“I want to struggle,” says Cristiana Tiberio, earnestly, as we talk in London. This Abruzzo winemaker has rapidly become one of Italy’s most fashionable names. Thanks to her hands-off approach in the winery, she’s a darling of the natural wine scene, but is also earning top scores and rave reviews from the likes of Eric Asimov (The New York Times), Antonio Galloni (Vinous) and Ian d’Agata. But, as I found talking to her, she’s far from complacent.  Cristiana fell in love with wine as a teenager. Her father, Riccardo, was friends with Bruno Giacosa and the legendary Piedmontese producer’s wines were her favourites. She noticed early on that wines made with the same grape from different sites tasted totally unlike each other. “Wine was an infinity world,” she tells me, still with a touch of whimsy – and it was a world that she set her heart on exploring. When the time came, she set off to study chemistry at university – looking to the science behind wine rather than more practical oenology. Before she knew it, however, she’d been diverted, ending up with a PhD in photochemistry, far from “the infinity world” she’d committed to. So she quit. Instead, she travelled the world, working with various top producers, including Jacques Selosse, Nicolas Joly, Egon Müller and leading names in Chablis, before returning to Abruzzo in 2004.  In the meantime, her father Riccardo had found a special parcel of land in the mountains near the town of Cugnoli, with an abandoned plot of Trebbiano Abruzzese – the indigenous grape that had largely disappeared from the region. With its large, juicy berries and thin skins, this variety is more susceptible to fungal disease, can be challenging to ripen and lose its bright acidity if not picked at the perfect moment. Trebbiano Toscano (ubiquitous across much of Italy, and in France under the guise of Ugni Blanc) had replaced many plantings – favoured for its small berries, ability to accrue sugar easily and retain its moderate acidity.  This abandoned vineyard had survived largely because of its unique site – with canyons to the south and west, meaning a wind blows through the vines constantly, clearing the humidity and reducing disease risk. It was also planted in the traditional Abruzzese pergola system, with two vines planted at each post, wider (four-by-three-metre) spacing, providing competition but also forcing the branches to grow longer, meaning a larger canopy, aiding photosynthesis and therefore ripening. Now 95 years old, these ungrafted vines had also endured thanks to their fortuitously sandy soils (a neighbouring plot, on marly clay, had to be replanted on rootstock, and is now around 80 years old).  While the Trebbiano Abruzzese was the lure of this site, much of the property Riccardo purchased was unplanted. Today, Tiberio has 30 hectares of vines, all in one contiguous parcel – with additional woodland, as well as alfafa and wheat fields, all part of the family’s championing of biodiversity. And, as much of the area hadn’t been planted, the property hadn’t suffered from industrial farming – meaning the soils were already healthy, however preserving it is at the forefront of what Tiberio does.  The vineyards are divided between Trebbiano Abruzzese, Pecorino and Montepulciano – a fraction of the various grapes permitted in Abruzzo, but – importantly for Cristiana – the ones that were historically native to their mountainous terrain. They only planted with massal selections – something Cristiana feels is key. She argues that clones sourced from vine nurseries are designed to be planted anywhere, sacrificing anything “native” in the name of disease resistance and/or yield. “For me, historical heritage is everything in the wines,” she explains. On a more practical front, she finds that massal selections cope better in difficult vintage conditions, adapting more easily. As evidence, she points to a plot of ungrafted vines that she planted in February of this year (2024), explaining how despite the extremely dry conditions, the vines survived – entirely unirrigated.  While Cristiana clearly values the traditional pergola training, she has chosen to use guyot training for most of their vines. The old vines – largely used for Fonte Canale and Archivio – are under pergola, however she doesn’t feel it’s right for everything. When it comes to Pecorino, she explains how the variety naturally grows vertically, meaning pergola-training would force the vine into an unnatural shape, impact sap flow, and therefore quality. As for Montepulciano, while they have 2.5 hectares (used for Archivio) under pergola, she feels that the pergola system can push the grape’s rustic character – the thin skins with less phenolic ripeness (due to shading) at risk of producing more easily extractable, less refined tannins. For her, guyot elevates the flavour profile of the grape and helps balance the potentially aggressive tannin, avoiding it being too “loud”.   Cristiana’s brother Antonio is in charge in the vineyards, where they work organically. They briefly trialled biodynamics, however have veered away from using the preparations, along with any fertiliser or seeded cover crops – keen to avoid adding any outside inputs that aren’t “respectful of their terroir”, as Cristiana puts it. The winemaking continues this philosophy, with indigenous yeast, almost no new oak across the range (just 30% for the Archivio bottling), the wines unfined and unfiltered, largely avoiding temperature control where possible, and SO2 only added at bottling.  Although organic, they aren’t certified – something she feels strongly about. She explains how both dedicated, small growers and “big, industrial” producers can bear the same certification, while one’s farming is considered and artisanal, yet the other is borderline conventional. It “certifies our attitude and we stay lazy”, she tells me. “We stop struggling with our mind to find what is better for our terroir,” she says – something that she is anxious to avoid, keen to continue striving, pushing and working to do better, rather than tick a box and move on.  And that work is not merely intellectual. Having just finished harvest in Abruzzo before touching down in London, she was soon flying off to Oregon – squeezing in a second northern-hemisphere vintage at a property there. It’s a chance to learn, and few 50-year-olds seem to be quite as restless as this one. While Tiberio is a family venture, it’s not one that was passed through the generations – something for which Cristiana is grateful; she has been able to choose her site, choose the wines she’s making and define her own philosophy – one that is now resonating loud and clear around the world.  The Tiberio range  The regional wines  Trebbiano d’Abruzzo: Tiberio’s entry-level Trebbiano Abruzzese comes from three hectares of 75-year-old pergola-trained vines, those that were grafted 14 years after their oldest (dedicated to Fonte Canale). Only made with free-run juice, it’s fermented and aged in stainless steel.  Pecorino Colline Pescaresi: The vine material for their Pecorino was selected from a few old vines on the site, but comes from a 3.8-hectare plot planted in 2001 and guyot-trained. Only made with free-run juice, it’s fermented and aged in stainless steel. These are some of the oldest Pecorino vines in the region and the wine is unlike the modest Pecorino you may have previously tasted – ageing impressively.  Cerasuolo d’Abruzzo: This rosato is very special. It comes from nine hectares of Montepulciano, planted in 2001 and Guyot-trained. Made with free-run juice (with no maceration whatsoever) and only seeing stainless steel, it’s a perfumed and bright style of rosé that can and should age.  Montepulciano d’Abruzzo: This is the largest production cuvée, coming from 15 hectares of Montepulciano – both older pergola-trained vines (62-year-old) and younger Guyot (planted in 2001). As with the other entry-level wines, it only sees stainless steel, spending 15 days on skins.  Single-vineyard bottlings  Fonte Canale: Arguably Tiberio’s most sought-after wine, Fonte Canale is pure Trebbiano Abruzzese from 736 ungrafted, 95-year-old vines, spread across around two hectares of sandy soils. (They currently aren’t replanting the individual vines when they die, as don’t want to plant grafted stock, but are cautious of fragile young ungrafted vines attracting phylloxera.) It was first made in 2012, with these ungrafted vines needing time to recover from their previous neglect. The combination of site and variety produces wines with modest alcohols (often 12-12.5%) and naturally low pH (the 2018 is a mere 2.7pH!), giving a backbone of taut acidity (as Tiberio says – “not raw, but flavourful acid”). The site’s indigenous yeast produces a cool ferment (reaching maximum 23̊C) and a wine that doesn’t need racking post ferment, with little reduction. The malolactic is naturally blocked by the low pH and the wine only sees stainless steel – “to allow this wine to express its meaning”, Cristiana says. This stunning, vibrant white is a pure expression of a special site – one that ages beautifully, with its old vines almost overpowering vintage. If any further praise were needed for this wine, it has featured on the list at Massimo Bottura’s Osteria Francescana since its first release.  Colle Vota: First bottled separately in 2014, this vineyard is always the last to be picked. Planted in 2000 with massal selections from their old Montepulciano and guyot-trained, Tiberio finds the berries have thicker skins but release less during maceration (around 20 days). She also finds the tannins in the stems different here so is using a small portion of whole-bunch fermentation in the blend. Again with only free-run juice, the wine doesn’t see any oak whatsoever. Coming in a Burgundy-shaped bottle, this is the lighter of Tiberio’s two Montepulciano bottlings, but still with a firm tannic backbone, but with more delicate perfume.  Archivio: Launched in 2017, Archivio comes from the property’s 60-year-old pergola-trained Montepulciano on clay-rich soils, where the wind helps thicken the skins. Tiberio finds that the fruit has thinner skins from the middle of the pergola system, so these bunches are harvested separately. With thinner skins, the ferment has more lees and more reduction, needing oxygenation, so this is the 30% that goes into new oak to give it the necessary air. The bolder and firmer of the two Montepulciano bottlings, it is bottled in a Bordeaux-style bottle to indicate its ageing capacity – a wine that Tiberio confesses can be “monolithic” in youth, but offers great potential.  And coming soon… Quarmarì: A new single-vineyard Pecorino from 2023, this wine takes its name from the family dog, who passed away a few years ago. The wine has – so far – only been tasted by Ian d’Agata, who wrote that it is “a wine so amazingly good and unique that it will shatter all you thought you knew about the grape and what it can deliver”. Given how good even the entry-level Pecorino is, we can’t wait to try this.  The vertical tasting Pecorino  2006 Pecorino Colline Pescaresi: It’s hard to believe this is close to two decades old – the wine vibrant, lively and juicy with lean lemon freshness to the palate. There’s a suppleness to the body, yet it’s taut and mineral, and more honeyed and herbal notes emerging with air.  2009 Pecorino Colline Pescaresi: The 2009 Pecorino is instantly open, giving sage, thyme and honey on the nose, alongside fresh white peach. On the palate, however, it shows its restraint – still fulsome but with a mineral backbone that makes it feel youthful.  2013 Pecorino Colline Pescaresi: Leesy and mineral, this is almost reminiscent of mature Chablis or Blanc de Blancs Champagne – with a honeyed, chamomile edge. The palate is waxy and long, with a herbal lift to the finish.  2015 Pecorino Colline Pescaresi: There remains a creaminess to the nose here – the wine tighter than the 2013, with a limey, lean purity and plenty of energy.  2019 Pecorino Colline Pescaresi: This is strikingly different after the 2015 – much riper and more exotic, with apricot, peach, mango and orange peel. Combined with the wine’s viscosity, there’s something Viognier-like, however there’s still brilliant, mineral energy here, with tight, citrus-edged acidity.  Cerasuolo d’Abruzzo  2022 Cerasuolo d’Abruzzo: It will be amazing to see this wine develop. The nose is restrained – you can feel the potential behind. Gradually wild strawberry and bright raspberry emerge, alongside delicate rose petal florals. It’s tightly wound with immense energy to the flinty palate, a minerality driving through its core into the long, mouthwatering blood-orange finish.  2020 Cerasuolo d’Abruzzo: Deeper-coloured than the 2018, the 2020 has a brighter nose – with raspberry sherbet, strawberry laces and a creamy richness. The acidity again is in the driving seat, the palate chalky and mineral with lemon freshness and a slight phenolic grip that frames the crunchy red fruit.  2018 Cerasuolo d’Abruzzo: A surprisingly deep pink (especially given this is made only with free-run juice), with a copper hue. This was a real highlight of the tasting. The nose combines a flinty minerality with a funky, savoury, almost cheesy note, alongside dried cherry and rose florals. The palate has a line of bright acidity and a mouthwatering lemon finish. Very serious rosé that deserves bottle age.  Fonte Canale  2021 Fonte Canale: From a very dry growing season, this is such a baby. The nose is mineral with notes of pear skin, white florals, lime pith and cordial, with riper apricot emerging. It’s vibrant and full of tight, lemony acid, driving on to the chalky finish. Precise and pointed, there’s crisp apple and herbal freshness, with a saline edge.  2020 Fonte Canale: At first with a touch of gunflint reduction, the smokiness gradually lifts to reveal a tight and lean expression of Trebbiano d’Abruzzese – all citrus and mineral, needing time and air to reveal itself fully.  2019 Fonte Canale: The nose here combines vibrant green apple, greengage and lemon with a sea-spray freshness. It’s still limey and tight on the palate, but with a soft, full weight too – with generous yet tangy, white-pear fruit on the mid-palate, before tightening up on the saline, mineral finish.  2018 Fonte Canale: Dried herbs mingle on the nose with more hedonistic fruit – peach and green mango,, with real weight to the fruit here. There’s still the bite of piercing lemon acidity, surrounded by fleshier peach fruit.  2017 Fonte Canale: This feels much more closed in comparison to the 2018, with pure citrus energy, tangy, pure and limey, but with a slight creaminess mingling with the tart fruit. It’s concentrated and full of promise, but not giving much away now.  2016 Fonte Canale: Waxy and bright, the 2016 is full of energy. Pure flint, Meyer lemon and grapefruit pith, with more delicate white florals all vie for attention, while the palate is all about pure crunchy apple, minerals and its vibrant acidity.   2015 Fonte Canale: The nose here is complex – with notes of honey, chamomile, tarragon, bruised apple and a praline richness. The palate, meanwhile, feels brilliantly youthful, with lime sherbet and chalky minerality driving long into the mouthwatering finish.  2014 Fonte Canale: This was closed at first, with subtle floral tones of apple blossom and honeysuckle dancing on a background of lemon and pear flesh. The palate has that familiar drive of acidity leading into the impressively long, saline finish.  2013 Fonte Canale: Fresh cashew mingles with lemon sherbet on the subtle nose of the 2013, a wine with lift and energy. The palate is lively and long, with the finish offering honey, herbal notes and sweet hay.  2012 Fonte Canale: The first ever vintage of Fonte Canale, it was a real treat to try this special wine. The nose combines rosemary and thyme with candied lemon peel, as well as more honeyed notes. The palate is lithe and vibrant still, with a stony purity and saline finish.   Colle Vota  2020 Colle Vota: This combines juicy dark fruit, sweet spice, baked plum and violet florals. Rich black and red cherry fills the palate, with an edge of dried herbs and the scent of nutmeg. The tannins are savoury and firm, with a chalky freshness and zesty edge to the acidity.  2019 Colle Vota: The 2019 offers floral lift, with brighter cherry and raspberry fruit. Less savoury than the 2020, the palate is tight and mineral, yet with a softness to the mouth-filling fruit, all cut by juicy acidity.  2018 Colle Vota: This is drastically different to the 2019, offering an aromatic profile of baked strawberry and tea leaf – almost lapsang souchong. The chalky minerality stands out here, with high, piercing acidity giving the wine backbone.  2014 Colle Vota: There’s a significant colour change moving from the 2018 to the 2014 Colle Vota, while the nose reinforces this shift with leather and damp undergrowth sitting alongside dried red fruit. The tannins have softened and are supple, while the acidity still refreshes and cuts through the fruit.  Archivio  2020 Archivio: Savoury and rich, this is a powerful, dark, compact Montepulciano d’Abruzzo that needs time. It is intense and structured, full of tight bramble fruit and drying tannins, but with an impressive line of acidity at its core.  2019 Archivio: This is much more open than the 2020, with a sweeter, more red-fruited profile, and more overt sweet spice. Dried herbs and incense complement the bramble fruit. There’s a firm chalky grip to the tannins, tightening up as the structure announces itself on the palate, yet with mouthwatering acid keeping things balanced.  2018 Archivio: The sweet, baked red fruit of the vintage seems to carry through both of the reds in 2018. There’s a softness to the fruit, yet still power behind. It’s full-bodied and firm, yet the most approachable of the trio of 2018, 2019 and 2020, with fresh, juicy acidity.  2017 Archivio: There’s a touch of maturity just starting to show here, with the first hint of sousbois and leathery richness, an almost tarry character, sitting alongside the sweet plum, baked blackberry and smoke. Touching down in Burgundy last week was a shock. Coming from London’s autumnal hues, the hit of hot air as the plane doors opened was surprising – indeed, it’s abnormally balmy across much of Europe at the moment. It’s another reminder of climate change and the very real impact it is having – especially on viticulture and other agriculture. While the cool and rainy 2021 vintage felt like a return to the old Burgundy (with all its challenges), 2022 and 2023 were both modern vintages that speak of global warming. The region’s vignerons were in a good mood, with the 2023 vintage harvested weeks ago and the wines safely in the cellar. For once, they have had not one but two consecutive vintages offering decent volumes, helping to make up for a run of tiny crops. The cellars are – at last – looking a little less barren. Indeed, the regional body Vins de Bourgogne reported that 2022 represents a 75% increase on the measly volumes of 2021. The 2022 vintage, however, was the reason for and focus of our visit – getting our first taste of the wines that will be dominating the calendar for the next few months. As I’ve mentioned, this was a modern vintage, a year that is very much the new normal. The winter was cold, however warmer temperatures in February and March saw an early start to the season. Once again the mercury dropped in April with the threat of frost, however it didn’t seem to have major ramifications. The summer was warm and dry – with heavy rain in late June breaking the drought, providing essential refreshment for the vines in the year’s arid conditions. At Louis Jadot, Thibault Gagey explained how there were two weeks in August with temperatures over 35˚C, during which the vines shut down. Alvina Pernot explained how plots with richer soils – those with more clay and better water retention – fared better, pointing to Clos des Folatières as a site that thrived in the year, as well as older vines with deeper roots, those that could reach and draw upon water reserves. Picking started at the very end of August, with another contracted harvest during which the ability to pick what you wanted when you wanted key to quality. The good news was that the crop was plentiful, with most managing to achieve a full crop, with a maximum of up to 15-20% less for some of the Chardonnay. Looking at the season on paper, it’s easy to imagine the resulting wines might be dominated by their ripeness – but that’s simply not the case. We need to taste and talk much more into exactly why, however it seems that the generous yield was the year’s saviour. With so much fruit for the vine to ripen, sugar levels remained moderate. As in 2020, the grapes retained high levels of tartaric acid, bringing surprising freshness to the wines. The malic acid was degraded, but this meant that the malolactic fermentation had less impact on the final wines and their balance (although we anticipate that some may still have chosen to block it). From what we’ve tasted so far, the reds show particular promise – offering juicy, concentrated fruit without drifting into over-ripe or jammy, vibrant acidity and fine-textured yet very present tannins. Those we’ve tasted are amazingly open even though few have yet finished élevage – the ripe fruit shining through, but there’s a gravitas beneath that appealing, mouth-watering fruit. The whites, meanwhile, are classical in their fruit expression, with more traditional white peach, melon, pear and citrus. There’s good dry extract and density here, with balance too. They have natural tension, and there seems to be a pleasing bitterness that adds to their freshness, something we found consistent across producers so far. In general alcohols are modest, sitting mainly between 12.5 and 13.5%, for both reds and whites. This is only the beginning of our deep dive into the 2022 vintage, however we left the sunny streets of Beaune filled with excitement about the year. There is still much to discover and explore, and much, much more to taste to inform our full vintage report – but it’s clear already that this is a year with great potential, and one that you’ll want in your cellar. The Glenfarclas distillery is one of Scotland’s most successful. What sets the distillery apart is the family that owns it and has done so for six generations. While most large distilleries in Scotland are nowadays owned and run by large drinks companies and corporations, the Grant family continues to take pride in owning Glenfarclas, seen fully through their timeless slogan: The spirit of independence.  The Glenfarclas Distillery's history The Glenfarclas story began in 1836 when farmer Robert Hay received a license to distill spirit on Rechlerich farm, Ballindaloch. In 1865, after Hay’s passing, John Grant bought the farm and the distillery along with it and it has been owned by Grant’s descendants ever since. Grant was a successful farmer, and while he continued to operate his Blairfindy farm, he
left the new site in the care of his cousin, John Smith, and his son, George Grant. Smith left Glenfarclas and John Grant died in 1889, leaving the site in the hands of his son. Sadly, he also passed soon after leaving the distillery to his widow, Elsie, and his two sons, John and George. The 1890s brought with them a whisky boom which led to an unfortunate partnership with Pattisons Ltd. While expansion was in mind, this partnership led to many hard years for Glenfarclas. Luckily, the Grants retained full ownership of the distillery after the whisky crash, and in 1913 George took full control. John retired due to ill health.  George Scott Grant followed, and led the distillery for 52 great years, until his death in 2002. Under his leadership Glenfarclas built up its name and brand image. Glenfarclas is known to have a large number of very old and rare casks in its warehouses, and this is due to
George S. Grant’s decision to supply less stock to blenders, decades before.  John L.S Grant, the current chairman, has been with the company since 1973 and succeeded his father after his passing in 2002. The sixth generation comes in the form of George S. Grant who joined Glenfarclas in 2000 and works as the global brand ambassador, introducing the world to the amazing story and liquid behind the Glenfarclas brand.  Glenfarclas single malt whisky Glenfarclas has come to be known for its old and rare releases, with huge popularity in unique markets like China and Russia, and a cult-like following across the globe. As a family-owned company, the expansion speed and budget aren’t huge, therefore, they cannot reach the global popularity of The Macallan or Glenlivet. Yet, with an amazing story and even more impressive casks, the team has managed to cement Glenfarclas as both a loved brand for
drinkers and collectors.  Glenfarclas whisky is known for its full-bodied, Sherry matured expressions. The team only releases expressions at natural colour, often at cask strength, aged for long periods. Perhaps, the most famous releases by Glenfarclas come under the Family Cask range, single cask releases from each year between 1952 and 2008. The ongoing series has made Glenfarclas hugely collectable as fans attempt to hunt down each and every bottle. These are bottled at cask strength, natural colour, and retail for thousands of pounds.  Beyond special releases, the core portfolio includes the 10-, 12-, 15-, 17-, 21-, 25- and 30-year-old, and 105 Cask Strength. Most of these are available at very affordable prices for such well-aged whiskies, again showing the team’s amazing warehouse management skills, unlike many brands that have low reserves of well-aged stock. Truffles: small, gnarly things. Equally ugly and alluring. Pungently intoxicating. Deliciously rare – and undeniably expensive. Alexandre Dumas described truffle as “the holy of holies”. Rossini called it “the Mozart of mushrooms”. Jean Anthelme Brillat-Savarin said just the name “awakens erotic and gastronomic ideas”. There’s something magical about the way these funghi lie just out of sight. The elusive treasures lurk beneath an otherwise unassuming forest floor, found only with the help of a specially trained hound. Once unearthed, however, they become the centrepiece to the world’s most expensive dishes, prized by Michelin-starred chefs and gourmands alike. They aren’t just another ingredient, however, there’s theatre to their presentation: the stage set in the kitchen, then served with a flourish tableside. For Rowan Jacobsen, author of the recently published Truffle Hound, one sniff was enough to keep him on the trail for three years. The Vermont-based writer was in Barolo in 2018 and on his way to the table, when he passed a giant white truffle under a glass cloche. Instinctively he lifted the dome: “I didn’t even make it to the table. Such a crazy smell. I was destroyed at the luncheon – I kept thinking about the truffle,” he tells me. That one flare of the nostrils had him hooked, and he’s been following truffle hunters around Europe ever since. His book follows his adventures – discovering “dreamers, schemers, and some extraordinary dogs” along the way. Piedmont is considered the home of the truffle – with the annual fair in Alba (running from October to December) the epicentre of the trade. White truffles (tuber magnatum), as found in Alba, are the crème de la crème of the truffle world – distinctly seasonal, flourishing in the autumn and winter. This brief window of opportunity is key to their appeal. As Donald Edwards, Head Sommelier at La Trompette, says, “What else can you have where the stopwatch of deliciousness is literally ticking by the table?” Of course, not all truffles are created equal. Black truffles are a third or a quarter of the price of white truffles and offer a very different aroma. Jacobsen describes “more pungent, more overwhelming” and “invigorating” scent of white truffle as “garlic, salami, almost gasoline” versus the “comforting, soothing, round” notes of “cured olives, cocoa and hazelnut” that he associates with black truffles. And while there is only one white truffle, there are two types of black truffle: the black winter truffle (or Périgord, tuber melanosporum, now mostly grown in Spain) and the black summer truffle (tuber aestivum, sometimes known as the Burgundy truffle but found all over northern Europe, including southern England). The latter, more widespread breed is not nearly as intense as its winter sibling, meaning more is needed for the same impact. One reason that white truffles carry such a premium is also that they have – so far – proven impervious to cultivation (although scientists in France have recently claimed to have cracked this). The truffle hunters, or trifulau, in Piedmont are therefore unsurprisingly secretive about where they find their treasure. Often speaking only a local dialect, these foragers roam the woods – often under the cover of darkness in search of “white gold”. Their dog will sniff their way to the right spot, pawing the ground and patiently waiting for their master to dig up their bounty. “It’s a billion-dollar industry totally dependent on dogs’ noses,” Jacobsen says, laughing at the absurdity. While the hunters might avoid the limelight, it’s not the case when it comes to their dogs, Jacobsen tells me. The canine connection is taken to the next level when you also depend on a four-legged friend for your livelihood. While pigs were the original snouts charged with sniffing out truffles, hunters switched to dogs in the 17th and 18th centuries. Lagotto Romagnolo is the “traditional” truffle-hunting breed (and comes with an associated premium, given their potential return), but today almost any dog is used. They simply need to be trained and have the right nose for the job. “Good ones are amazing,” Jacobsen tells me. “They can find a truffle 50 yards away in the forest and they just know it’s there.” Trifulau Luigi Rosso has been – along with his dog Danko (aged seven) – sniffing out the good stuff for 30 years. While it might look easy, he says that it’s incredibly difficult and can be dangerous for both hunters and their dogs, traipsing through forests in the dark. It is, however, all worth it for him. “The tranquillity that is in the air while you go for the truffles. The moon, the silence and only the sound of your footsteps on the damp leaves, then the joy of your dog when it finds one…” he tells me. The unique scent of truffle is what drives connoisseurs to seek them out – bidding on the finest examples for extortionate sums. “I feel like they've evolved to hit some deep pleasure receptors in our brains. When they're good you just want to luxuriate in them,” Edwards says. William Lowe MW – the man behind Cambridge Distillery – set about capturing the elusive flavours of truffle in his quest to create a digestif-style gin. The idea was born when looking at the digestif trolley in a Michelin-starred restaurant – and a sommelier who was scornful at the idea of a gin worthy of joining its ranks of fine Cognac and single malt whisky. “If you look at those rare and mature examples, you’ll see that the oxidative maturation process creates these beautiful earthy aromatic profiles sometimes referred to as ‘forest floor’. We wanted to achieve this profile through distillation rather than maturation, and truffles gave us the perfect route to do so,” Lowe says. “It took me a very, very long time. Because truffles are hard to deal with. They are packed full of volatiles, which is to say that truffles smell more than they taste,” the Master Distiller explains. “If you think it through – every time you open a door to a restaurant that is serving truffles, bang you get it straight away. But if you look at the food they serve truffles on and it’s always almost neutral dishes: creamy pasta, mushroom risotto. It’s never on super flavoursome dishes because if it is, you can’t taste the truffle anymore.” The challenge, however, was capturing something that doesn’t want to be caught, and finding the right level of truffle. “With truffle, chefs will normally do one of two things: either they’ll know you know it’s expensive so they’ll use loads of it so you can’t taste anything else for the rest of the meal – or they’ll do the opposite. They know that you know it’s expensive so they use so little that it’s the Emperor’s new clothes – you sort of have to search for it. It takes a genuinely skilled chef to use truffle well. And using it well is when you get all of that amazing aroma but you can still taste the other things.” This was what Lowe was aiming for – but it wasn’t easy. He spent months refining the distillation technique for truffle, but the flavour was only “ok”. He went back to the drawing board and decided that the problem was the truffle he was using – black wouldn’t cut it. “We went straight to Piemonte – white truffles from Alba. Gram for gram, worth more than gold […] and it came out and tasted a lot better than gold does so that’s an easy trade,” says Lowe. For trifulau Rosso, you need at least 10 grams on a dish (whereas, he says dismissively, restaurants will often only use a measly five) – with homemade tagliarini top of his list, although he also suggests trying it on panna cotta. He considers Pelaverga – a rare red variety that’s native to Piedmont – the classic pairing, but otherwise goes for one of the region’s other reds, Barbera, Barbaresco or Barolo. These are undoubtedly the classic pairings, following the simple rule of what grows together goes together. However, Jacobsen or Edwards don’t agree. “It couldn’t be more wrong. It really requires a white. The tannins clash with the aromatics,” Jacobsen says. The truffle specialist opts for Champagne, white Burgundy or cool-climate Californian Chardonnay – even Beaujolais. As for Edwards, he likes something that plays on the delicacy’s textural quality: “They work so well with buttery, umami-laden cheese sauces that I can't not want really classy Chardonnay. I want bâtonnage, I want really expensive but underplayed oak and I want ripeness with a gimlet-eyed stare of terroir behind. Basically, Burgundy, Mornington or the best of the Santa Rita Hills (I'll accept that other places also make perfect wines for this), plus if I can have a few years in bottle to build that sous bois flavour connection then all the better.” At the time of writing, we’re in the midst of the 2021 truffle season – one that has brought eye-watering prices. The hot, dry summer in Piedmont (unlike the wet conditions experienced in northern Europe) has led to a tiny crop – some say the smallest in history, driving prices up. Bloomberg has declared it “The Great White Truffle Crisis”. The white truffle needs such specific conditions that climate change, and – as Rosso tells me – the warmer autumns in Piedmont, pose a serious threat. While we consider Alba the spiritual home of white truffles, today most come from elsewhere. Both Central Italy and Le Marche, but also Romania, Serbia, Croatia and Hungary are all now hotspots for truffle hunting. Many of these regions are benefiting from the shift in climate, now having the ideal conditions to nurture the rare tuber magnatum. As for black truffles, the summer variety can now be found as far north as Sweden, but drought conditions mean that irrigation is becoming essential for existing orchards. Beyond climate, there are other challenges. In Piedmont, there are fewer forests than there once were, with more profitable vineyards replacing woodland (another reason that hunters are looking elsewhere). Also, the local trifulau are – in general – an ageing group. One truffle hunter, Carlo Marenda, has established a non-profit, Save the Truffle, to try and protect the region’s truffle hunting heritage – both by passing on the tradition to younger people and protecting the forests, nurturing the right environment for truffle growth. “It used to be that these forests were very actively used by farmers, peasants – fallen wood for firewood, leaves for animal bedding etc. So forests didn’t have a lot of undergrowth,” Jacobsen explains. “But then the world changed.” With the forest floor not being cleared, decaying matter acidified the soil – something that truffles hate. Truffles thrive in high pH soils, which is why they’re found on beds of limestone. To ensure the forests provide a welcoming home for the tubers, it’s essential they’re managed correctly. While there are certainly challenges to preserving the truffle’s place in Piedmont, the good news for gastronomes is that these tubers aren’t disappearing – just moving. After three years on the trail, Jacobsen is as enchanted by truffles as when he began. But he’s less keen on the hierarchy that comes with them. There are, he says, plenty more species of truffle beyond those currently on the market – but hunters can’t sell them, so keep them for themselves. He hopes the truffle culture will shift to grassroots foraging, rather than “waiters in tuxedos grating your precious morsel over your pasta”. However it reaches your table, it’s clear that the truffle holds a special allure – and the transience of its elusive scent, fading with the seasons, is what keeps us on the hunt. Chasing truffles

Many factors come into play when tasting Chateau Musar vintages. Was it a warmer Cabernet year (1999, 2000, 2005)? Was it cooler, making Cinsault more influential in the blend as in 1998? Or was it a Carignan year like 2003? Will grape prominence be less relevant than the dodging of bullets across the Beka’a in a vintage we’re lucky to see the appearance of at all?  The tasting notes that follow shine a light on the vintage, the weather conditions, and the family events that helped shape the wines. There is also an insight into the mindset of the winemaker, Serge Hochar, as he became less influenced by his background in Bordeaux and increasingly confident in the wines emerging from his own terroir in Lebanon. Hochar family wines live for a long time and their flavours linger in the mouth and memory long after the bottle is drained. Some of these wines have been tasted à point, at the peak of perfection, but many have yet to reach this moment, and they are judged on their potential. Even more fascinating, perhaps, are the notes on wines that are perhaps just past their prime, but still delivering fascinating nuances that astound the taster – some of these wines elicit the most evocative tasting notes of all. For the Hochar family, a new wine, however shapely or pleasing, is always pregnant with promise for the future. Many of the notes below show the best that the wines can be – but they also underline the fact that for each taster Musar’s most sublime moment will be different. Although the Hochar family does not believe in the concept of defining a wine with numbers, ratings have been included to give some guidance.  Jancis Robinson MW, Bartholomew Broadbent and Steven Spurrier award marks out of 20 for each wine. Michael Broadbent prefers a five-star scoring system. All notes were taken in 2018/19 with the exception of Michael Broadbent’s. Chateau Musar: the reds One-third of Cabernet Sauvignon, Cinsault and Carignan, aged for a year in French Nevers oak. 2013 Chateau Musar  "Dense, deep red, still hints of purple at the core and little age on the rim. Marvellously warm Mediterranean fruits on the nose, autumnal in style but youthful in their rich, robust, vigorous presence. The essence of Lebanon in a glass, rich with spice and cooling breezes, the dry, herby fruit flows with energy over the palate before giving way to a finish that confirms the structure, fruit and tannins blending exuberantly with intriguing hints of much more to come in the next decade." Steven Spurrier, Score: 18/20, Drink: 2020-2040  2009 Chateau Musar  "Mid-crimson. Light, sweet start. For the moment it’s a little simple. Bright, ripe red fruit. Slightly burnt edge. Lots of tannins. Quite dry and youthful on the finish. Much longer bottle age needed. By far the most youthful wine in this vertical tasting." Jancis Robinson MW, Score: 17+++/20, Drink: 2028-2050  "Deep ruby colour but light translucent rim. More primary sweet baked red fruit notes and a lovely bloody, cured meat Rhone character. This is a complex nose – sweet candied blackberry, raspberry, cardamom, tobacco – a very pure nose.  Dense tannins still not fully integrated but will get there and very well balanced with a vibrant line of acidity running through the palate. A real Italian flair to the wine but the tannins are so silky, beautifully handled. Still plenty of life in this wine." FINE+RARE 2008 Chateau Musar  "Heady and beguiling with a gamey note on the nose. Very sweet and young; well balanced on the palate. No hurry at all to drink this youthful ferment. Very tight, dry wine that is so much younger than any other vintage tasted. So much more youthful than a Bordeaux 2008!" Jancis Robinson MW, Score: 17.5+++/20, Drink: 2025-2045 "After blending, [Head Winemaker] Tarek [Sakr] was raving about this vintage. I asked him to add 0.5% of any wine he liked and we’d taste it again in two weeks. An act of faith or la folie? We tasted it again. He raved again; the wine had changed colour and bouquet." Serge Hochar "Dark, blood red. Really powerful nose with tonnes of young, juicy blue and red fruit. Behind this, layers of dried fruit emerge (prunes and raisins) and tobacco, generally a much darker and more brooding profile than the initially youthful nose suggested. Leather and smoked meat, as well as mineral graphite, but also fresh mint and liquorice. Complex and ever-changing in the glass that invites you to keep going back and discovering more. Again, fantastic acidity, plus velvety tannins." FINE+RARE 2003 Chateau Musar  "Mid-garnet. Quite a bit deeper and younger-looking than even the 2001. A little marine influence (oyster shells?) on the somewhat reticent nose. Rather different from many of these Musars. Sweet start and very vigorous and fun. If I had not tasted vintages back to 1961, I might have taken this for a fully mature wine. It already gives masses of pleasure with some milk-chocolate notes and quite a bit of light dry tannin on the end. Excellent drive. Long and dramatically big, but with good freshness on the finish." Jancis Robinson MW, Score: 18.5/20, Drink: 2016-2035 "A vintage with high alcohol and acidity. Rainiest winter in 15 years, then not a drop of rain from April throughout a hot, sunny summer. Heatwave during flowering reduced the harvest by 30%." Tarek Sakr, Head Winemaker "Darker than more recent vintages, gun smoke, spice and hints of leather. Rich darker fruit, riper with dense, sweet mid-palate. Balanced though, with Cinsault contributing acid and vibrancy that is often absent in 2003s. Fruit profile is richer and darker and tannins riper and juicy, perhaps not as refined as the excellent 2008, but still with Musar DNA. Smoked meat and charcoal. Delicacy throughout. Fascinating and delicious." FINE+RARE
 2000 Chateau Musar  "Reasonably mature. Brick-red rim, autumnal faded red bowl. Mouthwatering acidity on the nose that can be smelt a foot away. Lovely aromas of damp autumn forests, decaying leaves and wood combine with a slightly chocolatey sweetness. A little spirit developed over the course of the evening: almost a Drambuie or Grand Marnier character. Slightly sweet on the palate with very long, classic autumnal Musar notes, soft, mature and Old World, braced by that lovely acidity. Still full flavoured and crisp on its long, lingering aftertaste, finishing with notes of liquorice and sherbet." Bartholomew Broadbent, Score: 18/20   "A Cabernet Sauvignon year. One of my clients called it 'a lioness' of a wine." Serge Hochar "Bright ruby red with the start of some brick around the edges. Sweet fruit, baked strawberries, rosewater and pomegranate. Peppery spice. Some leather and petrichor. With more air, burning embers and deep, meaty fruit and spice. Lovely sweet tannins on entry. Elegant and fresh, but with an enveloping warmth and caressing softness, though it remains both light and structured thanks to the depth of flavour and superb acidity." FINE+RARE  1998 Chateau Musar  "Pale, jewel-bright garnet. Light, spicy, particularly well-integrated nose, already well developed. A sweet start on the palate; the opposite of heavy; a really lovely wine: fresh, sweet, with some very slight mintiness and a dry finish. Very long, and nicely mature: seems just right now. It will go beautifully with food. One of my favourite wines in this collection. Is it the Cinsault I like so much?" Jancis Robinson MW, Score: 18.5/20, Drink: 2012-2030 "Tarek said: 'Let’s bottle at the end of the second year. Let’s try!' We did 20,000 bottles like this, then the rest a year later, as usual. We tasted the wines four years later. Something was missing in the earlier-bottled wines. They had an obvious Chateau Musar character but were not necessarily better. Identity is permanently important. We went back to the original formula." Serge Hochar "Cool year, Cinsault dominated. Cold and rainy until June, with a sunny, dry summer. Harvest began on 9th September." Tarek Sakr, Head Winemaker  "Similar in style to the 1997 but with more fruit concentration, the aromas more earthy and
dried leather, but the lifted perfumed floral tone still dominates on the nose: dried roses, sweet licorice, candied cinnamon – lovely additional set of oak flavours that add aromatic complexity. Lovely texture – tannins are seamless – silky and long – provide structure but are sweet and resolved, backed by vibrant acidity keeping the wine fresh. Fruit is plump, rich, ripe, very much on the red fruit spectrum – raspberry, red cherry. Great acidity. Light fresh tobacco and light leather notes coming through on the finish. Great integration and drinking very well now. Difficult to pick between the '97 and '98 – the '97 is more ethereal – it tastes like quality aged Burgundy! '98 is plusher and more concentrated but less ethereal." FINE+RARE

Surprisingly intense and concentrated nose with strong ash and autumnal smells; great acidity, damp leaves and old bonfires. On the palate, very sweet fruit and a long finish that goes through several evolutions (one developing old pomegranate flavours) in the longest aftertaste of any Musar. Full mouthfeel defies the lightness of the wine. Almost chewy in texture. Intense volatile acidity." Bartholomew Broadbent, Score: 18/20  "We had two harvests – before and after a week of heavy rain – and made a big, big wine. Two years after bottling it changed direction and began to create heavy sediments. It was the biggest surprise in my life. This wine was behaving like a human going through an adolescent crisis. Which way is it heading now? The only thing I know is that I trust my wines. It is already an interesting wine, and starting to taste beautiful." Serge Hochar "Translucent Pinor Noir-esque colour with tremendous clean aromatics – lifted floral notes,
fresh aniseed, scented aromatic tea leaf, red cherry, strawberry, pomegranate, so perfumed. Seamless tannins, silky soft but there is a delicate framework and the fruit concentration provides lovely depth. Fruit remains very fleshy. Very clean considering the age, and lovely refreshing, vibrant acidity, remarkably stable at 24 years of age. Lovely, ethereal quality to this wine, reminds me of a great aged Burgundy with the acid and florality!" FINE+RARE 1979 Chateau Musar  "…misleadingly pale, fully mature; nose like squashed strawberries; sweet, long, delicious." Michael Broadbent "Vibrant red with a hint of mahogany but still red on the rim. Astoundingly young and vigorous with warm red summer fruits and a definite hint of roses on the nose; has the feel of a wine at least 20 years its junior. The sweetness of fruit continues on the palate with a backbone of tannin to firm it up – without losing the old-fashioned ‘burgundian’ richness and just the right level of acidity to refresh the palate for another glass. This must always have been an exceptional wine, as it remains today." Jancis Robinson MW, Score: 18.5/20 1974 Chateau Musar  "Good depth but still light, with a mature-looking, orangey rim. Very vibrant, sweet-fruited nose, alive and drawing attention to itself. Very old, elegant fruit on the palate, with a touch of cheese rind. Extraordinary texture: velvety and syrupy at the same time; deep, with high acidity and a very long finish. Biscuity flavours (‘Playbox’ biscuits: if you are English and of a certain age, you’ll remember licking the sugary coat off those). Although past its prime, it is fascinating, like an old man with many stories to tell. You can imagine the wartime conditions through which this wine has aged, enduring much and remaining strong, until now as it begins to lose its way." Bartholomew Broadbent, Score: 19/20 "My ’74 I wasn’t happy with. But it developed! In 2000 I tasted it again. Now I think it is nearly ready to drink." Serge Hochar 1970 Chateau Musar  "In 1983, richly coloured; pine needles and vanilla; soft, velvety, well-balanced, yet powerful and plump like Château Petrus. Labelled ‘Réserve Rouge. Grand Cru’, still deep and rich, complete." Michael Broadbent, Score: five stars  "Dark, shaded ruby; just the sort of colour I would expect from a 1970 red Bordeaux. Light, very Cabernet nose. If I were given this blind I would be tempted to head straight for Bordeaux, though it would have to be a comely château such as Palmer perhaps, and a fairly ripe vintage. Perhaps 1961? But then there is probably more sweetness and a bit more exoticism than one would find in a Bordeaux of this evident age... Mouth-filling and again that note of violets, candied this time. A little dusting of tannins on the end. Lovely wine." Jancis Robinson MW, Score: 18/20, Drink: 1985-2022 1964 Chateau Musar  "Mature rim but not for its age: still tons of vibrant life in its red colour. Very little sign of ageing. Nose is very big, more like a mature Châteauneuf-du-Pape or other big, structured Rhône wine. Very concentrated and deep with autumnal bonfire ash. Spectacularly good, huge on the palate: damp decaying leaves; great acidity; volatility balanced by brown sugar flavours; delicious, sweet, long on the finish. Hardly any age. A great classic wine." Bartholomew Broadbent, Score: 20/20 "I had been in Bordeaux. I was 25. I prefer not to qualify the attitude of the French towards me, but no-one hurt me: they respected my oenological degree. If I had to describe myself, I was a civil engineer who made wine and who had started to discover the complexity of wine. I was trying to understand, to observe. I knew that nature will never repeat herself and for a while I thought I might change all the grape varieties that we were growing, but to plant grapes and make good wine takes 20 years, and what if I was wrong?  "However, I experimented a little with Grenache, Mourvèdre and Merlot. Looking back there were three stages to my winemaking. Between 1959 and 1964 I was making wines without an objective, with what we had at hand. From 1960 to 1970, having studied in Bordeaux and been influenced by Saint-Julien and Saint-Estèphe, I now realise that I was trying to produce wines in that style. barriques (25% new each year) where they mature for a further nine months. They are then
blended, bottled and aged for a further six to eight years before release. 2012 Chateau Musar  "Fine fresh-looking lemon-yellow, but shows reassuring maturity. Dry honey and spices on the nose; a controlled richness of fruit on the palate that reminds me of Ygrec: complex, dry but with sweetness in its DNA before natural acidity lifts the exotic aftertaste. "Deep orange gold. On the nose, beginning to mature and open up. Good depth and concentration. Lovely flavours of old Cheddar and surprisingly high acidity. Very good length on the aftertaste. Will age for a long time. After an hour in the glass, the wine started to develop characteristic honey aromas that also revealed themselves on the palate alongside a beautiful vanilla and beeswax aroma. The next morning saw it develop a rich, sweet, cognac-like nose; bone dry, powerful yet elegant on the palate with pronounced alcohol and a long finish. By day three, the middle nose had developed even more." Bartholomew Broadbent, Score: 18.5/20 "The weather was terrible. We had winter until June. Hail came. Biblical weather! I tried to make a Chateau Musar red, but two years later found it wasn’t up to standard, so we distilled it. The best grape that year was white Obaideh." Incredibly intense, concentrated, dry, very deep and austere: a combination of leather saddles, barnyard and old mahogany musky characters with mouthwatering citrus orange acidity. Astonishing complexity and intensity on the palate, with a syrupy texture. Massive, deep powerful, concentrated and long. Delicious flavours keep changing like a kaleidoscope in this mouth-filling but elegant wine. On day two it had aromas of sweet Australian ‘Tokay’ and a bite of cognac-like alcohol." Wines sold en primeur will be released from the producer after bottling, typically 18 months after the so-called campaign ends. Upon arrival your wine will be stored at Vinfolio in our temperature-controlled warehouse until you decide to take delivery.

When a wine is on "pre-arrival", it means that we have a confirmed order on the bottles from our supplier and we are simply waiting for the winery or distributor to ship the wine to us. The delivery timeframe for pre-arrival wines varies significantly, depending on where the wine is coming from. We will notify you once they arrive at our warehouse and, at that point, you can decide to arrange shipping or list them for sale.
