Albert Bichot

Although the Bichot family settled in the region in 1350, Albert Bichot was founded in 1831 by Bernard Bichot. Today the producer is one of Burgundy’s most respected, making wines from both its own vineyards and with purchased fruit.

The property is currently run by sixth-generation Albéric Bichot, who has transformed its reputation since he took over in 1996. He hired Alain Serveau as technical director, who has improved work in both the vineyard and winery.

Christophe Chavel is in charge of vineyard management, with a focus on sustainability. The domaine wines are all certified organic, and wherever possible this is also true for the négoce bottlings.

Given Bichot’s long history, they have been working with many of their growers for 20 years. These relationships give Bichot access to some of Burgundy’s finest vineyards, while also owning plots across their six estates around the region. They have some superb holdings, including some of the most prestigious Grands Crus, such as Chambertin, Echezeaux and Corton.

Bichot has wineries in Chablis, Pommard, Nuits-Saint-Georges, Beaune, Mercurey and Moulin-à-Vent, meaning there is minimal time between the picking and pressing of fruit – something that has been key to improved quality here. All the wines are fermented in oak. The whites all go through malolactic and are aged in a maximum 40% new oak. For the reds, new oak is typically between 30 and 35% for the village and Premier Cru wines, and 50 to 70% for the Grands Crus depending on the cuvée.
