And with 20-plus years’ age, it should be perfect for drinking now. Even though it will accompany a roast chicken, this wine is like a celebration and a meal in and of itself.”  2018 Klein Constantia Vin de Constance – chosen by Jeffrey Koren, Head of Wine at Marceline, London  “While it’s easy to open a perfunctory bottle of Port or Sauternes at the end of a Christmas meal, the oh-so-delicious Vin de Constance by Klein Constantia has become my go-to sweet wine for the festive period over the past few years. Steeped in history, Vin de Constance was famously a favourite of Napoleon and lauded by authors like Jane Austen and Baudelaire. These days, winemaker Matt Day has revived this legendary dessert wine to its former acclaim. It always offers wonderful notes of apricot, honey and spice. But most importantly, it’s balanced by refreshing acidity that is an absolute necessity after an indulgent holiday meal.”  Hauller Frères Pinot Gris La Chappelle Signature – chosen by Joséphine Duffau-Lagarrosse, Ch. Beauséjour   “Ludovic Hauller is a long-standing friend I met during my studies in Burgundy. I appreciate the precision that his family channels into the wines, and this cuvée showcases great finesse, with freshness and elegance, mirroring the granite terroir in which the vines grow. It’s a Pinot Gris of remarkable complexity, hailing from a plot that sits below the Chapelle Saint-Sébastien de Dambach-la-Ville. Ludovic introduced me to Alsatian wines, which I knew little of previously, and I love this cuvée. As for when, this is definitely the kind of bottle I would open in the days following Christmas, with my family, playing board games by the fire and putting the world to rights, patiently waiting for the New Year!”  2002 Champagne Salon, Giuseppe Mascarello’s 2017 Barolo Villero, Tiberio’s 2018 Colle Vota – chosen by Lorenza Sebasti, Castello di Ama  “As usual, this Christmas we will open a magnum of 2002 Champagne Salon. I remember we had the chance to buy a few magnums a long time ago as they were precisely the birth years of our children (1997, 1999 and 2002). Then I guess I will spoil everyone at home with a beautiful Barolo Giuseppe Mascarello Villero 2017 and Colle Vota Montepulciano d’Abruzzo 2018 from my dear friend Cristiana Tiberio. She makes very few bottles of this very elegant and vibrant wine, which is among my favourite reds.”  2021 La Morandina Moscato d’Asti – chosen by Donald Edwards, Head Sommelier at La Trompette, London  “Beyond the best white Burgundy I can lay my grubby mits on, I’ll be cracking the second bottle on a case of La Morandina’s 2021 Moscato d’Asti – part of a new festive tradition. Back when my wine appreciation was still protean, I heard a rumour that Moscato d’Asti – the sweet fizzy floral stuff that we sold in my Glasgow Oddbins – ages magnificently. Twenty or so years later, I’m the Head Sommelier at La Trompette, hosting a big Piedmont-themed wine lunch. Barolos and Barbarescos aplenty litter the room, but the wine that stops me in my tracks? A 2013 Moscato d’Asti from Giuseppe Vajra. It was phenomenal, still gleefully tasty, but now with a touch of extra weight, more waxy lime skin and late-evening summer flowers, heady in its bouquet. Here she was, my white whale, and, boy, she didn’t disappoint.  “Last December, visiting La Morandina in Asti, I asked whether they had anything with a bit of age and lo! a 15-year-old magnum appeared. My stars had aligned for a second time – the wine equally lovely, offering a bit more exotic spice, cardamom and coriander seed along with the sweet creamy lime zest. Crucially, this time I could see the germ of a plan. Each year, I would buy a cast of Moscato d’Asti, building a reserve of Moscato to steadily enjoy over the coming years. I’ll be the Christmas king of deliciously sweet floral fizz. So, on the morning of 25th, I’ll be twisting the top off the second bottle from last year’s case and smugly enjoying my Moscato and crumpet as I let my mind wander over the riches I’m preparing for the coming years.”  François Cotat Sancerre Le Mont Damné and Massican Gemina – chosen by Alex Sarovich, Founder and CEO of Own Rooted Hospitality  "As the oldest of five in a large Italian family, I've learned that selecting the perfect wine is an art form that requires careful consideration of both the food and the audience. When I'm hanging out with my twin 24-year-old brothers, they're all about vibrant, crisp wines like Champagne or Sancerre. If I can get my hands on it, I love surprising them with a bottle of Cotat’s Le Mont Damné, a truly exceptional wine that never fails to impress.  “In contrast, when I'm with my mom and aunt, we lean into our Italian roots. White wines from Italy are a staple in our household, especially when we're in the kitchen, cooking and preparing a meal together. This year, I'm planning to bring a bottle of Massican Gemina to our holiday gathering in McMinnville. This beautiful white blend, composed of Greco, Falanghina, and Fiano grapes from top California vineyards, perfectly captures the essence of our family's wine appreciation – a nod to our Italian heritage with a California twist.”  Coche-Dury Meursault, Domaine de Trévallon and Jean-Michel Gérin Côte-Rôtie La Landonne – chosen by Philippe Abadie of Alvina Pernot  “First of all, we decided to open a bottle of 2022 Meursault from Domaine Coche-Dury, given to us by a client to celebrate the birth of our son Pâris, who was born on January 1st 2022. We also really like the new style introduced by Raphaël since he took over this magnificent estate. Then Trévallon: my grandfather Georges from the south of France was an unconditional fan of the estate, and during my childhood there was always a bottle on festive tables (for birthdays, Christmas, New Year, etc) – so this will be a little wink to him. Then last, a bottle of Côte-Rôtie La Landonne by Jean-Michel Gérin. The story goes back to a few weeks after I first met Alvina, for this is the bottle of red we drank on our first restaurant date.”  2022 Domaine Yui A Rouge – chosen by Carlito Chiu, Wine Director at Andō, Hong Kong  “Established in 2019 by the dynamic husband-and-wife duo Tetsuya and Aya Sugiyama, Domaine Yui is a Japanese winery with a profound mission of unity and togetherness. Inspired by the meaning of the Japanese word “yui”, “to connect/link”, the Sugiyamas are dedicated to bringing people together through their shared love for wine and agriculture. Their A Rouge is a remarkable expression of Burgundy-style red wine crafted in Hokkaido, Japan – a specific blend of Pinot Noir, Chardonnay and Pinot Gris that showcases the region’s terroir. “C’est quoi, traditionnel, aujourd’hui?” Marion Raphet half-jokes as we talk about the 2019 vintage, tasting her family’s bottlings at Domaine Gérard Raphet. Since 2011, it feels like Burgundy’s vignerons have been on a rollercoaster: with hail (2012, 2013, 2014 and 2016), heatwaves (2018, 2012), frost (2016 and 2017 for Chablis) and even the influx of Drosophila suzukii – an Asian fruit fly – after a particularly mild winter (2014). While global warming is nothing new to farmers – in Burgundy or elsewhere, 2019 feels like it marks a shift, with the threat of climate change suddenly all the more tangible. The year was full of extremes, from an unusual hard frost in April to a hot, dry season that really challenged vines – and growers. But in a region where tradition reigns supreme, where the way in which producers farm their vines and make their wines is passed down from generation to generation, evolution is now imperative – and, as Mickaël Haratyk of Domaine Joblot lamented, “Some producers don’t change.”  Harvest dates have gradually been creeping back, and – as Frédéric Weber at Bouchard explained – “It’s more and more difficult to pick a good date.” In 2020, Burgundy saw some of the earliest harvest dates on record – often extremely similar to those of 2003. Joseph Colin pointed out, however, that August harvests aren’t new – in 1553 producers started picking in Meursault on 14th August. He argues that the region has always had periods of warm weather that lasted 20 to 30 years; it’s a cycle. The question, however, is how long the cycle lasts – and whether growers or the vines can make great wine with fruit that is picked on 1st August. Haratyk echoed this sentiment, noting that harvests today are a month earlier than 25 years ago; with that pace of climate change, it’s hard to imagine what things will be like in another 25 years’ time.  The focus for growers used to be on getting enough sugar ripeness, with chaptalisation almost rote in decades of yore, but now it’s about retaining balance in the wines. The decision of when to pick is driven by acidity levels, to retain the essential freshness and elegance that defines fine Burgundy as we know it. At Joblot, there was a time when 11.5% potential alcohol equated to fruit that was ready for picking; now it is naturally never less than 14%. They know they’ll have the necessary sugars and maturity (with phenolic ripeness achieved easily), the challenge is to make sure nature’s generosity is off-set by the requisite acidity. But what else are the region’s vignerons doing to adapt to a new, warmer Burgundy? In the vineyard, producers can look at how they manage between the rows: ploughing is increasingly avoided, as it releases valuable moisture from the soils. The use of cover crops is another consideration; while they can help avoid erosion and preserve top soil on slopes, they also present a rival for precious nutrients and water. Growers can delay pruning, which in turn can delay budburst, helping to limit the impact of frost on the vines. Something that many producers emphasise is the importance of a thicker, taller and leafier canopy. While once vines would have been trimmed neatly, and leaves stripped to allow the sun to reach the grapes and aid ripening, today producers are limiting this work, wanting to shield grapes from the heat and limit their exposure. Charles van Canneyt, for example, still trims his vines, but lets them grow higher than he used to, and doesn’t leaf-strip at all. At Joblot, they work with a thicker canopy these days, and let the lateral shoots – that previously they’d have trimmed – grow freely. However, a thicker canopy brings its own potential problems, as Philippe Jouan noted, explaining that oidium (powdery mildew) is now the biggest issue in the vineyard. A thicker canopy means less airflow, creating a more humid environment within the canopy and therefore disease pressure. Many producers believe that mature vines are key – their deeper root systems able to reach water reserves, and with age are thought to gain a natural stability, enabling them to withstand more extreme temperatures. Marion Raphet (Domaine Gérard Raphet) explained how her old vines were so much more resistant to the rising temperatures; noting that even in a year as hot as 2020, the old vines were still green when we visited in mid-October. But some producers have seen old vines struggle in the dry conditions of 2019 and 2020. Benoît Stelhy at Georges Lignier, a proud proponent of permanent grass grown between his vines, saw his old vines seriously impacted by water stress, with the resulting yields so unviably low that they have made him seriously question the way he is working. He is now wondering if perhaps having intra-row grass cover is more important in young vineyards, where their natural vigour needs to be countered by competition. In the winery, there are plenty of benefits to the riper fruit: there’s no need for chaptalisation, and it is in general easier to extract colour, tannin and flavour. However, that same ripeness and the associated lower acidity levels, can pose problems. As Chantal Tortochot explained this year, above 13% alcohol, natural yeasts can struggle – meaning that we may see more commercial yeast (which can guarantee wines ferment to dryness) in use.  The higher pH of these musts also increases the risks of bacterial spoilage, hence producers need to be particularly careful handling them – with hygiene, temperature control and/or the careful use of sulphur of increasing importance. Benoît Stelhy described how he is trying to recreate the cold of yesteryear’s winters; he cools his wines before putting them into barrel, therefore delaying the onset of malolactic fermentation (as the region’s cool temperatures would naturally have done after an October harvest). By doing so, he can avoid adding sulphites at this stage, feeling the wines can therefore benefit more from micro-oxygenation in barrel, before malolactic fermentation takes place when the wines naturally warm up in the spring. But these measures will only work in the short-term; as the region warms further, producers need to start looking further ahead. Re-planting vineyards with rootstocks better suited to today’s climate is likely to be necessary (not to mention considering other issues posed by current rootstock selections). “The vines that are in their prime today,” William Kelley explains, “were planted with a view to early ripening in a marginal climate; in much warmer conditions, the choices of rootstock and vine genetics made in the 1970s, 1980s and 1990s – even by producers aspiring to high quality – are close to the opposite of what’s required today.” Such a shift, of course, takes time – with the need to leave vineyards fallow between re-planting for several years, and a minimum three-year wait for vines to produce fruit, or longer for fruit of serious quality. Experimental plantings of Syrah and Malbec in the region feel a little ahead of the curve, but there will certainly be a need to adapt clonal selections. The rise in the popularity of Aligoté – frost-resistant, early-ripening and high-acid – is no coincidence, and some suggest that it could be a solution for retaining freshness in the region’s whites. Small percentages of Aligoté and Pinot Blanc were once planted amongst the Chardonnay in even the grandest of Crus, and it’s something William Kelley would like to see make a comeback, feeling it “would help white Burgundies retain the tension and acidity we prize so highly”. As the mercury rises, we’re already seeing a shift in the sites that thrive. Until now, many of the sites considered the “best” are mid-slope with good exposure and drainage, basking in the sun, often with relatively little topsoil; increasingly this simply isn’t what is needed in the climate. “The big winners are places such as the Hautes-Côtes,” Kelley explains, “which are today enjoying a climate that’s very similar to what the Côte de Beaune and Côte de Nuits experienced in the 1990s.” Gros Frère & Soeur has even planted a plot of Pinot Noir at the very top of the Côte, beyond the limits of the Burgundy appellation, at altitudes that would once have been impossible.  Plots that were once unviable now are, and sites previously deemed “lesser” for their cool, marginal temperatures are being favoured. Similarly, sites with deeper, more clay-rich soils, with greater waterholding capacity, are becoming more desirable with drier conditions. As Benoît Stelhy noted in 2019 and 2020, Clos Saint-Denis with its poor soils struggled more than, say, Clos de la Roche. Alvina Pernot noted that two of her parcels either on the edge of or in the middle of forested areas (Meursault Premier Cru La Pièce sous le Bois and Puligny-Montrachet Premier Cru Clos de la Garenne) are shielded from the sun, preserving acidity and freshness in the wines. The long-term viability of some sites, however, is hanging in the balance. Producers are increasingly aware of the threat that climate change poses. As Charles van Canneyt explained, at the moment they are only seeing the benefits – with riper fruit and more concentrated musts – but they’ll need to learn how to handle, and battle, the negatives too. While the future might be uncertain, producers are slowly but surely adapting. As Benoît Stelhy noted when discussing the benefits of organics, it’ll do for now – but does it give an answer for tomorrow? “We have to go further,” he said, a sense of urgency in his voice. It’s a call to arms, and one that producers will have to follow. For now at least, the wines are arguably better than ever; let’s hope that will long be the case. Adapt or die: dealing with climate change in Burgundy

As we’ve already discussed in our pieces on Chablis and the whites of the Côte de Beaune, 2019 in Burgundy is a remarkable vintage – shaped by an unusual growing season. After a week of tasting the length and breadth of the region, low yields and high quality are the headlines: frost and bad weather at flowering led to coulure and millerandage, essentially fewer and smaller berries per bunch. This in itself leads to more concentrated fruit, but it’s the warm, dry conditions that were really key. As water evaporated from the berries in these conditions, everything was concentrated – acidity, sugar and flavour.  The resulting reds are both intense and fresh – the fruit pristine and perfectly ripe, without straying into jammy. The tannins are supple, soft and seamless – so much so that, even at this youthful stage, the wines are a joy to taste; a tannic structure that Frédéric Barnier (Louis Jadot) said is almost more reminiscent of Gamay or Oregon Pinot, and rather atypical for red Burgundy. But don’t let this approachability fool you – the structure is there, just stylishly disguised, and there’s everything the wines need for a long life in the cellar. Thanks to the “solaire” growing season, the grapes had high natural sugar levels, meaning correspondingly high alcohols – tending to sit between 13.5 and 14.5%, increasing as you move up the quality ladder. But, despite this, the alcohol didn’t stand out anywhere; it’s balanced effortlessly by the wines’ equally high concentration and acidity. Each village shows  slightly sunnier profile, the tannins shaking off any rusticity, the fruit tending to be a little more generous – but without losing a sense of place. The wonderful acidity that runs through the wines makes them deliciously moreish – a sappy salinity filling the finish and making your mouth water; they are classically “digeste” or “gourmand”. It’s almost impossible to compare as a vintage. For us, the wines truly taste unique – unlike any other vintage we’ve tasted en primeur, with the balance of freshness and ripe fruit really separating it from its peers. Most producers were unwilling or unable to draw comparisons – as Frédéric Barnier explained, it’s hard to find a vintage with the same colour, richness and balance. He briefly considered the 2015s, but feels the 2019s are much more approachable. Marion Raphet modestly described the vintage as more “agréable” than 2018. Olivier Bernstein feels the 2019s are the best wines he has ever made, while at Domaine Joblot, Mickaël Haratyk described the 2019s as “absolutely gorgeous”, but couldn’t find a comparable year. The consensus is that they’re a step up from 2018 – much more classically styled and terroir-expressive. There’s a rare balance at play, offering more freshness than 2018 and more balance than 2015.  Everyone agreed however, as Frédéric Weber of Bouchard Père & Fils said, 2019 is “a huge vintage for the future”. For him, it is a little bit like a cross between 2015 and 2017 – with the concentration, roundness and “sucrosité” of 2015, and the delicate aromatics of 2017; but it also reminds him more and more of 1947 – a superb vintage, he told us, that had similarly high alcohols but amazing purity of aroma (and, as an indication of the wines’ ageability, it’s still drinking beautifully now). For Philippe Jouan, the vintage’s hallmark is the amazing consistency found along the Côte, as well the purity of fruit found in the wines. From our tastings, we couldn’t agree more when it comes to consistency: while yields vary, the high quality is a thread that runs through the entire region. Sadly there simply isn’t much of the wines – with producers down by as much as 50%. In general, it’s the Bourgogne and village wines that were hit the hardest in terms of volumes, and mostly yields seemed to be lower the further south we tasted. The result? Burgundy expert Jasper Morris MW has had his finger on the region’s wine pulse for several decades. Especially for FONDATA, he profiles eight domaines to watch, producers that are bringing vital energy and fresh winemaking talent to the celebrated wine region

The 2020 vintage was challenging for most vignerons. But for the Durantou family, it was a year that demanded everything of them. Denis Durantou – patriarch and leading light of Pomerol – passed away on 12th May. For many people, their day-job would be the last thing on their minds. But for the Durantous, they threw themselves into work, into the vines.  “Dad passed away right in the middle of the pouring rain in spring," Noëmie Durantou 
Reilhac, Denis’s daughter – who has taken over running the estate – explains. “… Working is our way to deal with things.” With the rain, there was immense mildew pressure and risk to their crop – they had to go on, getting into the vineyard to spray and protect their fruit. Her voice unsurprisingly thick with emotion, she tells me how it was a way to be close to her father – in amongst the vines that he so loved.   Denis Durantou was first and foremost a vigneron – an increasingly rare breed in the polished world of Bordeaux. While Ch. l’Eglise-Clinet had been in the Durantou family for generations, it was leased out to Pierre Lasserre of neighbouring Clos René for over 40 years. Denis arrived in 1982, fully taking over the property a year later, and transforming the then rustic estate into one of the region’s most respected.   The 1998 vintage was pivotal – putting the property, and the talents of Denis Durantou, firmly on the map. While the wines earned high scores (and even higher prices), Denis remained grounded. He continued to run the show, staying just as involved in the day-to-day work; walking the vines and making the wine, getting dirt under his fingernails.  As the reputation of l’Eglise-Clinet soared, he became committed to producing more affordable, “everyday” wines. He acquired Ch. les Cruzelles (in Lalande-de-Pomerol in 2000) and Montlandrie (in the Côtes de Castillon in 2009), while also leasing vines in Saint-Emilion at Saintayme (from 2012). These “lesser” wines might not have been the reason for his fame, but they have long been an insider choice – offering stunning value. Each of his wines was made with precision, finesse and elegance – but he constantly questioned his decisions and sought to do better.  While Denis himself may have passed away, his passion and philosophy lives on. There was something very salt-of-the-earth about the way that Noëmie tells me: “When you have no choice, you have to take action.” The family – Denis’s widow and artist Marie Reilhac, and his three daughters, Alix, Constance and Noëmie – pulled together, dedicating themselves to crafting wines worthy of Denis’s legacy. Not – of course – that they’d take any of the credit.  “We can thank the vines,” Noëmie tells me. “They are living beings and we ask them to go through a lot.” Explaining the unusually extreme conditions of 2020, she says: “If you were drinking a gallon of water every hour for a month, and then no water for two months…”  The vintage kept them on their toes, but for Noëmie it was a fascinating and exciting year, one she saw as an opportunity to learn more than ever. While the property’s style is always elegant, with careful extraction and cool fermentations (never over 25 or 26˚C), this year that was particularly crucial because of the thick skins and ripeness of the fruit. “I like this idea that the vines had gone through so much, [we] had to treat [them] with delicacy,” Noëmie explains.  As for the wines, she’s pleased – and thinks they’ll be even better in six months’ time when they’ve finished élevage. She describes them as very fruity and juicy, but like “a flower garden in the rain”. For her, élevage was of particular importance this year – a risk that it could have been “very charming, very seductive, but not as deep as it could be”. Time in barrel, however, has brought depth to the year’s “flashy fruit”.   The emphasis chez Durantou is on purity of fruit, and expressing each property’s respective site. The barrels used are key: they have always been very loyal to Darnajou. Denis conducted many trials over the years, and the aim is to bring texture – rather than flavour – to the wine with oak. “We want the pure flavour of the bunches of the vines,” Noëmie says. This is why their barrels are double-toasted, to avoid a vanillin character. They find Darnajou lends “sucrosity” – but it’s not wooden or too smoky, something they want to avoid. They use a tiny percentage of Taransaud as well – barrels that are “much more exotic and vanilla-like” – but only want a touch, as this intensity can easily overpower the wine.   Our conversation drifts into white Bordeaux – prompting a twinkle in her eye. “I’m a huge admirer of white winemakers – it’s so technical, you have basically 48 hours. With red wine, you have this little margin to adjust…” So can we look forward to white wines joining the Durantou portfolio? “I would love to – but I have a lot on my plate right now,” she says, laughing. “It might not be for another decade, definitely. First, I want to make sure things go well here.”  Heading up the team, working with Olivier Gautrat (who worked with Denis for 20 years), there’s certainly a lot for Noëmie to tackle – including the current replanting of plots used for La Petite Eglise, l’Eglise-Clinet’s second wine. But she’s not doing it alone – along with her mother, sisters and the rest of the team (“I have an amazing team – I loved working with them,” Noëmie gushes to me).   If the 2020s are any indication, there are no concerns about Denis’s legacy. These are stunning wines, with an aromatic finesse that belies the warmth of the year. Delicate florals are complemented by a glorious weight of fruit, fine but structured tannins, and yet also great freshness.   Only in her 20s, Noëmie is clearly talented – and her love of the vine shines through. Talking to her is energising, her joy infectious – but what is apparent is how she empathises with her vines. She might look fashionable in a tan leather jacket on our call, but you can feel that she’d sooner throw it off to get her hands dirty. She’s not just a winemaker, but a sensitive farmer. While I never had the privilege of meeting her father, I can only imagine he’d be incredibly proud.  Find out more about Ch. l’Eglise-Clinet or read more Editorial
