Bordeaux is changing. The Left Bank, in particular, has long been a region of labels – of grandiose estates, polished winemakers and the bottles they produce – the vineyards a backdrop to their impressive châteaux and new state-of-the-art wineries. Of course, vineyards have mattered, as much as they’re the source of their grapes, but they’ve rarely been the focus for conversations with trade or consumers. But now, perhaps influenced by the meteoric rise of Burgundy – and an approach to wine echoed around the world, terroir is stepping into the spotlight. Behind the scenes, the Bordelais may always have been looking underfoot, but now they are talking about it too.  Nowhere is this more true than at Ch. Montrose – a property that announced a significant change when releasing its 2023 vintage. The property has always made some of Bordeaux’s finest wines, but over the past 15 years (under the Bouygues’ ownership) quality at this Saint-Estèphe estate has reached new heights. Long known for its austere age-worthiness, there’s now a modern polish that softens its stern style – without sacrificing its classicism and longevity. Each vintage seems to reveal a new level of precision and finesse. From 2023, Montrose announced that its Grand Vin would only come from Terrace 4 (T4). If that doesn’t mean much to you, I’m not surprised.  The Médoc and Graves’s six gravel terraces were uncovered by Pierre Becheler in a series of studies in the 1980s and ’90s. Each terrace dates from a different period and has its own distinct soils, with Terrace 1 (T1) the oldest and Terrace 6 (T6) the youngest – and argued to be a defining factor in the Left Bank’s terroir. T3 and T4 are widely regarded as the best for wine-growing, and Becheler found that, at the time of their classification in 1855, over 80% of the Classed Growths sat on these two distinct geological strata.  In the last decade, these gravel mounds have become a key part of Bordeaux’s story, explaining the estates’ terroir. Despite widespread understanding that the terraces are integral to the quality of wine, there still isn’t a comprehensive map of the Left Bank’s terroir – showing which vineyards sit on which soils (the best are those created by Jane Anson and Kees van Leeuwen for Anson’s book Inside Bordeaux). Most studies have been undertaken by individual estates, as at Montrose – who engaged Becheler himself to uncover the specifics of their site.  It's remarkable that, without knowing anything about the region’s subsoils, Montrose was so fortuitously placed – although it has of course survived thanks to its prestigious site. The property’s first vines were planted – all on the fabled T4 – in 1815, by Etienne Théodore Dumoulin, who had purchased the land from Nicolas Alexandre de Ségur (of Calon Ségur). The land had been covered in heather, its pink blossom covering the gentle slope come autumn, and sailors passing along the Gironde estuary used to call it the pink hill – or “mont rose”, giving the property its name.  It was only 40 years after the first vines went in the ground that the estate earned its place as a Second Growth in the 1855 Classification. By 1861, when Dumoulin passed away, the estate comprised 95 hectares – but its borders have shifted over the years. It was later purchased by an Alsace factory owner, Mathieu Dolfus, who invested heavily in the property. He was a visionary – offering free healthcare, profit sharing and accommodation on the estate for his workers. He even used a wind turbine to flood the vineyards, staving off the impact of phylloxera as long as he could.  Montrose was managed by the Charmolüe family between 1896 and 2006, with Jean-Louis – who ran the estate from 1960 – key in building its modern reputation. It was under him, in the 1970s, that vines were planted on lower-lying land close to the estuary, which sits on T5. These humid, sandy parcels are now used for La Dame de Montrose, the château’s second wine.  It was in 2006 that brothers Olivier and Martin Bouygues (of the eponymous telecoms company) acquired the property. In 2010 they bought an additional 22 hectares from Phélan Ségur, land which had historically been part of Montrose. These vineyards, wooded on either side, sit on the sandier T3, but importantly also brought the total vineyard area back to 95 hectares – as under Dumoulin – and all sitting in one block (something which is relatively rare in Bordeaux).  The Bouygues brothers hired Vincent Decup as the estate’s Technical Director in 2014. Decup instantly set about getting to grips with the estate and its soils. When he arrived, they had a map detailing 16 different soil types across the vineyards – but he soon commissioned further studies, uncovering an additional 10 soil types. This gave them, Decup tells me, “the possibility to explore and separate” parcels, diving into the detail of the site with a Burgundian, rather than Bordelais, vision. From 2017, the team started delineating the parcels – vinifying plots in 93 separate tanks (over twice the 40 that had been used just three years prior), adapting the winemaking to each. Looking at the Cabernet Sauvignon on T3 and T4, he explains how they gained a “new level of precision and comprehension of Cabernet on each terrace”.  “The Cabernet Sauvignon of Montrose naturally gets lots of power,” Decup tells me. “We have to be careful with the extraction.” Especially for fruit from T3, he explains, it can easily become overly austere. T4 has always represented the majority of the blend for the Grand Vin at Montrose – and in Decup’s mind it is not just the property’s historic DNA, but what gives the wine its identity. He tells me how there is something magical about the way Cabernet ripens on these parcels, developing technical (sugar), aromatic and phenolic ripeness all at once. It produces wine that is “powerful, voluminous, demonstrative – a lion in a cage”.  In 2022, the same year that Charlotte Bouygues took over as President and Pierre Graffeuille became CEO, the team started focusing more on T4, and from 2023 the Grand Vin comes exclusively from this prized terrace. Coming from the Delon estates, Graffeuille knew the potential of these soils, shared by Léoville Las Cases. The 2022 vintage was pivotal – earning four potential 100-point scores, with four firm 100-point scores in bottle – and the 2023 followed in its footsteps, with three potential perfect scores to its name.  The gravel terraces rise and fall through the region. T4 surfaces in Saint-Estèphe, running under Meyney and Montrose, disappearing until the southern edge of Pauillac, reappearing around Latour, then running through much of Saint-Julien (including the three Léovilles – Las Cases, Barton and Poyferré – and Ducru-Beaucaillou), rising again throughout Margaux and then again under Haut-Brion and La Mission Haut-Brion, with small pockets further south.  The defining factor of T4 is an iron pan beneath its sandy gravels. The sandy gravel topsoil allows young vines to develop roots easily, before they hit the compact iron layer – forcing the vines to spread horizontally rather than vertically. That compact layer is cool and retains water, feeding the vines in hot years. Decup explains how in July the topsoil might be hot, but if you dig down you can feel the chill of the iron layer – something that is perfect for Cabernet Sauvignon. At Montrose, T4 sits between 12 and 16 metres’ altitude, while elsewhere it reaches a maximum 22 metres. T4 tends to run close to the Gironde, which provides a moderating influence – especially so at Montrose, where the estuary is 4.5km wide (notably protecting the estate from frosts, such as in the brutal 1991 season – a year when Montrose produced the wine of the vintage).  As with T4, T3 runs beneath many Classed Growths – notably Cos d’Estournel, Mouton and Lafite. With sandier gravel topsoil, the key difference is that T3 doesn’t have the iron pan of T4 – the topsoil instead sitting directly on clay-limestone subsoil. Slightly higher in altitude (15-18 metres at Montrose, but generally 20-26 across the Médoc), the soils are very deep and the vines’ roots drive straight down, up to three metres or so at Montrose, Decup tells me. With less clay in the topsoil, the soils are particularly free-draining, and the vines reach down in search of water. “In terms of expression, it is not the same at all,” says Decup. He explains that while it also produces bold Cabernet Sauvignon, it’s got particular energy and length, an austerity – but “positive austerity”. Vines on T3 particularly thrive in hot, dry years, he tells me.  Montrose has an impressive 45 hectares of vines on T4, 12 on T3, a swathe on what the team describes as an “intermediate soil” – somewhere between the two terraces, and a small portion on T5. So what now of the property’s vines on T3? While the château isn’t openly confirming it, a separate bottling of T3 is set to be released – likely hitting the market in 2026, if rumours are to be believed. The rest of the fruit goes into La Dame de Montrose, and a small portion into a third wine, Tertio de Montrose (previously known as Saint-Estèphe de Montrose), which is exclusively for those working at the estate. All in all, the Grand Vin now represents circa 36% of production at Montrose – down from closer to 45%.   “T3 and T4 are, in our opinion, the terraces that produce the best viticultural results,” says Pierre Becheler, when it comes to the Médoc and Haut-Médoc. Interestingly he explains that in the Graves it’s very different, and T2, which is almost non-existent in the Médoc, produces some stunning results. He can’t fully explain why one terrace works better for wine than another, but one reason the terraces are so important is their influence on water availability. With varying proportions of clay and sizes of gravel, it’s a key element in viticulture and, eventually, wine quality. Although he has spent much of his career diving into these gravel beds, however, he’s very clear that the terraces are one very important piece of the puzzle – but will never provide the entire picture. Some terraces are the best in certain appellations, he says, “but we don’t really know why or how”.  The complexities of Bordeaux’s terroir are manifold – and some argue that the bedrock, from richer clays to hard limestones, are more influential than the gravel terraces that lie over them. On top of this, slope exposition, proximity to the Gironde, and many other elements influencing microclimate, not to mention the human influence, all contribute to the concept of “terroir”. It’s exciting to see site pushed to the fore, especially alongside an increased focus on sustainability in the vineyard. While long a leading estate, recent vintages of Ch. Montrose have earned sky-high scores. We sat down with the property’s Technical Director Vincent Decup to find out how the team is taking the Saint-Estèphe titan to new heights – all by looking underfoot

“It’s been an absolute pig of a year,” says Mark Gaskain. It’s September 2024 and we’re reaching the end of what has been a trying growing season across most of Europe – with seemingly never-ending rain. Fortunately, Gaskain knows that such challenges are just part of the job. He’s a farmer, born and bred, now at the helm of his family business, and responsible for growing 70 million apples a year. But in the last decade, he’s added a new strand to the business – after selling a swathe of land to none other than Champagne Taittinger in 2015. That land is now the home of Domaine Evremond – one of the most exciting English wine projects to date.  The story began almost a decade ago. Patrick McGrath – founder and CEO of Hatch Mansfield, which represents Champagne Taittinger in the UK – had been looking at adding an English sparkling wine to the company’s portfolio. It was the early 2010s, and he spied an opportunity with the burgeoning category – but Pierre-Emmanuel Taittinger suggested that, rather than taking on an existing estate, McGrath should create his own, working with Taittinger. Taittinger had embarked on a similar venture in California, creating Domaine Carneros with their US agent, Kobrand, under Pierre-Emmanuel’s uncle, Claude. Together, they decided to take the plunge.  They charged leading English wine specialist Stephen Skelton with helping them find the perfect site – determined to have chalk soils, south/southwest-facing slopes (for maximum sun exposure) at altitudes below 100 metres (with temperatures reducing by 1°C per 100m, anything above this would simply be too cold in England’s marginal climate). Kent – with easy access across to Champagne – was decided on, but it took them 18 months to find the right site. At the same time, the Gaskains were looking at selling some of their land (a foray into soft fruit had proven challenging, and were looking to get back to their core business of apples). The timing was fortuitous and the orchards at Stone Stile Farm – around the village of Chilham, southwest of Canterbury – were perfect. As Alexandre Ponnavoy (Chef de Cave for both Taittinger and Evremond) told me, if a site can grow good fruit – it’s a good indicator for its viticultural potential.  In 2015, the deal was signed and the project launched with great fanfare at Westminster Abbey. Domaine Evremond takes its name from Charles de Saint-Evremond (1614-1703), a Frenchman, essayist and early ambassador for the wines of Champagne – bringing them to the court of Charles II – who is buried in Poets’ Corner. Although Didier Pierson – a grower in Champagne – had made English wine under the Meon Hill label, Taittinger was one of the first major Champagne Houses to invest in England (Pommery had bought vineyards in Hampshire in 2014). Unsurprisingly, press coverage was extensive: the Champenois were coming to make sparkling wine on our home turf – the French naysayers set to eat their hats as the world started facing up to fine English fizz.  Evremond’s first vines went in the ground in 2017, with more added in 2020 (the team set up at the local Premier Inn to tackle the work mid-pandemic) and in 2024. The land here has a layer of alluvial clay over its chalk subsoil which is part of the Paris basin, shared with much of northern France (including Champagne). Around Canterbury, however, there’s more flint in the soil – something that Ponnavoy feels shines through in the wine, giving it a mineral, reductive character. There’s also a definite maritime influence – moderating temperatures, but also bringing ocean breezes from Whitstable, which is just six miles away. For Ponnavoy, it’s the combination of the site’s chalky soils, maritime softness and sea winds – a “contrasting climatology” – that defines the Evremond wines.   Gaskain is deeply involved in the project – his in-depth knowledge of the land an invaluable resource, knowing where potential frost pockets lie, for example, or where the soil might be overly rich for vines. He and his team manage the site day-to-day, guided by Christelle Rinvelle (Taittinger’s Vineyard Director). Currently, they have 62 hectares of vines, split between 45% Chardonnay, 45% Pinot Noir and 10% Meunier. They planted Chardonnay on areas with the thinnest topsoil, allowing its roots almost direct access to the chalky bedrock, while the Pinot Noir and Meunier sit on the more clay/gravel-rich plots.  The vines are widely spaced (5,000 vines per hectare – half the vine density Taittinger uses in Champagne) and trained higher than across the Channel, allowing for better airflow (helping manage disease pressure) and a larger canopy (to aid ripening). While herbicides have never been used on the site and there’s a concerted effort to be sustainable, Gaskain is clear on the limitations of viticulture in Kent: “Organics is madness in this climate,” he tells me – as, perhaps, 2024 proved. While the team has vine-specific sprayers, Gaskain can also draw on his team’s orchard equipment too – a boon when conditions are challenging – and spray the entire site in one (rather long) day.  They harvested tiny quantities of fruit in 2018 and 2019, with the first commercial-sized vintage coming from 2020 (conveniently the grape harvest falls neatly between that of Galas and Braeburns). Early wines were made at nearby Simpsons, and from 2020, they set up in an old concrete barn on the site – with the entire operation run on a generator. In June 2022, they broke ground on a new winery (“We were over budget four weeks after starting,” says McGrath, with a weary smile). The same company that worked on the Channel Tunnel dug out 83,000 tons of chalk (around 2,000 lorry loads) to make way for the three-storey building that stretches 20 metres below ground. Designed by Reims-based architect Giovanni Pace, the idea is for the winery to blend into the landscape – rather than stand on it. It has the capacity to cellar 1.5 million bottles – all without expending any additional energy on cooling, thanks to its natural subterranean chill.   Works were finished in time for the 2024 harvest – a relief undoubtedly for the team. There is something charmingly British, slightly ramshackle and underdog about the operation – despite the very serious money behind it (£17 million invested so far, reportedly). “Everybody’s had to muck in,” says McGrath. He might be Hatch’s CEO and one of the Evremond founders, but he’s also the first to pull on his wellies to help with harvest – and has spent more weekends in the vineyard than anyone else. Vitalie Taittinger has taken over from her father as President of Taittinger, and McGrath’s daughter India is running the commercial side of Evremond – meaning the operation really is a family business, even if it comes with some luxury, Champenois-esque swagger.  With the Taittinger association, of course, expectations are incredibly high – something McGrath is painfully aware of. Talking to Ponnavoy – who is in charge of the winemaking at both Taittinger and Evremond – there’s been something very exciting about creating a project from scratch, even if it has come with some challenges too. He argued to keep the small 2018 harvest for the property only, allowing them to follow the wines in tank over several years, and get to know the site. It was a huge cost, and delayed the first release, but something he felt was crucial.  “It was really important not to do a copy of another sparkling wine, not to produce a… ‘style’,” he says. Their goal, instead, was: “To identify the terroir, to identify the soil, to identify the climate, and reproduce all that in the bottle. To find the Evremond identity.” Inevitably, there’s a temptation to draw comparisons between Taittinger and Evremond, but the team is clear that they are totally separate projects with very different DNA.  Working with English fruit, Ponnavoy felt it was key to manage the potentially biting acidity (and the wine sees full malolactic as a result), but – for him – the greatest challenge was to avoid a bitterness that he finds common in some English wines. Managing the phenolics to avoid this was, for him, therefore essential, while he also focused particularly on the bubble texture – working to get a very fine mousse, something that he believes sets the wine apart from the competition.  In time, Evremond hopes to make 400,000 bottles a year, although there are only 120,000 of its first release. There are plans to add a vintage and rosé cuvée once the vines have matured and they’ve gotten to know the site, but for now they’re only producing the non-vintage Classic Cuvée. Now, a decade after they bought the land, Edition 1 of the Classic Cuvée is set to be released. For a début, it’s an incredible result – perhaps not surprising given the pedigree of the operation. Incredibly fine, taut and layered with oyster-shell, iodine and flint, it’s a wine full of the promise of what Evremond can do.  Domaine Evremond’s Classic Cuvée Edition 1 will be released on Thursday 3rd April: contact your Account Manager to register interest or sign up to be notified here 

A decade ago, Champagne Taittinger did something unexpected: they bought land in Kent. On the eve of the release of the project’s first wine, Sophie Thorpe caught up with the team behind Domaine Evremond about the challenges and triumphs of their English adventure

It’s a damp and foggy morning when I arrive once again in the very quiet streets of Auxey-Duresses for my annual pilgrimage to taste the new Maison Leroy Collection. Last year Madame Lalou Bize-Leroy was in Monaco, so I’m looking forward to seeing and tasting with her again – on what happens to be her daughter’s birthday. Two dogs rush out to greet me eagerly – the 13-year-old black poodle Nine and five-year-old Grand Basset Griffon Vendéen Olga, both quickly quietening down once appeased with some gentle pats. Madame, meanwhile, stands behind them, as elegant and unassuming as ever.   Talking briefly about the state of the market, she repeats how the most important thing is the happiness of our clients. It was at the forefront of her mind when she decided on the wines in this year’s collection, which is dominated by the 2017 and 2018 vintages, with the oldest wine from 2011. It’s good to mix things up, she tells me. After last year’s extensive library release with a flurry of back-vintages, this year she wanted to give the youngsters a chance to shine.  She describes 2018 as a more complete vintage, there is more wine, more matière than 2017; nonetheless 2017 is more refined and delicate, somehow more approachable. We talk about what makes a “grand vin” and she says: “La qualité, c’est les rendements.” (“Quality, it’s the yield.”) Taking Aligoté as an example, she explains that she’ll rarely make as much as 20hl/ha for the Domaine Leroy and Domaine d’Auvenay Aligoté – and for her that’s the limit for producing a high-quality wine. It is impossible to make a good Aligoté at 40hl/ha, she argues – and as she knows from tasting those watery, dilute wines. “I’d actually rather drink water,” she confesses. It’s no secret that her Aligoté is special: and Gilles Desprez (Bize-Leroy’s right-hand man) notes how he was once blown away by a bottle of 1999 D’Auvenay Aligoté served to him blind – a wine that those around the table all thought was a Grand Cru white.  There’s no better judge of a wine than blind tasting – as Bize-Leroy knows. To this day, she blind-tastes everything that makes its way into bottle under the Maison Leroy label. She was recently tasting some 2024s for the range and notes how it’s easy to find a great Nuits-Saint-Georges or Gevrey-Chambertin, but is too often disappointed with Vosne-Romanée and Chambolle-Musigny – struggling to uncover wines in these villages that are worthy of the Leroy seal of approval.  Our tasting begins with the reds this year, starting with an array of 2018s, sampled from south to north, “dans le sens de la Côte” (along the Côte), before moving through the 2017s to a 2016, 2015, 2012 and, finally, the oldest wine in this year’s collection, a 2011 Nuits-Saint-Georges.  The whites include an appellation that she rarely tastes and one that almost never makes it into the range: Savigny-lès-Beaune Blanc. The 2018 in this year’s collection, however, is special – a wine that you wouldn’t be a fool to call Corton-Charlemagne blind, she tells me. And (of course) Bize-Leroy is right: it is sumptuous, with a level of richness and density that far surpasses that of a mere “village”.  With air, it develops further, offering impressive complexity. Madame looks at Gilles: “It’s unfortunate we don’t have any Corton here to compare,” she says. Gilles confirms there isn’t any to hand while she considers the wine in front of her, before insisting – “Are you sure we don’t have any here?” The message is understood: Gilles says there may be some in another building and sets off to find it.   We keep chatting, tasting the 2018 Auxey-Duresses, a little shy after the 2018 Bourgogne Blanc (in her words: “the best Bourgogne Blanc we ever had”) and the superb Savigny. I ask if there are any wines she buys every year – an idea she’s fast to reject: she doesn’t have any contracts, each wine is selected purely on its quality in that specific vintage. I clarify that I meant if there were specific vineyards that she particularly likes, and finds herself buying year in, year out – and says that both Meursault Gouttes d’Or and Chassagne-Montrachet Morgeot are certainly favourites, although it all comes down to how they taste.   Gilles comes back with an unmarked bottle, immediately recognisable by its shape as Domaine Leroy. He is out of breath (earning some teasing, but also having run up and down 200 stairs to retrieve the bottle in question). The wine – a 2018 Corton-Charlemagne from the property – is quickly opened and served. It is typical Leroy: the nose is slightly muted, with some reduction and the popcorn-like notes that you often find in Bize-Leroy’s whites. On the palate, this is what you call packed: I have rarely found such concentration in a Corton-Charlemagne, even in ripe vintages chez Leroy. Madame states that she thinks many would call this a red if served totally blind, given its “matière”. “This is a grand vin,” she says. She explains how special the plot is, at the top of the hill, above her Corton Renardes: “C’est un terroir à rouge.” (“It’s a red terroir.”)   Going back to the Savigny-lès-Beaune Blanc seems like a pointless exercise after the Corton-Charlemagne – but is far from it. The Savigny has benefited from warming up and being open for an hour. In fact, it is far from ridiculous to compare it to its grander sibling. Indeed, Madame Bize-Leroy pauses over it, saying she finds the Savigny more balanced – the wine feeling beautifully layered, yet not heavy or dense. It is by far the best Savigny-lès-Beaune Blanc I have had the chance to try and – as proven by this comparison – would rival most Corton-Charlemagne. Of course, the 2018 Domaine Leroy Corton-Charlemagne is a baby – a wine built to age that will need years before being approachable and Bize-Leroy herself confirms that it won’t be released anytime soon. It has everything to be an exceptional wine in the future, but the Savigny is the one to drink now.  This is my 10th year at FINE+RARE and it’s relationships like this one that define our business: having the chance to share a moment with one of Burgundy’s legendary winemakers, talking openly and honestly about two of her wines, is truly special. Some are fast to dismiss Maison Leroy as “just” Bize-Leroy’s négociant label, perhaps out of ignorance or lack of exposure to the range. I can’t pretend these wines are cheap, but I also can’t pretend that Madame Leroy is like other winemakers. Her nose is remarkable, her access far-reaching, and the resulting wines one-of-a-kind. I can only admire this 93-year-old woman, the way she describes her wines, her humbleness, not to mention the wines that carry her name.  Tasting the 2025 Maison Leroy Collection 2018 Bourgogne Blanc: Maison Leroy’s 2018 Bourgogne Blanc is extremely expressive. Almost exuberant on the nose, it shows concentration, toasted almonds, juicy blood orange and verbena. The palate is equally impressive – and I would be easy to mistake this for a very good Meursault blind. Similarly to its red counterpart, the wine has gained in depth on the palate since we last tasted it. It is lively and expressive, yet with a signature fatness that’s so enjoyable. Madame Lalou Bize-Leroy tells me she has rarely, if ever, had a Bourgogne Blanc of this calibre – and we can only agree at this stage! Drink 2025-2031. 2018 Meursault: The 2018 Meursault from Maison Leroy is less immediately expressive than the Bourgogne Blanc, tasted just before – but don’t let that deceive you. You can feel the tension and seriousness of this wine, with hints of flinty minerality on the nose. The palate is concentrated and refined, nicely balanced and nuanced, with a creamy complexity. Compared to its Bourgogne sibling, this is clearly of a different calibre – a more aristocratic wine with greater density. Although approachable now, it will benefit from another three to five years in the cellar to express its full potential. Drink 2027-2035. 2018 Savigny-lès-Beaune Blanc: Maison Leroy’s 2018 Savigny-lès-Beaune Blanc is packed on the nose. Lovely brioche notes are underwritten by bruised apple and brighter citrus fruit, with delicate touches of lemon blossom. As the wine aerates, it keeps building in density, with layer upon layer – making for a wine that is beautifully fleshy and inviting. On the palate, the wine is so immediately rich and profound – it would be impossible to call this a village wine blind. It has the signature richness of a Corton-Charlemagne, perfectly balanced between power and tension. This is by far the best Savigny-lès-Beaune Blanc I have ever tasted and would be head and shoulders above most Corton-Charlemagne you can find on the market. This is drinking beautifully now but has everything to age effortlessly. Drink 2025-2040. 2018 Auxey-Duresses: Coming from a terroir that can sometime be a bit too flamboyant or invasive, Maison Leroy’s 2018 Auxey-Duresses feels very discreet after the Savigny-lès-Beaune. With notes of fresh almonds and a hint of reduction on the nose, this feels a bit muted. On the palate, the wine clearly has the concentration of the vintage, yet is quite elegant and restrained with a hint of white pepper. This is lovely but will need a few more years to be approachable. Drink 2028-2035. 2018 Bourgogne Rouge: Last tasted in February 2022, Leroy’s 2018 Bourgogne Rouge still displays a very charming, delicately perfumed nose that oscillates between dried rose petals and little red berries, but it seems to have gained in weight and density. It retains beautiful acidity balancing the concentration of the vintage, the finish is clean and vibrant. This is one of our favourite renditions of the cuvée in recent years, youthful and drinking beautifully now, this should keep evolving positively for another seven to 10 years. Drink 2025-2035. 2018 Monthélie: On the nose Maison Leroy’s 2018 Monthélie has beautiful notes of violets wrapped up in a mix of red and black berries, especially blackcurrant. Those very pure and delicate floral aromas carry through to the palate, accompanied by tannins that are very subtle, almost with a hint of sucrosity that makes one salivate. This is a very complete wine that outperforms in this warmer vintage: a wonderful expression of this terroir that, for me, displays the elegance of Volnay with a weightless mouth-feel. Drink 2027-2037. 2018 Volnay: Served just after the 2018 Monthélie, Maison Leroy’s 2018 Volnay has a slightly more discreet nose. It’s perfumed and all about finesse yet a bit shy at this stage. On the palate, there is good concentration and precision, but it does not provide the crunch and freshness that you’d expect at this stage. This is surely elegant and refined, but lacks that little twist that will surely come with a few more years in the cellar. Drink 2028-2040. 2018 Savigny-lès-Beaune: As with its white sibling, Maison Leroy’s 2018 Savigny-lès-Beaune could be mistaken for a Corton blind. It has such a concentrated, solar nose with a darker fruit profile. There’s density on the palate too, the wine fleshy and rich, but not heavy. It’s nicely balanced, with delicate tannin structure and a precise finish. It’s as juicy as it is approachable. Drink 2027-2037. 2017 Gevrey-Chambertin: This was one of the highlights of the 2022 Maison Leroy Collection when it was first released. The wine has retained all its depth, complexity and power, but has shut down a little bit. It is packed with dense dark cherries, hints of sweet spice and forest floor. On the palate the wine offers an enjoyable, mouth-coating, generous and balanced structure, yet the wine feels a bit muted compared to where it was three years ago. This is nonetheless offering a very long finish with fresher note lingering. This is surely a grand village Gevrey that will simply need to be forgotten in the cellar for a few years! Drink 2030-2040. 2017 Pommard: Maison Leroy’s 2017 Pommard speaks of its terroir, combining rich, brooding, ripe blackberry, with hints of blackcurrant and a touch of rusticity, lifted by the freshness and precision of the vintage. On the palate, it has a firm but delicate structure with chewy tannins that are both muscular and velvety. Tasted right after a flight of 2018s, this seems much more approachable (as is often the case with 2017s). The refreshing backbone of acidity drives through the core of the wine, lending a beautiful sappiness to the long finish. Drink 2025-2035. 2016 Santenay, Premier Cru, La Comme: Immediately expressive, Maison Leroy’s 2016 Santenay Premier Cru La Comme comes from this underrated terroir, on the southern border of Chassagne-Montrachet. The charming, multifaceted nose oscillates between raspberry and juicy cherry with a hint of liquorice. The wine is mouth-coating; you can feel the substance here, with a lovely texture that remains delicate and refined. This clearly shows the concentration of the vintage and its tiny yields, but it is all wrapped in a very elegant mouth-feel – creating a wine of great balance. It’s in such a lovely spot now that this is hard to spit out! Drink 2025-2035. 2015 Chorey-lès-Beaune: Packed on the nose, Maison Leroy’s 2015 Chorey-lès-Beaune is quite shy at first, but with a bit of swirling you start to notice how dense and saturated this wine is, with aromas of ripe blueberries, blackberries and a hint of spice (cinnamon maybe?). On the palate, it is concentrated with mouth-coating tannins and layers of berry fruit – raspberry, strawberry and blueberry. This has a lot to say and offer, with an impressively persistent finish, but will benefit from a few more years’ cellaring to reveal its full potential. Drink 2028-2040. 2012 Côte de Nuits Villages: Made with fruit from around Nuits-Saint-Georges and Corgoloin, Leroy’s 2012 Côte de Nuits Villages is always a bit backward on the nose and slightly austere. But it’s also elegant and delicate, the floral notes combining with tertiary notes. On the palate, this feels like it is in a slightly awkward phase, very dense with soft, integrated tannins yet somehow disjointed between the rich dark fruit and a tertiary character. I would leave this for a few more years before revisiting. Drink 2030-2040. 2011 Nuits-Saint-Georges: Finely perfumed, Leroy’s 2011 Nuits-Saint-Georges offers a delicate nose of mixed red berries supported by more earthy notes, some pot-pourri and a hint of spice. On the palate, it’s concentrated and charming, but with air opens further and shows its density, still youthful for a 14-year-old village wine. There’s a hint of rusticity towards the finish that makes one salivate. This is far from the austere expectation one may have for this combination of vintage and appellation. It’s not reached its drinking plateau but is perfectly approachable now. Drink 2025-2040. The new Maison Leroy collection will be released soon: you can see all the wines in the 2025 collection here. Historically peat was used as a fuel source. In recent history, it has been a source of great fervour and one-upmanship as whisky producers clambered to create the peatiest whisky on the market.  For the most part, this narrative and competition has played out on the remote and beguiling Hebridean isle of Islay and its nine malt distilleries. One even deciding the prefix “super” was required on the label because “heavily-peated” was no longer sufficient. But this could all be about to change as Seattle-based Westland Distillery finetunes an industry first: locally-peated American single malt whiskey.   “We are not trying to make it taste like Islay,” Co-Founder and Managing Director Matthew Hofmann says. “We want Solum to exhibit its own terroir and its own flavour influence so long as it tastes good.”   In the 10 years since it was founded, Westland has sought to challenge every stage of whisk(e)y-making convention from barley, casks and now peat. For the past five years the team has been encountering setbacks while they navigated the uncharted territory of producing peated malt in the United States. The first was the discovery that a peat malting company didn’t exist in America, despite Washington State boasting 50,000 acres of peat.   While Hofmann worked on options closer to home, Westland turned to the historic Glasgow-based malt producer Baird’s. But he knew he had struck on something and eventually started working with a start-up malting company, Skagit Valley Malting, to produce what the company believes is the first commercially produced batch of peated malts in America.   Pioneering a locally-peated whiskey created all sorts of headaches – or as Hofmann calls them “interesting challenges” – for the team. In one of the first blind tastings, peat flavour notes were entirely absent.   “When you are trying something new like this, there is an inherent amount of risk,” Hofmann says. “It’s very much an ongoing process and we are far from being finished. It’s more accurate to say we have barely begun on this project.”   Westland uses approximately two cubic yards of peat from a local 30-acre bog which equates to a month’s production and roughly 100 casks of whiskey a year. Whereas others typically cut and drain peat – which has a negative impact on carbon dioxide and methane release, and damages the ecology of the area – Westland uses a different process with a backhoe which keeps the bog intact apart from the small amount of peat they use.   “The stuff we have got out here is wild,” Hofmann says with unfettered excitement. “There’s 11 different species of stagnant mosses. There’s wild cranberries. There’s wild crab-apples. There’s a lot more woody materials – cedar – that end up making it into the bog itself because the area is still heavily wooded as well. So, the result on the peat and aroma is very different.”   Hofmann said Westland will release Solum – Latin for “soil” – in winter 2023 but admits he doesn’t know what the product will taste like yet. He says there is a Mezcal profile at this stage, with vegetal smokiness and spice, but cask impact factors are currently unknown.   “This has been one of the most difficult things we have worked on here at Westland,” he says. “Which is saying something because we have a habit of diving headfirst into things we know very little about.”  One of the main challenges, Hofmann says, is the lack of industry and by extension experts in the country. “Nobody understands the impact of peat and how to use it,” he explains. “That can be quite interesting because when you’re learning it from scratch and you have zero base line knowledge, you tend to approach things in a different way.”   This has led to further innovation in production with engineers at the helm of the project and meant sustainability has been high on the agenda in the notoriously eco-cognisant region.   “We don’t quite know yet what the path is with Solum,” he adds. “Is it going to be about the different areas of the bog and peat flavours you might get from that – kind of like Colere is with barley? Or is it going to be about a general Washington State peat flavour?”  The exact destination may be unknown, but it’s guaranteed to be an entirely new take on a very old tradition.   Browse all current whisky listings or read more Editorial

It’s difficult to make broad statements about a year like 2023 in Bordeaux. Following on from our vintage overview, we delve further into the year, breaking it down by commune to offer insight on how each subregion fared in this singular vintage

For more than two decades, Donum has been quietly crafting single-site, single-clone and sometimes single-barrel wines. With a new estate vineyard to their name, Rachael Ryan – Senior Buyer at our US arm, Vinfolio – sat down with winemaker Dan Fishman to find out more about the ambitious estate  Like most of the New World, California eschews a hierarchy of vineyards. Yet in the absence of Grands Crus and First Growths, some vineyards are just acknowledged as being a notch above the rest. Ask any winemaker for a wish list of vineyards, and a handful of familiar names is repeated. One of these is the Savoy Vineyard.  Nestled at the north end of the Anderson Valley, Savoy was first planted in 1991 and quickly became a source of Pinot Noir for some of the most respected wineries in Northern California, including Littorai, Williams Selyem, Radio-Coteau and Peay, with many more on the waiting list. Last year, however, it was acquired by Donum, a winery based in Carneros with a reputation for producing small lot Chardonnay and Pinot Noir, sold exclusively to private collectors and therefore rarely seen on the market.  Since it was created in 2001, Donum had slowly expanded its reach beyond Carneros, with vineyards in the Russian River and Anderson Valleys, as well as the Sonoma Coast. With the acquisition of Savoy, however, their already envious collection of vineyards took a very notable – and sizable – jump. The gain of this prestigious vineyard marks a shift for Donum, who will now produce wine from estate fruit only: 130 acres at their estate in Carneros, 16 acres at the Winside Vineyard in the Russian River Valley, 20 acres at the newly planted Bodega Vineyard on the Sonoma Coast, and the 42 planted acres at Savoy Vineyard in the Anderson Valley.   Already well-known for their world-class art collection (with over 50 works by the likes of Keith Haring, Yayoi Kusama and Ai Weiwei), what many visitors may not realise is that Donum now has a solid foothold in each of the premium Pinot Noir and Chardonnay winegrowing regions in Northern California.   In some ways, the vineyards owned by Donum are innately similar, perhaps most closely linked the marine layer. This dense fog rolls in from the Pacific Ocean most afternoons during the growing season and is a key characteristic of each of these vineyard sites. The mechanics of this cooling marine layer are somewhat straightforward. As temperatures climb in inland California, the hot air rises, creating a vacuum into which the denser, colder air sitting over the Pacific Ocean rushes. On a typical summer day, coastal areas are fully clouded over by late afternoon, and the fog continues to creep further inland, searching for gaps and valleys in the coastal ranges to extend its reach. This cold, moist air both lowers sunlight hours and keeps temperatures low. In other words, this coastal phenomenon is an extremely useful aide in the production of lively wines that retain a fresh edge.  Aside from cooling fog influence, however, the vineyards Donum farms are topographically quite different. The estate property in Carneros, with its gently rolling hills and proximity to the bay, straddles the southern portion of both Sonoma and Napa counties (though Donum’s property is firmly situated on the Sonoma side), with consistent winds blowing from the southeast over the San Pablo Bay giving the region a wide diurnal shift and the resulting wines a sense of energetic tension. The Anderson Valley, on the other hand, is a narrow swathe cut through dense, old redwood forest, and it's difficult not to mentally connect the rugged hills that line the valley on both sides with a similar evergreen, earthy core in the wines. The Russian River Valley is a warmer microclimate, further removed from the cooling influence of the ocean or bay, with loamy soils producing a more concentrated style of wine with opulent fresh fruit.  But for Dan Fishman (Vice President of Winemaking and Vineyards) perhaps the most unifying characteristic across each site is a hyper-focus on farming, which he believes is the best – and perhaps the only – way to showcase these unique terroirs. When he joined Donum in 2007 as a cellar intern, the farming was conventional, with routine application of herbicides and synthetic fertiliser. In recent years, however, he has spearheaded a pivot towards organic farming.   Notable features of this approach include an on-site composting program, where manure from local dairy farms is added to pomace from the winery and canes from pruning. Other eco-friendly initiatives include an integrated pest management system, extensive cover cropping (Fishman estimates Donum currently uses 20 different cover crop blends comprised of over 40 different plants), as well as animals brought into the rows for winter grazing. All these systems have improved the soil structure, “bringing more back to the soil than we’re taking from it”, he explains.  A peek into the rows at the Carneros estate reveals this shift in viticultural philosophy, with verdant cover crops and bees hovering. Tucked between the sculptures that dot the property are vines that are farmed meticulously. While the art is spectacular and very difficult to ignore, the attention to detail in the vineyards is perhaps even more impressive. Donum is now one of the first wineries in Sonoma County to achieve Regenerative Organic Certified (ROC) status for all its estate vineyards, and they’ve also been certified organic from the California Certified Organic Farming Association (CCOF) since the summer of 2022. The ROC status, however, is one that Fishman is particularly proud of, as it encompasses not just soil health and land management, but also animal welfare and the working conditions of the employees.    When asked if he has seen a difference in the behaviour of the vines, and in the quality of the fruit, since undertaking a rigorous approach to organic viticulture, Fishman’s answer is an emphatic yes. He points to the 2023 growing season as a prime example. In a year marked by record-breaking rainfall that extended into early spring, the threat of mildew was abnormally high. “Our conventional neighbors were spraying like crazy and still had mildew,” Fishman says, “but we were obviously using organic methods and applying them less frequently, and we had way less mildew. I think the vines’ natural resiliency was coming out.”   In line with a larger overall trend in Northern California, Fishman says he also has been trying to fine-tune the weight and concentration of the Chardonnay and Pinot Noir produced at each vineyard. If Burgundy’s biggest challenge historically has been to achieve even ripeness vintage to vintage, California’s problem cultivating Pinot Noir and Chardonnay been quite the opposite: how to tame abundant sunshine and control vigour resulting from warm days and fertile soils. While the fog assists with this task, one unexpected benefit of the winery’s intensive focus on farming, Fishman explains, is that the vines are more in balance. “It’s on the subtle side,” he says, “but our wine chemistry is looking better too – higher acidity and more flavour at lower sugars.” Opulence has given way to restraint and nuance.   The resulting range of wines at Donum is an impressive display of small-lot vinification, broken down not just by appellation or vineyard, but also often by individual blocks. In 2021, the winery produced six distinct Chardonnays and 17 Pinot Noirs in total from Carneros, the Russian River Valley and the Anderson Valley. With the development of their newest vineyard on the Sonoma Coast, Donum’s already complex patchwork quilt of wines is about to get even bigger.   With a gentle hand in both the vineyard and winery, Fishman hopes to highlight the most minute of variations in each wine, allowing the innate characteristics of each site to shine through. “We have a really intense focus on vineyard flavour first,” he explains.    “We’re not trying to force a house style, just let the vineyard or block do the talking,” Fishman continues, “We’re trying to make the best Pinot Noir and Chardonnay in California, wherever that comes from.” With access to such an extensive assortment of prime locations, now including the illustrious Savoy Vineyard as a feather in its proverbial cap, to say that the future at Donum is exciting is an understatement indeed. While many may think of California Pinot Noir and Chardonnay as one group of wines, a monolith with little variation in style, Fishman and his team at Donum hope to change that mindset, one vineyard at a time.  The Donum wines have historically been available only to those on their mailing list, but we are now working directly with the estate: browse all current Donum listings.

Discovering Donum’s single-site wines

First place: Donum

En primeur is the system of buying unfinished, young wine, essentially as “futures”. The wines are sold while still maturing in barrel, and shipped once bottled to wine-lovers around the world. Bordeaux pioneered the system, and it remains important in the region, although en primeur has now spread and wines from Burgundy, the Rhône, Italy, the US, Australia and beyond are now all sold in this way. But how did it start? 
While consumers have only been purchasing wine en primeur since the 1980s, wine has been sold “unfinished” to merchants for centuries. Traditionally wine was not bottled or sold by the châteaux; once the wine went into barrel it would be transferred to négociants who would age the wine in their warehouses in the Chartrons district of Bordeaux, and be responsible for their sale and distribution – an unseemly business that didn’t sit well with the noble château-owners. The wine would then either be bottled in Bordeaux or shipped on in barrel to markets like the UK, and bottled for sale to consumers there. 
While Bordeaux might seem glossy and polished today, with its grand châteaux, manicured lawns and immaculate wineries, the region’s wine industry has not always been so prosperous. In the mid-19th century, mildew arrived and devastated much of Europe’s vineyards, followed by the arrival of phylloxera, killing vines and forcing producers to, eventually, replant. When winegrowers had recovered from Mother Nature’s attacks, the First and Second World Wars arrived, bringing further economic challenges. Producers needed ways to finance their operation, while merchants were always on the lookout for a way to secure stock and the best price possible. 
As producers struggled, they resorted to selling grapes while still on the vine, “sur souche”, agreeing a price based on the previous vintage and gambling on the final quality of the crop. Sur souche sales continued into the 1960s – eventually waning after producers were burnt by the low-yielding, excellent and woefully undervalued 1961s. When times were particularly hard, châteaux – even the most fabled addresses – committed to selling their crop for up to 10 years at a fixed price to a merchant, tying themselves into an “abonnement”, guaranteeing a base level of income, but losing out on potential profits if or when prices rose. 
Up to this point, early sales of wine (or grapes) had only been to négociants in Bordeaux, but the 1973 oil crisis prompted a shift. The subsequent crash left producers, négociants and every layer of the wine trade in dire need of funds. Having struggled to sell the 1972 vintage, châteaux didn’t have the money to invest in the production of the challenging ’73 and ’74 vintages. The 1975 growing season arrived with more favourable conditions and the wines showed promise; samples were shipped to London for buyers to sample and sell.  
En primeur really took off, however, with Bordeaux’s 1982 vintage. Robert Parker had started writing his newsletter in 1978, introducing the world to his 100-point rating system for wine. He came out early with a firm endorsement of the 1982s, and urging consumers to buy them; when others were less convinced. Many, especially in the US, took the opportunity to buy up the wines en primeur – and were duly rewarded, with the vintage now considered legendary. 
The early sale of the wines eased cash-flow problems for producers and négociants, while merchants and consumers benefited from being able to secure stock of wines at a favourable price. As en primeur sales grew, properties became much more profitable businesses, able to funnel investment back into their vineyards and wineries. At the same time, ownership of estates was shifting. In 1981, inheritance taxes doubled, making it harder for families to keep châteaux and companies – from insurance to luxury goods and everything in between started buying up properties. While some corporations focused on quantity rather than quality, many arrived with the necessary finances to push quality forward. The 1990s saw many estates introduce second wines, allowing them to further elevate quality of their Grand Vin, and Parker’s influence continued to grow. All of these elements combined to see Bordeaux as a region and its wines evolving at pace – giving even more reason to secure a new vintage up front. 
For consumers, en primeur provided a way to secure the most sought-after wines at the best prices. In top vintages, the wines offered significant returns too – and speculation ensued. The wine market expanded, with new interest from Japanese and Chinese buyers. The market exploded when Hong Kong abolished tax on wine in 2008. The frenzy built and prices rose – with the top-rated 2009 and 2010 vintages hitting new, inflated highs. En primeur no longer offered the safe return it had. The bubble burst. 
Châteaux, merchants and collectors were all stung, and there is now greater awareness of potential inflation in the market. This consciousness and understanding has settled the market and made en primeur relevant once more, although fortunately without the speculation of previous vintages. 
In 2012, Ch. Latour announced it was abandoning the en primeur system – deciding instead to offer wines only when they are ready to drink, with 2011 the last vintage to be offered as futures. It was a significant blow for en primeur to see a First Growth abandon the system, but while there was a fear this step could open the floodgates, no one else has yet followed the First Growth. 
Today, en primeur remains significant for Bordeaux. In April of each year, the world’s wine trade descends on Bordeaux to taste the latest vintage (harvested the previous year). Organised by the Union des Grands Crus de Bordeaux, the “Primeurs” week is an impressive publicity machine, focusing attention on the region – and while the spotlight might be on the very top properties, there’s a clear halo effect for the entire region. 
There has been a move for estates to hold back a little more stock, some of which may be offered ex-château at a later date, but most Classed Growths still sell between 70 and 90% of their entire production en primeur.  
The benefits for Bordeaux and its châteaux are clear, but what is in it for those wanting to buy the wine? Many of the reasons to buy en primeur are unchanged. There are no guarantees that you’ll make a financial return with en primeur, but inevitably wines do become rarer with time; as wines enter their drinking window, they become more desirable (and often increase in value), and over time they become scarcer, as bottles are uncorked and the finite supply of a specific vintage dwindles. As such, en primeur can offer a useful way to secure stock of wines, particularly those from small, sought-after properties which can be near-impossible to obtain after release. 
Buying en primeur also offers flawless provenance. The wine will move from the estate to wherever you store your wine, and then once more when it is withdrawn for consumption, ensuring optimal maturation conditions, and retaining maximum value should you decide to sell rather than drink. An additional luxury of buying en primeur is being able to buy any format; as the wine isn’t yet bottled, you can purchase half-bottles, magnums, jeroboams, imperials or any other size you desire easily. 
While critic scores certainly still influence the sale of wines, no single voice has the power that Robert Parker had in his heyday. Today, there are more critics than ever before – with individual writers breaking away from larger publications like the Wine Advocate to create their own platform, each with their own tastes, offering different perspectives on the vintage – arguably giving consumers more information than ever before. 
It’s little surprise that other regions have adopted the system, with Burgundy in particular embracing en primeur. Opportunities undoubtedly remain – as a vintage like 2019, sold in the midst of 2020 and the Covid-19 pandemic shows. Faced with an uncertain market, producers dropped their prices and consumers flooded to buy Bordeaux’s wines. The vintage turned out to be spectacular, with buyers justly rewarded for investing in the wines. When a vintage is good, and the pricing right, there really is nothing like the palpable buzz and excitement that the Primeurs season brings to the world of wine.

What is en primeur: the origins of wine futures

Peat in whisky is divisive – both in terms of its intense flavour profile, but also its sustainability. It has long been used in Scotch whisky, adding complexity to the region’s spirits, but has – over the last two decades – been thrust into the limelight.  Essentially, peat is baby coal – decomposed organic matter, in particular sphagnum moss, that takes thousands of years to form. Historically, these peatlands – wetlands such as bogs and fens – were used for fuel, especially where other energy sources weren’t readily available. Slabs of peat, cut out of the ground and left to dry, were burnt, valued for their ability to (like coal) smoulder steadily. Peat would have originally been used to heat pot stills, giving off intensely scented smoke that distillers eventually looked to capture.  Today, energy sources are largely more sustainable, and peat is used in significantly smaller volumes in the kilning process. After the barley has been malted, it is kilned (essentially dried). For peated whiskies, this is done (at least in part) over a peat-fed fire, so that the barley picks up the flavours from the smoke. This barley is then milled, mashed, fermented and distilled to produce the whisky, with the peat smoke lending flavours that range from soot, smoke and asphalt to seaweed and iodine.   Peatlands have been put in the spotlight with climate change, given their incredible capacity to hold carbon – and release it. As a NatureScot report (2023) states, “Although peatlands cover less than 3% of the world’s surface, it is estimated that they store double the amount of carbon held in global forest biomass and more than 30% of the total global soil carbon store (Bonn et al., 2016). Peatlands make up some 9.5% of the UK’s land area with an estimated carbon store of over 3,200 million tonnes, of which 1,600 million tonnes are estimated to be in Scotland (Bonn et al., 2016).” But while they have an impressive ability to lock away carbon, once peatlands are damaged they release some of that carbon – and the same report estimates that degraded peatlands account for circa 13% of Scotland’s carbon emissions. (It’s worth noting that the same institution – then known as Scottish National Heritage – came under fire in 2020 for its agreement with Diageo, allowing for unlimited peat extraction on Islay.)  Peat accumulates at a mere 1mm a year, so it’s easy to see why peat extraction is a hot topic. Protecting and restoring Scotland’s peatlands are firmly on the national agenda, and in 2020, the Scottish government announced £20 million earmarked for restoration, with a commitment to invest more than £250 million by 2030. Unsurprisingly, it’s put Scotch whisky’s use of peat under the magnifying glass. In reality, a fraction (just 1%) of Scotland’s peat goes to the spirits industry – with horticulture the main culprit.  As Bruichladdich’s Head Distiller Adam Hannett says, however, it has provided “a great lens to look at what we’re doing with peatlands”. For him, “It’s about responsible extraction.” Bruichladdich’s production director is also looking at restoration projects with local farmers. In 2021, two giants of the industry announced significant projects – one from Diageo’s Johnnie Walker, partnering with the RSPB to repair wetlands, and a more ambitious pledge from Beam Suntory, with its Peatland Water Sanctuary Initiative. The project aims to restore twice the volume that the company harvests for use in whisky production, with $4 million invested by 2040. Some producers – such as Nc’nean – have sworn off peat totally, while others are moderating usage, or looking for alternatives.   In Sweden – where peatlands represent up to 20% of the entire land area, Mackmyra’s Blender Lii Johnson explains how there is strict regulation around their usage. They are one of a growing number of producers looking to use peat as another way to explore their terroir. As few producers malt and kiln their own barley today, often this is shipped from Scotland (in turn adding to distilleries’ carbon footprints). At Mackmyra, they instead use Karinmossen – local peat, harvested around 40km south of the distillery – seasoned with juniper twigs. She estimates they use a mere 0.1% of the peat bog, bringing in around 30 cubic metres per year.  Johnson feels that it is the juniper in the Karinmossen, along with the small twigs they add (picked from the woods around the distillery), which give a light citrus, almost medicinal note to their peated malts. In Seattle, Westland has pioneered using local peat, and a process with a backhoe to keep the bog intact and limit their carbon footprint. Co-Founder and Managing Director Matthew Hofmann feels the local peat brings Mezcal-like aromas to their peated whisky, Solum.   This quest for sustainability, combined with emphasis on the concept of terroir in whisky, has had interesting results at distilleries around the world. In Minnesota, Brother Justus sources peat from the Boreal Forest and has trademarked a cold-peating process to produce more delicate aromas. Tasmanian distillery Lark looks to Browns Marsh for its peat (around one cubic metre a year) and has had the International Mire Conservation Group confirm that it is having zero impact on the marsh. Others are looking to use alternatives – New Zealand’s Thomson Whisky uses manuka, while Archie Rose has looked to Australian hardwoods and, perhaps most distinctively, Iceland’s Eimverk sources sheep dung from local farms in lieu of peat.  As we’ve touched on, however, it’s not just what is used to peat malt – but how it’s used, that impacts the flavour of the final whisky. “Duration, in my opinion, is the key,” says Mackmyra’s Johnson, emphasising that it is how long the barley spends in contact with the peat smoke that influences the level of peatiness, while it is only the type of peat (or peat alternative) that will effect the nature of the peat flavour. She explains how whether the barley is peated pre- or post-break is also important: it’s most common to do pre-break, as if it is done post-break, when the barley is largely dry on the surface, it doesn’t pick up phenols – the compounds that produce peat’s smoky flavours. For Mackmyra’s peated barley, it is kilned for one day with peat and then for a second day just with hot air.  There are other factors too however – with fermentation times and cuts often a focus. While longer ferments are generally thought to engender complexity, shorter ferments preserve phenols. There are three factions to a still run – the foreshots, heart and feints. The foreshots and feints, the liquid that runs off first and last, are generally discarded, and the cuts between these determine the character of the heart. Phenols generally come late in the distillation process, so later cuts can be preferential when looking for peat character. For Mackmyra’s Extra Rok 2.0 – an extra-peated malt, they do shorter ferments and a later cut, to preserve the phenols.   It's become fashionable to talk about “ppm” in peated whisky – parts per million (perhaps familiar to wine lovers as the same term that is used for sulphur levels), to measure the level of total phenolic compounds. It’s perhaps unsurprising that the compounds are the same as those for smoke taint, including guaiacol and 4-methylguaiacol, for example, but while in the world of wine these are avoided, distillers of peated whiskies have competed to produce the spirit with the highest. This race to make the peatiest whisky possible was arguably inspired by Compass Box’s Peat Monster (first produced in 2003), building to and culminating with Bruichladdich’s Octomore 8.3 (released in 2017) – a whisky with a remarkable 309ppm, the highest level measured to date (compare this to the first Octomore release which had 131ppm). In this frenzied period, Ardbeg’s Dr Bill Lumsden even buried a barrel of peated whisky in a peat bog (which was released as an NFT in 2022, Ardbeg Fon Fhòid). But while one number is an easy way for whisky drinkers to grasp how peaty a spirit is, not everyone believes it’s helpful.  “We don’t like to talk about those numbers,” says Johnson. She explains how ppms are somewhat farcical, in her view. When the reading is taken varies from distillery to distillery, and therefore provides something that is almost impossible to compare. While most are taken at the mashbill stage, if you are later blending, it’s an estimate at best. Not only that, but the make-up of the phenolic compounds will influence how peaty one 100ppm whisky is versus another 100ppm whisky. For Mackmyra, their pure peated malt sits at around 300ppm, but the mashbill for their peated and extra peated whiskies are respectively around 70 and 140ppm, Johnson reluctantly tells me. The level of phenols can also vary significantly between batches of barley – and at Mackmyra they aim to combat this by doing one kilning a year, distilling all their peated whisky at once and blending the batches to create a consistent product.  It's almost for this exact reason that Bruichladdich created Octomore, Head Distiller Adam Hannett explains. The project’s numbered releases have significantly different levels of peatiness, and were a project inspired by their curiosity to see how far they could push the peat level, as well as their partnership with Bairds maltings, who had batches of barley with irregular phenol numbers.   Although peat is intrinsically associated with Islay’s malts, things aren’t as clear-cut today – and as Hannett says, “You can’t categorise flavour by region”. Islay-based Bruichladdich produces both peated and unpeated whiskies. Originally the distillery made heavily peated malts, switching to unpeated styles in the 1960s, and today makes both. Its Port Charlotte brand was first conceived to capture what Bruichladdich would have been like in the old days, as a heavily peated malt. Intriguingly, Bruichladdich briefly tried using Islay peat, however found that they couldn’t get the phenol levels as high. Hannett highlights that another element in phenol levels is the depth the peat is cut from – with lower levels having more vegetation and therefore more phenols.  For Bruichladdich, when they’re looking for an overtly peated spirit, the quality of the underlying spirit is key – working with the right barley and fermentation times, for example. While peated malts might be thought of as heavy, oily and medicinal, they try to avoid this character. He deliberately won’t delay making a cut in the name of phenols, with that decision based on quality – and the result, he feels, is that, “The essence of the peat smoke is light – it’s barbecued.” For him, it’s about the balance between the peat character and everything else.  For blending specialists, House of Hazelwood, peated whisky “is a tool in our arsenal we can use to build a complex blend”, says Eilidh Muir from their Whisky Blending Team. She emphasises that using peat doesn’t necessarily equate to a smoky whisky, but can contribute something to a blend that is much harder to pin down – but something you’d notice if it wasn’t there. “A whisky dominated by a single flavour is often too one-dimensional,” she says – they too are looking for that fine balance.  Peat is just one element that can be used to shape a spirit – and there remains a certain amount of mystery to its influence. The sustainability question isn’t going away, but – as Bruichladdich’s Hannett says, “I don’t know what the solution is at the moment… but we’re looking for one.” As producers look for an answer, they’re pushing boundaries – experimenting with local sources and alternatives – something that will only benefit whisky-lovers, and the environment.  Browse a range of peated whisky or read more about spirits

The delivery timeframe for pre-arrival wines varies significantly, depending on where the wine is coming from.
