Oak barrels have been used in winemaking for thousands of years. While initially their purpose was simply as a holding vessel, today it is much more than this. As we have learnt about wine production at a molecular level, we have discovered the unique interaction between oak and wine – adding flavour, textural complexity and increased ageing potential. These intrinsic qualities have seen oak at the forefront of fine wine’s greatest success stories – but also some of its greatest failures. The use of oak to improve a wine requires great skill and finding that balance has shaped the modern history of fine wine.  What is rather beautiful about winemaking, particularly in fine wine circles, is that despite the input from developments in science and technology, production remains an artisan craft, relying both on tradition and technology. The barrel-maker is a perfect example of this partnership and no one understands this better than François Frères. This lauded Burgundy cooper’s ties to the world’s greatest wines make it one of a very small number that have lived through the development and fashions within fine wine.  Today, business has never been better for François Frères; they produce 30,000 barrels a year and export to every major wine region in the world. The secret to the François Frères barrels historically, Gigandet believes, is their consistency, while the all-important signature toasting is paramount. To keep up with the ever-growing world of fine wine, François Frères produces tailor-made barrels that fit the varying climates and varying styles of each winemaker, meeting the standards set by today’s precision-led winemaking. Despite the growth of the business in recent years, François Frères still remains intrinsically linked to its homeland in Burgundy and the specific microclimate of Saint-Romain that is so important for the seasoning of their oak – another key factor behind the company’s success. “The microclimate of Saint-Romain, in a windy and pollution-free environment is ideal for the seasoning and drying of the oak. This oxidation of phenolic compounds under the influence of fungi, releases enzymes that hydrolyse the phenolic compounds, reducing the wood’s astringency, producing oak of the finest quality for wine production,” Gigandet tells me. The art of the cooper is much more than just sawing and toasting – it’s about sourcing, traceability, control of drying time and heating, hygiene, temperature control, sorting and more. With increased knowledge, the quality of the barrels, like that of the wines, has greatly improved. Even just a few years ago, Gigandet admits that in colder Burgundy vintages, sometimes their barrels jarred with the wine – they “brought too much tension and could sometimes seem too austere”. But now they have a better understanding of the qualities their barrels can bring to Burgundy: “François Frères barrels remain attractive to winemakers because they are great at retaining freshness and minerality.” Perhaps most importantly, François Frères wants its barrels to amplify a wine’s intrinsic qualities. “It wants to accentuate the beautiful tannic structure of a wine, contribute to its flavour but without excess of sweetness from the toasting, as well as amplifying the wine's tension and minerality, helping retain its freshness and its fruit,” Gigandet says. As technology has developed, so has François Frères. It is what Gigandet aptly calls “the evolution of taste” – “the cask has evolved considerably over the last few decades along with the quality of the wines. Today, the barrel is much more specific, manufacturing almost tailor-made barrels for each customer’s needs.” The business was founded by Joseph François in the early 1900s, never imagining that being a cooper would become a full-time job. Back then, Gigandet reminds us, “It took several trades to live.” But the next generation, Robert and Henri François, saw the demand for oak casks rise, at that time mainly used to transport wines. They took the operation full-time, creating the François Frères brand in 1942. In those days, as Gigandet points out, “The tradition of maturing wines in barrels was reserved only for the very top red and white wines of Burgundy and the great Bordeaux châeaux.” Even within these regions, barrels were a luxury, re-used year after year given their expense, therefore keeping the demand for new barrels low. By the 1960s the brothers were met by the development of stainless steel and plastic containers. The barrel quickly lost it supremacy as the preferred vessel for transportation and demand plummeted. It was only the top producers that helped keep the cooperage going. By the 1970s François Frères was producing barrels for one of the world’s most famous estates, Domaine de la Romanée-Conti – a partnership that would be instrumental in the continuation of the business through a difficult period. The next generation – Robert's son, Jean – was confronted by the economic downturn of the early 1970s and turned to export to save the family business. Fortuitously at this time, oenologists in the United States started to highlight how ageing wines in new oak barrels brought complementary flavours and complexity to the wines. In the 1980s, the French market caught onto the idea and both export and domestic markets grew. The oak barrel was entering an era where it would become the star of the show – and a must for all top producers. François Frères’s reputation for working with the best saw it perfectly placed to capitalise on this new-found love for the barrel. But according to Gigandet, it wasn’t just the fashion of using new oak in the 1980s and ’90s that saw such a huge increase in demand. This trend emerged just as wine exports exploded. What he calls “the democratisation of wine” saw the world of wine suddenly open up to the middle classes – and this increase in sales saw an ever-increasing need to maintain quality and improve consistency. Such demand prompted and funded a better scientific and technological understanding of wine production. More importantly for François Frères, it fuelled the need for a better understanding of what barrel-ageing does to wine – and why. It was already clear that contact with new oak changed wine profoundly. Most obviously the aromas and flavours of the wine develop, becoming more complex. These aromas and flavours are formed during the toasting of the barrels. “It is this toasting of the barrel that remains the signature of the cooper,” explains Gigandet. But the oak didn’t just impact the flavour, they came to understand that, being porous, oak allowed the wine to undergo “controlled oxygenation”. The exchange of air through the oak staves, in particular for red wines, helps stabilise the colour and polymerise the tannins. This polymerisation not only softens the wine, but brings a textural complexity, a millefeuille layering of mouth-feel brought about by the linking of long tannin chains, encouraged by the micro-oxygenation process that the wine goes through when aged in oak barrel. “François Frères barrels are ageing tools, which contribute to the textural improvement of wines, when used wisely,” Gigandet explains. As the wine world’s love of oak grew, François Frères’ main export customers went from little-known names to pioneers in their respective regions – with Robert Mondavi in the US, Angelo Gaja in Italy, Nicolas Catena in Argentina and Australia’s Rosemount winery. Each of these producers further cemented the cooper’s reputation, representing the very pinnacle of oak barrel production. Of course, like all fashions, the oak craze of the ’90s saw some extreme uses – 200% new oak ageing or an over-reliance on oak to provide flavour to wines that lacked the natural concentration to carry it. This saw many producers and consumers react strongly against its presence in wine at all. Even Gigandet admits that there are wines with “excess woodiness” to their detriment. Today, the barrel also has to compete with new trends in wine maturation – concrete eggs and clay amphorae, for instance. But while these new vessels have captured the imagination of the world’s top winemakers, it is not necessarily at the expense of the barrel. “The barrel has an important oenological role in the development of wines from certain grape varieties,” states Gigandet – notably Cabernet Sauvignon, Merlot, Syrah and Pinot Noir. But he also outlines how different ageing vessels combined can also benefit a wine’s potential for complexity. This is certainly the case amongst some leading producers in Bordeaux and Burgundy that are using both oak barrels and alternative ageing vessels. Coopers like François Frères have weathered the changing relationship wine has had with the barrel; with shifting views of critics and drinkers over the last century. Fortunately for fine wine lovers, there’s little sign of oak fading into the background. Oak remains a vital ingredient in many of the world’s greatest wines, adding to its flavour, textural complexity and – of course – ageing potential. As we’ve already discussed in our pieces on Chablis and the whites of the Côte de Beaune, 2019 in Burgundy is a remarkable vintage – shaped by an unusual growing season. After a week of tasting the length and breadth of the region, low yields and high quality are the headlines: frost and bad weather at flowering led to coulure and millerandage, essentially fewer and smaller berries per bunch. This in itself leads to more concentrated fruit, but it’s the warm, dry conditions that were really key. As water evaporated from the berries in these conditions, everything was concentrated – acidity, sugar and flavour.  The resulting reds are both intense and fresh – the fruit pristine and perfectly ripe, without straying into jammy. The tannins are supple, soft and seamless – so much so that, even at this youthful stage, the wines are a joy to taste; a tannic structure that Frédéric Barnier (Louis Jadot) said is almost more reminiscent of Gamay or Oregon Pinot, and rather atypical for red Burgundy. But don’t let this approachability fool you – the structure is there, just stylishly disguised, and there’s everything the wines need for a long life in the cellar. Thanks to the “solaire” growing season, the grapes had high natural sugar levels, meaning correspondingly high alcohols – tending to sit between 13.5 and 14.5%, increasing as you move up the quality ladder. But, despite this, the alcohol didn’t stand out anywhere; it’s balanced effortlessly by the wines’ equally high concentration and acidity. Each village shows  slightly sunnier profile, the tannins shaking off any rusticity, the fruit tending to be a little more generous – but without losing a sense of place. The wonderful acidity that runs through the wines makes them deliciously moreish – a sappy salinity filling the finish and making your mouth water; they are classically “digeste” or “gourmand”. It’s almost impossible to compare as a vintage. For us, the wines truly taste unique – unlike any other vintage we’ve tasted en primeur, with the balance of freshness and ripe fruit really separating it from its peers. Most producers were unwilling or unable to draw comparisons – as Frédéric Barnier explained, it’s hard to find a vintage with the same colour, richness and balance. He briefly considered the 2015s, but feels the 2019s are much more approachable. Marion Raphet modestly described the vintage as more “agréable” than 2018. Olivier Bernstein feels the 2019s are the best wines he has ever made, while at Domaine Joblot, Mickaël Haratyk described the 2019s as “absolutely gorgeous”, but couldn’t find a comparable year. The consensus is that they’re a step up from 2018 – much more classically styled and terroir-expressive. There’s a rare balance at play, offering more freshness than 2018 and more balance than 2015.  Everyone agreed however, as Frédéric Weber of Bouchard Père & Fils said, 2019 is “a huge vintage for the future”. For him, it is a little bit like a cross between 2015 and 2017 – with the concentration, roundness and “sucrosité” of 2015, and the delicate aromatics of 2017; but it also reminds him more and more of 1947 – a superb vintage, he told us, that had similarly high alcohols but amazing purity of aroma (and, as an indication of the wines’ ageability, it’s still drinking beautifully now). For Philippe Jouan, the vintage’s hallmark is the amazing consistency found along the Côte, as well the purity of fruit found in the wines. From our tastings, we couldn’t agree more when it comes to consistency: while yields vary, the high quality is a thread that runs through the entire region. Sadly there simply isn’t much of the wines – with producers down by as much as 50%. In general, it’s the Bourgogne and village wines that were hit the hardest in terms of volumes, and mostly yields seemed to be lower the further south we tasted. The result? “Good maturity, a nice freshness and lots of energy” Olivier Lamy, Domaine Hubert Lamy “Microscopic grapes each with very little juice but perfect balance” Guillaume Boillot, Domaine Henri Boillot These comments from some of the leading white winemakers in the Côte d’Or sum up our findings nicely. 2019 is a fantastic vintage for whites in the Côte de Beaune. The wines are both generous and exuberant, while retaining fantastic acidity and freshness. Despite the volume on the palate and, in some cases, warming alcohol (ranging from 13.5% to 14.5%), the Chardonnays predominantly retain a classic Burgundy flavour profile. It is not all pineapple and passion fruit, but lots of ripe apple, white peach and that acidity running through the palate keeps these lavish Chardonnays feeling fresh. So where does 2019 sit compared to other recent vintages of Chardonnay in the Côte de Beaune?  Many believe it is not a vintage that can easily be compared. The combination of maturity and freshness for many is something not experienced before. The 2019 growing season, like 2018, was warm and dry. In fact many vignerons saw huge similarities in terms of temperature and rainfall (or lack of) between 2019 and the previous summer, with both considerably higher in sunshine hours and lower in rainfall than average. However, there were distinct differences that has made 2019 clearly a cut above its 2018 compatriots. Most obviously and particularly for the white wines of the Côte d’Or is an increase in both concentration and acidity, caused by drastically low yields and small berries (a result of a difficult flowering period during the spring). The generosity of the vintage is therefore unlike the more austere, citric vintages of 2011, and it does not have the linearity and focus of 2014. It is undoubtedly a warm vintage for the Côte de Beaune but it is clear that vignerons are getting a better handle on how to deal with the heat. Many were keen to make the point that these days they pick on acid levels rather than alcohol, and maybe that has helped them get the picking date right. Also notable in parts of the Côte de Beaune malic acid levels were very low in 2019 (typical for sunny vintages) and this where relevant certainly played a part in the wine’s composition. Low malic acid actually helps emphasise the freshness in the final wine, since the malic acid is converted to lactic acid during malolactic fermentation during élevage. The more lactic acid, the more the wines feel softer and creamier. The malolactic fermentation therefore had much less of an effect in the 2019 whites, the result being an accentuation of freshness that beautifully contrasts the generosity and richness of fruit. Despite being a warm year, it certainly hasn’t fallen into the trap of 2015, a similarly warm vintage where the aromas were distinctly tropical and the wines a little flabby – a result of picking too late. A term we heard used a lot when visiting the wineries was that 2019 was a “floral” year. There is undoubtedly an expressiveness of aromas for a grape that often can be a little shy on the nose. For Fiona Ragg at Mischief & Mayhem, despite the similarities to 2018, “It had nothing like the sunshine hours. And didn’t suffer from heat spikes either.” Etienne de Montille noted that while it was warm during the day, the nights were distinctly cooler than in 2018, helping the vines regenerate, preserve acidity and prolong ripening, allowing more complex aromatics to develop.  The dry weather kept disease at bay and a harvest around the second week of September under ideal conditions saw grapes brought in in perfect health. Was it these factors that helped retain such delicate florality to these “gourmand” wines? Many of the producers we spoke to believe that 2019 offers a certain degree of precision and delicacy which, at the height of a warm July, they were not expecting. The freshness in the wines is a welcome surprise for many. This is matched by a lovely pristine fruit clarity not dissimilar to 2017, but with much more concentration – and much more freshness than 2018.  An interesting comment from Jadot’s Frédéric Barnier when struggling to compare the vintages is that in the past, vintages as rich and concentrated as 2019 relied on a certain level of botrytis in the vineyards. But in 2019 there was no botrytis, this was just natural concentration caused by the small size of berries combined with the low yields. 
Qualitatively, there seems to be tremendous consistency across the appellations, but also across producers. If anything, what seemed most evident to me was producers who perhaps were a little disappointing in 2018 produced much better wines in 2019, and the top producers seemed to really excel. In this respect, the vintage stands head and shoulders above vintages such as 2016 and 2013, where selection was essential. Yes, there are some flamboyant examples and they are hugely enjoyable for it, even if they do push the classic concept of white Burgundy to the limit. The majority of the wines we tasted, however, remain much closer in flavour profile to the classic Côte de Beaune flavours of yellow apple and white peach, with a strong mineral salinity shining through on the limestone soils, and richer body and creaminess of the heavier clay soils. The wines behave as they should, reflecting their respective terroirs despite the added concentration and verve. The top wines eschew a beautiful fruit clarity and are delightfully expressive, with a lifted florality, avoiding the overt tropical notes which can bury what we know and love about white Burgundy in a warm vintage. The clarity of fruit, exuberant florality, concentration and freshness combined makes 2019 a very happy vintage. The lack of volume however remains the sting in the tail, with some producers down up to 50% on normal production levels due to a bout of frost (on the low-lying vineyards), poor flowering throughout the region and hydric stress affecting
the young Chardonnay vines. These episodes, however, have not diminished quality and, in some important ways, have helped define a unique and exciting vintage for Chardonnay in the Côte de Beaune.  Explore Burgundy
