For more than two decades, Donum has been quietly crafting single-site, single-clone and sometimes single-barrel wines. With a new estate vineyard to their name, Rachael Ryan – Senior Buyer at our US arm, Vinfolio – sat down with winemaker Dan Fishman to find out more about the ambitious estate  Like most of the New World, California eschews a hierarchy of vineyards. Yet in the absence of Grands Crus and First Growths, some vineyards are just acknowledged as being a notch above the rest. Ask any winemaker for a wish list of vineyards, and a handful of familiar names is repeated. One of these is the Savoy Vineyard.  Nestled at the north end of the Anderson Valley, Savoy was first planted in 1991 and quickly became a source of Pinot Noir for some of the most respected wineries in Northern California, including Littorai, Williams Selyem, Radio-Coteau and Peay, with many more on the waiting list. Last year, however, it was acquired by Donum, a winery based in Carneros with a reputation for producing small lot Chardonnay and Pinot Noir, sold exclusively to private collectors and therefore rarely seen on the market.  Since it was created in 2001, Donum had slowly expanded its reach beyond Carneros, with vineyards in the Russian River and Anderson Valleys, as well as the Sonoma Coast. With the acquisition of Savoy, however, their already envious collection of vineyards took a very notable – and sizable – jump. The gain of this prestigious vineyard marks a shift for Donum, who will now produce wine from estate fruit only: 130 acres at their estate in Carneros, 16 acres at the Winside Vineyard in the Russian River Valley, 20 acres at the newly planted Bodega Vineyard on the Sonoma Coast, and the 42 planted acres at Savoy Vineyard in the Anderson Valley.   Already well-known for their world-class art collection (with over 50 works by the likes of Keith Haring, Yayoi Kusama and Ai Weiwei), what many visitors may not realise is that Donum now has a solid foothold in each of the premium Pinot Noir and Chardonnay winegrowing regions in Northern California.   In some ways, the vineyards owned by Donum are innately similar, perhaps most closely linked the marine layer. This dense fog rolls in from the Pacific Ocean most afternoons during the growing season and is a key characteristic of each of these vineyard sites. The mechanics of this cooling marine layer are somewhat straightforward. As temperatures climb in inland California, the hot air rises, creating a vacuum into which the denser, colder air sitting over the Pacific Ocean rushes. On a typical summer day, coastal areas are fully clouded over by late afternoon, and the fog continues to creep further inland, searching for gaps and valleys in the coastal ranges to extend its reach. This cold, moist air both lowers sunlight hours and keeps temperatures low. In other words, this coastal phenomenon is an extremely useful aide in the production of lively wines that retain a fresh edge.  Aside from cooling fog influence, however, the vineyards Donum farms are topographically quite different. The estate property in Carneros, with its gently rolling hills and proximity to the bay, straddles the southern portion of both Sonoma and Napa counties (though Donum’s property is firmly situated on the Sonoma side), with consistent winds blowing from the southeast over the San Pablo Bay giving the region a wide diurnal shift and the resulting wines a sense of energetic tension. The Anderson Valley, on the other hand, is a narrow swathe cut through dense, old redwood forest, and it's difficult not to mentally connect the rugged hills that line the valley on both sides with a similar evergreen, earthy core in the wines. The Russian River Valley is a warmer microclimate, further removed from the cooling influence of the ocean or bay, with loamy soils producing a more concentrated style of wine with opulent fresh fruit.  But for Dan Fishman (Vice President of Winemaking and Vineyards) perhaps the most unifying characteristic across each site is a hyper-focus on farming, which he believes is the best – and perhaps the only – way to showcase these unique terroirs. When he joined Donum in 2007 as a cellar intern, the farming was conventional, with routine application of herbicides and synthetic fertiliser. In recent years, however, he has spearheaded a pivot towards organic farming.   Notable features of this approach include an on-site composting program, where manure from local dairy farms is added to pomace from the winery and canes from pruning. Other eco-friendly initiatives include an integrated pest management system, extensive cover cropping (Fishman estimates Donum currently uses 20 different cover crop blends comprised of over 40 different plants), as well as animals brought into the rows for winter grazing. All these systems have improved the soil structure, “bringing more back to the soil than we’re taking from it”, he explains.  A peek into the rows at the Carneros estate reveals this shift in viticultural philosophy, with verdant cover crops and bees hovering. Tucked between the sculptures that dot the property are vines that are farmed meticulously. While the art is spectacular and very difficult to ignore, the attention to detail in the vineyards is perhaps even more impressive. Donum is now one of the first wineries in Sonoma County to achieve Regenerative Organic Certified (ROC) status for all its estate vineyards, and they’ve also been certified organic from the California Certified Organic Farming Association (CCOF) since the summer of 2022. The ROC status, however, is one that Fishman is particularly proud of, as it encompasses not just soil health and land management, but also animal welfare and the working conditions of the employees.    When asked if he has seen a difference in the behaviour of the vines, and in the quality of the fruit, since undertaking a rigorous approach to organic viticulture, Fishman’s answer is an emphatic yes. He points to the 2023 growing season as a prime example. In a year marked by record-breaking rainfall that extended into early spring, the threat of mildew was abnormally high. “Our conventional neighbors were spraying like crazy and still had mildew,” Fishman says, “but we were obviously using organic methods and applying them less frequently, and we had way less mildew. I think the vines’ natural resiliency was coming out.”   In line with a larger overall trend in Northern California, Fishman says he also has been trying to fine-tune the weight and concentration of the Chardonnay and Pinot Noir produced at each vineyard. If Burgundy’s biggest challenge historically has been to achieve even ripeness vintage to vintage, California’s problem cultivating Pinot Noir and Chardonnay been quite the opposite: how to tame abundant sunshine and control vigour resulting from warm days and fertile soils. While the fog assists with this task, one unexpected benefit of the winery’s intensive focus on farming, Fishman explains, is that the vines are more in balance. “It’s on the subtle side,” he says, “but our wine chemistry is looking better too – higher acidity and more flavour at lower sugars.” Opulence has given way to restraint and nuance.   The resulting range of wines at Donum is an impressive display of small-lot vinification, broken down not just by appellation or vineyard, but also often by individual blocks. In 2021, the winery produced six distinct Chardonnays and 17 Pinot Noirs in total from Carneros, the Russian River Valley and the Anderson Valley. With the development of their newest vineyard on the Sonoma Coast, Donum’s already complex patchwork quilt of wines is about to get even bigger.   With a gentle hand in both the vineyard and winery, Fishman hopes to highlight the most minute of variations in each wine, allowing the innate characteristics of each site to shine through. “We have a really intense focus on vineyard flavour first,” he explains.    “We’re not trying to force a house style, just let the vineyard or block do the talking,” Fishman continues, “We’re trying to make the best Pinot Noir and Chardonnay in California, wherever that comes from.” With access to such an extensive assortment of prime locations, now including the illustrious Savoy Vineyard as a feather in its proverbial cap, to say that the future at Donum is exciting is an understatement indeed. While many may think of California Pinot Noir and Chardonnay as one group of wines, a monolith with little variation in style, Fishman and his team at Donum hope to change that mindset, one vineyard at a time.  The Donum wines have historically been available only to those on their mailing list, but we are now working directly with the estate: browse all current Donum listings.

Discovering Donum’s single-site wines

First place: Donum

Montrachet, Chambertin, Richebourg: these names will send chills down the spine of any Burgundy lover. But many of the Côte d’Or’s most famous domaines are looking beyond these grand names, making wines from vineyards and appellations that might otherwise fly under the radar. With reputations at stake, the likes of Domaine d’Auvenay, Coche-Dury and Bizot put as much effort and care into these “lowly” wines as for their Grands Crus. Quality in these appellations is soaring – with better vine material, cooler sites that are benefitting from the warming climate, not to mention better winemaking and know-how all contributing. Here we offer a guide to just a handful of the treasures to be found in Burgundy if you look a bit further afield. Auxey-Duresses Right in the middle of the Côte de Beaune, Auxey-Duresses is a small, sleepy village situated above Meursault. Prior to AC regulations, the white wines of Auxey-Duresses were sold as Meursault and the Pinots sold as Pommard or Volnay. While probably better known for Pinot Noir production, some of its top wines are Chardonnays made in a specific part of the appellation directly bordering Meursault.  Here, high up on the hill, over the brow of Meursault’s highest vineyards you will find vineyards facing unusually north-west. While these vineyards are too cool to adequately ripen Pinot Noir, they have proven to be a great climate for Chardonnay, particularly in today’s warming climate. In a warm vintage, the whites can give the top Meursault vineyards a run for their money. Domaine Leroy, one of Burgundy’s most eminent estates run by Madam Lalou Bize-Leroy, has holdings in this part of Auxey-Duresses in Les Lavières, while Domaine d’Auvenay also regularly produces an Auxey-Duresses Blanc on this particular northwest-facing slope from the vineyards of La Macabrée and Les Boutonniers. Depending on volumes D’Auvenay can produce three separate Auxey-Duresses Blanc cuvées in one vintage or if volumes are down will blend into one. While these are expensive options, the quality is undoubtedly there and this is a great lesser-known spot in the Côte d’Or to source outstanding Chardonnay, particularly in warmer vintages.  Domaine Roulot, Olivier Leflaive and a Jasper Morris MW favourite Domaine Diconne (which has vines dating back to 1924) also produce excellent Auxey-Duresses Blanc on these slopes adjacent to Meursault. While stricter in style than their neighbours, they remain fantastic value. For reds, Domaine Comte Armand’s Premier Cru Auxey-Duresses is another great buy. Made from two complimentary Premier Cru sites – La Duresses (whose brown clay soil brings density and tannic structure) and Les Breterins (on lighter soil bringing fruitiness) combine to make a fabulous Auxey-Duresses well worth discovering. Monthélie Next door to Auxey-Duresses, sandwiched in between Meursault and Volnay, is another lesser-known appellation which has an impressive line-up of producers on its roster. Comtes Lafon, Coche-Dury, Philippe Pacalet, Domaine Roulot and Leroy all produce Pinot Noir from this little, oft-forgotten appellation.  Monthélie is actually one of Bize-Leroy’s favourite appellations for her Maison Leroy selection. Historically, Monthélie tended to produce Gamay more than Pinot Noir, but that is not the case today. While the village wines tend to be a little lean and err too far towards vegetal flavours, the Premiers Crus within the appellation deserve much more attention. Domaine Coche-Dury produces a Premier Cru Les Barbières, while Comtes Lafon’s Premier Cru is in Les Champs Fulliot.  Both have full south exposure, enabling the wines to ripen fully even at higher Hautes-Côtes-like altitudes. In the warmer vintages, you could be justly rewarded for sourcing wines from this under-appreciated little corner of Burgundy. Monthélie is also home to Domaine Potinet-Ampeau, whose collection of older bottlings can wow the senses, provides a fascinating and educational insight into mature Burgundy. Pernand-Vergelesses Few Chardonnay appellations in the Côte d’Or are as underrated as Pernand-Vergelesses. Proximity to Corton-Charlemagne makes this unsurprising. This winemaking enclave, tucked behind the hill of Corton, has long been a consistent appellation where you find outstanding quality at a fantastic price.  While consistent in quality, it is often inconsistent in quantity due to its position between two rising hills. The lay of the land produces natural airflow that attracts hailstorms and is also susceptible to frost as cold air sits in this natural pocket of vineyards. If the region escapes these climatic perils, the Chardonnays are linear and have a flinty, mineral character. The wines can age well, gaining richness as they mature. A top producer of particular note is Domaine Rapet – of whom Wine Advocate critic William Kelley recently noted, “It’s a mystery these wines are not better known or distributed.” Being the biggest landowner of Corton-Charlemagne, they are one of the region’s most consistent white wine producers. Domaine Chandon de Brailles (based in Savigny-lès-Beaune) is also widely recognised for producing the best Pinot Noir in the appellation.  Their Pernand-Vergelesses Premier Cru Ile de Vergelesses regularly competes with top Pinot Noirs made in the more famous appellations and is often described as one of Burgundy’s bargains given the quality. Other better-known producers such as Dugat-Py and a more recent purchase in 2012 by Domaine Jean-Claude Ramonet (one of the world’s top Chardonnay producers) – testify to the quality found here. Perennial FINE+RARE favourite, Domaine Jean-Marc & Hugues Pavelot, also produce outstanding Chardonnay from Pernand-Vergelesses. Morey-Saint-Denis While Morey-Saint-Denis can hardly be described as under the radar, it continues to be undervalued amongst its neighbours despite its obvious pedigree. Morey-Saint-Denis’s prime location in the Côte d’Or sandwiched between Gevrey-Chambertin and Chambolle-Musigny, for some reason – despite being home to five Grands Crus (Clos de la Roche, Clos de Tart, Bonnes Mares, Clos des Lambrays and Clos St Denis) – never gets the same limelight as either of its neighbours.  It’s possible to blame the autonomous nomenclature of its Grands Crus – with only Clos St Denis having a clear link to the village. It has meant that Morey-Saint-Denis as an appellation is seen as somewhat lesser in quality than its neighbours. Another reason might be that, like Auxey-Duresses, before the AC regulations came into play, the wines of Morey-Saint-Denis were either sold as Gevrey-Chambertin or Chambolle-Musigny.  Outside the Grands Crus, our excellent recent discovery is Domaine René Bouvier. Their  Morey-Saint-Denis En la Rue de Vergy is a simply stunning Pinot Noir no matter where it is from. While only classified as village, this vineyard is surrounded by Morey-Saint-Denis’s most illustrious Grands Crus – Clos des Lambrays, Clos de Tart and Bonnes-Mares – on the border with Chambolle-Musigny. In a sunny vintage, this cooler site has excelled and remains one of the great value-buys of 2019. Chassagne-Montrachet Rouge It is not simply lesser-known appellations that get missed. While its Chardonnays get all the attention today, Chassagne-Montrachet was historically a Pinot Noir appellation (as was Meursault). Today, Pinot Noir only represents about 20% of production within the Chassagne-Montrachet Premiers Crus, but until the 1960s, the appellation was dominated by the red grape. Some of the top Pinot Noir sites here were judged to be as good as Musigny, Clos de la Roche and Clos de Tart. Today Chardonnay is the better variety in the village, but there are still top examples of Pinot Noir to be found – often at a great price for the quality. The red wines from the Clos Saint Jean Premier Cru are often described as a unique expression of Pinot Noir – a wine of fantastic finesse, quite at odds with the appellation’s reputation for robust reds. It is arguably the finest site for red wine in Chassagne-Montrachet. Jean-Claude Ramonet produces a top example and Premier Cru La Boudriotte is also great, if not a little leaner in style. Marsannay Most Burgundy buyers rarely explore further north than Gevrey-Chambertin in search of the next big thing, but all indications point in that direction. Marsannay was only given appellation contrôlée status in 1987, encompassing three districts of Chenôve (on the outskirts of Dijon’s urban sprawl), Marsannay La Côte and Couchey.  Unique to the appellations of Burgundy, Marsannay can produce a rosé wine from Pinot Noir.  The foundation for the village’s reputation, many vineyards within the appellation are dedicated exclusively to rosé production. If a red wine is made in these vineyards, it must be declassified to Bourgogne Rouge). While Sylvain Pataille and René Bouvier make the most serious and age-worthy rosés in the appellation, the whites and reds are arguably the most exciting development in recent times. The village of Marsannay is arguably producing the best Pinot Noir for the money in the whole of Burgundy. Cult producers such as Domaine Bizot with Jean-Yves Bizot’s Marsannay Clos du Roy and his Bourgogne Le Chapitre, situated just south of Dijon, are already on aficionado's radars.  These wines are made in tiny quantities and has only further increased the collectability of these wines made in a distinct style (100% whole-bunch fermentations and zero sulphur additions). If sourcing Bizot wines is too painstaking and out of one’s budget, there are plenty of other exceptional growers in this region. Domaine Audoin is producing outstanding Premier Cru Marsannay that can compete with some of the top Gevrey bottlings and the wines still remain fantastic value. Domaine René Bouvier also makes exceptional wines from Marsannay. Côte Chalonnaise: Givry, Montagny and Rully Outside the Côte d’Or, to the south in the Côte Chalonnaise, Mercurey dominates the limelight compared to neighbouring appellations Rully, Montagny and Givry. When handled correctly, however, Givry, can produce fantastic, powerful Pinot Noir that also offers finesse. Rully and Montagny are also a great source of Chardonnay and remain outstanding value.  Montagny only produces Chardonnay – the top producers being Domaine Stéphane Aladame, Domaine Bruno Lorenzon and Domaine Maxime Cottenceau. Rully produces white and red, but the domaine's Chardonnay represents one of Burgundy’s best-value white wines. Producers worth looking out for include Domaine Jaeger-Defaix and Domaine Vincent Dureuil-Janthial. Domaine Joblot is the leading producer in Givry. Their wines consistently compete with those in the Côte d’Or, a beacon for the appellation’s reputation, yet remain sensibly priced. Of the estate’s 14 hectares, nine are Premier Cru, including some of the village’s finest plots such as Clos de la Servoisine and Cellier aux Moines.  L’Empreinte –  a blend of their four red Premier Cru sites (Clos de la Servoisine, Cellier  aux Moines,  Clos  Marole  and  Les Bois  Chevaux – is the property’s top wine. The white, Cuvée Mademoiselle, is a blend of  their  older-vine  Premier Cru  Chardonnay from  En  Veau  and  Clos de la  Servoisine. Joblot is rightfully praised by the likes of Clive Coates MW,  Robert Parker, Allen Meadows and Jasper Morris MW for being the leading address in Givry and one of the greatest estates in Burgundy. Hautes-Côtes de Nuits Situated over the brow of the main Côte d’Or slope and further to the west are the vineyards classified as the Hautes-Côtes (the higher slopes) of the Côte de Nuits. Typically around 100 metres higher in altitude, only the southwest and southeast slopes are warm enough to ripen grapes, but geologically parts of the region are identical to the Côte d’Or.  With warmer vintages, quality here is greatly improving and you can find some outstanding wines at a great price. Two top examples of this come from Vosne-Romanée’s Domaine Gros Frère & Sœur and Domaine David Duband. Both estates have invested heavily in the region believing in the potential of these cooler sites in a warming climate. Aubert de Villaine’s Domaine de la Romanée-Conti also produces an Hautes-Côtes de Nuits Blanc, from grapes grown on the slopes below the historic Abbaye de Saint Vivant. Off the beaten track in Burgundy

While the 100-point-scoring Pomerol Ch. L’Eglise-Clinet is the jewel in the Durantou crown, the family works with three other estates – Les Cruzelles, Saintayme and Montlandrie, in the Côtes de Castillon. The family bought the 28 hectares of this latter property in 2009. It perches at 86 metres’ altitude (a relatively lofty height for this part of the world), on the same limestone terrace as the heart of Saint-Emilion, which re-emerges here, next to the town of Castillon-la-Bataille. And it’s this limestone which defines the site – bringing incredible freshness to the wines it produces. The Castillon property has been totally replanted, and not just to vines, but with olives, oak trees and truffles, as well as vines, and space for beehives too. They’ve got a well and solar panels on the winery, meaning they are totally off-grid and self-sufficient – Noëmie Durantou Reilhac (who took over after her father Denis passed away) tells us how her father used to joke that if anything happened, Montlandrie is where they would go – their arc for the apocalypse. As it has been planted entirely by the Durantous, the vine spacing is very specific – 6,172 vines per hectare, a number based on the golden ratio, with vines planted 1.62 x 1m, as dreamt up by the late Denis. The vineyards are also still babies – with an average age of just 10 years, and the youngest fledgling vines planted this year, all with massal selections from Eglise-Clinet. This wild and spacious property is a total contrast to Eglise-Clinet, which has been in the Durantou family since the 18th century. Their Pomerol estate takes its name from the church that was once nearby, the cemetery of which has survived (with a new church built in the heart of the village, visible across the brow of the hill). The vineyards were leased for many years, and it was only under Denis Durantou that the family reclaimed them, in 1982. The oldest vineyard plots date back to 1905 – century-old field blends that even have a handful of Malbec vines scattered in amongst them. They have a mere 4.5 hectares, divided in parcels around the château, all on soils that are a combination of the region’s famous blue clay and ferruginous sandstone. Here in the heart of Pomerol, there’s no space for an olive grove or other crops – the tiny plots are far too precious for such folly. Tasting the wine from these two addresses in two utterly different vintages – 2013 and 2018 – shines a light on the sites, the style and the winemaking. The 2013 vintage is not fashionable among collectors – the rainy year led to immense disease pressure and made it challenging to ripen fruit. But, as Durantou Reilhac told us, what you do with the fruit you pick is much more important than the vintage itself. A cooler, off-vintage, the 2013s are rarely wines that earn high scores (or demand), yet these are the years that are most revealing, and often insider choices. By contrast, 2018 is remembered as a warm year – the first of the trilogy of excellent vintages (along with 2019 and ’20). The reality, however, was an incredibly wet start to the season, with rain throughout May and June, the weather only becoming hot and dry from mid-July – and saving the season. The resulting wines are blockbusters – bold, rich and ripe, and some that are perhaps overly so. The 2013s both showed a more herbaceous freshness, with redder fruit, slightly more austere tannins and lighter body – yet both Montlandrie and Eglise-Clinet were moreish. They are wines that I would consider the perfect “luncheon Claret”, with just a hint of savoury leather and sousbois creeping into their profile, both gasping for food. Both really benefited from additional air, relaxing their structure a little and making them more approachable. Unsurprisingly, the 2018s were different beasts. “The more I taste [the 2018 vintage], the more I love it,” Durantou Reilhac said. And with these wines, it was easy to see why. Especially for Montlandrie, whose vines were that much older by this vintage, the wine showed a vibrancy and dark perfume that Durantou Reilhac described beautifully as “baroque”. The 2018 Eglise-Clinet effortlessly stole the show at the tasting, a wine that is yet to reveal itself fully, but already offers so much. The wine is dense, compact, with an angularity to the frame around tightly packed, pure and seamless fruit, gradually revealing delicate florals. “You can feel the potential of full bloom,” Durantou Reilhac said, comparing the wine to a flower just starting to unfurl its petals.  For Durantou Reilhac, the key to producing wines like this is the harvest date. “If you look and you wait, you don’t control anything anymore,” she explains – and this was a particular danger in 2013, with some waiting too long. Ultimately, the goal is to craft wines that echo the perfect peach, plucked fresh from the tree – juicy and sweet, yet vibrant and mouth-watering – a pure expression of the very freshest fruit. To do that, they opt for gentle extraction, lower fermentation temperatures and shorter maceration times, as well as careful use of oak – with the aim “to enhance in a tactile way”, rather than add aromatics. For the 2018s, for example, one might assume they would have used a higher portion of new oak, with the concentrated fruit able to handle more – but in fact they used less. “The structure was already so powerful,” Durantou Reilhac tells us, and they didn’t want to “overbuild” the wine with more, “It would have crashed against the fruit.” New oak can help bring acidity and freshness, while one or two-year-old oak can “tire” the wine, she finds. The key, however, is to find the balance between the acidity and tannin: “A great wine makes you accept its acidity, thanks to its tannins,” she explains. It's unfair in many ways to put the much more modest Montlandrie alongside Eglise-Clinet, but the wines are so different, and Montlandrie already shows such potential – only reinforced by tasting recent vintages en primeur (with the 2022 a particular highlight of the vintage). Montlandrie offers a much more linear, direct and fresh style – much closer, unsurprisingly given its limestone, to Saint-Emilion than Pomerol. Eglise-Clinet, however, is plusher, denser, yet not at all over the top – managing to be both immensely concentrated and structured, yet elegant and contained. They are totally different sites, two totally different expressions of the Durantou style – but it’s perhaps the restraint, freshness and purity of fruit that connects the two. The thread of perfume and precision runs throughout, wines that – even in vintages as big and bold as 2018 – you simply want to drink. For good or for bad, the 2021 was a vigneron’s vintage, a year that required every bit of nous to circumnavigate the many issues that plagued the growing season. With an early budbreak and one of the latest harvests on record, it was a long and exhausting vintage for everyone involved. This was by no means a vintage that made itself – and its success was determined by the actions of man not nature. Whereas normally there tends to be quite a bit of variation between the sub-regions of Bordeaux throughout the growing season, in 2021 things were decisively challenging everywhere. All were initially threatened by frost, followed by mildew pressure, excessive rainfall in June, cool summer temperatures and a general lack of sunshine throughout the spring and summer months – only to be rescued in the final sunny weeks leading up to harvest. Some unlucky enough (mainly around Sauternes) also suffered hail damage prior to harvest. Despite the homogenously bad weather, the varying soils and varieties throughout the region all reacted quite heterogeneously, meaning some suffered more than others. Such were the manhours required in the vineyard in 2021, production and quality were going to be badly affected. Bear in mind this was all still at a time when Covid-19 was still a pressure point for employment, as noted by a number of wineries we visited. The mild and very wet winter brought an early and uneven budbreak, as early as 10th March in Pessac-Léognan and 15th March in Saint-Emilion – which was a full two weeks ahead of normal. This was followed by unseasonably warm weather, Ch. Figeac in Saint Emilion registered 25˚C, resulting in the vines’ quick acceleration of growth. With the vines already so advanced, the threat of spring frosts was all too apparent. Right on cue, temperatures plunged at night.  The 6th, 7th and 8th April saw black frosts cause significant damage across the region. Those worst affected in the classified sites were in Sauternes and Pessac-Léognan – with some châteaux in Sauternes witnessing their entire crop wiped out. The threat of frost was a prolonged agony for many, lasting right up until the 5th May, with temperatures recorded as low as -5˚C. For the Moueix estates in Pomerol, the combination of wind turbines and smudge candles could raise the temperature in the vineyard up by 2˚C – enough to protect the grapes. Other properties without such resources weren’t so lucky. Ch. Margaux's white wine vineyard is famously susceptible to frost. After installing a sprinkler system throughout the whole 8.5 hectares, the system malfunctioned, not working on 1.5 hectares where they lost everything (fortunately the remaining seven escaped harm). The frost damage was far from democratic, with estates within the same appellation seeing widely different levels of damage. As always, the châteaux on the Left Bank closest to the Gironde such as Ch. Léoville Las Cases and Latour came away largely untouched by the frost. Further north in Saint-Éstephe, châteaux such as Calon-Ségur and Montrose were also unaffected – not just due to their close proximity to the river. The cooler clay-rich soils of the appellation mean budburst is always delayed, and with the vines not as advanced, damage was limited. The risk of frost threatened Saint-Emilion for 10 days straight and led to a huge amount of work in the vineyards protecting the vines. The vineyards on the lower plains were worst affected, Croix Canon for instance, while Ch. Canon and neighbouring Ch. Berliquet up on the limestone plateau were spared, due to the vineyards’ fortunate south/south-west exposition – the brow of the hill protecting the vines from the freezing northeasterly winds. Vines basking in the sun at Ch. Latour If there was one moment of calm throughout the 2021 growing season, it came at flowering. Clement, dry weather engendered successful flowering, though rains arrived at fruit-set, leading to coulure for the Merlot. A huge deluge fell in June – as much as three times the month’s average rainfall. The damp, cloudy conditions saw the widespread outbreak of mildew that remained throughout June, July and into August. Bordeaux’s proximity to the Atlantic and the naturally high levels of humidity this brings have always made it susceptible to mildew, but for many vignerons we spoke to, this was the worst outbreak they had ever seen. The poor climatic conditions saw coulure and millerandage (the development of fewer and differently sized berries) badly affecting the Merlot on the Left Bank. This is why you’ll see such high proportions of Cabernet Sauvignon in the blends this year – with Cabernet being much less susceptible to both conditions. Despite the blanket attack of mildew, its effects varied from property to property. Ch. Margaux believed the mildew outbreak was the worst they had ever seen, yet for them, it never reached the grapes, only the canopy – allowing them to protect the fruit from damage. Perhaps their largely Cabernet Sauvignon plots made it easier to protect; Merlot certainly wasn’t so lucky. Further north in Saint-Julien, Ch. Ducru-Beaucaillou chose to leave the grass cover throughout the growing season to soak up the humidity and reduce the rain splash which spreads the mildew to the vines. Many sprays later and the yields were still significantly impacted; their Grand Vin is 98% Cabernet Sauvignon (the highest proportion ever) and production is the lowest on record, cropping at 20hl/ha. Ch. Pontet-Canet in Pauillac was devastated by mildew in 2018, losing two thirds of their crop. Despite the bigger outbreak in 2021, production was down only 15% – clearly having learnt how to better cope with the issue. The estate’s Justine Tesseron emphasised that you had to react fast to protect the grapes – you had to get out into the vineyards immediately after each rain episode to stop the spread. It was the year their newly built “tisanerie” came to the rescue, making them much more efficient in preparing their biodynamic sprays and reducing the overall impact. Many estates including Ch. Cos d’Estournel and Calon-Ségur carried out early de-leafing to reduce the impact of the disease. It was a huge risk. If the climate switched to more intense sunshine, the crop would have suffered significant sunburn. But the intensity of the sun, fortunately for them, was never that strong. With such high levels of rainfall in the summer months, the vignerons faced their next issue – a slow and uneven véraison. That moment where the energy of the vine switches from producing its canopy to ripening the grape is set off by a period of hydric stress – something which was not forthcoming in 2021. An event that typically takes place over two weeks was spread over four. The high rainfall also meant bigger berries and dilution was a concern, particularly as they edged towards harvest, worried the skins could burst and rot would set in. Fortunately, things finally started to dry up in August and, while temperatures remained mild, the grapes pushed through véraison. The September weather finally brought some hope for the vintage and, according to many vignerons, was their saviour. Sunny days and cool nights were ideal for grapes to concentrate, retaining freshness, while producing the beguiling aromatics that are so distinct in the 2021 wines. There was a little more rain in mid-September, most notably in the Médoc, which brought concern over rot, but any significant damage was held off by a dry and sunny October. Smudge pots or "bougies" between the vines, on hand to offer protection against frost The northern appellation of Saint-Estèphe was noticeably drier than appellations to its south, with hydric stress starting in July and “perfect weather” followed in August according to Ch. Montrose’s Lorraine Watrin. She compared the growing season to 2014, which was particularly successful in the appellation. By the end of September, throughout the regions, most of the Merlot was picked. Of course, the Sauvignon Blanc and Sémillon grapes, capable of growing in much cooler, wetter conditions, were much less affected by all of Mother Nature’s shenanigans. For the estates that avoided the frost, the whites reached good volumes and the fresh temperatures of the growing season proved ideal for the varieties. The whites were largely picked in the first two weeks of September and the top examples proved exceptional. For the reds, Mother Nature had one more card to play. Weather forecasts for the first weekend in October predicted heavy storms and more rainfall. With the large berries close to ripeness, a heavy storm could decimate the later-ripening Cabernets and would prove catastrophic for many on both the Left and Right Bank who rely on large proportions of Cabernet in their wines. With little choice, most ran the risk, and held out picking until the storms passed. Thankfully Mother Nature’s trump card was never played. Amazingly, the forecasters got it wrong, and the storms never came. Finally, the Cabernet was picked under sunny skies. Many châteaux such as Calon-Ségur held out as long as possible and were harvesting right up until 13th October – their latest harvest since 2012. What is extraordinary about the 2021 vintage is the complete inverse effects of the previous three years. Three vintages of relative drought, plagued with concerns over rising sugar/ alcohol levels, vines blocked from maturation due to hydric stress, and a genuine concern that the wines would lack full phenolic maturity, due to the compacted ripening season. Every one of these concerns was turned on its head in 2021, producing wines that are the opposite of the 2018, 2019 and 2020s. This unique season has put technology advances in Bordeaux to the test – from weather stations, UV boosting to state-of-the-art machinery – and at its best, they’ve defied the odds. A couple of decades ago, a growing season like 2021 would have produced very little wine at all, but today the Bordelais have proven that man can – at least for now – manage almost everything Mother Nature throws at them. Ian Chang is one of the most well-respected and accomplished whisky makers in the modern era. After 16 incredible years at Kavalan, in which he and the distillery went from unknowns to untouchables, Chang is embarking on a new adventure. This time he is turning his sights to one of the most exciting whisky-producing regions in the world: Japan. You’d forgive Chang for being egotistic. Over the past decade and a half, the Taiwan-native has received countless awards and accolades for his Kavalan single malts and is fawned over by whisky lovers and the press. And yet, even through his medical mask – there are still Coronavirus restrictions in Japan when we speak via Zoom – on a slightly pixelated screen, you can feel a genuine warmth and kindness emanating from the Master Blender. He is fiercely intelligent, good-humoured and modest. When it was announced in 2020 that Chang would be leaving Kavalan, the news was met with surprise and intrigue. Why was he leaving? Where might he work next? Would he stay in Taiwan? “The reason why I left Kavalan is because I wanted to change to a different environment,” Chang tells me from his new office in Japan. “Before this project, I only had experience in Taiwan,” Chang explains. “Producing whisky in a hot climate, which means that age statement whisky can virtually not be produced due to very high angel share.” Chang says he immediately signed onto the new distillery project spearheaded by Karuizawa locals Koji and Yoshie Shimaoka. While some details are already in the public domain about Komoro, located near the fabled original Karuizawa distillery site, this is the first time Chang has spoken at such length about his intentions for the new Japanese whisky distillery. “In Japan, in Karuizawa, they have a very similar climate to Scotland, so our plan is to produce whisky with age statement,” he tells me with glee. The first Komoro age statement will be a 12-year-old, followed by a 16- and 20-year-old. Thereafter, the age statements will increase in five-year increments, Chang says. There will be some non-age statement bottlings before the whisky reaches the 12-year mark. “So hopefully I can see my very first 40-year-old whisky,” he says with a soft chuckle, “If I’m still alive – fingers crossed.” Chang joined the whisky industry as a novice (or “from zero” as he calls it) in 2005. After graduating with a degree in food technology, he applied on a whim to a role at Kavalan’s parent company. Despite his lack of experience, Chang passed the interview stage, which required him to identify flavour notes in whisky, with flying colours. For the first year, while the distillery was being built, Chang voraciously read everything he could on whisky. Then, in 2006, the young whisky-maker-to-be met a man who would change his and the distillery’s destiny: Dr Jim Swan. “That was when the official learning started,” Chang tells me. Dr Swan – who was dubbed the “Einstein of whisky” for his pioneering scientific research and ability to help new distilleries with his unparalleled whisky production and maturation know-how – began by teaching Chang the fundamentals. This education took the best part of three years and covered everything from malting, milling, mashing, fermentation and double distillation. By the time the very first Kavalan Classic Single Malt was released in year three, the team knew they had produced something exceptional, and it didn’t take long for the wider whisky world to start taking a keen interest in Taiwan, Chang and Kavalan’s ground-breaking techniques. Not that Chang would say as much. Ever humble, he continues: “That’s when my focus with Jim Swan switched to blending.” The duo travelled extensively, visiting cask suppliers across Europe and the USA, while Dr Swan taught his protégé everything he knew about whisky from his 40-year career, and, you sense, his learnings from the school of life. When Dr Swan suddenly passed away in 2017 at the age of 75, he left a gaping chasm in the industry and many people’s lives, Chang included. Five years after his mentor’s sudden passing, Chang occasionally uses the present tense when talking about Dr Swan and takes a nano second to compose himself before he continues with his train of thought. The reverence and respect is clear to see. Of all the people Dr Swan taught, directly and indirectly, Chang spent the longest time under his tutelage, and he continually credits him for every success that he has had. For his latest project at Komoro, Chang said he wants to “bring Japanese whisky to the next level” by applying the many techniques he learned from Dr Swan. It’s a brave move in more ways than one. Chang has relocated to the country and doesn’t speak the local dialect, yet – but he is very grateful that his local colleagues are willing to learn and speak English to him. He is also joining a whisky-producing region that is at a very interesting crossroads in its history. It was announced last year that new regulations will come into force in 2024 which stipulate all liquid labelled as “Japanese whisky” must be produced (from fermentation to bottling) in Japan. This undoubtedly wouldn’t have been a problem for Komoro but it does mean several very high-profile competitors are scrambling to change their practices accordingly. Chang doesn’t comment on this but he does say: “To be honest, so far, I think all the major producers, such as Suntory and Nikka don’t really use STR [Shaved, Toasted and Re-Charred casks] at the moment. “So, by introducing Jim’s technologies and also his way of new-make production we are going to enrich the spirit produced in Japan and make a whisky which will be very much more enjoyable for consumers to enjoy globally – this is our aim for the future.” One of Dr Swan’s most famous contributions to the whisky world, and Kavalan specifically, was STR (Shaved, Toasted and Re-Charred casks). The invention was born out of necessity in 2010 when shortages of refill casks began to cripple the industry. Chang says Kavalan was in “serious trouble” because the distillery was a mere four years into production and couldn’t secure any re-fill casks for their new-make spirit. It was then that Dr Swan suggested the team used ex-wine casks instead of the in-demand refill Bourbon. This was highly irregular; ex-wine casks were undesirable because of wine’s organic acids, which would spoil the whisky and make it astringent. Simply, the process of shaving, toasting and re-charring casks removes the unwanted acids, breaks down the lignin structure of the wood to release wood-related compounds (including the desirable vanillin and caramel notes), and imparts a nice, sweet character to the spirit.  When asked what the secret is to producing an exceptional whisky, unsurprisingly Chang’s answer has been heavily influenced by his mentor. For Dr Swan, it was always about layering flavours and textures. “We want to make sure that it’s a rich and complex whisky but at the same time, very balanced without any off notes. To Jim, off notes were a big minus in terms of quality and that is why distillation and fermentation is also very critical in addition to wood policy,” Chang explains. “Because off notes can come from three places: fermentation, from the wood and also from fast distillation, these are the three areas that Jim always paid attention to.” This attention would include visiting cask suppliers regularly and ensuring distillation is slow to promote interaction between the new-make and copper. He would also keep a close eye on fermentation so the temperature increases from the beginning until the end. For Chang, and Dr Swan, there is a science and an art to whisky making and blending. “When it comes to marketing, especially during masterclasses, sometimes you’ve got to tell a little bit of stories so that’s when parts of the art and romance come in,” he says, laughing gently – making him even more endearing. “But to be honest, to be a blender, sometimes you have to use your imagination as well. You have to imagine how a Sherry cask will blend with a peated new-make, for example. “Jim always said, whisky making is a combination of art and science. And I think it’s maybe half, half. I think if you don’t have good imagination, you cannot really be a good blender but if you don’t know the science and just know the romantic side you cannot produce good new-make to begin with, so you have got to combine the two to make sure that the new-make and the wood go very nicely together.” During his 18 years in the industry, Chang has seen a lot of change. With new distilleries opening at a staggering rate and lost icons being brought back to life, there has arguably never been a more exciting time to work in single malt whisky production. Chang agrees and says things are looking “very bright”. So, what does a man like Chang do in his spare time, when he’s not producing remarkable whiskies consumers want to buy? “I watch Netflix,” he says before I can finish asking the question, and then lets out that laugh again. It’s a typically frank and relatable response that comes as a slight shock to us both. Most would – truth or not – say something that made them sound high-brow but not Chang. He continues to say that he’s recently finished the entire box set of 24 (a recommendation by a friend who presumably thought he had a lot of time to kill or difficulty sleeping), a Taiwanese drama, the latest Karate Kid (Cobra Kai) and a series about Japanese history. It’s an eclectic mix and refreshingly honest. As the Komoro project enters its next stage and whisky starts to run from the stills, there will be a lot of pressure on Chang to produce another award-winning single malt but those who know him won’t be concerned. When a wine is on "pre-arrival", it means that we have a confirmed order on the bottles from our supplier and we are simply waiting for the winery or distributor to ship the wine to us. The delivery timeframe for pre-arrival wines varies significantly, depending on where the wine is coming from. We will notify you once they arrive at our warehouse and, at that point, you can decide to arrange shipping or list them for sale.
