potential alcohol and longer minimum ageing requirements (only permitted to be bottled 16 months after harvest), and must be estate-bottled. The idea is that this leads to a higher-quality, richer wine. The current Saint-Emilion classification The latest iteration of the Saint-Emilion classification was announced in 2022, with just two properties sitting at Premier Grand Cru Classé A level and 12 at Premier Grand Cru Classé B, and 63 Grands Crus Classés. Your guide to the Saint-Emilion classification

The Reynaud wines are the stuff of legend. Utter “Rayas” to a certain crowd and they will swoon. The singular style of this iconic Châteauneuf-du-Pape estate – pale, hauntingly aromatic, almost Burgundian in texture and incredibly long-lived – has a fervent following, a clan of Reynaud obsessives keen to seek out everything that Emmanuel Reynaud touched.  The property’s rustic charm – a far cry from the grandiose buildings of many famous estates – combined with the family’s inclination to shy away from their fame, happier quietly farming their vines, has only fanned the flames. Tucked away in the northern reaches of Châteauneuf-du-Pape, Ch. Rayas and its owners are elusive – only making them more sought-after.   There is no shortage of praise for these rare and special wines – whose appeal, given the Reynaud’s minimal-intervention approach, broaches the worlds of fine and natural wine. William Kelley is a loyalist, and is one of several to note how well the property performs in “off-vintages” – where the property’s distinctive profile shines through, above and beyond the vintage and region, revealing their “captivating perfume, sensual textures and eternal youthfulness”. Robert Parker described the 1990 Rayas as “one of the greatest young red wines I have ever tasted”. For Nicolas Grainacher (Vinous), “The substance, finesse and intensity packed into these wines make it hard not to fall in love with them.” Neal Martin (Vinous) perhaps put it most concisely: “God invented wine to drink wines like this.”    The history of the Reynaud empire  In 1880, Albert Reynaud, a notary from Avignon, lost his hearing aged just 45. No longer able to work as a lawyer, he bought an estate in Châteauneuf-du-Pape, in an area called Rayas, where he saw out his days farming vines, apricots and olives. In 1910, his son Louis Reynaud took over running the estate. Louis had studied agriculture in Angers and was particularly interested in viticulture. He uprooted trees to plant new vineyards and bottled the property’s first wine in 1920 – using the name “Rayas”, the name of the forest on their parcel of land. It was the beginning of Rayas as we know it today.  Louis famously added the wording “Premier Grand Cru” to the Rayas labels, a self-pronounced classification of the wine – and notoriously defying the appellation rules (introduced in 1936). Building the property’s reputation and sales, he started expanding the business. Between 1935 and 1938 he bought Ch. des Tours in Vacqueyras, entrusting his son Bertrand with the larger 58-hectare property northeast of Châteauneuf-du-Pape, not far from the town of Orange. Around the same time, he built a new cellar and winery at Rayas, bringing the buildings within the appellation’s boundaries. After the Second World War in 1945, Louis purchased Ch. de Fonsalette, an estate further north of Orange, in Lagarde-Paréol – and, with that, the full suite of Reynaud properties was in place.  By the time Louis passed away in 1978, the Reynaud wines were some of the Rhône’s most famous.  
After his death, his youngest son Jacques took over Rayas and Fonsalette, while Bertrand continued to run Ch. des Tours. With the shift in ownership at Rayas and Fonsalette, quality dipped a little – but soon Jacques was making wines that lived up to the Reynaud name.  The old vines at Rayas, planted on sandy soils, facing north/northeast, surrounded by pine forest, produce wines of exceptional elegance and aromatic finesse, wines with haunting perfume, pale colour and almost Pinot-like delicacy, yet phenomenal persistence and ageability.   Jacques was renowned for being eccentric. A recluse, happiest in the vines and never keen to welcome visitors, he was rumoured to, on occasion, lie in a ditch to avoid journalists or other members of the trade. His aversion to the limelight surely only added to the wines’ allure. He died rather suddenly in 1997, while shoe shopping in Courthézon. Having no children of his own, his nephew Emmanuel – Bertrand’s son, who had been running Ch. des Tours since 1989 – inherited both Rayas and Fonsalette, taking the reins across all three properties.  The transition between Jacques and Emmanuel wasn’t seamless, as Emmanuel renovated the estate and replanted parts of the site, but by the early 2000s quality was once more living up to the Reynaud name. The style has shifted between generations, and while Jacques’s wines were more structured and solid, Emmanuel favoured more sensual, perfumed expressions. Over the last two decades, little has changed across the Reynaud properties – the wines’ mythical status only confirmed with each release. The new generation – Emmanuel’s sons Louis Damien and Benoît – are now continuing the family’s legacy.    The Reynaud philosophy  The approach at Reynaud is old-school – here, tradition reigns. Modern monoculture is not the method – with various crops across the estates, and biodiversity nurtured with swathes of woodland. The vines – all bush vined, many with significant age – are farmed in exactly the way as they’ve always been, organically with minimal inputs, ploughed by horse.  The fruit is all hand-harvested, whole-bunch fermented with indigenous yeast in cement tanks. Since Emmanuel took over, parcels have all been vinified separately. Macerations are gentle, generally under two weeks with a single pump-over a day. Ageing is in large, old oak, with no new wood used anywhere across the properties – indeed the youngest demi-muid or foudre at the estate may well be 30 years in age. Sulphur additions are minimal, with only a small amount at fermentation and a final addition at bottling, with the wines bottled unfined and unfiltered. The method is simplicity at its finest, focused on expressing each site – and the results speak for themselves. The wineries are rustic farm buildings, offering only the basic requirements, with no modern technology employed – and, given the wines produced, not needed.  Grenache is the core of all the Reynaud wines – the grape that thrives in their terroir and is the magic behind Rayas. Beyond Rayas, Cinsault is used to bring elegance and suppleness, while Syrah was long avoided – used only at Ch. de Fonsalette. Louis Reynaud believed the variety belonged in the Northern Rhône, and other than the small portion that made it into the Côtes du Rhône, the rest of the Syrah was sold off in bulk under his reign (often to local restaurants, who used it in their sauces). The Côtes du Rhône Syrah cuvée only introduced under Jacques Reynaud’s tenure, at first sold to the restaurants who had seen its quality in their sauces. There is no Mourvèdre at any of the estates, as Emmanuel Reynaud believed that their soils are too dry for the grape.  The Reynaud wines and estates  The Reynaud family comprises three distinct estates – Rayas, Fonsalette and Ch. des Tours, although Fonsalette doesn’t have its own winery.   Ch. Rayas  Rayas is the original Reynaud estate, purchased in 1880, and takes its name from the climat. In the northern reaches of Châteauneuf-du-Pape lie the 12 hectares of vines, surrounded by 11 hectares of forest. Forget the region’s stereotypical galets roulés or pudding stones, known for their ability to hold heat, Rayas sits on red, iron-rich, sandy soils, over richer clay. The soils are poor and the bush vines planted at low density, with a mere 2,500 vines per hectare – yielding just 10 to 20hl/ha. Significant replanting took place in the 1980s, meaning the vines now average 40 years in age, although there are still some survivors from the 1940s.  The site’s northern exposition combines with the influence of the wooded areas, offering shade and humidity, making for an extended growing season and preserving freshness in the wines. The Reynauds are among the last to harvest, often only picking in October/November, as much as two months after their neighbours. The resulting wines, however, do not speak of intense ripeness – but are all about elegance and finesse.  While Châteauneuf permits 13 red varieties, at Rayas you’ll find only Grenache Noir, with two hectares dedicated to white grapes – Grenache Blanc and Clairette. The Grenache vineyards can be divided into three section: Le Levant, Le Coeur and Le Couchant, each taking its name from its exposure to the sun – respectively as it rises, at its peak and as it sets. Writing for The World of Fine Wine, William Kelley describes the three components of the vineyard thus: “Le Levant is the most floral and ethereal, contributing the wine’s spine; Le Coeur is the most complete, contributing Rayas’s skeleton; and Le Couchant, with its richer, more compote-like fruit tones, brings the fat.”  The fruit is all hand-picked. The Grenache is kept on its stems, the whole bunches crushed before a gentle maceration for maximum two weeks (one pumpover a day) and indigenous-yeast fermentation. The wine is pressed off and aged in old foudre for a little under two years.  The delicacy and finesse of the resulting wine is reminiscent of top Burgundy. Pale in colour, Rayas is deeply aromatic, with haunting floral notes and an ethereal, silken texture that balances the wine’s earthy, savoury intensity. Between 1,200 and 1,500 cases of the flagship Châteauneuf-du-Pape are produced each year. The wines age beautifully and Emmanuel himself recommended waiting 20-25 years before opening a bottle of Rayas to fully experience its evolution.  The white grapes are planted across three parcels in Le Levant, comprising two hectares. The Grenache Blanc was planted in the 1940s, ’50s and ’95, with the Clairette planted in 1986. Fermented in old (80 to 100 years old) foudre, purchased second-hand by Louis Reynaud (Emmanuel’s grandfather), Rayas Blanc is a 50:50 blend of Grenache Blanc and Clairette, aged in old oak for around 11 months. The wine is made in extremely limited volumes, with only 400 or so cases produced each vintage. Rich yet poised, this rare white is immensely fragrant with notes of almond and white flowers, intensely mineral and textured, and can age for at least a decade.  Pignan is sometimes considered a “second wine” at Rayas, but it in fact comes from it own, specific site on the estate, a single two-hectare block surrounded by pine trees on the northern edge of the property with less sandy soils. Also pure Grenache, made in exactly the same way at Rayas, it offers a more immediate and approachable expression of the Rayas style, yet similar perfume, purity and structure – and is still capable of extended ageing. It can, on occasion – and especially in cooler vintages, rival its older sibling, Rayas. Around 650 cases are produced each year.  The Rayas wines are all only released when entering their drinking window, with the reds often only emerging from the estate over a decade after the harvest.  Ch. de Fonsalette  The “latest” addition to the Reynaud galaxy, Ch. de Fonsalette was purchased by Louis Reynaud in 1945. The property is large, covering 120 hectares in total, but with 12 hectares of vines in amongst woodland, farmland and olive groves, north of Orange in Lagarde-Paréol. Today it sits largely within the Côtes du Rhône Villages Massif d’Uchaux appellation (established in 2005), however the wines are all labelled just as Côtes du Rhône. Further north, the microclimate is cooler than at Rayas, and stylistically the wines are more restrained than those of Ch. des Tours, for example, but not as ethereal as those of Rayas.  The soils here are very different to those at Rayas with gravel, sand and red pudding stones. The vineyards are planted to Grenache, Cinsault and Syrah for red grapes, and Grenache Blanc, Clairette and Marsanne for whites. The vines are generally old, with the oldest planted in 1929.  The philosophy in the vineyard and winery is exactly the same as at Rayas – and, as the property doesn’t have a winery of its own, the wines are even made at Rayas. The reds are whole-bunch fermented, with a maximum two-week maceration and one pump-over a day. The wines are aged in a combination of enamel-lined tanks and large, old oak, bottled around a year or so later.   There are three wines in the range at Ch. de Fonsalette. The Côtes du Rhône Rouge is a blend of 50% Grenache, 35% Cinsault and 15% Syrah, the notably high percentage of Cinsault giving the wine particular lift and aromatic finesse – a wine that whispers and draws you in. There is a second red, a Côtes du Rhône Syrah which is 100% Syrah – a structured, dark-fruited wine that offers restrained power and quiet depth. Under Louis Reynaud, this was sold off in bulk, only first bottled under Jacques Reynaud (from 1978) and sold locally, largely to restaurants, before being offered more widely under Emmanuel. The Côtes du Rhône Blanc is a blend of 80% Grenache Blanc, 10% Clairette and 10% Marsanne, producing a textural and complex white with notes of stone fruit and herbs, and a saline undertow.  La Pialade  This wine is a slight anomaly in the Reynaud line-up. Only made in certain vintages, La Pialade Côtes du Rhône is vinified and aged at Rayas, made with declassified parcels from either Rayas or Ch. de Fonsalette. The blend is typically 85% Grenache, 15% Cinsault and 5% Syrah. Produced in tiny volumes, and even rarer given it isn’t made every year, it is often described as an “everyday Rayas” – more open in style, but can match Rayas for its subtlety and delicacy, even if it does not have the same depth.  Ch. des Tours   Purchased by Louis Reynaud in the late 1930s, Ch. des Tours was Emmanuel Reynaud’s home estate – having taken over running the property from his father Bertrand in 1989. As it was entrusted to Bertrand from the beginning, and never managed by Jacques Reynaud, the estate has always stood apart from Ch. Rayas and Ch. de Fonsalette – however all three have fallen under Emmanuel since 1997. Benoît – Emmanuel’s son, who studied oenology in Switzerland – has recently taken the lead at Ch. des Tours, having worked closely alongside his father.  The property gets its name from the towers or tours that frame the château building. Located in Vacqueyras, not far from Orange and northeast of Châteauneuf, it covers 40 hectares, with grains and olives as well as grapes. As it was long run separately, the property has its own winery.  Although the Reynaud philosophy runs through all three estates, the wines at Ch. des Tours are stylistically distinctive, offering more structure, muscle and intensity versus the more subtle, high-toned, perfumed style of Rayas and Fonsalette. The winemaking is largely similar to at Rayas and Fonsalette, with fermentation is concrete and maturation in old oak. Although the red grapes are mostly whole-bunch fermented, this is the only property where small portions are destemmed. The range is more complex at Ch. des Tours with a selection of wines bottled under Ch. des Tours, some under Domaine des Tours and a rosé made under the Parisy label.  There are five wines under the Ch. des Tours label:  Vacqueyras: A blend of 80% Grenache and 20% Syrah, this is a structured and powerful wine made exclusively from the oldest vines on the estate.  Côtes du Rhône Rouge: A blend of 65% Grenache, 20% Syrah and 15% Cinsault, this is a supple, juicy red packed with fruit and spice.   Côtes du Rhône Rouge Grande Réserve: Only made in specific vintages, this is effectively the Vacqueyras declassified when there isn’t sufficient colour – made in 2002, 2014 and 2015.  Côtes du Rhône Blanc: Made in very limited volumes, this white is 100% Grenache Blanc – a floral, textural wine that is worth seeking out.  Côtes du Rhône Blanc Grande Réserve: Only made in certain vintages, this is not a declassified bottling (like its red sibling), but a special bottling of the property’s best Clairette and Grenache Blanc. The 50% Grenache Blanc, 50% Clairette wine was produced in 2003, 2014 and 2015.  The Domaine des Tours label is all sourced from Ch. des Tours however is a slightly separate project, generally offering more accessible wines, almost all labelled as IGP or Vin de Pays. There are four wines under the label:  Vin de Pays de Vaucluse Rouge: This is a deeply expressive field blend of Grenache, Counoise, Syrah, Cinsault, Merlot and a host of other varieties.  Vin de Pays de Vaucluse Merlot: This 100% Merlot comes from the richest, clay soils on the property, producing amore opulent and exuberant wine.  Vin de Pays de Vaucluse Merlot-Syrah: A blend of Merlot and Syrah, which shifts according to the vintage, is a concentrated wine that combines the generosity of Merlot with the spice of Syrah.  Vin de Pays de Vaucluse Clairette: This 100% Clairette is pure and fresh, driven by minerality.  Under its own label is Les Tours Grenache Blanc – a rich, ripe and generous 100% Grenache Blanc full of stone fruit, bottled under the Vaucluse appellation. The last wine from Ch. des Tours is the Parisy rosé, a dry, delicate Grenache/Cinsault Vin de Table designed for everyday drinking. The labels themselves don’t detail the vintage, with this information only visible on the cardboard case.  Which Reynaud wines are made where? Ch. Wines sold en primeur will be released from the producer after bottling, typically 18 months after the so-called campaign ends. Upon arrival your wine will be stored at Vinfolio in our temperature-controlled warehouse until you decide to take delivery.

We will source this item at the guaranteed price from our network of suppliers and arrange expedited shipment to FINE+RARE.
 The lead-time depends on many variables, but 2-4 weeks is typical for expedited sourcing.
 Once your order is confirmed, we'll keep you updated on its ETA.

When a wine is on "pre-arrival", it means that we have a confirmed order on the bottles from our supplier and we are simply waiting for the winery or distributor to ship the wine to us. The delivery timeframe for pre-arrival wines varies significantly, depending on where the wine is coming from. We will notify you once they arrive at our warehouse and, at that point, you can decide to arrange shipping or list them for sale.
